        This study was conducted to investigate the effects of different active gluten and rice Nuruk(Asp. oryzae, Asp. kawachii rice Nuruk) levels on the quality properties of steamed rice breads. Enzyme(amylase and acidic protease) activity of Asp. oryzae rice Nuruk is higher than Asp. kawachii rice Nuruk. Among the loaf volume of active gluten that were tested (10, 13, 15 and 17%) an active gluten loaf volume of 15% produced the best steamed rice bread. As a result of the loaf volume test steamed rice bread with rice Nuruk was decreased than steamed wheat bread. Regarding color, all treatments produced significant differences. The L value was decreased in steamed rice bread more than in steamed wheat bread, and a and b values were increased, respectively. Hardness, gumminess and chewiness of SRB-2, 3, 4 were lower than SWB-1 but springiness were higher. According to the sensory evaluation of steamed rice bread, color, flavor, and uniformity of pores were the highest in the steamed wheat bread, and the chewiness and texture were good in the steamed rice bread containing added active gluten and rice Nuruk. In this study, addition of rice Nuruk in steamed rice bread did not increase loaf volume, but had an advantage for overall desirability.

        활성글루텐이 첨가된 쌀 식빵 프리믹스를 5, 25, 35oC의 저장온도에서 4개월 동안 저장하면서 이화학적, 반죽특성, 호화특성 및 제빵특성에 미치는 영향에 대하여 조사하였다. 쌀 식빵 제조 시 활성글루텐의 적정 첨가량은 14-17%로 판단되었다. 쌀 식빵 프리믹스의 pH, 침전가 및 Pelshenke 값은 저장기간이 증가함에 따라서 감소하는 경향을 보였으며, 특히 Pelshenke 값은 35oC 저장시에 그 수치가 현저히 감소하였다. 쌀 식빵 프리믹스의 수분 함량은 변화가 적었으나, 보수력과 알칼리수 흡수율은 저장온도가 상승함에 따라서 증가하는 경향을 보였다. Mixograph의 peak time과 width at 8.00 min은 저장온도가 상승함에 따라서 유의적으로 증가하는 현상을 보였다. Rapid Visco Analyser에 의한 호화 특성 중 peak viscosity와 setback은 저장 온도가 상승함에 따라서 다소 증가하는 현상을 보였으며, 저장기간이 길어짐으로써 유의적으로 증가하였다. 프리믹스로 제조한 쌀 식빵의 비용적은 저장전에 비해 저장 중 온도가 높아짐에 따라서 그 감소 폭이 컸으며, 쌀 식빵의 경도는 증가하여 쌀가루 전분의 노화가 밀가루에 비해 보다 빠른 속도로 진행되는 것으로 나타났다.

        In this study, the rheological properties of doughs blended with 5% to 20% fermented rice bran (FRB) were investigated using farinographs, amylographs, extensographs, and SEM. In the farinograph analysis, the water absorption decreased and the replacement ratio of FRB increased over the time of development of the dough. The stability time of the dough was shortened, and the degree of softening decreased with added volume of FRB. The amylograph analysis showed that the temperature at the beginning of gelatinization showed a tendency to increase with increasing replacement ratio of FRB, but the gelatinization temperature showed no significant difference between the FRB-added groups and control group. The extensograph analysis showed that when the replacement ratio of FRB was over 10%, the extension of the dough decreased while the resistance was increased. In the SEM analysis, the added dough with less than 10% FRB had similar characteristics in gluten matrix and gas bubbles to those of the control of wheat flour alone. It was concluded that an added FRB volume of below 10% is most suitable for bread making.

        활성글루텐을 첨가한 쌀가루에 검의 첨가가 쌀가루의 신속점도측정기(RVA) 호화양상과 farinograph 반죽특성에 미치는 영향을 조사하였다. 검의 첨가에 의해 쌀가루의 RVA 최고점도는 증가한 반면 setback은 약간 감소함을 나타내었다. 활성글루텐을 첨가한 쌀가루에 검의 첨가는 farinograph 수분흡수율을 증가시키고 반죽의 안정도를 증가시켜 반죽을 강하게 하는 효과를 부여하였다. 쌀가루에 활성글루텐을 14% 첨가하고 검, 유화제 및 효소제를 복합처리하여 쌀빵을 제조한 후 쌀빵의 부피와 저장 중 경도변화를 조사하였다. 쌀가루에 첨가하는 활성글루텐의 양이 감소함에 따라 쌀빵의 부피가 감소하였지만 검, 유화제 및 효소제를 복합첨가 함으로써 쌀빵의 부피를 현저히 개선시킬 수 있었다. 활성글루텐만을 첨가한 쌀빵은 저장 중에 경도가 급격히 상승하였으나 검, 유화제 및 효소제를 복합첨가하여 제조한 쌀빵은 저장 중에 경도의 증가 폭이 현저하게 감소함을 나타내었다. 따라서 적절한 검, 유화제, 효소제의 복합처리는 쌀빵의 부피와 경도 변화 등 쌀빵의 품질에 매우 긍정적인 영향을 주는 것으로 평가되었다.

        The purpose of this study was to survey the current status of bread menus at school, business and industry (B & I), and military foodservice operations and to analyze dietitians' perceptions of applying rice bread in foodservice menus. A questionnaire, which was developed by content analysis, situation analysis, and in-depth interview, was distributed to 183 schools, 31 B & I operations, and 26 air force dietitians. In the school and B & I foodservices, wheat bread was used much more than rice bread and serving frequencies of morning rolls and sliced bread were higher. The military foodservices, however, served much more rice bread as burger buns than the other groups. For the school and B&I operations, consumer preference for wheat bread was perceived as high. In contrast, soldiers preferred rice bread to wheat bread in the military foodservices. The recognized advantages of using rice bread were different among the three groups. The military dietitians perceived the main advantage of using rice bread as an increase of rice consumption, while the school and B & I dietitians viewed it as promoting a healthy image. In all groups, the primary difficulties for using rice bread were the higher cost of rice bread as compared to wheat bread and a lack of facilities (e.g. oven). The military dietitians had the highest levels of positive and active interest as well as intention and opinions toward using rice bread. On the other hand, the school and B & I dietitians had very positive perceptions of rice bread but did not actually apply it in their foodservice menus. Overall, the results of this study suggest that the development of diverse menus using rice bread along with government support of its use, including facilities with ovens as well as rice bread subsidies, should be carried out for on-going expansion of the rice bread supply.

        This study investigated the feasibility of the bread making process with the mixture of the functional rice flour. The bread was manufactured with 20, 30 or 40% functional rice flour with increasing and wheat flour. Gelatinization characteristics of the rice starch was examined by differential scanning calorimetry(DSC). Coated with soluble dietary fiber rice showed the highest gelatinization enthalphy among functional rices and other functional rices were similar to normal rice. in the viscosity point of view. generally the viscosity related to the addition ratio. The most viscose case was 30% Sangwhang rice but in fermented with monascus ruber rice case, viscosity was low even with 40% case because of the transformation of the starch granules. In sensory evaluation, the highest sensory scores for the uniformity of pore size and flavor were obtained when sangwhang rice flour content was 20%. The textual study was mainly focused on the hardness, cohesiveness, adhesiveness, springiness, chewiness. Textural characteristics of functional rice bread crumb bakedwith 20% coated with soluble dietary fiber rice, 20% sangwhang was low in hardness, chewiness and gumminess. Therefore, Sangwhang rice flour 20%, Monascous ruber 20% and Coated soluble dietary fiber rice 20% were considered to be the most suitable addition ratio for the rice breads.

        Rice flour is used in many food products. However, dough made from rice lacks extensibility and elasticity, whereas that of wheat is suitable for many food products including breads. We have produced marker-free transgenic rice plants containing a wheat TaGlu-Ax1 gene encoding the HMG-GS from the Korean wheat cultivar ‘Jokyeong’ using the Agrobacteriummediated co-transformation method. The TaGlu-Bx7-own promoter was inserted into a binary vector for seed-specific expression of the TaGlu-Ax1 gene. Two expression cassettes comprised of separate DNA fragments containing only TaGlu-Ax1 and hygromycin phosphotransferase II (HPTII) resistance genes were introduced separately to the Agrobacterium tumefaciens EHA105 strain for co-infection. Each EHA105 strain harboring TaGlu-Ax1 or HPTII was infected to rice calli at a 3:1 ratio of TaGlu-Ax1 and HPTII, respectively. Then, among 210 hygromycin-resistant T0 plants, we obtained 20 transgenic lines with both TaGlu-Ax1 and HPTII genes inserted into the rice genome. We reconfirmed integration of the TaGlu-Ax1 gene into the rice genome by Southern blot analysis. Transcripts and proteins of the wheat TaGlu-Ax1 were stably expressed in the rice T1 seeds. Finally, the marker-free plants harboring only the TaGlu-Ax1 gene were successfully screened at the T1 generation.

        The characteristics of rice starch by sampling six rice cultivars for making rice bread were examined. Six rice varieties exhibited different level of amylose content and the ratio of chain length distribution within the amylopectin cluster. Especially, examination by colorimetric measurement of starch-I2 complex showed the maximum absorption wavelength was the highest in Goamibyeo. The X-ray diffraction patterns of starch granules showed the traditional "A" type, except in Goami 2 and Goami 3 and there was difference in crystalline of rice starch. There were significant difference in the changes of swelling power of rice starches through temperature. We could also found that the six rice cultivars had different levels of the hydrolysis rate by 5% glucoamylase. These results could suggest that properties of rice starch impact on the level of loaf formation and specific gravity of rice bread after baking.

        The experiment was conducted to examine the varietal variation in gelatinization of rice flour and adaptability to rice bread processing, and the interrelation among the relevant properties. IR 44 showed the lowest temperature of gelatinization onset(To ) and the highest gelatinization enthalphy(ㅿH) measured by differential scanning calorimetry (DSC). The following lower To was found with the order of Suweon 230<Pusa-33-30<T(N) 1, Daeribbyeo 1 and the next higher ㅿ.H was followed by the order of Pusa-33-30>Suweon 230. IRAT 177 revealed the highest temperature of gelatinization onset and conclusion(Tc ) and the following higher Tc was found with the order of Pusa-33-30>AC 27>Nonganbyeo. The varietal range of To and Tc was 50.0~72.5~circC and 70.2~87.4~circC , respectively. The rice materials tested can be classified by scatter diagram on the plane of upper two principal components contracted from DSC thermogram and various characteristics relevant to processing and sensory preference of rice bread by principal component analysis. AC27, Suweonjo and IR 44 among high-amylose rices showed better suitability to rice bread processing. The temperatures of gelatinization peak and conclusion of rice flour checked by DSC were significantly negatively associated with springiness of rice bread. The most properties relevant to processing and sensory preference of rice bread such as hardness, moistness, springiness, cohesiveness, specific loaf volume and distribution or size of air cell revealed the close correlation between each other.other.
