        Physicochemical properties of cherry tomato dried using the conventional hot air (HA) and superheated steam (SHS) combined with either HA or far-infrared (FIR) were measured to evaluate the effects of combined drying process on the product quality. Conventional HA drying caused the greater extent of water removal than that of SHS combined with HA or FIR due to comparatively its longer drying time, resulting the lower water activity. Total acidity of cherry tomato produced by combined drying processes was slightly lower than that of conventional HA drying. Application of SHS combined with FIR resulted in higher retention of vitamin C and lycopene content with faster rehydration capacity than those of both conventional HA and SHS with HA drying. These results suggested that SHS combined with FIR would replace the conventional HA drying process successfully in production of dried cherry tomato with appropriate quality characteristics

        Spray freeze-drying (SFD) is a comparatively new method of producing biopharmaceutical powder preparations. In this study, Lactobacillus casei (IFO 15883)was spray freeze-dried to obtain a fine probiotic powder. The survival rate of L. casei in the powder after the SFD process was measured using plate agar counting. To improve the survival rate of L. casei during the SFD process, various experimental conditions were carried out. Among five growth media compositions, in Lactobacilli MRS broth with 1% mannose and 0.1% CaCO3, the viability of the freeze-dried powder was not significantly different from that of the initial powder (p>0.05). The most effective air pressure and protective agentduring SFD were 20 kPa and buffered peptone water (BPW), respectively. Scanning electron microscopy (SEM) was applied to estimate the physical structure and properties of the particles. SFD probiotic particles were of various shapes and sizes with porous structures under different SFD conditions. The average diameter of optimized probiotic powder particles with annealing was 24.8 μm. The survival rate of the final SFD probiotic powder under conditions was 97.7%.

        In this study, a method to produce a fine volatile powder extracted from shiitake mushrooms using spray freeze-drying (SFD) was investigated. The analysis of the water-soluble aromatic compounds was carried out by headspace solid phase micro-extraction (HS-SPME) coupled withgas chromatography-mass spectrometry (GC-MS). Scanning electron microscopy (SEM) and laser particle size analysis were applied to characterizethe physical structure and size distribution of the SFD-derivedparticles. Eleven key volatile compounds were identified in the extracts of shiitake mushroomspre- and post-SFD. Recoveries of aromatic volatiles ranging from 30.9 - 82.9% were observed in the overall flavor profile results from the powder obtained with SFD. SEM analysis demonstrated that the particles of the aromatic powderwere spherical in nature, having highly porous surfaces andmean diameters of 19.3 μm.

        In the present study, four edible mushrooms, Lentinula edodes, Agaricus bisporus, Pleurotus ostreatus, and Pleurotus eryngii, were air-dried or freeze-dried for a certain period of time. After finely ground the materials, their beta-glucan contents were measured. Beta-glucan is a polysaccharide of plant and fungal cell wall and also a dietary fiber. It has an effect on stimulating immune cells and decreasing cholesterol. In the mushroom materials used in this study, beta-glucan contents were measured as 11-16%. Among them, P. ostreatus represented the highest contents, 16%. The authors also examined the contents of polyphenol, which is a phenolic compound known to have antioxidant activity. The polyphenol concentrations of the selected mushrooms were measured in 1 mg/ml of each sample prepared by hot-air drying and freeze-drying, respectively. As a result, 28-32 mg/ml of polyphenol was measured in hot air dried samples of P. ostreatus. In P. eryngii, air-dried samples had 6 mg/ml more polyphenols than freeze-dried ones, while in P. ostreatus, the former had 10 mg/ml more than the latter, indicating that the polyphenol contents in mushrooms can be changed by the different drying treatments. In other words, for P. eryngii and P. ostreatus, hot-air drying is more suitable processing method than freeze-drying in the light of physiological activity.

        A. auricular-judae cultivars, ‘Yong-a’ was cultivated in JARES on 2015. Ear mushroom have been consumed the form of dried mushrooms imported from china, but the production and consumption of domestic ear mushroom have been increasing recently. However, how the different drying methods affect the quality of domestic varieties is not clear. Therefore, we examined the effects of drying methods to improve the competitiveness of dried ear mushrooms using domestic cultivar, ‘Yong-a’. Ear mushroom samples were dried using sun-drying and hot air drying(50, 60°C) and combined of two methods(hot air drying at 50, 60°C after 3,6 and 9 hours sun drying) and drying time, rehydration ratio, color and hardness, vitamin D2 contents were evaluated. Drying time was the fastest at 60°C hot air drying(11.5h) and the slowest at 50°C hot air drying(16h) and drying time was shorter as the sun drying time was longer. The rehydration ratio was the highest at 60°C hot air drying(18.6%) and increased as the drying time decreased. After drying and rehydration, the color showed no significant difference between drying methods. The hardness of rehydrated mushroom was highest at sun drying and 60°C hot air drying. The contents of ergosterol were not significantly different by drying methods. However, vitamin D2 was lowest at 50 °C and 60°C hot air drying (4.22mg%, 3.87mg%) and highest at sun drying and 50°C hot air drying after 6 hours sun drying (12.52mg%, 12.99mg%). vitamin D2 contents was higher at 50°C hot air drying than 60°C. According to the results of color, hardness, vitamin D2 contents of dried ear mushroom, sun drying is the best method. When the sun drying is not possible, hot air drying at 60°C is suitable, but it is better to use sun drying method to increase the vitamin D2 contents.

        Hay-making is one of the most common forage preservation practices in livestock operations. The objective of hay-making is to minimize nutrient loss by shortening field drying time. Measuring the impacts of cutting height of forage crop is necessary to optimize hay production balancing yield and quality, in order to obtain substantial biomass increase through harvest of regrowth. This experiment was conducted to investigate the impact of cutting height of rye (Secale cereale L.) on drying rate and hay quality. Heading stage rye was harvested at 8cm or 15cm stubble heights. Hay was daily tedded at 09:00 and sampled at 09:00, 13:00 and 17:00 to determine moisture content (MC). After two month of preservation, CP (crude protein), ADF (acid detergent fiber), NDF (neutral detergent fiber), IVDMD (in vitro dry matter disappearance), TDN (total digestible nutrient), RFV (relative feed value), DM (dry matter) loss, visual scores and total fungi count were determined for estimation of hay quality. Cutting height at 15cm could enhance the drying rate and CP content (p<0.05), but also increases DM loss (p<0.05) compared to cutting at 8cm. Cutting heights did not affect ADF, NDF, IVDMD, TDN and RFV value (p>0.05). Visual scores of rye hays cutting at 8cm and 15cm, ranged from 83 to 85. Cutting at 8cm tended to maintain higher core bale temperature and fungal count than cutting at 15cm during preservation, but there was no significant difference.

        This experiment was carried out to enhance the availability of blackberry. Since it is difficult to use blackberry as a fresh fruit, we investigated the quality characteristics of blackberry powder obtained by various drying methods (freeze drying and hot-air drying at 40~80℃). The L- and b-values of freeze-dried powder was higher than hot-air dried powder. The pH (3.2) was lowest and the acidity (14.4%) was highest in freeze-dried powder. In freeze drying, the brix degree was 65.7 °Bx, but it increased from 54.7 °Bx to 68.5 °Bx with increasing temperature during hot air drying. The total polyphenol and flavonoids contents were the highest in freeze-dried powder, at 9.3 and 6.2 mg/g, respectively. The levels increased as temperature increased in hot air drying. Anthocyanin content in freeze-dried powder was 8.51 mg/g, while it sharply decreased to 1.17~2.45 mg/g in hot-air drying. Vitamin C content in freeze drying (979.4 μg/g) was higher than that in hot-air drying (48.3~303.2 μg/g). The sample concentration required for 50% reduction of DPPH free radical scavenging (RC50) was 79.7 μg/mL in freeze drying, and showed high antioxidant activity. Also it decreased from 122.4 μg/mL to 87.7 μg/mL with temperature increase during hot air drying. We therefore conclude from the above results that freeze drying is more suitable for the production of blackberry powder, because this method showed high value of chromaticity, total polyphenol, flavonoid, anthocyanin content, vitamin C and antioxidant activity.

        The purpose of this study was to verify the drying characteristics of steamed sweet potato and to establish optimal drying conditions for far-infrared drying of steamed sweet potato. 4 kg of steamed sweet potato was sliced to thicknesses of 8 and 10 mm, and dried by a far-infrared dryer until a final moisture content of 25±0.5%. The far-infrared dryer conditions were an air velocity of 0.6, 0.8 m/s and drying temperature of 60, 70, and 80oC. The results can be summarized as follows. The drying time tended to be reduced as temperature and air velocity for drying increased. The Lewis and Modified Wang and Singh models were found to be suitable for drying of steamed sweet potato by a far-infrared dryer. The color difference was 35.09 on the following conditions: Thickness of 8 mm, temperature of 80oC, and air velocity of 0.8 m/s. The highest sugar content (59.11 oBrix) was observed on the conditions of a thickness of 8 mm, temperature of 80, and air velocity of 0.8 m/s. Energy consumption decreased on the conditions of higher temperature, slower air velocity, and thinner steamed sweet potato.

        본 논문은 국내 원전의 습식저장조에 저장 중인 경수로형 사용후핵연료를 금속겸용용기를 이용해 건식으로 운영하기 위한 운영공정을 개발하는 것이다. 국내 경수로형 원전의 사용후핵연료는 1990년대 초부터 습식으로 소내에서 운반을 한 경험은 많으나 건식으로 운전한 경험은 전혀 없는 실정이다. 이에 따라 금속겸용용기를 운영할 수 있는 세부 운영공정을 개발하 였으며 주요 운영공정에서 금속겸용용기의 주요 구성품 및 사용후핵연료의 안전성이 유지됨을 확인하였다. 단기운영공정은 총 21시간 내에 이루어지도록 절차를 수립하였고 단계별로 허용운전 시간(15시간 습식공정, 3시간 배수공정, 그리고 3시간 진공공정)도 제시하였다.

        This study evaluated the effect 3 types of conditioning (Untreated, Impeller, Roller) and the number of times for tedding (rake-teder) performed in one day on the drying rate of tall fescure hay. The experiment was performed at The forage site of Cheonan-si seongwhan-eup National Institute of Animal Sciencee. It took 3 days to make tall fescue hay. The Impeller and Roller conditioning types shortened the haymaking period by 1 day compared to untreated hay. Impeller and roller samples had less than 20% of water content by the 23rd-day at 13 o’clock. Tedding frequency failed to affect haymaking. There was no correlation between the three types of conditioning or tedding frequency and acid digestible fiber (ADF), neutral detergent fiber (NDF), total digestible nutrients (TDF), crude protein (CP), or relative feed value (RFV) in tall fescue hay. CP was 12.5~12.9% for the three types of conditioner with 1 or 2 times of tedding a day, Threrfore, conditioner types and gedding frequency had no significant effect on CP.

        The total polyphenol and physiological activities of Pleurotus ostreatus 30% fermented ethanol using different drying methods and extraction periods were investigated. Based on the observed polyphenol content and physiological activity, freezedrying showed better results than hot air-drying method for P. ostreatus extracted with 30% fermented ethanol for more than 15 days. The total phenolic compound content of ‘Gosol’ following thefreeze-drying method for 15 days showed the highest value of 0.49±0.02 mg/mL. Freeze-drying with extraction for 30 days for ASI 2344 showed the highest antioxidant activity based on the DPPH radical scavenging rate of 35.50±3.29%. Freeze-drying ‘Gosol’ for 30 days resulted inthe highest anti-inflammatory and nitrite scavenging activity of 48.40±3.38%. Our results showed that P. ostreatus is a functional food.

        The physiochemical properties of dried yam (Dioscorea batatas) by freeze dryer, cold-air dryer or hot-air dryer were examined for chromaticity, water absorption index (WAI), water soluble index (WSI), rehydration, viscosity properties and pasting properties. Freeze dried yam was maintained higher degree of lightness and higher WAI and WSI than those of cold-air or hot air dried one. In the case of rehydration, freeze dried yam was restored within one hour. The viscosity properties of freeze dried yam were the highest viscosity in all shear rates. Freeze dried yam was milled by roll mill (RM), pin mill (PM) or jet mill (JM) to evaluate for particle size, starch damage, pasting property and microstructure. Particle size was JM < PM < RM as 13.85~112.50 μm. In the result of starch damage, it was the highest value as 8.83 in JM, was the lowest value as 7.47 in RM. In pasting property, JM had relatively low viscosity at all shear rates. In the Microstructure by measuring scanning electron microscope, JM particle surfaces were rough with high starch damage, and particle size was confirmed fine particles in JM.

        In this study, we investigated the effects of pre-soaking in salt and sugar solution prior to air drying at 50℃ on the characteristics of dried apples. Pre-soaking solutions included single solutions of salt 2% and sugar 2%; and combined solutions of salt 2%+sugar 2% and salt 2%+sugar 5%, respectively. The effects of pre-soaking condition and drying were evaluated in terms of moisture content (MC), water activity, color, antioxidant activity determined by DPPH radical scavenging activity, shear force, microbial contents, and sensory evaluation of apple slices. The control sample without pre-soaking showed the most rapid drying rate; in addition, the single solutions showed higher MC and water activity after drying time of 120 min, as compared to combined solutions. In all samples, MC and water activity showed high correlation coefficients of 0.91 to 0.97; whereas, shear force was negatively correlated with MC and water activity. The single solution of salt 2% showed decrease in change of color, including L, a, and b values, and the number of aerobic bacteria during drying. In addition, highest antioxidant activity and values of sensory preferences were observed in the dried apple pre-soaked in single solution of salt 2%.

        Recently, semi-dried sweet potato is popular as a natural snake for children’s dessert. The drying condition was optimized to obtain high quality of sweet potato by oven drying process. The mashed yellow and chestnut sweet potato was dried using the oven drier at different temperature (50, 60, 70, and 80°C) then evaluated for the moisture content, appearance observation, texture properties, and sugar contents and sensory test in every 2, 6 and 12 hours. During the dehydration and drying process, the ending point of moisture content divided in three zone from 0-2 hour, 4-6 hour and 8-12 hour. The moisture content was dramatically decreased from 0 hour - 8 hour, but after 8 hour there is no significant decrease. Yellow sweet potato dried at 80°C for 6 hours was investigated as good product base on the sensory test, hardness value, and color appearances as compared to chestnut potato.

        Garlic (Allium sativum) has been used as a medicinal plant due to its various functionalities such as reduction of cholesterol levels. The purpose of this study was to optimize conditions for the production of microencapsulated garlic powder (MGP) coated with whey protein isolate (WPI) to improve its production yield. WPI was mixed with distilled water followed by magnetic stirring at 500 rpm for 12 h to hydrate it completely. Garlic powder (GP) was added into the WPI mixture. Ratio of GP to WPI was 1:1. Subsequently, GP-WPI mixture was homogenized, and then spray-dried. To maximize the production yield of MGP, variables such as the mixing time and homogenizing condition such as rpm and time were tested. The optimum conditions for producing MGP were found to be as follows: GP and WPI mixing for 1 h and homogenizing at 8100 rpm for 10 min which improved liquid flow rate during spray drying process. The production yield of MGP under optimum conditions was 25.6 g/h. The results of this study might provide scale-up parameters on applications of GP for its commercialization.
