Recently, there is growing interest in studying the dietary patterns that affect the risk of circulatory system diseases (CSDs). We investigated the relationship between CSDs and dietary patterns through a follow-up study in Korea (2001-2016). The participants of this study were obtained from the Korean Genome and Epidemiology Study (KoGES). This study was a large community-based cohort study (the Ansan-Ansung areas) conducted to assess the effects of various factors, especially diet, on the onset of chronic diseases among the Korean population aged 40-69 yrs. Baseline data were collected from 2001 to 2002, and follow-up studies were performed every 2 yrs, with over 7 follow-up studies performed (2015-2016). Three dietary patterns were identified using factor analysis: “vegetable and seafood (men)/soup and stew (women)” pattern, “sweet foods and breads-rice cake” pattern, and “multigrain rice and cooked white rice” pattern. None of the dietary patterns were significantly associated with the risk of CSDs in either men or women. Our follow-up study is meaningful as it investigated whether the dietary patterns of individuals according to sex affects the development of CSDs.
In this study we compared the cognitive function (Mini-Mental State Examination for Dementia Screening: MMSE-DS) and nutrient intake of elderly women with dementia in a long-term care facility (EW-LCF) and a day-time care facility (EWDCF). This survey was conducted from July 2015 to May 2017 on 73 elderly women with dementia (47 women in LCF and 26 women in DCF) in the city of Incheon. The data obtained from interviews with the subjects and caregivers were analyzed using the SPSS 20.0. The total score of the MMSE-DS and intakes of most nutrients in the EW-LCF were significantly lower compared to the EW-DCF (p<0.05). The nutrient adequacy ratios (NAR) of protein, vitamin A, C, B6, B12, thiamin, riboflavin, niacin, folic acid, calcium and phosphorus in the EW-LCF were significantly lower compared to the EW-DCF (p<0.05). However, the indexes of nutritional quality (INQ) of vitamin C, B6, thiamine, niacin, calcium, magnesium, and iron in the EW-LCF were significantly higher compared to the EW-DCF (p<0.05). As a result, the subjects showed an unbalanced and insufficient nutrition intake status regardless of the type of care facility. Most nutrient intakes of the EW-LCF with lower cognitive function were very significantly lower compared to the EW-DCF (p<0.001). Therefore, it is necessary to assess the cognitive function and nutritional status regularly at care facilities for the elderly women suffering with dementia and to provide specialized individual nutritional management.
The consumption of high-salt foods is an independent risk factor for increased hypertension. Thus, evaluating the relationship of taste sensitivity and pleasantness of high-salt foods such as Korean jang products, would help contribute to an understanding of salty food eating behaviors of the Korean rural elderly. This study aimed to verify the association between taste sensitivity and salinity of Korean jang products, and the preferences of food groups and nutrient intake in the rural elderly. We studied 269 elderly persons (males 83, females 186) aged above 65 years, residing in the rural area, Sunchang gun Jeonbuk. For each subject, a recognition threshold of 4 basic tastes and pleasant concentrations of NaCl were estimated using the sip- and–spit method. Taste preferences, frequency of intake of food groups, nutrient intakes, and salinity and sweetness of Korean jang products (Doenjang, Ganjang, Gochujang) were assessed. No association was found between salt taste recognition threshold and optimally preferred concentration of salt and salinity of Korean jang products. However, the sweet taste recognition threshold was positively related to the sweetness of Korean jang products. Also, the salinity of Doenjang positively correlated with the frequencies of food groups and nutrient intakes. That is to say that the sweet taste sensitivity was related to the sweetness of Korean jang products, but was not sensitive to the salty taste. The salinity of Doenjang correlated with the consumption of food and nutrient intakes. Taken together, these findings suggest the need for appropriate intervention and education to reduce the salinity of Doenjang, which is an important modifiable factor contributing to reducing sodium intake in the rural elderly.
Stress has been associated with poor eating behavior and diet quality. Yet, the relationship between nutrient and food intake and perceived stress in Korean female adults has not been validated. The purpose of this study is to identify the relationship between nutrient and food intake and perceived stress in Korean female adults. This is a cross-sectional study based on the 2014-2015 Korean National Health and Nutritional Examination Survey data. This study investigated 2,010 female adults age 19~64. In this study, according to subjects' perceived stress, we classified subjects into very low-stress recognition group (VLSRG) (n=211), low-stress recognition group (VSRG) (n=1,223), high-stress recognition group (HSRG) (n=488) and very high-stress recognition group (VHSRG) (n=88). Daily nutrients and food group intake, food groups consumed (Dietary Diversity Score, DDS) were analyzed using data from the 24-recall method. The VHSRG had a larger proportion of subjects that were younger (p<0.0001), single (p<0.0001) and smokers (p<0.0001) compared to the VLSRG. Energy and food intake did not differ between the four groups. Percentage of subjects with protein (p=0.0322), vitamin A (p=0.0364) and vitamin C (p=0.0115) intake lower than the EAR (estimated average requirement) in the VHSRG were significantly lowest in the four groups. Also, food intake percentage from fruits and seaweed groups in the VHSRG were lower than other groups (p=0.0034, p=0.0015). DDS in the VHSRG (3.87) was significantly lowest in the four groups (p=0.0022). Results suggest that perceived stress in Korean female adults may by significant to consider in nutritional education programs.
This study was conducted using a self boarding questionnaire survey to investigate body image perception, dietary habits and nutrient intakes according to interest level in health of female university students in Masan area (n=302). The subjects were divided into 2 groups according to interest level in health (‘High’ group, n=101, ‘Low’ group, n=201). Body image according to BMI was significantly different regardless of interest level in health (p<0.001). The answer percentage indicated that the purpose of weight control is health, regular use of the scale, and regular exercise were significantly higher in the high group (p<0.05). Nutrient knowledge score (p<0.01) and food frequency score (p<0.001) were significantly higher in the high group (p<0.01). There were no significant differences in nutrient intake, but intake, NAR and INQ of vitamin C were significantly higher in the high group (p<0.001). Nutrition knowledge score (p<0.01), food intake frequency score (p<0.01), and INQ and NAR of vitamin C (p<0.01) were positively correlated with the interest level in health. These results will be useful as a basis for the development of effective nutrition education programs in order to increase interest level in health and apply well in real life what have learned through the correct nutrition knowledge.
The purpose of this study was to determine anthropometric measurements, dietary nutrient intakes, simple food intake frequencies, and rates of obesity in Cambodian women. A total 186 women, aged 20-69 years, living in Kampong Spue province of Cambodia and having the responsibility to prepare family meals participated in this study. Height and weight were measured body mass index (BMI) was calculated, and one-day 24-hour recall and food frequency questionnaires were conducted. In total, 18.8% were underweight, 49.5% were normal weight, 13.4% were overweight, and 18.3% were obese according to the World Health Organization BMI standard for Asians. No significant difference in height by obesity level was determined (p≥0.05). The mean energy intake was 1571.2 kcal/day and protein intake was 43.6 g/day. There were significant differences in protein, niacin, and vitamin C intakes by obesity level (p<0.05). The prevalence of subjects consuming vitamins and minerals less than 75% of Recommended Dietary Allowances was 73-99%. All Cambodian women consumed rice ≥1 time/day. Approximately 50% of subjects reported ≥1 time/day intake frequency of bread, cookies, and chips. In total, 35% indicated no intake of beans or bean products. For intake frequencies of carbonated beverages and sports drinks, there was a significant difference by obesity level (p<0.05). These results may be very helpful to prepare nutrition education programs for Cambodian women
The purpose of this study was to investigate the eating patterns, nutrient intakes, blood levels, and health status of male college students in Seoul according to body mass index (BMI). In this study, we classified subjects into normal weight (n=240), under weight (n=11), and obese (n=46) groups according to BMI. The weight and BMI were significantly higher in the obese group compared to other groups (p<0.0001). The obesity was associated with overeating and frequent eating. The under weight group showed significantly higher consumption of fast food, snacks, and fried foods compared to the other groups (p<0.05). The intakes of milk, meat, fish, eggs, and fried food and preference ratios were higher in the obese group (p<0.05). The male college students in this study showed insufficient intakes of calories, vitamin C, folic acid, and calcium. The plasma LDL-cholesterol levels in the obese group were higher compared to the other groups. In conclusion, intake of nutrients among male college students is found to be insufficient and requires nutritional education. The under weight group showed regular eating habits and increased nutrient intake. The obese group was shown to need more exercise with higher intakes of vegetables and fruits.
본 연구에서는 당뇨병 환자들을 대상으로 영양소 섭취량 을 조사하고 혈당관리 지표 및 염증지표의 혈중 농도와의 상 관성을 분석함으로써 당뇨병의 관리 및 치료에 영향을 미치 는 식이섭취의 효과를 파악하고자 하였다. 대상자의 평균 연 령은 55.8±12.4세였고, 평균 BMI는 남자는 위험체중, 여자는 Ⅰ단계 비만의 범주에 속했다. 혈액 검사 결과, C-peptide, 공 복혈당, HbA1c, CRP 그리고 중성지방, LDL-C은 정상 수치보 다 높았고, 나머지 지표는 정상 범위에 속하였다. 전체 대상자의 열량 섭취량은 1,930.0±252.6 kcal였고, 남자 는 2,043.0±232.5 kcal, 여자는 1,790.4±203.7 kcal 수준을 나타 냈다. 평균 탄수화물 섭취량은 287 g으로 다소 낮았는데, 이 는 본 연구의 대상자들이 당뇨병 환자들로서 탄수화물 섭취 를 자제하기 때문으로 보인다. 상대적으로 단백질 섭취량은 국민건강영양조사 섭취량보다 높게 나타났고, 지방 섭취량은 일반 성인 지방 섭취량과 유사하였다. 평균 에너지 섭취분율 (%)은 탄수화물:단백질:지방=62.3:16.8:20.9 수준이었다. 남자 는 59.7:16.7:23.6, 여자는 65.8:17:17.2로 나타나, 여자의 경우 대한당뇨병학회 권장안보다 탄수화물 섭취비율이 높았다. 미 량 영양소 중 엽산은 섭취량이 약간 부족했고, 나트륨은 국민 건강영양조사에서 조사된 성인의 평균 섭취량보다 높았다. 임상지표와 영양소 섭취량과의 상관관계를 분석한 결과, 혈 중 HbA1c 농도는 PUFA, n-3 PUFA, β-carotene, 비타민 E의 섭취 량과 음의 상관관계를 나타냈다. 또한 CRP 농도는 식이 탄수화 물, 단백질, 비타민 C 및 식이섬유와 음의 상관관계를 나타냈다. 식이요법은 당뇨병 관리의 핵심 요인으로서 당뇨병의 진 행 및 치료 과정에서 중요하게 작용한다. 본 연구에서 조사한 당뇨병 환자들의 식사섭취를 살펴보면 그들이 한국인 영양 섭취기준과 대한당뇨병학회의 치료지침을 엄격히 따르고 있 지 않음을 알 수 있다. 따라서 당뇨병의 관리를 위해 우선 이 들 기준에 부합하는 식사 섭취를 하는 것이 필요하다. 또한 혈당관리에 도움이 되고, 염증 지표를 낮추는 것으로 추측되 는 PUFA, n-3 PUFA 등의 지방산과 β-carotene, 비타민 E, 비 타민 C 등의 항산화 영양소 섭취를 증가시키는 것이 합병증 발생의 예방과 지연에 도움이 되리라 사료된다. 마지막으로 본 연구에서는 24시간 회상법을 이용하여 당뇨병 환자의 식 사 섭취를 조사했는데, 이 방법은 평소의 식사섭취량을 반영 하는데 한계가 있다. 따라서 식이섭취빈도 조사법을 활용한 추후 연구가 필요하다고 사료된다.
본 연구는 50~64세의 성인 남자를 대상으로 설문지를 통 해 일반사항, 건강관심도, 흡연 습관, 식습관 조사, 식생활 평 가 및 영양소 섭취 상태를 조사하였다. 1. 직업의 종류로는 비흡연군는 전문직, 흡연군의 경우는 영업직이 가장 많은 비율을 차지하였다(p<0.05). 한 달 수입 은 조사 대상자의 29.8%가 500만원 이상이라고 답하였으며, 한 달 용돈은 전체 조사 대상자의 58.7%가 20만원 이상이라 고 답하였다. 2. 흡연군(42.0%)은 비흡연군(67.2%)에 비해 건강에 대한 관심도가 낮았으며, 운동을 하는 비율(비흡연군의 85.9%, 흡 연군의 50.0%)도 낮게 조사되었다. 3. 흡연 습관을 보면, 흡연은 처음 군대에서 호기심으로 시 작한 비율이 높았으며, 하루에 흡연량은 10개피 이상 피는 비 율이 68.0%로 조사되었다. 흡연자의 88.0%는 금연을 시도한 적이 있지만, 대부분 의지 부족(62.0%)으로 실패했다고 응답 하였다. 4. 흡연군에서는 고지방 육류를 일주일에 두 번 이상 섭취 하는 비율이 높았으며, 비흡연군의 경우 54.7%는 고지방 육 류 섭취를 하지 않는 것으로 조사되었다(p<0.01). 비흡연군이 흡연군에 비해 세끼 식사를 규칙적으로 하는 것으로 조사되 었다. 5. 흡연군과 비흡연군에서 비타민 B2, 엽산 및 칼슘의 섭취 가 한국인영양섭취기준(2010)보다 매우 낮았다. 그러나 조사 한 영양소 중 나트륨의 섭취량은 두 군 모두에서 기준치(2010) 의 3배 이상을 섭취하는 것으로 조사되었다. 이상의 연구결과를 종합해 보면, 흡연군에 비해 비흡연군 에서 건강의 관심도가 높았으며, 고지방 육류의 섭취비율이 낮았고, 세 끼 식사를 규칙적으로 하는 것으로 조사되었다. 그러나 흡연군은 건강에 대한 관심도가 낮았고, 운동하는 비 율도 낮게 조사되었으며, 고지방 육류를 일주일에 두 번 이상 섭취하는 비율이 높았다. 영양소 섭취 상태에서는 두 군 모두 에서 비타민 B2, 엽산 및 칼슘의 섭취가 낮았고, 나트륨은 과 잉 섭취하는 것으로 조사되었다. 따라서 흡연자의 경우에는 육류의 섭취를 줄이고, 항산화 물질이 많이 함유한 과일이나 채소의 섭취를 늘리도록 유도해야 하며, 저염식을 위한 영양 교육이 실시되어야 할 것이다.
This study was conducted to investigate the anthropometric data, nutrient intakes and serum profiles in premenopausal and postmenopausal women living in Gyeonggi-do Province, Republic of Korea. The subjects were 49 premenopausal women and 63 postmenopausal women who are not taking any hormone or cardiovascular drugs. Anthropometric measurements were taken by a trained practitioner and the data for dietary intakes were obtained by a 24-hour recall method. Serum samples were collected and analyzed for the total cholesterol, triglyceride (TG) and lipoprotein fractions. The mean age of the premenopausal women was 45.17±3.28 years and that of the postmenopausal women was 62.52±4.14 years. The height and weight were 157.86±4.35 ㎝, 58.75±6.01 ㎏ in premenopausal women and 156.42±3.62 ㎝, 57.63±5.38 ㎏ in postmenopausal women, respectively. WHR (waist hip ratio) in postmenopausal women was significantly higher than that of premenopausal women (p<0.05). There were no differences between the pre-and postmenopausal women in the intakes of energy, protein, fat, Ca, Fe, vitamin A, vitamin B1, vitamin B2, niacin, vitamin C and vitamin E. However carbohydrate and Na intakes in postmenopausal women were significantly higher than those of premenopausal women. In postmenopausal women, Ca intake was below and Na intake was extremely high considering KDRIs (Dietary Reference Intakes for Koreans). Serum triglyceride in postmenopausal women was positively correlated with age, BMI (body mass index) and WHR. Serum total cholesterol and triglyceride in postmenopausal women showed significantly negative correlations with fiber intake. These results suggest that it is necessary to help postmenopausal women maintain a healthy body weight. Postmenopausal women needs to increase Ca (calcium) intakes and diet quality by decreasing the intakes of Na (sodium). In addition, an adequate intakes of fiber is recommended for postmenopausal women to prevent cardiovascular disease.
This study focused on the yearly-dietary habits, nutrition status, and health of female students residing in Seoul. A number of classes were assess based on their dietary behaviors in oder to attempt to determine differences in their attitudes to nutrition, according to age. The students of class 2011 (sophomore) ate meals more regularly than the female students of the 2008 class (p<0.05). It was found that sophomore female students of class 2008 consumed higher than average nutrient intake. Sophomore female students of the 2011 class consumed lower than average vitamin B2, C, Ca, and Fe intakes. Folic acid in take was lower than average in both groups. Phosphorus and sodium intakes in both groups were excessive (p<0.05). When surveyed, sophomore female students of the 2008 class believed that the most important thing for health was exercise, whereas students of class 2011 believed that nutrient intake was the most important factor (p<0.05). Female students of the 2008 class exercised 1~2 times a week generally, whereas students of class 2011 exercised three times (43.2%) (p<0.05). Therefore, it is necessary to study changes in dietary habits and health status according to the age of students, and develop specific nutrition education programs for female students.
This study was conducted to investigate the change in the anthropometric values, biochemical index, nutritional knowledge, food habits and nutrient intakes in obese children after a weight control program. The subjects of the study were 22 obese children with an obesity index over 120%. The children that participated in this study took nutritional education for weight control along with exercise once a week. The weight control program was conducted for 10 weeks. The BMI, WHR (Waist-Hip ratio), body fat (%) significantly decreased at the end of the weight control program. Total cholesterol and LDL cholesterol were also significantly decreased. The nutritional knowledge scores and knowledge score about obesity were slightly improved. Energy intake significantly decreased from 1768 to 1421 kcal. Intake of Ca, Na, K, vitamin A, vitamin B6, vitamin C and folate increased, while intakes of P, Zn, vitamin B1, vitamin B2, vitamin E and niacin decreased. The distribution of energy intake was significantly changed for the better. The percent fat consumed decreased from 26.5 to 19.7%. In addition, the distribution of energy intake in the meals was changed, where the percent calories consumed during lunch significantly increased from 31.4 to 40.1% and the calorie percentage consumed from snacks significantly decreased from 17.6 to 10.7%. In conclusion, the nutritional education in the weight control program, which was conducted for 10 weeks, was effective in improving the anthropometric values, biochemical index and nutrient intake although nutrition knowledge and eating behaviors only changed slightly. Thus, nutritional weight control programs for obese children should be continuously provided under the proper cooperation of a nutritional teacher at elementary schools.
The objective of this study was to investigate the consumption pattern of snacks-containing trans-fatty acid in adolescents living in the Kwang-ju area of Korea, and to analyze the relevance toward their eating behaviors, body composition, nutrient intakes, and consumption frequency of snacks-containing trans fatty acid. A survey questionnaire was developed in order to investigate general environmental factors, eating behavior, nutritional knowledge, and the consumption frequency of snacks-containing trans fatty acid. A total of 312 middle school students were surveyed. The collection rate was 97% and ultimately 282 cases were analyzed. Anthropometric measurements, body composition data, and nutrient intakes were also collected. The consumption frequencies for snacks-containing trans-fatty acid were negatively correlated with food behavior scores (p〈0.01) however, pocket money and snack intake frequency per day were positively correlated with consumption frequency. Also, snack consumption frequency had some correlation with the subjects' anthropometric measurements and body composition data such as total body water (p〈0.01), body protein (p〈0.01), body minerals (p〈0.01), and skeletal muscle mass (p〈0.01). Finally, the consumption frequency of snacks-containing trans fatty acid was significantly correlated with calcium intake (p〈0.05), it also showed correlations with vitamin A, retinol, β-carotene, and folic acid intake, although statistical significance was not verified.
The purpose of this study was to investigate the effects that body composition, nutrient intake, and biochemical indices have on skin status, as well as their associations with skin health status, by assessing 44 female university students. The subjects were classified into 3 groups according to skin sensitivity: sensitive skin (n=11), slightly sensitive skin (n=24), and normal skin (n=9). The study included anthropometric measurements and body composition analyses, dietary intake evaluations, blood chemical analyses, and skin health status assessments. Based on % body fat, the results indicated the subjects were moderately obese (29.6%). Obesity indices were not different among the groups, but the sensitive skin group tended to have higher skinfold thickness. Dry skin was determined as the skin type of all subjects. In the sensitive skin groups, U-zone and T-zone sebum were significantly lower (p〈0.05), and spots were significantly higher (p〈0.05) than in the normal skin group. In terms of nutrient intakes, the sensitive skin groups consumed significantly lower amounts of P and vitamins A and E (p〈0.05). There were no significant differences in serum lipid fractions or total antioxidant status among the groups. In correlation coefficients analysis, skin elasticity had significant negative correlations with subscapular and midaxillary skinfold thickness, body protein, and body minerals (p〈0.05). Wrinkling had positive correlations with triceps and thigh skinfold thickness (p〈0.05). Skin evenness had negative correlations with energy intake, vitamins A, B1, B2, C, E, niacin, and zinc (p〈0.05), as well as folate and P (p〈0.01) and vitamin B6 (p〈0.001). A similar correlation tendency was observed for spots and nutrient intake, showing negative correlations with vitamins A, B6, and E, as well as folate, Fe, and P. U-zone sebum showed significant positive correlations with serum levels of total cholesterol and triglycerides. From these findings, skin health status appears to be affected by both nutrient intake and body composition. Therefore, having a proper balance between dietary intake and body composition may influence skin health status in females with sensitive skin.
The purpose of the present study was to examine the nutrient intake status of elderly dementia patients. We surveyed the dietary intake of 50 demented elderly patients receiving a regular diet, who were hospitalized in a geriatric hospital in Yongin, Gyeonggi-do. The average age of the subjects was 79.6 土6.5 for the males and 80.5 土6.3 for the females. The average heights were 169.5 土6.0 cm (males) and 154.6 土5.2 cm (females), and the average weights were 58.5 土7.4 (males) and 51.7 土8.9 kg (females). Depending on the type of dementia, the male patients showed significant differences in their intakes of vegetable protein, fiber, total iron, and non-heme iron between the Alzheimer’s disease (AD) and the vascular dementia (VD) groups, and the female patients showed significant differences in their intakes of total protein, phosphorus, zinc, and vitamin B6 between the two groups. The male patients showed significant differences in their intakes of animal-source calcium and carotene according to ability to self-feed. According to physical activity, the male patients showed significant differences in vegetable fat and vitamin A intake, and the females showed significant differences in their intakes of total protein, animal protein, fiber, ash, total calcium, vegetable-source calcium, animal-source calcium, phosphorous, total iron, non-heme iron, heme iron, sodium, vitamins B1, B2, B6, niacin, vitamin C, folate, and potassium. We found that the patients consumed excessive protein, but low amounts of calcium, vitamin B2, and folate. Also, the patients’ physical activity abilities appeared to affect their nutrient intakes.
The purpose of this study were to investigate middle and high school students' food habits and food attitudes, and to assess student's nutrient consumption. A self-administered questionnaire was developed based on review of literature. The questionnaire consisted of three sections (food habits, food attitudes, and food consumption). The questionnaires were distributed to 4,050 students enrolled in 34 middle and high schools located in Seoul, Gyeonggi, and Gyeongnam provinces. A final response rate was 88.2% (3,570) excluding responses that had significant missing data. Data of the food habits and food attitudes were analyzed with descriptive analysis, 2-test, and t-test using SPSS WIN(ver.11.0). The student's self-reported food consumption data was converted into nutrient consumption using conversion factor. Many middle and high school students skipped breakfast and/or dinner. Approximately 29% of the students did not eat vegetables and fruits. Scores of the middle school student's attitudes(19.1) towards foods were significantly higher than those of the high school student's attitudes(18.7)(p〈.001). Student's nutrient intakes were estimated according to the student's self-reported food consumption data. The nutrient intakes were compared with DRIs(Dietary Reference Intakes: DRIs) for their age groups. The result of EAR(Estimated Average Requirement: EAR) cut-point method demonstrated 57.7% of middle school boys, 64.4% of middle school girls, 70.2% of high school boys, and 71.0% of high school girls did not meet EAR for Calcium. Additionally, it showed that 39.0% of middle school boys, 23.7% of middle school girls, 58.4% of high school boys, and 24.4% of high school girls did not consume EAR for Vitamin B1. 25.7% of middle school boys did not meet EAR for Vitamin B2, while 44.4% high school boys did not satisfy EAR for Vitamin B2.
Since 1982, female agricultural workers are populous than male in Korea. Previous study was suggested that female workers are more sensitive to the agricultural medicine poisoning than male. This study was conducted with the aim of evaluating the impact on plasma components and nutrient intakes in female agricultural workers by the use of pesticides. Data were obtained from 44 females residing in Wonjoo, Kangwon-do area. Analysis for the general characteristics, nutrient intakes, and plasma components of the subjects were performed by physical examination, 24-hour recall method and venous blood sampling. They were divided into 3 groups according to the degree of the pesticide use: 8 in none(Non-expose group), 14 in low(〈4/yr)(Low-expose group), and 22 in high(≥4/yr)(High-expose group). The results are summarized as follows. Serum glucose, SGOT, SGPT, triglyceride, HDL-cholesterol did not correlated with pesticide use and were not different among the groups. But serum total cholesterol was higher in pesticide use group. With increasing the number of pesticide use times, leukocyte count was tended to increased. Eighty two percent of the subjects were hemoglobin less than or equal to 12g/dl. Hematocrit, MCV, MCH, MCHC, serum Fe, Serum ferritin belonged to normal range and did not correlated with pesticide use. Intake of energy, Fe, vitamin B2 were lower than RDA. Fe, K, and vitamin A intake were higher in don't use group than the other groups. There are not many differences according to using the pesticide in anthropometric measurements, nutrient intakes, and blood components, except for serum total cholesterol level and some nutrients intake. But these results suggest the need the systemic researches about the effects the pesticide using on nutritional status in Korean agricultural workers.
This nutritional survey was conducted in February 25, 1999, in order to investigate the nutritional knowledge, dietary attitudes and nutrient intakes of dietitians living in Kangwon area. Subjects consisted of 250 dietitians, with 184 in school food service, 14 in hospital food service and 52 in institution food service. Data were analyzed for frequencies, means, t-test, 2-test, ANOVA and Pearson correlation using SPSS PC Package. The results obtained are summarized as follows: The average nutritional knowledge score was 10.15 out of possible 15 points, and dietary attitude score was 67.93 out of 100 points. The correlation between nutritional knowledge score and dietary attitude score was lowly(γ=-0.25). Nutrients consumed below the Korean RDA were energy (78.77%), Ca(90.5%), Fe(83.70%) and nutrients consumed above the Korean RDA were protein(110.83%), P(140.21%), vit.A(163.94%), vit.B2(126.37%), niacin(121.12%) and vit C(231.86%). Carbohydrate, protein and fat ratio on energy composition was 63%:17%:20%. The nutrient density among 3 groups of dietitian was not significantly different.
This study was designed to investigate food consumption patterns and nutrient intakes of college students, divided into subgroups of normal weight men (no.=140), normal weight women (no.=101), and underweight women (no.=155) by body mass index. Frequency of food eaten, nutrient intakes from each meal, percentages of RDAs, and nutrient densities were analyzed using 24-hour recall records. It was very interesting in these results as follows. Normal weight men ate on the whole more frequently than other groups. Underweight women had higher intakes of nutrient than did normal weight women. However normal weight women consumed food of greater nutrient density than did other college students. Consequently, it is desirable to suggest nutrient density of food than learn RDAs for adequate diet in nutritional education programs.
