        본 연구는 제15차(2019) 청소년건강행태조사의 원시자료를 활용하여 생물-심리-사회 모델을 바탕으로 우리나라 청소년의 편의식품 섭취 경험의 영향요인을 파악하고자 하였다. 연구 결과 생물학적 요 인으로 성별, 학년, 아토피 피부염이 주요 요인으로 분석되었으며, 심리학적 요인으로는 스트레스 인지 수 준, 우울감 경험, 자살 생각 여부, 주관적 수면충족, 주관적 건강상태, 신체활동, 현재 흡연과 음주 경험이 영향요인으로 확인되었다. 또한 사회학적 요인으로는 영양 및 식이 교육, 아침식사 여부, 학업 성적, 주관 적 경제상태, 동거가족 여부가 청소년의 편의식품 섭취 경험에 영향을 미치는 것으로 나타났다. 이러한 결 과를 바탕으로 청소년의 건강한 식습관 관리를 위해서는 실효성 있는 영양 및 식이교육 프로그램 제공과 정서적 지지가 필요하며, 가족 구성원을 교육 대상에 포함시키는 등 다각적이고 체계적인 대책마련이 필요 하다.

        본 연구에서는 신선편의식품을 구매한 뒤 집으로 귀가해서 냉장고에 보관하거나 섭취하는데 소요되는 시간과 그에 따른 신선편의식품 내.외부의 온도변화와 미생물학적 변화를 관찰하였다. 시판 중인 신선편의 식품에 대해 위생 지표세균인 일반세균, 대장균군 및 대장균, 병원성 미생물 인 B. cereus, S. aureus, Salmonella spp., L. monocytogenes를 분석하였다. 설문조사 결과 신선편의식품을 구매 후 귀가 또는 섭취에 소요되는 시간이 최대 3시간 소요되는 것으로 확인되어, 차량 트렁크 내에서 최대 3시간 동안 보관 한 결과 차량 트렁크 내부 최고 온도가 봄(3월) 19oC, 여 름(7월) 44oC, 가을(9월) 31.3oC, 겨울(2월) 17.6oC로 각각 확인되었으며, 차량 트렁크에서 보관한 신선편의식품의 품온은 최대 봄 18.5oC, 여름 42oC, 가을 29.2oC, 겨울 16.8oC 로 확인되었다. 차량 트렁크에 최대 3시간 보관한 신선편의식품의 일반세균수는 봄 3.41 log CFU/g, 여름 4.32 log CFU/g, 가을과 겨울은 각각 3.81 log CFU/g, 3.36 log CFU/g으로 확인되었다. 그 외의 대장균군 및 대장균, B. cereus, Salmonella spp., L. monocytogenes균은 검출되지 않았지만 S. aureus는 여름과 가을철에는 신선편의식품을 1시간만 차량에 보관하더라도 검출되었고, 봄과 겨울은 2시간 이상 차량 트렁크에 보관하였을 때 검출되었다. 이동 용기로 흔히 사용되는 종이박스와 스티로폼 박스 내부가 알루미늄필름으로 코팅된 종이 박스를 이용하여 얼음 첨가 여부에 따른 이동용기 온도변화 실험과 이동 중 S. aureus 의 증식여부를 확인한 결과 스티로폼 박스에서 내부 온도 변화가 가장 낮게 유지되었고, 시간 경과에 따른 미생물의 증식도 가장 적게 나타남을 확인할 수 있었다. 이상의 결과로 볼 때 신선편의식품 소비자들에게 구매 후 안전한 섭취를 위해 보관 온도나 시간에 대한 가이드라인과 이동용 기를 이용한 신선편의식품의 온도관리에 대한 정보를 제공 하여 식품의 안전성을 높이는 홍보가 필요할 것으로 판단된다.

        본 연구에서는 단일 시료를 검사하는 식품공전의 방법을 통계적 개념인 n, c, m, M을 도입하여 국제기준에 발 맞춘 시스템을 확립하고자 식품 중 미생물 오염실태 조사 및 기준·규격 재평가를 실시하였다. 즉석섭취·편의식품 류에 대한 미생물의 오염도 조사를 위한 모니터링을 실시 하였으며, 이를 바탕으로 통계적 개념을 도입하여 새로운 기준·규격을 마련하고자 하였다. 즉석섭취·편의식품류 총 2,040건(즉석섭취식품 630건, 즉석조리식품1,020건, 신 선편의식품390건)을 구입하여 일반세균수, 대장균군, E. coli, B. cereus, S. aureus, C. perfringens 에 대한 모니터 링을 진행하였다. 즉석섭취·편의식품류의 일반세균수는 평균 2.10 log CFU/ g, 대장균군은 평균 −0.60 log CFU/g, E.coli은 평균 −1.33 log CFU/g, B.cereus은 평균 −1.23 log CFU/g으로 검출되었 으며, S.aureus은 신선편의식품에서만 평균 −1.35 log CFU/ g, C. perfringens은 즉석조리식품에서만 평균 −1.37 log CFU/g 검출되었다. 일반세균수, B. cereus, S. aureus, C. perfringens은 현 기준규격을 초과하지 않은 것으로 나타났으나, 신선편의식품에 한하여 E. coli 는 34건이 식품기 준 및 규격을 초과 하였다. 즉석섭취·편의식품류의 모니 터링 결과를 바탕으로 Newsamplesplan 2 프로그램을 활용하여 이론적 규격을 도출하였다. 오염 분포도가 넓어 사 실상 규격 마련의 실효성이 없는 것으로 파악되었고, 대장균은 즉석섭취식품 및 즉석조리식품에서 n=5 c=1 m=0 M=10으로, 신선편의식품에서는 n=5 c=1 m=10 M=100으로 이론적 규격이 필요할 것으로 판단된다.

        This study was performed to provide fundamental data on the convenience foods purchase according to the food-related lifestyle. The subject was 250 Chinese students in South Korea region through a self-administered questionnaire. A factor analysis extracted five comprising food-related lifestyle, which we named health seeking (factor 1), taste seeking (factor 2), easy seeking (factor 3), popularity seeking (factor 4) and safety seeking (factor 5). According to the results of the reliability analysis, the food-related lifestyle showed an average of 3.16 and 0.813 for Cronbach's alpha coefficient. There were significant differences for the selection of convenience foods according to health seeking (p<0.05). Also, the popularity seeking and easy seeking lifestyle factors showed significant differences for the reason the purchase criteria of convenience food (p<0.05). There was not significant differences in convenience foods of selection criteria according to health seeking, taste seeking, easy seeking, popularity seeking and safety seeking types (p<0.05). A significant positive result of the internal characteristics of convenience foods purchase (p<0.05) was shown for the health seeking and taste seeking. A significant positive result of the external characteristics of convenience food purchase (p<0.05) was shown for the health seeking, taste seeking and safety seeking. In the correlation between convenience food purchase factors, the correlation coefficient of nutrition and ingredients are highest with 0.46, 0.445 in cooking and price, 0.441 in ingredients and expiry date, 0.383 in brand and price, 0.361 in taste and easy. In conclusion, this study presented the desirable direction of convenience food consumption in Chinese students.

        In this study, we analyzed the dietary style of Chinese singles; in addition, the effect of convenience food consumption on the quality of life of singles was evaluated through construct model development on the relationship between the frequency of consumption and satisfaction with convenience food and quality of life. A statistical analysis of 153 surveys from Tianj was conducted using SPSS 12.0 for Windows and SEM using AMOS 5.0 statistics package. The reliability of the data was confirmed by an exploratory factor analysis and Cronbach's alpha coefficient. The measurement model was confirmed as appropriate by a confirmatory factor analysis of the measurement model in conjunction with AMOS. The results of a factor analysis were as follows. Dietary style was categorized into four factors. The level of satisfaction with convenience food was categorized into seven factors and quality of life was categorized into four factors. The reliability of these findings was supported by a Cronbach's alpha coefficient of 0.6 and higher for all the factors. For the level of satisfaction with convenience food based on dietary style and the quality of life of singles, a structural equation model was constructed and analyzed. The results of all tests indicated that the model satisfied the recommended level of goodness of fit index and thus, the overall research model was appropriate. The current study highlights the increased interest in eating habits of singles and is necessary for further improvement in nutrition education.

        The aim of this study was to evaluate the TEMPOⓇ STA automated most probable number (MPN) system for the enumeration of Staphylococcus aureus (S. aureus) in comparison with a standard culture method. Artificially inoculated food products with S. aureus - triangle kimbap, sliced spring onion, dried filefish fillet, danpatjuk (sweet red-bean porridge with small rice dumplings)- were tested in this study. Twenty-five grams of each of food samples were added into 225 ㎖ of sterilized phosphate buffered saline in a TEMPOⓇ stomacher bag followed by stomaching for 2 min. One milliliter of the stomached sample was added to a bottle of culture medium. Cards were filled and sealed in the automated filler and then were incubated for 24 h at 37℃. After incubation, the cards were placed in the automated TEMPOⓇ reader and MPN results were generated. For comparison with a culture method, decimal dilutions were prepared from the same homogenized samples described above, transferred onto Baird Parker and Baird Parker-Rabbit Plasma Fibrinogen (BP-RPF) agar plates, and then incubated at 37℃ for 24 h. The performance of TEMPOⓇ STA method is equivalent to the culture method using Baird Parker or BP-RPF agar count plate for the enumeration of S. aureus in foods, eliminating a time-consuming and laborious process.

        The purpose of this study was to investigate the body composition, biochemical parameters, and consumption of convenience foods according to β-3 adrenergic receptor polymorphism in university students. A survey was conducted on a total of 486 students - 189 males and 297 females. Based on a self-reporting method, questionnaires were administered for over 20 minutes, and β-3 adrenergic receptor and blood samples were also analyzed. The genotype frequencies of β-3 adrenergic receptor polymorphism were Trp/Trp homozygote (73.0%) and Trp/Arg heterozygote (27.0%) in male students. For the female students, the distribution of genotypes was Trp/Trp (71.0%) and Trp/Arg (29.0%). There were no differences according to biochemical parameters (ALT, cholesterol, triglyceride, HDL-cholesterol, LDL-cholesterol, and hemoglobin) or body composition. Males with TT genotype frequently ate Ramyon (2.40±0.52), Cup Ramyon (2.37±0.39), Kimchi (2.23±0.61), and frozen meat (2.00±0.44), whereas males with TA genotype ate Fries (frozen food) (1.90±0.79), Smoked meat (1.67±0.81), and Canned fruit (1.64±0.81). Females with TT genotype frequently ate Frozen fries (2.21±0.35), Kimbab (2.12±0.44), and Ramyon (1.85±0.40), whereas females with TA genotype frequently ate Kimchi (1.73±0.98), Fries (frozen food) (1.46±0.26), and Cup Ramyon (1.30±0.34). When questioned about satisfaction about body shape, 22.8 and 60.8% of those with TT genotype answered that they were 'satisfied' or needed to 'lose weight', respectively, whereas 18.0 and 63.9% of those with TA genotype answered that they were 'satisfied' or needed to 'lose weight', respectively. In conclusion, this study found no significant effects in terms of β-3 adrenergic receptor polymorphism, which suggests that health-promoting education needs to be developed so that university students appropriately recognize their bodies and control their weight in desirable ways. Therefore, it is necessary to educate individuals with TT genotype how to buy reasonable foods by understanding the interrelationship between convenience foods and health care and by checking the nutrition index labels on convenience foods. Thus, it is recommended that a health-promoting program be developed for the promotion of healthy lifestyles.

        The purpose of this stud was to investigate the degree of recognition as well as the consumption pattern of convenience food products, and related factors among 700 mixed Korean college students using written questionnaire. Students of Seoul region showed the significantly lowest rate of recognition at 36.7%. Results also showed that lifestyles have a significant effect on the degree of recognition of convenience foods. The consumption patterns of convenience foods goes as follows: used frequently-18.2%, once in awhile-73.9%, doesn't use-7.9%. The higher the recognition rate, the higher the consumption rate for convenience foods. When compared in terms of residence, students living at home used more refrigerated foods compared to students living outside of the home. Among the total students living outside of the home, students living on their own scored highest of convenience food consumption. In the case of female students living outside the home, respondents living alone and in dormitories scored the highest. Female students living in dormitories were mainly using refrigerated and canned foods, while those living alone consumed more kimbap and 'sa-bal-myun' in convenience stores. Korean college students mainly consumed frozen food, retort food, and kimbap in convenience stores. The college student that believes that 'You eat to satisfy hunger' significantly used more convenience food while those that marked 'maintain health' consumed the lowest showing a great difference between groups. Results showed that the lower the food habit score, the higher the usage score of convenience foods. The food habit score had a negative correlation with the usage of frozen foods, instant food, and convenience store food. When compared individually, packaged 'ramen' and 'sa-bal-myun' scored the highest points of usage. Frozen fried rice and pre-packaged rice scored the lowest points indicating Korean college students do not consider rice a convenience food. Convenience food consumed in convenience stores ranked the highest among places of consumption, compared to places like home or outdoors; showing that convenience foods were used by people with limited time constraints.

        The purpose of this study was to identify the development trends and feasibility of health-oriented convenience foods in Korea for promoting health. Special objectives were to investigate characteristics of health-oriented convenience foods; to determine the factor affecting the sale of health-oriented convenience foods; to examine marketing strategies of the foodservice industry; and to provide feedback for the development plan. Questionnaires were developed in this study and mailed to 10 food companies in Korea and then telephone interviews were carried out. Also, marketing strategies of each industry are analyzed by the visit interview with food processing and marketing chargers. The survey was conducted between September 30 and October 30, 1997. The results of this study were summarized as following : The most popular health-oriented convenience foods were completely precooked type, pouch/PE bag packaging type, diet purpose, 100-300 gram size, and convenience store sales with regard to selling and developing health-oriented convenience foods. About factors affecting selling health-oriented convenience foods, the best contributors among factors were seasonality, convenience, and negative image for instant foods. For health-oriented convenience foods, the most important factor was the improvement of taste and quality. Adults should be the most promising customers for health-oriented convenience foods. Food companies must promote variety, taste, nutrition, convenience, price, and advertising of health-oriented convenience foods for the powerful marketing strategies in the future.

        This study understands the actual conditions and problems for making traditional Korean food into the fast food. 1. Convenience to eat and nice atmosphere with friends (25%) are the best motive of visiting fast food restaurant. 2. The frequency of eating fast food is one to three times a month and the result of analysis on interrelation of human being in social anthropology represents that the fast food represents negative (-) interrelation by increasing of the age. The opinion about the fast food's nutrition is that the fast food lacks the nutrition (23.3%) and has excessive fat (40%). 3. The consumers were satisfied with the atmosphere of the fast food restaurant and unsatisfied with it's high prices. 4. The consumers' opinion on making the traditional food into a fast food was 66.4%. The consumers' opinions on traditional food to be improved are the sanitation (37.9%), the cookery (25%), the taste (11.7%), the nutrition (10.7%) and the opinions about inheritance of the traditional food is that 87.5% of people gave positive responses.
