        This study was conducted to evaluate the effects of a set of 16 nutrition education lessons on the eating behaviors and nutrition knowledge of middle school students. The target was a group of 128 boys in the first year of middle school in Changwon, who took the classes from the 29th of August, 2011, to the 17th of February, 2012. The education was performed for 16 weeks using the e-learning textbook, 'Health and nutrition of youth', and a teacher's guidebook developed by the Ministry of Health and Welfare. The results were summarized as follows. Students demonstrated significant changes in their knowledge about nutrition and in their dietary behavior due to the nutrition education, and the effects were observed to be maintained for one year after education. The average nutrition knowledge score before, immediately after, and 1 year after the education was significantly increased from 13.0 before the education to 18.8 after education (p<0.001), maintaining the score of 18.5 1 year later. The eating-related questions of 'I will practice healthy eating habits in life' and 'Nutrition education is necessary to build healthy eating habits', were given a high score by the students at the last survey conducted one year later. Of course, it is not easy to change the dietary behavior of students through dietary education in schools. Nevertheless, the results of this study demonstrated that such educatcan is necessary since the habits can indeed be changed, as observed in the present study.

        The purpose of this study was to measure the nutrition knowledge, dietary attitude, eating behavior, physical ability and locomotion of 5-year-old-children, and thereby to provide the fundamental information necessary to develop a nutritionrelated physical education program. A survey was performed on 143 5-years-old boys and 113 girls. The results were as follows. The average score in the nutrition knowledge item, was 7.22 out of a possible 10 points; in the dietary attitude item, 32.46 out of 50 points; in the eating behavior item, 26.67 out of 40 points. According to body measurement, there was a significant difference in height by gender (p<0.05), Significant differences in muscle mass and basal metabolic rate were also observed by gender (p<0.001). Gender also influenced the flexibility and reflexibility (p<0.001), with significant difference in balance of the right side (p<0.01). Although this study was limited by its cross-sectional study design, the body muscle (p<0.05) and basal metabolic rate (p<0.05) were observed to have a positive relation with nutritional knowledge. In addition, there was a significant positive correlation between nutritional knowledge and dietary attitude (p<0.01). According to the results, it is necessary to develop a long-term and systematic program with the combination of nutrition and physical education to develop correct dietary habits and for the balanced growth of children.

        This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.

        Aim of this study is to investigate the nutrition knowledge, dietary behaviors, and dietary habits by the gender in high school students in Chungnam province. Girls students had a higher score than boys students for nutritional knowledge, not in the significant difference. However, boys students had a higher score for dietary behaviors than girls students. Dietary habits showed a significant difference in the unbalanced food habit and eating speed by the gender, and the eating speed of boys students was faster than that of girls students. For boys students, the nutritional knowledge and dietary behaviors did not have the significant correlation. Otherwise, girls students had the positive correlation between the nutritional knowledge and dietary behaviors, and had the characteristics of behaviors that the higher the nutritional knowledge score, the better eating habit. In addition, the boys and girls students had the positive correlation between the score of nutritional knowledge and the frequency of breakfast, and the score of nutritional knowledge and the frequency/regularity of breakfast, respectively. Because some dietary habits/behaviors are related closely to their nutritional knowledge, the high school students need the systematic and steady nutritional education to apply their known nutritional knowledge to actual life.

        The purpose of this study was to estimate the preference, intake frequency and eating behavior for kimchi as well as analyze the differences by gender among fourth to sixth grade students (n=410) in a Chungnam region. Approximately 64% of the students liked the spicy taste of kimchi, 75.9% liked the saltiness, and 48.5% liked well-fermented kimchi. The disliking factors of kimchi were its sour taste (38.5%), strong scent (20.1%), and salty taste (15.4%). The most preferred type of kimchi was Baechukimchi, followed by Kkakduki, Yeolmukimchi, and Chonggakkimchi. Further, the most frequently consumed type of kimchi was Baechukimchi, followed by Kkakduki, Chonggakkimchi and Yeolmukimchi. Oisobaki, welsh onion kimchi, sesame leaf kimchi, Gatkimchi, Nabakkimchi and Baekkimchi were rarely consumed. About 34% of the students consumed 5 to 7 pieces of kimchi per meal, and 84.1% enjoyed eating kimchi, mostly because of its good taste (61.3%). The reason for not eating kimchi was because other side dishes are more delicious (30.2%). About 80% of the students responded that they prepared kimchi at home. Moreover, 74.3% of the students eat kimchi much more at home than at school. Improvements to be made for kimchi at school were as follows: less salty (34.9%), less spicy (27.6%), and sweet (22.5%). In conclusion, students enjoyed eating kimchi because of its good taste. Further, they showed preference for Baechukimchi, Kkakduki, and Yeolmukimchi and consumed them frequently. Because kimchi appears to be more preferred and more frequently consumed, it is necessary to develop a menu using kimchi along with the proper eating guidance for helping students consume various types of kimchi at school or at home.

        Increasing numbers of Korean adults, especially women, are adopting vegetarian diets for various reasons. In this study, the characteristics of vegetarianism among females residing in Seoul were examined. In addition, the dietary habits and eating behaviors between vegetarians and non-vegetarians were investigated. A total of 148 females (73 vegetarians, 75 non-vegetarians) were recruited and questionnaires regarding their demographic characteristics and eating habits were completed. The eating behavior and daily intake of food groups was assessed using the three factor eating questionnaire-R18 (TFEQ-R18) and food frequency questionnaire, respectively. The ages, BMI, education, and religious affiliation were not significantly different between the two groups. More than 30% of vegetarians had followed a vegetarian diet for longer than 24 months. The most common motivations for vegetarianism in study participants were ‘health or weight control’ (46.6%) followed by ‘environmental concerns or animal welfare’ (24.7%). Vegetarians had a lower intake of cereals, Kimchi, and soda, but a higher intake of potatoes and sweet potatoes, vegetables, mushrooms, seaweed, and fruits compared to non-vegetarians. Significant differences in eating behavior scores were also found between the two groups; in particular, vegetarians reported higher levels of restrained eating and emotional eating than non-vegetarians. Scores of uncontrolled eating, however, were not significantly different between the two groups. In conclusion, these results suggest that while vegetarianism is associated with healthy dietary habits, it is associated with restrained eating behaviors which may increase the risk of eating disorders in women.

        This study was carried out to analyze the relationship between body mass index (BMI) and general characteristics, psychological factors, eating habits, dietary behaviors, and health related quality of life using survey of 335 women aged 20 to 29 years in the Seoul and Kyungin areas. The 335 study subjects were divided into 4 groups by BMI (㎏/㎡) levels; normal group(18.5≤BMI≤22.9), overweight group(23.0≤BMI≤24.9), mild obesity group(25.0≤BMI≤29.9), and heavy obesity group (BMI≥30) by Asian-Pacific obesity index criteria. The family income of the heavy obesity group was significantly (p<0.05) less than that of the normal weight group. Psychological factors, such as stress and depression of the normal weight group tended to be higher than those of overweight and obesity groups. The higher BMI level had the lower self-efficacy(p<0.05) among all subjects. As the BMI level increased, the preference for sweet, salty, and hot taste was significantly high. We found that normal weight women had healthier eating habits and dietary behaviors and a higher level of health-related quality of life than did those who were overweight, mildly obese, and heavily obese women. Overweight and mildly and heavily obese women were strongly associated with decreased physical and mental health related quality of life. Therefore, weight loss is desirable, and is likely to be beneficial for health-related quality of life in obese adult women. In conclusion, this study contains evidence to suggest that obesity management programs including different strategies according to obesity are required to determine the types of programs that are suitable for adult women, prior to their initiation of a program. The findings are helpful to inform researchers and practitioners who are seeking to implement appropriate strategies to create positive changes in the health behaviors of obese adult women.

        1. 본 연구의 조사 대상자인 경기 북부(의정부, 양주, 동두천)에 거주하는 대학생을 성별을 기준으로 구분하여 대학생의 식생활 습관을 알아보기 위하여 먼저 아침식사와 점심식사의 식습관 등에 대하여 조사하였다. 이들 중 ‘매일 먹는다’ 라고 응답한 학생들(38.2, 31.6%)을 제외한 나머지 학생들을 대상으로 조사한 아침 결식의 가장 큰 이유로 ‘시간이 없어서’라고 응답하였고, 아침식사의 종류는 남학생과 여학생이 각각 ‘밥과 반찬’ 79.7, 84.0%로 주식이 쌀인 우리나라는 아침식사의 형태가 밥을 먹는 경우가 월등히 많았다. 점심식사는 아침식사와 달리 규칙적으로 하고 결식률이 낮은 것은 기존의 연구 결과와 유사하였다. 점심식사 장소는 남학생과 여학생 모두 교내 식당보다 외부 식당 이용이 훨씬 많았고, 점심식사의 종류는 남학생과 여학생이 각각 ‘밥 위주 한식’ 70.8, 56.3%, ‘주먹밥 및 볶음밥류’ 16.9, 7.5%, ‘국수 면류’ 3.4, 23.0%의 순으로 나타나, 주로 밥을 먹는 경우가 많았으나, 남학생은 여학생과 다르게 ‘주먹밥 및 볶음밥류’의 섭취가 많았고, 여학생은 남학생과 달리 ‘국수 면류’의 섭취가 많았다. 조사대상자의 점심식사 비용은 남학생과 여학생이 각각 ‘4,000~ 7,000원 미만’ 67.4, 70.1%로 조사되고, 조사 대상자의 한 달 용돈 금액이 남학생과 여학생 각각 ‘20~30만 원’ 24.7, 31.6%, ‘10~20만 원’ 21.3, 27.6%인 것을 볼 때 용돈에서 점심식사 비용이 대부분 차지하는 것을 알 수 있다. 2. 조사 대상자의 간식 습관을 알아보기 위하여 간식 섭취빈도를 조사한 결과, 간식 섭취 횟수는 남학생과 여학생 각각 ‘하루 1회’ 47.2, 51.7%, ‘하루 2~3회’ 31.5, 39.7%의 순으로 나타냈다. 간식을 먹는 시간은 남학생과 여학생 각각 ‘점심~저녁 사이’ 67.4, 67.8%, ‘저녁식사 후’ 21.3, 8.6%, ‘아침~점심사이’ 7.9, 14.4%로 나타났다. 간식을 하는 주된 이유를 살펴보면 남학생과 여학생 각각 ‘배가 고파서’ 46.1, 28.2%, ‘심심해서’ 15.7, 15.5%, ‘습관적으로’ 9.0, 22.4% 등으로 다양하게 나타났다. 주로 먹는 간식의 종류를 살펴보면 남학생과 여학생 각각 ‘과자류’ 25.8, 19.0%, ‘음료수’ 18.0, 14.4%, ‘빵류’ 16.9, 13.2% 순으로 과자류를 가장 선호하는 것으로 나타났고, 야식 섭취 횟수를 조사한 결과, 남학생과 여학생 모두 ‘일주일에 1~2회’가 56.2, 62.1%로 가장 많았다. 3. 향후 젊은 세대가 선호하는 실버타운이나 노인복지 시설의 급식에 대한 기초 자료 조사를 위하여 만 65세 이상의 노인이 되었을 때를 가정하여 조사한 식사 형태는 남학생과 여학생 각각 ‘직접 조리하여 먹기를 원한다’ 48.9 48.9%, ‘주로 외식하기를 원한다’ 20.2, 10.9%, ‘전문급식업체로부터 국이나 반찬을 배달하여 먹기를 원한다’ 11.2, 21.8%의 순으로 나타났다. 노인이 되었을 때 정기적으로 음식을 제공받을 의향은 남학생과 여학생 각각 52.2, 55.7%이었으며, 이들 중 정기 배달식 의향이 있다고 응답한 학생들을 대상으로 조사한 배달식의 고려 사항은 남학생과 여학생 각각 ‘맛’ 38.7, 24.7%, ‘위생’ 35.5, 47.4%, ‘영양’ 19.4, 22.7% 순이었다. 실버타운이나 노인복지시설의 시설급식 의향은 남학생과 여학생 각각 ‘예’ 47.2, 48.3%이며, 이들을 대상으로 조사한 시설급식을 원하는 이유로는 남학생과 여학생 각각 ‘비교적 저렴한 가격에 이용할 수 있어 경제적이다’ 30.9, 22.6%, ‘식사 준비에서 해방될 수 있다’ 21.4, 23.8% 순이었고, 시설급식 의향이 없는 남학생과 여학생들을 대상으로 조사한 시설급식을 원하지 않는 이유로는 남학생과 여학생 각각 ‘실버타운이나 노인복지 시설에 기거하고 싶지 않다’ 36.5, 45.6%, ‘다른 장소로 이동하여 먹고 싶지 않다’ 11.8, 10.0% 순이었다.

        This study is conducted to compare the problems affecting dietary habits and health status between a long-term exercise group and non-exercise group of males older than 50 years. Most subjects of the two groups consider regular exercise to be the most important factor for maintaining health, and recognize hypertension as the number one concern. The most common nutritional supplement among subjects is multiple vitamins, and sleeping time range from 6~8 hours. Breakfast fasting rate was 15.9% among non-exercise group (NEG), where overeating and eating out rates were higher among exercise group (EG) when comparing to NEG. Fasting rates of breakfast, and consumption rates of milk and dairy products, vegetables such as kimchi, and fruits and fruit juices are higher among the EG. Overeating and eating out rates are lower among NEG, whereas eating rates of proteins like meat, fish, eggs, beans, fried foods, high-fat meats carbonated drinks, ice cream, and salt intakes are higher. Rates of health, dietary habits, and nutrient intakes are higher among EG. Energy intakes among the two groups were below the standard level, Vitamin B2 intake is low in EG, and folic acid and calcium intakes were higher in NEG. The exercising group care more about health, eating habits and nutrient intakes, and low smoking rates are being observed. Thus, specific dietary improvement programs for adult men, are required, and it is necessary to consider the practice of nutrition education.

        To study the importance of family meals in adolescents, 251 middle school students were surveyed through a questionnaire on their family meal patterns, dietary behaviors, food intake, and life satisfaction. The family meals were defined as "meals with all family members living together" by 62.2% of the students. For the frequency of family meals, 42.2% of the students replied having family meals "More than once a day". A common reason for the difficulty in having a family meal was a "lack of time" (73.3% of the students). Students tended to respond that they would be most fond in having meals with entire family members with traditional Korean food. Having more frequent family meals was found to benefit both individual and familial dietary behavior. In terms of food intake according to the frequency of family meals, the group having frequent family meals consumed significantly more rice, tofu, legumes, meats, fishes, eggs, green vegetables, seaweeds, fruits, milk, and milk products. This indicates that students can achieve a balanced diet through family meals. In terms of emotional status, the group having more frequent family meals showed a higher satisfaction with their daily life, health, nutritional status, and care from their relatives. In terms of personal mental status, the group having more frequent family meals was also found to be more effective at controlling undesirable emotions such as loneliness, indignation, and lethargy. As a result of this study, students in the group having more frequent family meals were found to have a positive dietary behavior, a balanced nutrition, a higher life satisfaction, and a more stable mental status. This result is useful as nutritional and educational information in schools to impress upon the public the importance of family meals for adolescents.

        This study was conducted to investigate the differences in households, parental perception, and dietary behaviors of preschool children from kindergartens with environment-friendly food service (environment-friendly food service group; EFG) versus children from kindergartens with general food service (general food service group; GFG). We sought this basic information to examine the impact of environment-friendly agricultural products in preschool food services. Age, education level, and monthly family income of the EFG were significantly higher than the GFG. The frequency of purchasing environment-friendly agricultural products was significantly higher in the EFG than the GFG, with the most frequently purchased items in both groups being vegetables. The GFG had a significantly higher perception than the EFG in the superior quality of environment-friendly agricultural products; however, a greater proportion of the GFG than the EFG thought environment-friendly products were too expensive. The most frequent reason for purchasing environment-friendly agricultural products in both groups was safety. When purchasing environment-friendly agricultural products, the most important selection factor for the majority of both groups was the label certifying quality assurance. Both groups also considered price reduction as essential for promoting environment-friendly agricultural products. In regard to parental perceptions on food service in kindergarten, the EFG had a significantly higher satisfaction with the nutritional adequacy of the menu compared to the GFG. Both groups considered food safety and health as primary reasons for using environment-friendly foods in the preschool food service, with a greater proportion of the EFG than the GFG responding this way. There were significant differences between the EFG and GFG, as the main satisfaction from using environment-friendly foods in the EFG was safety, freshness, and good hygiene, whereas the main satisfaction in the GFG was a good food service menu, freshness and good hygiene. Dietary behaviors of preschool children in the EFG were also significantly superior to the GFG. Thus, environment-friendly agricultural products have positive effects on the dietary behaviors of preschool children and should be increased in the preschool food service. Lowering prices and a strict supervision of quality assurance is also necessary to promote consumption of environment-friendly food materials.

        The purpose of this study was to investigate the effect of food behavior on dietary food intake status and health condition based on research of food behavior and nutritional intake status of university students in the Chungnam area. The average age, height, and weight of the subject group were 22.1 years old, 174.2 ㎝, and 67.0 ㎏ for the male students and 20.9 years old, 161.8 ㎝, and 53.4 ㎏ for the female students, respectively. From the nutritional intake status data, the averaged daily energy intake of both groups, male and female, are lower than the dietary reference intake(KDRI), as 2, 169.2 kcal and 1, 846.2 kcal, males and females, respectively. The lipid intake ratio was higher than the dietary reference figure, and the carbohydrate intake ratio was determined to be in the proper range. Male students(54.6%) and female students(52.0%) of the entire subject group skipped a breakfast mainly due to insufficient time, and the time at which meals were consumed, was determined to be irregular generally. In a day, male and female students have a heavier dinner than lunch(p<0.05), respectively. Meat and fishes are preferred by the entire subject group, and the number of students, who do not eat carrot and mayonnaise(p<0.05), was determined to be the highest, of all foods surveyed. The averaged daily activity coefficient and the resting energy expenditure shows significant difference(p<0.001) between two groups; was 1.7 and 1.6 and the second was 1, 404.3 kcal/day and 1, 292.5 kcal/day for the male and female groups, respectively. As the number of attempting to reduce body weight(p<0.001), the amount smoking(p<0.001), or the frequency of drinking alcohol increases, BMI decreases. On the other hand, as body shape satisfaction increases, BMI increases also.

        The purpose of this study was to investigate the effect and correlation of anthropometric data, eating behaviors, and nutrient intake on the bone mineral density(BMD) of female college students. 349 female college students were surveyed and their age, height, and weight were an average of 20.5 years, 163.2 ㎝ and 54.0 ㎏, respectively. Their average BMI was 20.2, with 66% falling in the normal range, 21.8% classified as underweight, 8.0% as overweight, and obese individuals comprised 3.4% of the sample by BMI classification. Calcaneal BMD was measured and the average T-score was 0.117. The results of BMD measurements were normal in 268 people(76.8%), osteopenia was found in 71 individuals(20.3%), and osteoporosis in 10(2.9%), respectively. There was a significant difference in bone mineral density according to height(p<0.05) and BMI (p<0.01). There were significant differences between BMD and eating behavior, regularity of eating behaviors(p<0.05), instant food intake(p<0.05), eating out(p<0.05) and nutritional supplement intake(p<0.05). In addition, normal the group with normal BMD had a more desirable eating behavior compared to the osteopenia and osteoporosis afflicted groups. BMD had a significant difference according to the nutrient intake of calcium(p<0.05), vitamin A(p<0.05), and vitamin C(p<0.05). In conclusion, BMD showed a good correlation with height(p<0.01), BMI(p<0.01), body composition including total body water(p<0.05), FFM(p<0.05), body protein(p<0.05) and intake of calcium(p<0.05), iron(p<0.05), vitamin A(p<0.05), and vitamin C(p<0.05). Therefore, an education plan and training on balanced diets proper body weight control, and desirable eating behaviors for female college students will be needed.

        The purpose of this study was to investigate the relations of breakfast skipping and dietary habits according to breakfast intake frequency. Subjects were 5th and 6th graders of elementary school(n=423) in Gyeonggi area. As a result of analyzing the breakfast intake frequency, ``Having everyday`` showed the highest 63.4%, followed by ``4~6 times`` 16.5%, ``2~3 times`` 13.5% and ``0~1 times`` 6.6%. As a result of analyzing the relations between mother and child in the breakfast intake frequency, it showed that the more mothers skipped breakfast, the more their children skipped it. For the reason of skipping breakfast, ``To be in time for school`` showed the highest percentage. As a result of analyzing the perception of awareness for the importance of nutrition and dietary habit according to the breakfast intake frequency, there was a statistically significant difference in breakfast intake, dietary habits, selection and intake of proper food, disease and health problem according to the breakfast intake frequency. As a result of study, it is necessary that nutrition education should not be limited to children but expanded to their parents in order to increase the efficiency and effectiveness of nutrition education between school and home.

        The purpose of this study was to investigate the snack and beverage intake patterns of students by body mass index groups (BMI 〈18.5, 18.5-23, 23-30, ≥30). Questionnaires were completed by 1381 high school students in Seoul, Incheon, and Gyeonggi-do, the area of Korea's capital region. There were no significant differences in skipping meals for overweight (BMI 23-30 and ≥30) or under-nourished (BMI 〈18.5) students. Girls skipped dinner more frequently than boys. Boys and girls both preferred meat and disliked fish regardless of BMI. Girls with BMI 23-30 disliked vegetables. Boys and girls would rather have crackers, candies, and chocolates than potatoes as snacks regardless of BMI. Obese boys (BMI ≥30) preferred flour-based food, fast food, and other food as snacks. Girls liked fruits more than boys. Snacks were eaten 2-3 times per week, when students were hungry or bored. There were no significant differences in the frequency or reasons (habitual, stressed) for snack consumption by BMI. Girls liked juice more than boys did, and boys preferred soda water more than girls did. Both the under-nourished (BMI 〈18.5) boy and girl groups had more juice than the overweight (BMI 23-30 and ≥30) groups. Obese (BMI ≥30) boys did not more drink soda water than other BMI groups. The under-nourished (BMI 〈18.5) boy group had more soda water than the normal (BMI 18.5-23) and overweight (BMI 23-30) groups. Girls in the overweight (BMI 23-30) group had 2 more cups of soda water a day than the normal group (BMI 18.5-23). Therefore, skipping meals and beverage intake patterns might influence BMI.

        The purpose of this research was to study food behaviors and nutrient intakes according to body mass index(BMI) and body image recognition in 211 female university students in Incheon. The majority of the surveyed subjects were in the normal range for BMI. Most of these female university students preferred a thin body type and were not satisfied with their body shapes. Most also controlled their body weight for appearance by exercising and limiting food intake. The obese group often ate processed foods(p<0.01) and ate out(p<0.05). The underweight group and normal-weight group took vitamins and supplements more frequently(p<0.001). Those students who recognized their body image as a ``fat shape`` had good appetites(p<0.05) and those who recognized themselves as ``normal shape`` considered food formulations ate every meal (p<0.05) and consumed vitamins and other supplements frequently(p<0.01). The mean calorie intake of all students was about 80% of the recommend amount, so there was a risk of lack of various nutrients. The ``fat`` students by body image recognition had lower calorie intakes in order to reduce body weight. In all the groups, there was a lack of vitamins B1 and B2, as well as the minerals Ca and Fe. Therefore, education on correct body image recognition and training on proper weight control are deemed necessary. In addition, education and counseling on nutrition that are tailored to individual status are needed.
