        Consumer demand for imported and craft beer is increasing. Almost all the malt used by craft beer companies is imported. This study sought to develop a malting technology to expand the use of domestic barley, the main raw material for beer, and to examine its influence on the quality of domestic malt. The Hopum cultivar of beer barley was purchased and used at the Jeollanam-do Seed Management Center. A pilot-scale malting facility built by the National Institute of Crop Science was used. One sack (40 kg) of barley was sieved through screening sieves, and the barley was classified according to size (3.1, 2.8, 2.5, 2.2, and 2.2 mm), with the size-related composition being 18.1, 48.9, 23.3, 6.4, and 1.0%, respectively. The malt yields were 89.0, 87.6, 86.6, 82.2, and 76.1%, respectively. The coleoptiles elongation decreased as the barley size decreased. The protein content of malt tended to be high at small particle sizes of 2.2 mm. The soluble solid content of wort prepared from malt revealed good values of 17.4-17.5oBx, except for 15.3oBx for particles <2.2 mm in size. According to barley size in the malting process, these findings should be valuable quality indicators of malt.

        The malting process of rice (OM4080 variety from Mekong Delta Rice Research Institute) was studied under pilot condition plan by means of the second-order experimental design. Processing parameters, such as the steeping time (0-60 hrs), steeping temperature (5-45℃), germination time (0-8 days), germination temperature (5-45℃) and gibberellin concentration (0-2 mg/kg) were investigated. As a result, all germination conditions, especially germination time, germination temperature, and gibberellin concentration had a significant effect on the malting loss, amylase activity and starch content. The protein content was not clearly affected by any conditions. The optimum conditions for malting process (with highest amylase activity) were as follows: 30 hrs of steeping time, 30-35℃ of steeping temperature, 5-5.5 days of germination time, 25℃ of germination temperature, and 1.5 mg/kg of giberrellin concentration.

        유색보리를 맥주의 원료로 이용하기 위하여 맥아 및 양조 특성을 검정한 결과를 요약하면 다음과 같다. 1. 자색 겉보리, 자색 쌀보리 및 청색 쌀보리의 안토시아닌은 침맥 20시간 후 약 30%, 22% 및 80%가 잔존하였다. 2. 일반적인 제맥 조건으로 제조된 자색보리 맥아는 안토시아닌 성분이 거의 소실되었으나 청색보리는 58% 정도 잔존하였다. 3. 흑색보리는 일반적인 제맥 및 당화 조건에서 색소성분이 손실되지 않았으며, 맥즙의 색도는 종피색의 농담이 아니라 가용성 질소 함량이 많아짐에 따라 진해지는 경향을 나타내었다. 4. 자색과 청색보리 맥아로 제조된 맥주에는 안토시아닌 성분이 존재하지 않았으나, 호품보리 맥아로 만든 맥주보다 색도가 높았다.

        Seed storage proteins of different solubility were extracted and denatured subunits of each protein were evaluated with malting barley quality parameters. Its been known that each subunit of seed storage protein encoded by each gene and subunit profiles were highly related to end-use quality in cereals. The purpose of this study is to provide selection criteria for high quality malting barleys with aid of bichemical-genetic information. Total 13 regional test lines and three locations (Naju, Jinju, and Jeju) were incorporated in this study. Albumin and hordein were extracted, denatured, and separated in 12% SDS-PAGE. Presence and absence of subunits of each protein were scored. Dendrogram (using XLSTAT program) was constructed to evaluated the relatedness of lines. The correlation between band profiles and quality test were assessed through Agglomerative Hierarchical Clustering (AHC) for statistics analysis. Hordein subunits can be classified into four groups, A, B, C, and D group. In general, hordein fractions contribute higher than albumine to determine malting quality. Specific molecular weight ranges (97.4-31.0, 66.2-31.0, and 45.0-31.0 kDa) of subunits were highly correlated with malting barley quality parameters. The subunit information would be directly incorporated in providing selection criteria for high quality malting barley in the malting barley breeding program.

        This study was conducted to investigate the relationship between yearly variations of climatic elements and yearly variations of productivity in malting barley. In addition, correlation coefficients among yield and yield components were estimated. The data of yield and yield components were investigated for 10 years from 1991 to 2000. The meteorological data gathered at the Yeosu Weather Station for the same period were used to find out the relationships between climatic elements and productivity. Yearly varation of the amount of precipitation in December and January were large with coefficients of variation(c. v.) of 97.9, 51.3%, respectively, but the variation of the maximum temperature and minimum temperature in April were relative small. Yield, weight of 1,000 grains and culm length were greatly with c. v. of 37.3, 49.3 and 41.3%, respectively. spike length and number of spikes show more or less c. v. of 3.8, 24.7% respectively and number of grains per spike show still less variation with c. v. of 9.4%. Correlation coefficients between temperature of mean, maximum and minimum in February and seed yield and yield components were positively significant at level of 5.1%, respectively. Correlation coefficients between precipitation of April and seed yield were positively significant correlation at the level of 5.1 %, respectively, but the duration of sunshine in April and seed yield were negatively significant at the level of 5.1%, respectively. Correlation coefficients of those, yield components and yield, culm length, spike length, number of grains per spike, number of spikes per m2, weight of 1,000 grains and seed yield were positively significant at the level of 5.1 % respectively.

        국산 맥주보리의 품질향상을 위한 육종을 도모하기 위하여 농촌진흥청 영남농업시험장에서 보유하고 있는 맥주보리 유전자원 59품종 및 계통을 중심으로 원맥 및 맥아의 품질분석을 실시하여 품질이 우수한 자원을 선발하여 품질향상을 위한 육종소재로 이용할 목적으로 수행하였다. 1. 원맥의 단백질함량은 평균 12.3% (10.7-14.9%)를 나타내었으며, β-글루캔함량은 3.5-5.8%로 평균 4.6%였다. 2. 맥아신장도, 불발아율, Friability, 여과시간, 맥즙추출율, 콜박지수 및 효소력가는 품종간 유의 차가 인정되었으나, 그 밖의 형질은 차이가 없었다. 3. 15개 품질관련 형질간의 상관분석 결과, 원맥의 단백질 함량이 높을수록 맥아 단백질(0.800**)은 상대적으로 증가하지만, 당도(--0.578**). Friability(-0.554**), 맥즙추출율(-0.592**) 및 콜박지수(-0.681**)등은 낮아져 품질을 저하시키는 고도의 부의 상관이 인정되었다. 4. 맥아의 단백질함량이 높아짐에 따라서 추출을(-0.774**)과 콜박지수(-0.778**)가 현저하게 감소되는 등 품질저하의 원인이 되었다. 5. 본시험에서 추출율이 80% 이상이면서 콜박지수 및 효소력가 등 종합적으로 품질이 우수한 품종 및 계통은 외국품종으로서 Viva, Nishino chikara, Kinukei 9 및 Kinukei 12 의 4품종 및 계통과 국내육성 품종으로서 사천6호와 진양보리였다
