본 연구는 기능성 물질인 알로에를 종류별로 첨가함에 따라 유화소시지의 이화학적 특성과 저장성, 그리고 관능성에 미치는 영향을 조사하기 위해 수행되었다. 알로에 베라(AV구)와 알로에 사포나리아(AS구)는 각 3%씩 첨가하였으며, 모든 처리구들은 냉장온도 4±1℃에서 4주간 저장하면서 주 1회 간격으로 실험이 진행되었다. pH는 AV구와 AS구가 대조구보다 유의적(p<0.05)으로 낮았고, 저장기간의 경과함에 따라 대조구 및 모든 처리구는 증가하였다. 보수성에서 AS구는 대조구와 AV구보다 유의적(p<0.05)으로 높은 값을 나타냈으며, 저장기간의 경과함에 따라 대조구 및 모든 처리구는 유의적(p<0.05)으로 감소하였다. 적색도는 AS구가 대조구 및 AV구 보다 낮은 값을 나타내었고, 황색도는 AS구가 대조구, AV구보다 높은 값을 나타내었다. 전단가는 AS구가 대조구보다 낮은 값을 나타냈으며, AV구와는 유의적인 차이가 없었다. 지방 산패도에서 AS구는 유의적 (p<0.05)으로 가장 낮은 값을 나타내었고, 관능 평가의 색은 AV구가 가장 높은 값을 나타냈으며, 선호도는 AV구가 대조구보다 높은 값을 나타냈고 AS구와는 유의적인 차이가 없었다. 이는 알로에 사포나리아의 첨가가 높은 보수성, 알로에 베라 첨가보다 낮은 지방산패도, 유사한 관능성을 나타내 기능성 소시지의 개발에 충분한 경쟁력을 가지고 있으며 향후 알로에 사포나리아를 첨가한 육제품의 일반화 및 대량생산 체계의 확립에 긍정적인 영향을 준다고 판단된다.
Mushrooms and their extracts including purified ingredients, are currently used as foods, functional foods (and/or nutraceuticals), and medicines. These products have numerous bioactive compounds such as polysaccharides (mainly β–glucans), glycoproteins, nucleotide analogs, terpenoids, and polyphenols, which have exhibited antioxidant, antimicrobial, anticancer, antiviral, anti-obesity, and immunomodulatory activities. In this review, we discuss the current information on the biactivities of 10 popular mushrooms in Korea. We also summarize the information on mushrooms and the active compounds derived from them, as well as mushroom-based products such as foods, functional foods, and medicines. We believe this review could provide useful information for scientists and consumers who seek to develop new products and promote healthy food habits and lifestyle.
Functional foods are of great significance since our society is accelerating into aging. An aging society has many physiological metabolic diseases such as hypertension, diabetes, heart disease, cancer, dementia and geriatric diseases. Fundamental treatments for the elderly are almost impossible and the social burden is heavy. If these diseases can be prevented or alleviated by improving dietary habits using functional foods, the significance would be very large. Pomegranate has been found to have 124 different kinds of phytochemicals. Polyphenols have a wide range of protective effects including various physiological metabolic diseases and cancers. It is necessary to develop functional foods such as preservatives and food extenders which can contribute to food safety, required in the food industry, by using such bioactive substances. Pomegranates have been reported to decrease the impact of many serious illnesses. There is a considerable amount of bioactive substances in the peel of a pomegranate, which has potent anticancer, antioxidant, antimicrobial and anti-apoptotic properties. Unfortunately, the peel is typically discarded after processing. Despite knowledge regarding the bioactive substances in the pomegranate peel and peel extracts, including their functionality and diversity, the knowledge is not well known by consumers in general.
The aim of this study was to review up to date research trends for processing and developing new functional foods by utilizing nutritional functional substances, favourite food materials, and materials for processing food contained in pomegranate peels and pomegranate peel extracts. This study will summarize the data found in pomegranate peel and pomegranate peel extract literature mainly recently published in Science Direct. There are polyphenolic compounds (ellagitannins, punicalagin, proanthocyanidin, flavonoids, polysaccharides, etc.) in the fruit peel, making up about 50% of the pomegranate’s weight. The polyphenol content of a pomegranate fruit peel is 149.91 mg/g, which is about 100 times higher than the juice. Paying attention to the fact that the ellagitannin content (14.22 mg/g) in the fruit peel is also twice as high as that of the fruit juice and seeds, that confirms the possibility of utilizing the peel as a food ingredient capable of developing new, functional bioactive foods.
The purpose of this study was to find efficient and customized tools for delivering the benefit of health functional foods (HFFs). Delivery tools which could influence the impact of advertising were images, explanations of ingredients, diagrams of health benefit, patents, and comments from authority. Six advertisements were developed using these tools: “A”: relevant image + explanation of ingredients + scientific diagram of efficacy; “B”: relevant image + explanation of ingredients; “C”: relevant image; “D”: irrelevant image; “E”: irrelevant image + explanation of ingredient + patent; “F”: irrelevant image + explanation of ingredient + comments from authority. To analyze the consumer perceptions on HFFs and advertisement effects, 300 respondents were requested to answer a questionnaire comprising of the following questions: 5 questions of attitudes (necessity of HFFs, trust in HFFs, gathering information, watching advertisements and trust in advertisement claims) and 6 questions on the 6 developed advertisements (attention, understanding, sufficiency of information, sympathy, trust, and purchase). Scoring was done as per the 5 Likert scale. There was a higher proportion of females and the elderly, as compared to males and youngsters. The overall consumer attitudes were positive. Explanation of ingredients, scientific diagram of health benefit, patents and expert comments were helpful factors in increasing the advertisement evaluation by consumer, but the images were not. Advertisement evaluation of consumer did not differ with gender and age. However, differences were observed between some of the consumer attitudes (necessity of HFFs, trust in HFFs, gathering information and trust in advertisements claim) and advertisement evaluations (attention, understanding, sympathy and purchase). Our results indicate that for consumers utilizing the HFFs, advertisements with concrete tools such as diagrams, patent, and expert comments are more helpful. However, for consumers who do not have interest in HFFs, the scientific information was irrelevant. We believe that to maximize the effect of health information in advertisements, consumers should be segmented, and customized tools for each segment needs to be developed.
2050년에는 세계 인구가 90억에 이를 것이라는 전망은 익히 알려져 있다. 따라서 미래 식량 수요에 대해서 우리가 먹고 있는 식품과 그 생산 방법을 재조명할 필요가 있으며, 최근 FAO에서는 미래 식량 대체 자원으로서 식용곤충의 필요성을 강조하고 있다. 국내에서도 갈색거저리, 흰점박이꽃무지, 장수풍뎅이, 뀌뚜라미 등 4종의 곤충에 대해서 식품 소재화를 위해서 안전성을 검토하여 한시적 식품으로 인정받았다.
또한, 애기뿔소똥구리로부터 항생제 후보 물질인 코프리신을 분리하여 기능을 검정한 결과, 인체 유해균인 구강균, 피부포도상균, 여드름 원인균에 대해 강한 항균활성을 나타낼 뿐 만 아니라 종래 항생제에 내성을 유발하는 내성균 방제에도 효과가 있는 것으로 확인되었다. 피부상처의 대표적인 그람양성 감염균인 황색포도상구균에 대해서도 항생효과가 우수하였다. 또한 코프리신 처치가 치명적인 감염성 질환인 Clostridium difficile (C.d)세균이 유발하는 급성-위막성 대장염(Pseudomembraneous colitis)을 효과적으로 억제하는 것으로 확인되었다. C.d균 감염을 통해 확립한 급성장염 동물모델의 경우 5일째 80%의 치사율을 보였으나 코프리신을 전 처리한 동물은 치사율이 30%로 감소했다. 특이하게도 이물질은 Bifidobacterium과 Lactobacillus와 같은 대장내 정상 세균총에 대해서는 항생효과가 나타나질 않고 C.d균에 대해서만 선별적 항균효과를 나타내었다. 또한 면역세포의 과도한 활성을 감소시키거나 다양한 혈액암, 위암 세포주들의 세포성장을 특이적으로 억제하는 것으로도 확인 되었다. 이 물질을 이용하여 기능성 화장품을 개발 하였다. 이외에도 왕지네로부터 스콜로펜드라신 1을 개발하여 아토피 치유 효능을 검정하였다.
In this study, we analyzed the database for items reported to Korea Food and Drug Administration as for manufactured health/functional food during 2010. There were 183 health functional food products manufactured in domestic having over 2 functional ingredients (hereinafter, combinational health functional food) among total 7319 products. Among 183 products, there were 177 products having over two kinds of functional ingredient and 6 products were over 3 ingredients. The most commonly used functional ingredients in the combinational health functional food were Garcinia cambogia extracts which were used in 41 products, Octacosanol and Saw Palmetto extract. When we searched the safety information for the pair of ingredients used in combinational health functional food using several database, there were no reports for safety concern. However, as there are still safety concerns when intake various functional ingredients at once, we suggested to enforce the reporting system of adverse event in order to strength safety management of health functional food. With these complement, the safety management of health functional food might be achieved including a combinational products.
The objective of this study was to investigate the perception of ginseng and ginseng products among university students living in Yeongsu, Ganwon-do. 196 university students participated in the survey for our study. The ginseng intakes of male students(59.1%) was significantly(p<0.05) higher than the intake of female students(40.9%). The primary reasons for consuming ginseng were to “Maintain my [one’s] health” and to, “Restore my [one’s] energy”. The reasons for not consuming ginseng were “Taste” and, “Physical constitution”. Consumers purchased the following ginseng products at the market: For males, ginseng wine(21.7%), ginseng beverage(17.4%), ginseng candy(17.4%) and ginseng kimchi(17.4%) for females, Korean ginseng snacks(23.3%), ginseng yogurt(20.9%), ginseng candy(14.0%), and ginseng jelly(11.6%).
