식중독 세균에 의한 biofilm 형성을 억제하는 효과를 시 험하기 위하여 cinnamon, clove 및 lemongrass 정유의 휘 발성 성분을 분석하였다. 또한 정유의 주요 항균활성 성 분이 polyethylene과 stainless steel 표면에서 식중독 세균 에 의한 biofilm 형성을 억제하는 효과에 대하여 조사하였 다. Cinnamon 정유의 주요 휘발성 성분은 cinnamaldehyde (38.30%), linalool (9.61%), β–caryophyllene (8.90%) 및 1,3,4-eugenol (8.19%)로 동정되었다. Clove 정유의 주요 휘발성 성분은 1,3,4-eugenol (61.84%)로 분석되었다. Lemongrass의 주요 휘발성 성분은 citral의 이성질체인 geranial (19.11%)과 neral (19.23%)로 검출되었으며, citral 은 isomeric acyclic monoterpene aldehydes로서 geranial (trans-citral, 19.11%)과 neral (cis-citral, 19.23%)의 혼합물 로 분석되었다. Cinnamon, clove 및 lemongrass의 주요 성 분 중 cinnamaldehyde, linalool, eugenol 및 citral이 disc diffusion assay에 의해 시험한 6종의 식중독 세균에 대하 여 강한 항균활성을 나타냈다. Eugenol (0.1%)과 citral은 polyethylene 및 stainless steel coupon 표면에서 식중독 세 균에 의해 형성된 biofilm에 대하여 강한 억제 작용을 나 타났다. Cinnamaldehyde (0.1%)는 Listeria monocytogenes ATCC 19112와 Staphylococcus aureus KCCM 11812에 의 해 형성된 biofilm에 대해 장한 억제 작용을 나타냈다. 연 구 결과 cinnamaldehyde, eugenol 및 citral 처리에 의해 식 중독 세균에 의한 biofilm 형성을 억제가 가능할 것으로 판단된다.
This study investigated the volatile flavor components of the essential oil from Chrysanthemum coronarium var. spatiosum Bailey. The essential oil obtained from the aerial parts of the plant by the hydrodistillation extraction method was analyzed by gas chromatography and gas chromatography-mass spectrometry. One hundred and one (99.11%) volatile flavor components were identified in the essential oil from the Chrysanthemum coronarium var. spatiosum Bailey. The major compounds were hexanedioic acid, bis(2-ethylhexyl) ester (12.45%), 6.10.14-trimethyl-2-pentadecanone (7.94%), 1-(phenylethynyl)-1-cyclohexanol (6.34%), α-farnesene (5.55%), phytol (4.99%), and α-caryophyllene (4.39%). When the volatile flavor components of Chrysanthemum coronarium var. spatiosum Bailey were classified by functional group, the content was high in the order of hydrocarbons, alcohols, esters, ketones, aldehydes, and phthalides. Sesquiterpene hydrocarbons were the most common hydrocarbons, mainly due to α-farnesene and α-caryophyllene. Among the alcohols, the content of aliphatic alcohols was significantly higher, mainly due to 1-(phenylethnyl)-1-cyclohexanol (6.34%) and phytol (4.99%). The analysis of the volatile flavor components of Chrysanthemum coronarium var. spatiosum Bailey in this study will provide useful information to consumers when purchasing food and to industries using fragrance ingredients.
The purpose of this study was to investigate the volatile flavor compounds of Ligularia stenocephala and Ligularia fischeri, edible wild plants. The volatile flavor compounds were isolated by the simultaneous distillation extraction method and analyzed by GC-MSD (gas chromatography-mass selective detector). Forty-eight volatile flavor compounds were identified in the extracts from L. stenocephala and the major compounds were sabinene, cis-ocimene, trans-caryophyllene, and β-elemene. Fifty-one volatile flavor compounds were identified in the extracts from L. fischeri and the major compounds were α-pinene, germacrene-D, transcaryophyllene, endo-1-bourbonanol and 1-limonene. The common volatile flavor compounds between two plants were transcaryophyllene, sabinene, β-elemene and β-cubebene etc. However, α-phellendrene and myrcene were identified in L. stenocephala, but were not identified in L. fischeri. However α-pinene, germacrene-D and limonene were identified in L. fischeri but were not identified in L. stenocephala.
The purpose of this study was to investigate the quality characteristics and volatile flavor components of Doonuri wine, using freeze concentration. The freeze concentration can increase the sugar concentration in grape juice by reducing its water content. In this study, after eight days od fermentation, the alcohol content of freeze-concentrated Doonuri wines was 12.5~14.1%. The pH of the wine was 3.42~3.50 and the total acid content was 0.68~0.94 g/100 mL, respectively. The brghtness of freeze-concentrated Doonuri wines was 19.28~54.42, the redness was 41.98~49.58, and the yellowness was 36.16~42.36. The organic acid analysis of Doonuri wines was that most of the organic acids contain tartaric and malic acid. By using freeze concentration with grape juice, significant increase in the total polyphenol content of Doonuri wines was 122.40~137.26 mg/mL, the total anthocyanin content was 117.06~ 118.40 mg/L and the tannic acid content was 66.23~83.70 mg%. In GC/MS analysis, the volatile flavor component analysis of Doonuri wines identified six alcohols, five esters, two ketones, on acid, two alkanes, and four other compounds.
식품의 향기성분은 다른 주성분에 비해 미량으로 존재하지만, 풍미를 반영하는 중요한 지표로 색, 조직감과 더불어 식품의 품질을 평가하는 중요한 요소이다. 본 연구에는 SPME 추출방법을 이용하여 산고 품종 배주스의 휘발성 향기성분을 추출하여 GC-MS로 향기성분을 확인 및 동정하였다. 총 22종에 향기 화합물이 분리동정되었고, ester류 7종, aldehyde류 9종, ketone류 2종, alcohol류 1종, acid류 1종, furan류 1종 그리고 함황화합물 1종으로 구성되었다. 이 중에서 ethyl acetate, hexanal, ethyl hexanoate, ethyl 3-(methylthio)-2-propenoate, ethyl octanoate and 2-hexenal이 배주스의 주요 향기성분으로 간주되었다. 특히, ethyl acetate의 함량이 13.36~19.60 μg/kg으로 가장 높은 것으로 검출되어 전체 향기성분의 절반 이상을 차지하였다. 또한, 향기성분의 변화를 억제 및 추출능력 향상을 위해 분석용 시료에서 포화 염화칼슘 용액을 첨가하여 그 효과를 검증하였고, 착즙직후 바로 염용액으로 처리한 배주스에서 aldehyde류, acid류, furans류 및 s-compounds류은 유의적인 많은 것을 확인하였다. 본 연구결과는 배 원물의 품질저하 혹은 가공으로 발생한 향기 변화를 보완하는데 기초자료로 활용이 가능하며, 배주스를 활용한 가공식품의 향 품질을 향상시켜 고부가가치 가공식품을 개발하여 배의 소비 촉진에 기여할 수 있는 것으로 기대된다.
This study investigated the volatile flavor composition of essential oils from Chrysanthemum zawadskii var. latilobum Kitamura and Aster yomena Makino. The essential oils obtained by the hydrodistillation extraction method from the aerial parts of the plants were analyzed by gas chromatography (GC) and GC-mass spectrometry (GC-MS). One hundred (95.04%) volatile flavor compounds were identified in the essential oil from the C. zawadskii var. latilobum Kitamura. The major compounds were valencene (10.82%), δ-cadinol (9.77%), hexadecanoic acid (8.70%), 2-methyl-4-(2,6,6-trimethylcyclohex-1-enyl) but-2-en-1-ol (3.67%), and 2-(2,4-hexadiynylidene)-1,6-dioxaspiro[4,4]non-3-ene (3.57%). Ninety-eight (93.83%) volatile flavor compounds were identified in the essential oil from the Aster yomena Makino. The major compounds were and 3-eicosyne (13.61%), 9,10,12-octadecatrienoic acid (7.8%), α-caryophyllene alcohol (6.83%), 9-octadecynoic acid (6.03%), and α-caryophyllene (5.74%). Although the two plants are apparently very similar, the chemical composition of the essential oils was significantly different in quality and quantity. In the case of C. zawadskii var. latilobum Kitamura, the sesquiterpene, valencene was found to be 10.82%, but it was not identified in A. yomena Makino. δ-Cadinol appeared higher in C. zawadskii var. latilobum Kitamura than in A. yomena Makino. A clear characteristic of A. yomena Makino essential oil is that it has a high content of caryophyllene derivatives. The α-caryophyllene alcohol contained in A. yomena Makino was relatively high at 6.83%, although the compound was not identified in C. zawadskii var. latilobum Kitamura. Also α-caryophyllene was shown to be higher in A. yomena Makino than in C. zawadskii var. latilobum Kitamura.
This study investigated the chemical composition of burdock (Arctium lappa L.) leaves essential oil, and the quantitative changes of the major terpene compounds according to the specific harvesting season. The essential oils obtained by the hydrodistillation extraction (HDE) method from the aerial parts of the burdock leaves were analyzed by gas chromatography (GC) and GC-mass spectrometry (GC-MS). The essential oil composition of this plant was characterized by the higher content of phytol and 6,10,14-trimethyl-2-pentadecanone. Seventy seven (98.28%) volatile flavor compounds were identified in the essential oil from the burdock leaves harvested during the spring season of 2012, and phytol (33.47%) and 6,10,14-trimethyl-2-pentadecanone (32.47%) were the most abundant compounds. Eighty eight (99.08%) compounds were identified in the essential oil from the leaves harvested during the autumn season of 2012, and in this case, phytol (37.35%) and 6,10,14-trimethyl-2-pentadecanone (34.67%) were also the most abundant compounds. These two volatile components were confirmed as the major oil components of the burdock leaves during the time of any harvest. The ratio between the two components contained in the burdock essential oils did not differ significantly by harvesting season. But overall, the essential oil harvested during the spring season contained 65.94% of the two major components, while for the essential oil harvested during the autumn season, the total amount of these two major components was 72.02%. While the main ingredients of the essential oils were found to be unchanged from one harvest time to the next, it was found to differ in content. For the burdock leaves, the quality index of the volatile constituents according to the harvest time would be more useful for utilizing the total quantity other than the proportion between phytol and 6,10,4-trimethyl-2-pentadecone.
This research has attempted to investigate the volatile flavor compounds of onion products through acetic fermentation, and to create a natural beverage with beneficial biological properties which can also fulfill customer quality standards. Onion products (OAF (M): Onion extracts at five days of acetic fermentation, OAF (F): Onion extracts at ten days of acetic fermentation) were produced by acetic fermentation. Volatile flavor compounds from onion extracts, OAF (M) and OAF (F) were used by Mixxor liquid extractions and analyzed by GC/MSD. Compounds of 49, 75 and 69 were identified in onion extracts, OAF(M) and OAF(F) respectively. Among the major volatile flavor compounds classes, sulfur containing compounds (36.7%), acids (31.2%) and aldehydes (13.5%) in onion extracts were changed into acids (69.6%) and alcohols (24.6%) in OAF (M) and acids (80.6%) and alcohols (15.5%) in OAF (F). During acetic fermentation acetic acid, 1,3-butanediol (odorless) and 2,3-butanediol (onion flavor) increased remarkably, sulfur-containing compound such as 2,5-dimethylthiophene having anti-oxidant activities was detected by fermentation.
This study investigated the quality characteristics and volatile flavor components of aronia wine (Aronia melanocarpa (0~100%)). After 12 days of fermentation, the alcohol contents of aronia wines ranged between 9.0~12.0%. The pH level and total acidity of aronia wines were 3.20~3.68 and 0.57~0.76 g/100 mL, respectively. The organic acid analysis of wine containing 100% aronia, revealed malic acid content at 3.70 mg/mL, followed by tartaric acid, lactic acid, and citric acid. As the aronia content increased, both the total polyphenol content and the antioxidant activity (the DPPH radical scavenging activity) also significantly increased. The total polyphenol content was the highest in the wine with 100% aronia (461.33 mg%), and the antioxidant activity showed the highest values in the wine with 100% aronia (91.91%). Volatile flavor component analysis of aronia wines identified 8 alcohols, 12 esters, 4 ketones, and 7 other compounds. In the sensory evaluation, the color, flavor, and taste of wine with 20% aronia showed higher values than other aronia wines. Based on the results of the present study, we suggest that 20% aronia is most beneficial in improving the quality as well as sensory characteristics of the wine.
This study investigated the chemical composition of headspace gas from white-flowered lotus (Nelumbo nucifera Gaertner). Volatile flavor compositions of headspace from white-flowered lotus (floral leaf, stamen, flower stalk, stem) were investigated through the solid-phase microextraction method using polydimethylsiloxane-divinylbenzene fiber. The headspace was directly transferred to a gas chromatography-mass spectrometry. Sixty-three volatile flavor constituents were detected in the headspace of lotus floral leaves, and undecanoic acid (7.81%) was the most abundant component. Fifty-three volatile flavor constituents were detected in the headspace of lotus stamina, and isobutylidene phthalide (7.94%) was the most abundant component. Forty-four volatile flavor constituents were detected in the headspace of lotus flower stalks, and 3-butyl dihydrophthalide (11.23%) was the most abundant component. Fifty-nine volatile flavor constituents were detected in the headspace of lotus stems, and ligustilide (16.15%) was the most abundant component. The content of phthalides was higher in the headspace of flower stalks and stems, while alcohols and acids were the predominant compounds in lotus floral leaves.
The physicochemical properties of dry wine produced from domestic kiwifruit according to production year from 2008 to 2012 were studied. pHs of wine were from 4.02(F wine, production year 2009, sterilized) to 4.11(D wine, production year 2012, non-sterilized) and their acidities were lowest in D wine(0.79%) and highest in F wine(1.18%). All the wines have the same soluble solids of 8 °brix and 12% of alcohol, respectively. The reducing sugar was lowest in A wine(production year 2008, non-sterilized) and highest in D wine. The lactic acid was detected as a main organic acid and the free sugar was detected only fructose. As main flavor components, ethyl acetate and 1-pentanol were detected and their sum of 80~90% and a small amount of phenylethyl alcohol which providing rose-like aroma was also detected. The contents of soluble phenolics were highest in D wine(1.07 g/L) and lowest in C wine(0.80 g/L), corresponding to the antioxidant activity was highest found in D wine according to their soluble phenolic contents.
There has been growing concern over the emissions of formaldehyde and VOCs from automotive interior materials, as these could have an important impact on the in-vehicle air quality (IVAQ) of automotive vehicles. Odor along with VOCs refers to the automotive interior smell emitted directly or indirectly from any part of an automotive interior, based on human olfactory senses and a comfort evaluation of vehicle quality. The objective of this paper is to compare the odor intensity using GC/MS analysis method and odor sensory test in accordance with ISO 12219-2. For the compounds having low odor threshold value and high VOC concentration, it was found that there was the same tendency in each field of odor whether the instrument analysis method or the odor sensory test method was used.
This study aimed to provide volatile flavor compounds of three onion products through thermal process and alcohol fermentation, to meet the quality standard of onion products. The identified components of onion extracts (OE) included 49 (18 sulfur-containing compounds, 5 alcohols, 8 acids, 3 ketones, 4 esters, 4 aromatic compounds, 2 aldehydes, 1 pyrazines and 4 miscellaneous compounds), and 55 (17 sulfur-containing compounds, 15 alcohols, 5 acids, 11 ketones, 3 aromatic compounds, 2 aldehydes and 1 pyrazine) in autoclave-sterilized onion extracts (SOE); and 69 (10 sulfur-containing compounds, 27 alcohols, 11 acids, 11 ketones, 6 esters, 1 aromatic compound and 3 pyrazines) in onion wine (OW), respectively. Among the major flavor classes, sulfur-containing compounds (36.8%), acids (31.3%) and aldehydes (13.6%) in OE were changed to alcohols (46.5%) and ketones (27.3%) in SOE whereas, alcohols (56.3%) and acids (26.6%) in OW. Moreover, 1,3-butanediol, 2,3-butanediol, and 3-hydroxy-2-butanone were highly detected in SOE whereas, acetic acid, 3-methylbutanol, 2-phenylethanol and 1,2,3-propanetriol in OW.
To increase the availability of Maxillaria species and cultivars, we investigated the volatile floral scents in eight species and cultivars of M. tenuifolia, M. variabilis, M. variabilis 'Alba', M. variabilis 'NxO', M. variabilis 'Brown', M. variabilis 'Red', M. variabilis 'Nana', and M. sangnine. The volatile components were analyzed using headspace-solid phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS). We identified 46 volatiles in eight species and cultivars of Maxillaria. α-pinene, eucalyptol, trans-β-ocimene, α-copaene, and β-caryophyllene were major flavor components in the eight Maxillaria species and cultivars. A principle component analysis (PCA) showed that M. tenuifolia, M. variabilis, M. variabilis 'NxO', M. variabilis 'Brown', M. variabilis 'Nana', and M. sangnine (major components: sesquiterpenes) were located closely together on t he s core p lot. However, M. variabilis 'Alba' and M. variabilis 'Red' (major components: monoterpenes) were located closely on the score plot and not analyzed coconut flavor.
삼채의 잎과 뿌리로부터 휘발성 화합물과 아미노산을 분석하였다. 휘발성 향기성분은 Headspace GC-MS방법으로 분석하였다. 잎 조직으로부터 18종의 휘발성화합물이 검출되었고, 21종의 화합물은 뿌리조직으로부터 분석되었다. 주요 향기성분은 diallyl disulphide였고, 잎(27.9%)과 뿌리(17.41)에서 가장 많이 함유하고 있었다. 또 다른 주요 황화합물은 methyl 2-propenyl disulfide, dimethyl disulfide, methyl 1-propenyl disulfide과 methyl 2-propenyl trisulfide이 잎과 뿌리에 모두 함유하고 있었다. 전체 46종 화합물 중 가장 많이 함유하고 있는 물질군은 황화합물이었다. 황화합물은 엽조직에 6종, 뿌리조직에는 5종이 함유되어 있었다. 또한 유리아미노산과 polyphenol성 화합물은 잎과 뿌리 조직에서 분석하였다. 잎과 뿌리 조직에서 아미노산은 20종과 19종이 각각 검출되었다. 총아미노산의 함량은 잎에서 0.134 mg/g, 뿌리조직에서 0.105 mg/g 함유하고 있었다. 총 polyphenol성 화합물 함량은 잎에서 0.28 mg/g, 뿌리에서 1.08 mg/g 함유하고 있었다. 이 결과는 삼채의 이용과 효율적인 재배에 기초자료를 제공할 수 있다.
새로운 농가 소득 작물로서 곰취 신품종 육성을 위한 기초자료를 얻기 위하여, 두 곰취(적곰취와 달곰)와 기존 재배종 곰취에 대한 향기 성분과 총페놀함량, DPPH 활 성, 비타민 C 함량을 분석하였다. 생체중 100g 당 총페 놀함량은 재배종(137.29mg) 보다 적곰취(158.40mg)와 달곰(180.82mg)에서 현저히 높았다. DPPH 활성은 재배 종(74.45%)과 적곰취(75.59%)보다 달곰(86.26%)에서 다소 높았다. 비타민 C 함량은 재배종과 적곰취 보다 달곰(1.81mg)에서 다소 높았다. 향기 성분인 정유 함량은 재배종에 비하여 적곰취(0.164%), 달곰(0.290%)에서 유의 하게 높았다. GC/MSD 분석의 결과 주요 물질은 재배종 곰취 43종, 적곰취 44종, 달곰 31종이 동정되었으며, N 함유 화합물은 달곰에서만 검출되었다. 향취를 나타내는 주요 6종의 향기 성분 (a-pinene, β-pinene, β-phellandrene, a-phellandrene, 3-carene, limonene) 함량은 재배종에 비하여 적곰취가 높았으며, 달곰은 상대적으로 낮았다. 특히 달곰은 총페놀함량, DPPH 활성, 비타민 C 함량, 정 유함량 등에서 재배종 및 적곰취보다 유의하게 높은 것으로 나타나, 우수한 특성을 기진 것으로 판단되었다.
