        This study was conducted to identify the choice attributes in the purchase of chocolate and to identify differences between the choices, by considering the purpose of purchase being self-gift or interpersonal gift. The preferred optional attributes considered and assessed were capacity, package, product composition, brand reputation, and sensuality. The survey included customers who purchased chocolates from June 1, 2017 to August 31, 2017. T-test was applied to verify the difference in optional attributes depending on the purpose of purchase. Our results indicate that people consider packages, product composition, and reputation for interpersonal gifts, and that Valentine's Day purchases are frequently for themselves and others' gifts. Our results will help to identify chocolate consumption behavior, and will facilitate in establishing chocolate product composition and development as well as brand positioning strategies, through factors affecting preferences based on the purpose of purchase.

        This study was conducted to determine the mixing conditions for Hibiscus syriacus L. chocolate depending on different addition ratios of Hibiscus syriacus L. and examine functionality in order to use Hibiscus syriacus L., which has excellent functionality and symbolizes Korea. To accomplish this, Hibiscus syriacus L. chocolate was manufactured by adding 0%, 2.5, 5, 7.5, and 10% of Hibiscus syriacus L. powder from the ‘Samchulli’ (Hibiscus syriacus ‘Samchulli’, which has reddish pink flower with red eye spot: SKK 14-2-72) variety to a coverture of white chocolate after which the antioxidant activity and quality characteristics were analyzed. As the amount of Hibiscus syriacus L. powder added to the chocolate increased, the chocolate color became darker, the pH decreased, and the sugar content and hardness increased. As a result of the sensory evaluation, the degree of preference increased as the amount of added Hibiscus syriacus L. powder increased to 7.5%. The degree of preference for color and flavor was the highest in the 5% added group, but the overall preference was 7.5% added chocolate. These findings demonstrate that adding Hibiscus syriacus L. powder to chocolate can increase chocolate functionality and preference and that there is a high possibility of Hibiscus syriacus L. chocolate development.

        This study assesses the interactive effect of shelf-based scarcity and shelf organisation on luxury purchases. Previous studies have addressed multiple factors surrounding shelf based scarcity (e.g. Parker and Lehmann 2011; Van Herpen et al 2014) however none has considered perceived luxuriousness as a potential explanation for the effects of shelf-based scarcity; nor have many studies used a luxury context. This study therefore examined whether product luxuriousness, product popularity, product supply and/or product quality serve as underlying mechanism of shelf-based sacristy effects. The study recruited 125 consumers and the experiment followed a mixed factorial design. The luxuriousness of the brand and the organisation of the shelf display were manipulated between subjects, whereas stock level was manipulated within subjects. Data collated consisted of both self-report and psycho-physiological methods (brainwave and facial expression) Low stock level was perceived to more tidy than medium and high stock level when the shelf display was disorganised; a significant interactive effect (Mlow = 4.06, Mmedium = 3.71 4.77, Mhigh = 2.86, ps = .025, p < .001). Significantly higher perceived product quality was reported for low stock product than high stock product (Mlow = 5.34, Mhigh = 4.79, p < .001), as participants’ perceived high stock to be restocked more frequently. Results of bootstrapping indicated that perceived luxuriousness was found to be the only significant partial mediator for the effect of stock level on approach motivation, further supported by brainwave and facial expression analysis (Indirect = .066, 95%CI = [.0043, .1362], p < .001).The direct effect of stock level remained significant after accounting for the indirect effect (Direct = .11, 95%CI = [.0117, .2091], p < .001). This study is the first to use psychophysiological methods to validate self-report findings and to examine perceived luxuriousness as a plausible explanation of the shelf-based sacristy effect.

        This study was conducted to investigate the effect of Korean red pepper extracts on physiological and sensory characteristics. The Korean red pepper extracts were added to chocolate at weight percentages of 0, 2, 4, and 6%. The sensory characteristics made with various Korean red pepper concentrations of the additives were measured as follows: color values (L-value, redness, and yellowness), total phenol, total capsaicinoid, total carotenoid, and ABTS radical scavenging activity. In sensory evaluation, significant differences (p<0.05 and p<0.01) were shown in taste, spiciness, and overall acceptability depending on the addition of pepper extracts. However, there were no significant differences in the properties of aroma and bitterness for chocolate.

        당알코올(말티톨, 소르비톨 및 자일리톨) 첨가 저 열량 다크 초콜릿 제조에서 자일리톨 첨가가 설탕 첨가(대조구)에 가장 근접하는 제품특성을 보였으며 품질이 우수하였다. 당알코올 첨가는 초콜릿 페이스트의 점성 및 퍼짐성에도 영향을 미쳐 초콜릿 제조 중의 페이스트 물성에 따른 작업용 이성이 평가되었다. 또한 당알코올 첨가는 초콜릿표면의 윤곽 및 표면으로 용출되는 미세 지방구에도 영향을 미쳤다. 초콜릿입자는 평균직경 10 μm 부근에서 peak distribution이 나타나 매우 우수한 mouthfeel을 나타내는 범위 내에 속했다. 초콜릿의 녹는점은 소르비톨(28.2℃) 첨가구를 제외한 나머지 처리구에서 거의 일치(29.5-29.9℃)하였으며 우수한 melting 특성이 확인되었다. 초콜릿의 경도는 설탕 및 자일리톨 첨가구가, snap 특성은 소르비톨 첨가구가 우수하였다. 초콜릿의 틀 부착성은 소르비톨, 말티톨 첨가구가 낮아 demoiding 용이성이 평가되었다. 당알코올 첨가는 설탕 첨가에 비해 bloom 발생 빈도를 증가시켰으나 당알코올 간의 차이는 없었다. 자일리톨 첨가구가 향(smell)을 제외한 초콜릿의 전반적인 기호특성에서 우수하였으며 설탕첨가에 가장 가까운 관능특성을 보였다. 앞으로 생산품목의 다양화에 필요한 제조조건 최적화에 관한 연구가 필요한 것으로 판단된다.

        본 연구에서는 가나슈 제조 시 사용되는 크림의 지방 종류(동물성 유크림과 식물성 크림)에 따라 함유량을 달리하여 제조하고 이의 물리·화학적 특성과 관능특성을 분석하여 지방 종류와 함유량에 따른 품질특성의 변화를 파악하였다. 대조군으로 100% 동물성 유크림을 첨가한 가나슈에서 유크림 함량의 25, 50, 75, 100%를 식물성 유지로 대체하여 시료를 제조하여 일반 성분분석, 색도, 점도, texture profile analysis, 산가, 관능검사를 실시하였다. 가나슈의 수분 함량은 5.71-6.22%의 범위로 크림의 유지방 함량이 높아짐에 따라 수분의 함유량도 유의적으로 높아지는 경향을 보였고, 조단백질은 5.04-5.73%의 범위에서 유지방의 함유량이 증가하면 점차 증가하는 것으로 나타났으나 유의적인 차이는 나오지 않았다. 조지방은 29.49-31.77%, 조회분은 0.38-0.40%로 나타났다. 색도를 분석한 결과 명도와 황색도는 MC0 시료가 가장 높게 나타났고 MC100 시료가 가장 낮아 유의적인 차이가 있었다. 점도는 수분함량에 따른 차이를 나타내었는데 수분함량이 가장 높았던 MC100 시료가 가장 낮은 점도를 보였고, 식물성 유지의 함량이 증가하면서 점도도 증가하였다. 이는 는 것으로 나타났다. 기계적 품질특성은 경도(hardness)는 식물성 유지의 첨가량이 증가하면서 유의적인 차이를 보이며 증가하였고, 탄력성(springiness)과 씹힘성(chewiness), 부드러움(softness)은 유의적인 차이를 보이지 않았다. 산가는 저장기간이 길어질수록 증가되었으나, 불포화지방의 함유량이 높은 유크림의 비율이 높은 경우 전체적으로 높은 결과를 나타내어 식물성 유지 첨가에 따라 저장성이 높아지은 것으로 나타났다. 관능검사에서는 경도(hardness), 융해도(melting rate), 점착성(sticky), 건조성(dry), 탄력성(springiness)은 식물성 유지의 첨가량이 증가하면서 유의적으로 증가하는 경향을 보였고, 부드러움(softness)은 시료간의 유의적 차이를 나타내지 않았다. 전체적으로 볼 때 가나슈 제조 시 사용하는 식물성 유지의 함량이 높아질수록 경도(hardness), 점착성(sticky), 탄력성(springiness)과 같은 특성이 강화되어 시료의 견고성 이 높아지는 것을 확인할 수 있었고 실제로 저장성 실험에서 산가의 증가도 낮은 수준을 보여 저장성이 높아지는 것을 확인할 수 있었다. 그러나 경도와 점착성, 건조도, 거친정도의 증가로 인해 기호도 측면에서도 긍정적인지는 향후 기호도 조사를 통해 확인이 필요한 것으로 여겨진다.

        This study was conducted investigate the effect of medicinal plant extracts on physiological and sensory characteristics. The medicinal plant extracts were added to chocolate at a weight percentage of 0, 3 and 6%. Color values(L-value, redness, and yellowness), total flavonoids, DPPH radical scavenging activity, and sensory characteristics made with varying various medicinal plants concentrations of the additives were measured. In sensory evaluation, significant differences(p<0.05 and p<0.01) were shown in taste, texture, and overall acceptability depending on the addition of plant extracts, but there were no significant differences in chocolate aroma and bitterness properties.

        This study was conducted to aid in the development of the optimal recipe for chocolate with fermented and aged garlic extract (Allium sativum var. pekinense). We added garlic extract in order to increase the nutritional value of the chocolate. The optimal sensory composite recipe was determined, following Central Composites for chocolate with different levels of fermented and aged garlic extract (A) and cream (B), while analysis was performed by Response Surface Methodology, from the date that the sensory evaluation was performed. Ten experimental recipes, including 2 reference points in the composition, were selected. The compositional and functional properties were measured, and physical and sensory values were applied to the mathematical models. Perturbation plots showed the influence of each ingredient on the final product. Measurements showed significant values in lightness, sweetness, pH, hardness and cohesiveness, while sensory measurements showed significant values in color, texture, sourness, bitterness and overall quality. The optimum formulations were calculated by numerical and graphical methods, as being 34.61g fermented and aged garlic extract and 72.68g cream for each 200g chocolate. As well it was revealed that the aptitude of chocolate was more influenced by fermented garlic extract than it was by cream.

        Adding cinnamon (Cinnamonum cassia Blume) extract into the adhesive used to affix stickers to a chocolate package is an effective method for protecting chocolate products from infestation by the Indian meal moth (Plodia interpunctella Hübner). Chocolate packages treated with adhesive including 0.02% and 0.025% of cinnamon extract were not infested with the Indian meal moth for up to 30 days at 28.1℃ and 70-75% RH, whereas 100% of the packages without the extract were infested in the no-choice test. Chocolate packages treated with adhesive including 0.02% and 0.025% of cinnamon extract in the quadruple choice test were not infested with the Indian meal moth for up to 60 days at 28.1℃ and 70-75% RH, whereas 100% of the packages without the extract were infested. A panel test showed that the cinnamon extract treatment would not affect consumers’ choices.

        Physicochemical qualities and consumer acceptability of chocolate layer cake were studied with varied levels of rosemary powder at 0, 0.2, 0.4 and 0.6%. The ash content of the cake increased from 2.30 to 3.10%, as the amount of rosemary powder increased from 0 to 0.6%, and the carbohydrate content of the cake decreased as the addition of rosemary powder increased. There were no significant differences in moisture contents and pH values among the samples and the pH values of all samples were within the typical pH range of 7.5-8.0 for chocolate, layer cakes. Water loss from the control cake was greater than that from the cakes with rosemary powder supporting the suggestion that the addition of rosemary powder to the chocolate layer cake could increase moisture retention of the cake. Consumer acceptability of all the samples showed higher prefierences of more than 7 points. Rosemary aroma, mint flavor and after taste were highly positively corrεlated with the fat content. Fat and ash content of the cake, which tended to increase in proportion to the rosemary powder content, were negatively correlated with acceptance of herb flavor, sweet taste, moistness, softness and intensity of softness but positivεly correlated with intensity of herb flavor. With the results above, trials on chocolate layer cake using rosemary powder were successfully performed within the ranges tested.

        식품의 맛은 미각, 후각, 시각, 청각, 촉각에서 느낀 여러 가지 인상과 개인의 경험이나 기호가 복합적으로 적용되어 인식된다 특히, 맛을 결정하는 영향요인 중에서 시각을 통해 인지하는 색은 실제 맛을 지각하기 전에 맛에 대한 이미지를 연상시킴으로써 식품선택에 결정적인 영향을 준다. 따라서, 식품색을 적용함에 있어 식품 자체의 맛 이미지를 효과적으로 전달할 수 있는 색을 활용함으로써 소비자들이 좀더 관능적으로 선호할 수 있는 식품을 개발할 수 있을 것이다. 본 연구에서는 소비자들이 특정식품을 선택하여 구매하고자 할 때 인지하게 되는 맛의 종류와 느낌을 효과적으로 전달하기 위한 도구로써 색채를 사용하기 위해 문헌조사를 바탕으로 사례연구를 진행하였다. 사례연구는 초콜릿색에서 연상되는 맛에 관한 웹설문을 통해 진행되었다. 설문결과를 바탕으로 식품색에서 연상하게 되는 맛에 영향을 주는 요인을 추출하고, 초콜릿의 맛의 종류와 느낌의 정도에 따른 주요 색채의 경향성을 도출함으로써 시각을 이용하여 보다 정확하게 초콜릿맛의 공감각적 특성을 전달하기 위한 기초자료를 제안하였다.

        In this study, antioxidant activities and physicochemical properties of chocolate fermented with Lactobacillus plantarum CK10 were investigated. The pH level decreased from 5.26±0.02 to 3.98±0.06 during fermentation while titratable acidity increased from 5.36±0.19 to 13.31±0.34. The total polyphenol and flavonoid contents slightly increased during fermentation, but it was numerically negligible. Slight increase and decrease in the radical scavenging activities of chocolate, against DPPH-, ABTS-, and alkyl- radical, were observed during 32 hr of fermentation, but the changes were not statistically relevant. Composition ratios (% area by GC analysis) of lactic acid, xanthosine, and theobromine increased with fermentation time while hydroxymethylfurfural (HMF) and caffeine decreased after 32 hr of fermentation, in the order of xanthine (22.7%), theobrome (20.0%), lactic acid (14.9%), HMF (9.1%) and caffeine (9.0%). However, there was no remarkable changes in theobromine and caffeine contents in chocolate during fermentation.
