        This study examined the determinants of healthy food purchases before and after COVID-19 in Korea. Binomial and multinomial logistic regression models were applied to Korea Rural Economic Institute's Food Consumer Behavior Survey data from 2019 to 2021. The analysis revealed a significant decrease in the non-intake of healthy food in 2021 compared to 2019, suggesting the impact of COVID-19 on healthy food consumption. Consumption patterns also changed, with a decrease in direct purchases and an increase in gift-based purchases. Several variables showed significant effects on healthy food intake. Single-person households exhibited a higher probability of eating healthy food after COVID-19. The group perceiving themselves as healthy had a lower likelihood of consuming healthy food pre-COVID-19, but this changed after the pandemic. Online food purchases, eco-friendly food purchases, and nut consumption showed a gradual decrease in the probability of non-intake over time. Gender and age also influenced healthy food intake. The probability of eating healthy food increased in the older age group compared to the younger group, and the probability increased significantly after COVID-19. The probability of buying gifts was significantly higher in those in their 60s, indicating that the path to obtaining healthy food differed by age.

        목적 : 본 연구의 목적은 아동의 음식 섭취 시 시각 역할에 관한 연구 동향을 주제범위 문헌고찰 방법으로 확인하고 연구 방향을 설정하는데 기초자료를 제공하고자 하는 것이다. 연구방법 : 본 연구는 주제 범위 고찰을 통하여 1974년부터 2022년까지 국외에서 발표된 연구를 데이터 베이스인 CINAHL, MEDLINE, ProQuest, Science Direct에서 검색하여 본 연구목적에 적합하고 포함 및 제외기준에 해당되는 14개의 연구를 최종으로 선정하였다. 선정된 연구는 연구의 일반적 특성 및 연 구목적, 연구절차, 연구결과로 나누어 분석하였다. 결과 : 음식의 시각적인 요소와 섭취량과의 관련성 연구는 1990~2019년까지 꾸준히 증가하는 것으로 나 타났으며, 미국에서 가장 많은 연구가 이루어졌다. 연구대상자는 아동(2세 8개월~18세)을 대상으로 진 행하였으며, 이 중 유아 및 학령전기 아동만을 대상으로 한 연구가 6편으로 가장 많았다. 음식의 시각적 인 요소는 음식의 색, 모양, 크기로 분류되었으며 2000년대 들어서는 아동이 좋아하는 음식보다는 채소 와 과일과 같은 건강식품으로 시도하는 것으로 나타났다. 14편 중 10편이 해당 음식 섭취량을 증진하기 위한 목적으로 진행되었으며, 음식 섭취를 확인하기 위한 평가는 대부분 아동을 대상으로 대부분 임상 관찰로 진행되었다. 결론 : 본 연구 결과를 통해 음식의 시각적인 요소로는 음식의 색, 모양, 크기로 분류할 수 있었고, 이러한 요소들이 음식 섭취에 영향을 미친다는 것을 확인할 수 있었다.

        Unhealthy dietary behavior such as insufficient calcium intake can be one of risk factors of osteoporosis and chronic diseases in older people. This study evaluated the recent trends in dietary calcium intake and the food source in Korean adults aged 50 years or older using the Korea National Health and Nutrition Examination Survey (KNHANES, 2015-2019) data. This study used 24-hour recall survey data to investigate the calcium intake, the major food groups and main dishes contributing to the calcium intake. The mean calcium intake was 479.55-506.81 mg/day. The major food groups that contribute to calcium intake were vegetables, milks and fishes. Dairy and frozen desserts and kimchi were the major dish groups that contributed to the calcium intake. Calcium intake from milk in dairy and frozen dessert group has been high in last 5 years (50-64 years old: 34.71-47.68 mg, 65-74 years old: 29.72-43.65 mg, over 75 years old: 22.91-42.93 mg). In addition, baechu-kimchi is the most contributed to the calcium intake in kimchi group (50-64 years old: 35.10-41.47 mg, 65-74 years old: 29.62-34.96 mg, over 75 years old: 23.79-29.13 mg). In conclusion, various source of calcium needs to be recommended to increase intake calcium in over 50 years, which may reduce chronic diseases and improve quality of life.

        The intake of processed foods containing high levels of sugar increases the incidence of chronic diseases, including obesity, diabetes, and metabolic syndrome. Limiting sugar intake is important for a healthy life at all ages. Therefore, this study analyzed food sources and sugar intake by the different age groups based on the 7th Korea National Health and Nutrition Examination Survey (KNHANES). We used 24-hour recall survey data to investigate the daily sugar intake and the major food groups and main dishes contributing to sugar intake. The mean sugar intake was 58.9-66.8 g/day. The three major food groups contributing to sugar intake were fruits (15.2-19.9 g/day), beverages (10.7-12.4 g/day), and milk and milk products (7.6-7.8 g/day). Teas and other non-alcoholic beverages (14.7-17.3 g/day), fruits (12.5-16.2 g/day), and dairy products (7.0-7.6 g/day) were the major food groups that contributed to the sugar intake. Carbonated drinks, apples, and milk were the top sources of sugar intake in each group. In conclusion, the sugar intake of Koreans is mainly from carbonated drinks, fruits, and milk. These results provided the basic data for nutrition education and nutrition program development according to the different age groups of the Korean population.

        This systematic review and meta-analysis aimed to determine whether food intake is effective in preventing diseases related to cognitive impairment. We searched English databases namely MEDLINE, PubMed and ScienceDirect from 2000 to May 2020, and Korean databases namely RISS, KISS, and DBPIA from 1990 to May 2020. We divided the data into 15 groups using the food group classification of the Korean Nutrition Society (KNS). The effect size (Cohen’s d) was estimated using a random-effect model, and a 95% confidence interval was calculated for each study. We included 17 cross-sectional studies and 7 cohort studies which involved 45,115 participants. As a result of analyzing the subgroups in the Asian population of both sexes, it was observed that grain intake has a protective effect against cognitive impairment. For females, pulses and fish also have a protective role against cognitive impairment. In the case of seaweed, a negative relationship was found with a moderate protective effect against cognitive impairment (Cohen’s d:-0.533, 95% CI: -0.939, -0.126; p=0.010) in Korean studies. Dairy products are associated with an increased risk of cognitive impairment in the American and European population but drinking alcohol is associated with a lower impairment risk. These results provide a basis for formulating the dietary guidelines for preventing dementia for each country.

        This study assessed yearly trends of food and nutrient intake among high school students aged 16 to 18 years (n=2,377) using the 2007~2015 Korea National Health and Nutrition Examination Survey (KNHANES). Yearly trends of food or nutrient intake were analyzed via logistic regression analysis. The results showed that consumption of sugars & sweets, and beverages & alcohols was increased rapidly during this period (p<0.0001). Intake of meat & meat products, and fish & shellfish also was increased (p=0.0008). Intake of grains and grain products was increased until year 2011 but declined after 2012 (p=0.0025). Consumption of vegetables, and milk & milk products was decreased (p=0.0395). Intake of protein, fat, thiamin, riboflavin, niacin, and iron was increased (p=0.0445). Carbohydrate energy ratio was decreased, whereas fat energy ratio was increased (p=0.0235). Most nutrient intakes satisfied the dietary reference intakes for Koreans except dietary fiber (19.6~26.2%), calcium (46.9~55.2%) and sodium (more than 221.4%) during this period. There was a significant positive correlation between most food group intakes and most nutrient intakes (p=0.0468). Therefore, it is crucial to increase dietary fiber and calcium intake and decrease consumption of sugars, fats and sodium through diverse eating of food groups to ensure balanced nutrition of subjects.

        In this study, the Korea National Health and Nutrition Examination Survey in 2016 examined the nutrient and food intake of women in their 20s and 30s according to the number of meals a day, and the results were as follows: The study included 256 women in their 20s and 474 women in their 30s. Women in their 20s and 30s ate two meals a day, indicating that the notion of three meals a day was gradually changing to two to three meals a day. Those in their 20s and 30s who eat one, two or three meals a day were consuming less than the estimated energy requirement of the DRI for Koreans 2015. The vitamin A and C were eating less than the recommended intake in all meals. In the case of minerals, calcium was taken less than the recommended intake in all meals, but sodium was taken above the goal intake in all groups. Women in their 20s and 30s must reduce their intake of saturated fatty acids and sodium, and increase their intake of vitamins A, C, calcium, and potassium. Women in their 20s and 30s drank a lot of coffee, ate baechu-kimchi and rice frequently per week.

        This study aim to evaluate dietary quality and nutritional status according to the consumption of health functional food using Nutrition Quotient for Korean elderly (NQ-E) for 288 elderly people attending senior welfare centers in Gyeonggi-do. The questionnaire consisted of items about general information, health functional food, and Nutrition Quotient for Korean elderly (NQ-E). Chi-squared test, Fisher's exact tests, and Analysis of Covariance (ANCOVA) were performed using the SAS program ver. 9.4. Among the male and female subjects, the female subjects consumed more health functional food. The results of the dietary quality and nutritional status difference according to the intake of health functional food showed significant differences only in the areas of variety and abstinence among nutrition quotient factors for men, while no significant differences were observed in any of the nutrition quotient factors for women. In conclusion, focused-nutrition education program and useful guideline is needed for promoting adequate consumption of health functional foods in elderly.

        본 연구에서는 식품섭취량 데이터를 활용하여, 한국인의 식습관을 분석하고 관리방향을 제안하였다. 국민건강영양 조사의 원시자료를 활용하고, 국내 대표적 식품 분류체계인 식품공전을 반영해서 품목수 839개(세부품목수 1,419개)를 대상으로 실시하였다. 일일 총 식품섭취량은 1,585.77 g/day 이고, 그 중 원재료식품은 858.96 g/day(54.2%), 가공식품은 726.81 g/day(45.8%)로 산출되었다. 식품군별 식품섭취량은, 곡류가 가장 높은 비율을 차지했고, 식품섭취량 상위15위 식품군 중 90% 이상의 대상자가 섭취하는 목록으로는 곡 류(99.06%), 근채류(95.80%)로 나타났다. 품목별 분석에 의하면 주요 다소비(일일식품섭취량 1%이상 섭취, 158.6 g/ day) 및 다빈도(일일평균 국민 25% 이상 섭취, 5,168명) 품목은 쌀, 배추김치, 사과, 무, 달걀, 고추, 양파, 밀, 두부, 감자, 오이, 돼지고기로 산출되었다. 섭취빈도 중심의 상위순위 목록은 주로 한식양념 재료들이 포함되었다. 김치류는 배추김치(64.89 g/day)의 섭취량 비율이 67%로 가장 높게 나타났다. 주류의 경우 섭취량 및 섭취빈도 모두 상위 5위 안에 포함되어 있으며, 세부적인 섭취량은 맥주 (63.53 g/day), 소주(39.11 g/day), 막걸리(19.70 g/day) 순으로 높았고, 섭취빈도는 소주(11.3%), 맥주(7.2%), 청주(6.6%) 순으로 높게 산출되었다. 2010년부터 2015년도 식품섭취 량 추이에서 곡류는 꾸준하게 감소하고, 음료류는 다소 증가하는 추세였다. 주류의 섭취빈도에서는 일부 종류인 막걸리, 와인, 청주, 복분자주에서 년도별로 감소하는 경향 이었고, 김치류도 감소하는 추세였다. 식품 섭취패턴은 체내노출과 직접적인 영향이 있으며, 식품섭취량이 높은 식품과 섭취빈도가 높은 식품 모두 관리가 중요하지만, 우 리나라 섭취 특성을 고려하여 국내에 적합한 안전관리 방안 마련이 필요하다. 식품 섭취로 인한 유해오염물질의 노출량 관리를 위해서 다소비 식품은 섭취용량과 관련이 높으므로 식품의 오염도 관리 중심으로 다빈도 식품은 섭취 기간과 관련이 높으므로 섭취시 장기노출로 인한 체내축적 중심으로 접근하는 것을 권장한다.

        The objective of this study was to analyze labeling improvements and evaluate willingness to pay for health functional foods with a focus on the caution for intake. For this study, we conducted a survey on health functional food intake behavior, confirmation and improvements of cautions for intake. We assessed the willingness to pay for improvement of the caution for intake. Consumers anticipate improved immune function, and fatigue improvement after consumption of health functional foods. They mainly checked the function components related to efficacy and effectiveness, ingredients and their contents, ingestion amount and method, expiry date and best mode of storage, product name, and cautions associated with ingestion of health functional foods. They has been difficulties in obtaining sufficient caution information for intake from the current labeling method. Therefore, it is necessary to improve the labeling of caution for intake. The analysis indicated that about 5.14% of the respondents were willing to pay more if new labeling was introduces. However, there is still controversy over their safety, which is damaging to the consumers. Therefore, by providing consumers with accurate and detailed information on cautions for intake, it can contribute to securing safety and improving the quality of health functional foods.

        This study examined the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intake of college students before and after nutrition education. A total of 44 college students were recruited and a questionnaire survey was conducted. Dietary nutrient consumption was obtained from the one day 24-hr recall. Scores on ‘Concerns about health (p<0.05)’, ‘Regular exercise (p<0.01)’, and number of steps (p<0.001) were significantly higher after-training. The dietary attitude (31.3 vs. 33.7, p<0.01) and food habits (53.5 vs. 59.7, p<0.01) were significantly higher after-training. The scores on ‘Eating a lot of food that I want to eat is more important than nutrition (p<0.01)’, ‘I am interested in information on nutrition and health (p<0.01)’, ‘Have three meals a day (p<0.01)’, ‘Have breakfast regularly (p<0.01)’, ‘Drink milk every day (p<0.001)’, ‘Have fruits every day (p<0.05)’, and ‘Apply nutrition knowledge to daily life (p<0.001)’ were significantly higher after-training. Among the nutrients intakes, the protein (p<0.05), vitamin C (p<0.01), and calcium (p<0.001) were significantly higher after-training. Nutrition education improved the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intakes.

        This study assessed effective strategies to reduce the sodium intake among consumers using pork cutlet sauce as a model food system. Original pork cutlet sauce and sodium-reduced sauce (29% reduced by a salt substitute) were analyzed to characterize the sensory properties using descriptive analysis. The effects of sodium-reduction of the sauce, consumer type (nutrition teachers vs. general consumers), information related to the sodium content, serving method, and consumer’s health, taste and sodium-related attitudes on the consumer’s preference, perception, and intake of the sauce were analyzed using a consumer test. In descriptive analysis, the original and sodium-reduced sauce showed similar sensory characteristics but did not differ in saltiness. In the consumer test, there were no significant differences in the overall preference levels between the two sauces. On the other hand, there were significant differences in preference and perception between nutrition teachers and general consumer groups, which were due largely to their age as well as the health and sodium-related attitudes and nutritional knowledge differences. Sodium-reduced information decreased the perceived saltiness intensity. In addition, reducing sodium intake by serving pork cutlet sauce in a bottle can be an effective strategy because this serving method increased the acceptance and induced the smaller intake of sauce.

        The objective of this study is to provide direction in the improvement of sodium labeling in an effort to reduce consumption. We surveyed confirmation and importance of food labeling and nutrition information and we also analyzed the willingness to pay on new nutrients labeling. Consumers checked the sell-by-date, product name, method of intake, but not nutritional information. They also checked for calories and carbohydrates but they were not interested in sodium, sugar, and trans fat which are health hazard nutrients. It is necessary to improve nutrition labeling, because consumers are experiencing difficulties in obtaining sodium information under the nutrition labeling system. Consumers will pay about 0.66% more if new sodium labeling is introduced. In conclusion, food labeling system can be improved by smooth and efficient access of information. for health-hazard nutritional components, such as sodium, it is important to introduce policies that reduce their intake. This can be done by providing consumers with clear and concise information. The social costs of high sodium intake could be reduced, hence improving the national health.

        The purpose of this study was to provide the basic information for developing sugar related nutrition education programs for children in child-care facilities and their parents. The results showed that the total score of parent’s dietary attitudes towards sugar-rich foods was 17.94 and the total score of parent’s nutritional knowledge was 3.67. A positive relationship was observed among items of parent’s dietary attitudes (p<0.01), and some correlations were also observed between the total score of parent’s nutritional knowledge and the total score of parent’s dietary attitudes (p<0.05 or p<0.01). The total average score of children’s eating behaviors for sugar-rich foods was 23.98, and the item with the highest score was ‘I often eat candy, chocolate and jelly’. For children, food that received the highest preference was chocolate, and soft drinks received the lowest preference. The most frequently consumed food item was candy or caramel, and the least frequently consumed food item was soft drinks. There were positive correlation among the total score of children’s eating behaviors, food preferences, and food intake frequency (p<0.01). When parent’s tried to reduce the sugar intake, children’s total score of eating behaviors (p<0.001) and food intake frequency (p<0.001) for sugar-rich food was lower. We conclude that parent’s dietary attitudes may influence children’s eating behaviors, food preferences, and food intake frequency for sugar-rich foods.
