        This study examined the cooking method in "Eumsikdimibang", "Gyuhapchongseo" and "Jusiksiui" over time. The Korean cook book, "Jusiksiui", published in the late 1800s, was mainly investigated. The results showed that"Jusiksiui" contained more than 99 foods. In particular, there were 49 side dishes, including five types of porridge three types of noodles, and four types of dumplings. Most food recipes in "Jusiksieu" are the same as those in "Gyuhapchongseo". Results of comparison between "Gyuhapchongseo" (1809) and "Jusiksiui" (late 1800's), Korea's significant archives of Korean recipes, showed that approximately 50 recipes out of 99 recipes were the same as those indicated by "Yeolgujatang" and "Seunggiactang" as hospitality foods and "Gochujang", "Jeupjang", and "Jeupjihi" as traditional paste foods. This indicates that recipes in "Gyuhapchongseo" were transcribed into those in "Jusiksiui". Thus, "Jusiksiui" is the archive that includes recipes that have been passed down from generation to generation in a traditional family and transcribed archive of "Gyuhapchongseo", which was widely read by midwives in the late 1800's.

        Rice cake is the most historical food which has been developed from settlement of agriculture and typical traditional food which has manufacture and food historical meaning. Because, the process of rice flour, raw ingredient of rice cake, tells remarkable food processing technology of our nation, and is original form of processed food that we has been taken before agricultural life begun. In this study, contents analysis method is used. Ingredients of rice cakes appeared in ?Gyuhapchongseo?glutinous rice 12 times (42.8%), nonglutinous rice 10 times (35.7%), and the others 6 times (21.4%) used as the main ingredients of rice cake. the rice cake separated into 15 types (53.5%) of steamed rice cake, 2 types (7.1%) of pounded rice cake, 3 types (10.7%) of boiled rice cake, 7 types (25%) of sauteed rice cake, and 1 types (3.5%) of the others. it become data for knowing social and dietary culture of the time. And it is for presenting fundamental material of possibility of modern rice cake.

        The aim of this research was to analyze changes in a Roasted Beef recipe through Sulhamyukjuk. In order to conduct this study, we investigated ancient and modern culinary literature published until 1950. The main method of research in this study was content analysis. There were 15 pieces of ancient and modern culinary literature used. In addition, the roasted beef recipes totaled 78. Analysis of recipe data published over the last 300 years showed two different types of Roasted Beef recipes: 1) Roasted Skewered Beef and 2) General Roasted Beef. In the case of Roasted type, the method was divided into three steps: 1) Coating of flour porridge after marinade in the source, 2) Three dippings into cold water during Roasting, and 3) Roasting again with Seasoning.

        The main purpose of this study was to survey the various kinds of recipes for pheasant found in seventeen Korean cookbooks published from the 1800's to the 1990's. There were 95 pheasant recipes found in the literature which could be classified into three major groups: cooking with moist heat, cooking with dry heat, and other. The three major groups were then broken down into thirteen smaller groups. A detailed look at the frequency of terms in each recipe shows that Gui Sanjeok (grilled Korean shish kebabs) appears 24 times, Guk Tang and Jeongol (soup and stew) 23 times, Kimchi (fermented cabbage) 11 times, Po (jerky) 9 times, Jorim (boiled in soy sauce) 7 times, Jjim (steamed) 6 times, Bokeum (stir-fried) 5 times, Twigim (deep-fried) 3 times, Buchim (fried) 2 times, Jigae jijim (stewed) 2 times, and Jang (paste), Myeon (noodles), Gooum (boiled) and Yeot (Korean hard taffy) 1 time each. The main ingredient is always the pheasant. We investigated the use of the whole pheasant cooked, how to slice and tenderize pheasant meat, use the meat only, or use only certain parts. Depending on the characteristics of cooking recipes, pheasants with thin, soft bones and organs were investigated for cooking. Substituted materials were used for a few of the vegetables, meat, and seafood in the recipes, and seem to go well together. Garnishes used included pine nut powder and fried eggs. Seasoned salt, soy sauce, pepper, sesame, sesame oil, chopped onion, garlic, and ginger were also reported to have been used.

        The main purpose of this study was to perform a literature review regarding bibimnaengmyeon (cold buckwheat noodles mixed with sauce)-related recipes. To conduct this research, we analyzed recipe data published in Korea from the 1800's to the 1980's. The research was conducted by content analysis and literature review. The documents used in the research were 30 books (dictionaries and recipe books). A total of 37 bibimnaengmyeon-related recipes were identified. The results of the analysis of documented data published within the last 200 years showed two different types of main ingredients for bibimnaengmyeon-related recipes; noodles based on buckwheat flour, and noodles based on wheat flour. Additionally, the bibimnaengmyeon-related recipes were divided according to the sauce; 1) noodles mixed with red pepper sauce and 2) noodles mixed with soy sauce.

        The mainly purpose of this research was to investigate tendency of changes regarding the recipe of Naengmyeon (Korean cold noodles) based on water. In order to conduct of this research, we analyze the recipe data published in Korea from 1800's to 1980's. A method of mainly study was conducted by content analysis and literature review. The documents of recipe used research were 42 literatures (euigwae, recipe book, magazines, and dictionaries). In addition, the recipes of Naengmyeon based on water were total method of 84. The results of an analysis of recipe data published in the last 200 years showed 3 different types of the recipe of Naengmyeon based on water; 1) Naengmyeon based on water of Kimchi juice type 2) Naengmyeon based on water of (meat) broth type 3) Naengmyeon based on water of mixed (Kimchi juice+broth) type.

        The purpose of this study was to investigate the Jorim of meat and poultry in Korean modern cookbooks. Jorim is a traditional Korean method of braising meat and poultry with soy sauce or gochujang. This study evaluated jorim in 10 books published in Korea from the end of 1800 to 1987 and to develop cooking models of beef jorim, pork jorim, and chicken jorim. The main ingredients in the jorim were beef, pork, chicken and pheasant. Other ingredients in the jorim included pine nuts, beef, eggs, radishes, bean sprouts, onions, bamboo shoots and pepper. In Sieuijeanseo, which was published at the end of the nineteenth century, the method called for braising meat directly in soy sauce. However, other modern cookbooks suggested boiling the meat prior to braising. Despite jorim being a popular sub-dish in Korea, there has been a decrease in the varieties available.

        "Gyuhapchongseo" was published in 1809, and introduced the cooking method of the noble class in the late Joseon dynasty. The characteristics of the side dishes in "Gyuhapchongseo" are as follows. Firstly, red pepper was used as whole red pepper, shredded red pepper, powdered red pepper, or Korean hot pepper paste. Secondly, salt-fermented fish was used in some forms of Kimchi, including Sukbakgi, Dong A Sukbakgi, and Gyochimhae. Thirdly, to retain the juiciness of meat during roasting, meat was spread cold water on the surface, dipped into the washing water of rice or wrapped with wet paper. Fourth, to improve the visual effect of a dish, cooked foods were displayed with various color schemes, panfried foods with two tones (egg white and yellow) of color on each side and the use of radish pigmented with deep red color. On examination of the characteristics of food in "Gyuhapchongseo", I would suggest applicable practices for the present cuisine. The use of gravy produced from the boiling down of fish flesh could raise the nutritive value of Kimchi. In "Gyuhapchongseo", Yak po (semi-dried minced beef) is noted as being good for elderly people with bad teeth. A steamed dish with dog meat in Dong A in "Gyuhapchongseo" is made by hollowing out Dong A and putting a dog in it to cook the dog meat to well done in a fire made with the hulls of rice. This technique could be used to present cuisine for steamed and roasted dishes using food ingredients such as pumpkin, sweet pumpkin, and overripe cucumber.

        This study examined the ingredients and cooking methods of side dishes in "Chosunmusangsinsikyorijebub" during the year of 1924, approximately. In the recipe for Tang (Guk), there was much use of various parts of beef, fish, shellfish, vegetables, and mushrooms, and soybean paste, hot pepper paste, and soy sauce were used as seasonings. For Chootang and Byulchootang, cinnamon powder was added at the end of cooking. In foods such as Tang (Guk), Gigimi, Chigye, Chim, and steamed dishes, which were made of beef, pork, chicken, various fish, Chinese cabbage, and over ripened cucumbers, and thickened by adding buckwheat powder or wheat powder, the taste of the food was changed by controlling the gravy content. In the recipe for Gorim-Cho, ingredients such as beef, pork, chicken, and various fish were used, which were cooked in boiling water and soy sauce. Boiling or steaming were employed as the cooking methods for Baeksuk, where beef rib Baeksuk was seasoned with salt and fermented shrimp and then boiled. For porgy and herring Baeksuk, the internal organs of the fish were first removed, and then they were steamed with pine needles. Hoei incorporated the flesh of various meats, various beef organs, pork skin, and fish as ingredients, and different dipping sauces and pine nut powder were also used.

        The purpose of this study was to develop the standardized recipe and to analyze the nutrients of stir-fried whip-arm octopus as one of the kind of traditional local foods in Busan. The standardized recipe was developed by using cookbooks, home recipes, and the recipes by commercial food restaurants. The nutrient was analyzed by using an AOAC method. Sensory evaluations were made on nine sensory attributes by a 12-member panel. As the results, the whip-arm octopus was recorded as a food source for health, rejuvenation in Jasanobo. Since early 1900, the stir-fried method has been used for cooking with the ship-arm octopus. The main ingredients were whip-arm octopus, onion, large green onion as the local stir-fried whip-arm octopus in Busan. The ingredients of soup were shrimp, little neck clam, and water. Seasoning sauce was mixed with red pepper powder, soy sauce, sesame oil, chopped garlic, chopped onion, and sugar. The seasoning sauce was fermented for three days. The results of sensory scores were salty seasoning 3.66/5.00, taste 3.75/5.00, thickness 3.84/5.00, and smell 4.09. Nutrient retention per 100g of the stir-fried whip-arm octopus was 67.54kcal, protein 6.43g, fat 1.66g, Ca 28.06mg, Fe 2.56mg, cholesterol 68mg, and taurin 51mg. Fatty acid consists of various unsaturated fatty acids such as linoleic acid(46.24%) and oleic acid(33.67%).

        The present research was designed to collect recipe of set up a standard recipe and analyze the nutrients of broiled black goat meat (a kind of native local foods in Busan and south province). The results of the study are summarized as follows. The recipe for goat(lamb) meat was recorded in Sanlimkyounggae and Jungbosanlimkyounggae between 1715 and 1827. The goat meat was explained as food for health, rejuvenation and recuperation Since late 1800, it has been utilized for such use. The flavor of broiled black goat meat is influenced by seasonings, fruit juice, heating treatment and cooker. And it also could be affected by the method of slaughter and the sex of the goat. There are lot of element in seasoning. Red pepper paste, garlic and ginger holdback the bad smell and make the taste better. Onion help to retain the water and improve the flavor. Starch syrup, sugar and sesame oil make the meat smoother, glossier and more tasty. The meat is usually roasted on grill over charcoal. It helps to remove or suppress the bad smell and make the taste better. Softness and scent of the meat depend largely on the way to butcher. Female goat meat tastes smoother and smells better. Fruit juice also improve the softness of the meat. Energy per 100g of the 'broiled black goat meat' is 170kcal. There are protein (23g), fat(2.4g), Ca(159mg), Fe(1.1mg) and so on. Amino acid is mainly comprised of essential amino acid such as cystine, lysine, leucine, and arginine. Fatty acid consists primarily of unsaturated fatty acid like oleic acid, linoleic acid.

        본 논문은 퍼지이론을 조리법에 적용함으로써 지금까지 자료조사^3)를 근거로 하여 관능검사를 토대로 제시된 한국요리의 표준화 방법을 체계화하고 쉽게 응용할 수 있도록 하는 방법을 제시하였다. 본 논문에서는 비빔밥을 중심으로 퍼지이론을 적용하였으며, 식품 조리법의 판정기준인 관능지수를 퍼지이론에 적용하여 추론하는 방법을 제시하였다. 이 방법은 재료의 분량에 따른 관능지수의 변화에 대한 매우 제한적인 경우에 대해서 제시를 했지만 더 많은 재료의 분량 및 조리방법 등을 고려하면 더욱 정확하고 보편적인 관능지수를 직접 조리를 하지 않고 시뮬레이션에 의하여 추론할 수 있다. 본 논문에서는 그 기초적인 연구로 퍼지 이론을 소개하고 비빔밥을 중심으로 기본적인 방법을 제시하였는데 이 퍼지이론의 도입은 조리법의 과학화 및 전산화를 용이하게 하며, 환자의 체계적인 영양관리와 어린이, 노약자 등 식이요법이 필요한 사람들과 조리법이 한정적인 특정지역에 적용하여 다양한 방법을 모색할 수 있을 것으로 생각된다.

        The purpose of this paper on Hoe (raw beef) is to investigate various kinds of its recipes, with equal focus on seasonings and sauces as well as its main and sub ingredients. The recipes of Hoe can be broadly classified into four large groups such as Salkogi Hoe(Red meat Hoe), Hankazi Naechang-yook Hoe(made from internal organs), Jap Hoe(1)(miscellaneous Meat Hoe) and Jap Hoe(II)(rolled with a whole pinenut) while the cook books written before 1945 indicate that the number of recipes reaches up to 21. The recipe of Salkogi Hoe comprises following three steps. Cut raw beef into thin strips and season them if necessary, then sprinkling sufficient pinenut powder on the strips. Its main sauce is hot pepper paste with vinegar. The recipe of Hankazi Naechang-yook Hoe uses kidney, manyplies, liver and tripes as main ingredients. Kidney should be thinly sliced with mixture of salt, seasame salt, seasame oil, and pepper as its seasonings. Regarding Manyplies, liver and tripes, there exists two possible ways to season them after cutting into strips. You can season with sesame oil and pepper or only with salt. Main ingredients of Jap Hoe(I) consist of beef, pork, kidney, manyplies, liver and tripes, among which minimum two ingredients are selected. Ingredients selected are sprinkled with pinenut powder after cutting into thin strips. And Hot pepper paste with vinegar is used as main sauce. The recipe of Jap Hoe(II) is to cut manyplies into pieces of 2Cm by 5 Cm without removing their black part and roll each piece with a whole peanut in such a manner that the peanut sticks from rolled piece.

        15종의 채소류를 생채, 데침, 찜, 끓임, 볶음 조림할 때 Vit.A, Niacin, AsA 및 P, Fe, Mg, Ca, Na, K의 잔존량을 측정한 결과는 다음과 같았다. 1. 생채에서 Vit.A는 도라지, 상추, 오이의 잔존량이 높은 반면 무는 50%로 가장 낮았고 Niacin과 AsA는 전반적으로 잔존율이 높았으며 무, 상추, 돌나물, 오이, 들깻잎에서는 증가된 것으로 나타났다. 무기질에서는 P은 도라지, 양배추, 상추에서, Fe은 도라지, 양배추, 돌나물에서, Mg과 Ca은 도라지, 상추, 돌나물에서 K은 양배추와 상추에서 잔존율이 높았다. 2. 데침시에 Vit.A는 콩나물, 숙주에서, Niacin는 콩나물, 숙주, 들깻잎에서 잔존율이 높았으나 AsA는 다른 비타민에 비하여 잔존율이 크게 떨어졌다. 무기질은 P은 참취, 콩나물, 숙주에서, Fe은 참취, 숙주, 시금치에서, Mg은 들깻잎에서, Ca은 시금치, 들깻잎에서, Na은 시금치에서, K은 무, 들깻잎에서 잔존율이 높은 편이었다. 3. 찜에서 Vit.A는 양배추에서, Niacin은 가지, 양배추, 들깻잎, 오이에서, AsA는 무, 양배추, 오이에서 잔존율이 높았으며 잔존율이 아주 낮은 것은 Vit.A에서의 무와 들깻잎, AsA는 들깻잎이었다. 무기질 중 P은 양배추, 오이, 들깻잎에서, Ca은 양배추, 오이, 무에서, Na은 무, 오이, 양배추에서, K은 들깻잎, 양배추에서 잔존율이 높았다. 한편, 무기질의 잔존율이 아주 낮은 것은 Fe은 호박, 가지에서, Mg은 호박에서, Ca과 Na은 들깻잎에서, K은 가지이었다. 4. 끓임시에 Vit.A는 콩나물, 숙주에서 Niacin은 콩나물, 참취, 숙주에서 잔존율이 높은 반면 AsA는 대체로 50%이하의 낮은 잔존율을 보였다. 극히 저조한 잔존율을 보인 것은 Vit.A의 무, 호박, 참취, 시금치, AsA의 시금치, 호박, 참취, 숙주이었다. 무기질에서 P은 숙주, 호박, 참취에서, Fe은 시금치, 무, 숙주에서, Mg은 참취, 무에서 Ca은 호박, 시금치에서 잔존율이 높았고 Na와 K은 이들에 비해 잔존율이 낮은 편이었다. 그중, 극히 낮은 잔존율을 보인 것은 Fe에서 콩나물, 호박, Mg에서 시금치, 콩나물, 숙주, Na에서 콩나물, K에서 콩나물, 시금치이었다. 5. 볶음시에 Vit.A는 도라지, 당근, 시금치에서 Niacin은 도라지에서 AsA는 가지에서 잔존율이 높은 편이나, 무, 참취에서는 Niacin이 무, 참취, 도라지에서는 AsA의 잔존율이 아주 낮았다. P은 호박, 참취, 도라지, 당근에서 Fe은 참취, 도라지에서 Mg은 참취, 도라지, 당근, 호박에서 Ca과 Na은 도라지, 당근, 오이에서 K은 호박, 참취, 도라지, 당근에서 잔존율이 아주 낮았으며 가지는 모든 무기질의 잔존율이 아주 낮았으며 그 외 호박에서는 Fe이, 돌나물에서는 K이 극히 낮은 잔존율을 보였다. 조림시에는 Vit.A는 우엉에서, Niacin은 무, 우엉 모두 잔존율이 높은 반면 AsA는 둘다 낮은 편이었다. 무기질은 무에서 Fe, Ca, Na, K과 우엉에서는 Na, P, K의 잔존량이 높은 반면 우엉에서 Fe의 잔존율이 극히 낮았다. 6. 각종 조리시 비타민과 무기질의 잔존상태가 전체적으로 좋은 결과를 보인 채소의 순서는 사용된 횟수에 차이가 있으나 도라지>들깻잎, 양배추>무, 오이>참취, 상추>숙주>시금치, 우엉, 돌나물>당근, 호박>콩나물>가지로 나타났으며, 조리법 중에서 잔존율이 좋은 것은 비타민의 경우는 생채이었고 무기질은 생채, 볶음, 조림이었다. 또한 Vit.A는 생채, 볶음, 조림에서 Niacin은 생채, 조림, 찜에서 AsA는 생채에서 잔존율이 좋았으며 P은 볶음, 생채에서, Fe은 생채, 데침, 끓임, 조림, 볶음에서 Mg은 생채, 조림, 볶음에서 Ca은 생채, 찜, 끓임, 조림, 볶음에서 Na은 조림, 볶음에서 K은 생채, 조림, 볶음에서 잔존율이 좋은 편이었다.

        The purpose of this paper is to examine the various kinds of recipes of deer and roe deer through classical cookbooks written from 1670 to 1943. The recipes of deer and roe deer are found 31 times in the literature written in classical Chinese from 1715 to the mid-l8th century, which can be classified six groups. Their records are less than other recipes such as beef, chicken, pork, lamb, and dog, but the deer recipe is recorded frequently as four times as the roe deer one The deer were cooked and preserved by the following six ways like large-size drying, drying, boiling, soup, roasting, and gruel, while three ones such as boiling, roasting, and drying were applied to the roe deer. However, there is little difference in recipes between deer and roe deer. In case of deer, boiling and drying were the most popular ones with the frequency of 28%. But the recipes of the roe deer, boiling, roasting, and drying are recorded with the same frequency of 33.3%. The recipes were introduced from China, and had many characteristics different from other kinds of meat, of which most process reflected the mordern cooking scientific aspect. The main ingredients were flesh meat, tail, and tongue and horn was used with uniqueness. Salt, vinegar, oil soy sauce, and the white part of the green onion were used as main seasonings. Alcohol, chuncho, sesame flower powder, and cinnamon powder are frequently added.

        백설기의 기준조리법 설정을 백설기의 조리과정에서 품질특성에 영향을 미친다구 생각되는 제반요인을 찾아냈고 그 요인들 중에서 가장 유의차가 크게 나타난 요인은 첨가하는 물의 양, 찌는 시간, 첨가하는 설탕의 양으로 나타났다. 그 중 첨가하는 물의 양과 찌는 시간과의 상호작용을 보면 제 Ⅰ보^14)에서 검토하였다. 다음은 첨가하는 설탕의 양과 찌는 시간과의 상호작용이 백설기의 texture와 기호성에 어떤 영향을 미치는가를 기계적 측정과 관능검사에 의하여 검토하였는데 그 결과는 다음과 같다. 1. 백설기 제조시 첨가하는 설탕의 양과 찌는 시간을 달리한 시료들의 기계적인 측정치를 분산분석한 결과 첨가하는 설탕의 양은 hardness, adhesiveness, gumminess에서 유의적인 차이(P<0.001)를 나타내었으나 찌는 시간, 설탕의 양과 찌는 시간과의 상호작용에서는 모든 항목에서 유의적인 차이를 나타내지 않았다. 2. 백설기 제조시 첨가하는 설탕의 양이 15, 20%인 시료와 5, 10%인 시료간에 찌는 시간에는 관계없이 유의적인 차이를 보여 첨가하는 설탕의 양이 많을수록 hardness, adhesiveness, gumminess가 큰 수치를 나타냈다. 3. 찌는 시간을 20분으로 통일하고 설탕의 양을 달리한 시료들의 관능검사결과 첨가하는 설탕의 양이 15, 20%인 시료가 adhesiveness, sweetness, chewiness, overall quality에서 유의적으로 높게 평가되었다. 4. 관능검사에서 유의적으로 높게 평가된 시료들의 기계적인 측정결과는 대체로 hardness, adhesiveness, gumminess가 큰 수치를 나타냈다. 본 결과와 제Ⅰ보^14)에서의 결과를 요약하여 보면 12시간 침수한 멥쌀에 1%의 소금(NaCl)을 첨가하여 분쇄한 후 10%의 물을 첨가하여 물내리기를 한 후 김이 오른 후 물내린 쌀가루에 15%이상의 설탕을 첨가하여 20분간 쪄서 만든 백설기가 가장 바람직하다는 것을 알 수 있었다. 이 실험중 가장 중요한 조건은 첨가하는 물의 양이 10%이며 첨가하는 당이 설탕일 경우는 김이 오른 후 설탕을 섞어 바로 쪄야 하며 설탕의 양이 15%이상이라는 것이다. 이 조건은 대체적으로 hardness, adhesiveness, gumminess가 큰 수치를 나타낸다.

        The purpose of this paper is to examine the various kinds of recipes of pheasant through classical cookbooks written from 1670 to 1943 which are the basic materials to the meat cooking. The recipes of pheasant are found 39 times in the literature, which can be classified into eleven groups. Chronologically, the recipe of mandu (ravioli) was first appeared, and guk, tang (soup), kui (roasted), jang (salted meat), chim (steamed), po (dried meat), whe (raw meat), gijim (boiled in soy sauce), cho (sparkly heated in soy sauce and sugar), jolim (hard boiled in soy sauce), and jungol (meat with vegetable cooked in pan) followed in the records. Kui was the most popular one with the frequency of 43.6%, which proves that kui is the most suitable one for pheasant among all of recipes. Mandu and guk, tang were 10.2%, chim and po were found with the same rate of 7.7% and the next ones were jang, gijim, cho, and jungol with the rate of 2.6%. The recipes of pheasant were recorded much less than those of beef, chicken, pork, lamb, and dog meat. Particularly, in comparison with chicken belonging to fowls, the frequency of pheasant cooking did not reach even to one third of that. The Korean recipes of pheasant have been independently developed with originality, having nothing to do with the Chinese ones. The recipes of pheasant before the late 1800s have based on the strict recipe principles along with the spirit of art and sincerity, but they were deteriorated to simple and easy ones discarding principles. The main ingredient was the flesh of pheasant and the sub-ingredients such as flour, pinenut, buckwheat powder, and mushroom were included in common. In additon, oil, soy sauce, black pepper, and stone leek were frequently used as main seasonings.
