The oyster mushrooms have known to be a major product in Gyeonggi-do, with production accounting for 69% of the entire country. The ‘Daeseon’ cultivar, which has white and straight stem, was developed. This cultivar was developed by mating monokaryons isolated from the ‘Heuktari’ and ‘Hwaseong-2ho’ varieties. The optimum temperature for the mycelial growth was 26~32oC on PDA medium and that for the primordia formation and the growth of fruit body of ‘Daeseon’ was 16~20oC on sawdust media. It took 35 days to complete spawn running, 3 days for finish primordia formation, and 4 days for finish fruit body growth in the bottle culture. It has shallow funnel-shaped pileus and a white straight stipe. The yield per bottle was 201 g/1,100 ml and was 16% higher than that of control cultivar ‘Suhan-1ho’. Based on above results, we expect this cultivar to be suitable for small packaging.
The oyster mushroom is a widely cultivated edible mushroom in Korea. It is a regionally specialized crop in Gyeonggi-do, where 68% of the national production is produced. The present study was conducted to develop a new, highquality cultivar with stable cultivation. ‘Manseon’ is a new variety of oyster mushroom suitable for bottle culture. It was produced by mating monokaryons isolated from ‘HB-18’ and ‘P15159-16’. The optimal temperature for ‘Manseon’ mycelial growth was 26–29 °C on potato dextrose agar (PDA) medium and for primordia formation and the growth of fruit bodies the optimal temperature was 18–19 °C on sawdust medium. Spawn running required 30 d, primordia formation required 4 d, and fruit body growth in the bottle culture required 4 d. Regarding the characteristics of the fruit bodies, the pilei were round and dark grayish brown, stipe color was white, and stipe shape was short and thick. The yield per bottle was 192.7 g/1,100 cc, which was 9% higher than that of the control strain (Suhan-1ho). The physical properties of springiness, cohesiveness, gumminess, and brittleness of stipe tissue were 87.9%, 77.4%, 445.1 kgf, and 389.6 kgf, respectively.
We investigated the standard cultivation substrate for Sparassis latifolia “Neowul” bred in Jeollabuk-do Agricultural Research and Extension Services. Cultivation characteristics and yield were assessed by varying the kind of sawdust and additives, and the mixing ratio. The cultivation period in larch sawdust was the shortest at 97 days. The yield was excellent (143.6 g). The findings indicated that larch is a tree species appropriate for the cultivation of S. latifolia. When the additives were varied, the yield and productivity (53.1%) were highest (116.6 g) for the wheat bran treatment. Thus, wheat bran would be an additive appropriate for culturing S. latifolia. Concerning the use of different mixing ratios, larch sawdust:beet-pulp:wheat bran ratios of 80:15:5 and 85:10:5 resulted in yields of 114.4 g and 111.4 g, and productivity of 52.5% and 51.8%, respectively. These yield and productivity values were not statistically different. Thus, the standard cultivation substrate for S. latifolia can comprise larch sawdust, beet pulp, and wheat bran at a ratio of 80:15:5 or 85:10:5. The carbon/nitrogen (C/N) ratio assumed to be appropriate for the cultivation of S. latifolia was 184 –223. Pinheading would be difficult below a C/N substrate ratio of 105. Thus, the C/N ratio of the media, as well as the pH, would be vital factors affecting pinheading during S. latifolia cultivation.
꽃송이버섯은 우리나라에서 2000년대 초반부터 재배를 시작하였고, 국내에서는 전라북도농업기술원이 육성한 ‘너울’이 2016년에 최초로 등록되어 있다. 그러나, 꽃송이버섯에 대한 재배매뉴얼이 없어 여전히 농가마다 자실체 생산성의 차이가 큰 실정이다. 이에 꽃송이버섯 ‘너울’의 발이조건을 구명하고 안정생산 기술을 개발하고자 배지 pH, 배지함수율, 종균접종량 조건에 따른 연구를 수행한 결과, 재배일수, 수확률과 자실체 중량을 고려한 연중 병당 수 량은 pH 3.8 처리구가 363.6 g으로 가장 높게 나타났으나 pH 3.6 조건에서는 수량이 189.5 g으로 급감하는 점, pH 4.0 조건이 배양일수가 짧고 pH 3.8 조건과 비교하여 재배일수가 같으며, 자실체 중량 차이의 유의성이 인정되지 않는 점, 농가에서 활용 시 정밀한 pH 조절이 어려운 점을 고려하여 pH 3.9±1로 조절하여 재배해야 안정생산이 가능할 것으로 판단된다. 아울러 배지함수율을 65%로 조절하고, 배지부피의 4%에 해당하는 액체종균을 접종 후 배양실 내 습도조건을 50% 이하로 설정하면 연중 병당 341.8 g을 생산할 것으로 판단된다.
갓과 대의 색택이 백색인 백색느타리 신품종『백선』의 주요특성은 다음과 같다. 균사생장적온은 28~31 o C이고 버섯발생온도는 22 o C, 버섯생육온도 20 o C로 ‘미소’보다 균사생장적온이 높으며 버섯발생 및 생육온도가 유사하며, 발생형은 다발형태를 나타내었다. 병재배시 배양기간은 30일, 초발이 소요일수는 4일, 생육일수는 4일로 총재배 기간은 38일이 소요되었다. 형태적 특성에 있어 갓직경은 32.5 mm, 대직경 9.1 mm, 대길이 91.4 mm로 ‘미소’에 비하여 가늘고 긴 형태를 나타내었으며, 갓색도(L)는 84.2, 대색도(L)은 83.4로 ‘미소’에 비하여 밝은 백색을 나타내었다. 수량은 생산력 검정시 1100 ml병에서 185 g을 나타내었으며, 농가실증재배시 A(평택) 184g/1100 ml, B(여주) 178 g/850 ml으로 대조품종 대비 40%이상 증수 되었다. 대의 물리성은 탄력성, 응집성, 씹음성, 깨짐성이 각각 80%, 57%, 720 g, 57 kg을 나타내었다. DNA다형성을 비 교 분석한 결과 UFPF1, UFPF3, UFPF4의 primer에서 교배모본인 ‘GMPO20410’와 ‘MGL2205’의 DNA의 밴드가 혼합되어 있었으며 품종 간, 균주 간의 밴드 차이가 있 었다. 저장기간에 따른 신선도는 4 o C에서 28일 저온저장 시 8점으로 신선한 상태였으며, 4 o C저장 후 상온보관 시 5점으로 식용 가능한 상태로 대조품종인 ‘미소’ 보다 저온 및 상온보관 시 신선도가 우수하였다.

The optimum temperature for ‘Santari’ mycelial growth was 26–29℃ on PDA medium, and the temperatures for primordium formation and for growth of the fruit body on sawdust medium were 22℃ and 20℃, respectively. It took 34 days to complete the spawn run, 3 days to form primordia, and 3 days to finish fruit body growth in the bottle culture. The fruit body pilei were round in shape and brownish, whereas the stipes were long, thick, and white. The yield per bottle of ‘Santari’ was 172 g/1,100 mL, which was 43% higher than that of the reference cultivar (‘Hosan’). The springiness, cohesiveness, gumminess, and brittleness of the stipe tissue were 87%, 82%, 193 g, and 16 kg, respectively. These physical property values of ‘Santari’ were lower than those of the control cultivar, except for the cohesiveness.

The fruitcharacteristics: the pileus was round and gray-black in color, and the stipe was long, thin, and light gray in color. The yield per bottle was 179 g/900 ml and was 5% higher than that of the control variety (Chunchu-2ho). The physical properties of the fruit body were as follows: springiness, cohesive, gumminess, and brittleness of the stipe tissue were 96%, 76%, 160 g, and 15 kg, respectively.

As results of the physical properties of fruit body, springness, cohesive, gumminess and brittleness of stipe tissue were 96%, 76%, 160g and 15kg, respectively.
This study was conducted to reduce contamination ratio of oyster mushroom bottle cultivation. The optimalconditions of substrate sterilization for reducing of contamination ratio were at 121oC for 90min. In addition, UV-C irradiation isgood for lower contamination ratio to continue over 6 hours at cooling and inoculation room after sterilization. Thecontamination ratio and density of microorganisms of substrate were showed 0% after sterilization at 121oC for 90min.Trichoderma sp., main pathogen of mushrooms, was detected from substrate after sterilized during 2 or 4 hours at 101oC and 105oC,respectively. The amount of electricity used was the lowest at 121oC for 90min than that of other sterilization conditions. The UV-Cirradiation treatment was used UV-C lamp(40 watts) in the inoculation room(56m3). The density of bacteria did not detected after UV-C irradiation for 6 hours. And the death ratio of bacteria and Trichoderma sp. was 99.9% after UV-C irradiation for 6 hours. However,in the same UV-C irradiation time, the death ration of Cladosporium sp. was 90.9%. Therefore, the death ratio of fungi was lower thanthat of bacteria at the same UV-C irradiation treatment.
총탄소함량은 T4를 제외한 모든 처리구에서 대등하였 으며, 총질소함량은 T3에서 2.17%로 대조구에 가장 근접 한 값을 나타내었다. C/N율은 T4에서 39로 다른 처리구 보다 높았다. 혼합배지에 따른 자실체의 생육특성을 조사 한 결과 갓직경은 T2에서 가장 컸고, 대직경은 T2와 T4 에서 가장 컸고, 대길이는 T1과 T2에서 가장 많았다. 유 효경수는 T1과 T3에서 가장 많았다. 혼합배지에 따른 처 리구별 수량은 T3에서 171g/병으로 대조구와 대등하였고, 회수율도 89.2%로 대조구와 대등한 결과를 나타내었다.
Mushroom production by automatic bottle culture system was introduced into China in 1999 and developed rapidly in recent ten years. According to the statistics of Chinese Mushroom Society, about 652 facilities of automatic mechanized bottle system were in 2011. The annual rate of increase of facility is expected to exceed 47%. The gross production by automatic bottle culture system was 990,000 tons in 2011. Beijing Hengdaxing Edible Mushroom Co., Ltd established in 2007 in Tongzhou district, Beijing is a company producing Pleurotus eryngii var. ferulae with annual production of 1,000 tons. The company has finished the technical reformation and expansion. Its designed production capacity is 6.5 tons per day and 2,000 tons per year. Beijing Fuqin Edible Mushroom Science & Technology Co., Ltd is an industrial production company of Flammulina velutipes. It was established in 2007. Its production capacity is 20 tons per day and 7,000 tons per year.
본 연구는 느타리버섯 1,100㎖ 배양용기의 뚜껑종류 및 크기에 따른 배양중 이산화탄소농도변화, 수분함량, 유리당, 및 수량을 조사하였다. 이산화탄소 농도는 기존의 비통기성 무스폰지 뚜껑구가, 상하 천공과 하 천공 모두에서 천공 구멍이 작을수록, 또한 상대비교는 하 천공구에서 높게 유지되었다. 배양중 이산화탄소 변화는 배양 뚜껑 종류와는 관계없이 배양 경과 6~11일경 이산화탄소발생량이 최고치에 도달하였다. 뚜껑종류별 느타리버섯(1100㎖병)의 수량은 상하 뚜껑 천공의 19~38㎜천공에서 11.4~23.8%로 증수되어 폭넓게 수량이 좋았으며, 하 천공에서 26~47㎜천공 뚜껑에서 대조구에 비하여 6.5~17.9%가 수량이 증수되었다. 또한 빠른 균사배양속도를 고려하면 상하 33㎜천공 뚜껑에서 기존 무스폰지 뚜껑보다도 23.8%의 높은 수량으로 제일 양호하였다.
본 연구는 느타리버섯 850㎖ 배양용기의 뚜껑종류 및 크기에 따른 배양중 이산화탄소농도변화, 수분함량, 유리당, 키친 함량 및 수량을 조사하였다. 배양중 이산화탄소 변화는 배양 뚜껑 종류와는 관계없이 배양 경과 8~9일경 이산화탄소발생량이 최고치에 도달하였고, 뚜껑종류별 이산화탄소누적 농도는 뚜껑 크기 29~41㎜를 비교하였을 때 상하천천공은 6.5~4.0%, 하부천공은 9.0~6.5%로 하부천공이 이산화탄소농가 높게 측정되었다. 수분변화는 구멍크기가 클수록 배지 내 수분 보유량은 감소하였다. 유리당과 키친의 변화는 상하천공보다 하부천공에서 유리당 및 키친량이 많았고, 수량은 상하천공 23~33㎜, 하천공 29㎜에서 각각 15.8~21.2%, 20%가 증수되었다.
팽나무버섯 병재배(1,100㎖)에서 배양기 내 통기성이 팽나무버섯의 균사생장과 버섯발생에 미치는 영향을 조사하였다. 배양병 내의 통기성은 배양병 뚜껑에서 천공의 상하 위치와 구경 크기로 조절하였고, 통기성 처리의 효과로는 배양병 내 이산화탄소 농도, 수분함량 변화, 키틴 함량, 유리당 함량, 자실체 발생량을 조사하였다. 팽나무버섯 균사배양 중 대수기 정점에서의 배양병 내 이산화탄소 농도는 대조구인 비통기성 무스폰지 뚜껑과, 천공 크기가 작은 뚜껑일수록 상대적으로 높았다. 팽나무버섯 균사 배양체 내유리당 함량은 구멍 크기가 47mm로 상하로 천공된 뚜껑을 가진 병에서, 그리고 구멍 크기가 26~33mm로 하부만 천공 뚜껑을 가진 병에서 가장 많았다. 키틴 함량은 26mm 크기의 구멍을 하부에만 천공한 뚜껑을 가진 병에서 가장 많았다. 한편 뚜껑에서 천공의 위치가 상하 양쪽이고 천공크기가 42㎜~47㎜인 배양병에서는 수분 감소가 많아 발이가 불량하고 자실체 생산량도 적었다. 결론적으로 팽나무버섯 병재배 용기 1,100㎖ pp병에서 최고의 수량을 나타낸 배양병에서의 뚜껑은 상하 천공으로 19㎜ 구멍과 하부만의 천공은 26㎜ 구멍을 내고 통기성 스폰지를 넣은 것으로, 이 때 자실체 생산량은 대조구보다 6~9% 증가하였다.
