This study examined the effects of hot deboning and the irradiation of raw pork on the physicochemical properties of pork sausages. Pigs were deboned with a carcass (loin surfaces) temperature of 5℃ (cold) or 15℃ (hot). Each deboned raw pork loins were then irradiated at 0 kGy or 4 kGy. Emulsion-type sausages were prepared from each treated meat with other ingredients including fat, ice, salt, phosphate, and seasoning powder. Then sausage products were analyzed for their physiochemical properties and microbial spoilage up to 10 days. Emulsion stability of sausage products with hot deboning was better than the cold carcass up to three days. Sausage products with irradiated hot carcasses showed less cooking loss than from non-irradiated carcasses on day 10. Hardness, gumminess, and chewiness of the sausages decreased significantly with increasing storage time for all sausage products (p<0.05), but the sausage products with irradiated hot carcasses showed a smaller reduction compared with non-irradiated. Lipid oxidation was not significantly different in the sausage products with hot or cold deboning (p>0.05), but the sausage products from non-irradiated meats showed changes from 0.43 to 1.59 (MDA mg/kg of meat) in 10 days (p<0.5). Total plate count and E. coli count were significantly lower in the sausage products from irradiated meat (p<0.05). Finally, irradiating hot deboned meat at 4 kGy can be an excellent alternative for producing raw meat for sausages with promising microbiological and physicochemical properties.
Post-slaughtering storage of pork meat is important to improve the flavor and texture profile. Although irradiation of meat improves the keeping qualities of red meat, less work was done on the effect of quality in irradiated pork leg meat during post-slaughtering storage. Therefore, this study was done to compare low dosages of single beam irradiation treated pork leg meat on eating quality parameters over the nontreated meat stored at different storage temperatures. Freshly slaughter pig carcasses were brought to the irradiation unit for treatment. Pork leg meat was treated at 2 kGy with single beam. Treated (2 kGy) and non-treated pork leg meat were kept in three different temperatures as 2, 10 and 25°C for 1, 3 and 5 days and analyzed for cooking loss, shear force, color and nitrogenous flavor compounds. Cooking loss in day 5 in irradiated pork leg (30.29) was significantly lower than the control (33.27) (p<0.05). Shear force of treated (1.93) and non-treated (1.29) pork leg meat after day 5 had significant difference (p<0.05). “L*” and “b*” values of pork leg meat had significant difference at day 5 compared non treated leg meat (p<0.05) whereas the “a*” value was increased with storage time and temperature. Hypoxanthine level was significantly lower in pork leg meat at day 5 in treated (16.07) and non-treated (24.59) meats at 25°C (p<0.05) whereas the changes in AMP, IMP and Inosine was not significantly difference (p>0.05). As conclusion, post-slaughtering storage and irradiation with single beam of 2 kGy could ensure the meat quality of leg pork at even higher storage temperatures, with cooking loss, tenderness, flavor and the color which will be benefited in the processing industry.
The objective of this study was to investigate the effects of gender on meat quality traits and sensory characteristics of pork loin. A total of 90 pork carcasses (180 days old, 45 barrows and 45 gilts, each gender group was consisted of fifteen 1+, 1 and 2 carcass grades) were selected and loin cuts were excised to investigate meat quality, electronic tongue measures and sensory panel test. There were significant differences in drip loss (1.66% vs 1.21%), released water (12.19% vs 10.68%) and cooking loss (23.67% vs 21.04%) between loins from barrow and gilt (p<0.05). However, no significant differences in meat color (CIE L* a* b*) and shear force were observed between gender groups (p>0.05). Umami and richness values of barrow were significantly higher than those of gilt, while barrow had significantly lower sourness value compared to gilt (p<0.05). On the sensory evaluation, barrow scored higher in flavor, juiciness and tenderness both, and as a result, barrow (5.51 points) also scored significantly higher than gilt (4.86 points). These results suggest that the umami intensity and sensory taste of barrow loin are superior to gilt loin due to its high water-holding capacity.
The widespread emergence of antimicrobial-resistant E. coli is now being seen in humans and animals, and there is an increasing prevalence of multidrug-resistant (MDR) E. coli on a global. In this study, 31 MDR E. coli isolates recovered from pork meat at retail markets were analyzed to determine the phenotypic and genetic characteristics. The resistance to ampicillin (30 isolates, 96.8%) and tetracycline (28 isolates, 90.3%) were the most frequent among the MDR E. coli isolates. Thirty (96.8%) of MDE E. coli isolates harbored the ß-lactamase–encoding gene blaTEM. Twenty-six (83.9%) isolates harbored a class 1 integron, and 30 (96.8%) isolates carried from 2 to 6 resistance genes. Frep (45.2%) and FIB (22.6%) replicons were most common on the replicon typing. This study suggests that monitoring of the antimicrobial resistance of the pathogens found in pork meat should be continued in the future due to concerns about food safety issues.
Pork is a popular meat consumed in Korea. However, the consumption pattern has typically focused on preferred parts, like pork belly, which is usually broiled. This consumption pattern has increased both stocks of low fat parts and medical costs, and has thereby disturbed pork industry growth and the national health welfare. Changing the consumption patterns of preferred parts and encouraging consumption of low fat parts will improve consumers’ quality of life and also increase their benefits. Thus, this study estimated WTP (Willingness To Pay) for health funds among consumers who eat pork meat, considering the health benefits gained by consuming low fat parts and changes in preferred part consumption. The results of this study show that WTP is higher when consumers have a smaller family and a higher income; these consumers plan to increase intake of pork meat in the future and think that the promotion of low fat pork meat consumption is more important. The WTP for health funds is estimated to be 49won to 287won through Logit Model. The health benefits of low fat consumption were estimated to be 92 billion won to 539 billion won per year. Therefore, reforming low fat pork consumption not only changes the traditional consumption pattern focused on preferred parts but also leads to a variety of benefits for consumers, including health benefits.
본 연구에서는 돈지육 및 돈육 조직 내에 열안정성 수용성 단백질의 존재 여부를 확인하고 항체 생산에 있어항원으로의 사용 가능 여부를 확인하고자 하였다. 이를 위해 돈지육 및 돈육을 생(raw) 시료와 조리된(cooked) 시료로 구분하여 비열처리 및 열처리법으로 단백질을 추출한 후 단백질 존재여부를 단백질 정량과 SDS-PAGE로 확인하였다. 그 결과 돈지육과 돈육 모두 생 시료를 비열처리법으로 추출한 시료의 경우 25~100 kDa 사이의 다양한 단백질이 확인된 반면 시료를 가열하거나 추출 시 열처리를 한경우 돈지육에는 100 kDa 이상의 단백질과 30 kDa 및 15 kDa 이하의 일부 단백질이, 돈육에는 100 kDa 이상과 30 kDa 이하의 단백질이 확인되어 돈지육과 돈육에 열안정성 수용성 단백질이 존재하는 것으로 확인되었다. 이들 열안정성 수용성 단백질을 마우스에 면역 후 항혈청 역가를 측정한 결과 면역한 모든 마우스에서 높은 역가를 나타내었고, 생산된 혈청은 돈지육과 돈육에 각각 특이적인 반응성을 보인 반면 다른 축육과 지방육에 대해서는 반응성이 상대적으로 낮았다. 이러한 연구결과를 볼 때 돈지육 및 돈육에 존재하는 열안정성 수용성 단백질이 돈지육과 돈육에 특이적으로 반응하는 항체를 개발하는데 유용한 마커로서 활용이 가능하며, 열안정성 수용성 단백질에 대한 항체개발은 열처리된 축육 가공품 중 돈지육 및 돈육의 분석에도 매우 유용하게 활용할 수 있을 것으로 판단된다.
This study investigated the Texture Profile Analysis and Sensory characteristics analysis of 6 different Pork Meat-substituted Soybean Curd (PMSC) products with different gluten-fiber (GF) contentst. PMSC types were PMSC-GF 5%, PMSC-GF 10%, PMSC-GF 15%, PMSC-GF 20%, PMSC-GF 25%, and PMSC-GF 30%. The lightness (ΔL value) of cooked PMSC was decreased, whereas the redness (Δa value) and yellowness (Δb value) of cooked PMSC was not changed. Texturometer (TA XT Plus, England) was used for objective test and hardness, springiness, cohesiveness and chewiness of sensory characteristics were measured. PMSC with GF 5% to 15% were characterized high hardness score but PMSC with GF 20% to 30% were not significantly different. PMSC-GF 30% was the highest score in springiness and PMSC-GF 5% was the lowest. PMSC-GF 25% and 30% were high cohesiveness score but was not significantly different (p<0.05). Fourteen sensory descriptors were developed to evaluate the sensory characteristics of PMSC. The sensory characteristics of PMSC were sweetness, saltiness, springiness, hardness, chewiness, meat flavor, odor, loose particle and so on. Six different PMSC showed no significant difference in the attributes of loose particle. But PMSC-GF 5% and PMSC-GF 10% showed significant difference in the attributes of hardness. PMSC-GF 25% and PMSC-GF 30% showed no significant difference in the attributes of hardness. PMSC-GF 30% was the highest springiness score and PMSC-GF 5%, PMSC-GF 10% and PMSC-GF 15% showed no significant difference in the attributes of springiness. Overall consumer acceptance was surveyed. PMSC-GF 5%, PMSC-GF 10% and PMSC-GF 15% showed no significant difference in the attributes of color. PMSC-GF 25% and PMSC-GF 30% was the highest in the attributes of springiness and high moistureness, taste acceptance and overall acceptance. PMSC-GF 5%, PMSC-GF 10% and PMSC-GF 15% showed no significant difference in overall consumer preference but PMSC-GF 25% and PMSCGF 30% showed significant difference. Consequently it is indicated that texture of cooked PMSC-GF 25% and PMSC-GF 30% is very important sensory characteristics.
본 연구는 냉장육과 냉동-해동육의 혼합비율(100/0 (T1), 0/100 (T2), 50/50 (T3), 70/30 (T4) and 30/70 (T5))의 차이에 따른 유화형 소시지의 품질특성에 미치는 영향에 대해 조사하였다. 분석결과, 냉장 및 냉동-해동육의 비율이 소시지의 육색 중 백색도, 황색도, chroma 값 및 hue angle의 변화에는 영향을 주지 않았으나, 적색도는 냉동육만을 사용한 처리구가 가장 높게 나타났다(p<0.05). 처리구간별 pH 및 보수력은 유의적인 차이를 나타내지 않았으나, 수분함량은 냉장육의 비율이 높은 처리구(T1 및 T4)가 다른 시험구보다 유의적으로 높게 나타났다(p<0.05). 미생물 특성의 경우, 모든 처리구에서 coliform은 검출되지 않았다. 하지만, 총균수는 T2처리구가 다른 시험구보다 유의적으로 높게 나타났으며, 유산균은 냉동-해동육의 비율이 높은 처리구(T2 및 T5)가 냉장육의 비율이 높은 처리구(T1 및 T3)보다 유의적으로 높게 나타났다(p<0.05). 시료간 단백질변패도, 지방산패도 및 관능적 특성은 처리구간 유의적인 차이를 나타내지 않았다. 조직감 측정결과, 경도, 검성, 씹힘성 및 부착성에는 유의적인 차이를 나타내지 않았으나, 응집성 및 탄력성은 T1이 T2처리구보다 유의적으로 높게 나타났다(p<0.05). 이상의 결과, 냉장육 및 냉동-해동육 혼합하여 유화형 소시지를 제조할 때, 전반적인 품질특성에는 차이를 나타내지 않지만, 신선육의 비율이 높을수록 응집성, 탄력성 및 미생물학적 특성이 우수하게 나타났다.
In this study, the transfer rate of wild type Listeria monocytogenes (LM) was investigated to establish the standard of safety management during pork meat processing for meat to meat and meat to food contact surfaces contamination at 5 and 10oC. The transfer rate of LM from meat to meat during the processing increased from 0.02% after 30 min to 0.42% after 120 min at 5oC, while for conveyor belt and stainless steel, it decreased from 0.015% and 0.013% after 30 min to 0.002% and 0.0003% after 120 min at 5oC, respectively (p < 0.05). When temperature increased to 10oC, the transfer rates of LM from meat to meat, conveyor belt and stainless steel were the highest at 60 min exposure, and all decreased after 120 min. In reverse, the transfer rate from food contact surface to pork meat was significantly higher than that from pork meat to food contact surface (p < 0.01). Also, the transfer rate to conveyor belt was significantly higher than stainless steel (p < 0.05) and it was highest at 30 min exposure time in both 5 and 10oC. This study indicates that the transfer and adherence rates of LM are influenced by the contact time and temperature. Consequently, these results were utilized to develop a predictive model with a high level of confidence which can lead to prevent cross-contamination during pork meat processing.
The purpose of this study was to investigate changes in Korean meat consumption as well as meat consumption trends. During the Japanese occupation period, the supply of meat was considerably insufficient. However, meat consumption mainly in large cities has gradually increased. Especially, 'Pyeongyang cow', a specialty of Pyeongyang, started being raised as edible beef cattle in 1933. During the chaotic period following liberation from Japan, the price of meat sharply increased. However, as the meat supply stabilized, the 'beef grade system' was introduced in 1967. Since then, beef has sold according to region. During the early economic growth period of the mid-1970s, meat consumption rapidly increased, and foreign beef was first imported in 1976. The preference for beef was somewhat attenuated due to the outbreak of mad cow disease and economic slowdown of the 1990s, resulting in an increase in the consumption of pork, a replacement meat. During the recent period of economic development, meat consumption has somewhat fallen and remained low. In late 2003, with the occurrence of mad cow disease in the US, the demand for pork, and especially pork fatback, has sharply increased.
본 연구에서는 저장기간에 따른 돈육의 신선도 변화측정을 위하여 돈육의 형광 반응을 측정 하였다. 형광 방출-조사 메트릭스를 측정하여 저장기간별 돈육의 부패 정도를 가장 잘 구분 할 수 있는 최적 형광 파장을 찾고자 하였다. 등심의 경우 조사광 420 nm, 방출파장 569 nm, 삼겹살의 경우 조사광 430 nm, 방출파장 636 nm이 저장기간에 따른 신선도 변화 측정을 위해 가장 적합한 파장임을 확인할 수 있었는데 이는 ZnPP와 PP 성분의 형광 반응 영역과 일치하였다. 형광 반응측정에서 얻은 상대 형광강도 값과 돈육의 화학적 및 미생물학적 측정값을 선형회귀법을 이용하여 분석하였다. 선형회귀 분석 결과 등심의 결정계수(R2)는 TBARS, TBC, VBN, pH가 각각 0.693, 0.822, 0.869, 0.632로 나타났다. 삼겹살의 경우는 TBC값이 0.577로 가장 높은 결정계수를 나타내었다. 본 연구의 결과는 특정 파장 영역의 돈육의 형광 값이 돈육 신선도와 관련된 화학적 및 미생물학적 인자들과 밀접한 관계가 있다는 것을 보여주는 것으로 형광측정기술이 돈육의 신선도를 간편하고 빠르게 그리고 비파괴적으로 예측 할 수 있는 가능성을 보여주었다.
The objective of this study was to address the issues associated with the solubility of the pork meat oligopeptide, while maintaining its original nutritional value and improving its digestibility. The pork meat oligopeptide was used to produce an oral liquid supplement that was contained in a 200 ㎖ can. The formulation was designed to satisfy 20% of the daily recommended nutrition intake of an adult male aged between 20 and 29. Analysis of the quality characteristics showed that this formulation was highly homogenized as an oral liquid supplement with advanced solubility. In addition, based on the viscosity, pH, color value, turbidity, and brix, the product was shown to advanced processing quality with great solubility; however, there was some concern that the taste would be deteriorated due to the bitter taste of the peptide. Thus, further studies need to be performed before this formulation can be commercialized.
This study was performed to determine the transfer rates of each foodborne pathogen from pork meat packaging during the processing. We analyzed the transfer rate of Listeria monocytogenes from contaminated pork meat to worker's hands (wearing polyethylene gloves, PEG; cotton gloves, CG; and bare hands), cutting boards and knives, and vice versa. Transfer rate of CG 100.00% was higher than that of bare hands 2.513% and PEG 1.511%. In particular, when wearing CG, the transfer rate from the CG to bare hands with CG was 0.08%. Also, the range of transfer rates from contaminated pork meat to cutting board and knife was 0.352-3.791%. In contrast, transfer rates from the workers’ hands (with PEG/CG and bare hands) to cutting board, knife, and pork meat ranged from 0.001 to 0.141%. There was a lower transfer rate from workers’ hands than from pork meat. These findings indicate that use of PEG could effectively reduce or prevent the cross-contamination compared to CG and provide important information concerning the consecutive transfer of L. monocytogenes during food processing.
The purpose of this study was to investigate the antibacterial effect of films on shelf-life and microbiological Safety of pork meat. Effects of antimicrobial films against total aerobic bacteria, Escherichia coli O157:H7, Listeria monocytogenes, Salmonella Typhimurium, Staphylococcus aureus in pork meat were evaluated during storage of 14 days at 5℃, 10℃ and 15℃. Antimicrobial films were developed with addition of a natural substance, wasabi extracts (Wasabia japonica). At 5℃ storage, growth of total aerobic bacteria, E. coli O157:H7, L. monocytogenes were inhibited higher than at 10 and 15℃. Especially, the numbers of S. Typhimurium and S. aureus were increased gradually at 5℃ even in the control sample, and it takes more than 14 days to increase in every sample upto 6 log10 cfu/g. The higher antimicrobial effects of the films were observed at storage of 5℃ than at 10oC and 15℃. There was a limit of a single treatment of antimicrobial film to prolong shelf-life of pork meat. The synergistic effect of antimicrobial film were observed with addition of refrigeration at 5℃.
This study was carried out to investigate the comparison of meat quality of Korean native black porks and modern genotype pork fed high and low lysine levels of diets at growing and finishing stages during refrigerated storage after thawing. M. longissimus from Korean native black pigs (gilts) with a live weight of 65 kg and modern genotype pork (gilts) with a live weight of 110 kg were frozen at -80 ℃ for 1 month and placed in the dark room at 1℃ for 7 days after thawing. The moisture content was significantly lower in modern genotype pork fed high lysine level of diets than to the other treatments (p<0.05), but crude fat content was significantly higher in modern genotype pork fed high lysine level of diets (p<0.05). The pH value and sensory evaluation were significantly higher in Korean native black pork than to modern genotype pork (p<0.05), and the drip loss was significantly lower in Korean native black pork (p<0.05). CIE L*, ho and hunter L were significantly lower in modern genotype pork fed high lysine level of diets than to modern genotype pork fed low lysine level of diets (p<0.05). Myristate, palmitate and saturated fatty acid content were significantly lower in Korean native black pork fed high lysine level of diets than to Korean native black pork fed low lysine level of diet (p<0.05), but unsaturated fatty acid content and UFA/SFA ratio were higher in Korean native black pork fed high lysine level of diets (p<0.05). Consequently, as Korean native black pigs were fed high lysine level of diets at growing and finishing stages, saturated fatty acid content of pork increased but unsaturated fatty acid content and UFA/SFA ratio of pork decreased. And the water-holding capacity, color stability and sensory evaluation of Korean native black porks were better than those of modern genotype pork.
