        환경대기 중의 휘발성유기화합물을 채취할 때 사용하는 샘플링 방법은 백을 이용한 샘 플링 방법과 흡착관을 이용한 샘플링이 대표적이다. 본 연구에서는 실제 대기시료를 이 용하여 두 샘플링 방법을 동시에 진행하여 비교하고자 하였다. 시료의 채취방법에 따른 회수율 정도를 알아보기 위해, 청국장을 조리하면서 발생하는 시료를 채취하는 과정에서 실험을 진행하였다. 그 결과, 유기산의 회수율이 백 샘플링보다 흡착관을 이용한 샘플링 에서 평균적으로 98.6 %의 percent difference (PD)를 나타내는 것을 확인하였다. 카보닐 계열과 방향족은 19.2와 34.3 %로 비교적 적은 차이를 나타냈다. 각 성분 중에서 butyl acetate는 0.50 %로 가장 낮은 수치를 보였고, TMA도 마찬가지로 비교적 낮은 수치를 기록하였다(2.13 %). 이러한 결과는 현장 조건에서 채취방식의 중요성을 확인해 주었다

        본 연구에서 주식류 9종에 대해 조리분량(4인분, 100인분)에 따른 영양성분을 비교한 결과, 주식류 종류에 따라영양성분의 차이를 나타내는 것이 상이하였지만 대량조리에 따른 영양성분의 함량 변화를 보이는 것이 있음을 확인할 수 있었다. 추후, 다양한 주식류에 대해 대량조리 시영양성분 변화에 대한 연구 및 단체급식소에서 적용할 수있도록 대량조리 영양성분 DB화가 이루어져야 할 것으로생각된다. 뿐만 아니라 대량조리에 있어서 품질 기준이 될수 있는 관능적 평가도 추가적으로 필요할 것으로 보인다.

        This study examined the cooking method in "Eumsikdimibang", "Gyuhapchongseo" and "Jusiksiui" over time. The Korean cook book, "Jusiksiui", published in the late 1800s, was mainly investigated. The results showed that"Jusiksiui" contained more than 99 foods. In particular, there were 49 side dishes, including five types of porridge three types of noodles, and four types of dumplings. Most food recipes in "Jusiksieu" are the same as those in "Gyuhapchongseo". Results of comparison between "Gyuhapchongseo" (1809) and "Jusiksiui" (late 1800's), Korea's significant archives of Korean recipes, showed that approximately 50 recipes out of 99 recipes were the same as those indicated by "Yeolgujatang" and "Seunggiactang" as hospitality foods and "Gochujang", "Jeupjang", and "Jeupjihi" as traditional paste foods. This indicates that recipes in "Gyuhapchongseo" were transcribed into those in "Jusiksiui". Thus, "Jusiksiui" is the archive that includes recipes that have been passed down from generation to generation in a traditional family and transcribed archive of "Gyuhapchongseo", which was widely read by midwives in the late 1800's.

        This article examines the types and cooking methods of Suksilkwa as recorded in 14 royal palace studies and 10 old literature texts of the Joseon dynasty (1392-1909). The types of Suksilkwa during the Joseon dynasty were Joran (棗卵), Yulran (栗卵), and Gangran (薑卵). The frequency of the Suksilkwa types during the Joseon dynasty in order were: Gangran (35.4%), Joran (32.3%), and Yulran (32.3%). Prior to 185 years ago, "Junghae-Jungraeeuigwe (丁亥整禮儀軌)" (1827), Joran (棗卵), Yulran (栗卵), and Gangran (薑卵) were called Samsaegran (三色卵). Nearly 144 years ago, "Mujin-Jinchaneuigwe (戊辰進饌儀軌)" (1868) recalled sulsilgwa (熟實果). "Imjin-Jinchaneuigwe (壬辰進饌儀軌)" (1892) first recalled assorted-sulsilgwa (各色熟實果), in which sansabyeong were added in the sulsilgwa. "Sinchuk-Jinyeoneuigwe (辛丑進宴儀軌)" (July 1901), "Imin-Jinchaneuigwe (壬寅進饌儀軌)" (April 1902), "Imin-Jinyeoneuigwe (壬寅進宴儀軌)" (November 1902) described assorted-sulsilgwa (各色熟實果) in which ohmijabyeong were added to the sulsilgwa. Further study will be conducted on recipes and ingredients recorded in these Euigwe and old books in order to develop a standardized recipe to make Suksilkwa appealing to a global palate.

        본 연구에서는 쌀에 인위적으로 조성된 잔류농약이 세척 및 취반 과정에서 제거되는 정도를 측정하였다. 백미의 농약처리 직후 isoprothiolane 과 fthalide의 농도가 각각 7.134 ± 0.03 mg/kg 및 2.024 ± 0.04 mg/kg 이었으며 현미에서는 각각 17.941 ± 1.41 mg/kg 및 6.413 ± 0.19 mg/kg이었다. 1회 세척 후 백미와 현미에서 isoprothiolane의 제거율은 각각 23.0% 및 18.5% 이었으며, fthalide의 제거율은 각각 14.0% 및 9.7% 이었다. 세척 횟수가 증가함에 따라 각 잔류농약의 제거량은 많아지나 제거율은 감소하였다. 취반 후 isoprothiolane 과 fthalide의 제거율은 백미의 경우 각각 66.0% 및 79.0% 이었으며 현미의 경우에는 각각88.7% 및 92.9% 이었다. isoprothiolane의 경우 농약제거율이 취반과정보다 세척과정에서 더 높았으며, fthalide의경우에는 취반과정에서 더 높았다. 농약제거를 위한 가장적합한 세척 및 취반 방법은 5회 세척 후 30분간 물에 불리고 새 물로 취반하는 것이 가장 효과적인 것으로 조사되었다.

        본 연구에서는 현미의 취반적성 및 관능성 개선을 위하여 적외선 가열처리 및 수침의 영향을 검토하였다. 현미는 적외선 가열처리 조건에 따라 부분적인 갈변화와 함께 외피 및 배유에 균열이 발생하여, 취반 후 곡립 형태가 파손되고 식미가 저하되었다. 현미의 균열 손상은 120oC 이상의 온도에서 초기수분함량이 3% 이상 감소할 때까지 가열하는 조건에서 발생하였으나, 수침과 병행하여 가열하는 경우에는 현미의 균열 및 형태 손상이 발생하지 않았다. 현미는 적외선 가열에 의해 부분 호화가 발생하며, 호화도는 수침 처리한 현미에서 더 높은 것으로 확인되었다. 현미는 적외선 가열 처리에 의해 취반 질감이 연화되었으며, 수침과 병행하는 경우 가장 높은 연화효과를 나타내었다. 취반 현미의 관능성은 적외선 가열 처리에 의해 크게 개선되었으며, 수침을 병행하였을 때 전체적인 기호도가 가장 높은 확인되었다. 상기 결과를 통하여 수침 처리하지 않은 현미의 경우 120oC에서 수분함량이 1% 감소까지, 수침시료의 경우 20분간 상온수침 후 110oC에서 수분 함량 14%까지의 가열조건을 현미의 취반성과 관능성 개선을 위한 최적조건으로 설정하였다.

        Marinated beef galbi is a traditional Korean dish cooked with soy sauce, pear juice, onion, sesame oil, and sugar. However, there are many differences in beef galbi, including flavor and physicochemical aspects, depending on cooking conditions. Therefore, the physicochemical characteristics of marinated beef galbi prepared through various recipes was evaluated for its effects on pH, texture, aging, proteolysis, heating conditions, cooking time, and flavor compounds (pyrazines, IMPs, or FAAs). There were significant differences in salt concentration (0.8~3.03%), pH (4.89~6.22), and solid soluble contents (1.34-6.31 Brix) between recipes in this study. In the Pearson assay for sensory evaluation, overall preference correlated well with texture (a well-known sensory attribute in meat evaluation). Controlling the pH of meat through soaking in lemon solution, alkali water, phosphate, and baking powder solution, improved water holding capacity as much as 9 to 15% compared with the control. The myofibril index (MFI) of marinated meat stored at 4℃ increased 32% with 24 hours of aging and reached 39% at 48 hours of aging, and its fragmentation was observed through microscopy. SDS-PAGE showed hydrolysis of acid-soluble collagen by the pear juice, possibly related to meat tenderness. On the basis of surface temperature, the cooking time was estimated to be 8 minutes with pan heating at 170℃, 6 minutes at 270~300℃, and 4 minutes with charcoal at 700~900℃. Different pyrazine compounds, such as 2-methyl-3-phenylpyrrol(2,3-b) pyrazine (the typical product of the browning reaction) was mainly detected, and IMP (one of the main taste compounds in beef) was in higher amounts with the charcoal treatment, potentially related to its flavor preference among treatments. Our results demonstrate an effective case study and cooking system for beef galbi.

        This study examined the prevalence of the traditional fruit preserve, gwapyeon, recorded in 10 royal palace studies and 10 old literature reports on the Joseon dynasty (1392-1909). A total of 62 papers presented the Gwapyeon kind in the documents of the Joseon dynasty. The protocols of the court of the Joseon Dynasty and old literature discussed the Gwapyeon as follows: Nokmalbyeong (ohmijapyeon) 22.5%; aengdupyeon (櫻桃片) 14.5%; salgupyeon (杏) and bokbunjapyeon (覆盆子) at 11.3% each; beojjipyeon and mogwapyeon (木瓜) at 8.1% each; sansapyeon (山査) and chijapyeon at 6.5% each; duchungpyeon (杜沖) 4.8%; and deuljjukpyeon, saenggangpyeon (薑), daechupyeon (棗) and yujapyeon (柚子) at 1.6% each. From "Junghae-Jungraeeuigwe (丁亥整禮儀軌)" (1827) to "Junghae-Jinchaneuigwe (丁亥進饌儀軌)" (1887) called nokmalbyeong (菉末餠). "Sinchuk-Jinchaneuigwe (辛丑進饌儀軌)" (May 1901) renamed the ohmijabyeong (五味子餠). "Sinchuk-Jinyeoneuigwe (辛丑進宴儀軌)" (July 1901), the assorted-sulsilgwa (各色熟實果 ) were included in the ohmijabyeong. "Imin-Jinchaneuigwe (壬寅進饌儀軌)" (April 1902), The ohmijabyeong (五味子餠) and assorted-sulsilgwa (各色熟實果) was used and a mixture of "Imin-Jinyeoneuigwe (壬寅進宴儀軌)" (November 1902) included the assorted-sulsilgwa (各色熟實果).

        Rice cake is the most historical food which has been developed from settlement of agriculture and typical traditional food which has manufacture and food historical meaning. Because, the process of rice flour, raw ingredient of rice cake, tells remarkable food processing technology of our nation, and is original form of processed food that we has been taken before agricultural life begun. In this study, contents analysis method is used. Ingredients of rice cakes appeared in ?Gyuhapchongseo?glutinous rice 12 times (42.8%), nonglutinous rice 10 times (35.7%), and the others 6 times (21.4%) used as the main ingredients of rice cake. the rice cake separated into 15 types (53.5%) of steamed rice cake, 2 types (7.1%) of pounded rice cake, 3 types (10.7%) of boiled rice cake, 7 types (25%) of sauteed rice cake, and 1 types (3.5%) of the others. it become data for knowing social and dietary culture of the time. And it is for presenting fundamental material of possibility of modern rice cake.

        This is a basic study of Cheong-song mineral water, which has high contents of Ca and Mg for making noodles as well as for general cooking. The test results of the noodles manufactured and cooked with mineral water were compared to those manufactured and cooked with distilled water and tap water. Noodles manufactured with mineral water showed higher values than others in the cooked weight, volume, water absorption ability, turbidity, lightness (L) and redness (a) on the minus scale. This means that we can manufacture cooked noodles that have high weight, high volume, high water absorption ability and high lightness (L) along with a slight green color with Cheong-song mineral water. Cooked noodles manufactured with mineral water showed significant differences in the cooked weight and volume compared to those manufactured with distilled water. Also, cooked noodles manufactured with mineral water showed significant differences in moisture absorption, turbidity, lightness (L), redness (a) and yellowness (b) compared to those manufactured with distilled water and tap water. Commercial noodles cooked in mineral water showed significant differences in the cooked weight and redness (a) compared to those cooked in distilled water and tap water. Further, commercial noodles cooked in mineral water showed significant differences in weight, volume and brightness (L) compared to those cooked in distilled water.

        In order to study the cooking characteristics of four rice cultivars of Seolhyangchal, Baegjinju, Ilpum and Haiami, we investigated the relationship between the textures of cooked rice and their physicochemical properties. Different levels in grain weight. length/width ratio and amylose content were observed among the four rice cultivars. There was no significant difference in the amylopectin chain length distribution among the cultivars. Water absorptions of rice grains during soaking were completed between 30 and 40 min, with Haiami showing the slowest absorption. Significant differences in the viscosity properties of rice flour were found by a Rapid Visco Analyser. Baegjinju with low amylose content had the highest viscosity in paste breakdown. According to the DSC results of rice starches, there were significant differences in the onset, peak and conclusion temperatures of the endothermic peak. Gelatinization enthalpy showed energy content changes between 4.20 and 6.97 J/g, with the lowest change in Haiami. Texture properties of cooked rice were assessed using a Texture Analyzer, which showed that the hardness of cooked rice was decreased with soaking than without soaking. However, this finding was not applicable for Haiami rice.

        This article examines the types and cooking methods of Soondae (Korean Traditional Sausage) as recorded in 12 books of the Joseon dynasty (1392-1909). The ingredients used in Soondae during the Joseon dynasty were dog meat, beef, pork, lamb, and fish. There were no recorded mentions of Soondae in the early Joseon dynasty, but by the middle period there were three different dishes recorded. By the late era of the Joseon dynasty that number had increased to twelve. During the middle era of the Joseon dynasty, one kind of Soondae was prepared using dog meat, one using beef, and one using pork. By the late Joseon dynasty, there were six types of Soondae prepared using beef. They also had three kinds of Soondae prepared using lamb and two using fish, one using pork by that time. The frequency of the Soondae ingredients during the Joseon dynasty in order were beef (46.7%), lamb (20%), pork (13.3%), fish (13.3%), and dog meat (6.7%). Further study will be conducted on recipes and ingredients recorded in these old books to develop a standardized recipe in order to make Soondae appealing to a global palate.

        "Japji" was an old cookbook written in 1721. There are 27 types of foods recorded in "Japji"; 10 descriptions of Byeonggwaryu (rice cakes and cookies): Yakgwa, Junggye, Mandugwa, Chaesugwa, Umujeonggwa, Dongajeonggwa, Baekjapyeon, Aengdupyeon, Toranbyeong, and Yeot; and 16 descriptions of Chanpumryu (side dishes): Jinjumyeon, Jeunggyetang, Geumjungtang, Eoreumtang, Changjajjim, Gajijjim, Oejjim, Dubuseon, Dubuneureumi, Geneureumi, Gesanjeok, Hodojaban, Jeonyak, Seokryutang, Sungeojuak, and Yangmandu. There is also a description of Gugija (Chinese wolfberry) liquor. Here, comparative analysis based on culinary science was carried out on the Korean foods recorded in "Japji" as well as the similar foods recorded in "Gyuhapchongseo" (Women's Encyclopedia) written around 1815. Of the 27 types of Korean foods recorded in "Japji", 13 were also found recorded in "Gyuhapchongseo". The time period for "Japji" can be assumed to be 1721 based on the fact that it is written in a cursive handwriting style of Hangeul, that chili was never used as an ingredient, and that the word "Shinchuknyeon (辛丑年)" was transcribed at the beginning of the book. The dating method also included considerations of whether Neureumi was used or not as well as changes in its cooking style.

        본 연구는 친환경적으로 시금치 노균병을 방제하기 위하여 식물정유, 길항미생물 및 난황유의 병발생 억제효과를 검정하여 화학농약 대신에 이용할 수 있는 친환경제제로서의 가능성을 검토하였다. 5종의 식물정유 가운데 노균병 방제효과는 1회 처리구와 1주 간격 2회 처리구 모두 Eucalyptus approximans 오일의 병원균 억제효과가 60% 정도로 가장 높은 것으로 나타났다. 반면에 토양에서 선발된 길항균 세 종류의 시금치 노균병 방제효과는 모두 20% 이하로 식물정유 처리보다 낮게 나타났다. 난황유 0.3%와 0.5%농도에서 1주일간격 2회 처리구에서 병원균 억제율이 각각 84.5%와 91.5%로 억제되어 가장 효과가 우수한 것으로 나타났다.

        This study analyzed Korean traditional foods and western foods in the field of 'dietary life' in Practical Arts curriculums, and developed the fusion-food cooking activity program for elementary school students. Firstly, potatoes, dumplings coated with bean paste, simple side dishes are discussed in the first curriculum. The second curriculum discussed only traditional foods and the third curriculum considered more traditional foods than western foods including bread. From the fourth curriculum to the sixth, traditional foods were mainly discussed and both traditional foods and western foods were mentioned evenly in the seventh and revised 2007's curriculum. Secondly, this study developed 'fusion-food cooking activity' program which helps students not only to learn the meaning, kinds, history, and related customs of Korean traditional foods; kimchi, Korean pizza, rice cake, but also to learn and practice cooking fusion-foods covering traditional foods.In conclusion, it can be assumed that the 'fusion-food cooking activity' program developed in this study improves interest in Korean traditional foods amongst elementary school students, and helps students to understand the reputation and value of traditional foods. Therefore fusion-foods cooking activity containing traditional foods which are not discussed in this study should be studied and developed more in the future.

        The current research aims to verify whether distance learning can be adopted in practical cooking class for Korean foods in a two-year college. The distance learning education can be a supplementary method to the traditional cooking class. The face-to-face teaching method and the distance learning method were compared in order to determine which of the one is more effective teaching method in the practical cooking class. The results of the present experimental study were analyzed based on the participant's learning expectation and satisfaction, the evaluation of the experimental process, and the academic performance. The results of this study showed that the participants in the face-to-face class evaluated their class experience higher than those in the distance learning class with respect to the participant's learning expectation and satisfaction, and the evaluation of the experimental process. On the contrary, regarding the academic performance, the participants in the distance learning class showed higher scores than those in the face-to-face class. The end result supports the claim that the distance learning method is more effective in the participants for gaining cooking knowledge.

        This study examined the types and cooking methods for dasik (traditional pressed sweet), as recorded in 16 old Joseon dynasty (1392-1909) studies. The ingredients used in dasik during the Joseon dynasty were categorized into cereal powders, tree fruits, flower powders, root clods, dry-fish beef powders, and vegetables. In the early, middle, and late eras of the Joseon dynasty, 1st set (two, five, and 70 kinds of dasik), 2nd set (two, four, and 16 kinds of dasik) were prepared using cereal powders, and during the middle and late eras of the Joseon dynasty one and 22 kinds of dasik were prepared using tree fruits. During the late eras of the Joseon dynasty, seven kinds of dasik were prepared using flower powders, 11 kinds of dasik were prepared using root clods, 12 kinds of dasik were prepared using dry-fish beef powders, and two kinds of dasik were prepared using vegetables. The frequency of the ingredients were in the order of Huek-im (黑荏), Hwang-yul (黃栗), Jin-mal (眞末), Song-wha (松花), and Nok-mal (菉末) during the Joseon dynasty. To prepare dasik, the ingredients were mixed with honey, soy sauce, sesame oil, pepper, and water or ground and shredded to prepare for pressing and for abstract dasik, respectively. The appearance and taste of dasik varied, thereby resulting in nutrient supplementation, as the types of ingredients increased throughout the Joseon dynasty. This observation may be associated with the commercial industrial development that prevailed during the late Joseon dynasty. Further investigation will be conducted on the recipes and ingredients recorded in these old studies to develop a standardized recipe for the globalization of dasik.
