        This study was performed to evaluate the quality characteristics of functional Dasik prepared with a mixture of freeze-dried mealworm (Tenebrio molitor) powder and dried pollack powder along with assessment of the general and fatty acid compositions of mealworms. General compositions, except for moisture content of freeze-dried mealworm powder, were higher than those of raw mealworms. The ratios of saturated fatty acids and unsaturated fatty acids of freeze-dried mealworm powder and raw mealworms were 1:3.31 and 1:3.19, respectively. Amounts of oleic acid, which was the most abundant among unsaturated fatty acids, of freeze-dried mealworm powder and raw mealworms were 41.12 and 37.84%, respectively. For color values, greater content of freeze-dried mealworm powder in functional Dasik resulted in lower L and b scores, whereas a value increased. In the case of mechanical properties, greater content of freeze-dried mealworm powder resulted in significant reduction of hardness, chewiness, and gumminess. In the case of sensory evaluation, color, taste, and overall quality of DPMD50, which was prepared with a 1:1 ratio of freeze-dried mealworm powder and dried pollack, were the highest. It was concluded that DPMD50 is a nutritious combination of edible insects and fish for protein fortification for growth and the elderly.

        SiAlON-based ceramics are some of the most typical ceramic materials used as cutting tools for HRSA(Heat Resistant Super-Alloys). SiAlON can be fabricated using ceramic processing, such as mixing, granulation, compaction, and sintering. Spray drying is a widely-used method for producing a granular powder of controlled morphology and size with flowability. In this study, we report a systematic investigation aimed at optimizing spherical granule morphology by controlling spray-drying parameters such as gas flow and feed rate. Before spray drying, the viscosities of the raw material slurries were also optimized with the amount of dispersant added.

        We investigated the antioxidant, physicochemical, and sensory characteristics of dried type sodium-reduced bibimbap using dandelion complex powder (DCP). DCP is known to add moisture to the skin and relieve symptoms of atopic dermatitis. The sodium content of the standard sample was 1,110.87 mg per serving. The sodium was significantly reduced by 30%, resulting in 762.62 mg of sodium for the reduced sodium group (p<0.05). The ash contents of the standard sample group with DCP showed the highest value (3.17%) in all samples and was affected by minerals of DCP (p<0.05). The total flavonoid contents and ABTS radical scavenging activity, indicators of antioxidant, anticancer and antibacterial activities, showed significantly high activities with addition of DCP (p<0.05). In the sensory results, bulgogi and savory flavor of the samples with DCP showed significantly higher values, and samples with DCP received the highest scores for after-taste. All samples were confirmed to be microbiologically safe according to the food code applied to food manufacturers. Pathogenic microorganisms tests were either negative or not detected in all samples.

        This study evaluated the quality characteristics of dried noodles prepared with doenjang powder (0, 3, 6, 9%) in order to determine the most preferred noodle recipe. The proximate composition of the composite doenjang powder-wheat flours was as follows: calories 365 kcal, carbohydrates 79 g, saccharides 3 g, protein 10 g, fat 0.8 g, and sodium 65 mg. As the level of doenjang powder increased, the content of total amino acids increased; aspartic acid, glutamic acid, tyrosine, and lysine contents increased, in particular. Water-binding capacity decreased as the level of doenjang powder increased. When viscosity of composite doenjang powder-wheat flours was measured by amylography, gelatinization point increased as the level of doenjang powder increased. As the level of doenjang powder increased, L value decreased, whereas a and b values increased. Weight, water absorption, and volume of cooked noodles decreased, whereas turbidity of soup increased. For textural properties, hardness decreased, whereas springiness increased as the level of doenjang powder increased. For overall preference according to the results of sensory evaluation, noodles added with 3% doenjang powder were the most preferred. According to the results, addition of doenjang powder positively affects the overall sensory evaluation of dried noodle, and 3% is the optimal level for addition.

        This study evaluated the quality characteristics of dried noodles prepared with strawberry powder in order to determine the most preferred noodle recipe for children’s school meals. The proximate composition of strawberry powder used was as follows: moisture, 3.39%; crude protein, 1.53%; crude lipid, 0.97%; crude ash, 0.82%; and carbohydrates, 93.29%. When viscosity of the composite strawberry powder-wheat flours was measured by amylograph. Gelatinization point, maximum viscosity, viscosity at 95oC and viscosity at 95oC after 15 min decreased as the level of strawberry powder increased. As the level of strawberry powder increased, both L and b color values decreased, whereas a value increased. Weight, water absorption and volume of cooked noodles decreased, whereas turbidity of soup increased. For textural properties, addition of strawberry powder to cooked noodles reduced hardness, chewiness and brittleness. Overall preference according to the results of the sensory evaluation, noodles added with 6% strawberry powder were the most preferred. According to the results, the addition of strawberry powder can positively affect the overall sensory evaluation of dried noodles, and 6% is the optimal level for addition.

        본 연구는 동결 건조한 모시잎 분말을 돈육패티에 첨가하여, 이들 제품에 미치는 품질특성을 평가하고자 하였다. 모시잎 분말의 일반성분은 수분 함량 4.67%(w/w), 조단백질 25.61%(w/w), 조지방 6.665%(w/w), 조회분 16.88%(w/w)로 나타났다. 모시잎 분말을 첨가한 돈육패티의 수분 함량은 분말의 첨가량이 증가될수록 감소하는 경향을 보였다. pH는 6.06~6.18로 유의적 차이를 보이지 않았다. 색도는 생육 패티에서 모시잎 분말의 첨가량이 증가할수록 명도와 적색도는 유의적(p<0.001)으로 감소하고, 황색도는 유의적(p<0.001)으로 증가하였으며, 가열육 패티에서 모시잎 분말의 첨가량이 증가할수록 명도(p<0.001)와 적색도는 감소하고, 황색도는 0.75%(w/w) 첨가군에서 가장 높은 값을 보였다(p<0.05). 물성 특성은 모시잎 분말의 첨가량이 증가할수록 경도, 탄력성, 응집성, 씹힘성에서 유의적으로 증가하였다. 지질산패도(TBARS)는 저장 기간의 경과에 따라 측정 값들이 증가하였으며, 모시잎 분말의 첨가량이 증가할수록 유의적(p<0.001)으로 낮은 TBARS 값을 보여 지질산패에 효과적으로 나타났다. 관능적 특성으로 색감에서는 모시잎 분말의 첨가량이 증가함에 따라 유의적(p<0.05)인 경향을 보였으며, 전반적인 기호도에서는 모시잎 분말 0.5%(w/w) 첨가군에서 유의적(p<0.01)인 경향을 보이며 가장 높은 기호도를 나타내었다. 본 연구를 통해 돈육패티 제조 시 모시잎 분말을 0.5%(w/w) 정도 첨가하는 것이 바람직한 것으로 사료되며, 돈육패티에 모시잎 분말을 첨가함에 따라 돈육 특유의 이취를 감소시키며, 색상과 맛 등의 기호도를 향상시켜 관능적 품질을 향상시킬 수 있을 것으로 보이며, 관능적 평가뿐만 아니라, 저장 중 지방산패를 억제할 수 있을 것으로 보인다.

        A study was undertaken to examine the effect of adding freeze dried maquiberry powder on the quality of pound cakes. Freeze dried maquiberry was added to the flour at a ratio of 0.5, 1, 1.5 and 2.5%. The antioxidant activity was estimated by DPPH free radical scavenging activity, the total phenolic compounds content, and flavonoid content in freeze dried maquiberry powder of pounds cakes. Antioxidative activity was highly correlated with the total phenolic and total flavonoids contents of freeze dried maquiberry powder of pound cakes (r=0.9126, p<0.001, r=0.8366, p<0.001, respectively). The quality characteristics of freeze dried maquiberry powder of poundcakes were estimated. The specific volume decreased significantly with increased substitution level of freeze dried maquiberry powder (p<0.01). The lightness significantly decreased with increased freeze-dried maquiberry powder of pound cake crust and crumb (p<0.01, p<0.01). The hardness and adhesiveness increased, while gumminess tended to reduce with increased maquiberry powder. The consumer acceptability score of 0.5~2.5% freeze dried maquiberry powder of pound cakes ranked significantly (p<0.01) higher than those of the other groups in overall preference. These results showed that freeze dried maquiberry powder is a good ingredient to increase consumer acceptability and health.

        A study was conducted for optimization of the process for the manufacture of raw noodle added with leaf powderof Cirsium setidens Nakai, which is rich in various minerals and dietary fibers along with intrinsic antioxidativeproperties. The level of leaf powder, water content, and kneading time of the dough were selected as three majorfactors affecting quality of the product. Quality parameters of the product such as color, texture, water absorptionratio, volume, turbidity of cooking water, and sensory evaluation result were analyzed as dependent variables. D-optimum design of the complete RSM analyses was adopted for designing the optimum noodle manufacturing pro-cedure. Ranges of the independent variables as determined through preliminary experimental work were level of leafpowder, 2-9% (w/w, wheat flour); moisture content, 40-50%; and kneading time, 7-20 min. Within the given rangesof these independent variables, 18 experimental points included in four repetitive runs were obtained for the anal-yses. The optimum conditions that together satisfy the quality parameters of the raw noodle, as based on the numer-ical and graphical statistical analyses, were amount of leaf powder, 5.76%; water content, 42.52%; and kneadingtime 13.86 min. The complete RSM analysis for manufacture of the high quality raw noodle with an added ingre-dient is suitable for similar application to other products in the industry.

        This study investigated the quality of noodles containing different amounts of Ligularia fischeri powder (LFP). Noodles were prepared at ratios of 0, 1, 3, 5, and 7% LFP based on flour weight. Cooking quality, mechanical texture properties, and viscosity were measured, and a sensory evaluation was performed with the prepared noodles. Gelatinization points of the composite LFP-wheat flours increased. As measured via amylography, viscosity at 95oC, viscosity at 95oC after 15 minutes, and maximum viscosity values of samples decreased, as the LFP content increased. As increasing amounts of LFP were added, the L, a, and b values decreased while color values, weight, and volume of cooked noodles increased, as did the turbidity of the soup. With regard to textural characteristics, LFP additive increased hardness, cohesiveness, and springiness, while decreasing adhesiveness. Sensory evaluation showed that high quality cooked noodles could be produced by inclusion of 3% LFP.

        In this study, soybean is used to produce soymilk according to various extracting methods and heating time. Specifically, the soy slurry is being filtered before being heated, or heated before being filtered. Following that the soymilk produced is freeze-dried to be powdered, and then, the quality characteristics of the powdered soymilk are mutually compared to determine the applicability of various food additives. The freeze-dried soymilk powder shows 2.03~6.35% of moisture content, and in terms of unit quantity, retained more proteins, which suggests that the ratio of protein extraction is higher than any other nutrients. Accordingly, the protein coefficient is significantly higher in soymilk powder being heated and processed than in raw soybeans. In particular, protein coefficient is the highest in the soymilk which is heated for 20 minutes before being filtered (SHBF20). The longer the heating time was, the trypsin inhibitor (TI) tended to be far less active. Such an inactivation seems to be more apparent in the “SHAF” soymilk powder than “SHBF” soymilk powder. Because protein had to be denaturated by heating for soymilk, the nitrogen solubility index (NSI) of soymilk powder is decreased considerably, while the protein digestibility, water absorption, emulsification and foaming activity all increase. Oil absorption tends to decrease slightly. As discussed above, the soymilk heated for 10 minutes after being filtered (SHAF10) and the soymilk heated for 20 minutes before being filtered (SHBF20) show optimum processing conditions for soymilk powder.

        This study assessed the quality characteristics of Yanggaeng prepared with different ratios of Citrus mandarin powder: 0, 2, 4, and 6%. The moisture content was lowest in the controls, while there were no significant differences among the groups supplemented with Citrus mandarin powder. The pH significantly decreased as the amount of Citrus mandarin powder increased. The lightness (L), redness (a), and yellowness (b) were lower in control groups compared to Citrus mandarin powder groups. Texture profile analysis showed that the hardness of the Citrus mandarin powder groups were lower than the control (which was the highest). The total polyphenol and flavonoid content and DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity increased as the amount of Citrus mandarin powder increased. The result of a sensory evaluation test revealed no significant differences between the controls and groups with 2% Citrus mandarin powder added in color, smell, taste, texture, and overall acceptability.

        The results of testing general components, physical property and physical function after having made steamed rice cake by adding eggplant, which caters to consumers’ tastes are as follows. It showed that when eggplant powder content increased, the moisture content of steamed rice cake with eggplant was decreased. It also showed that the lightness value (L) of steamed rice cake with eggplant powder was the highest as 82.75 in the control group. When eggplant powder content increased, the redness (a) and yellowness (b) were increased. From the results of having measured the antioxidant potential over the steamed rice cake with freezing-drying eggplant powder by DPPH radical elimination, we figured out that it was the lowest as 48.30% in the control group. As more eggplant powder was added, its elimination increased accordingly. As per hardness of steamed rice cake with eggplant, the added group with 7% was revealed as the highest at 0.757. It showed that adhesiveness was the lowest as 30.233 in the control group, and springiness and cohesiveness were on the rise as freezing-drying eggplant powder was increased. Furthermore, softness and chewiness were shown to be high in the added group with eggplant powder of 3, 5%. The evaluation over the overall preference was the highest in 5% added group. Judging from this, adding 3~5% eggplant powder against non-glutinous rice powder is considered an optimal quantity in making steamed rice cake with eggplant.

        2012년 2월부터 11월까지 인천 지역에서 유통된 건고추 및 고춧가루 193건을 대상으로 아플라톡신 B1과 오크라톡 신 A의 오염도를 조사하였다. Immunoaffinity column 및 HPLC를 이용한 시험법은 모두 80% 이상의 회수율을 보였고, 아플라톡신 B1 및 오크라톡신 A의 검출한계는 각각 0.13 μg/kg, 0.30 μg/kg였다. 오염도 조사를 한 결과 아플라 톡신 B1은 17.1%의 검출율을 보였고 오크라톡신 A는 20.7% 의 검출율을 보였으며, 아플라톡신 B1의 검출농도는 0.14~ 9.67 μg/kg였고, 오크라톡신 A의 검출 농도는 0.31~3.31 μg/ kg였다. 이는 우리나라 식품공전 상의 기준인 10 μg/kg(아 플라톡신 B1), 7 μg/kg(오크라톡신 A)보다는 낮은 수치로 비교적 안전한 수준이었다.

Finally the LLP additive increased hardness and decreased adhesiveness, cohesiveness and springiness. Sensory evaluation showed that high quality cooked noodle could be produced by inclusion of 5% LLP.

        This study was conducted to examine the applicability of muffins and the optimal ratio of batter mixture by adding mugwort with various functions and physiological active substances. In result of examining the quality characteristics of muffins after adding frozen-dried mugwort powder by 0%, 1%, 3%, 5%, or 7%, the moisture retaining capacity of muffin batter was lowest with MPM0, the control group, and the deposition was highest at 17.94 ㎖ with MPM0. The pH value of muffin batter was highest at 8.62 with MPM0 and moisture decreased significantly (p<0.001) when more mugwort powder was added to the sample. The brightness increased significantly (p<0.001) when the amount of frozen-dried mugwort powder decreased and redness and yellowness decreased when the addition of mugwort powder increased. The height and volume of mugwort muffins were lowest at 4.75 ㎝ and 135.69 ㎖ with MPM7 with the greatest value of frozen-dried mugwort powder. The loss at baking of mugwort muffins was lowest at 2.27% with MPM7. The hardness of mugwort muffins was highest with MPM7 with the highest mugwort powder content. Coagulation and resilience was highest at 0.64 with the MPM0 control group and the chewiness increased significantly (p<0.001) with greater amount of frozen-dried mugwort powder. The appearance of mugwort muffins was highest at 6.1 with MPM5 and the most preferable color and flavors were found with MPM3. Tenderness was highest with the MPM0 control group. Overall preferability was highest with MPM3 with 3% frozen-dried mugwort powder. When adding frozen-dried mugwort powder to muffins, the 3% and control groups mostly showed the highest values, whereas the 5% group and higher groups showed lower values.

        Roll milled- and nano-powders were prepared from the freeze dried fruiting bodies of Hericium erinaceum and their hydration properties such as water solubility index, swelling capacity, water holding capacity, and water sorption isotherm were compared. Water content in freeze dried Nano-powder of Hericium erinaceum fruiting body was 8.17%. Nano-powder has higher water solubility index compared to roll mill powder by 58.41% and 39.06%, respectively. In the same way, swelling capacity of nano-powder was 10.21ml/g where as roll mill powder has only 4.42ml/g. In contrast, water holding capacity of nano-powder (3.87g/g) is lower than that of roll mill powder (6.81g/g). Water sorption isotherm of these powders was compared and the result shows no big difference at low relative humidity (below75%). However, a high relative humidity above 75%, these two kinds of powder showed comparable difference. At 84.34% relative humidity, roll mill powder has 30.41% of moisture content compared with 47.64% of nano-powder, and at the relative humidity of 97.3%, the moisture content of roll mill and nano-powder are 37.64% and 91.06% respectively.

        본 실험은 호박분말 급여가 돈육의 품질 특성에 미치는 영향을 조사하기 위하여 평균 개시체중 64.5 kg인 총 20두의 3원 교잡종(Landrace×Yorkshire×Duroc)을 대상으로 호박분말 급여량을 0, 2, 5 및 7%로 처리구별 5두씩 공시하여 출하전 30일간 급여하였다. 호박분말 급여구에서 높은 수분 함량 및 조지방 함량을 나타내었다. 명도(lightness) 값은 처리구들 간 유의적인 차이가 나타나지 않았으나(p>0.05), 적색도(redness)는 2% 및 7% 호박분말 급여구가 대조구에 비해 유의적으로 높은 값을 나타내었다. 육즙 및 가열감량은 모든 처리구에서 유의적인 차이가 없었으나, 5% 호박분말 급여구에서 높은 pH 및 모든 호박분말 급여구에서 낮은 전단가 값을 나타내었다. 호박분말 급여구에서 대조구에 비해 낮은 콜레스테롤 함량을 보이며, 호박분말 급여수준이 증가할수록 콜레스테롤 함량이 감소하였다. 또한 호박분말 급여구에서 높은 myristic acid(C14:0) 함량을 보인 반면, 2% 및 5% 호박분말 급여구에서 높은 palmitoleic acid(C16:1) 함량 나타내었다. 따라서 호박분말 급여는 돈육의 사후 pH와 수분함량을 높이고, 전단가 및 콜레스테롤 함량을 감소시키는 등 돈육 품질을 개선시키는 것으로 나타났다.

The cooking quality, mechanical texture properties, and viscosity were measured, and a sensory evaluation was conducted with the prepared noodles. The gelatinization points of the composite LLP-wheat flours were shown to increase. As measured via amylograph, viscosity at 95℃, viscosity at 95℃ after 15 minutes, and maximum viscosity values of those samples decreased as the LLP content increased. As increasing amounts of LLP were added, the L and a values were reduced, whereas the b value was increased and the color values, weight, and volume of the cooked noodle increased, as did the turbidity of the soup. With regard to the textural characteristics, the LLP additive increased hardness and cohesiveness, and reduced adhesiveness and springiness. Overall, the noodles prepared with 5% LLP were preferred more than the others, according to the results of our sensory evaluation.

        본 연구는 느타리, 노랑느타리, 분홍느타리, 버들송이의 건조분말을 이용하여 두부에 적합한 첨가량을 구명하고자 수행되었다. 버섯 첨가량에 따른 두부수율은 대조(무첨가)구에 비해 느타리 3~12%, 노랑느타리 3, 6%, 분홍느타리 3, 6%, 버들송이 3, 6% 첨가시에 수율이 높았고, 버들송이는 9%이상 첨가시 고형이 되지 않았다. 경도는 느타리버섯 3, 6%, 노랑느타리 3%, 분홍느타리 3%, 버들송이 3% 첨가시에 높았다. 버섯의 첨가량이 많을수록 명도는 낮아졌으며, 적색도는 분홍느타리 첨가비율이 높을수록 증가 하였지만 노랑느타리는 황색도가 증가하지 않았다. 버섯두부의 기호도조사결과 느타리버섯은 6~12%, 노랑느타리버섯은 3%, 분홍느타리 3%, 버들송이 3, 6% 첨가시 기호도가 우수한 것으로 나타났다. 이상의 결과 수율과 경도가 높고 기호도가 우수한 두부에 제조에 적합한 버섯의 적정 첨가량은 느타리버섯 6%, 노랑느타리, 분홍느타리, 버들송이 각3%로 판단된다.
