This study aimed to investigate the dietary changes among adults living alone during the COVID-19 pandemic in the Republic of Korea. An online survey was conducted to examine dietary changes before (in 2019) and during (in 2021) the pandemic. The data from 337 adults living alone who responded to the survey were used for analysis. The proportion of the respondents reporting frequent food consumption at convenience stores (≥3 times/week) increased during the pandemic (p=0.024), and the proportion of those frequently eating ready-to-eat and ready-to-cook food (≥3 times/week) was more than doubled (p<0.001). Additionally, the proportion of those frequently consuming delivered food (≥3 times/week) increased by 2.5 times (p<0.001). In conclusion, the dietary habits of adults living alone changed significantly during the COVID-19 pandemic, which may have a negative impact on their health. Therefore, the development of customized nutrition management programs to improve the dietary habits of adults living alone during emergencies like a pandemic is deemed necessary. This study can serve as a foundation for understanding the dietary changes of adults living alone in prolonged crisis.
Radish is a sulfur-containing compound containing the -S group, having bioactive functions such as anticancer, antithrombotic, antioxidant, and antibacterial properties, and is used as a health supplement and pharmaceutical material. This study aimed to compare changes in sulforaphane (SFN) content according to freeze-drying or hot-air drying conditions in Korean radishes. The color of frozen or hot-air-dried radish underwent a browning reaction due to heat treatment; the brightness (L) decreased from 89.3 to 56.1, and the redness (b) increased. The SFN content of freezedried radish was 13.2565 mg/g, the SFN of radish dried at 50oC was 2.64372 mg/g, and the SFN of radish dried at 80oC was 0.0678 mg/g, which was the highest in freeze-dried radish. Therefore, the SFN of radish was found to be insufficient in thermal stability, and freeze-drying was considered a suitable method for drying radish.
The purpose of this study was to investigate the association between household economic changes by COVID-19 and dietary habits in Korean adolescents. The study analyzed data from the 17th Korea Youth Risk Behavior Survey in 2021. A total of 54,848 middle and high school students, 28,401 males and 26,447 females, participated in this study. COVID-19 lead to deterioration of household economy in the lower level of household economic status (p<0.001). The deterioration of household economic status by COVID-19 was associated with dietary habits such as lower breakfast intake, and higher fast food, soda drinks, and sweet drinks consumption (p<0.001). Logistic regression analysis showed that deterioration of household economic status was significantly decreased in frequency of breakfast intake (OR: 0.73, 95% CI: 0.67~0.80). The deterioration of household economic status by COVID-19 was also significantly associated with increased frequency of fast food (OR: 1.28, 95% CI: 1.16~1.41), soda drinks (OR: 1.42, 95% CI: 1.30~1.56) and sweet drinks (OR: 1.35, 95% CI: 1.24~1.46) consumption (p<0.001). In conclusion, it was confirmed that the change in household economy caused by COVID-19 was associated with dietary habits in adolescents. As the household economy deteriorated, there was an increase in undesirable dietary habits including skipping breakfast and fast food consumption.
To develop customized food products for gastric cancer patients, it is crucial to understand their dietary characteristics and changes in their perception of smell and taste due to their condition. This study conducted in-depth interviews and administered olfactory and gustatory tests on 20 patients with gastric cancer. A control group of 20 healthy, gender and age matched individuals, was included for comparison. Patients reported difficulties in sustaining their appetite, particularly during chemotherapy. This could be attributed to gastrointestinal discomfort and an altered perception of smell and taste. The olfactory test revealed that cancer patients were significantly less sensitive than the control group. Also, a smaller number of participants in the cancer group were reported to have a normal taste function, which enabled them to perceive umami, one of the five basic taste compared to those in the control group. These findings demonstrated that gastric cancer patients experience post-surgical digestive issues, chemotherapy-induced changes in smell and taste, and appetite loss. To improve the quality of life of these patients and the efficacy of the treatment, it is necessary to consider not only their nutritional requirements but also other factors such as appetite loss and discomfort when developing meals specifically for them.
This study examined the historical changes of and dietitians’ needs for the Life Cycle-based Dietary Guidelines for Koreans. Content analysis of relevant documents, a survey of 307 dietitians, and in-depth interviews with eight dietitians were conducted. The dietary guidelines published between 2003 and 2004 included one set of common guidelines and several sets of dietary action guides corresponding to six target groups: pregnant and lactating women, infants and toddlers, children, adolescents, adults, and the elderly. The guidelines were revised between 2008 and 2011 and consisted of six sets of guidelines for the target groups without common guidelines. The dietitians considered five or six as appropriate numbers of guidelines for each group. Needs for separate guidelines for women of child-bearing age and male workers were reported. The dietitians preferred one set of common guidelines with specific action guides for each target group and wanted easier and more specific messages to be included in the new guidelines. It is suggested that the Life Cycle-based Dietary Guidelines for Koreans should be revised to reflect such dietitians’ needs.
This study examined the effects of ‘Dietary education for children’s health UP’ (DECHUP) on the changes in knowledge, attitudes, and practice (KAP) of nutrition and food safety in 5th grade elementary school students in Incheon. The DECHUP program was conducted from May to October 2018 and consisted of education and activities focusing on the children’s levels of understanding. Data were collected before, immediately after, and 6 weeks after DECHUP using the same method. All data were analyzed using SPSS ver 20.0. The level of knowledge and attitudes of the subjects to nutrition and food safety was significantly higher after than before DECHUP, but the attitude of boys did not show any significant difference after 6 weeks. Although there were no significant differences in the behavior for nutrition in the practice of the subjects, there were significant positive changes in the behavior of food safety. The higher the satisfaction of DECHUP, the more positive the change in knowledge, and the more positive the attitude and practice behaviors. Therefore, DECHUP has positive effects on the KAP of the subjects, and it will be helpful for elementary school students to form desirable eating habits if it can be carried out periodically and continuously.
쌀 가공식품 부산물의 효소 처리로 인한 단백질과 식이섬유, 색도의 차이는 시료에 따라 각각 다르게 나타났다. Gravimetric method와 Kjeldahl method 간에 단백질 함량의 차이가 조금씩 있는 것으로 확인 되었지만, 전체적으로 두 값의 패턴이 같은 것으로 보아 이 두 가지 단백질 측정 방법간에 유의성이 존재한다고 판단하였고, 두 값의 비교를 통해 단백질 함량의 변화를 더욱 자세히 비교 할 수 있었다. 주박의 경우 다른 효소보다 Termamyl이 단백질 함량을 높이는데 영향이 큰 것으로 나타났고, 효소를 혼합하였을 때 그 시너지 효과가 두드러졌다. 특히 세가지 효소를 모두 혼합하였을 경우 가장 좋은 시너지 효과를 나타냈다. 그러나 식이섬유의 경우 Termamyl 단일효소를 처리했을 경우가 식이섬유 함량을 높이는 데 가장 효과적인 것을 확인 할 수 있었으며, 탈지미강의 경우 역시 Termamyl이 가장 효율 적으로 나타났고 주박과 비슷한 패턴을 보여, 역시 혼합효소로 시너지 효과를 확인 할 수 있었다. 그러나 식이섬유 함량의 경우, Termamyl 처리를 했을 때 약한 증가 경향을 보인 반면, 다른 효소 처리로 인한 식이섬유 함량은 감소하는 경향을 나타냈다. 시럽박의 경우 초기 단백질 함량이 높아서 단백질 함량이 크게 증가하지 않았다. 최적의 효소라고 평가할 만한 효소를 찾을 수 없었고, 시너지 효과 역시 나타나지 않았다. 그러나 식이섬유의 경우 효소 처리로 인해 상당량이 증가하는 것으로 나타났다. 특히 Viscozyme 처리로 인한 식이섬유 함량은 큰 증가를 보였으나, 시너지 효과는 크게 나타나지 않았다.
We investigated the effect of different kinds of dietary added fat on the fatty acid composition, cholesterol content and quality of hens‘ eggs. The Haugh units, breaking strength, shell thickness and yolk color were not significant difference among the groups. Dietary fat notably altered the polyunsaturated fatty acid composition and cholesterol content in the egg yolk. The n-6 fatty acid of egg yolk was highest in the corn oil fed group with 31.61%, and this tended to decrease in the order of the tallow, linseed oil and fish oil fed groups(p<0.05). The n-3 fatty acid of egg yolk tended to increase in the linseed oil and fish oil fed groups as 9.74% and 5.16%, respectively(p<0.05). Theses alterations in the yolk fatty acid composition resulted in a reduced cholesterol content of the eggs. The ranges of cholesterol content showed values of 15.98-18.37 mg/g of yolk or 227-261 mg/60g of egg, respectively(p<0.05). The cholesterol content of egg yolk was highest in the tallow fed group, and this tended to be reduced in the order of the fish oil, linseed oil and corn oil fed groups(p<0.05). The reduction of the egg yolk cholesterol content in the other groups compared to the tallow group was significantly different, i.e., 13.01% in the fish oil group, 11.49% in the linseed oil group and 6.91% in the corn oil group, respectively(p<0.05). This result suggests that it is possible to reduce the cholesterol content or to increase the n-6 and n-3 polyunsaturated fatty acids in eggs by manipulation of the dietary added fats.
Differences in dietary intake of Korean Americans (KA) by the length of residence in the U.S. were studied in relation to health and disease patterns in Michigan. Of 1860 questionnaires mailed, 637 (34.3%) responded with demographics, anthropometrics, self-reported disease patterns, lifestyle, and dietary patterns (93-item FFQ developed for KA). Complete responses were available for 498 people (263 men,253 women, aged 30-87 yr), who were then divided into three groups based on the number of years lived in the U.S.: 15y, 16-25y, 26y. Age-adjusted weight, height, BMI, and waist to hip ratio were within the normal ranges and did not differ among the three groups. Chronic diseases frequently reported in men and women (age-adjusted) included hypertension (14.4%, 14.1%), digestive diseases (5.4%, 8.5%), diabetes (3.6%,4.9%), and arthritis(3.3%, 12.5%), respectively. The length of residence in the U.S. was inversely associated with the age-adjusted prevalence of digestive diseases (12.4%, 6.5%, 0.4% in men, 13.0%, 11.7%, 0% in women). The length of residence was positively associated with health consciousness, receiving regular health care, taking supplements regularly, and exercising, while inversely related to smoking. The majority favored American foods for breakfast and Korean foods for dinner. Foods frequently consumed included cooked rice (w/other grains). kimchi, coffee (w/cream and sugar),bread (white and dark), citrus juice, milk (low fat and skim), lettuce and cucumber, apple, seaweed, and soda. Intake frequency of the Korean starch food group was inversely associated with the length of residence for both men and women (p<0.001), but not with the American starch food group. Fat intake did not differ by the length of residence in the U.S. The dietary changes were associated with the length of residence and chronic disease patterns for the first generation of KA, which should be further examined 'for the subsequent generation of KA.
This study was to investigate the changes in dietary practices, reasons for making dietary changes, current food consumption patterns, and eating habits. Data were collected from 515 parents whose children were attending an elementary school and a middle school in Kimcheon. Among the twenty food groups studied, subjects reported eating more fruit, vegetables, lower-fat meats, high-fat meats, reduced/skim milk, and eggs and less sugar, fats, rice, salt, potato/sweet potato, and chicken. The changes in dietary practices except high-fat meats and salt were significantly different between sex, age, education level, income level, or BMI groups. The primary reason for making dietary changes was 'concerned about family's health'. The average rate of never eating breakfast or less than 2 times per week was found to be 23.2% with a greater rate in younger age group. The rate of breakfast skipping was found to vary between different age and education groups. The regularity of mealtime and overeating practices were significantly different between age groups. Eating out practices were found to vary between different age, education, and income groups. People at younger age group in Kimcheon should be targeted for nutrition education about eating habits. These findings are applicable at the planning and implementation stages of various nutritional improvement projects.
지난 1세기 동안의 한국인 식사 습관의 변화를 조사 분석한 결과는 아래와 같이 요약된다. (1) 이조 말기까지 한국인은 다양한 곡류, 채소류, 과실류를 식품으로 이용하였으나 농업의 전문화와 생활 방식의 도시화에 의하여 이들 식품 재료의 종류가 크게 감소하였다. (2) 우리의 전통식단은 영양적으로 균형잡힌 구성을 가지고 있었으나 일제의 수탈과 전쟁 중의 식량난으로 한국인의 영양 섭취는 크게 악화되었다. (3) 전쟁 중 악화된 영양상태를 전통 식사법의 회복으로 극복하려 하지 않고 서양식 식사법의 도입으로 해결하려 하였다. (4) 전쟁중의 기아 상태에서 외국 원조로 공급된 분유와 밀가루의 섭취가 일반화 되었으며, 전후 경제 개발 과정에서 분식 장려 정책과 축산 진흥 정책이 계속되었다. (5) 1970년대 이후의 경제 성장 과정에서 식용 및 사료용 곡물 도입이 급증하게 되었으며 식량 자급율은 50% 이하로 하락하였다. (6) 1970년대에 와서야 우리의 식량공급은 이조 말기의 수준으로 회복되었다. 그러나 그 구성면에서 지방질의 섭취가 크게 증가되는 양상을 나타내었다. (7) 1980년대에는 동물성 식품의 소비 과다, 지방의 과잉섭취 현상이 계속 심화되고 있으며 이러한 현상은 성인병의 발병율 증가 등 국민 보건의 퇴화 조짐과 식량 수입에 따른 경제적 부담을 가중시키고 있다. (8) 우리의 전통 식사법에 근거를 둔 식사목표의 설정과 올바른 식습관 정립을 위한 국민 교육과 정책적 배려가 시급히 요구되고 있다.
Age, sex and the amount of activity determine recommended dietary allowances. So the method of developing RDA and their levels have been revised according as the physical condition of a nation improves and the amount of activity changes along with the variety of social situations. It can be seen from records that in Korea the absolute nutrient requirements for the people in Chosun Dynasty were first published in 1922. After that, in 1941 Gui Dong Han expressed his view that the standard health diets for the Japanese would be suitable for the people in Chosun Dynasty. In 1960, the temporary nutrition standards for the Koreans were established by the Ministry of the Health and Social Affairs. For these standards, males and females were respectively divided into three groups by age and nine nutrients were recommended for each group. In 1962, The Korean Association to FAO published the RDA for the Koreans. Since then, regular researches have been done. For these allowances, there were 16 age groups of men and women and ten nutrients recommended for each group. On the first revision in 1967, the fat allowance was presented at the ratio (12%) of fat calorie to total calories with no change in the number of age catagories and in the kinds of nutrients. And the basis of the riboflavin allowance was changed from the level of protein intake to that of energy intake. On the socond revision in 1975, there was brought 19 are catagories and ten nutrients recommended. On the third revision in 1980, age catagories increased to 22, and ten nutrients were recommended. On the fourth revision in 1985, there remained 21 groups by uniting the early and later periods of pregency. On the first revision in 1967, the recommended energy allowance was 3000 kcal, the highest level. Since then it has gradually been reduced. And it can be noticed that the protein allowance was high when food was difficult to obtain.
The purpose of this study was to evaluate the mortality rate, weight gain, and protein, lipid cholesterol, and total amino acid contents in processed-sulfur-diet chicken meat. Also investigated were the antioxidant activity and glutathione content of blood plasma. The mortality of the processed-sulfur-diet chickens was relatively reduced, and their weight increased compared to the normal-diet chickens. Although the glutathione content decreased in the processed-sulfur-diet chicken blood plasma, the antioxidant activity increased compared with the normal-diet chickens. Also, there was no difference in the total cholesterol contents of the blood, but the level of HDL cholesterol increased while that of LDL cholesterol decreased. Furthermore, there were no changes in the total amino acid and protein contents, but the fat content was significantly reduced. As no toxicity was found in the DT 40 cells in the MTT assay, it can be concluded that dietary sulfur in chicken feed can improve the quality of poultry products.
미강에서 추출한 tocotrienol의 생리활성 효과를 알아보기 위하여 동물식이 실험을 통한 혈액 분석과 간 및 심장의 조직을 조사한 바 그 결과는 다음과 같다. 1. Tocotrienol의 섭취는 혈중 triacylglycerol을 강하시키며 그 효과가 tocopherol보다 훨씬 큰 것으로 판단되었다. 또한 tocopherol과 tocotrienol은 모두 혈중 HDL의 농도를 증가시키는 반면 혈중 LDL 농도의 저하를 유도하는 것으로 판단되며, Duncan grouping을 통하여 tocotrienol이 tocopherol보다 더 큰 효과를 보임을 알 수 있었다. 2. Tocopherol과 tocotrienol 모두 혈능 AST의 활성을 저하시키는 것으로 나타났으며, 혈중 Alanine Transaminase(ALT) 활성의 변화도 같은 경향이었다. 따라서 tocopherol과 tocotrienol이 간 손상 억제나 복구, 간 기능의 회복 등에 효과가 있는 것으로 판단되었으며, tocotrienol이 tocopherol보다 간 기능의 보호에 더 큰 효과를 가지는 것으로 나타났다. 또한 심장이나 뇌 등의 다양한 조직에서 손상을 회복시키거나 기능을 보호하는 효과도 가지는 것으로 판단되었다. 3. 간과 심장 조직에 대한 현미경학적 조사를 한 결과 cholesterol을 투여한 군에서는 약간의 세포손상 현상을 보였으나, tocotrienol을 투여한 군들은 tocotrienol의 농도를 증가함에 따라 지방침착정도가 점점 감소하여 농도별로 간과 심장에 미치는 영향이 뚜렷이 차이가 남을 알 수 있었으며, 이러한 결과는 tocotrienol의 섭취가 각 조직의 지방침착을 뚜렷하게 억제하는 효과가 있음을 증명하는 것으로 판단되었다.
