The purpose of this study was to evaluate the appearance, physicochemical, physical, and fermentation properties of the fermented soybean produced by manufacturing with inoculation the different types of microbial strains. The strains were inoculated by the NSI (natural strains inoculation), and the SSI (selective strain inoculation) were treatments. The appearance showed differences in color, viscous substance, and hardness depending on strains inoculation and fermentation duration. The pH, and total acidity were 6.40~7.26%, and 0.10~0.39% respectively with differences depending on the samples. The moisture content as the fermentation duration increased, the NSI (56.03~57.66%) decreased and the SSI (56.71~58.63%) increased. The physical characteristics of the hardness increased as the fermentation duration increased for the NSI and the SSI decreased. The color values for the L, a, and b values were 47.64~58.56, 7.15~9.08, and 12.41~17.30, respectively. The α-amylase and protease activities of the SSI were the highest among all treatments. The total viable cell counts of the fermented soybean products by strains were 5.02 to 9.77 log CFU/g, and SSI (fermentation, 48 hours) was the highest. The amino-type nitrogen contents of all samples were 301.62~746.97 mg% and the SSI showed the highest content. The amino acid had the highest glutamic acid content.
In this study, the properties of the substances fermented soybean producted by manufacturing with several Aspergillus strains were investigated. The five soybean cultivar that includes miso, jinpung, pyeongwon, cheonga and chamol were used in this experiment. The pH and total acidity were 6.30~6.66%, and 0.27~0.48%, respectively with differences depending on the samples. The color values for L value, a, and b value were 60.28~69.80, 0.64~3.68, and 11.48~31.21, respectively. The amylase activities, protease activities, and amino-type nitrogen of the jinpung samples were the highest among all cultivars. The mold counts the fermented soybean products by cultivars were 6.18~9.14 log CFU/g, and miso was the highest. Free amino acid and organic acid contents were highest in the jinpung and showed different composition depending on each sample. A total of 18 volatile aroma-compounds, including two acids, four alcohols, four ketones, three phenols, one furan, three pyrazines, and one miscellaneous compounds. In conclusion, it is expected that manufacturing A. oligze inoculation fermented soybean products using jinpung cultivar will improve quality.
우리나라에서 쌀(Rice, Orzya sativa L.)은 주식일 뿐만 아니라 다양한 가공식품원료로서 그의 가치가 높은 식품자원이다. 본 연구는 쌀맥주 제조 시 당화가 잘되는 쌀의 전 처리 방법에 대해 탐색하고자 수행되었다. 쌀을 미세분쇄, 수침처리, 볶음처리, 호화처리, 팽화처리 후 맥아와 함께 당화를 한 결과, 팽화미를 함유한 맥즙이 가장 높은 당도 (°Bx)를 나타내었다. 또한 액화 및 당화효소를 첨가하지 않고, 맥즙을 제조 시 쌀 30% 첨가했을 때 당도가 가장 높은 결과를 나타내었다. 볶은쌀과 팽화미를 이용하여 10, 20, 30% 첨가한 맥주를 제조한 결과 팽화미를 30% 첨가 한 맥즙의 가용성고형분이 15.4 °Bx로 가장 높고 당화도 잘되었으며, 맥주의 알코올함량이 5.0-5.4%로 볶은쌀 첨가 맥주에 비해 높았으며, 탁도가 없었고 쓴맛도 적은 결과를 보였다. 팽화처리는 쌀의 당화를 개선 할 수 있는 좋은 가공방법이라고 생각되며, 팽화미를 첨가한 쌀맥주 제조방법은 편리하고, 좋은 품질의 맥주를 생산 할 수 있는 방법 중의 하나라고 기대된다.
This study evaluates the quality properties of soybean cultivar for fermented soybean products with several Aspergillus spp., which were selected based on their high antimicrobial activities. The six soybean varieties Daewonkong, Taekwangkong, Jinpung, Daechan, Daepung-2, and Seonpung were used in the experiment. Physicochemical analysis of soybeans showed that the cured fat and protein contents were 18.28-19.15 and 36.49-38.72%, respectively. The pH and total acidity (TA) were 6.31-6.60 and 0.36-0.48%, respectively. The amino nitrogen contents of all samples were in the range of 641.23 to 791.12 mg%, while Daechan showed the highest content (791.12 mg%). Mold counts of fermented soybean products were 7.63-9.20 log CFU/g. Hunter color values for L value, a value, and b value ranged from 59.52-71.28, 0.11-3.03, and 14.61-31.70, respectively. The amylase and protease activities of the Daepung-2 and Daechan were the highest among all the cultivars. The rank order of major free amino acids was glutamic acid > lysine > alanine > aspartic acid, with Daepung-2 and Daechan being the highest. As a result, Daepung-2 was suitable as a soybean cultivar, exhibiting high quality standards for the fermentation process of the fermented soybean products.
In this study, we analyzed the nutritional composition properties of soybeans and the organic acids, amino acids and volatile flavor compounds of fermented soybean products. We used five soybean cultivars including Pyeongwon, Jinpung, Saedanbaek, Saeolkong and Cheonga for this experiment. Physicochemical analysis of soybeans, showed that the cured protein and fat contents were 35.12∼45.12 and 14.26∼20.14%, respectively. The rank order of major organic acids was lactic acid > acetic acid > fumaric acid, with Saedanbaek being the highest. Total amino acid content of the samples was 358.12∼657.28 mg/100 g, and glutamic acid, alanine, cysteine, valine, leucine, histidine and arginine were the major amino acids. We identified a total of 34 volatile aroma-compounds, including 7 alcohols, 7 acids, 7 ketones, 5 phenols, 2 esters, 1 furan, 4 pyrazines, and 1 miscellaneous compounds. As a result of this, could be applied to determine the suitability of cultivars and the quality for the process of the fermented soybean products.
Sikhye is a traditional rice beverage, produced from steamed rice, barley or wheat malt and water. Nine varieties of barley and seven varieties of wheat cultivars were investigated and compared quality characteristics, diastatic power, and activities of α- and β-Amylase. For barley malt, the crude lipid and protein content of malt 1.74~2.42% and 10.71~14.36%, respectively. Also, the crude lipid and protein content for wheat malt 1.57~1.71% and 10.07~13.59%, respectively. The ‘Dahyang’ barley showed the highest diastatic power with 117.61 °L, while for wheat, ‘Baegjoong’ produced the highest diastatic power with 85.25 °L. The enzymatic activities, α- and β-Amylase for barley cultivar was 110.17~214.70 μnit/g and 869.73~1,638.43 μnit/g, respectively. Likewise, α- and β-Amylase for wheat cultivar was 73.19~132.23 μnit/g and 726.70~ 889.30 μnit/g, respectively. The highest sugar content of Sikhye from barley was 11.10 °Bx (‘Hyeda’), while from wheat, was 10.20 °Bx (‘Baegjoong’). Among the four free sugar components analyzed from Sikhye, maltose was the highest in all cultivars. The highest maltose content was produced in ‘Dahyang’ Sikhye at 6.91%. There was significant positivecorrelation among the diastatic power and enzymatic activities of malt and free sugar components in Sikhye.
This study evaluates the quality properties of soy-paste soybean cultivar for fermented soybean products. The six soybean varieties that include Jinpung, Saedanbaek, Daepung 2, Pyeongwon, Cheonga and Saeolkong were used in the experiment. The range of water uptake ratio, hardness after soaking and hardness after steaming were 117.00~131.33%, 1.65~3.30 kg and 0.05~0.14 kg, respectively. The physicochemical analysis indicated the following: Moisture content, 63.27~68.72%; pH, 6.43~6.60; total acidity, 0.27~0.45%. Color values for L value (lightness), a value (redness), and b value (yellowness) ranged from 39.07~67.92, 7.64~11.79, and 7.48~20.67, respectively. The amylase and protease activities of the Saedanbaek samples were the highest among all cultivars. The amount of viscous substance in the fermented soybean products by cultivars ranged from 5.93 to 8.37%, and Saedanbaek was the highest. The total viable cells counts for soybean fermented products were 9.11~9.42 log CFU/g. The amino-type nitrogen contents of all samples were in the range of 401.07 to 524.47 mg% and Saedanbaek cultivars showed the highest content (524.47 mg%). Based on the results, Saedanbaek will be suitable as a soy-paste soybean cultivar and the quality standards for the fermentation process of the fermented soybean products.
This experiment was conducted at Suwon, Korea from 2013 to 2015. The objective of this study was to establish the optimum seeding rate, and to clarify the nitrogen fertilizer level for rye seed production in central and north area of Korea. We used Korean rye cultivar ‘Gogu’ for this test. We employed a split-plot design with three replications. The main plots were designed by three seeding levels (3, 5 and 7 kg 10a-1), but other sub-plots were randomly seeded. The plots were treated with three different nitrogen fertilizer levels (3, 6 and 9 kg 10a-1). The percentage of productive tiller, number of grain per spike, fertility rate, 1 liter weight, and 1000-grain weight decreased as seeding rate increased from 3 kg 10a-1 to 7 kg 10a-1, whereas the number of spike per ㎡ increased. Therefore the grain yields of rye had less of an effect by increasing seeding rate. There was an increase in number of spike per ㎡, number of grain per spike, and fertility rate as nitrogen fertilizer level increased from 3 kg 10a-1 to 9 kg 10a-1, but grain yields significantly not affected by the interaction of seeding rate × nitrogen fertilizer levels. However, the best seeding rate and nitrogen fertilizer level for rye seed production were 5 kg and 5∼6 kg 10a-1, respectively, considering seed and fertilizer reduction and the prevention of pollution by excess fertilization.
Sorghum is a rich source of various phytochemicals including phenolic compounds that have potential to significantly benefit human health. Phytochemical production may be induced not only by genotype but also by a number of environmental factors including temperature and an amount of sunshine. The objective of this study was to determine the effect of planting dates and harvesting stages on the quality traits of ‘Donganme,’ a grain sorghum variety developed to produce high antioxidants. ‘Donganme’ was planted in three locations on four dates from early May to early July. Each planted fraction was harvested 35, 40, 45, 50, and 55 days after the head shooting date, respectively. The results showed that significant differences existed between the growth period and content of polyphenol and flavonoid. The sorghum harvested at 35 days after head shooting had the higher polyphenol and flavonoid content in all planting times and the tannin content was increased as the planting date was delayed. So the sorghum grown in late planting dates (July 5) had highest polyphenol content (2.07 gGAE/100g) at early harvesting (35 days) while late planting gave the low grain yield (1.3 ton/ha). Polyphenol index to average temperature during 35 and 45 days after heading of ‘Donganme’ showed that total polyphenol contents were decreased by 5.2% and 4.4%, respectively, with increasing average temperature of 1oC. And high correlation (R=0.85) was observed between accumulated temperature and the amount of polyphenol of ‘Donganme’, confirming the major contribution of the quality traits is temperature. To produce high quality grain from sorghum the relation between the yield and nutrition components must be considered simultaneously (i.e., Sorghum produced the highest polyphenol and flavonoid when planted in June 15 and harvested at 40 to 45 days after head shooting .
In the past years, few grain sorghum varieties with limited yield potential have been developed and grown in Korea. Hybrids tend to be more productive and resistive to unfavorable environmental conditions than pure line varieties. However, no hybrid cultivars are available and never have been planted for grain sorghum in Korea. The main aims of this study were to (i) verify if US x Korean and US x US hybrids increase grain yield in Korea; (ii) assess the performance of waxy hybrids in Korea and the US; (iii) estimate general combining ability and specific combining ability for the lines studied; and (iv) identify superior lines and hybrids for future use in breeding. Two distinct sets of waxy-endosperm sorghum hybrids derived from Korean landraces and US lines (Texas A&M University) were tested in the US and Korea. Compared to the parental lines, hybrids derived from US lines and Korean landraces showed yield increase that ranged from 2% to 127%. Hybrids created from US lines showed higher heterosis than US x Korean hybrids. Hybrid vigor was observed in the US and Korea, but shifts in ranks of hybrid performance occurred. The results indicate that it is feasible to develop grain sorghum hybrids adapted to Korean conditions only if delibrate selections take place in Korea. A combination of Korean and US sources could provide an acceptable germplasm base for developing Korean landrace based sorghum hybrids.
This experiment was performed to analyze the annual variation of growth traits of soybean to determine the information of less sensitive traits and stable cultivars based on the environmental conditions. Sowing was carried out on June 2 for each year and the test plot was arranged in three replicates by randomized complete block design with thirty soybean varieties including two landraces during the period 2014-2015. The weather conditions during the test period were quite different with extremely low precipitation and longer sunshine duration in 2015. The variation of characteristics related to growth period such as days of growth, days of maturity, days of flowering and 100-seed weight were less in spite of different environmental conditions. While the variation of the number of pods per plant was high. Considering growth and seed characteristics like the number of pods per plant, the number of seeds per pod, and 100-seed weight which are linked directly to the yield, cultivars such as Shingi, Daewonkong, Danbaegkong, and Daepung for beancurd and soypaste, Pungwon, Haepum and Shingang for soy-sprout and Seoritae for cooking with rice were more stable and are expected to have high yield in Suwon, the south-central part of South Korea. These results are useful for the selection of breeding resources to develop cultivars with high stability under changeable weather condition.
동남아시아 주요 옥수수 생산국인 인도네시아의 옥수수 생 산과 생산성 제한 요인에 대하여 조사·분석한 결과는 다음과 같다. 1. 인도네시아는 북위 5°에서 남위 10°사이에 위치하여 연 중 열대성 기후를 보이며 건기와 우기의 구별이 뚜렷하다. 2. 옥수수 재배면적은 약 4,000천ha 정도이며 생산량은 2009년 이후로 17,000천톤 이상을 유지하고 있다. 그 가운데 수확면적과 생산량의 약 50%를 Jawa섬이 차지하고 있다. 2014년 단위 면적당 생산성은 4.95ton/ha로 1980년대에 비하 여 약 3배 증가하였으나 지역적으로는 2.5 ~ 7.32ton/ha의 변이 를 보여 지역 간 차이가 심하다. 3. 생물적 생산성 제한요인은 downy mildew (Peronosclerospora), maydis leaf blights (Helminthosporium spp.), leaf spots (Curvularia spp.), rusts (Puccinia polysora), stalk and ear rots (Fusarium spp., Diplodia spp.), banded leaf and sheath blight (BLSB, Rhizoctonia solani) 등의 병과 바 구미(Sitophilus spp.), shoot flies (Atherigona spp.), Asian corn borers (Ostrinia furnacalis), 멸강충(Mythimna spp.), corn ear worm (Helicoverpa spp.) 등의 충이나, 가장 큰 영 향을 주는 요인은 downy mildew이다. 4. 비생물적 생산성 제한요인은 토양의 산성화에 따른 척박 토양과 관개가 자유롭지 못한 전작 지대의 한발피해 등이며, 경제·사회적 제한요인으로는 비료, 농약 등 농자재 투입 비용 과 hybrid종자 가격 등이다. 5. 인도네시아에 적응하는 품종 개발 시 생산성 제한 요인을 극복하기 위한 주요 타겟 형질은 환경 스트레스 내성으로서, 특 히 downy mildew 저항성과 내산성, 내건성이 요구된다.
유색옥수수 종실의 호분층을 첨가하여 제조된 안토시아닌이 함유된 유색두부를 개발하여 농가소득 증진을 위한 기술로 활 용하고자 수행한 결과는 다음과 같았다. 호분층 분말의 크기 와 상관없이 유색옥수수 호분층 분말의 첨가량이 증가할수록 만들어지는 두부 무게량은 증가하였다. 유색옥수수 호분층 분 말을 첨가한 두부는 100% 콩을 이용한 두부보다 일반적으로 경도가 높았다. 안토시아닌 함량 분석 결과 분말첨가량이 증 가할수록 유색두부에 포함된 안토시아닌이 증가하였다. 항산 화 활성 측정 결과에서 유색 옥수수 종실의 호분층 분말 첨가 와 항산화 활성이 옥수수 종실의 호분층 분말의 농도 의존적 으로 높아졌다. 기능성성분인 안토시아닌 등을 함유한 유색옥 수수 종실의 호분층를 이용하여 흰색두부에 보라색을 첨가하 여 시각적 효과와 기능성 등을 향상 시킬 수 있다. 더불어 국 민 소비가 많은 두부에 옥수수를 첨가하여, 점차 고급화 되어 가고 있는 소비자의 기호도에 부응할 수 있는 고품질두부 생 산에 본 연구결과가 큰 기여를 할 것으로 추정된다.
미이라병은 Diaporthe/Phomopsis complex에 의해 유발되는병으로 콩 재배기간 중 따뜻하고 습한 환경에서 종자가 성숙되면 감염률이 높아지며 감염된 콩 종자는 외관상 품질뿐만아니라 종자 활력이 저하된다. 미이라병에 대한 연구를 수행하기 위하여 대만에 위치한 아시아채소개발연구센터(AVRDC)의 콩 시험포장에서 미이라병 병징을 보이는 콩 줄기를 채집하고 이로부터 3개의 곰팡이 균주(isolate)를 분리하였다. 배지위에서의 곰팡이 균사의 생육특성, 현미경하에서 관찰된 알파,베타 분생자(conidia)의 모양 그리고 PCR-RFLP 분석으로, 3개의 균주는 Diaporthe phaseolorum var. sojae 으로 확인되었다. 한편, 미이라병 저항성 육종을 위해서는 유전자원과 계통의 검정이 선행되어야 하는데, 인공접종을 위해서 분생자의최적 배양조건을 탐색하였다. 그 결과 배지는 PDA, 온도는24oC에서 잘 배양되었으며, 일장은 암조건에서는 균사체만 유도되고 분생자는 유도되지 않았으며, 24시간과 15시간의 일장에서는 균사체 유도 및 분생자의 유도 정도에 차이가 없었다.또한 잎-줄기와 꼬투리, 두 개의 접종 부위에 따른 미이라병감염률을 조사하였는데, 두 접종 부위에 따른 미이라병 감염정도는 통계적인 유의차는 나타나지 않았으나 잎-줄기에 접종한 개체 보다 꼬투리에 접종한 개체의 종자 감염률이 높은 경향을 보였다.
중부지역에서 논 콩 파종기 이동에 따른 생육 및 수량성에 미치는 영향을 구명하고자 콩 조숙종 3품종과 중만생종 3품종을 경기 수원지역에서 5월 21일, 6월12일, 6월29일, 8월1일 4회 파종을 하여2012년부터 2013년까지 2개년 간에 수행하여 주요 생육특성 및 수량성을 비교한 결과는 다음과 같다.
1. 출현율은 파종기 조·만에 따른 일정한 경향이 없었으며, 중만숙종인 태광콩이 가장 높았고 조숙종인 참올, 중만숙종 황금이 가장 낮았으며 연차 간 차이는 없었다.
2. 출현소요일수는 만파될수록 단축되는 경향이었으며 조숙종, 중만숙종 품종에 따른 차이가 있었고 연차 간에 총 평균 출현소요일수의 차이가 있었다.
3. 개화소요일수는 조·중만숙종 품종에 관계없이 만파될수록 개화일수가 단축되었으며 단축폭도 만파될수록 적어졌다. 조숙종이 중만숙종 보다 5.5일이 더 빨랐고, 연차 간에 개화소요일수의 유의적인 차이는 없었다.
4. 주경장은 조파에 비해 만파에서 단축되는 경향이었으며 조숙종이 중만숙종 보다 적었고 연차 간에 주경장의 유의적인 차이는 없었다. 분지수는 조숙종은 일정한 경향이 없었으나 중만생종은 만파될수록 많아지는 경향이었으며, 중만숙종이 조숙종 보다 많았고 연차 간에 차이가 있었다.
5. 주당협수는 조파에서 가장 많았고 중만숙종이 조숙종 보다 많았으며 연차 간 차이는 없었다. 주당립수는 전 파종기조·중만숙종 전체평균치는 중만숙종이 조숙종 보다 더 많았고연차간 비교시 2012년이 2013년보다 더 많았다. 백립중은 조기 3파종기간에는 유의적인 차이가 없었고 만파에서는 현저하게 낮아졌으며, 조숙종이 중만숙종 보다 더 무거웠고 연차 간에 고도의 유의적인 차이가 있었다.
6. 10a당 수량은 6월29일 파종기에서 가장 높았고 그 다음이 6월12일, 5월21일 순으로 낮아졌으며 8월1일 파종기에서 가장 낮았다. 전 파종기에 걸쳐 조숙종과 중만숙종 전체평균치를 보면 중만숙종이 조숙종 보다 많았고 연차 간에 고도의 유의적인 차이가 있었다.
