        오메가-3 제품의 안전성을 알아보기 위하여, 경기지역에 유통되는 20개의 fish oil과 algae oil을 원료로한 건강기능 식품 오메가-3에 대하여 EPA와 DHA의 함량과 산화 정도를 조사하였다. 산가의 결과값은 0-2.9 mg/g으로 평균 및 표준편차는 0.5 ± 0.6이며 CODEX/FAO의 기준 3.0 mg/g을 적용하였을 때 모두 적합하였으며, 과산화물가의 경우 2.6-14.1 meq/kg로 평균 및 표준준편차는 5.5 ± 2.9이며, 기준 5.0 meq/kq을 적용하였을 때 20건 중 11건이 적합하고 9건이 기준을 초과하였다. 아니시딘가는 국제적인 기준을 20을 적용하였을 때 18건이 적합하였으며 2건이 기준을 초과하였다. 총 산화가는 기준 26을 적용하였을 때 16건이 적합하였으며 4건이 기준을 초과하였다. 오메가-3의 산화에 대한 안전성 확보를 위하여 새롭게 설정되어 3월부터 시행되고 있는 산가 및 과산화물가에 대한 기준 올해 11월 시행예정인 아니시딘가와 총산화가에 대한 시행은 매우 바람직하며 지속적인 감시를 통하여 산화로부터의 안전성 확보에 기여할 것으로 보인다.

        The purpose of this study was to determine the optimal mixing ratio of Alaska Pollack (Theragra chalcogramma) and olive oil in the preparation of sausage. The experiment was designed according to the central composite design for estimating the response surface, which demonstrated 10 experimental points including 2 replicates for Alaska Pollack and olive oil. The physical, mechanical and sensory properties of test materials were measured. A canonical form and perturbation plot showed the influence of each ingredient on the final product mixture. Measurement results of the physical and mechanical properties showed a significant increase or decrease in the following properties: dough sweetness (p<0.05); sausage L (p<0.05), a (p<0.001), and b (p<0.01); hardness (p<0.01), chewiness (p<0.05), and gumminess (p<0.01). Also, the sensory measurements showed a significant improvement in color (p<0.05), flavor (p<0.01), taste (p<0.001), tenderness (p<0.05), chewiness (p<0.01), mositness (p<0.05), and overall quality (p<0.01). As a result, the optimum formulation by numerical and graphical methods was calculated as Alaska Pollack 35.74 g and olive oil 7 g.

        This study estimates the classification criteria which distinguishes the types of omega-3 health functional foods, fish oils and fish oil usages through 13C-NMR spectra and fatty acids contents analysis. The major fatty acids of omega-3, eicosapentaenoic acid (EPA, C20:5) and docosahexaenoic acid (DHA, C22:6) are being analyzed. 10 ethyl ester (EE) forms and 10 triglyceride (TG) forms are the most common types of fish oils for 20 omega-3 products. Gas chromatography (GC) analysis generally shows the matching EPA and DHA contents of the products listed on the notation. But EE form contents of EPA and DHA are higher and are more varied than the TG form. Most of the samples of EPA/DHA ratio show different content ratios of indicated on the products when comparing with standards. The 13C-NMR analysis of EPA and DHA on sn-1,3 and sn-2 carbonyl peak position with fish oil triglycerides display whether the reconstituted triglycerides (rTG) are being confirmed or not. As a result of the 9 TG form, the 10 TG products showed similar values: EPA sn-1, 3; 13.46~15.66, sn-2; 3.00~4.52, DHA sn-1, 3; 2.43~4.40, sn-2; 3.84~6.36. But one product showed lower contents (EPA: sn-1, 3; 5.88, sn-2; 2.86, DHA sn-1, 3; 2.29, sn-2; 5.95) of EPA, thus it can be considered a different type of oil and only matched six products according to the label. This study is intended to provide basic materials which identify the status for the types and quality of omega-3 fish oil products according to fatty acids profiles and the 13C-NMR spectrum confirmed the location specificity of EPA and DHA.

        Our objective in this study is to assess the safety of docosahexaenoic acid (DHA) fortified milk of dairy cows fed feeds containing protected fish oil treated with formaldehyde by analyzing formaldehyde concentration in commercial milk and DHA fortified milk of dairy cows fed formaldehyde treated feed. There are 3 milk samples in this study: Commercial milk (CM), DHA fortified milk for Kid (DHA-K) and DHA fortified milk for Baby (DHA-B). We confirm the fresh quality of these three samples by physicochemical tests. In fat content result, three groups are significantly different at the p < 0.05 by Duncan's multiple range test, but fat content of group DHA-K is about half the level of the other two groups. Protein content of group DHA-K is 1% higher than other two groups. According to the analysis result of DHA content of DHA fortified milk, DHA content of DHA-B is two-fold higher than DHA-K. Similar pattern was seen in the intake based on age. According to HPLC analysis result of formaldehyde concentration in milk, commercial milk and DHA fortified milk are between 0.013 ppm and 0.057 ppm which is formaldehyde standard level in fresh milk settled in WHO (World Health Organization). Three groups have no significantly differences at the p < 0.05 by Duncan’s multiple range test. For this reason, it can be concluded that there is no transition of formaldehyde from dairy cows fed formaldehyde treated feeds to its produced milk. Safety about formaldehyde of DHA fortified milk of dairy cows fed formaldehyde treated feeds is considered similar to commercial milk.

        This study was conducted on the properties of exhaust emissions of diesel oil and fish oil blended with diesel oils using a direct injection diesel engine at different loads, and on the conditions of carbon deposits of diesel oil and 40% blend oil in the combustion chamber after 20 hours operation at 1]2 load. The properties of exhaust emissions by fish oil blended with diesel oils showed no significant difference with diesel oil. However, soot emissions decreased, increasing the ratio of fish oil. Carbon deposits by fish oil blended with diesel oils were high level compared with diesel oil, which might be overcome by preheating of fuel oil and operating conditions.

        It was tested the possibility that EPA and DHA could be separated from fish oil fatty acid ethyl ester(FAEE) in the supercritical carbon dioxide rectification method. Experiments were carried out in the 1800mm tall and temperature gradient packed rectification column at the pressure of 100bar and carbon dioxide flow rate of 52.43NL/min. Experimental results showed that this method was useful to separate the FAEE by the relative volatility of the components. The maximum attainable concentration of EPA, DHA and both of them in product were 41%, 43% and 57% respectively in this rectification column using raw fish oil feed.

        Separation of EPA and DHA from fish oil fatty acid ethyl ester (FAFE) by urea adductive crystallization method was carried out in the supercritical carbon dioxide (SC CO2) as a solvent. Our results showed that SC CO2 is a good candidate as a solvent in the urea adductive crystallization to separate FAFE by the number of unsaturated bonds. Compared to the separation process using methanol. SC CO2 yielded better performance in the overall selectivity of EPA and DHA. The effect of process variables on separation of EPA and DHA was discussed in detailed. A hybrid technology of SC CO2 fractionation and urea adductive crystallization with SC CO2 was conformed as a viable process to separate and concentrate EPA and DHA from fish oil.

        The combustion characteristics of diesel oil and fish oil blended with diesel oils were investigated at various blending rate of fish oil in diesel engine and constant volume combustion bomb. The evaporation and combustion duration of diesel oil and fish oil blended with diesel oils were respectively different high and low temperature. The dependence of ignition delay on the temperature was different in high and low temperature ranges which were divided at the 773K. The ignition delay become longer than that of diesel oil as the blending rate of fish oil increases, and its difference were larger at different loads. The densityof smoke was lower as the blending rate of fish oil increases, and the rate offuel consumption showed no significant difference between diesel oil and fish oil blended with diesel oils.

        The combustion characteristics, ignition delay, p-t, dp/dt, Q-t of diesel oil and fish oil blended diesel oils was investigated according to pressure and temperature in a constant volume combustion bomb. The results are as follows: 1) The influence of temperature and pressure on the ignition delay was almost constant in high temperature, regardless of the blending rates, and the ignition delay was shortest in the 60% blend. 2) The maximum pressure was high in order of with pure diesel oil, with the 20% blend and the 60% blend. 3) The rate of pressure rise was high in order of with pure diesel oil, with the 20% blend and the 60% blend. The rate of maximum pressure rise was significantly higher with pure diesel oil than with two blends. 4) The amount of accumulative heat release was large in order of with pure diesel oil, with the 20% blend and the 60% blend.

        In order to understand and explain the spary combustion, it was necessary to understand the disintegration mechanisms of liquid jet. To understand the disintegration mechanisms of liquid jet, the disintegration phenomena and uniform droplet production regions of testing liquid jet was investigated by means of longitudinally vibration capillary nozzle, which was injected the testing liquids. The testing liquids were light oil and light oil and light oil blended with 25wt% fish oil (File fish oil, Sardine fish oil, Alaska pollac oil) The results can be summarized as follows: 1. The uniform droplet phenomena have been changed according to the frequency of capillary tube, the jet velocity and physical properties of testing oils. 2. Within the region of uniform droplet, Reynold number was increased as Weber number increases. 3. The lower limit of wave length in which uniform droplet was produced 0.8d which was lower than Rayleigh wave length 4. The light oil blended with file fish oil which has lower viscosity and surface tension had the widest uniform droplet production region on the frequency and velocity among testing oils. But light oil blended with sardine fish oil were similar with light oil in the uniform production region.

        In this paper, combustion characteristics and engine performance varying with blending rate of fish oil using five test fuels, e.g.pure diesel oil and four types of sardine-oil-blended diesel oils, their blending rates by weight being 20%, 40%, 60% and 80% respectively, and operating condition of engine, were investigated experimentally both in the constant volume combustion bomb and in the engine. The results are summarized as follows: 1) In the bomb, the influence of temperature on ignition delay of sardine-oil-blended diesel oils was larger than that of pure diesel oil, and it tended to increase as the blending rate of fish oil increase sardine-oil-blended diesel oils. As far as the influence of pressure on ignition delay concerns, there was no significant difference with all the test fuels. 2) In the engine, the ignition delay of fish-oil- blended diesel oils was longer than that of pure diesel oil, and it tended to increase as the blending rate increases. In the bomb, the ignition delay in high temperature showed no significant difference between with pure diesel oil and with fish-oil-blended diesel oils, and it was especially short with 60% fish-oil-blended diesel oil. In low temperature, however, the delay became longer as the blending rate increase. 3) The combustion duration was shorter with fish-oil-blended diesel oils than with pure diesel oil and it became a little shorter as the blending rate increases. 4) The rate of fuel consumption showed no significant difference between with fish-oil-blended diesel oils and with prue diesel oil, although calorific value of fish oil was lower than that of diesel oil. 5) Smoke density in exhaust gas was lower with fish-oil-blended diesel oils than with pure diesel oil and the higher the blending rate was, the lower the smoke density became

        In this paper, to percuss whether fish oil can substitute for marine fuel oil, the characteristics on the evaporation and ignition of 3 fish oils, Sardine oil, File fish oil and Alaska pollac oil, were investigated experimentally by suspending single fish oil droplel in hot atmosphere, and experiments on methanol and light oil were also carried out to compare the characteristics. The results abtained are summarized as follow; 1) Evaporation and ignition phenomena on the methanol and light oil by the present experimental method agreeded with the results of the earlier investigation. 2) The characteristic on evaporation and ignition of all 3 fish oils took the same pattern; in late stage of evaporation at atmospheric Temperature 550℃ droplet rapidly expanded and contracted, and then remained solid corbide, but in case of 650℃ rapidly expanded and ignitied, and then completly burned non-remained solid carbide. 3) As fish oil mixed with light oil (50% weight), in beginning stage of evaporation droplet depended on the characteristics of light oil, but in end stage depended on fish oil. 4) Ignition temperature of fish oil droplets was about 470℃, higher than about 250℃ of light oil, but atmospheric temperature to ignite droplet was about 650℃, lower than about 750℃ of light oil.

        Rapeseed cake was extracted with 80% ethanol and then fractionated with H2O (fraction I) as well as with 30% (II), 50% (III), 70% (IV), and 100% ethanol (V). Total phenolic content (TPC), 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, ferric-reducing antioxidant potential, and Trolox equivalent antioxidant capacity were in the order of fractions II > III > I > IV > V. The three fractions with high antioxidant activities and TPC (I, II, and III) were pooled and hydrolyzed by NaOH solution, resulting in 18.97 mg sinapic acid/g hydrolyzed extract and 21- and 2.2-fold increases in TPC and DPPH radical scavenging activity, respectively. Hydrolyzed rapeseed cake extracts (200, 500, and 1,000 ppm) and catechin (200 ppm) as a comparison were added to 10% fish oil-in-water emulsion, and their effects on oxidative stability were investigated by measuring hydroperoxide values (PV) during refrigerated storage. PVs were significantly lower in the emulsions with added hydrolyzed extract as compared to the control (p<0.05) and significantly decreased with increasing extract concentration (p<0.05) over a period of 29 days. The emulsion added with hydrolyzed extract showed higher PV than that added catechin at the same concentration (200 ppm) during 13-22 days (p<0.05), but after then, the PV was not significantly different (p>0.05). This study indicates that hydrolyzed rapeseed cake extract rich in sinapic acid may inhibit oxidation in a fish oil-in-water emulsion in a concentration-dependent manner.

        본 연구에서는 DHA-enriched fish oil 과 대두유를 비율(w/w)을 달리하여 반응시키고 그 특성을 알아보았다. 어유의 비율이 증가할수록 trilinolein(LLL) peak는 감소하였고, 새로운 피크의 형성은 점차 증가하였다. 재구성 지질(어유 : 대두유 = 5 : 5, w/w, , 240, 180 rpm)의 지방산 조성 분석 결과 대두유에서 볼 수 없었던 DHA가 약 13% 증가한 반면, linoleic acid는 24.17%
