        A new oak mushroom cultivar ‘K815’ was bred from monokaryotic strains of ‘Jadam-2’ and ‘LE191732-118’. The optimal temperature for mycelial growth of ‘K815’ was 25oC, and the temperature for primordia formation and fruiting body development was 15~20oC. The fruiting body morphology is hemispherical and the fruiting form is sporadic. Total cultivation period of the new cultivar, from inoculation to its first harvest, was 133 days, which was 3 days longer than control cultivar ‘Jadam’ (129 days), with 32 days for spawn running, 89 days for browning, 4 days for primordia formation, and 8 days for fruiting body development. In the fruiting body, the thickness and diameter of pileus of the new cultivar were 32.2 mm and 58.3mm, respectively, and the length of stipe was 35.6 mm. Compared to the control cultivar ('Jadam', 'L808'), the pileus of the new cultivar was thicker and smaller and the length of stipe was shorter. The total number of fruiting bodies of ‘K815’ was 58.9, which was higher than the control varieties and total yield of 2 crop cycle of ‘K815’ was 580 g (per 3 kg substrate), which was similar to the control variety.

        In order to provide basic data for preparing management standards and to verify the safety of the Chinese oak mushroom-derived moisturizing medium—which is synthesized and imported in large quantities—the presence of 321 residual pesticides, 7 heavy metals, and 3 radioactive materials was analyzed in the moisturizer samples. Examination of residual pesticides in seven moisturizing medium samples prepared using the Chinese oak mushroom and three domestic sawdust samples used for mushroom culture revealed the presence of cypermethrin and iprodione in three moisturizer samples, but the contents of these pesticides were below the standard limits. Zn was detected in ten samples, Cu was detected in nine samples, and Ni was detected in four samples, but their contents were below the standard limits. Pb, Cd, Cr, and Hg were not detected in any sample. No radioactive materials were detected in the samples. In addition, fruiting bodies of the oak mushroom were observed in each medium. Examination did not reveal the presence of any residual pesticides or harmful compounds. In this study, the use of the moisturizing medium prepared using the Chinese oak mushroom was found to be safe. As residual pesticides, heavy metals, and radioactivity—even in trace amounts—remain concentrated in the human body, continuous verification of the safety of hazardous substances and pollutants during the systematic cultivation and management of these mushrooms is required.

        표고 재배사내 진균류의 발생특성을 분석하기 위해 골목에서 발생한 진균류를 분리·동정하고 재배사내 온·습도 환경을 분석하였다. 표고골목에서 발생한 진균을 분석한 결과 Cladosporium sp., C. cladosporioides, C. anthropophilum, Pleosporales sp., Trichoderma harzianum, Acremonium sp. 6종으로 확인되었다. 재배사내 환경을 조사한 결과는 5월 1일부터 10월 12일 사이에 재배사내 최고·저 온도가 14.0~30.1oC, 평균습도는 82.8%으로 나타났다. 이러한 결과는 표고 재배과정 중 진균류의 발생이 활발한 초여름부터 가을철 사이에 철저한 재배관리가 중요하며, 한번 발병한 진균류는 연중 재배사내 생존이 가능하기 때문에 주기적으로 모니터링하여 사전에 유해 진균류 발생에 유리한 생육환경을 예방해야 한다.

        기후 변화에 따른 표고 재배사내 온도와 습도의 변화추이를 알아보기 위하여 5년 동안 봄, 여름, 가을 기간에 걸쳐 국내 49곳의 표고버섯 재배사에서 온도와 습도를 측정 분석하였다. 톱밥배지 재배사의 5년간 평균 온도와 습도는 24.7℃와 60.5%이었다. 원목 재배사의 5년간 평균 온도는 24.4℃, 평균 습도는 60.0%로 나타났다. 여름철 기간 중 온도 평균은 원목재배사의 경우는 2016년 29.8℃, 2017년 29.1℃, 2018년 33.3℃이었으며 톱밥배지 재배사의 경우는 2016년 26.8℃, 2017년 20.4℃, 2018년 24.2℃이었다. 조사 기간 중 30℃가 넘는 고온으로 측정된 재배사는 봄철에 1곳, 여름철에 5곳이었으며 원목 재배사가 5곳을 차지하였다. 원목재배에서 온도가 20℃를 넘지 않는 재배사는 4곳으로 모두 가을에 조사된 온도였다. 본 연구 조사는 기후변화에 대비해 표고 재배사의 경우 원목 재배사 관리에 우선적으로 대비해야 함을 시사하였다.

        본 연구에서는 원목재배용 표고(Lentinula edodes) 품종에 대한 목질섬유소 분해능을 검정하였다. 5개의 국산품종(천백고, 산조 303호, 풍년고, 백화향, 수향고)을 대상으로 malt extract broth(MEB) 배지에 lignin의 첨가에 따른 RBBR(Remazol Brilliant Blue R) 탈색능을 조사한 결과, 산조 303호와 풍년고가 배양 5일째부터 우수한 분해능을 보였다. 섬유소 분해효소인 MnP와 laccase의 활성은 풍년고가 배양 7일째 MnP 활성이 2,809U/mg, laccase 활성이 2,230U/mg으로 나타났고, 산조 303호가 배양 11일째 MnP 활성이 2,673U/mg, laccase 활성이 2,049U/mg으로 최고 활성을 나타났으며, lignin을 첨가하였을 때 효소의 활성이 증가하였다. 산조 303호, 풍년고와 수향고는 배양 5주 만에 filter paper의 분해정도를 육안으로 확인이 가능할 정도로 분해능이 우수하였다.

        In this study, we investigated the morphological characteristics and antioxidant ability of mushroom cultivar Lentinula edodes ‘Nongjingo’ fruiting bodies after exposure to various light conditions. Color differences between mushrooms treated with mixtures of LED light revealed that mushrooms displayed lighter color shades when compared to the control group (fluorescent light treated mushrooms). Redness increased and yellowness decreased after exposure to all treatments other than the fluorescent control. Measurement of growth characteristics of ‘Nongjingo’ fruiting bodies showed increases after exposure to all mixed LED treatments. In addition, the uniformity of fruiting bodies was higher when using LED light compared to fluorescent light. The measurement of stem diameters did not show a significant difference between the treatments, however, diameters were slightly larger with exposure to white-green LED. Moreover, stem length was longer in the mixed LED treatments when compared to those exposed to fluorescent light. Examination of the ratio of stem diameter to stem length revealed that the diameter of the stem was greater than the length. The antioxidant activity of water extracts made from Nongjingo fruiting bodies grown under mixed LED conditions was compared to those from mushrooms grown under fluorescence light conditions. The highest antioxidant activity was observed from mushrooms treated with white LED; however, no significant difference was found between mushrooms exposed to white-green LED compared to white-blue LED. The treatment showed higher antioxidant ability than vitamin C. Our results confirm that treatment of white LED and white-blue LED affects the growth and antioxidant ability of Nongjingo mushroom fruiting bodies.

        The potential risk of heavy metals and residual pesticides in imported sawdust media inoculated with oak mushroom cultures is a concern for safe mushroom production in Korea. To obtain preliminary data for a sound analysis of this risk, this study was undertaken to analyze the presence of heavy metals and residual pesticides in the oak mushroom media imported from six different regions in China, between 2013 and 2015. Lead, arsenic, chrome, mercury, and cadmium were analyzed; arsenic, chrome, and mercury were not detected. Lead was detected in the imported oak mushroom media from Jinlin, Shandong, Liaoning, and Tianjin. The detection level of lead ranged from 1.7 to 3.2 mg/kg. Cadmium was detected at a level of 0.028 to 0.037 mg/kg in the media from Shandong and Liaoning. No residual pesticides were detected in any of the samples.

        Oak mushroom is one of the most important non-timber forest products at the forest sector in Korea. In recent years, the Korean farmers have suffered from the import increase of saw bed medium from Chinese and the price decrease of the oak mushroom. In order to overcome this phase, it is important to develop good varieties that can compete with Chinese varieties. National Institute of Forest Science is studying to develop excellent varieties through the Golded Seed Project. We report some of the results as part of that. The strains of oak mushroom were made through mono-mono cross method using domestic distribution varieties. Sawdust cultivation was carried out on 100 - day cultivation and 3 - stage mushroom yield using 2 kg hexahedron culture medium. Of these, 60 strains were used for sawdust cultivation, and 3431 strain (23%) was selected when the yield was 20% or more of the weight of the medium. Four strains (3396, 3414, 3419, 3430) were selected when the mushroom yield was 15% to 20% of the weight of the medium. 3404 strain with excellent mushroom shape was selected, though the yield was low (10%). Generally, mushroom yield was the highest in the first stage, and the number of mushrooms in the second stage was decreased rapidly. Also, 10 strains did not produce mushroom in this study. The 3431 strain occurred mushroom production with 87% yields in the first stage and did not occur in the third stage. The 3404 strain with excellent mushroom shape occurred in primary and tertiary. The average weight of mushrooms was 13 g and 54g, respectively. The strains (3431, 3404) will be used for the selection of varieties through cultivation test in the future.

        Spent mushroom substrate (SMS) has generally been used for the manufacture of animal feed and production of bio fuel. Limited research has been conducted in the utilization of SMS as a co-material for composting. Therefore, the main purpose of this study was to evaluate the feasibility of composting vegetable waste mixed with various ratios of SMS (30, 40, and 50%). The results showed that the C/N ratio decreased when both sawdust (from 22.0~28.8 to 17.7~20.4) and SMS (from 18.5~19.5 to 12.7~16.8) were applied for composing, owing to increased contents of nitrogen. A maturity test conducted using mechanical (Solvita) and germination tests revealed that both sawdust (92.0~101.9%) and SMS (87.8~89.2%) satisfied a criteria of maturity standard (70%). A correlation analysis between compost maturity and its chemical properties revealed that the C/N ratio and pH were the most dominant parameters for compost maturity. Overall, SMS could be utilized as a compost material and especially, vegetable waste mixed with SMS could provide sufficient nutrients for crop growth.

        In 2010, a new variety for sawdust cultivation,was produced by monokaryotic-monokaryotic crossing between Sanjo 701ho and FMRI0995. The optimum temperature for Sanjo 708ho mycelial growth was 25oC; mycelial growth on potato dextrose agar was 51.6 mm over 7 days. The fruiting pattern was sporadic, and the optimal temperature range for fruiting was 5~20oC. Regarding fruiting body characteristics, the pileus was 65.8 mm in size, 16.1 mm in thickness, and hemispherical in shape. The stipe was 42.6 mm in and 19.6 mm in thickness. Mproductivity was good during thelow-temperature period from autumn to spring, with an average productivity of 310.7 g/bag.

        Five empirical farmhouses were selected to reduce the high temperature damage in oak mushroom cultivation using bed-logs. The cultivation facilities were categorized as follows: those having two blackout curtains or one blackout curtain and outdoor oak mushroom cultivation. The inequality of the indoor condition, oak mushroom hyphae rampant ratio, and fruit body production in each test condition was evaluated. 3oC was lower in indoor temperature of cultivation facility having two blackout curtains than one blackout curtain. Specifically, the indoor air humidity average of cultivation facilities having one or two blackout curtains was 10% lower than that of outdoor oak mushroom cultivation. This condition is not ideal for oak mushroom cultivation as continuous indoor humidity control is essential for producing good fruit bodies. The Inoculated bed-log surface and oak mushroom hyphae rampant ratio of bed-logs cultivated with two blackout curtains was superior to other tested conditions. The mushroom production ratio observed in facilities with two blackout curtains was 117-204% higher than those cultivated in facilities with only one blackout curtain. Furthermore, the mushroom production ratio increased in based on these findings, we recommended five cultivation facility models to reduce high temperature damage in oak mushroom cultivation using bed-logs.

        표고버섯 재배 임가들이 생산량과 출하 시기를 결정하는 데 가격은 결정적인 역할을 하지만, 표고버 섯 가격 전망에 대한 연구는 미진한 상황이다. 이 연구의 목적은 표고버섯의 중품, 상품, 특품의 월별 가격자료를 이용하여 시계열 분석 모형을 구축하고, 이들의 단기 가격 예측력을 비교하는 것이다. 이를 위해, 2002∼2015년 동안의 등급별 가락시장 표고버섯 가격자료를 이용하여 Seasonal Exponential Smoothing 모델, Seasonal ARIMA with intercept 모델, Seasonal ARIMA without intercept 모델, Seasonal Dummy 모델을 포함하는 네가지 형태의 시계열 분석 모형을 구축하고 단기 가격을 예측하였 다. 또 통계적 검증방법을 이용하여 이들 모델의 가격 예측력을 비교하였다. 분석 결과, Seasonal ARIMA without intercept 모형의 가격 예측 능력이 가장 우수한 것으로 나타났다. 향후 다른 단기 소 득 임산물의 가격 예측에도 이들 모델을 적용함으로써 임가들의 생산 출하에 대한 의사결정에 유용한 정보를 제공할 수 있을 것이다.

        The purpose of this study was to bake sweet rice muffins with oak mushroom (Lentinus edodes) powder. The process included substituting sweet rice flour for cake flour and adding oak mushroom powder. This study determined the optimal mixing conditions of oak mushroom muffins by adjusting the amounts of oak mushroom powder, whole eggs, and soybean oil. The mixing conditions for the oak mushroom muffins included 3 categories: oak mushroom powder (X1), whole eggs (X2), and soybean oil (X3) by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). Oak mushroom muffin formulation was optimized using rheology. Yellowness (p〈0.001) and redness (p〈0.05) displayed a linear model pattern, whereas lightness (p〈0.05) was represented by a quadratic model. Among the sensory properties, variables that appeared to show significant values such as appearance (p〈0.5), texture (p〈0.5), and overall quality (p〈0.5) were used to identify optimums. The result of mechanical properties showed significant values in gumminess (p〈0.5) and chewiness (p〈0.5). The numerical and graphical methods used in this study determined that the optimum formulation for oak mushroom powder sweet rice muffins was 8.75 g of oak mushroom powder, 235.95 g of whole eggs, and 19.93 g of soybean oil.

        As a result of analysis of Jangaji used to jangheung oak-mushroom, water content appeared to young oakmushroom 83.13%, completely mature oak-mushroom 66.82%. As the harvest times are delay, water content decreased. As a oak-mushroom was mature, crude protein content increased. But it was decreased after completely maturing. The crude fat content in the pileus part 10-20 times were higher than a stalk parts. As a oak-mushroom grew, content of crude fiber increased in both a pileus and a stalk. The reducing sugar content in the pileus part 10-20 times were higher than stalk parts. After it was 2~4 hours preserve with salt, salinity appeared to proper density at 2.69~2.52%. The most suitable water content appeared after 4 hours drying in 40℃ in order to improve a taste and incense. It was longer preserve with salt, brightness was became lower in both jangaji and spices. When 1.5 month of acceleration experiment compared with room temperature three months, microbe inspection was stationary. Therefore, We fixed expiry date at 12 months considering stability of a product.

        The change on quality was measured to development functional steak sauce using superior oak-mushrooms with unique scent and functionality. Measure for Chromaticity according to method of addition indicated that L value of Experimental treatmentⅠ(oak-mushroom powder 1%, chopping 3%) was lower than Control and Experimental treatmentⅡ(Concentrated liquid 0.5%, chopping 3%). There was no significant difference between Control and two Experimental treatments in the result of pH measure. The total acidity showed that there was no significant difference between Experimental treatmentⅠ(1.544%) and Experimental treatmentⅡ (1.538%), but Experimental treatmentⅠand Ⅱ were lower than Control. The quantitative analysis of Chlorine showed that there was no significant difference among Experimental treatmentⅠ(4.19W/V%), Experimental treatmentⅡ(4.32W/V%) and Control(4.23W/V%). The viscosity on Experimental treatmentⅠand Ⅱ were more increased than Control. Microorganism was not discovered in the result of microorganism experiment of oakmushroom sauce. Experimental treatmentⅠwas higher preference than Experimental treatment Ⅱ.

        표고버섯의 생육과 품질은 환경요인에 직접적인 영향을 받기 때문에, 시설재배에서는 생육과 품질을 향상시키기 위해서 적절한 환경조절이 필요하다. 본 연구에서는 시설재배 하에서 야간 기온(무처리, 5~11℃, 12~18℃), 주간 상대습도(무처리, 6시간 및 12시간 가습), 풍속(무처리, 풍속 6시간 및 12시간 유지)에 대하여 버섯의 생체중, 건물중, 함수율, 갓의 직경, 두께, 착색도, 균병의 직경, 길이를 측정하였다. 야간 온도가 낮을수록 품질이 향상되었고, 생체중을 고려할 경우에 최저온도는 최저 생육온도 3℃이상 8℃ 이하가 적절하였다. 주간에 상대습도 (70~80%)를 계속 유지시키면 생체중은 증가하지만, 고품질을 얻기 위해서는 50%정도가 적절하였다. 6시간 이상의 평균 풍속(1~2 m·s-1) 처리구에서 생육과 품질이 양호하였고, 12시간 지속될 경우, 증발에 의하여 생체중은 감소하였으나, L값이 높은 것으로 나타났다. 표고버섯의 수량과 품질을 동시에 향상시키는 것은 쉽지 않지만, 수량과 품질에 관여하는 환경요인과의 관계를 분석함으로서 최적의 방법을 모색할 수 있을 것으로 판단된다.

        표고버섯(Lentinus edodes(Berk) Sing)의 품질은 환경조건에 매우 민감하고, 특히 생산기간중의 강우에 의한 수분의 영향이 큰 것으로 알려져 있다. 대부분의 경우, 표고버섯이 강우에 의하여 젖지 않도록 하기 위하여, 강우차단용 플라스틱 필름을 사용하여 측창 환기구 이외에는 모두 밀폐시킨 재배시설을 사용하고 있다. 그러나 이와 같이 천창이 없는 재배시설의 실내온도와 습도는 불량한 환기로 인하여 상승하게 되고, 결국 생산성 및 품질을 떨어뜨리게 된다. 본 연구에서는 모델을 이용하여 개선된 표고재배시설의 천창 면적과 차광율에 따른 환기율 및 실내온도 변화를 분석하였다. 차광율이 50%에서 90%로 증가할수록 온도는 약 2.5℃ 이상의 차이를 나타냈으며 50%의 낮은 차광율에서 풍속의 영향이 크게 나타났다. 환기율은 풍속 1~2m.s-1 이상에서는 차광율에 관계없이 크게 증가하였다. 실외풍속이 0m.s-1에서 2m.s-1로 증가함에 따라 실내온도는 약 2℃이상 하강하였다. 특히, 천창개도가 커질수록 온도가 하강하였지만 개도 50%이상에서는 큰 차이가 없었다. 차광율이 낮을수록 개도 증가가 온도하강에 미치는 영향이 뚜렸하였다. 풍속 및 차광율에 무관하게 천창면적과 측창면적이 거의 동일할 때, 높은 환기효율 및 온도하강 특성을 나타내었다.

        표고버섯은 담자균류 송이과에 속하는 식용 버섯으로, 영양 성분 및 약리적 효능이 높기 때문에 동양인에게 중요한 버섯이며, 점차로 생산량과 소비량이 증가하고 있다. 본 연구에서는, 고품질 표고버섯 생산시기의 기상자료를 분석하여 표고버섯의 품질에 영향을 주는 생육 환경요인을 분석하였다. 이를 위하여 1997~1998년 국내 고품질 표고버섯이 생산되는 지역중 3지역(부여, 원주, 장흥)을 선정하였다. 표고버섯의 다량 발생시기 20일 기준으로 기상분석시기 15일을 선정하였다. 환경요인으로는 발생시기의 일 온도차, 일습도차, 일평균온도, 일 평균습도 및 풍속을 분석하였다. 발생기간중의 일 평균온도는 버섯 발생 온도 하한치인 7℃ 이하에서 적정온도 20℃까지의 변화를 보였고, 일 온도차는 주간에는 7~20℃, 야간에 0~-2℃의 범위를 나타냈다. 일평균습도 50~70%으로 강우에 따라서 변화 폭이 컸으며, 일습도차는 40~60%의 차를 나타냈다. 풍속은 1~4m.s-1이었다 .따라서 화고, 동고의 생육환경은 일반적인 표고버섯의 적정 생육 조건과는 큰 차이를 보였다. 생육기간동안의 일 온도차, 일습도차, 저 습도, 풍속 등의 환경 조건은 고품질 표고버섯 발생의 요인의 하나라고 추정된다. 이 연구결과는 버섯의 시설재배시 고품질 표고버섯 생산을 위한 환경조절기술로 적용될 수 있을 것으로 판단된다.
