        This study undertook to evaluate the quality characteristics of rice, to select a variety suitable for porridge. Seven varieties of rice were studied: Dabo, Daebo, Samkwang, Sindongjin, Sukwang, Jinsumi and Haiami were investigated for proximate contents and physicochemical characteristics. The moisture and crude protein contents of the rice cultivars were in the range 11.26-12.66% and 5.34-6.47%, respectively. The amylose content was the highest in the Samkwang (20.83%), and lowest in Haiami (18.32%). The water binding capacity and solubility of Samkwang and Jinsumi cultivars were greater than those of the other samples. Hardness of rice and viscosity of porridge was the least in Samkwang and Sukwang. The pH of porridge in Samkwang and Jinsumi (7.04) was higher than the other varieties (6.80-7.03). The results of this study indicate that Samkwang and Jinsumi are suitable varieties for porridge. We expect this data will be useful in the manufacturing of porridge.

        This study was carried out to compare the cooked and antioxidant characteristics with of cooked mixed grain rice with an addition rate (0, 5, 10, 15 and 20%) of proso millet and various cooking methods. Mixed grain rice with added proso millet was cooked by general and high pressure cooking methods with and without fermented alcohol. All pasting characteristics, except for breakdown viscosity, decreased with increasing the amounts of proso millet. Water binding capacity and swelling power significantly decreased when increasing the amounts of proso millet, however the water solubility index significantly increased. The palatability characteristics of rice with added proso millet showed similar results to rice without proso millet. Total polyphenol contents of rice with 20% proso millet and fermented alcohol added, cooked by general and high pressure cooking methods, were 184.33±2.69 and 179.80±5.22 μg GAE/g, respectively. Total flavonoid contents increased as amounts of proso millet increased. DPPH radical scavenging activities with and without proso millet added were 4.20~7.50 and 2.97~5.19 mg TE/100 g, respectively. ABTS radical scavenging activities with and without proso millet added were 14.36~27.92 and 14.07~15.83 mg TE/100 g, respectively. In this study, cooked and antioxidant characteristics of cooked mixed grain rice with added proso millet were expected to be used as basic data for manufactured processed products.

The antioxidant characteristics assessed the total polyphenol, flavonoid contents, DPPH and ABTS radical scavenging activities. The mixing ratio of commercially available mixed grain products consisted of 5~25 kinds of grains, with maximum products containing 15-grain products. The water binding capacity, water solubility, and swelling power in commercially available mixed grain products were 99.83~122.83%, 6.91~39.26% and 7.76~86.92%, respectively. The peak, trough, breakdown, final and setback viscosity were 31.53±20.17 RVU, 25.24±13.22 RVU, 6.29±7.43 RVU, 50.27±25.84 RVU and 18.74±8.68 RVU, respectively. Total polyphenol and flavonoid contents were 817.14~2,524.29 μg GAE/g and 06.36~1,099.09 μg CE/g, respectively. The DPPH and ABTS radical scavenging activities were 31.91~151.70 mg TE/100 g and 28.09~119.92 mg TE/100 g, respectively. Products with high phenol content and radical scavenging activity were found to contain greater proportion of brown rice, colored rice, barley and soybean.

        국내 시판 중인 선식의 유통 안전성 확보를 위한 기초기반연구로 대기압 플라즈마 처리한 선식의 품질 특성 평가를 진행하였다. 본 연구에서 이용한 플라즈마는 컨테이너형 유전격벽 플라즈마로 방전 가스는 공기를 활용하여 0, 5, 10 및 20분 처리하였고 미생물 감균효과, 색도, pH관능평가를 진행하였다. 일반 호기성 미생물 분석 결과 20분 처리 시 약 1.70 log CFU/g 감소하였으며 B. cereus, B. subtilis 및 E. coli O157:H7을 이용한 접종 시험 결과 각각 2.20, 2.22 및 2.50 log CFU/g 감소하였다. 색도 측정결과 플라즈마 처리에 의해 명도 값은 증가하였으나 적색도 및 황색도는 감소하였다. 플라즈마 처리에 의한 선식의 pH측정 결과 처리시간에 따라 감소하는 경향을 보였다. 하지만 플라즈마 처리에 의해 단백질 지질산화가 일어나 관능 품질이 저하되는 경향을 보였다. 따라서 공기로 방전된 대기압 플라즈마 기술은 선식의 품질안전성을 개선할 수 있으나, 관능적 품질 특성 개선을 위한 후속연구가 필요하다고 판단된다.

        This study aimed to evaluate the quality characteristics of wheat-Makgeolli (WM), a traditional Korean cereal alcoholic drink, using three varieties of wheat, namely Jokyoung (JK), Baegjoong (BJ) and Keumkang (KK). Samples of WM brewed from 100%, 85% and 70% milling rates of the three Korean wheat cultivars were analyzed for alcohol, pH, coloring degree, total acids, soluble solid, free sugars, and organic acids. As the milling rates in wheat decreased, total sugar content in WM increased while the pH of all samples decreased. The WM exhibited 0.95~1.27% in acidity, 10.2~12.5 °Brix in total sugar, and 14~16% in alcohol content. The most organic acids in WM was lactic acid, ranging in all the samples from 85.3~650.3 mg%. The results showed that BJ under a 70% milling rate had the highest reducing sugar contents and 15.97% in alcohol content. The carbohydrate content increased with the milling rate of wheat. Resulting in a positive correlation between carbohydrate content of wheat and total acids, reducing sugars (p<0.001), and alcohol content (p<0.05) in WM. Total sugar content is positively correlated with alcohol and reducing sugar content (p<0.001). Considering the yield, the milling rates will be adjusted to raw material prices.

        This study evaluated the hydration, gelatinization, and saccharification properties of rice processing for beverage development. The properties of rice were studied on 10 rice cultivars (Samkwang, Ilpum, Seolgaeng, Anda, Dasan-1, Goami-4, Danmi, American rice, Chinese rice, and Thai rice) and employing four kinds of pre-treatment methods (dry grain, wet grain, dry flour, and wet flour). The results showed that moisture content of rice was between 11.88~15.26%. Increase in soaking time along with highest water absorption was noted in American rice cultivar (46.81%). The water binding capacity of Thai rice was higher when compared to that of other rice flours. In addition, solubility and swelling power of rice were 4.52~26.65% and 0.19~2.05%, respectively. The amylose content of Goami-4 was higher in rice processing. Using a rapid visco analyzer (RVA), the initial pasting temperature of Danmi cultivar was found to be the highest; the peak viscosities of Anda cultivar and Dasan-1 cultivar, and Chinese rice were higher than of those of other rice flours. After saccharification, the pH, soluble solids content, and reducing sugar content of rice processed through different pre-treatment methods were in the range of 6.22~7.08, 4.67~16.07 °Brix, and 0.35~11.67% (w/w), respectively. In terms of color values, the L-value of dry grain, a-value of wet (grain, flour), and b-value of dry sample (grain, flour) were found to be the highest. Assessment of various factors and cultivars characteristics of the raw grains are of importance in the development of rice beverage.

        This study was conducted to evaluate the quality of barley (Huinchalssalbori) and domestic wheats (Keumkangmil, Baegjoongmil, Jogyeongmil). The pH and total acidity of mixed Makgeolli were 4.04~4.12% and 0.94~1.06%, respectively. The total acidity, sugar and alcohol contents of Makgeolli, but not pH, varied significantly by wheat cultivar (p<0.05). In terms of color values, the L-value of Baegjoongmil, a-value and b-value of Keumkangmil were highest. The reducing sugar contents was approximately 5.65~7.85 mg/mL, and those of Jogyeongmil and imported wheat were approximately 5.70 mg/mL lower. The yeast cell numbers did not differ significantly, with the exception of in the rice Makgeolli (p<0.05). Among the organic acids (citric, malic, pyruvic and lactic acids) in Makgeolli, citric acid was present at the highest concentration. Regarding the sensory characteristics of Makgeolli mixed with barley and wheat, taste and overall acceptability were highest in Baegjoongmil, and appearance and flavor were highest in Keumkangmil. The rice Makgeolli showed the lowest sensory values, with the exception of appearance. The results of this study suggest that mixing Makgeolli with barley and wheat is an expected to replace the wheat materials in the domestic wheat to be imported.

        This study investigated the changes in chemical components, antioxidant compounds, and activity before (BG) and after germinated (AG) brown rice in order to promote the availability of these beneficial factors. The GABA content of BG and AG brown rice were 0.07~6.61 and 11.13~49.72 mg/100 g, respectively. The α-amylase activity of AG brown rice was 1.77~70.25 unit/g fold higher than it was in BG brown rice. Total polyphenol and flavonoid contents, which are known to be related to antioxidation, were higher in BG brown rice than in AG brown rice. The total polyphenol contents of BG and AG brown rice were 10.52~36.38 and 11.38~26.33 mg/100 g, and the total flavonoid contents were 3.55~13.39 and 3.52~9.78 mg/100 g, respectively. Also, DPPH radical scavenging activity was 57.64~251.34 and 50.49~213.35 mg TE/100 g, respectively. ABTS radical scavenging activity and total tannin content showed a similar trend to DPPH radical scavenging activity. We expect that this data will be useful in the manufacturing of food products.

        The objective of this study was to determine the physico-chemical properties in the high-amylose rice varieties. The rice flours were analyzed by RVA, DSC, HPAEC, resistant starch kit, SEM, spectrophotometer, etc. According to the RVA measurement of rice flours, the pasting temperature of Dodamssal was higher than those of the others. The proportion of amylopectin short chains (DP 6-12) of the Dodamssal was significantly lower than that of the others. The contents of amylose and resistant starch in the high-amylose rice flours ranged from 19.03% to 38.71% and from 0.6% to 12.39%, respectively. In SEM images, starch granules within Ilmibyeo, Mimyeon, Saegoami rice flours displayed polyhedrons different from those (relatively spherical morphology) of Dodamssal rice flour. According to the DSC results of rice flours, there were significant differences in the onset, peak temperatures of the endothermic peak. Gelatinization enthalpy was 4.52-6.3 J/g, with the lowest change in Dodamssal rice flour.

        본 연구는 벼 품종에 따른 미음 가공특성을 구명하기 위하여 국립식량과학원에서 육성한 9개 벼 품종의 호화점도 특성과 미음의 색도, pH, 점도 및 퍼짐성을 측정하고, 초미세구조를 관찰하였다. 신속점도계를 이용한 호화 점도(페이스팅) 분석에서, 치반점도는 한아름4호, 화선찰이 각각 -45.84 및 -27.50 RVU, 최종점도는 화선찰, 한아름4호가 각각 109.00, 213.42 RVU로 미음죽의 노화가 다른 품종들에 비해 느릴 것으로 판단된다. 쌀 낟알과 미음의 미세구조를 주사현미경(SEM)으로 관찰하였는데, 쌀알은 다각형의 전분립으로 구성된 구 형태의 전분체와 이러한 전분체로 구성된 전분세포로 구성되어 있었다. 도담쌀은 구 모양의 전분체가 관찰되었고 다른 품종들에 비해 빈 공간이 더 많았으며, 한아름4호는 일반 멥쌀의 형태와 같은 다각형의 전분립을 확인하였고, 화선찰벼는 전분체를 구성하는 전분립들의 부서짐이 많은 것을 관찰하였다. 그리고 이 품종들로 만든 미음죽 호화양상은 품종별로 달랐는데 이는 주로 아밀로오스 함량 차이에 기인하는 것으로 판단되나, 같은 고아밀로오스 품종이라 하더라도 도담쌀에 비해 고아미4호는 잘 풀어지고 호화가 잘 되는 것으로 나타나는 바(data not shown), 이에 대한 추가적인 연구가 필요하다 하겠다. 품종별 미음 제조 후, 관능검사에서 통일형(초다수성) 벼품종과 자포니카 벼 품종들의 차이가 뚜렷하게 나타나지 않아 초다수성 벼 품종으로 자포니카 벼 품종을 대체할 수 있을 것으로 판단하였다(data not shown). 또한 아밀로오스 함량 차이에 따른 벼 품종들 간의 점도 차이가 확연하게 나타났는데 아밀로오스가 없는 찰벼 품종은 미음죽의 점도를 낮추고, 고아밀로오스 품종들은 미음죽의 점도를 높였다. 통일형(초다수성 벼)을 포함한 일반메벼 품종들의 점도는 찹쌀과 고아밀로오스 품종들로 만든 미음의 중간정도를 보였으며 품종간의 유의한 차이는 없었다. 요컨대, 통일형 품종은 일반쌀 품종에 비해 밥용으로 식미가 나쁜 것으로 알려져 있으나, 미음에 대한 가공적성 평가 결과, 통일형쌀 품종과 일반쌀 품종 간에 품질 차이가 없었다. 쌀미음의 점도와 퍼짐성은 쌀미음의 품질을 결정하는 중요한 요소이며 9개 품종(통일형 4개 품종, 일반형 5개)의 쌀미음 가공적성을 평가한 결과, 고아밀로오스(31.8%-42.8%) 쌀 품종들은 점도가 높아(낮은 퍼짐성) 걸쭉하였고, 저아밀로오스(5.0%)인 찹쌀 품종은 낮은 점도(높은 퍼짐성)로 유동적이었다. 중간정도의 특성을 가진 멥쌀(18.2%-19.9%) 품종들이 쌀미음에 적합한 것으로 나타났다. 멥쌀 품종들 중에서 생태형(통일형/일반형)에 따른 쌀미음의 점도와 퍼짐성에서 차이가 없었다.

        This study evaluated the quality characteristics, polyphenolic compounds, and radical scavenging activity of cooked-rice added to commercially available mixed grains. L-value of cooked-rice with various mixed grains decreased compared to that of cooked-white rice; however, a- and b-values increased. Hardness and elasticity of cooked-rice added to various mixed grains were significantly lower in the pressure cooker compared to the electric cooker. There was no significant difference in adhesiveness and stickiness between rice from the electric cooker and pressure cooker. Total polyphenol and flavonoid contents of cooked-rice added to various mixed grains were significantly increased. The average total polyphenol content of cooked-rice added to various mixed grains cooked in an electric cooker and pressure cooker were 16.50 ± 3.86 and 15.88 ± 3.52 mg gallic acid equivalent /100 g, and flavonoid contents were 1.58 ± 0.00 and 1.55 ± 0.02 mg catechin equivalents/100 g, respectively. The average of 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity was 9.27 ± 2.62 and 8.72 ± 2.41 mg trolox equivalent (TE)/100 g, and 2,2’-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activity was 22.89 ± 4.60 and 23.07 ± 4.49 mg TE/100 g for cooked-rice added to various mixed grains cooked in an electric cooker and pressure cooker, respectively. Phenol content and radical scavenging activity of cooked rice was in proportion to the amount of added grains, such as brown rice, colored rice, barley, soybean, and sorghum.

        Germinated brown rice (GBR) has received considerable attention over the last decade as a means of enhancing the nutritional value and health-promoting functions of rice. The effect of germination on the physicochemical and textural properties of brown rice (BR) was investigated in different rice varieties (Samkwang, Misomi, Chindeul, and Hyeonpum). Cooking properties, such as water absorption, expanded volume, and soluble solids were significantly increased by germination in all rice varieties. Textural properties (hardness, toughness, adhesiveness, and stickiness) of cooked samples were determined using a texture analyzer. Hardness and toughness were decreased by germination, whereas stickiness and adhesiveness increased significantly. These results revealed that germination leads to improvements in the cooking and eating properties of BR. In Rapid Visco Analyzer (RVA), significant reductions were observed for peak viscosity, break down, set back, and final viscosity after germination. Although the amylose content of Misomi was slightly decreased by germination, that of other varieties increased significantly. Germination induced no noticeable change in the average chain length of amylopectin in Misomi, Chindeul and Hyeonpum, but led to a significant increase in Samkwang.

        This study was carried out to compare the cooking and antioxidant characteristics of rice containing varying amounts of glutinous rice and cooked by two methods. Rice containing glutinous rice was cooked by general and high-pressure cooking methods with and without fermented alcohol. Pasting characteristics of cooked rice were decreased with increasing amounts of glutinous rice. The water binding capacity and swelling power were significantly decreased with increasing amounts of glutinous rice; however, water solubility indices were significantly increased. Palatability characteristics of cooked rice containing glutinous rice were similar to those of cooked rice without glutinous rice. Total polyphenol contents of cooked rice containing glutinous rice and fermented alcohol were quite different, but this difference was not significant. Total flavonoid contents were increased with increasing amounts of glutinous rice. Total flavonoid content by general cooking method for rice containing 20% glutinous rice and fermented alcohol was 23.20 ± 0.61 μg CE/g. DPPH radical-scavenging activities for samples with and without glutinous rice were 2.97–5.19 and 3.19–5.45 mg TE/100 g, respectively. ABTS radical-scavenging activity by high-pressure cooking method for rice containing 20% glutinous rice and fermented alcohol was 19.48 ± 0.63 mg TE/100 g. In this study, cooking and antioxidant characteristics of cooked rice containing glutinous rice generated data useful for manufacturing processed products.

        The objective of this study was to evaluate the mechanical quality of cultivars that could potentially be used to processed cooked rice. Proximate composition, amylose content, cooking quality, and the Toyo value, were higher in Jungsaenggold than in the other cultivars. The results showed that the crude protein contents of the rice cultivars were between 4.60 and 6.59%. The amylose content was the highest in the Haedam cultivar (21.36%), but was the lowest in the Jungsaenggold cultivar (17.11%). Cooking quality was the highest in the Haiami and Jungsaenggold cultivar. Texture analyzer test showed that Ilpum had the lowest hardness and highest stickiness. Significant differences in the palatability characteristics (Toyo results for glossiness quality) of the rice flour were recorded using a Toyo Meter Analyzer. Ilpum, Samkwang, Haiami and Jungsaenggold had low amylose contents and the highest Toyo values. Thus, the results of this study suggested that Jungsaenggold can be effectively used to produce processed cooked rice.

        The purpose of this study was to evaluate the effects of barley cultivars (Saessalbori, Saechalssalbori and Huinchalssalbori) and different milling recovery (95%, 85% and 75%) on quality characteristics of barley Makgeolli. The content of moisture, ash, crude protein, and crude fat in barley seeds were reduced with decreasing milling recovery. The qualities of barley Makgeolli were also significantly affected by the milling recovery. Decreasing milling recovery of all cultivars resulted to increase in total sugar content and reducing sugar content but decrease in pH while alcohol content and total acidity were not significantly affected. Moreover, the lightness and yellowness of barley Makgeolli increased by milling while its redness decreased. The sensory evaluation showed that the consumer preference for barley Makgeolli increased at the lowest milling recovery (75%). The results of this study suggest that the milling recovery and cultivar of barley were important factors to improve the taste and color of barley Makgeolli.

        Consumption of oat-based food is rapidly increasing due to consumer preference for functional foods. Until now, breeding is focused on the development of naked oat for food in Korea. Hulled oats recognized as forage have strong merits for yield and stability in cultivation except milling properties. Lately, advanced milling technology provides an opportunity to use hulled oats for food. Therefore, the processing characteristics of hulled oats are of great importance for food use. This study examined the physicochemical properties and dietary fiber of 9 Korean oat cultivars (4 hulled oats as compared with 5 naked oat cultivars). Findings showed that the color values (i.e. L and W) of hulled oat cultivars in seed and flours are lighter than the naked oats. The protein and ash contents are higher in hulled oats as compared with naked oats. The unsaturated fatty acid (USFA), mainly C18:1, C18:2 were 80~83%. USFA of ‘Daeyang’ (DY, naked) and ‘Jopung’ (JP, hulled) were 82.0 and 81.9% respectively. Total Dietary fiber and Total β-Glucan contents ranged from 13.2 to 20.6% and from 3.4 to 4.1% in oat flours. The ‘DY’ (4.10%, naked), ‘JP’(4.09%, hulled) and Highspeed (4.07%, hulled) showed high levels of β-Glucan contents. Findings of the study will provide useful information in extending the use of hulled oats for food.

        유색 수수인 황금찰수수를 도정할 때 grain과 함께 발생 하는 도정부산물인 hull과 bran의 4가지 용매 추출물의 총 폴리페놀 함량, 항산화 활성, 천연색소 함량과 RAW 264.7 세포주를 이용하여 항염증 활성을 검정하였으며 결과를 요 약하면 아래와 같다. 1. 도정부산물인 hull의 100% 메탄올과 70% 에탄올 추 출물에서 총 폴리페놀 함량이 29.4±0.4와 29.7±0.2 mg GAE/100 g으로 가장 많았고, ABTS 라디컬 소거능(IC50) 이 6.8±0.4, 6.3±0.1 μg/mL로 가장 높은 항산화 활성 을 나타내었다. 2. 총 천연색소 함량에서도 수수 hull의 0.5% 염산 함유 100% 메탄올 추출물에서 322.6±14.5 mg/100g으로 가 장 많은 색소 함량을 나타내었고 hull, bran, grain 모 두의 경우에서 0.5% 염산을 함유한 100% 메탄올을 용매로 추출한 경우에서 가장 많아 수수를 이용하여 천연색소를 추출할 경우 수수 부산물인 hull을 산을 함 유한 메탄올로 추출하였을 때 가장 많은 색소 추출물 을 얻을 수 있었다. 3. 수수 도정부산물과 grain 추출물을 LPS로 NO 생성을 유도한 RAW 264.7 세포에 처리하였을 때, 세포 독성 이 없는 100 ug/mL 농도 이하에서의 NO 생성 억제량 은 hull, bran, grain 추출물의 순으로 나타났고 hull 추 출물의 경우에 농도에 따라 가장 큰 NO 생성 억제를 보였으며 천연색소 화합물 중에서는 apigeninidin의 NO 생성 억제 활성을 확인하였다. 4. 위 결과를 종합해 볼 때, 수수 도정부산물 중 hull은 grain 에 비해 총 폴리페놀 화합물과 천연색소 함량이 높고 항산화 활성과 RAW 264.7 대식세포에서의 NO 생성 량 억제 활성이 우수하여 앞으로 수수 부산물이 항산 화 및 항염증 소재로 가능성이 있음을 확인하였다.

        거대쌀눈의 특성과 검정쌀 그리고 찹쌀의 특성을 보유한 눈큰흑찰의 침종과 발아 그리고 기질로 글루탐산을 처리하 였을 경우의 가바를 포함한 주요 성분의 분석 결과는 다음 과 같다. 1. 싹 발아 길이를 기준으로 눈큰흑찰의 가바 함량은 싹 길이가 5~10 mm인 stage-3에 93.9 mg/100 g으로 최 고를 보였고, 대량 제조 조건에서는 최고 126.9 mg의 가바를 함유하고 있음을 확인하였다. 2. 침종에 의한 성분 분석에서는 72시간 침종에서 폴리 페놀, 플라보노이드, 아미노산 그리고 가바 함량이 가 장 많이 축적됨을 확인하였다. 3. 글루탐산 탈탄산효소의 작용에 의한 가바 함량 증가는 현미와 쌀겨 모두에서 급격한 증가가 관찰되었고, 눈 큰흑찰 현미와 쌀겨의 경우 가바 함량이 각각 354.6 mg/100 g과 726.4 mg으로 현미와 쌀겨에 비해 각각 14배와 3배 함량이 증가하였다. 따라서 본 연구에서 눈큰흑찰의 발아와 침종에 따른 품질 특성을 분석한 결과, 뇌의 대사전달 물질의 조정 작용과 고 혈압 그리고 스트레스 조정 기능이 있는 가바의 함량이 침 종과 발아에 의해 일반 쌀에 비해 급격히 증가함을 확인하 였다. 특히나 글루탐산탈탄산 효소의 작용에 의한 눈큰흑찰 의 현미와 쌀겨의 가바 생성은 현재까지 보고된 그 어떤 쌀 품종에서 분석된 가바 함량보다도 가장 우수함을 확인할 수 있어 향후 기능성 발아현미 가공을 위한 원료로 활용이 가 능하며, 침종 조건은 가바 함량이 증진된 밥의 제조에 활용 이 가능하고, 일본에서 시판되는 가바 건강식품의 용량과 맞먹는 함량을 지닌 눈큰흑찰을 이용한 가바쌀 생산과 가바 의 효능에 의한 혈압강하, 체중조절, 알코올 관련 질환 등에 효능이 있는 건강기능성 식품 원료로 활용이 가능할 것으로 사료된다.

        새로 개발된 유색미 품종인 중모1020의 왕겨를 이용한 색소의 조성과 함량을 분석하고 생리활성을 검정한 결과, 중모1020의 왕겨로부터 최초로 페튜니딘 색소를 다량함유 하고 있음을 Mass와 UPLC등의 기기분석을 통해 동정하였 다. 중모1020의 색소 조성 중 C-3-G 함량은 29.6%인데 비해 Pt-3-G의 함량이 68.3%를 차지하여 C-3-G 함량이 82.3% 인 기존의 벼 색소의 조성과는 완전히 다름을 보였다. 추출 용매 조건에 따른 분석 결과, 조추출물 수율은 100% 메탄 올에 1.0% HCl을 이용하였을 경우 수율이 11.4%로서 가장 높음을 보였고, 다음이 80% 메탄올에 1.0% HCl용매로 추 출한 경우였다. 안토시아닌 색소 추출량 역시 1.0% HCl을 함유한 100% 메탄올과 80% 메탄올에서 각각 275.0±4.1, 258.0±1.8 mg/100 g으로 가장 많았다. 항산화 활성 비교에 서는 전체 안토시아닌 색소함량이 많고 폴리페놀 추출율이 높은 1.0% HCl을 함유한 80% 메탄올 용매 추출물에서 가 장 항산화 활성이 높음을 보였다.
