        Worldwide consumption of vegetable soybean bas been increasing recently, hence it is necessary to produce good quality of soybean in our farms. In the process of vegetable soybean production threshing and seperation work accounts for about 80% of overall labor. Therefore, developing of the vegetable soybean thresher is necessary to reduce the cost of labor. The purpose of this study is to acquire the basic informations to design of the vegetable soybeans-thresher. We make the experimental system which measure the physical properties and investigate the detachment forces. Also, We calculated the minimum speed of threshing cylinder. The result are as follows; 1. The average length of soybean stem is 68.2cm. 2. The length of soybean pods are seen as 61.3mm for 3 grain, 52.6mm fer 2 grains and 41.0mm fer 1 grain 3. The widths of soybean pods are seen as 14.1mm fer 3 grain, 13.8mm fer 2 grains and 13.4mm fer 1 grain. 4. The weights of soybean pods are seen as 4.1grams for 3 grains, 2.7grams for 2 grains and 1.4grams for 1 grain. 5. The average detachment forces of pods are seen as 1.5kgf for 3 grains, 1.2kgf for 2 grains and 0.8kgf for 1 grain respectively For 1 grain, the detachment force of pods ranges from 0.2kgf to 1.4kgf. For 2 grains, the minimum detachment force of pods is seen as 0.6kgf and the maximum one is seen as 2.5kgf. For 3 grains, the minimum detachment force of pods is seen as 0.7kgf and the maximum one is seen as 2.7kgf. 6. The minimum speed of threshing cylinder is shown 6.83m/s.

        The objective of this study is to provide a fundamental data to improve meals of the college foodservice operations serving more than 300 meals per day through evaluating changes in; total vitamin C contests, water contents, and pH, in the process of handling such foods as soybean sprout cooked and of fresh vegetable salads. This study, also, tried to identify nutrition reduction, step by step, to minimize nutrition loss. 1. In handing COOKED SOYBEAN SPROUTS, total vitamin C contents were higher after wash(1.54%mg%) than other cooking methods adopted in university meals(1.08mg%), however, total vitamin C contents was significantly lost during boiling step. 2. Significant loss of total vitamin C and water content in the FRESH VEGITABLE SALADS was detected in the process of washing and cutting vegitables. Especially,'cabbage' lost 20% of total vitamin C in the process of 'soaking in water', which was one of preparation process 3. Significant loss of vitamin C was observed after 6 hours of HOLDINC AFTER COOKING but it can be reduced through holding under lower temparature, in case of soybean sprouts and fresh vegitable salads. pH became acidic as holding time expanded. WATER CONTENT of cooked soybean sprouts decreased up to 4 hours holding time, however, it increased when we checked at after 6 hours' of holding time. Water content continuously decreased up to 6 hours of holding time in case of FRESH VESITABLE SALADS with the statistically significance level.

        제주도와 남부지방에서는 콩잎을 채소용으로 이용하여 고기와 생선을 쌈사서 먹는데 이용해 왔으며, 주로 지역의 재래종이나 일본에서 도입된 ‘단파흑두’를 재배해왔다. 그러나, 이들은 잎 크기가 균일하지 않아 상품성에 문제가 있었다. 그러므로, 쌈용 콩잎의 채소용 품종개발이 필요하다. 콩잎의 채소용 ‘청엽1호’ 품종이 2009년 식량원에서 개발되었다. ‘청엽1호’는 내도복 다수성 품종인 ‘일품검정콩’과 대립이며 잎이 큰 ‘대황콩’을 교배한 품종이다. ‘청엽1호’는 꽃색이 백색, 검정색 종피, 황색 자엽, 구형의 종자모양, 100립중이 35.8g인 대립종이다. 또한, 콩잎의 채소용 적성으로 개화기가 늦어 채엽기간이 길고 잎이 크고 둥근 난형, 잎색이 연한 녹색, 내도복성, 마디의 수가 많으며, 줄기의 두께가 두꺼워 채엽시 잘 부러지지 않는 특성을 가진다. ‘청엽1호’의 비가림재배시 잎 수량은 헥터당 18.44톤으로 대비품종인 ‘단파흑두’보다 6% 높았다. 콩잎의 기능성 성분으로 이소플라본 함량이 잎 g당 809 ㎍으로 대비품종보다 63% 높았다. 이상과 같이 ‘청엽1호’는 콩잎을 채소용으로 이용하기에 매우 적합한 품종이다.

        Nokwon, a new cultivar for vegetable soybean, was developed from the cross between Keunolkong and Hyangnam-1 and released in 2006. The pedigree of Nokwon, designated as Milyang 153 in 2003, was SS96425-2B-11-4-1-1-1. Nokwon, used as a vegetable soybean was characterized by dark green pod, large seed, very short plant height, and lodging resistance. Nokwon has determinate growth habit, white flowers, gray pubescence, oval leaf shape and brown pods at maturity. The mature seeds have a greenish yellow seed coat with brown hilum and yellow cotyledon. In Korea, Regional Yield Trials (RYT) for vegetable soybean from 2004 to 2006, Nokwon shows strong tolerance to soybean mosaic virus and lodging in fields. Fresh pods of Nokwon harvested at the beginning of August, and stem height was 11cm shorter than 45 cm of Hwaeomputkong. In the same tests, fresh pod of Nokwon (11.4 ton/ha) yielded 14% higher than Hwaeomputkong (10.0 ton/ha). Nokwon had 5.9 cm fresh pod length, 13.1 mm fresh pod width, 75.4 g seed weight per 100 green seed, 39.4% green seed protein content, and 17.3% green seed oil content.

        최근 들어 콩을 채소처럼 먹을 수 있는 풋콩에 대한 관심이 증가하여 그동안 풋콩 전용품종들이 개발 보급되어 왔으나 대부분 조생종인 하대두(올콩)형이었며, 과거 우리 선조들이 이용했던 검정 및 갈색 종피를 가진 유색콩을 재배하여 종실에 착색이 시작되는 성숙시(R7 단계)에 수확, 9 10월 추석 송편속이나 밥밑용으로 이용하는 풋콩품종은 적었다. 따라서 콩의 국내 자급율 향상과 이용도를 다양하게 확대할 목적으로 9 10월경 수확할 수 있는 적합한 품종을 선발하기 위하여 유색콩 품종들의 생육 및 수량을 포함한 풋콩 특성을 비교한 결과를 요약하면 다음과 같다. 1. 유색 장려품종 6개와 재래품종 3개 등 9품종을 공시하여 발아특성을 비교한 결과 출아는 립중이 무거울수록 지연되는 경향을 보였으나 출아율은 유의차가 없었다. 2. 수확기는 검정올콩이 7월 30일로 가장 빨랐으며, 논산재래가 10월 21일로 가장 늦은 극만숙종이었다. 3. 경장은 25~104cm 로 넓은 범위를 보였으며, 아산재래가 104 cm로 가장 커서 도복지수가 높았으며, 검정올콩이 25 cm로 가장 작았다. 4. 개체당 협수는 9~111 개의 분포를 보였는데 가장 많은 품종은 일품검정콩으로 111개이었고 가장 적은 품종은 아산재래로 9개이었다. 5. 풋콩 특성 중 2립협 이상 비율이 높은 품종은 검정올콩이 82%로 가장 높았으며, 황금콩과 검정콩1호가 각각 78%와 73%로 비교적 높았다. 6. 10a당 생협수량은 일품검정콩이 1,567 kg으로 가장 많았으며, 선흑콩 1,468 kg과 갈미콩 1,397 kg으로 많은 수량을 보였다. 따라서 공시된 9품종 중에서 9 10월에 추석 송편속이나 밥밑용으로 이용할 수 있는 것으로 상품성에서는 검정올콩, 황금콩 및 검정콩 1호가 높으나 수량이 너무 낮았고, 수량성이 좋은 일품검정콩, 선흑콩, 갈미콩이 풋콩 재배에 적합한 품종이라고 판단된다.

        콩의 용도는 메주나 장류 또는 두부로 이용하는 장류콩, 나물로 이용하는 나물콩, 혼반용으로 이용할 수 있는 밥밑용으로 이용되어 왔으나, 최근에는 콩을 채소처럼 먹을 수 있는 풋콩에 대한 관심이 증대되고 있는 실정이다. 따라서 본 시험은 풋콩재배에 기초 자료를 제공하기 위하여 검정용 및 갈색콩 품종들의 풋콩재배시 가지풋콩의 상품성을 향상시키면서 풋콩수량을 증대시킬 수 있는 적정재식거리 구명을 위한 실험으로 그 결과를 요약하면 다음과 같다. 1. 재식거리는 파종으로부터 개화까지의 소요일수, 수확까지의 소요일수 및 도복에 영향을 주지 않았다. 2. 경장은 밀식할수록 증가한 반면 협수, 분지수, 개체당 협수, 분지당 협수, 경협중 및 2+3립협의 비율은 밀식할수록 감소하였다. 3. 풋콩의 크기는 재식밀도간 유의적인 차이는 없었으나, 풋콩의 수확지수는 밀식할수록 낮았다. 4. 밀식을 하면 풋콩의 수량은 증대하지만 경협중, 분지 당 협수 및 2+3립협의 풋콩수량을 고려한 가지풋콩으로의 상품성을 고려할 때 적정재식밀도는 선흑콩과 일품검정콩은 60×25cm , 갈미콩은 60×35cm 이었다.

        A field experiment was conducted in Agronomy farm at an altitude of 1350 m. above sea level in a randomized complete block design with three replications and eight treatments on vegetable type soybean in 2005. The objective was to see the effect of vermicompost alone and in combination with Rhizobium inoculum and mineral fertilizers on the yield of vegetable soybean. The result showed higher number of nodules from the non inoculated plot, however, the nodules weight was highest from the inoculated plots. No significant difference was notice statistically on roots and shoots dry weight. Soybean grain was obtained highest (32.3%) over the non inoculated plot followed by vermicompost plus inoculated, however, there was non significant difference. There was a slight increment on grain and straw yield from the inoculated plots over the non inoculated.

        Esterification of soybean oil with methanol was investigated. First of all, liquid-liquid equilibriums for systems of soybean oil and methanol were measured at temperatures ranging from 40 to 65oC. Profiles of conversion of soybean oil with time were determined from the glycerine content in reaction mixtures for the different kinds of catalysts, such as NaOH, CaO, Ca(OH)2, MgO, Mg(OH)2, and Ba(OH)2. The effects of dose of catalyst, cosolvent and reaction temperature on final conversion were examined. Esterification of waste vegetable oil with methanol was investigated and compared to the case of soybean oil. Solubility of methanol in soybean oil was substantially greater than that of soybean oil in methanol. When the esterification reaction of soybean oil was catalyzed by solid catalyst, final conversion was strongly dependent on the alkalinity of the solid catalyst, and increased with the alkalinity of the metal. Hydroxides from the alkali metals were more effective than oxides. When Ca(OH)2 was used for the esterification catalyst, maximum value of final conversion was measured at dose of 4%. When CHCl3 as a cosolvent, was added into the reaction mixture of soybean oil which catalyzed by Ba(OH)2, maximum value of final conversion was appeared at dose of 3%. When waste vegetable oil was catalyzed by NaOH and solid catalysts, high final conversion, over 90%, and fast reaction rate were obtained.

        Genetic diversity of 47 East-Asian vegetable soybean was characterized by means of agro-morphological traits and RAPD markers. A field trial was conducted to evaluate 14 agro-morphological traits. To study RAPD-based DNA analysis, a total of sixty 10-mer random primers were screened. Of these, 23 polymorphic markers in 16 varieties used for screening. Among 207 markers amplified, 48 were polymorphic for at least one pairwise comparison within the 47 varieties. A higher differentiation level between varieties was observed by using RAPD markers compared to morphological markers. Correspondence analysis using both types of marker showed that RAPD data could fully discriminate between all varieties, whereas morphological markers could not achieve a complete discrimination. Genetic distances between the varieties were estimated from simple matching coefficients, ranged from 0.0 to 0.640 with an average of 0.295~pm 0.131 for morphological traits and 0.042 to 0.625 with an average of 0.336~pm 0.099 for RAPD data, respectively. Cluster analysis based on genetic dissimilarity of these varieties gave rise to 4 distinct groups. The clustering results based on RAPDs did not match with those based on morphological traits. Geographical distribution of most varieties in each of the groups were not well defined. The results suggested that the level of genetic diversity within this group of East-Asian vegetable soybean varieties was sufficient for a breeding program and can be used to establish genetic relationships among them with unknown or unrelated pedigrees.

        From the evaluation of physical properties such as springiness, gumminess, adhesiveness, chewiness and hardness by the texture analyzer, vegetable soybean lines with green seed-coat were best as compared with those with black, brown, mixed, and yellow seed-coats. A panel test evaluated on the basis of taste, sweetness, chewiness, and total scores also indicated that soybean lines with green seed-coat were the best. The total scores of panel test was decreased in the order of green > yellow> black> brown seed-coat colored soybean. The mean value of sucrose content obtained by HPLC analysis was highest in black seed-coat colored soybean, and followed by green, yellow, and brown soybeans. The highest sucrose content (8.22%) was observed in 180362, a soybean line with green seed-coat. The full-season type soybeans showed much higher sucrose content than summer types which are mainly cultivated on farmer's fields for vegetable purposes. The final 13 lines selected from 300 colored soybeans showed nearly the same panel scores as Miwongreen. However, these lines had a great deal of variation in sucrose content, and much higher readings in texture analysis than Miwongreen, especially in chewiness and hardness which were the most important properties in vegetable soybeans.
