This study was conducted to investigate the effects by supplementing concentrates during the late fattening phase in TMR (total mixed ration) feeding of Korean steer on the performance, carcass traits, physico-chemical characteristics and sensory test of the longissimus dorsi muscle. Eight Korean steers (24 months of age) averaging 604 kg in body weight were fed the TMR (Control) or the TMR supplemented with concentrates (TMR+conc.) until 30 months of age, then they were slaughtered. Steers fed the TMR supplemented with concentrates had a higher (p<0.05) intakes of dry matter and TDN (total digestible nutrient), carcass weight and marbling score compared to those fed TMR only, but carcass grade did not differ (p>0.05) between treatments. Amino acid concentration of the longissimus dorsi muscle did not differ between treatments, However, the highest concentrations were for glutamic acid and lowest for cystine; further, and the content of essential amino acids was highest for lysine, leucine, threonine, arginine, and isoleucine in that order. Cis-oleic acid and arachidonic acid of fatty acids in the longissimus dorsi muscle were higher (p<0.05) in the control condition compared to TMR+conc. The contents of oleic acids, palmitic acid, stearic acid constituted about 88% of the total fatty acids. Although the physico-chemical characteristics of the longissimus dorsi muscle did not significantly differ between treatments (p>0.05), but the sensory test results were lower for the TMR+conc. condition. These results suggest that supplementing concentrates during the late fattening phase of Korean steers resulted in increasing the carcass weight and marbling score. However, the cis-oleic acid content of the longissimus dorsi muscle was decreased as a result of supplementing concentrates, which could affect negatively in meat sensory evaluation.
collected from approximately 1100 purebred Duroc pigs between 2011 and 2017. The meat quality traits evaluated were: moisture content (MC), fat content (FC), water holding capacity (WHC), cooking loss (CL), and shear force (SF). Meat samples were evaluated for the following fatty acids: palmitic, stearic, oleic, linoleic, and linolenic acids. We evaluated the meat for the following sensory traits: color, flavor, tenderness, juiciness, and acceptability of the meat. Variance and covariance components were estimated using restricted maximum likelihood procedures on different animal models. The results showed that the estimates of heritability for MC, FC, WHC, CL, and SF were 0.17, 0.58, 0.34, 0.31, and 0.42, respectively. The heritability estimates for fatty acid composition were moderate to high (0.34 to 0.63). The estimates of genetic correlation were -0.60 and 0.46 between MC and FC, and MC and SF, respectively. Generally, phenotypic correlation between meat quality traits was low. Linoleic acid had moderate to high negative phenotypic and genotypic correlation with both palmitic and oleic acid. Comparison of meat quality traits and sensory traits revealed a positive correlation (0.208) between acceptability and WHC, while the correlation between acceptability and SF was negative (-0.207). The estimated genetic parameters among meat quality traits, sensory traits, and fatty acid composition in this study are expected to be used to improve pork to suit consumer preferences.
Due to lack of established operating conditions, the swine manure management process circulates bio-liquor between the slurry pit and the bioreactor process cannot be effectively used yet. Therefore, a lab scale study comprising a single bio-reactor and slurry pit was conducted to investigate the optimal operating conditions. The main experiment was performed after conducting a preliminary study on the operating conditions. In the preliminary study, the volume ratio of the bioreactor to the slurry pit was fixed at 1 and hydraulic retention time (HRT) of the bioreactor was set as 5, 10 and 15 d. In the main experiment, the HRT of the bioreactor was fixed at 5 d based on preliminary results and the ratio of bioreactor to slurry pit was set at 1:3, 1:5, 1:7 and 1:10. Since, a decrease in bioreactor performance occurred when NH4-N loading rate reached 60 g/m3/d, the loading rate of NH4-N was required to be maintained below 55 g/m3/d to achieve stable operation. Although manure excretion can definitely increase the loading rate into the bioreactor as well as NH4-N concentration in the slurry pit, the NH4-N in slurry pit can be kept consistent with the circulation rate above 9.5Q (ratio to manure excretion). The optimal volume ratio of the bioreactor to the slurry pit and HRT of the bioreactor to fulfill these operating conditions was 1:3 and 5d, respectively. Notably, studying of the individual farm situation is very important to establish an ideal method to apply the optimal operation conditions suggested in this study.
The objective of this study was to investigate the effects of dry-aging and wet-aging conditions on the chemical composition, meat quality traits (color, water holding capacity, cooking loss, WBSF and pH) and shelf-life TBARS (2-thiobarbituric acid reactive substances) and VBN (volatile basic nitrogen) of loin (M. longissimus thoracis), sirloin (M. glutaeusmedus) and top-round (M. semimembranosus) cuts of Hanwoo cows. The dry-aging condition (temperature ℃, relative humidity %) was done for 60 d as 2℃, 65%, 20 d+2℃, 75%, 20 d+4℃, 85%, 20 d while, the wet-aging was done for 60 d at 1℃, 85%. Results revealed that moisture content was significantly higher in the dry-aged samples than that of the wet-aged samples at 60 d (p<0.05). The a*- and b*-values were significantly higher in 3 cuts as compared with those treated with wet-aging condition. During the dry-aging time, the WHC significantly increased in the loin and sirloin and they were significantly higher than wet-aging condition at 40 d and 60 d (p<0.05). The WBSF values significantly decreased with increased aging time and there was no significant difference between two aging methods. The TBARS and VBN contents significantly increased with increased aging time for all the wet- and dry-aged cuts, and their levels still fell within the acceptable standard limit. Generally, the TBARS and VBN contents were significantly higher in the dry-aged cuts, probably due to the increased levels of protein and fatty acids oxidations. Based on the results obtained in the present study, it can be suggested that application of dry-aging method can improve the quality characteristics of beef.
The objective of this study was to investigate the effect of different feed inoculation method on rumen fermentation in an in vitro. Three experimental treatments were used: control (CON, direct dispersion of feed (2 g) in rumen fluid), combinations of direct dispersion (1 g) and nylon bag (DNB, pore size: 50 μm, 1 g), and nylon bag (NB, 2 g). An in vitro fermentation experiment was carried out using strained rumen fluid for 48 h incubation time and timothy was used as a substrate. At the end of the incubation, in vitro dry matter digestibility (IVDMD), in vitro neutral detergent fiber digestibility (IVNDFD), pH, volatile fatty acids (VFA), ammonia nitrogen (NH3-N), and microbial community were evaluated and gas production was estimated at 3, 6, 12, 24, 48 h incubation periods. Gas production was higher in CON than DNB and NB at 6 and 12 h incubation time (p<0.01). There were no differences in final gas production, pH, NH3-N concentration, total VFA production, and VFA profiles among treatments. The IVDMD was lowest in CON (p<0.01) but the IVNDFD was not differed by feed distribution methods. There were no significant differences in general bacteria and fungi. Protozoa count was highest in NB treatment among treatments (p<0.01). The abundance of cellulolytic bacteria, Ruminococcus flavefaciens and Fibrobacter succinogenes, was highest in the CON among treatments (p<0.01).
The purpose of this study was to determine the effects of mixed or split-sex feeding on growth performance and behavior of Korean native chickens. Three variants of the sex ratio, FO (female only), MO (male only) and MI (mixed) were tested in Korean native chickens (Hanhyop 3) that were between the ages of 7 and 91 days. Body weight gain was the highest (p<0.05) in the MO treatment and the lowest (p<0.05) in the MI treatment. The feed intake (FI) of birds in the MO treatment was higher (p<0.05) than that of birds in the MI treatment during days 14-21, also MO treatment was higher (p<0.05) than that of birds in the MI treatment during days 21-28. However, the FI of birds in the MI group was higher (p<0.05) than that of birds in FO treatment during days 35-42. The behavioral frequency of walking, drinking, and aggressive pecking were not affected by sex ratio treatment. The behavioral frequency of feeding was higher in the FO treatment than that of birds in the other treatments. The comfort time of birds in the MI treatment was longer (p<0.05) than that of birds in the other treatments. The behavioral frequency of pecking was higher in the MO treatment than that of birds in the other treatments. The study suggests that when male and female Korean native chickens are reared together, sex ratio can influence growth performance and behavior frequency.
According to Livestock Inspection Standards, the piglets enter the feedlot at approximately 30 kg, and the inspection starts after the preliminary feeding period. The reason for applying the preliminary feeding period is to select inspection piglets with no diseases after the complete growth of the internal organs until 10 weeks of age. Furthermore, the age of 10 week is the time when the muscle fibers grow to their maximum size and the piglets are prepared for fat deposition at the later fattening period. In the study, a genome-wide association study (GWAS) was performed through the mlma command of the genome-wide complex trait analysis (GCTA) program with 703 purebred Landrace population, and the candidate genes associated with the weight of 10 week were searched. The GWAS identified 3 single nucleotide polymorphism (SNP) markers, which have a significant genome-wide suggestive level, on chromosome 6 (DIAS0002615; p-value=1.62×10-6, MARC0083933; p-value=4.94×10-6, ASGA0028717; p-value=5.40×10-6). The 2 genes (Ubiquitin protein ligase E3 component n-recognin 4; UBR4, WD and tetratricopeptide repeats 1; WDTC1) in which these 3 SNP markers are located are positional candidate genes of the weight of 10 week of the purebred Landrace population. 2 candidate genes have been reported to be associated with fattening. Therefore, the positional candidate genes in this study, UBR4 and WDTC1, are expected to be usable as genes for traits associated with the weight of 10 week weight and fattening through additional experimental research with other population.
In the case of foot-and-mouth disease (FMD), there is a great deal of impact on the national economy due to the disposal of diseases, the cost of disease control such as vaccination, reduction of productivity, and restriction of international trade of livestock products. Therefore, appropriate diagnostic methods for sensitive, accurate and rapid identification of virus serotypes are continuously required in terms of early prevention of FMD. This study was conducted to confirm the feasibility of immuno-PCR diagnostic method for the more sensitive detection of Korean FMD virus (FMDV). We synthesized a partial FMD type A viral gene. Protein antigen, monoclonal and polyclonal antibodies of FMDV were cloned, expressed and purified and then magnetic particles were attached to polyclonal antibodies and and oligomers to monoclonal antibodies for the immnuno-PCR. We confirmed the antigen-antibody and oligomer reaction using ELISA, Western blot, and real-time PCR. These results show that Korean FMDV can be detected by using difference of Ct values between positive group and negative group using immuno-PCR.. The results of this study also suggest that this technique will be the basis of the diagnosis method to detect Korean FMDV more sensitively in the future.
In this study, effects of gelatin extracted from chicken feet powder and wheat fiber on physicochemical properties of gel were determined. Gel samples were prepared with different concentrations of chicken feet gelatin powder (2, 3, and 4%) and wheat fiber (0, 1, and 2%). Gel strength increased (p<0.05) with increasing concentrations of both chicken feet gelatin powder and wheat fiber. In each gel sample, melting point and apparent viscosity of the gel was affected by different chicken feet gelatin powder concentrations irrespective of the wheat fiber concentrations (0, 1, or 2%). The 4% chicken feet gelatin powder induced the highest melting point among all gel samples regardless of the wheat fiber concentration. The gel sample with 4% chicken feet gelatin powder and 2% wheat fiber showed the highest values (p<0.05). With the increasing concentrations of wheat fiber, CIE L* increased in gel samples with chicken feet gelatin powder at 3 and 4% (p<0.05). Lower CIE a* was observed in gel samples with wheat fiber at 1 and 2% compared to gel samples without wheat fiber (p<0.05). CIE b* of gel samples with 2% chicken feet gelatin powder was decreased as increasing the addition level of wheat fiber (p<0.05). Consequently, our studies show that chicken feet gelatin powder and wheat fiber mixture could be used as a food ingredient since they have various effects on physicochemical properties of gel such as an effect on gel strength, melting point, viscosity, and color.
The objective of this study was to investigate the quality properties of sausages added with the atmospheric pressure plasma treated extract of Perilla frutescens Britton var. acuta Kudo (red perilla). The lyophilized powder of red perilla extract treated by atmospheric-pressure plasma contained 7.5 g kg-1 nitrite. Sausage samples were manufactured with the addition of sodium nitrite (Control), celery powder (Celery), or plasma-treated extract of red perilla (PTP) to obtain nitrite concentration of 70 mg kg-1. The residual nitrite content was the lowest in PTP during storage for 21 days at 4℃ (p<0.05). The total aerobic bacteria counts were higher in PTP than in Control and Celery during storage at 4℃ (p<0.05). Malondialdehyde content of sausages was significantly lower in PTP than in Control and Celery during storage (p<0.05). PTP showed the lowest L* value and the highest b* value among the tested sausage samples during storage (p<0.05). PTP received the low scores in all the sensory properties of sausages because of its inherent color and flavor. The results suggested that the plasma-treated extract of red perilla was an unsuitable natural nitrite source for cured meat products because of its adverse effect on sensory quality. However, natural nitrite source with increased nitrite content can be produced by the treatment of the natural plant extract with atmosphericpressure plasma.
Low molecular weight hydrolysates from donkey bone extracts (LHDB) was prepared with different food enzymes, and its antioxidative, elastase and collagenase inhibitory, and fibroblast cell protection effects against photoaging were evaluated. Gelatin from donkey bone was extracted three times at 121℃ for 1 h and was lyophilized. The lyophilized powder (5 g) was dissolved in 95 mL distilled water with 1% FoodPro alkaline protease (A), 1% Protease P (P), 1% Protease M (M) and a 0.3% A + 0.3% P + 0.3% M (APM) mixture and was hydrolyzed for 3 h at 45℃. After enzyme inactivation at 90℃ for 10 min, the LHDBs hydrolyzed by A, P, M, and APM were separated by centrifugal filtration and were lyophilized and marked as LHDB-A, LHDB-P, LHDB-M, LHDB-APM. The LHDB-M showed higher 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis (3-ethylbenzothiazoline–6- sulphonic acid (ABTS) radical scavenging activity, ferric reducing antioxidant power (FRAP) and oxygen radical absorbance capacity (ORAC) than the other treatments (p<0.05). The elastase inhibition effect (37.49%) of LHDB-M were significantly higher than those of the other treatments (9.97-34.18%). The viability of human fibroblast cells (Hs68) after UVB irradiation was significantly increased by LHDB-M, indicating that it can be used as an antioxidant or as a UVB stress protector. However, further in vivo studies should precede its usage in the bioactive compound industry.
The objective of this study was to develop a palatability index for evaluating taste quality of pork through correlation and causality between fatty acids and taste related factors. Results of analysis of the components and taste evaluation among varieties showed that the taste quality of Duroc pork was the best. A correlation was found between fatty acids and taste evaluation factors. Saturated fatty acids (SFAs) and oleic acid increased the sweetness and savory taste, the preferred flavors, while sourness and bitterness, the non-preferred flavors, decreased, and thus positively affecting the taste. Polyunsaturated fatty acids (PUFAs) have been shown to have a negative effect on taste by decreasing their preferred taste while increasing their non-preferred taste. In addition, multiple regression between fatty acid and five taste factors showed that stearic acid and oleic acid increased the sweetness and savory taste, while myristic acid decreased the bitterness. Linolenic acid was found to be negatively affecting the taste by increasing non-preferred flavors. In conclusion, SFAs, oleic acid and linolenic acid were found to be the major factors affecting the taste of pork. Therefore, the results of this study can be used as an index to produce delicious pork for pig producers as well as help consumers to trust and purchase high quality domestic pork.
Jeju pony, a natural monument no. 347 living in Jeju Island, Korea, has been conserved as a genetic resource and a racing pony. A total of 125 studies written about this breed have been published in various fields, primarily animal science (106), veterinary medicine (13), and others (6), from 1961 to 2018. Specifically, the majority of studies have been published in animal breeding and genetics (84), which are subcategories in the field of animal science. However, most of the research in breeding and genetics for Jeju pony were performed in the early 2000s, and studies using recently developed techniques are inferior to other breeds (thoroughbred etc.). Our current understanding of both the conservation and utilization of the breed is still incomplete. Thus, it is important to use recently developed technologies to improve management and breeding strategies for this pony breed. In this study, we review studies on Jeju ponies in the field of animal breeding and genetics and discuss problems that need to be addressed. Reviewed studies were divided into 6 categories: systematic classification, coat color, body measurement and growth, racing performance, behavior, and effective population size. Finally, we suggest ideas for future research projects that could potentially contribute to the Jeju pony industry.
델파이 방법을 사용한 본 연구는 북한의 축산개발을 위한 미래 지원기술을 예측하고 도출하도록 설계되었다. 지원기술은 북한의 축산을 미래의 지원 프로젝트에서 높은 가치를 지닌 핵심전략으로 추진되어 질 것이다. 이러한 맥락에서 설문지를 각 기술 전문가에게 배포하여 각 지원 항목의 중요성과 실현시기를 조사하였다. 이 설문 조사는 또한 남한과 비교했을 때 북한의 이러한 항목들 각각에 대해 연구 개발 수준과 자원분배를 조사하는 것을 목표로 했다. 델파이의 조사는 북한의 축산지원 전문가들에게만 국한되었다. 총 10가지 핵심기술문제가 공식화되었고, 25명의 전문가가 질문에 응답했다. 첫 번째 실현단계는 5년 이후에 26개 항목 중 절반이 47.8%를 기록했으며, 두 번째 실현연도는 평균 6.7년 이었다. 따라서, 장기적인 전략 계획을 수립하고 실행해야 할 필요가 있다. 현재 북한의 가축생산량은 한국에 비해 49% 수준으로 추정되며, 지원 사업이 시급히 필요하다. 정책 수단의 지원 방법은 전문가 인력충원, 인프라 구축 및 자재지원을 합한 총 67.5%를 차지하면서, 이 세 가지 항목에 중점을 두어야한다. 평균 총 사업비는 126.6억 원이었고 전문가는 연간 16.8명, 평균 소요기간은 6.1년으로 각각 추정되었다.
본 연구는 돈군의 크기를 달리했을 때 육성돈의 행동 특성을 파악하기 위해 실시되었다. 돈사별 합사 밀도(6개체, 10개체, 13개체)를 달리하고 합사후 1일, 20일, 40일에 하루 8시간씩 돼지의 행동을 디지털 캠코더를 이용하여 촬영하였다. 촬영된 영상을 바탕으로 육성돈의 행동 유형별 지속 시간과 빈도를 분석하였다. 휴식 행동이 전체 연구기간 동안 가장 많은 부분을 차지하였다. 기타 개체유지행동과 기타 사회 행동을 제외한 모든 육성돈의 행동은 돈군별로 유의한 차이를 보이는 것으로 나타났다. 적대 행동과 벨리노우징, 인접한 돈방 개체와의 상호작용, 꼬리 물기 및 승가 행동은 고밀도 돈사에서 다른 돈사에 비해 매우 높았다. 육성돈의 일당증체량과 유형별 행동 사이의 관계를 분석한 결과, 적대 행동과 벨리 노우징, 승가 행동이 일당증체량과 부의 상관관계가 있었다. 고밀도 돈방에서 육성돈의 공격적 성향이 매우 높은 것으로 나타났다. 본 연구 결과 육성돈의 합사 밀도는 공격 행동을 비롯한 다양한 행동에 영향을 미치는 것으로 판단된다.
미토콘드리아는 세포질 칼슘 항상성 및 ATP 생산에 중요한 역할을 하는 세포 소기관으로 이러한 미토콘드리아의 기능은 성숙과 수정 그리고 배 발달에 매우 중요한 역할을 한다. 미토콘드리아 칼슘 축적은 기능장애를 일으킨다. 그러나 돼지 체외성숙란 및 수정란에서 미토콘드리아 칼슘 변화의 관련성에 관한 연구는 보고된 적이 없다. 본 연구의 목적은 미토콘드리아 칼슘 지시자로 알려진 Rhod-2 염색을 이용하여 성숙란 및 수정란에서 미토콘드리아 칼슘 축적의 변화를 확인하였다. 형태학적 모습의 기준을 통해 난구세포의 세포층과 세포질의 균질도를 바탕으로 G1과 G2로 나누어서 체외성숙을 진행하였다. 이후 두 그룹에서 핵 성숙율을 비교하였을 때, G2가 G1에 비해 낮게 나타났다(p<0.001). 돼지 체외성숙란 및 수정란에서 평균적인 Rhod-2 spot 의 수는 G1보다 G2에서 더 많이 나타났다(6시간째 체외수정란: p<0.05). 다음으로 Rhod-2 spot 수에 따른 난모세포의 비율을 확인하기 위해 Rhod-2 spot 의 수를 4개의 군(n<10, 10≤n<20, 20≤n<30, 그리고 30≤n)으로 나누어 해당 난모세포의 비율을 확인하였다. 체외성숙란 및 체외수정란 모두 G1이 G2에 비해 10개 미만(n<10)인 Rhod-2 spot 의 수를 가지는 난모세포가 많았으며, 체외수정란에서는 유의적으로 높았다(p<0.05). 마지막으로 체외성숙란 및 수정란에서 Rhod-2 intensity 값을 측정하여 두 그룹을 비교하였을 때, G2가 G1에 비해 유의적으로 높은 것을 확인 할 수 있었다(성숙란; p<0.001 그리고 수정란; p<0.05). 본 연구의 결과를 토대로 돼지에서 미성숙 난포란의 형태학적인 품질은 체외성숙 및 체외수정 과정 동안 미토콘드리아 내 칼슘 축적과 관련이 있음을 확인하였다.
엘크 수사슴의 체중 성장곡선 및 일당증체량을 추정하기 위하여 국립축산과학원 가축유전자원센터에서 사육중인 엘크 수사슴 183두의 체중-일령 자료 1,509개에 대해 비선형 회귀식인 Gompertz와 Logistic 모형을 적용하였다. 추정된 엘크 수사슴 성장곡선 모수인 성숙체중(A), 성장비율(b)과 성숙률(k)은 Gompertz 모형의 경우 각각 335.5±1.415kg, 2.18±0.045와 0.0025±0.00005였고, Logistic 모형에서는 330.5±1.337kg, 5.46±0.209와 0.0355±0.00009였다. 적합도 검정을 위한 결정계수(R2)는 두 모형에서 큰 차이가 없어 두 모형 다 적합한 것으로 나타났다. 다만, 실제 측정값과 추정값에 대한 차이인 평균제곱근 오차 값이 엘크 암사슴에 비해 크게 나타났으며 따라서 엘크 수사슴의 낙각 및 번식기 체중 증감을 고려한 성장곡선 모형에 대한 추가적인 연구가 필요할 것으로 판단된다. 엘크 수사슴에서 Gompertz 모형으로 추정된 함수식은 f(t)=335.5Xe^-2.18e^-0.0025t였고, Logistic 모형의 경우 F(t)=330.5X(1+5.465e^-0.00355t)^-1였다. 각 모형에서 제1차 도함수로 유래된 일당증체량 곡선은 Gompertz 모형의 경우 F'(t)=0.0025Xf(t)X1n(335.5/f(t)), Logistic 모형의 경우f'(t)=0.0036Xf(t)X[1-f(t)/330.5]였다. 이 함수식을 통해 도출된 엘크 수사슴에서 최대 증체량을 나타내는 시기인 315~478.3일령, 123.4~165.3㎏ 도달 전후에는 보다 세심한 사양관리가 필요할 것으로 보인다. 본 연구에서 도출된 엘크 수사슴의 성장곡선 모수 추정값, 변곡점 및 변곡점 도달일령 등은 사슴산업 종사자들이 사양관리 및 육종계획을 수립하는 데에 도움이 될 수 있을 것으로 사료된다.
This study was conducted to evaluate the acceptability of cured cooked boneless chicken drumettes as a raw material for Chuncheon Dakgalbi and to observe its effect on pH, lipid oxidation, volatile basic nitrogen (VBN) content and total viable count (TVC) during refrigerated storage under vacuum. Boneless chicken drumettes were dry cured with a mixed curing agent (0.20% w/w) consisting of sodium chloride (93.1%), sodium nitrite (5.9%) and sodium bicarbonate (1.0%) for 24 h at 2±2℃. Cured samples were cooked using an oven at 150℃ for 20 min and stored at 5.5±0.5℃ for 60 days under vacuum. Non-cured cooked sample was used as a control. Sensory evaluation was performed on day 2 of storage using 22 untrained panelists and samples were mixed with Dakgalbi sauce and reheated using a microwave for 2 min. There were no significant differences between control and treatment group on appearance, flavor, texture, juiciness and overall acceptability. Cured cooked boneless chicken drumettes had significantly (p<0.05) higher pH, lower lipid oxidation, VBN and TVC consistently during storage in comparison with control. These results suggest that dry curing could be applied to boneless chicken drumettes as raw material for Chuncheon Dakgalbi and could extend its shelf life during refrigerated storage under vacuum.
본 연구는 저영양 비육돈 사양이 고영양 사양에 비해 도체 및 돈육의 질을 개선시킬 수 있을지를 조사하기 위해 수행되었다. 체중 약 50kg의 LYD 교잡종 암퇘지와 거세돼지 각각 68두씩을 8돈방에 배치하고 3.54Mcal DE/kg과 1.00% 라이신을 함유한 고영양사료 혹은 3.02Mcal DE/kg과 0.68% lysine을 함유한 저영양사료를 약 120kg까지 급여하고 도살하였다. 총 20개의 도체로부터 삼겹살, 등심, 뒷다리 및 목심을 잘라내고 삼겹살과 등심, 뒷다리 및 목심의 대표적인 근육의 질에 관한 이화학적 분석과 관능검사를 수행하였다. 일당증체량, 사료효율 및 등지방두께는 고에너지구보다 저에너지구가 낮았다(p<0.05). 목심의 가열감량, 경도 및 씹힘성 수치는 저영양구가 고영양구보다 낮았다. 신선육(근육)에 대한 관능평가에서 등심의 색깔, 상강도 및 기호도 평점은 저영양구가 고영양구보다 높았고, 삼겹살의 근육:지방 균형 평점은 저영양구가 고영양구 보다 높은 경향을 나타냈다(p<0.10). 또한 뒷다리 가열육에 대한 관능평가에서는 풍미 및 다즙성 평점이 저영양구가 고영양구보다 높았다. 결론적으로, 이상의 결과는 저영양으로 비육돈을 사양하면 고영양 사양에 비해 성장성적은 저하되지만 도체 및 돈육의 질을 향상시킬 수도 있음을 시사한다.
본 연구는 돼지의 정자와 난소내 과립막세포에서 bisphenol S(BPS)가 생존성과 활성산소 생산에 미치는 영향을 알아보고자 연구하였다. 돼지정액은 0, 5μM BPS를 처리하여 3, 6시간동안 배양하였다. 정자의 생존성은 SYBR14/PI를 이중 염색하여 분석하였으며, 활성산소의 생산을 측정하였다. 또한, BPS(0, 5, 10, 20μM)를 과립막세포에 처리하여 24, 48, 72시간동안 처리하였다. 처리 후, 세포의 생존율과 활성산소 생산(단, 5μM BPS)을 측정하였다. 그 결과, 돼지에서 정자의 생존율은 BPS에 의해 감소하였고, 활성산소의 생산은 모든 처리시간에서 증가하였다(p<0.05). 또한 과립막세포의 생존은 BPS에 의해 억제되었고, 활성산소는 유의적으로 증가하였다(p<0.05). 이상의 결과를 토대로, BPS의 노출은 정자의 활성과 번식과 관련된 세포에 나쁜 영향을 미칠 것이다.
