We determined physicochemical characteristics and antioxidant activities of cookies prepared by replacing wheat flour with 0, 3, 6, and 9% freeze-dried burdock powder instead of wheat flour. The leavening and loss rates of the cookies decreased in proportion to the amount of burdock powder added to the dough. The moisture content of the cookies increased in proportion to the amount of burdock powder added and the crude protein and hardness were higher in the burdock-added group compared to the control. The lightness and yellowness of the cookies decreased, and the redness increased in proportion to the amount of burdock powder added. The total flavonoid and polyphenol compounds in the cookies increased in proportion to the amounts of burdock powder added. The antioxidant activities also tended to increase in proportion to the amount of burdock powder added. Based on the above results, adding burdock powder to cookies can increase antioxidant activity by increasing the content of antioxidant components, such as polyphenols and flavonoids. In addition, it is believed that adding burdock powder at levels of 3 to 9% of the weight of flour would result in cookies with spreadability, swelling power, and hardness similar to those of regular cookies.
우엉을 9번 찌고 9번 말려서 차를 제조한 다음 M사의 우엉차와 성분 및 기능성을 비교 분석하였다. 개발한 우엉차는 칼로리 346.48kcal, 탄수화물 72.75g/100g, 단백질 11.98g/100g, 회분 5.01g/100g이었다. 무기물 함량은 칼륨 1,476.21 mg/100g, 칼슘 255.96 mg/100g, 마그네슘 311.41mg/100g 이었다. 유리당 총량은 31.93 mg/100g이었고 그중 fructose 26.27mg/100g , glucose 4.39 mg/100g, sucrose 1.27 mg/100g이었다. 포화지방산은 40.73 mg/100g, 불포화지방산은 59.28 ㎎ /100g이고 그 중 linoleic acid 41.28 mg/100g, palmitic acid 33.11 mg/100g, oleic acid 10.07 mg/100g , linolenic acid 7.92 ㎎/100g이었다. DPPH 라디컬 소거력은 개발한 차 33.9%, 비교용 M사 차 2.3%, 지표물질 37.2%였다. ABTS 라디컬 소거력은 개발한 차 90.7%, M사차 85.9%, 지표물질 47.6%였다. SOD 유사활성은 개발한 차 11.3%, 비교용차 50.5%였다. 플라보노이드 함량은 개발한 차 2.6 fold, M사차 2.9 fold, 지표물질 1.7 fold였다. 폴리페놀 함량은 개발한 차 33.8 fold, M사차 38.9 fold, 지표물질 13.4 fold였다. 기호도는 1회 우린 것과 5회 우린 것을 비교하였다. 1회 우린 것을 기준으로 할 때 5회 우린 것의 기호도 중 색은 개발한 차 65.9%, M사차 12.8%, 향기는 개발한 차 78.0%, M사차 33.3%, 맛은 개발한 차 71.4%, M사차 20.7%, 나타났다. 이같이 비교용 M사차는 우릴수록 추출 성분이 감소하여 5회 후에 종합적인 기호도는 21.4%로 감소한 반면 개발한 차는 감소폭이 적어서 72.1%를 나타냈다. 이같이 개발한 우엉차는 비교용 M사차 및 지표물질보다 항산화 작용이 강하고 유효 물질 함량도 더 많고, 기호성도 높으므로 질병 예방 및 개선 효과가 클 것으로 생각한다.
This study investigated the effects of blanching conditions on the quality characteristics of burdock, lotus root, and garlic scape. The selected plants were blanched at varying temperatures (70-100oC) for 1-5 min, and moisture content, shear force, color, and total microbial count were analyzed. Burdock exhibited browning discoloration when it was blanched at a relatively low temperature (70-80oC). In addition, thermal tenderization of burdock was not evident in the blanching conditions adopted in this study. Blanching affected the tenderness and moisture content of lotus root without deteriorative discoloration. In particular, low temperature blanching (80oC) was favorable to blanching lotus root. Alternately, thermal tenderization of garlic scape was possible by blanching at 80- 100oC for 3-5 min, while discoloration of the blanched garlic scape dominated at high-temperature blanching (100oC). Consequently, the result indicated that low temperature for a long time (80oC and 3-5 min) provided a better blanching condition for lotus root and garlic scape than high temperature applied at a short time (100oC and 1-3 min).
This study investigated the chemical composition of burdock (Arctium lappa L.) leaves essential oil, and the quantitative changes of the major terpene compounds according to the specific harvesting season. The essential oils obtained by the hydrodistillation extraction (HDE) method from the aerial parts of the burdock leaves were analyzed by gas chromatography (GC) and GC-mass spectrometry (GC-MS). The essential oil composition of this plant was characterized by the higher content of phytol and 6,10,14-trimethyl-2-pentadecanone. Seventy seven (98.28%) volatile flavor compounds were identified in the essential oil from the burdock leaves harvested during the spring season of 2012, and phytol (33.47%) and 6,10,14-trimethyl-2-pentadecanone (32.47%) were the most abundant compounds. Eighty eight (99.08%) compounds were identified in the essential oil from the leaves harvested during the autumn season of 2012, and in this case, phytol (37.35%) and 6,10,14-trimethyl-2-pentadecanone (34.67%) were also the most abundant compounds. These two volatile components were confirmed as the major oil components of the burdock leaves during the time of any harvest. The ratio between the two components contained in the burdock essential oils did not differ significantly by harvesting season. But overall, the essential oil harvested during the spring season contained 65.94% of the two major components, while for the essential oil harvested during the autumn season, the total amount of these two major components was 72.02%. While the main ingredients of the essential oils were found to be unchanged from one harvest time to the next, it was found to differ in content. For the burdock leaves, the quality index of the volatile constituents according to the harvest time would be more useful for utilizing the total quantity other than the proportion between phytol and 6,10,4-trimethyl-2-pentadecone.
This study examined the changes in antioxidant activity and contents of phenolic compounds inblanched, steamed, and autoclaved burdock root (BR). The total polyphenolic and flavonoids contents of raw and cooked BR were determined spectrophotometrically. The antioxidant activity of BR was measured using 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2- azinobis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), and oxygen radical absorbance capacity (ORAC) assays. The main phenolic compounds in BR were quantified by HPLC (high performance liquid chromatography). Both blanching and steaming treatments significantly increased the antioxidant activities of BR in all groups (5 min, 15 min, and 30 min), whereas in autoclaving treatment, the 30 min treatment only showed an increase in the antioxidant activities of BR. The 30 min blanched BR exhibited the strongest DPPH and ABTS radical scavenging activities and possessed the highest total polyphenol and flavonoid phenolic contents. The 15 min-steamed BR showed the highest ORAC value. The main phenolic compound of the 15 min-steamed BR was CGA (chlorogenic acid). These results suggest that heat cooking methods, such as blanching and steaming, improve the antioxidant activity of BR by increasing the concentration of phenolic compounds.
This study was conducted in an effort to investigate the effect of Maillard reaction products (MRPs) on enzymatic browning of burdock and their anti-oxidant activity. The MRPs were prepared by heating glucose and amino acids at 90°C, which served to produce a strong inhibitory effect on burdock polyphenol oxidase. As the reaction time of the solution containing glucose and amino acid increased at 90°C, the production of MRPs increased and intensity of the brown color deepened. When MRPs were prepared by heating at 90°C for five hours, the absorbance of MRPs from glucose and lysine was 6.44, while those of glucose and glycine was 1.95. The MRPs synthesized from the glucose and lysine also reduced the pH of MRPs from 5.60 to 4.51, but those from glucose and glycine decreased slightly from 5.57 to 5.33. The Michealis-Menten constant value (Km) of burdock PPO with pyrocatechol as a substrate was 16.0 mM, and MRPs were a non-competitive inhibitor against burdock PPO. The anti-oxidant activity of MRPs was measured by evaluating its radical scavenging activities of DPPH radicals, ABTS radicals and reducing power. The color intensity of MRPs produced by lysine and glucose were deeper than that produced by glucose and glycine. It was also found that MRPs produced from glucose and lysine exhibited stronger anti-oxidant properties than those produced by glucose and glycine.
The objective of this study is to assess immunomodulatory effects of mixed Weissella (W.) cibaria JW15 strain with water extract of black soybean (Glycine max) and burdock (Arctium lappa) on Listeria (L.) monocytogenes infection in mice. Female 7-9 week old BALB/c mice were given a daily dose of 1 × 109 CFU of viable JW15 and JW15 mixed with black soybean (BS) and burdock (BD) in 200 μL PBS for 2 weeks. The nomal control group (NC) and positive control group (PC) were given 200 μL PBS. After 2 weeks, mice were infected with L. monocytogenes (1.0 × 105 CFU/mouse) via the tail vein. The NC was injected with 100 μL PBS without L. monocytogenes. After 2 days, mice were euthanized and their body weights were determined. In addition, their livers and spleens were weighed, and serum were analyzed for cytokine (Interleukin-1β (IL-1β) and Tumor necrosis factor-α (TNF-α)) production. The survival rate was monitored using 5 mice in each group in the same way above until the mice died. Two days after infection with L. monocytogenes, mean spleen weight per body weight (g/kg) of JW15 (5.4 ± 0.88 g/kg), JW15 + BS (6.0 ± 0.64 g/kg), and JW15 + BD (5.3 ± 0.38 g/kg) group were significantly lower than that of the PC (6.8 ± 0.57 g/kg). The level of IL-1β in the serum of JW15 + BD (113.6 ± 31.03 pg/mL) was significantly higher than that of the JW15 (67.9 ± 15.15 pg/mL). Collectively, combination W. cibaria JW15 and water extract of BD and BD have ability to induce synergistic immunomodulative effects and are suitable for consideration as a functional food for humans and functional feed additives for companion animals.
In this study, we evaluated the nutritional components and functional activities of Wooung (burdock, Arctium lappa L.) and Jerusalem artichoke (Helianthus tuberosus L.) tea. Roasting burdock’ contained 75.87% carbohydrates; in addition, the moisture content, crude fat, crude protein, and crude fiber were 10.43%, 1.77%, 8.50%, and 3.43%, respectively. Roasting Jerusalem artichoke showed 77.477% carbohydrate content, with moisture content, crude fat, crude protein, and crude fiber of 10.67%, 1.23%, 7.83%, and 2.80%, respectively. Roasting burdock’s water-soluble dietary fiber content was 4.8 g/100 g and insoluble dietary fiber content was 1.5 g/100 g; whereas, roasting Jerusalem artichoke’ water soluble dietary fiber content was 2.4 g/100 g and insoluble dietary fiber content was 1.6 g/100 g. The highest mineral contents in roasting burdock and Jerusalem artichoke were potassium and magnesium, in order. The results of amino acid analyses s indicated a total of 25 types in roasting burdock, with total amino acid content of 1,382.112 mg/100 g, and essential amino acid content of 766.031 mg/100 g. In total, 24 types of amino acids were separated and identified in roasting Jerusalem artichoke, with total amino acid content of 2,678.018 mg/100 g, and total essential amino acid content of 157.294 mg/100 g. Roasting burdock and Jerusalem artichoke’ polyphenol contents were 32.56 and 29.56 mg GAE/g each, and their flavonoid contents were 16.54 and 16.71 CE/g each. IC50 values of DPPH radical-scavenging activity of roasting burdock and Jerusalem artichoke were 12.99 and 19.74, respectively; and IC50 values of hydroxyl radical-scavenging activity were 25.96 and 22.93, respectively.
Burdock (Arctium sp.) is known as a nutraceutical vegetable, especially in Japanese and Korean cuisine. While burdock plants are generally harvested for their tap roots, different parts of the plant are consumed as food or used as traditional medicines. This study investigated the physicochemical properties of the leaves, stems, roots, and peeled roots of the burdock plant based on their pH, soluble solid content, titratable acidity, color values, and mineral content. The pH differed significantly among the different plant parts, with the highest value in the leaves and the lowest in the stems. However, for the soluble solid content, the leaves had the lowest, while the peeled roots had the highest. The titratable acidity of the stems was significantly lower than that of the leaves, roots, and peeled roots. As regards the color values, the lightness value was highest for the stems, while the roots showed the highest redness value, followed by the peeled roots, and the leaves had the highest yellowness value. The leaves and stems contained almost three times more potassium than the roots and peeled roots. Thus, the higher content of different minerals in the leaves and stems of the burdock plant shows that these plant parts could be used as potential sources of dietary minerals.
Burdock powder (BP) has shown diverse functional activities; thus, it seems a good way to increase its consumption by incorporating BP into suitable food products such as cookies. Studies were carried out on cookies prepared by incorporating BP (2%, 4%, 6%, and 8%) into wheat flour. The cookie dough and cookies were evaluated for their physical, chemical, and sensory characteristics. The pH and density of cookie doughs ranged from 6.70-6.85 and 1.19-1.21, respectively, with no remarkable differences. Moisture content and spread factor of cookies appeared to increase with higher content of BP in the formulation but did not show significant differences (p>0.05). For color values of cookie surface, L*, a*, and b*-values significantly decreased as a result of BP substitution (p<0.05). The cookies became crispier as indicated by the reduction in the breaking strength value from 26.71 to 17.83 N. 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2’-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities were significantly increased (p<0.05) with higher substitution of BP, and they were well correlated. Hedonic sensory results indicated that cookies supplemented with 2% BP received the most favorable acceptance scores for all sensory attributes evaluated. Overall, cookies with BP could be developed with improved physicochemical qualities as well as consumer acceptability.
Background: We investigated the optimal aqueous extraction conditions for recovery of high yields of total phenolic compounds from roots of Arctium lappa L. (burdock, Asteraceae), and we compared their antioxidant capacity.Methods and Results: The antioxidant activity of the extracts was tested using 2,2-diphenyl-1-picrylhydrazyl, 2,2’-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid)-diammonium salt, and oxygen radical absorbance capacity assays. In addition, the major phenolic compounds present in the extracts were determined by high performance liquid chromatography analysis. Our results suggest that the roasted burdock 100°C, 15 min extract exhibited the strongest radical scavenging activity and possessed the highest concentration of phenolic compounds. The polyphenol content of both dried burdock and roasted burdock significantly increased with increase in the extraction temperature and time.Conclusions: These results indicated a relationship between phenolic compound levels in burdock and their free radical scavenging activities. This suggests that phenolic compounds significantly increase the antioxidant potential of burdock extracts.
본 연구에서는 우엉의 활용성 증진을 위하여 우엉차를 제조하였으며 기호성과 기능성 증진을 위하여 증숙 및 볶음 처리에 따른 우엉차의 품질특성 및 항산화 활성을 검토하였다. 색도는 증숙처리하여 건조한 우엉차(SHD)보다는 건조 후 볶음 처리를 한 HDR과 증숙 후 건조하여 볶음처리한 SHDR에서 높은 황색도를 나타냈다. pH는 시료 간의 유의적인 차이는 없었으나 탁도에서는 증숙처리 후 건조한 우엉차에서 높은 값을 나타내었으며, 총당의 경우 볶음 처리시 비교적 높은 함량을 보였다. 우엉차의 항산화 활성을 평가하기위해 ABTS 및 DPPH 라디칼 소거능과 환원력을 실시하였으며, 전체적으로 볶음 처리를 하였을 때 활성이 높아지는 경향을 보여 증숙 처리보다는 볶음처리에서 우수한 것으로 나타났다. 또한 우엉차의 관능적 특성으로는 색, 향, 단맛, 떫은 맛, 구수한 맛 및 종합적 기호도를 평가하였으며 증숙처리 후 건조한 구간보다 볶음처리 시 떫은맛이 감소되고 단맛, 구수한 맛이 향상되었고, 풍미, 색상 및 종합적 기호도가 향상되었다. 이러한 결과를 종합하여 볼 때 우엉차 제조 시 열처리는 기능성 및 기호도가 증진시켜 품질의 향상에 영향을 주며 증숙과 볶음 공정을 적절히 적용하여 제조하는 것이 효과적인 것으로 생각된다.
Fresh-cut burdock roots were processed at 4 and 25℃, respectively. The fresh-cut burdock roots were treated with different browning inhibitors (3% citric acid, 3% sodium chloride, 0.3% cystein, and 3% sodium acetate solutions), and the changes in their quality and browning characteristics were investigated. The respiration rate and browning index of the cut roots prepared at 4℃ were lower than those of the cut roots prepared at 25℃. The soluble solid content was higher in the cut roots prepared at 4℃ than in those prepared at 25℃. The weight loss and flesh firmness were not affected by the processing temperatures. Among the browning inhibitors, 0.3% cystein showed the best browning-retarding effect. There was no difference in phenolic compound content between the browning-inhibitor-treated roots and the nontreated roots, but the PPO activity was higher in the latter than in the former. Therefore, the processing temperatures of fresh-cut burdock roots affected their quality and browning development, and the combination of a low processing temperature and the use of the proper browning inhibitor should be applied for the higher quality of the produce.
영남지역에서 재배되고 있는 우엉 (Arctium lappa) 재래종 18계통을 수집하여 기초적인 자료를 얻고자 본 시험을 수행하였다. 종자의 천립중은 2.2∼4.6g, 충실률은 26.7∼91.7%로 계통간 차이가 심하였다. 온도에 따른 발아율은 25℃에서 가장 높았으며 수집 계통간 저온 발아율은 최고 42.2%(문경)였고 최저 0.3%(유천)였다. '유천' 및 '칠곡Ⅱ' 가 당년에 10%이상 추대되었고 나머지는 추대율이 미미하거나 추대가 되지 않았다. 근장은 62∼77㎝정도였으며 지근수는 최고 5.5개(고령)에서 최저0.3개(성주)로 계통간 차이가 심하였다. 뿌리에서 Tannin함량 및 잎에서의 쓴맛 정도도 계통간 차이가 심하였는데 Tannin 함량은 '청도 I ' 이 14.2㎎/100g으로 가장 많았고 쓴맛은 '경산' , '고령' , '경주', '구미' 및 '함안' 계통들이 전혀나지 않았다.
