        As an attempt to develop new functional health beverage by using medicinal herb, green ginger(Zingiber officinale Roscoe), we investigated the effect of Zingiber officinale on blood pressure and regional cerebral blood flow (rCBF) of rats with Zingiber officinale extracts. Zingiber officinale extract increase rCBF significantly. The drink produced consisted of Zingiber officinale extract 1.825%, maltitol syrup 17.0%, citric aicd 0.06%, ascorbic acid 0.02%, stevioside 0.001%, ginger flavor 0.11% and water. Brix, pH and acidity of product were 13.7, 4.4 and 0.09, respectively. This drink had good score by the sensory evaluation. The above results showed that development of such functional beverage using Zingiber officinale can used as a functional material improving blood circulation in beverage industry.

        식물체의 향기성분을 분리하는데 주로 사용되는 headspace법, SPME법 및 SDE법으로 생생강(Zin-giber officinale R.)으로부터 총 61종의 휘발성 성분을 확인하였다. 확인된 성분은 alcohol류가 19종, carbonyl 화합물이 15종, terpene관련 화합물이 23종, ester 화합물이 4종으로 나타났다. Headspace법에서는 SDE법에서 분리하기 어려운 휘발성이 강한 acetaldehyde, ethyl acetate, 2, 3-butandione 등과 같은 저비점 휘발성 성분들이 확인되었고, SPME법에서는 총 31종의 휘발성 성분이 확인되었다. SDE법에서는 총47개의 성분을 확인하였으며 headspace법과 SPME법에서 확인되지 않은 고비점 성분들인 elemol, zingiberenol, β-eudesmol, β-sesquiphellandrol등과 같은 sesquiterpenoids 성분들이 확인되었다. Peak의 면적비(%)에 의한 방법간의 양적인 면을 비교하여 보면 생강의 주성분인 zingiberene의함량은 SPME법에서 41.5%로 가장 많았으며, headspace법 9.4%, SDE법 8.3%로 나타났다. 생강 냄새에 가장 중요한 역할을 하는 것으로 알려진 neral과 geranial의 피크면적(%)은 SDE법에서 7.7∼10.7%로 가장 많았으며, headspace법 0.3∼1.8%, SPME법 0.9∼2.0%로 나타났다. 3가지 추출방법으로부터 확인된 성분과 그들의 조성은 차이가 있는데 이는 전처리시 추출조건 및 흡착물질이 다르기 때문인 것으로 생각된다. 따라서 천연물로부터 휘발성 성분을 확인하고자 할 때 essentialoil 중에 함유된 휘발성분 분석에는 SDE법이 좋을 것으로 판단되며, 저비점 휘발성분 분석에는 headspace법이 양호한 것으로 판단된다.

        The antioxidative effect of ethanol extract of ginger on mackerel pike(Colorabis saira) flesh was investigated by periodically measuring TBA value and perioxide value(POV) during storage. The ethanol extract of ginger was added to minced mackerel pike flesh and the fish oil by concentration(2%, 4%, 6%, 8%). Then the minced flesh was storaged at -5℃ and the fish oil was incubated at 40℃. The TBA values of minced flesh were approximately increased in inverse proportion to concentration of ginger extract. Peroxide values were attended with the same effect as TBA value in the aggregate. In addition, The relationship between TBA37℃-2hrs of the minced flesh and their lipid oxidation during storage at -5℃ for 4 weeks was observed(r=O.98). TBA37℃-2hrs can be expressed as the susceptibility to lipid oxidation of minced mackerel pike flesh during storage. In the results, the antioxidative effect of alcohol extract of ginger on mackerel pike flesh was observed.

        The consumers' concept and the acceptability of ginger and its processed product were surveyed by premade questionnaire. A total of 447 questionnaires were collected from housewives, restaurant managers and related processors at 7 regions in Korea. The 40.6% of total responsors reacted ginger as spice was necessary for food preparation by flavor(87.5%). The most difficulties of using ginger were peeling and washing(89.8%). The raw ginger purchased for their use was only utilized less than 70% of 46.5% and 50% of 21.3% of total responsors respectively. The processed and convenient style spices including ginger were accepted by 72.8% of qestionnaires and 76.9% of them hoped to have ginger paste. Such a convenient ginger products were more welcomed by younger generation than older.

        본 연구에서는 단축 스크류 압출성형기를 이용하여 생강분말을 첨가한 쌀가루를 압출성형시켰을 때 일어나는 이화학적 성질 변화 반응표면 실험계획법에 의하여 분석하였다. 생강가루를 첨가한 쌀 압출성형물의 일반성분의 변화는 생강분말의 첨가량이 증가할수록 가용성 무질소물의 함량은 감소하는 반면 조지방, 조단백질, 조회분 조섬유 함량은 증가하였다. 2가지 독립변수인 생강함량(0∼12%)과 수분?량(14∼26%)의 주어진 범위에서 각 종속변수인 이화학적 성질에 대하여 3차원 반응표면 회귀분석하였을 때, 팽화율은 수분함량에 따라서는 변곡점(critical point)을 형성하면서 생강함량 4.30%, 수분함량 18.37%일 때 최적반응을 나타내었는데 이때 팽화율의 최적추정치는 1.83이었으며, 밀도와 전단강도는 수분함량과 생강함량이 교호적으로 증가함에 따라 증가의 폭이 커짐을 알 수 있었다. 또한 수분함량과 생강함량이 많아지면서 수분흡수 지수는 증가하였고, 수분 용해도 지수는 감소하였다. 호화도는 생강함량 6.15%, 수분함량 15.56%일 때 최대점을 나타내어 이때의 최적추정치는 88.27%이었고, 명암도는 생강함량이 증가할수록 반대로 감소함을 나타내었다. 한편, 화상분석기를 이용하여 관찰한 미세구조를 2가지 독립변수인 생강함량과 수분함량의 주어진 범위에서 3차원 반응표면 회귀분석한 결과, 최적반응을 보였을 때 각 요인들의 임계치는 생강함량 4.62%, 수분함량 19.57%로 단위 면적당 기공수의 최적 추정치는 94.88개이고, 생강함량 4.76%, 수분함량 17.97%일 때 기공 총둘레에 대한 최적 추정치는 2546.48㎛로 안부점(saddle point)을 형성하였다. 그리고 생강함량 2.79%, 수분함량 19.03%일 때 기공 총면적과 기공의 화적율에 대한 최적 추정치는 각각 512370㎛^2, 76.16%이었고, 생강함량이 증가하면서 기공의 총면적과 화적율은 증가하면서 수분함량에 따라서는 변곡점을 형성하였다. 이상의 결과를 종합하여 볼 때, 생강가루와 쌀가루를 혼합하여 제조한 extrudate의 품질은 토출구 온도 110℃에서 쌀가루에 생강분말 2∼7%를 섞어 수분함량 15∼20%로 조정하여 압출 팽화할 때 우수하였다.

        A feature of present fomula of dietary habitus is the result of its traditional succession, as like as the newly established culture is rooted in the inherited traditional culture. So, it is very important to discriminate the kind of korean traditional foods and to discuss the historical background of the foods in use, since they have to develope better dietary conditions in furture by using modern theory of dietetics. But there are few literatures concerning to korean traditional foods clear at a glance. However, some traditional foods including technology of cultivation and processing have been transmitted from generation to generation in some districts. Therefore, author has attempted to investigate the history of traditional foods. The results obtained were as follows. 1. A lots of traditional foods which were gifts to imperial court alloted to districts or civilian foods during Choson dynasty have been transmitted up to date, and the method of cultivation and processing are well preserved. Among them out standing examples are: 1) persimmon and its processed goods. 2) red pepper and malted pepper catchup. 3) ginger and its processed goods. 4) honey, bean sprouts etc. 2. It has been reported that ginger was cultivated in China in 5th century B.C. and in Korea early in 16th century. But historical relationships between them could not be confirmed. However, from SAMKUKSAGI and the report by Lee, Suk Woo(1754-1825) who was governor of Chonla province and remarked ginger as a sacred herb at Wanju county, Bongong town, it is suggested that ginger is a natural growing herb in Korea. 3. Soonchang malted pepper catchup is one of outstanding traditional foods which our ancestor have processed with red pepper. Peru is the place of origin, where they have cultivated pepper from 1st century. It is conceivable that pepper was transmitted from Europe to korea late in 16th century, and the first report on existence of pepper in korea was written in 1613. Therefore, it seems that malted red pepper catchup was processed 30 or 40 years later.

        뿌리썩음증상은 병징에 따라 3가지로 대별되었다. 뿌리썩음증상은 Pythium aphanidermatum을 선접종 후 Fusarium solani를 후접종 하였을 때 가장 심하였다. 뿌리혹선충과 Phthium aphanidermatum과의 상호작용은 없었다. 근경 발아는 각 처리에서 현저히 증가하였고 Alliette 0.25% 처리에서 가장 높았다. 토양관주에 의한 치료 및 예방효과는 Alliette, Burgandy mixture, 다이센 M-45, 디포라탄이 우수하였으며, 수량도 증가하였다.

        우리나라에 발병하고 있는 생강모자이크 바이러스병의 기생범위, 물리화학적 성질, 혈청검정 및 전자현미경적 관찰을 조사하였다. 생강의 초기병징은 황록반문을 일으키고 후기에는 위축현상 및 괴경의 소구화를 이룬다. 포장이병율은 약 43%이었다. 즙액전염, 접구전염(core grafting)이 이루어지며, 동부, 오이 Chenopodium amaranticolar, N. tabaccum var. Havana를 비롯하여 23종의 CMV감수성 식물에 병증을 나타낸다. 희석한계점은 10-4~10-5 범위이고, 온도한계활성점는 65~70℃사이이다. 혈청반응은 CMV 항혈청과 양성으로 나타난다. 전자현미경에 의한 바이러스립자의 크기는 28~32mμ의 구형이다. 이병엽육조직의 세포질 속에는 구형바이러스입자의 밀집상과 유리되어 있는 입자도 관찰되었다. 이상을 종합하여 볼 때 생강에 모자이크병을 일으키는 바이러스는 CMV군에 속하는 바이러스로 믿어진다.

        Background : The rhizome of ginger (Zingiber officinale) is widely used as a spice or a traditional medicine. It contains the phenolic compounds, such as gingerol, zingerone and shogaols as the major pungent compound. Ginger is commonly used for various types of "stomach problems," including motion sickness, colic, upset stomach, gas, diarrhea, irritable bowel syndrome (IBS), nausea. The cultivation area of ginger is 1,046 ha, and it is cultivated as 5th of 55 medicinal crops in Korea (2016). When ginger is cultivated in a vinyl house, the growing periods can be prolonged by early sowing and the yield is improved compared to the conventional cultivation. This experiment was carried out to investigated on growth, rhizome shape and yield as affected by the soil covering in rain-shelter greenhouse. Methods and Results : Seed ginger was planted on March 10 at 75 × 15 ㎝ planting density in greenhouse. The soil covering on furrow area was carried out on June 20, July 20 and August 20. The control, conventional cultivation was planted four rows on 120 ㎝ wide ridge. As a results of applying the soil covering, emergence was 2 - 3 days earlier than that of conventional cultivation. On November 5, samples were harvested for each treatment, and growth characteristics, tuber shape, and yield were investigated. As the number of soil-cover increased up to 3-times, the weight of the tuber increased to 44.4% and the length to 21.9% as compared with the control. However, as the number of soil-cover increased, workspace was needed, resulting in fewer seeding gingers and lower total yield. Therefore, it was advantageous to perform two times soil-cover to obtain the maximum yield. In the case of soil cultivation, the length of the foot was longer than that of conventional cultivation, and the quality was improved. Conclusion : From the above results, it is recommended that the soil covering is carried out twice at greenhouse’s cultivation. The first covering is in mid-June, and the second is in mid-July.

        Background : Zingiber officinale is known as the source of the pungent, aromatic spice called ginger. Ginger, especially dried rhizomes, has been widely used for many medicinal purposes. The pungent principles in ginger are the non-volatile phenolic compounds gingerol, gingeridione and shogaol. It is cultivated 1,046 ha as 5 th of 55 medicinal crops in Korea (2016). Ginger has been successfully propagated using internodal cuttings. Ginger emergences at 18℃ or higher, and it takes about 40 - 50 days to emerges after sowing. Therefore, it is required a cultivation method that promote the emergence. Methods and Results : The internodal cuttings with 25 – 35 g was planted on 30 April at 30 × 30 ㎝ on 120 ㎝ broad bed. Five covering materials included the illite non-woven fabric (18 g/㎡), rice straw and vinyl were treated to promote emergence and early growth. Soil temperature covered by illite non-woven fabric was higher by 2.6 - 2.8℃ than that of rice straw covering, and lower by 2.2 - 2.4℃ than that of the transparent vinyl mulching. Emergence was faster in the illite non-woven fabric mulching by 5 - 6 days compared to vinyl mulching. It was presumed to be due to the small diurnal difference with increasing soil temperature. The covering with illite non-woven fabric had a large plant height and a large leaf number. So, the early growth in the covering of illite non-woven fabric was better than other treatments. There was a differences in rhizome’s yield among treatments. The content of gingerol was 2.29 – 2.37 ㎎/g and there was no significant difference. Conclusion : From the above results, covering illite non-woven fabric until sprouting after planting promoted its emergence and early growth.

        This study was aimed at evaluating the antifungal potentials of twelve plant extracts (Terminariae Fructus, Glycyrrhizae Radix, Cinnamomi Cortex, Taraxacum Platycarpum, Rubi Fructus, Caesalpiniae Lignum, Myristicae Semen, Caryophylli Flos, Sanguisorbae Radix, Alpiniae Katsumadaii Semen, Scutellariae Radix, Astragalus membranaceus) in preventing storage rot symptoms in ginger (Zingiber officinale). Samples were collected from ginger that had been stored for 120 days at 10-12 . A total of ten fungi were isolated from stored non-spoiled and spoiled ginger and identified using internal transcribed spacer gene sequencing as Hypocrea virescentiflava, Fusarium oxysporum, Acremonium strictum, Fusarium solani, and Cadophora fastigiata. The causal fungus of storage rot was identified as F. oxysporum by pathogenicity test. Twelve candidate plant extracts were screened for antifungal activity against F. oxysporum isolated from spoiled ginger by using the disk diffusion method. In minimal inhibitory concentration (MICs) test, all ethanolic extracts of Cinnamomi Cortex, Taraxacum platycarpum, and Caryophylli Flos exhibited higher antifungal activity against F. oxysporum than other plant extracts. The MIC value of Cinnamomi Cortex and Caryophylli Flos were determined to be 10 ìg/disc. The MIC of T. platycarpum, 2.5 ìg/disc, was the lowest. Based on the results, it was concluded that Cinnamomi Cortex, T. platycarpum, and Caryophylli Flos have potential to serve as effective treatments to prevent storage rot of ginger.

        Zingiber officinale Roscoe, commonly known as ginger, has long been used as a powerful health-promoting antioxidant that supports cellular health of the human body. The objective of this study was to compare the antioxidant and antimicrobial activities of the samples with aging and fermentation. Antioxidant activities of the samples were compared using total phenol, flavonoid contents, ABTS cation radical scavenging activity and DPPH radical scavenging activity. Antimicrobial activities were also examined using the paper disc method and minimum inhibitory concentration (MIC). Acidity of the fermented ginger (FG) with lactic acid bacteria showed a significantly higher value than that of the ginger (GG). The content of 6-gingerol, a bioactive component in ginger, decreased in all fermented gingers but 6-shogaol which is also one of the main valuable ingredients showed the increased content at ginger fermented with Streptococcus thermophilus and Lactobacillus acidphilus. Flavonoid contents of the FG and GG did not show significant differences. However, ABTS cation radical scavenging activity and DPPH radical scavenging activity were 10-30% increased in the samples with fermentation (p<0.05), respectively. The samples of the disc showed an inhibitory effect on growth of gram positive Staphylococcus aureus and Listeria monocytogenes. Zinger with fermentation showed higher antioxidant and antimicrobial activities. Thus, we conclude that aging and fermentation can be a helpful process to increase the functional effects of ginger.

        In this study the physicochemical properties and antioxidant capacities of ginger (Zingiber officinale Rosc) Jungkwa with different kinds of sweeteners were determined. Jungkwa made with different sugars (sugar, xylitol, honey or oligosaccharides) were compared in aspect of physiochemical properties, antioxidant activities, total phenolic contents and sensory evaluation. Moisture contents Jungkwa treated different kinds of oligosaccarides showed highest value, in the order of honey, xylitol and sugar. L* value of Jungkwa treated with xylitol was the highest, a* value of Jungkwa treated with honey, sugar Jungkwa were higher then others. Free sugar contents of Jungkwa treated with sugar showed the highest value in sucrose, glucose and galactose. Jungkwa with xylitol showed lowest value in all free sugar contents. Hardness and chewiness of Jungkwa treated with xylitol showed the highest value. The antioxidant activity measured by DPPH and ABTS radical scavenging activity and total penolic content were the highest in Jungkwa treated with honey, followed by Jungkwa treated with xylitol, oligosaccharides and sugar. Appearance and color of oligosaccarides and honey treated Jungkwa were preferred. In ginger taste, sweetness, chewiness were highest in sugar treated Jungkwa (not significant difference in treatments). As a result, honey treated Jungkwa has higher antioxidant activity and quality than other sugar treatments.

        Background : Ginger has been extensively used in foods and traditional medicines in Asian countries. Despite its frequent consumption in daily life, the mechanism of potential interactions between ginger components-drug has not been examined. To elucidate the mechanism of governing the effects of 6-shogaol, a primary constituent of dried ginger, on human cytochrome P450 (CYP) isoenzymes an incubation studies were carried out using pooled human liver microsome (HLM). Methods and Results : CYP isoenzyme specific substrate was incubated with multiple concentrations of inhibitor, HLM and cofactors. 6-shogaol showed a potent inhibitory effect on CYP2C9, CYP1A2 and CYP2C19 with half maximal inhibitory concentration (IC50) values of 29.20, 20.68 and 18.78 μM respectively. To estimate the value of the inhibition constant (Ki) and the mode of inhibition, an incubation study with varying concentrations of each CYP isoenzyme-specific probe was performed. 6-shogaol inhibited CYP2C9 and CYP2C19 noncompetitively (Ki = 29.02 and 19.26 μM respectively), in contrast, the inhibition of CYP1A2 was best explained by competitive inhibition (Ki = 6.33 μM). Conclusions : These findings suggest that 6-shogaol may possess inhibitory effects on metabolic activities mediated by CYP1A2, CYP2C9 and CYP2C19 in humans.

        생강연작재배지 토양에 녹비작물의 재배가 토양 양분의 변 화와 뿌리썩음병원균 경감효과를 알기위해 헤어리베치, 크림 손클로버, 오차드글라스를 80일간 재배 후, 토양에 환원하여 토 양분석 및 real-time PCR 분석한 결과는 다음과 같다. 녹비작 물의 생육은 크림손클로버가 가장 좋았으며, 질수흡수량은 크 림손클로버가 가장 높게 나타났으며, 토양의 인산함량은 오차 드글라스가 가장 낮게 나타났다. T-N 함량은 헤어리벳치 > 크 림손클로버 > 오차드글라스 순으로 나타났다. 또한 토양 내 뿌 리썩음 병원균 밀도분석을 위해 Pythium zingiberum 균 특이 5.8S rDNA를 이용하여 real-time PCR 분석한 결과 헤어리베 치, 오차드그라스 및 크림손클로버 처리의 Ct값은 대조구보다 낮게 나타났다. 이상의 결과를 요약해볼 때 생강연작재배지에 서 녹비처리 후 토양은 대조구에 비해 EC가 감소되고, 몇 몇 무 기성분은 증가하였으며, 뿌리썩음 병원균 밀도는 감소하였다.
