        In this study, 294 housewives in Siheung, Gyeonggi-do, were surveyed to evaluate the differences in the recognition and use of nutrition labeling according to age and to present data for nutrition education. The younger the age, the more aware the consumer was of the information on the nutrition label. Housewives who were younger than 60 years were more likely to check the nutrition labels. The lower the age, the higher the reliance on the nutritional labeling content of the food, and the higher the recognition level of nutritional labeling. It was found that the lower the age, the easier it was for the consumer to understand the nutritional labeling. Among housewives in their 30s and younger, 89.5 percent said they believed checking nutrition labels would help their health. In the younger age group knowledge and information on nutrition labeling was acquired from the internet, and in the older age group, knowledge was acquired from television, radio, and newspapers. Research conducted on housewives in other regions in the future could provide more detailed information suitable for the population of each region. This would serve as data for nutrition education on the recognition and use of nutrition labeling for a healthy diet.

        This study was conducted to provide basic data on the amount of sodium and the setting of permissible error range of actual measurement, which is a problem for cabbage kimchi nutrients subject to labeling. The sample targeted was baechu (Kimchi cabbage) kimchi, which might have a large variation in sodium content by part of kimchi. Kimchi samples were collected twice from eight companies by season (spring, summer, fall, and winter). The average sodium content in kimchi samples was 619±87 mg/100 g (range, 534±63 mg/100 g to 783±40 mg/100 g). The error in average annual sodium content of abandonment kimchi (maximum value difference compared to the minimum value) was 26.8 to 64.3%. Sodium contents in kimchi produced in spring and summer were relatively low. However, deviation between individuals was large. It was found that cases exceeding the permissible error (120%) standard varied depending on the criteria for setting the amount of sodium. In addition, due to seasonal differences, sodium content in kimchi exceeded 120% of the labeling value. Thus, it is necessary to set standards suitable for characteristics of kimchi to prevent unintentional violations of labeling standards by raw materials and manufacturing processes.

Label policies have been issued to promote information disclosure on food products in some developed countries. Recent years have also seen increasing attempts to promote healthy eating in emerging markets. In China, nutrition labels became mandatory under the nutrition labeling acts. The laws require nutrition information to be presented at the point of purchase as well as in establishments where food is prepared or consumed. Additionally, similar actions were taken by India (India Ministry of Health and Family Welfare, 2011), Mercosur members and in South Africa (Brazilian Ministry of Health, 2012; Institute of Food Technologists [IFT], 2011).

        The aim of this study was to develop and evaluate a nutrition education program that was designed to increase the knowledge, attitudes, and skills of Korean adults regarding nutrition labeling. The education program was 45 minutes of short-term training, which was conducted in the form of lectures and exercises. The contents of the program were as follows: in the introduction stage, talking about status and reasons for checking nutrition labels; in the development stage, explanation of nutrition labeling and their content, reading, and identifying sample nutrition labels, as well as comparing nutrition labels and selecting better foods; in the closing stage, summary of nutrition labeling and a pledge to check nutrition labels when purchasing processed food. A total of 53 adults (88.5% female) aged 30 years and over participated in this study. The nutrition labeling awareness of the subjects was increased significantly from 55.8 to 96.2% after the education. After the education, the correct recognition rate of a nutrition label was increased significantly from 26.9 to 78.8% for the amount of food, from 25.0 to 73.1% for the calorie content, from 36.5 to 69.2% for the nutrient contents, and from 30.8 to 82.7% for the percent daily value. The self-efficacy of checking nutrition labels was also increased significantly compared to that before the education. The overall satisfaction score of the nutrition education program was 4.2 out of 5. The outcome showed that the nutrition education program of nutrition labeling improved the participants’ awareness and self-efficacy towards checking nutrition labels.

Recent years have also seen increasing attempts to promote healthy eating in emerging markets. In China, nutrition labels became mandatory under the nutrition labeling acts. The laws require nutrition information to be presented at the point of purchase as well as in establishments where food is prepared or consumed. Additionally, similar actions were taken by India (India Ministry of Health and Family Welfare, 2011), Mercosur members and in South Africa (Brazilian Ministry of Health, 2012; Institute of Food Technologists [IFT], 2011). While nutritional labeling has received a lot of attention both in academia and from the press, some key gaps remain in the nutrition labeling literature. First, a great deal of marketing research has focused on consumer responses (e.g., Balasubramanian & Cole, 2002; Hieke & Taylor, 2012; Ippolito & Mathios, 1995; Parker & Lehmann, 2014; Shah, Bettman, Ubel, Keller, & Edell, 2014) and firm responses (e.g., Moorman 1998; Moorman, Du, & Mela, 2005; Moorman, Ferraro, & Huber, 2012) to nutrition labeling laws. Although stock market investors express greater interest in information about nutrition issues that can be integrated into financial analyses (Global Access to Nutrition Index [ATNI] Investor Statement, 2013), the issue of how standardized information requirements affect investors’ responses in financial markets has been understudied. As used here, standardized product-information disclosure refers to a requirement to present facts about firms’ offerings in a common format using uniform metrics (Moorman et al. 2012). Understanding the extent to which investors consider product information-disclosure polices when they make investment decisions is important because a company’s financial health is not only the ultimate measure for the success or failure of any strategic initiative (Luo & Bhattacharya, 2009), but also one of the most important measures of public policy effectiveness (Joshi & Hanssens, 2010; Srinivasan & Hanssens, 2009; Schwert, 1981). Moreover, urgent concerns have spilled over from the product market to the financial market (Chen, Ganesan, & Liu, 2009) due to the enormous economic costs and damage to firms’ reputations in product-harm crises (e. g., melamine contamination in several Chinese brands of infant milk powder) (Ngo, 2014). Another gap in the literature is how nutritional-labeling requirements affect emerging markets. In contrast to the situation in long-developed countries, emerging markets are subject to different pressures for food marketers and thus a distinctive environment surrounds the regulation of food product labeling. In China, food safety and quality is considered an urgent concern, and the issue has forced regulators and companies to take action (Yan, 2008). Unlike mature stock markets, the majority of investors in China are individuals (Chen, Li, & Shi, 2010). The Chinese markets are under-regulated and deficient in gathering and disseminating information to private or public organizations, and it is difficult for listed firms with insufficient records to form reputations (Singh et al., 2005). As a result, information asymmetry is accentuated and imperfect signals released from firms highly impact investor decisions. Thus, examining the effectiveness of labeling requirements in developing economies is important as is comparing these results to those found in more developed countries. Despite the importance of the issue in emerging markets, empirical work for investigating investor response to the public policy of nutrition labeling (Ghani, & Childs, 1999) or firms’ nutrition claim strategies (Cao & Yan, 2016) has been restricted in developed markets (e.g., the U.S.). Little is understood the changes in corporate financial performance because of regulations requiring product information disclosure in emerging markets. As a result of the pressures for consumer protection and regulation, it is increasingly important for policy makers to be able to understand the financial consequences of such regulation because of information disclosure policies (Moorman et al., 2005). Thus, an additional contribution of this study is to help better inform the policy debate in emerging markets. To fill these research gaps, we investigated the influence of the influx of standardized product information on the stock market. Specifically, we conducted an event study to examine the effect on firms’ stock values from the issuance of the food nutrition label acts (FNLAs) in China, a fast-growing emerging market. The acts require food manufacturers to provide standardized nutritional information on pre-packaged food labels. This study contributes to the marketing literature on the financial impact of regulation in emerging markets. In China, on the day the FNLA was issued, they were associated with positive abnormal stock returns of related firms. This result is contrary to the study by Ghani and Childs (1999) that reported that the NLEA passage showed a negative impact on firms’ stock prices. Second, the financial value from the issuance of regulations was strengthened by three marketing leverages—advertising, donations, and R&D. Finally, although Moorman et al. argued that the NLEA increased the number of small-share firms exiting the U.S. market (Moorman et al., 2005), we found that in the short term, large firms benefited less than small firms from product information disclosure in China’s stock market. These findings provide empirical evidence that regulatory controls create changes in shareholder wealth and provide an assessment of the financial market’s perceptions regarding the role of mandatory product- information disclosure in future corporate growth. In addition, evidence of the effects of regulatory changes on wealth is of significant value to policymakers and market participants as they evaluate the benefits and costs of information disclosure in emerging markets.

        This study examined the sweet taste perception, perception of sugar reduction, and utilization of nutrition labeling according to the awareness of the self-perceived sugar intake reduction of university students in Chungbuk Area. The subjects (n=419) were divided into two groups: Awareness of Sugar Intake Reduction (ASIR) group, male=110, female=109; Non Awareness of Sugar Intake Reduction (NASIR) group, male=115, female=85. The overweight/obesity was significantly higher in the ASIR group than in the NASIR group for both male and female students. The sweet taste perception was significantly lower in the ASIR group in male students than in the NASIR group. The purchase level of a product with reduced sugar instead of the original products was significantly higher in the ASIR group in male students than the NASIR group. Beverage purchases after identifying the sugar content were significantly higher in the ASIR group in male students than in the NASIR group. The necessity of nutrition labeling education was significantly higher in the ASIR group both male and female students. Based on these results, the correct perception of sugar reduction and continuous and practical nutrition education of sugar intake reduction need to maintain healthy dietary habits in university students.

        Nutrition labeling can provide information in order for people to select products suitable for their own health, and sodium content labeling for processed foods is important since sodium is one of the main causes of cardiac diseases. This study had carried out to propose the desirable sodium content labeling by conducting surveys on the awareness of sodium content in processed foods, understanding of sodium content labeling, and requirements for new sodium comparative claims. The survey period was from 12th of September, 2016 through the 24th, during which a self-administered questionnaire survey was given to 1,003 persons through demographic quota sampling by age and region. As a result of the survey, 66.0% of respondents assuring nutrition labeling answered they check sodium content labeling, whereas 83.2% were aware of excessive intake of sodium having a negative effect on health. Exactly 49.9% of respondents answered that the current system for nutrition labeling on processed foods does not help one to understand the content of sodium, whereas 72.9% answered they wanted to compare sodium contents with those of other products when buying or taking processed foods. As 92.5% cited the importance of sodium comparative claims made by processed foods, preparation of a new system for food labeling should be considered by which consumers can easily compare sodium contents with those of other similar products.

        This study was to investigate the association among satisfaction of nutrition labeling, change of purchase behaviors, and dietary life care, based on the awareness of nutrition labeling at expressway rest areas. The subjects (n=903) were divided into two groups, according to the awareness of nutrition labeling: Awareness of Nutrition Labeling (ANL) group, n=367; Non Awareness of Nutrition Labeling (NANL) group, n=536. Effort of health care and identification of nutrition labeling was significantly higher in the ANL group, compared with the NANL group. As for the main reason for not identifying nutrition labeling, ‘not interested in nutrition labeling’ was the highest in the ANL group, and ‘Don't know nutrition labeling is provided’ in the NANL group. Identification ratio of nutrition labeling in future was significantly higher in the NANL group, compared with the ANL group among the subjects who didn't identify nutrition labeling before. After their becoming aware, a change of food purchase after reading the nutrition labeling was significantly higher in the ANL group, compared with the NANL group. Health beliefs on the nutrition labeling were significantly higher in the ANL group, compared with the NANL group. Satisfaction of nutrition labeling was also significantly higher in the ANL group, compared with the NANL group. The ANL group also expressed a necessity of expansion of nutrition labeling, compared with the NANL group. In the ANL group, identification of nutrition labeling was significantly higher in the hard effort group, compared with the little effort group of dietary life care. Therefore, improvement and campaign of nutrition labeling for consumers at expressway rest areas, especially for the NANL group, will be effective in identifying nutrition labeling for their health care.

        The study was carried out to investigate the efficacy of current nutrition labeling of processed foods and examine awareness among university students of nutrition information given current nutrition labels, and also awareness of the one-serving size of snacks that come in differently sized packages. A total of 100 students in Chungbuk, Korea participated in this study. About 60% of the subjects knew about nutrition labeling; however, a very small percentage (11%) of the subjects reported an experience of being educated about nutrition labeling. Also, just 32% of the students checked nutrition labels when they purchased processed foods. When understanding of nutrition information on labels of snacks in differently sized packaging was tested, over 80% of the subjects understood nutrition information accurately. Five different package sizes were studied. Of these 5, packages containing about 200% of one standard serving showed the highest rate of misunderstanding of total energy contents per container. Interestingly, the students most strongly preferred containers that contained 300% of one standard serving. From these results, we conclude that students consider the current recommendation for a serving size to be small, which may be related to misreading of nutrition labels of snacks that come in packages containing less than 300% of one standard serving size. To improve accurate understanding of nutrition labels of snacks, total package labels or dual column labels on packages containing less than 300% of one standard serving size should be considered.

        The purpose of this study is to investigate 5th grade elementary school girls’ effort to recognize and use nutritional labels on processed foods and restaurant meals to encourage dietary behavior. The subjects (n=976) were divided into three groups (effort group, n=711; normal group, n=193; and no-effort group, n=72) depending on level of effort for the healthy dietary behavior such as eating balanced meals, eating three meals regularly, and eating meals slowly. In the effort group, the frequency of food intake for breads, ramen, noodles and fast foods was significantly lower, while frequency of food intake for fruits and vegetables and salad was significantly higher than in the other two groups. In the effort group, the ratio of the respondents that perception of nutrition labeling on processed foods and restaurant meals was 80.5% and 31.4% and the ratio of girls who checked the nutrition labeling at their point of purchase was 71.1% and 24.7%, respectively. Reasons given for not reading nutrition labeling for restaurant meals were ‘not interested’ for 34.6% of the effort group, and 52.2% of the no-effort group. Therefore, it is necessary to create an educational program on healthy dietary behavior, including how to read nutrition labeling and establishment of proper body image perception for elementary school girls.

        The purpose of this study is to evaluate the changes in perception concerning nutrition labeling and students' availability of processed foods and is to investigate parents' awareness of nutrition labeling through the 'Education program on safety management of children's dietary life' conducting directly to the fifth grade elementary school students (4,105 persons) by the nutrition teacher in each school. The part that checked when purchasing processed food before and after the students' education, the name of manufacturer (p<0.05), raw material and content (p<0.001), food additives (p<0.001), nutritive components (p<0.05) etc. were significantly improved. An idea about nutrition labeling has increased after the education, the question items in 'it is reliable' (p<0.001), 'satisfied' (p<0.01) were significantly increased particularly. In spite of one time education, it showed positive changes such as it can be possible to get desired nutrition information. Thus, although it was one time training conducted in the situation that can not be carried out formal education due to school environment, a variety of practical education of children's dietary life is required targeting comprehensive senior students, the education is considered to be conducted for children as well as parents.

        최근 사회경제적 환경의 변화는 개인의 식품 소비에도 많 은 영향을 주었으며, 외식의 비중 또한 크게 증가하였다. 외 식의 증가로 건강에 미치는 영향력이 커짐에 따라 올바른 음 식선택을 위한 영양성분이나 건강정보를 알려주는 영양표시 의 중요성이 강조되고 있다. 그러나 아직은 외식업체 영양표 시가 의무사항은 아니며 외식 시 소비자들의 영양표시 활용 에 대한 인식 또한 부족한 것이 사실이다. 특히 한식 메뉴에 대한 영양표시 연구는 거의 없는 실정으로 영양표시를 통한 영양관리의 중요성을 강조하고, 한식당 영양표시제도 마련을 위한 기초자료를 제공하고자 하였다. 본 연구는 일부 경기지 역에 거주하는 20세 이상의 성인을 대상으로 2010년 2월 5일 부터 2월 27일까지 한식당 영양표시에 대한 설문조사를 실시 하였고, SPSS 18.0 package program을 이용하여 일반적 특성, 영양표시에 대한 인식, 일반적 특성에 따른 영양표시 내용과 영양성분별 중요성 차이 등을 분석하였다. 본 연구의 결과를 요약하면 다음과 같다. 1. 조사 대상자는 전체 268명으로 여자(60.4%)가 남자(39.6%) 보다 많았으며, 연령은 50대 이상(40.3%)이 가장 많았다. 학 력은 고졸(47.8%)과 대졸(42.2%)이 전체의 90.0%로 대부분을 차지하였으며, 외식횟수는 한 달에 3~4회가 54.5%로 가장 많 았다. 2. 한식당 메뉴 영양표시 요구도는 3.99점으로 높았으며, 메뉴 선택 시 영양표시 활용의지(3.89) 또한 높았다. 영양표 시 내용으로는 건강이나 영양관련 정보제공이 4.06점으로 가 장 높았으며, 식재료와 영양소의 설명 3.93점, 1인 분량의 표 시 3.77점이었다. 3. 영양표시를 원하는 영양소로는 나트륨이 4.16점으로 가 장 높았으며, 그 다음으로는 콜레스테롤(4.15), 열량(4.04), 지 방(3.93), 칼슘(3.84), 단백질(3.83), 당질(3.71)의 순이었다. 4. 일반적 특성에 따른 한식당 영양표시 요구도와 활용의 지 차이 분석 결과, 영양표시 요구도는 여성(4.05)이 남성(3.91) 보다 높아 유의적인 차이(p<0.01)가 있었으며, 20대가 4.29점 으로 가장 높았으며, 학력은 대졸(4.15)이 높아 유의적인 차 이가 있었다(p<0.01). 영양표시 활용의지는 여성(3.97)이 남성 (3.77)보다 높았으며(p<0.01), 영양표시에 대한 요구도가 높은 경우에 활용의지 또한 높은 것으로 나타났다. 5. 일반적 특성에 따른 영양표시 내용으로는 1인 분량에 대한 중요성은 여성(3.89)이 남성(3.58)보다 높아 차이가 있었 으며(p<0.01), 중졸(3.13), 고졸(3.70), 대졸(3.90), 대학원졸(4.08) 순으로 학력이 높을수록 차이(p<0.01)를 보였다. 식재료와 영 양소에 대한 설명은 여성이 4.02점으로 남성 3.77점에 비해 유의적 차이가 있었으며(p<0.01), 학력이 높을수록 식재료와 영양소를 중요하게 생각하고 있음을 알 수 있었다(p<0.05). 건강이나 영양정보 제공은 50대 이상이 4.18점으로 높아 유 의적인 차이가 있었다(p<0.05). 6. 한식 메뉴의 영양표시가 식생활에 미치는 영향은 남성 (3.73)보다는 여성(4.01)이 컸으며(p<0.001), 학력이 높을수록 영향이 큰 것으로 나타났다(p<0.01). 본 연구결과, 한식당에서의 영양표시에 대한 소비자들의 요구도가 높고, 건강한 외식을 위한 메뉴 선택 시 활용의지 또한 높은 것으로 나타나, 영양표시가 건강한 식생활 영위를 위한 중요한 교육도구가 될 수 있을 것으로 보인다. 특히 여 성들이 영양표시에 대한 관심이 높은 것을 알 수 있었으며, 일반적 특성에 따라 영양표시 내용이나 영양소에 대한 차이 가 있는 것으로 나타나, 외식업체에서는 운영 메뉴와 주고객 층에 맞는 차별화된 영양표시 방안의 마련이 경쟁력 확보에 도움이 될 것으로 사료된다.

        This study investigated the knowledge, attitude, and behavior of 280 University students towards nutrition labels. The purpose of the study was to examine knowledge, attitudes, and behaviors of university students regarding nutrition labeling, and whether body mass index (BMI) with nutrition labeling was associated with knowledge, attitudes, and behaviors. Descriptive statistics analyzed knowledge, attitudes, and behaviors of university students regarding food labeling. The ANOVA and χ2 analysis was evaluated and assessed for its relationship with BMI. Pearson's correlation coefficient analysis examined relationships between knowledge, attitudes, and behaviors. More than 90 percent of answers relating to 11 nutritional knowledge questions were correct. Only 30% of participants answered correctly regarding questions about plan source oil and cholesterol content. Attitudes and behaviors of nutrition labels were significantly higher among participants who were obese (p<0.001). Knowledge score was positively correlated with general label usage behavior (r=.169, p<0.01), and item buying behavior (r=0.142, p<0.05). Attitude also was positively correlated with behavior (p<0.01). Nutrition labeling education efforts are needed to provide university students with a nutritional education program and information on how to read nutritional labels and apply this information to their lives. University students need to understand their need for numerous nutrients instead of merely focusing on the fat and calories of foods.

        The purpose of this study was to develop measures for establishing and enforcing legal nutrition labeling for Takju based on results from consumer awareness surveys, statistical model development, and evaluation of nutrients. The statistical model developed with consumer survey results showed that consumers would like to know the nutrients they intake from drinking Takju, as their awareness about Takju was low. Specifically, consumers would like to see information regarding alcohol content, calories, carbohydrates, and saccharides on the label. Structural equations from the research model showed that consumers who had some knowledge of Takju also had positive thoughts of the nutrition fact labels for Takju. Evaluation of nutrients in Takju showed that the starch sources and other ingredients used in Takju fermentation did not influence nutrient facts, and nutrient concentrations also varied among the different Takju. In addition, this research suggests methods for consumers to make reasonable selections and to inform them of the nutrition fact labeling for Takju. Benners and pop-up were manufactured to promote voluntary participation of companies and to provide nutrition facts from Takju. Eventually, a measure was suggested to establish and enforce nutrition labeling, using results from consumer and nutrient surveys of Takju.

        The purpose of this study was to compare convenience food purchasing behaviors and food habits. The study, which asked surveyed 131 female college students in Daejeon, in 2011, on how they used nutrition labels. The subjects were divided into two groups, in terms of the way they checked examined nutrition labels: a "Check" group(n=62, 47.3%) and a "No check" group(n=69, 52.7%). Reasons given for not reading nutrition labelings were "a habit of buying" for 72.2%, and "too small or rude" for 19.1%. The "Check" group reported higher interest in nutrition(p<0.001) and hygiene(p<0.01) than the "No check" group. Those who used the labels had higher cereal(p<0.01) and vegetable(p<0.01) consumption and a lower intake of fast foods(p<0.05). But however, most of the subjects(65.6%) chose by taste, at the time they purchased the convenience foods. The subjects considered "expiry date"(n=87, 66.4%) to be more important information on food labels than "nutrient composition"(n=11, 8.4%). The number of products whose nutrition labels were checked by over 50% was five out of 12. In conclusion, our study suggests that proper use of nutrition labeling may improve food choices and enable healthy dietary practices. Further efforts are needed to provide the public with nutrition education programs on how to read nutrition labeling. Modifying nutrition labels to make them easier for the public to understand should also be considered.

        To promote use of nutrition labels, degrees of awareness, use, and satisfaction of nutrition labeling on eating-out menus were investigated by a self-recorded questionnaire from May to July 2010 in 629 participants who visited four bakery chains (n=409) and three ice-cream chains (n=220) located in Daejeon. Of the subjects 53.4% were female, 68.8% aged 20~29 years, and 59.3% visited bakery or ice-cream stores 1~3 times per month. Only 38.2% of participants had knowledge of nutrition-labeling mandates for eating-out menus, and 74.9% had seen labels before in bakery and ice-cream stores. Most subjects understood calorie amount and daily value of sodium very well, but they failed to understand the meaning of daily value. Only 21.2% of the subjects understood nutrition label information completely. Of the participants, 46.7% read nutrition labels in bakery or ice-cream stores when purchasing. Among the subjects who read the labels, 77.2% (36.1% of total subjects) referred to the label information when selecting a menu and 46.9% (21.9% of total subjects) had experienced altering their menu choice based on the information. Exactly 53.3% of subjects answered they did not read nutrition labels since they were not interested or had no time, or because the labels were not noticeable. Satisfaction of the place, timing, and format of nutrition labels at bakery and ice-cream stores fell below average overall. Many subjects wanted trans fat and cholesterol to be added to the labels. In conclusion, degrees of perception, use, and satisfaction of nutrition labels at bakery and ice-cream stores were still low. More effective publicity and consumer education about nutrition labeling will be necessary, and bakery or ice-cream companies should make efforts to improve nutrition labeling such as providing format and place.

        This study examined the understanding and use of information on nutrition labels based on one serving size among female consumers above the age of 20 in Seoul area. According to the survey, 69.9% of respondents were aware of the current system of nutrition labeling based on one serving size, and 51.8% of the respondents expressed their dissatisfaction with the system because the nutrition labels were difficult to understand or appeared unreliable. The nutrition label literacy of the consumers varied with respect to different packaging units. The respondents were likely to be less accurate in calculating the expected caloric intake when only portions of a multi-serving package were used. Initially 69.0% of respondents reported that they had read the nutrition label before purchasing a product but 91.9% of respondents said that they would check the label after learning how to read the label properly. It is very important to make consumers aware that the labels are very reliable sources of nutrition information. A public education campaign on the use of nutrition labels should focus on developing the consumers' ability and skills in using the label information when choosing foods.

        This study had carried out to investigate the usage status of customer, the positive effects and problems, and the most important items of the nutrition labeling at purchasing the food etc. on the current nutrition labeling system in order to establish the customer-centric nutrition labeling system. Survey was carried out by questionnaire method that is targeted on adult female above 20 years old in Seoul and Kyeongnam area from May to June, 2004. For the experience of checking the nutrition label of the processed domestic and imported processed food, 82% and 75.4% of the respondents were replied 'have checked' respectively. For the positive effects due to enforcement of the nutrition labeling system, the respondents agreed highly with 'easy to compare with other products' and 'improve the products quality'. For the problems of the nutrition labeling system, the respondents agreed highly with 'different criteria for each product' and 'incendiary purchasing due to false or exaggerated labeling', and gave the higher scale for the positive effects than the problems relatively. For the necessity of the nutrition labeling system, 96.2% of the respondents were replied 'necessary', and it was indicated a significant difference on age and marital status(p<.01). For the price rising due to enforcement of the nutrition labeling system, 55.2% of respondents agreed, and it was indicated a very significant difference on age and monthly income(p<.001). For the most important nutrition labeling items at purchasing the food, the respondents were replied 'total calorie' on most of the food, and in addition, they checked carefully the lipid, cholesterol, protein, Ca, and Fe.

        The purpose of this study is to establish the one serving size of Korean Processed Food. Defining the one serving size is very important for nutrition labeling and foodservice operation, because the one serving size is used to set up a proper portion by each foodservice operation. The basic data of 200 items were collected through three methods. Searching many cookbooks, exploring the commercial and noncommercial foodservices -6 industrial foodservices, 100 nationwide elementary school foodservice recipes analysis, and 3 hospital foodservice systems as the samples - moreover, experimental cooking and sensory evaluation by trained panels were conducted to assess quantity preference of selected food items. All data were rearranged through food type, that is, main dish, side dish, dessert and health food. One serving sizes of processed foods showed wide variety according to the different menus that include selected food items. Therefore, means and ranges of serving size by three research methods were presented item by item. The results obtained were: 1. The Korean Processed Foods were dried and sugar adding and soused foods, and many of them used the natual processing methods. 2. There were wide varieties in the classification of main dishes, but many of them were cereals, noodles, and sugar products. One serving size of noodles were around 50~100 g, cereals were 20~40 g, which means the one serving size can be differenciated by the food usage. 3. According to the Food classification of side dishes, many of them were as following; natural dried foods, processed fish products, salted or sugar added foods, seasoned foods and sugar products. Moreover the Types of cooking in side dishes were almost culinary vegetables, teas, health foods and condiments, and soused fish products. 4. About desserts, they were almost teas and sugars, and the Types of cooking were teas, health foods and seasonings. 5. We can conclude that almost Korean Processed foods used the drying and soused processing methods for long-time preservation, but it can make the higher content of any special elements, such as sodium or carbohydrates.
