        국산밀 재배시 가축분뇨 액비를 시용하여 생육에 미치는 영향과 사료가치를 분석하여 우리밀 생산물의 소비다양화 가능성을 알아보기 위하여 본 실험을 수행하였다. 용도별 우리밀을 선발하고 청보리로 사용되고 있는 영양보리를 대조구로 파종하여 생육 및 사료가치를 조사하였다. 각 작물별 파종 15일후 유묘출현율은 액비 처리구 화학비료 및 무처리구에 비해 2.4배 높았다. 또한 시험작물 모두 초장이 액비시용구에서 약 2배 이상 증가하였다. 월동 후 최고분얼기에는 밀이 영양보리에 비해 초장은 0.7∼1.8cm 작았으나 분얼수는 1.5∼2개가 많았다. 생체중의 경우 액비처리구에서 시험에 사용된 모든 밀이 영양보리에 비해 1.01∼1.11배 높았고 연백밀이 5,102kg 10a-1로 가장 많았다. 사료가치중 단백질 함량은 액비처리로 보리와 모든 밀 품종에서 유의성있게 증가하였고 조경밀이 9.19 %로 가장 높았다. NDF와 ADF 모두 청보리와 대등하거나 높았다. TDN은 금강밀이 69.86∼72.11 %로 가장 높았고 고소밀이 64.61∼66.07 %로 가장 낮았다. 시험전후 토양 특성은 가축분뇨 액비처리를 하였을 때 EC, 유기물, 유효인산 및 치환성 양이 함량이 증가하여 화학비료와 대등한 결과를 얻었다. 이상의 결과로 국산밀을 재배할 때 가축분뇨액비를 적절히 활용할 경우 재배단가를 낮추고 곡물밀의 공급이 과잉일 경우 사료용으로 공급하여 국산밀의 소비안정성에 도움을 줄 수 있을 것으로 판단된다.

        국내 토종 자원으로 알려진 앉은뱅이 밀의 밀가루 특성 밀 과자 적성을 평가하기 위해서 경남 진주시에서 구입한 앉은뱅이 밀의 통밀가루 및 백밀가루와 중형제분기로 제분한 밀가루를 평가하였다. 앉은뱅이 밀 구입처에서 제분된 제분된 통밀가루와 백밀가루는 중형제분기에서 제분된 밀가루에 비하여 밀기울 혼입으로 인하여, 회분과 단백질 함량이 높고 밀가루 색깔이 어두웠고 침전가와 건부율 및 아밀로스 함량은 낮았다. 반죽 시간이나 안정도는 밀가루간에는 차이가 없었지만, 반죽 가수량은 밀기울을 포함한 통밀가루가 높았고, 쿠키 직경이 적게 나타났다. 중형제분기로 제분된 앉은뱅이 밀가루의 밀가루 입도와 손상 전분 함량이 각각 54.44μm와 2.46%로 연질밀 특성을 나타내었으며, 총아라비노자일란 함량과 수용성 아라비노자일란 함량이 각각 28.52%와 9.49% 로 국내 밀 품종보다 높았다. 쿠키 직경은 86.88mm로 수입산 박력분과 유사하였으며, 쿠키 표면의 균열도 쿠키 적성에 적합한 것으로 나타났다.

        We developed new two-rowed covered barley ‘Gwangmaeg’ superior to ‘Hopum’ that has been widely cultivated in Korea for using beer-materials. ‘Gwanngmaeg’ was related from the line named as ‘Iksan149’ in 2010 after yield trials test in conducted for three years from 2008. And then it was registered to ‘Plant protection right, No. 5847’ in 2016 after field experiment by KSVS(Korea Seed & Variety Service). ‘Gwangmaeg’ has distinct characteristics in winter type (IV) and mid-tall culm length which makes reduce damage by off-season heading and lodging comparing to those of ‘Hopum’. ‘Gwangmaeg’ have characteristics of cold tolerance and disease resistance to BaYMV(Barley yellow mosaic virus) and Net blotch(Pyrenophora teres). Yield of ‘Gwangmaeg’ was about 611kg/10a and 524kg/10a in upland and paddy field condition, respectively, which higher 2-4% than ‘Hopum’, however, it has no significant difference. In quality examination for beer usage, ‘Gwangmaeg’ has lager grain and higher assortment ratio than those of ‘Hopum’. In malt quality, ‘Gwangmaeg’ showed higher and better quality in malt extract rate and diastatic power than those of ‘Hopum’. ‘Gwangmaeg’ would be suitable for the area above –4℃ of daily minimum temperature in January in Korean peninsula.

        Yellow alkaline noodles were prepared with various Korean wheat cultivars including different protein and amylose contents and made from two types of noodle machines. Korean food companies and restaurants generally used noodle machine made in Korea, whereas research institutes mainly practiced with noodle machine made in Japan. Noodle dough sheet from Korean machine showed 5% higher water absorption and 30 min shorter resting period than the noodle dough from Japanese machine because of the difference of size and weight of roller in two types of the machines. In 15 Korean wheat cultivars, thickness of noodle dough sheet was positively correlated with protein content and mixograph water absorption regardless of both types of the machines. Cooked noodles from Korean machine showed higher hardness and lower springiness than noodles from Japanese noodle machine, but difference in cohesiveness of cooked noodles was not found between two different noodle machines. In the three Korean wheat cultivars with different protein content, thickness of noodle dough sheet was also positively correlated with protein content, SDS sedimentation volume and mixing time of mixograph in both types of the machines. The more protein content increased, the more hardness of cooked noodles increased regardless of both types of the machines. However, springiness and cohesiveness of cooked noodles were not significantly correlated with protein content. In waxy and partial waxy wheat cultivars, lightness of noodle dough sheet from Korean noodle machine positively correlated with amylose content. Amylose content and setback in pasting properties were positively correlated with hardness, springiness, and cohesiveness of cooked noodles while both damaged starch and breakdown were negatively correlated with those.

        Eleven RAPD primers were assessed to analyze genetic diversity of Korean wheat varieties and to develop DNA marker for cultivar identification. The average of the number of polymorphic bands was 5.2 and PIC values showed 0.48, respectively. Ten major clades were presented by phylogenetic analysis. Three cultivars containing Uri, Hanbeak and Jonong were distinct from the others in the phylogenetic dendrogram. Seven cultivar-specific fragments were detected from 11 RAPD fingerprinting among 35 wheat cultivars and they were sequenced. Four Korean wheat cultivars, Eunpa, Jopoom, Yeonbaek and Jeokjoong, were identified newly by four markers, 84, 173, 174 and KWSM011. We convince that these new DNA markers are useful for cultivar fingerprinting and are applied to marker-assisted selection in wheat breeding program.

        Wheat is one of major crop and wheat flour is used to various end-use products such as bread, cookies and noodles due to its unique characteristic of it as elasticity and viscosity. Wheat consumption has been generally increasing in not only US and Europe but also Korea. Nevertheless, gluten proteins in wheat endosperm are cause of allergy by food ingestion. Hence, studies on the allergy have been conducting and have been attracting public attention. Herein, we report studies on research trend of the issue with research papers over the last decade for suggestion of future research direction. Since 2012, studies on allergy of gluten proteins have been dramatically increased based on the number of published papers related to the issue. As results of research activities by country, the Europe accounted for 60% corresponding to the number of papers. Next US (13%), Japan (9%), China (5%), and Korea (2%) came. In Korea, studies on allergy of gluten protein are less studied. In the field of studying of gluten allergy, there are two major technologies as preclinical technology and genome research accounted for 58% and 26%, respectively. In Korea, the study on glutenin proteins which is closely related to wheat allergy is actively performed. Therefore, it can be expected that research will be become more active.

        Mixolab is suitable to evaluate mixograph and farinograph for testing dough rheology and amylopgraph for properties of starch pasting with a view to analyze protein and starch quality at the same time. Mixolab analysis revealed that water absorption and dough development time of Korean wheat cultivars were similar to it of soft wheats and flour while dough stability and protein weakening of Korean wheat cultivars were similar to it of hard wheat and strong flour. Also, starch properties of Korean wheat cultivars showed similar properties of hard wheats. There was a significantly positive correlation between mixolab and mixograph in the water absorption of dough, whereas no correlation was observed between them in dough development time and stability. Furthermore, maximum viscosity of starch and breakdown in amylopgraph were correlated to stabilities of pasting and cooking and setback in mixolab. Resultantly, in mixolab, properties of dough and protein highly and positively correlated to loaf volume, hardness of noodles, and size of cookies i.e. diameter. Moreover, positive correlation was identified between viscoelasticity of noodles and properties of protein, pasting, and setback in mixolab.

        This study was executed to establish a basis of evaluation of starch properties of Korean wheat cultivars e.g. damaged starch, swelling, and pasting properties for Korean wheat breeding program. Damaged starch is critical evaluation factor for flour milling related industry because it influences water absorption and color of dough for processing quality and preference of end-use products. The present results revealed that there was significantly high positive correlation between the results of damaged starch analysis by amperometric (SD-matic) and enzymatic (Megazyme assay) methods. Evaluation of damaged starch must be considered as one factor to evaluate properties of starch due to its accuracy and a stable efficiency for the wheat breeding program. Properties of swelling and pasting of dough were important for cooking time and texture. Nevertheless, it was impossible to evaluate starch extracted from flour in the wheat breeding program i.e. small amount of flour or small number of spikes Comparison of results of evaluation of properties of swelling and pasting with starch or flour, the evaluation using flour positively correlated with the other evaluation using starch. In addition, swelling evaluation must be considered to apply for the wheat breeding program because the result of evaluation of swelling property, which possible to evaluate with low efficiency, and the quantity of a sample is highly under positive correlation with paste peak viscosity. In the future, studies using NIR (Near Infrared) analysis must be necessary to evaluate starch properties with grains in early generation lines for improvement of wheat breeding program.

        Barley breeding program of RDA (Rural Development Administration) has been develop to new hulled barley variety that has been used for malt and beer material. Through this program, we developed new two-rowed covered barley, Imaeg, with disease resistant, lodging tolerant and good malt quality for beer and Korean traditional drink ‘Sikhye’ in 2013. Imaeg showed resistant to Barley yellow mosaic virus (BaYMV), lodging tolerant and early maturing. The regional yield trials were conducted for Imaeg as a breeding line ‘Iksan166’ during three years at four different regions. And then it was registered to Plant protection right, No. 5681 in 2015 after field experiment by KSVS (Korea Seed & Variety Service). Imaeg has I of vernalization and shorter stem length as 77cm than 7cm to control variety Hopum. Yield potential of Imaeg about 4.8ton/ha that higher about 3% in paddy field condition than control, however, it has no significant difference. In quality examination for beer usage, Imaeg has higher 1,000 grain weight (45.6g) and higher assortment ratio (93.6%) than those of Hopum as 42.6g and 90.4% respectively. In malt quality, Imaeg showed higher soluble protein, Kolbach index and diastatic power than those of Hopum significantly. In addition, Imaeg has better ‘Sikhye’ malt quality significantly in lightness of grain (58.4 L value) and growth rate (216.8%) than those of Hopum as 54.3 (L value) and 177.5% respectively. Imaeg would be suitable for cultivation at the area above -4°C of daily minimum temperature in January in Korean peninsula.

        Near infrared reflectance spectroscopy (NIRS) has been used as a rapid analysis tool to many components in cereal grains. This study was to investigate the potential NIRS application for determination of components in Korean wheat. Main components of wheat quality are protein content, moisture content, SDS-sedimentation volume and ash content. Wheat has screened for quality, hardness of seed by NIRS in CIMMYT (International Maize and Wheat Improvement Center). NIRS calibration was used as a rapid and simultaneous analysis method to determine the wheat quality components. A total of 282 wheat samples, collected from a wide range of Korean wheat cultivation region for 2 years, were analyzed by NIRS. NIRS calibration of individual components were developed using first derivation, second derivation and modified partial least-squares regression and internal cross validation method. As a result, calibration formula of protein was y=0.937x+0.786, calibration formula of moisture was y=0.922x+0.911, calibration formula of ash was y=0.933x+0.08, calibration formula of SDS-sedimentation volume was y=0.947x+2.150. NIRS calibration for wheat quality may be useful for determining protein(R2 = 93.6), moisture(R2 = 91.6), SDS-sedimentation volume(R2 = 94.3), and ash(R2 = 93.4). This study shows that 4 calibrations of NIRS is a useful application in the accurate and rapid determination of wheat quality. Therefore, NIRS could be used to rapidly determine the quality contents of wheat for grade evaluation in a purchasing of wheat cultivation region.

        Genetic variations of γ-/ω-gliadin and Spa (storage protein activator) in 40 Korean wheat cultivars were evaluated to provide genetic information for improving end-use quality in wheat breeding programs. Korean wheat cultivars were classified into 13 patterns at the Gli-1 locus based on the allelic variation using A-PAGE (acidic-polyacrylamide gel electrophoresis). Seven, five, and six alleles were identified at Gli-A1, Gli-B1, and Gli-D1 loci, respectively. Allele-specific PCR markers for γ-gliadin corresponded to specific allele at Gli-1 loci on A-PAGE, which Gli-A1f, Gli-A1h and Gli-A1l alleles corresponded to GliA1.2, Gli-B1h and Gli-B1f alleles corresponded to GliB1.2 and Gli-D1f, Gli-D1m and Gli-D1o alleles corresponded to GliD1.1. DNA markers for γ-45 and γ-42 also corresponded to the γ-gliadin patterns around 40kDa on A-PAGE, except in Sukang, Ol and Joongmo2003. However, allelic specific PCR markers for ω5-gliadin did not correspond to that of A-PAGE. Three alleles were identified at Spa-A1 locus, whereas there was no variation at Spa-B1 and Spa-D1 loci.

        Improvement of winter hardiness, lodging resistance and good quality have been recently received more attention by covered barley(Hordeum vulgare L.) breeders than ever in Korea. ‘Hyeyang’, a new covered barley cultivar with early maturing and high yield was developed by the National Institute of Crop Science, RDA in 2010. It was derived from the cross between‘Milyang87’and‘Wolsung8120’with good quality. The initial cross was done in 1999 and the selected line, ‘Iksan432’ (YB4494-B-B-21-2), showed high yield and good quality characteristics under yield trial test from 2008 to 2010. The following is the characteristics of‘Hyeyang’that is characterized as the vernalization of Ⅰ, green leaf, compact spike and long rough awns. The heading date of‘Hyeyang’were similar to‘Olbori’. The culm length was 82 cm which was 6 cm shorter than‘Olbori’. It showed the spike length of 4.3 cm, 798 spikes / m2, 56 grains / spike and 26.7 g for 1,000 grains weight. It showed similar winter hardiness and stronger resistance to barley yellow mosaic virus (BaYMV) compare to‘Olbori’. It showed higher diastatic power 235DP than that of check cultivar, ‘Olbori’. Average yield of ‘Hyeyang’ was 4.44 MT/ha in the regional yield trials carried out in four location at double cropping system in Korea from 2008 to 2010, which was 8 percent higher than ‘Olbori’. ‘Hyeyang’would be suitable for the area above –8℃ of daily minimum temperature in January in Korean peninsula.

        The ω5-gliadins are the major allergens in wheat-dependent excise-induced anaphylaxis (WDEIA). In this study, SDS-PAGE analysis was used to assign the ω5-gliadins (Gli-B1) alleles in thirty two Korean wheat cultivars, compared with eleven standard wheat cultivars for Gli-B1a~m alleles. These results were reconfirmed with their complementary Glu-B3 low-molecular-weight glutenin subunits alleles tightly linked with Gli-B1 locus revealed with 2-DGE in our previous study. As a result, one Gli-B1b, four Gli-B1d, two Gli-B1f, six Gli-B1m and nineteen Gli-B1h varieties were identified. This is the first report on revealing the Gli-B1 alleles in Korean wheat cultivars and represents valuable basic data on wheat allergy, relationship between gliadin and wheat quality, and development of hypo-allergenic wheat.

        총체생산성이 높은 밀품종을 육성하기 위해 장간, 다수성인 Kanto75/8/탑동밀/4/Bb#1/장광//STRAMCHO/3/수원220호/5/수원185호/CI 12703//관동75호///수원219호/7/F 1277에서 유래한 우량계통을 모본으로 하고, 중단간이면서 농업적 특성이 우수한 식용 밀 표준품종인 금강밀을 부본으로 하여 1998년에 농촌진흥청 국립식량과학원에서 육성하였다. 계통육종법으로 전개하여 초형이 우수하고, 장간인 SW98008-YB-7-5-1-1-2 계통을 선발하였다. 3년간 생산력검정 예비시험과 생산력 검정 본시험을 실시한 결과, 총체수량이 우수하여 ‘익산326호’로 계통명을 부여하였다. 2008년부터 2009년까지 지역적응성 시험을 수행하여 총체수량성이 높고 한해에 강한 계통으로 입증되어 2009년 12월 직무육성품종선정심의회에서 신품종으로 선정됨과 동시에 ‘청우’로 명명하였다. 그 후 국립종자원의 재배심사를 거쳐 2013년 종자산업법 제55조에 따라 품종보호 등록원부에 등록(품종보호 제4311호) 되었다. ‘청우’는 잎색이 진녹색이고, 잎폭은 중간 정도이며, 줄기는 길고 직립형태는 중간 정도로 뻗은 형태이다. 이삭은 중간 정도의 길이고, 이삭의 까락은 황백색이고 길이가 길며, 종실의 크기는 중간 정도이고, 종실색은 백색을 띄는 백립계이다. 출수기는 밭상태에서 4월 22일로 대비품종인 금강밀보다 1일 빠르고, 논상태에서 4월 24일로 금강밀과 유사하였다. 황숙기는 밭상태에서 5월 19일로 금강밀보다 2일 빠르고, 논상태에서 5월 22일로 1일 빠르다. 초장은 91 cm로 표준품종인 금강밀보다 장간형이고, 수장은 7.1 cm로 금강밀보다 0.9 cm 작은 편이지만, 경수는 1,070개/m2로 많다. 건물수량은 14.8 MT/ha으로 표준품종인 금강밀에 비해 12% 증수한 다수성이다. 조사료 품질은 표준품종 금강과 비교하여 유사하나, TDN 수량은 ha당 10.0 MT으로서 9.0 MT인 금강에 비해 높다.

        농촌진흥청 국립식량과학원에서는 용도별 품종의 다양화를 위해 답리작 적응 과자용 밀 품종 ‘고소’를 개발하였다. 고소밀은 1998년도에 연질인 고분밀을 모본으로 하고, 숙기가 빠른 올밀을 부본으로 인공교배하여 SW98148 조합을 육성하였다. 경기도 연천에서 집단재배 후 계통을 전개하여 초형과 수형이 양호하며 내한성이 강한 계통인 SW98148-YB-9-2-4-1-3-1을 2006년부터 2개년간 생산력 검정을 거쳐 ‘익산 320호’로 계통명을 부여하였다. 그 후 2008년부터 3개년 동안 지역적응시험을 실시한 결과 숙기가 빠르며 수량성이 높고, 과자적성이 우수하여 2010년 농작물 직무육성 신품종심의회에서 ‘고소’로 명명하였다. 고소밀의 파성은 Ⅱ형으로 춘파형이고, 엽색은 녹색이며 이삭은 방추형이고, 종자는 중간 크기로 적색이다. 출수기와 성숙기는 밭상태 조건에서 각각 4월 28일과 6월 7일, 논상태에서는 각각 4월 25일과 6월 4일로 비슷하다. 고소밀의 리터중(799 g/L)과 천립중(42.5 g) 은 금강밀(804 g/L과 46.7 g)보다 낮고, 내한성(4.4%)과 수발아(4.0%) 저항성이 강하고, 내도복성이 높다. 고소밀의 제분율(63.77%), 단백질(9.8%), 침전가(30.0 ml)과 글루텐(7.2%) 함량은 금강밀(73.6%, 12.6%, 50.0 ml과 10.8%)보다 낮고, 과자적성이 우수하였다. ‘고소밀’의 HMW-GS 조성은 Glu-A1에서 2*, Glu-B1에서 7+8을 나타내 금강밀과 조성이 같았으나, Glu-D1에서 2.2+12가 발현되었다. GBSS 조성은 금강밀과 같은 야생형이고, Pinb-D1은 야생형으로 금강밀과 다른 특성을 나타냈다. 지역적응시험에서 밭상태 수량은 657 kg/10a, 논상태 수량은 561 kg/10a로 금강밀보다 21%와 7% 증수하였다.

        High temperature is one of major environmental stress. Heat tolerance managing is difficult through the phenotypic selection, so marker assistant selection (MAS) using molecular markers like as RAPD, SSR etc. was tried to select useful traits for heat tolerance. Fourteen SSR markers reported by previous research were selected for this research. We tried to evaluate 14 SSR markers for MAS using 31 useful wheat resources including 24 crossing line from Turkey, six Korean wheat cultivars and Chinese spring. The average of the number of alleles and PIC values in this study were 6.14 and 0.64, respectively. Two major clades and four sub clades were grouped by phylogenetic tree using UPGMA. Four Korean wheat cultivars were distinct from other Turkey resources in the phylogenetic dendrogram. From the results, we expected that these markers were able to adapt to screening wheat genotyping for heat tolerance.

        국내 밀 수량성 향상을 위해 이삭 길이가 길고 1수립수가 많은 장수형 계통의 품질과 이들 특성과 관련된 표지인자에 대한 평가를 수행하였다. 장수형 164계통의 회분, 단백질, 침전가, 습부율, 밀가루 입자 크기와 밀가루 색택 밝기의 평균은 금강밀보다 회분과 단백질함량이 높으며 습부율은 높고, 밀가루 밝기와 입자 크기는 비슷하였으나 침전가는 낮게 나타났다. 단백질의 질적 특성에서 단백질함량은 침전가, 습부율, 밀가루 입자 크기와 고도의 정의 상관을 보였고, 밀가루의 밝기와는 부의 상관을 나타냈다. 품질특성 관련 표지인자를 평가한 결과, 장수형 164계통은 모두 Glu-A3c, Wx-A1a, Wx-B1a, Wx-D1a의 유전자형을 나타내 금강밀과 동일하였다. 장수형 계통은 주로 Glu-A1c, Glu-B1c, Glu-D1a, Glu-B3g, Pina-D1b와 Pinb-D1b의 유전자형이 많았다. Glu-A1b과 Glu-B1b 유전자형은 단백질함량이 많고, 습부율이 높은 특성을 나타냈다. Glu-D1d, Glu-B3h과 Pinb-D1b 유전자형은 다른 유전자형에 비해 회분과 단백질함량이 많으며, 침전가와 습부율이 높고, 밀가루 입자가 크고, 밀가루의 색이 어두운 특성을 보였다. 이러한 결과를 통해서 장수형 계통은 수량성 증대를 위해 필요하고, 향후 용도별 품질 우수 자원의 특성을 집적하여 용도별 다수성 밀 품종개발을 위한 자원으로 활용하고자 한다.

        국내 밀의 수량 증진을 위해 이삭 길이가 길고 1수립수가 많은 장수형 164계통(F8)을 육성하였고, 본 연구에서는 이들 계통의 주요 농업형질과 이들 특성과 관련 있는 표지인자에 대한 평가를 수행하였다. 장수형 계통은 모본인 금강밀과 비교했을 때, 단위면적당 수수와 리터중은 적고, 파종 후 출수까지 일수가 길었고, 간장, 수장, 1수립수와 단위면적당 생산량은 높게 나타났다. 농업 특성 관련 표지인자를 평가한 결과, 장수형 계통은 Rht-B1, Rht-D1, Vrn-B1, Ppd-A1, Ppd-B1 유전자 좌에서는 같은 유전자를 지닌 것으로 나타났다. 장수형 계통 중 Vrn-D1를 지닌 계통은 Vrn-D1a를 지닌 계통에 비하여 출수에 걸리는 시간이 길었지만, 이삭길이와 1수립수가 많은 것으로 나타났다. 하지만 Vrn-B1 유전자 변이는 장수형 계통의 농업형질의 차이가 없는 것으로 나타났다. 장수형은 Ppd-D1유전자 변이에 따른 간장이나 이삭 길이는 차이가 없었지만, 출수 일수와 수수는 Ppd-D1b를 지닌 계통이 많았지만, 1수립수, 천립중, 리터중과 수량은 Ppd-D1a를 지닌 계통이 높았다. 종실 특성을 나타내는 표지인자 변이는 출수 일수, 간장, 수장, 분얼이나 1수립수 및 수량에는 영향을 주지 않았지만 TaSus2-2B유전자의 Hap-L타입, TaGW2유전자의 Hap-6A-G타입과 TaCwi-A1a 가 각각의 대립 유전자형보다 천립중이 높게 나타났다. 향후 재배환경이 장수형의 농업형질 및 품질에 미치는 영향에 대한 평가가 필요하고, 만숙과 분얼이 적은 장수형의 단점을 보완하기 위한 지속적인 연구가 필요하다.

        식생활 변화에 따라 보리는 혼반용에서 점차적으로 보릿가루, 엿기름, 보리차, 새싹, 맥주, 면 등 다양한 용도로 활용될 뿐만 아니라, 건강식품으로 보리 수요가 확대되고 있어 이를 위한 용도별 고품질 기능성 보리 품종개발이 요구되고 있다. 따라서 이에 적합한 품종을 육성하기 위해 2005년에 조숙, 대립, 다수성 품종인 “큰알보리1호(IT213217)를 모본으로, 흑색 찰성 특성을 가진 “마산과맥(IT268885)/Mortoni(IT111490)” 계통을 부본으로 인공교배하여. 흑색 찰성이고 보리호위축병 저항성이면서 다수성인 취반용 ‘흑수정찰’을 개발하였다. ‘흑수정찰“은 6조이며 파성이 Ⅲ인 병성 겉보리로 이삭의 형태는 밀수형이고, 종실색은 흑색으로 까락이 길며 탈망성이 좋다. 출수기는 서둔찰에 비해 전작에서 5월 1일로 3일, 답리작에서 4월 27일로 4일 늦었다. 간장은 89㎝로 서둔찰보다 7㎝ 정도 긴 장간형으로 내도복성이며, 수장과 립수는 비슷하였고, 수수는 다소 적은 소얼성이다. 천립중(36.0g)은 서둔찰보다 2.0g 무거웠다. 병해저항성 중 보리호위축병은 저항성을 나타냈으며, 내한성은 서둔찰과 비슷하였다. ’흑수정찰’은 단백질 함량(12.5%)이 서둔찰과 비슷하나 베타글루칸 함량(6.7%)이 높고, 아밀로즈 함량(5.5%)이 낮은 찰성 품종이다. 수량성은 전작에서 4.72톤/ha으로 7% 증수, 답리작 3.75톤/ha으로 서둔찰과 비슷하였다. ‘흑수정찰’은 1월 평균기온이–8℃ 이상인 지역에 보급 될 것으로 기대 된다.
