        Contents of ginsenosides 7 subordinations of two-year ginseng (fresh ginseng) is 1.27% and three-year ginseng is 2.09%, so the three-year ginseng root increased 64.9% compared to the two-year root. Compared with the comparison group, ginsenosides component content of KEM+SAF-applied group increased 24% in case of the two-year root and 20% in case of the three-year root. In vitamin C content, two-year root showed 59.4% higher and three-year root showed 37.7% higher in KEM+SAF applied group compared with the comparison group. In case of vitamin E, the two-year root indicated 5.6% higher and three-year root indicated 1.5% higher in KEM+SAF applied group compared with the comparison group, but there is no significant difference. In phytosterol three components (campesterol, stigmasterol, sitosterol), two-year root showed 25.3, 3.6, 14.1% higher for each, and three-year root showed 23.6, 6.8, 12.9% higher in KEM+SAF applied group and 14.4% was higher on average. In DPPH, two-year root indicated 34.4% higher and three-year root indicated 42.4% higher in KEM+SAF applied group compared to the comparison group. To sum up the results, KEM+SAF applied group showed ①22% ginsenosides components content, ②48.6% vitamin C content, ③3.6% vitamin E content, ④14.4% phytosterol content, ⑤38.4% DPPH higher averagely compared to the comparison group.

        This experiment was carried out to find suitable sample type for a more accurate prediction and non-destructive way in the application of NIRS technique for estimation amino acid composition of soybean by comparing three different sample types, single seed, whole seeds, and milled seeds’ powder. The coefficient of determination in calibration and 1-VR of cross-validation for 17 amino acids analyzed by NIR using milled powder were highest, followed by single seed, and then whole seeds were the lowest. The R2 coefficients of determination in calibration for single bean perimeters were higher than those of whole beans and showed higher R2 coefficient than 0.8 with the exception of seven amino acids. On the other hand, calibration equation development for only glutamic acid analyzed NIRS data scanned with whole seeds showed higher R2 coefficient than 0.8. Eleven different amino acids, such as aspartic acid, threonine, serine, glutamine, glycine, alanine, valine, isoleucine, leucine, arginine and proline, of soybean seeds in the powder had higher R2 coefficient of determination in calibration than 0.8 and could be estimated for the most accurate prediction. However, judging from the results of single bean samples, in consideration on NIR application for more nondestructive and faster prediction, these amino acids using single bean sample could be estimated without grinding the seeds.

        The objectives of present study were to characterize the peptides which were isolated from Korean fermented soybean paste, chungkukjang, and to determine their antioxidant activities. Four fractions were collected from the methanol extract of chungkukjang by using a recycling preparative HPLC. Among fractions, Fr-2 was identified to be highly potent free radical scavenging activity in the assay of 1,1-diphenyl-2-picryl-hydrazyl (DPPH) and nitroblue tetrazolium(NBT)-reduction inhibition. Base on antioxidant effects, fraction Fr-2 was employed for the refraction with a prep-column and separated into five fractions of which two fractions were identified to have higher antioxidant activity. To confirm the amino acid constituents of antioxidant fractions Fr-2-2 and Fr-2-3 were analyzed, and eight kinds of amino acids such as aspartic acid, threonine, serine, glutamic acid, glycine, lysine, histidine, and arginine were identified as the constituent amino acids. Antioxidant activities of the separated peptides were further assessed cell viability with 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyl terazolium bromide (MTT), and fluorescence-activated cell sorting (FACS) analysis of H4IIE cells treated with hydrogen peroxide (H2O2). Chungkukjang peptides have shown their ability to protect H4IIE rat hepatoma cells against H2O2- induced oxidative stress by concentration and time-dependent manner. Therefore, These results indicated that fermented soybean paste chungkukjang will be promoted the antioxidant and radical scavenging activities, and beneficial for health. The antioxidant peptide fractions Fr-2-2 and Fr-2-3 were denominated as P-NICS-1 and P-NICS-2, respectively. However, further studies were required to clarify their amino acid sequences and molecular properties, and physiological significances.

        The composition of free sugar, free amino acid, and fatty acid in tubers of the cultivars 'Superior', 'Sinnamjak', and 'Chubaek' were evaluated at the two sites with different altitude, Gangneung (20 m altitude) as lowland and Daekwallyeong (760 m altitude) as highland. The average reducing sugar content of the three potato cultivars harvested in Daekwallyeong and Gangneung was 1.1% and 2.3%, respectively, which showed two-fold difference between the two locations. Average total sugar content was also two-folds lower in potatoes harvested in Daekwallyeong (6.3%) than those harvested in Gangneung (12.2%). Average content of free amino acids of the three potato cultivars harvested in Daekwallyeong and Gangneung was 1,325 mg/100g and 1,051 mg/100g, respectively. The cultivar 'Chubaek' has the highest amino acid content among the three tested cultivars. Potatoes from Daekwallyeong have higher unsaturated fatty acid levels than those from Gangneung. During the tuber development, unsaturated fatty acids levels increased in tubers grown in Daekwallyeong, but decreased in those grown in Gangneung. These results indicate that the quality of potatoes from Daekwallyeong is from Gangneung for food processing purpose for human consumption.

        This study was conducted to gather the basic data on the alpine leek (Allium victorialis) for the expand of consumption and the production of its manufactured goods. Amino acid content in alpine leek leaves and various physiological activities were examined. Seventeen component amino acids and 38 free amino acids from alpine leek leaves were analyzed, and the total contents were 2,693.28 mg/100g for component amino acids and 535.39 mg/100g for free amino acids. Total phenolic compounds in the leaves of alpine leek showed the highest level from the methanol extract (37.7 mg/l), and followed by ethanol extract (31.9 mg/l) and hot water extract (25.4 mg/l). Total flavonoid contents in 1,000 mg/l extract was the highest in the methanol extract (22.2 mg/l). DPPH radical scavenging activity at 1,000 mg/l extract was high in the order of ethanol extract (51.6%), methanol extract (47.3%) and hot water extract (37.2%). nitrite radical scavenging activity Methanol extract from Allium victorialis leaves was the highest nitrite radical scavenging activity (79.5%). Hyperplasia suppression of lung cancer cells (Calu-6) and gastric cancer cells (SNU-601) by the methanol extract from the bulb of alpine leek were 99.9% in the extracting concentration of over 200 mg/l. No significant difference in antimicrobial activity among the 3 different solvents and extract concentrations was observed, and the inhibition zones against the gram-positive and negative microorganisms were ranged from 8.23 to 10.15 mm. It was concluded that physiological activities in a human body could be improved by the intake of alpine leek as a pharmaceutical material, and that it would be useful for the prevention of health risk such as lung and gastric cancers.

        This study was carried out to investigate the effect of KEM and SAF appication on contents change of fatty acids and organic acid of perilla(Perilla Frutescens Britton). Contenst of squalene in perilla leaves on control and KEM/SAF treated were 3.39 mg and 4.22 mg, respectively. Therefore the squalene quantity of KEM/SAF treated leaves was 24.2% more than that of control. A total 6 fatty acids in perilla leaves were analyzed in this study. Percentage of the saturated and unsaturated fatty acid in perilla leaves were 20 and 80%, respectively. Contents of phytosterols in perilla leaf such as campesterol and sitosterol were 2.0 and 20.0 mg, respectively. Therefore sitosterol content was 10 fold more than that of campesterol. The KEM/SAF application on perilla leaf was effective on the change of squalene or phytosterol contents. However effect of that was negligible on the change of fatty acid content.

        This study was carried out to compare and analyze the effect of Korean effective microorganism(KEM) and seafood amino acid fertilizer(SAF) application on apple on functional substances of fruit. Vitamin C in fruit of control and KEM/SAF treated were 29.3 and, 39.8 ㎎, respectively. Also active oxygen scavenging ability of those treatments measured with DPPH method were 40.6 and 54.1%, respectively. Vitamin E contents of those treatments were 2.51 and 2.50 ㎎, respectively. Sitosterol, a phytosterol, contents of those treatments were 4.79 and 5.41 ㎎, respectively. Proportion of sugars, fructose, glucose, and sucrose in the fruit of control were 36.1, 15.3 and 17.8%, respectively. Those of the fruit of KEM/SAF treated were 45.9, 13.2 and 18.8%, respectively. Malic acid contents of control and KEM/SAF treated fruits were 53.7 and 43.8%, respectively.

        The purpose of this study was to determine the free amino acid contents, total phenolic contents and antioxidant activity in raw Sesamum indicum seeds (cv. Kopum and cv. Mihuk) and their sprouts germinated for 7 days. Total free amino acid contents of sprouts (29.34±3.3 mg/g DW) were significantly higher than that of raw seeds (6.85±0.39 mg/g DW). All individual free amino acid, including asparagine, alanin, arginine, and leicine were significantly increased in the sesame sprout. And also germinated sprout significantly increased the total phenolic contents (2.2±0.3 mg GAE/g) that resulted in the increased DPPH (2,2-diphenyl-1-picrylhydrazyl) free radical scavenging capacity. Subsequently, two varieties of sesame and its sprouts were analyzed for their phenolic constituents using high-performance liquid chromatography (HPLC). Catechin, sinapic acid and salicylic acid were identified as the major phenolic acid presented in sesame sprout.         We bred a new green-kerneled glutinous rice variety that can be cultivated in the whole area of Korea, because only one native green-kerneled glutinous rice cultivar, “aengdongchalbyeo” has been cultivated in the southern coastal area due to its late heading. The seeds of “aengdongchalbyeo”were irradiated with 200 Gy of gamma ray in 1995. A promising mutant variety, “ogwonchalbyeo”(“onnong 17” was selected through line selection and regional yield trials. In particular, the new variety revealed at the earlier mid of August compared to that of “aengdongchalbyeo” the early of September, and it was considerably tolerant to a field lodging due to its shortened culm length. Also, “ogwonchalbyeo”had a higher ripened grain ratio and 1,000 grain weight compared to the original variety. The brown grain yield of the new variety was about 5.40 MT/ha, which was 11.3% higher than that of the original variety, in the regional yield trials at 3 different fields during 2000∼2001. The brown and milled grains of the new rice variety contained 20 to 65% higher amount of total amino acids, respectively than that of the original and two checks. For chlorophyll -a, -b and total chlorophyll, the new variety showed nearly two-fold higher than the checks, and for the carotenoid, it had 5.3 –7.6 times higher amount. These results showed that the new variety can be cultivated as a special green-kerneled glutinous rice with high functional compounds.

        Amino acid composition in grain of Korean native rice core collections was evaluated to identify the useful genotypes for quality enhancing rice breeding and value-added food development. Large variations were found in the contents of 16 amino acids among 388 genotypes tested with 14.9% of the minimum coefficient of variation (CV), and the contents of methionine and histidine showed the highest CV and the second high, respectively. The average values of total amino acid, total essential amino acid, lysine and threonine contents of Korean native rice collections were almost similar with those of cultivating japonica rice, Saechucheong. Among 388 native core collections Baekkokna, Daesona and Saducho were identified as high amino acid germplasm in total amino acid, total essential amino acid, lysine and threonine contents. And Seoksanjo and Sodujo were identified as low amino acid collections. Rice collections showing purple apiculus color tended to distribute in lower serine, proline, glutamic acid, glycine, alanine, valine, leucine, phenylalanine, arginine, and total amino acid contents compared with those of yellowish apiculus color collections. The glutinous rice collections showed the tendency of higher contents of serine, glutamic acid, alanine, valine and leucine compared with those of non-glutinous collections.
