        This study aimed to investigate the biological activities, including polyphenolic content, flavonoid content, and antioxidant activities, of various cultivars of Korean perilla leaves. The results indicated that among nine cultivars (Namcheon dlggae, Saedora, Nulbora, Donggel 1, Donggell 2, Soim, Sangyeop, Somirang, and Saebom) of perilla leaves, the total polyphenolic content (gallic acid equivalent mg/g, GAE) was the highest in “Nulbora,” while it was lowest in Namcheon dlggae. Moreover, flavonoid content in the extracts of nine cultivars leaves was in the range of 132.93~268.50 mg catechin equivalent/g sample. The antioxidant effects of the perilla leaves were determined using two different in vitro bioassays measuring DPPH and ABTS radical-scavenging activities. The results revealed that antioxidant activity was also higher in “Nulbora” compared with other cultivars. Xanthin-oxidase-inhibition activity ranged from 65.65% to 80.58%, with “Nulbora” exhibiting the highest activity, although the difference with other cultivars was not significant. “Nulbora” extracts reduced the expression of pro-inflammatory genes and several cytokines, including IL-6 activation induced by LPS in macrophages in the range of 100–50 μg/mL. These results suggest that extracts from perilla leaves can be used as bioactive and functional materials that could be important in industrial applications in the future.

        저장조건에 따른 금산 추부깻잎의 물리적 특성을 분석하였다. 깻잎의 a/b값은 저장기간이 증 가할수록 증가하는 경향을 보였다. 저장온도 25℃와 4℃에서 제 1주성분 값의 기여율은 각각 93.07%, 97.81%로 나타나 전자코를 이용한 저장온도에 따른 휘발성 향기성분 패턴의 구별이 가능하였다. 저장기 간에 따른 제 1주성분 값의 변화는 저장온도 25℃에 비해 4℃에서 변화의 폭이 적었음을 확인할 수 있 었다.

        Electrolyzed water (EW) has been regarded as a new sanitizer by food industry. In this study, EW was used for perilla leaves sanitization. The optimum EW was produced at flow rates of brine and water of 100 mL/min and 300 mL/min, respectively. By soaking in EW only, the initial microbial counts of aerobic bacteria were reduced by 1.73 log(CFU/g), while 1.94 log(CFU/g) reduction was noted by using EW soaking followed by CDPJ treatment. In similar manner, counts of yeasts and molds were reduced by 1.83 and 2.06 log(CFU/g); coliform were reduced by 1.13 and 1.3 log(CFU/g), respectively. Combination of EW and CDPJ was more effective for microbial reduction. EW treatment did not affect sensory properties, instrumental color characteristics. However, it was observed that total phenolics and DPPH radical scavenging activity of perilla leaves were significantly increased with EW soaking time.

        본 연구는 들깻잎과 들깻잎 생산 환경을 대상으로 S. aureus를 분리하고 MLVA를 이용해 분리된 S. aureus의 오 염경로를 분석하였다. 그 결과, 들깻잎에서 S. aureus의 검출빈도는 7.9% (9/114)였고 검출수준은 0~2.92 log10 CFU/ g였으며 2곳의 농가에서 S. aureus가 2.00 log10CFU/g 이상으로 검출되었다. S. aureus가 분리된 5농가를 대상으로 들깻잎과 직접 접촉하는 시료에서 S. aureus를 분리하였으며 5 농가 중 3농가의 작업환경 (농가의 포장대, 포장비 닐, 작업자 손, 복장 등)에서 S. aureus가 검출되었다. 들 깻잎과 생산 환경에서 분리된 S. aureus를 대상으로 MLVA 를 수행했을 때 포장대, 작업자의 손, 포장비닐 및 관개용 수에서 분리된 균주와 들깻잎에서 분리된 S. aureus가 동일한 패턴을 보여 들깻잎의 오염은 이들 시료와 연관되어 있을 것으로 추정된다. 따라서 MLVA를 이용한 유전자 typing은 농산물이나 식품 중 S. aureus의 오염원을 신속 하고 경제적으로 구명하는데 활용할 수 있을 것으로 판단 된다.

        This study was performed to compared the effectiveness of individual treatments (electrolyzed water: EW, organic acid, and ultrasound) and their combination on reducing foodborne pathogens from perilla leaves. Perilla leaves were innoculated with a cocktail of Salmonella Typhimurium, Staphylococcus aureus, Bacillus cereus. Inoculated perilla leaves were treated with EW combined with different concentration of acetic acid (0.5%, 1.0%, 1.5%, 2.0%) for 1 min at room temperature. Treatment of 3 pathogens on perilla leaves with electrolyzed water combined with ultrasound (25 kHz) and 0.5% acetic acid was also performed for 1 min. While the numbers of S. Typhimurium and B. cereus showed reduced with increasing acetic acid concentration, there is no difference in the number of S. aureus treated with EW containing 0.5% to 1.5% acetic acid. Discoloration was observed the perilla leaves treated with EW combined with more than 1.0% acetic acid. For all three pathogens, the combined treatment of EW and ultrasound resulted in additional 0.42 to 0.72 log10 CFU/g. The maxium reductions of S. Typhimurium and B. cereus were 0.95, 1.23 log10 CFU/g after treatment with EW combined with 0.5% acetic acid and ultrasound simultaneously. The results suggest that the treatment of EW combined with 0.5% acetic acid and ultrasound increased pathogens reduction compared to individual treatment.

        Temperature-dependent development studies of two aphid species, A. egomae and A. gossypii occurring in green perilla greenhouse were conducted at 15~35℃, and 16:8 (L:D h) of light period in the laboratory. The mortality of two aphid species was high in young stages (1st and 2nd). In A. egomae, the mortalitiy increased with increasing and decreasing temperature: the mortalitie at 15℃ and 35℃ were 22.3% and 15.6%, respectively. While the mortalities of A. gossypii increased with increasing temperature: the mortality at 35℃ was 50.0%. The developmental periods of A. egomae and A. gossypii ranged from 20.8days to 5.4days and from 22.6days to 9.1days at 15℃ to 30℃ of temperature resion, respectively, and were 7.2days and 10.7days at 35℃ for each species. The lower developmental threshold temperatures for total nymphs of A. egoame and A. gossypii were 9.9℃ and 4.9℃, respectively and an effective degree-days (DD) for the developmental completion of total nymph were 108.0 DD for A. egomae and 221.2DD for A. gossypii. In green perilla greenhouse, the occurrence period of A. gossypii was earlier about 15 days than that of A. egomae. When the occurrence period of two aphid species was estimated by degree-days based on lower threshold temperatures, A. gossypii occurred earlier than A. egomae in the field. A. gossypii occurred from early April and showed dominant position to late May compared with A. egomae. Whereas, A egomae started to occur from mid April and then were abundant after late May followed by abrupt population crash around late July.

        한국산 들깨(Perilla frutescens var. japonica Hara)잎 남천, 밀양 25호, 보라 및 잎들깨 1호 등 4품종의 성분 분석과 열수, 60% acetone 및 80% ethanol로 생리활성물질을 추출하여 탐색하였다. 조섬유 및 조지방의 함량은 3.48%, 0.70%로 잎들깨 1호, 조단백의 함량은 4.36%로 밀양들깨 25호, Ca의 함량은 497.5mg%로 남천들깨가 가장 많았다. HPLC를 이용하여 유리당을 분석한 결과 5종류의 당 sucrose, lactose, glucose, fructose 및 arabinose가 검출되었고, fructose 및 arabinose가 검출되었고, fructose 함량이 30.86mg%로 남천들깨가 가장 높았으며, 들깨잎의 유리아미노산의 종류는 4품종 모두 17개의 유리 아미노산이 검출되었다. 밀양들깨 25호에서는 glutamic acid, alanine의 함량이 각각 25.37, 11.91mg%로 다른 품종 보다 유리아미노산의 함량이 많았다. 비휘발성 유기산의 경우 4품종에서 9개의 비휘발성 유기산이 검출되었으며, 보라들깨에서 malic acid 28.34mg%, glutaric acid 15.21mg% 순으로 나타났다. 비타민 C의 함량은 밀양들깨 25호가 113.24mg%로 가장 높았다. ACE의 저해활성을 측정한 결과 밀양들깨 25호가 60% acetone 추출물 200ppm에서 39.20%, xanthine oxidase는 보라들깨의 80% ethanol 추출물 200ppm에서 각각 46.71% 및 DPPH에 의한 항산화 효과는 남천들깨의 60% acetone 추출물 200ppm에서 98.19%의 강한 저해효과를 나타내었다.

        The effects of amino acid and/or urea liquid fertilizer application on the growth and phytochemicals of Perilla leaves were summarized as follows; The fresh weight of the perilla leaves was in the order of CF, CL, KLF, and control, and 39.7 g, 37.4 g, 36.5 g and 32.3 g were measured. The plant height increased by 71.6 cm in the CF treatment than in the control(54.6 cm). The number of nodes was 14.3 node in CF treatment and 19% more than control(12 node). The vitamin C content tends to be increased by fertilizing the amino acid solution in the perilla leaf. The components of polyvalent unsaturation of n-6 origin were measured in CF treatment, KLF treatment, and control in 10.19 mg, 10.18 mg, and 9.38 mg per 100 g, respectively. Glutamic acid, aspartic acid, leucine, arginine, alanine and lysin were contained in perilla leaf amino acid. Glutaminic acid content was found to be 455.1 mg, 495.6 mg, and 478.8 mg in the control, KLF and CF treatment per 100 g, respectively. Effective nutrition management using amino acid fertilizer optimizes crop yield and profitability, it is important to reduce the negative environmental risks of using fertilizer.

        Background : Perilla leaves (Perilla frutescens) are known to possess antioxidant activity and have long been used to treat a variety of health related issues. The present study was conduct ed to compare the antioxidant activity among perilla accessions collected from Russia. Method and Results : The leaves of a total of 46 accessions of perilla were collected from Russia. Crude extracts were obtained from 2 g of oven-dried perilla leaves using ASE-350 extractor. Total phenolic content (TPC) was determined by Folin-Ciocalteu method and antioxidant activities were estimated by 2,2-diphenyl-1-picryl-hydrazil (DPPH), 2,2'-azino-bis-3-ethylbenzothiazoline-6-sulphonic acid (A BTS) radical scavenging activities, ferric reducing antioxidant power (FRAP) and reducing power (RP). TPC was ranged from 88.70 to 148.85 ㎍ gallic acid equivalent (GAE) /㎎ dried extract (DE). DPPH, ABTS, FRAP, and RP were ranged from 59.49 to 94.80 ㎍ ascorbic acid equivalent (ASCE) /㎎ DE, 73.01 to 190.59 ㎍ ASCE /㎎ DE, 98.73 to 326.39 ㎍ ASCE /㎎ DE, 82.58 to 264.88 ㎍ ASCE /㎎ DE, respectively. Cluster analysis based on antioxidant assay results of 46 perilla accessions divided into three major groups. Group Ⅰ (9 accessions) characterized as higher antioxidant activity accessions than other group (p < 0.001). The correlations between antioxidant assays were strong and positive (r ≧ 0.78). Principal component analysis (PCA) revealed that the first two principal components together explained 92.96 % total variation. Conclusion : Among the perilla accessions collected from Russia, group accessions clustered in group Ⅱ showed high antioxidant activity. Our results indicated that accessions IT274300, IT226732 and IT274293 could be used as a source of valuable natural antioxidant materials.

        Background : To select plant resources of the possibility of development as a natural antioxidant, the antioxidant activities including total polyphenol content (TPC), 2,2'-azino-bis-3-ethylbenzothiazoline-6-sulphonic acid (ABTS), 2,2-diphenyl-1-picryl-hydrazil (DPPH), ferric reducing antioxidant power (FRAP) and reducing power (RP) of perilla accessions collected from South Korea were conducted. Method and Results : A total of 18 perilla accessions by regions were selected. Two grams of dried perilla leaves were extracted with 85% ethanol and used for analysis of antioxidant activity. Antioxidant activity value was measured in a spectrophotometer. Perilla extracts showed variation in TPC ranging from 30.87 to 92.66 ㎍ GAE ㎎-1 dw. ABTS, DPPH, FRAP and RP ranged from 6.83 to 38.64 ㎍ Trolox ㎎-1 dw, 0.63 to 8.62 ㎍ ASC ㎎-1 dw, 5.05 to 17.57 ㎍ ASC ㎎-1 dw, and 4.52 to 35.69 ㎍ ASC ㎎-1 dw, respectively. TPC was high in perilla leaves of Gyeongsang-do, but other antioxidant activities were high in perilla leaves of Chungcheong-do. Cluster analysis based on antioxidant acitivities of 18 perilla accessions consist of group Ⅰ (3 accessions), Ⅱ (2 accessions), Ⅲ (5 accessions) and Ⅳ (8 accessions). Group Ⅱ characterized as higher antioxidant activities than other groups. Principal component analysis (PCA) based on antioxidant data revealed that the first two principal components (PC1 and PC2) together explained 97.78 % total variation. Conclusion : IT242410 and IT235354 of group Ⅱ showed high antioxidant activity. These resources will be useful for developing natural antioxidants.

        The purpose of this study was to investigate the effects of fertilizer application on the content of functional materials, such as fatty acids and organic acids in perilla leaves. (1) As compared to the controlled with Ammonium sulfate fertilizer, the yield of Perilla frutescens leaves increased by 7.3% and 12.8% of biomass at 2000 and 1000 times liquid respectively, but decreased by 7.6% at 500 times. The lipid and protein contents of perilla leaves were higher than those of Portunus trituberculatus liquid at 1000 times. The average contents of minerals (mg/100g) were as follows; K (638.4) > Ca (561.6) > P (145.4) > Mg (133.5) > Fe (36.2) > Zn (1.9) > Mn (1.6) > Na (1.4 mg). However, the correlation between the controlled with P. trituberculatus liquid was relatively low. (2) The fat-soluble vitamin E content of P. frutescens leaves was 3.4, 3.9, 3.3, and 3.9 mg in the controlled with liquid by 500, and 1000, 2000 times respectively; Vitamin A contents were 6.4, 8.9, 10.9, and 8.5 mg respectively, which was more than twice as much as the corresponding vitamin E content. The water soluble vitamin C contents were 177.9, 172.6, 195.2, and 163.5 mg respectively. (3) Amino acid contents of P. frutescens leaves in 100 g of fresh weight were 3821.7 mg in the controlled with Ammonium sulfate fertilizer and 3918.8, 4054.0, and 4005.4 mg in the controlled with P. trituberculatus liquid at 2,000, 1000, 500 times respectively. Amino acid contents of each controlled group with P. trituberculatus liquid above were as small as 2.5~6.1%, and these contents of amino acid were as follows: Glutaminic acid > Aspartic acid > Leucine > Arginine > Phenylalanine. In further study, it is necessary to develop an effective microorganism and a variety of amino acid fertilizer to supplement the study on new manufacturing.

        ‘소임’ 은 잎수확을 목적으로 하는 품종육성을 위하여 1994년에 잎들깨 1호와 차조기 유전자원 YCPL173을 인공교배하여 F₁, F₂ 세대를 양성하고, F₃부터 계통 전개하여 선발한 YPL19-2B-7-3-3-1 계통이다. 주요특성은 잎모양은 둥근 심장형이며 잎색은 뒷면 자주색 발현이 양호하다. 경색은 녹색, 화색은 흰색이고 종자는 암갈색의 구형이다. 채엽재배시 일반특성은 잎들깨 1호와 비교하여 최대엽장은 16.9 cm로 비교적 작은 편이며 상품잎당 속잎비율이 높아 동계 수확작업이 용이하다. 소임은 ’02~’03년 2년간 동계시설하우스 재배에서 상품잎수가 7,172 kg/10a로 잎들깨 1호에 비해 8% 증수하였다. ’04~’05년 2년간 하계에 지역적응시험을 실시한 결과 상품잎무게는 5,410 kg/10a로 표준품종에 비해 1% 증수하였고 상품잎수도 10a당 3,417천매로 잎들깨 1호보다 13% 증수하였다.

        들깻잎 신품종 도입을 위해 재배된 30계통의 선발 품종의 정유성분 분석 결과를 요약하면 다음과 같다. 30 품종 모두 40가지 이상의 정유 성분들을 함유하고 있고 상위 3순위의 주요 성분들이 강원도 횡성군 동산면에서 재배된 15 품종은 D104 (56%), D107 (67.6%)을 제외하고 71~86%까지 차지하고 있었고 강원대학교 교내 포장에서 재배된 15 품종은 S114 (63.8%), S140 (68.3%)를 제외하고 77~88%까지 함유하고 있었다. 30 품종 모두 가장 많이 함유하고 있는 정유 성분이 75%를 넘지 않았고 다양한 성분 조성을 갖고 있어 다양한 화학형을 보였으나 정확한 품종 분류를 위해서는 GC/MS를 통한 후속연구가 필요하다. 본 연구 결과 perillaketone의 함량을 줄이고 대신 다른 향기 성분이 증가된 잎 들깨 도입 및 신품종 육성을 위한 기본정보로서 부합된다고 판단된다.

        한국의 고유 식품인 깻잎은 위생적, 고품질 및 규격화된 가공방법의 개발이 요구된다. 본 연구에서는 깻잎 절임의 관능적, 위생상 안전성이 향상된 최적조리 조건을 확립하고자 하였다. 그 결과 반응표면분석에서는 저장기간에 따른 성분 조성의 최적값에는 차이가 있으나 저장식품인 경우를 고려할 때 간장 , 물엿 24 g이 전반적으로 적합한 것으로 나타났다. 깻잎의생균수는 세척전 8.08 cfu/g에서 세척 후 4.27 cfu/g 으로 약 50% 수준으로 감

        깻잎을 이용한 건강 식품을 개발하고자 먼저 깻잎의 주산지인 금산에서 5월 온실재배한 깻잎과 8월 노지재배한 깻잎들의 품질특성과 향기성분을 조사하였다. 시료깻잎 모두 4.0%의 조단백질과 0.8%의 조지방을 함유하고 있었고 플라보노이드의 함량은 온실재배 깻잎 25.2%, 노지재배 깻잎 26.5%로 시료깻잎간에 큰 차이는 나타나지 않았으며 조사포닌 함량도 2.7%와 2.8%로 비슷하였다. 시료깻잎의 효소 활성은 오직 알칼리성 단백질 분해효소 활성만이

        SOD(superoxide dismutase)는 유해 활성산소에 의한 생리적 장해를 방지하는 방어기작의 한 구성요소이다. 들깨잎 SOD의 특성을 알아보기 위한 NBT(nitro blue tetrazolium) 환원법 을 이용하여 들깨와 자소잎의 SOD동위효소의 종류와 활성 및 이들의 항산화 활성을 Fe2+/ascorbate, Fe3+ -ADP/NADPH첨가제를 처리하여 조사하였다. 들깨잎에는 품종에 따라 3~4개의 주요 SOD동위효소가 있었다. SOD는 함유하고 있는 금속조효소에 따라 3종류로 분류되는데, 들깨잎에는 두개의 Cu/ZnSOD와 두개의 FeSOD을 함유하고 있었으나, 자소잎은 단지 Cu/ZnSOD만을 함유하고 있었다. Cu/ZnSOD는 들깨 품종에 따른 차이가 없었으나, FeSOD는 분자량이 다른 두개의 FeSOD동위효소의 존재 양상이 품종에 따라 차이를 나타내었으며, SOD활성 및 항산화 활성도 품종에 따라 비교적 큰 차이를 보였다. 비효소적인 Fe2+/ascorbate첨가 및 Fe3+ -ADP/NADPH첨가에 의해 유도된 지질 과산화의 억제에 미치는 영향을 조사한 결과 공시재료중 밀양 2호가 가장 강한 항산화 활성을 가지고 있는 것으로 확인되었다. 자소 잎의 경우는 SOD활성과 유사하게 항산화 활성 정도 가장 낮아서 들깨잎과는 뚜렷 이 구별되었다.
