        This research is aimed at evaluating the nutrition knowledge and hygiene knowledge of people who are either foodservice employees or housewives and at providing data for conducting hygiene education by comparing the differences between the two groups. Both groups scored relatively high in nutrition knowledge with housewives scoring 9.9/12 and food service employees scoring 9.6/12. However, foodservice employees scored significantly higher in hygiene knowledge and degree of practice than housewives, A correlation was found between nutrition knowledge and the degree of hygienic practice and a significant correlation between hygiene knowledge and the degree of hygienic practice. The higher the hygiene knowledge was, the higher their degree of hygienic practice was. As for food hygiene information, foodservice employees obtained the information through hygiene education and lecture meetings, but housewives got their information through mass media. To summarize, mass media, which housewives can have easy access, must have programs for housewives to help them improve food hygiene in cooking, and programs for foodservice employees on washing food.

        The purpose of this study was to compare understanding of school foodservice management and environmentally friendly agricultural products between urban and rural elementary school children’s mothers. Subjects were 400 elementary school parentsliving in Jeonnam. The results are summarized as follows. School foodservice program helped to solve unbalanced diets, develop minds and bodies, and improve eating habits. Mothers showed a higher degree of satisfaction for school foodservice containing environmentally friendly agricultural products. The primary reason for favoring environmentally friendly agricultural products was improvement of health and securing safe foods. The most important parameter of school foodservice management was sanitary control of food materials>sanitary control of foods>sanitary conditions of place for meals>sanitary conditions of cooker>sanitary conditions of tableware. In conclusion, school foodservice should be financially responsible to make policies effective.

        This study was conducted on children from 10 community children centers located in northern Seoul. The quality factors of the food services of the community children centers were divided into five factors, including sanitation, food, environment, subsidiary service and staff. Analysis of the differences in the importance of factors and satisfaction with the food service quality indicated satisfaction to be higher than importance for in all the factors except 'environment'. In particular, of the food service qualities, significant differences were found between importance and satisfaction in relation to the attributes of 'food' and 'environment'. As a result of IPA of the food service qualities in community children centers, 'sanitation' was found to be in the maintenance area, 'environment' to be in the area of concentration, and the quality attributes of 'staff' and 'subsidiary service' were found to be in the low priority area. In contrast, the 'food' quality corresponded to the area of oversupply.

        본 연구의 조사대상자인 경기 북부(의정부, 양주, 동두천)에 거주하는 노인을 성별을 기준으로 구분하여 노인의 급식 서비스 이용 현황 및 만족도를 조사하였다. 일반적 특성을 보면, 평균 연령은 76.7세이며, 남성과 여성이 각각 35.7, 64.3%, 배우자 사별은 남자노인은 46.9%, 여자노인은 85.0%로 나타났다. 학력은 중학교졸 이하가 전체의 88.1%로 대다수를 차지하였고, 과거 직업은 대부분 무직(33.6%)이거나 자영업(13.4%)에 종사하였다. 남자노인과 여자노인 각각 78.1, 79.2%로 비교적 자유로운 일상 활동이 가능하였고, 건강정보 출처는 남자노인과 여자노인 각각 건강전문가(49.0, 45.7%), 대중매체(34.4, 33.5%)의 순이었고, 건강정보 출처 신뢰도 역시 남자노인과 여자노인 각각 건강전문가(65.6, 59.8%), 대중매체(19.5, 20.8%)의 순이었다. 운동 횟수는 남자노인은 '1주일에 1~2회'(43.8%), '매일'(21.9%)의 순이었으나, 여자노인은 '거의 하지 않는다'가 63.0%로 가장 많다고 응답하여 성별에 따른 차이를 보였다. 노인들이 현재 앓고 있는 질환은 남자노인은 '고혈압'(27.1%), '당뇨병'(21.9%), '뇌졸중'(19.8%)의 순이었고, 여자노인은 '고혈압'(32.4%), '당뇨병'(24.9%), '관절염'(15.0%)의 순으로 응답하였다. 급식서비스를 이용하는 이유로는 남자노인은 '혼자 차려먹기 귀찮아서'(28.1%), '친구를 만날 수 있어서'(25.0%), '경제적인 이유'(14.6%)의 순이었으나, 여자노인은 '경제적인 이유'(25.4%), '친구를 만날 수 있어서'(23.1%), '혼자 차려먹기 귀찮아서'(23.1%)의 순으로 응답하였다. 노인의 복지시설 급식서비스의 시행을 알게 된 경위는 남자노인과 여자노인 각각 전체의 36.5, 68.8%가 '집 가까이 있어서' 자연스럽게 알게 되었고, 30.2, 8.7%가 '가족의 소개로 알게 되었다고 응답하였으며, 남자노인과 여자노인의 65.6, 43.4%가 질환별 급식서비스가 '필요하다'고 응답하였다. 남자노인과 여자노인 각각 전체의 56.3, 72.3%, 52.1, 86.7%, 53.1, 89.6%가 급식의 맛, 위생 상태, 온도가 '만족한다'고 응답하여, 특히 여자노인의 만족도가 남자보인보다 훨씬 더 높다는 것을 알 수 있었다. 복지 시설 만족도는 남자노인과 여자노인 각각 전체의 78.1, 69.9%가 '만족한다'고 응답하였고, 이들 중 만족한다고 응답한 노인들을 대상으로 조사한 만족 이유로는 남자노인과 여자노인 각각 '식사를 제공하여서'(28.0, 37.2%), '노인들과 어울려 노는 것이 좋아서'(20.0, 22.3%), '시설이 좋아서'(18.7, 18.2%)의 순으로 응답하였다. 시설종사자 만족도는 '기타 및 무응답'이 남자노인과 여자노인 각각 49.3, 67.8%이었으며, 남자노인은 '시설 행정직원'(13.3%), '간호사'(9.3%), 여자노인은 '간호사'(12.4%), '시설 행정직원'(8.3%)의 순으로 응답하였다. 이상과 같은 결과들을 토대로 복지 관련 시설을 이용하는 노인들의 급식 및 복지서비스의 향상을 위한 기초자료로 제공 및 활용하고, 향후 경기 북부 실버산업의 활성화를 도모하고자 하였다.

        This study examined relationships among healthy food awareness, behavioral intention toward healthy foods, and actual behavior of Generation Y consumers. This study hypothesized that Generation Y consumers are aware of healthy foods and more likely to eat healthy foods while avoiding junk foods. According to structural equation modeling, all hypothesized paths were statistically significant, meaning that the three constructs in the model showed positive relationships with each other. Results showed that this group of college students is generally aware of healthy foods and have positive intentions toward healthy food choices. Therefore, university foodservice management needs to continue to improve their menus in order to attract this new generation of college student consumers.

        The purposes of this study were to identify the relative importance attributes, deduct the ideal combination of total utility and establish the marketing strategies for quality improvement of foodservice at funeral halls of medical centers. Data were collected using self-administered questionnaires from 102 funeral foodservice employees and 71 chief mourners or the bereaved. According to the results from a conjoint analysis, among foodservice employees at funeral hall, the relatively important attributes were 'taste (52.84%)', 'menu variety (24.419%)' and 'price (22.741%)'; among chief mourners or the bereaved, they were 'taste (50.004%)', 'price (31.388%)' and 'menu variety (18.008%)'. The ideal combination of total utility was different between funeral foodservice employees and chief mourners or the bereaved; it was higher among chief mourners or the bereaved (1.211) compared to funeral foodservice employees (1.169). Thus, there should an endeavor to improve the foodservice quality in funeral halls of medical centers through better taste, low price and similar menu variety.

        The purpose of this study is to analyze the gap in perceived importance-satisfaction rates of foreign Chinese students regarding the university foodservice selection attributes. All statistical analyses are conducted by the SPSS package program (ver 20.0). The results of the statistical analyses are as follows: The validity of the 22 food service selection attributes is being evaluated via the exploratory factor analysis and then five factors are extracted. The five factors are: ‘Factor 1. Cleanness and service quality’, ‘Factor 2. Food quality and price’, ‘Factor 3. Physical environment’, ‘Factor 4. Convenience’, and ‘Factor 5. Service environment’. According to the results of one-way ANOVA, physical environment showed that significant differences across the periods of residence in Korea and the eating frequency at on campus foodservices. On the other hand, the food quality and price, convenience, and service environment showed that significant differences across the periods of residence in Korea. In addition, according to the Importance-Satisfaction Analysis results, ‘ventilation of dining room’ is the key aspect that university food service managers should reinforce. In conclusion, in order to increase the customer satisfaction rates, the food service managers should not only improve the quality of food and service but also the physical environments of the food service facility.

        The purposes of this study were to understand the influence of social intelligence and positive psychology capital in foodservice employees on job satisfaction and to analyze whether employees’ positive psychology capital plays a moderating role between social intelligence and job satisfaction. Based on total 316 samples obtained from empirical research, this study reviewed the reliability and verified a total of 2 hypotheses and 1 proposition using the SPSS program. The results showed that social awareness (β=0.546) and social skill (β=0.152) in foodservice employees, were indicated to have positive (+) influence upon job satisfaction. And, employees’ positive psychology capital (β=0.307) had a significant positive (+) effect on the job satisfaction. However, the effect of the employees' social intelligence upon job satisfaction was not found to be moderated by positive psychology capital. Limitations and future research directions are also discussed.

        The purpose of this study was to analyze the post-purchase behavior of customers who experienced cognitive dissonance after exposure to a franchise foodservice advertisement. The study adopted cognitive dissonance theory to explain the dissonance resulting from the combination of advertisements and actual product that consumers received. In detail, the research hypothesized that cognitive dissonance will affect consumers’ post-purchase behavior as well as their efforts to reduce dissonance. Exactly 274 questionnaires were used in the analysis. The results showed that more than 80% of respondents were influenced by advertisements when purchasing menus, and 50% were unsatisfied when the provided menu “was not the same as the advertisement shown.” It was found that advertisement type did not significantly affect either group that experienced dissonance. In terms of satisfaction, however, the former group showed greater dissatisfaction when dissonance occurred (p<.001). Finally, there was a significant difference between the two groups regarding post-purchase behavior (p<.05). Customers with dissonance were likely to ‘express dissatisfaction directly to the store’, ‘leave negative reviews’, and ‘participate in negative word-of-mouth’. Thus, the results revealed that cognitive dissonance could significantly influence customer satisfaction and consequently lead to negative post-purchasing behaviors.

        본 연구에서는 한우를 이용하고 있는 초․중․고등학교 급 식소를 대상으로 한우 이용 실태 및 한우 메뉴 활용 실태를 파악하고, 이를 토대로 한우 저지방 부위를 이용한 메뉴를 개 발하여 학교급식 메뉴로서의 적합성을 평가해 보고자 하였다. 조사 결과, 학교급식에 다양한 한우 메뉴가 이용되는 것을 알 수 있었으며, 이용되고 있는 한우 메뉴들은 전반적으로 학 생들에게 인기가 있는 것으로 조사되었다. 또한 한우를 이용 한 후 모든 학교에서 학생, 학부모, 교사 모두 급식에 대한 만족도가 증가하였다고 응답하였다. 그러나 이에 비해 한우 이용 메뉴의 제공 빈도수는 높지 않았으므로, 한우를 활용한 메뉴 제공의 횟수를 높일 필요가 있을 것으로 보인다. 특히 한우의 저지방 부위를 이용할 경우 급식소에서는 다른 부위 에 비해 상대적으로 저렴하게 구매할 수 있으며, 한우 유통의 측면에서는 수급 불균형을 초래하고 있는 저지방 부위를 대 량으로 유통시킬 수 있는 한 가지 수단이 되므로, 급식소에서 의 한우 저지방 부위의 활용은 적극 권장되는 것이 바람직한 것으로 생각된다. 그러나 조사 결과, 한우 자체가 다른 육류 에 비해 높은 가격으로 형성되어 있으므로 원활한 한우 저지 방 부위 활용을 위해서는 관할지역 지원이나 정부 지원이 확 대되어야 할 것으로 사료된다. 경제적 어려움 이외에 조리법 과 관련하여 한우 저지방 부위를 급식에서 많이 활용하기 위 해서는 육질 개선(3.80), 다양한 소스 개발(3.74), 기존 메뉴를 위한 양념 개선(3.61) 등이 필요하다는 의견이 많았다. 본 연구진에서는 또한 위의 학교급식의 한우 이용 실태 조사를 바탕으로 한우 저지방 부위의 육질 개선 및 다양한 소 스, 양념 개선 등을 고려하여 급식에서 이용할 수 있는 저지 방 부위 활용 한우 메뉴 8종을 개발하였다. 개발된 메뉴의 특 징은 저지방 부위에 따른 질긴 식감을 부드럽게 만들기 위하 여 주 조리법 이외에 다양한 부 조리법을 사용하는 등 복합적 조리법을 활용하였다는 점과 메뉴에 이용되는 소스나 양념 을 다양화하였다는 것이다. 개발된 메뉴에 대해서는 다량조 리임을 감안하여 제조방법을 단순화시킨 공정도를 함께 제 시하여 추후 조리방법의 간소화를 위한 기초를 마련하였다. 개발된 메뉴의 급식 적용 가능성을 평가하기 위하여 단체급 식 종사자 및 외식업 종사자 30명의 JARS를 평가한 결과, 모 든 메뉴의 조사항목별 JARS도 모두 설정 기준을 충족하여 학교급식에 적용하였을 경우 높은 만족도를 기대할 수 있을 것으로 생각된다. 본 연구는 한우의 주요 조리법인 구이에 소비되고 있는 등 심, 안심 이외의 상대적으로 저렴한 한우 저지방 부위를 이용 한 급식 메뉴 개발의 필요성 및 타당성을 제공하는데 있어서 의미있는 시도라고 할 수 있다. 현재 한우를 이용하고 있는 학교급식의 만족도가 사용 전에 비해 향상된 것을 볼 때, 향 후 학교급식에서는 성장기 청소년들에게 영양적 가치가 뛰 어난 양질의 단백질 공급을 위하여 수입산 쇠고기가 아닌 저 지방 한우의 사용은 아직 한우 사용을 본격적으로 시도하고 있지 않은 학교급식에서도 신중히 고려해볼 만한 사항이라 고 생각된다. 이는 학생들에게 우리나라에서 생산된 안전하 고 품질 좋은 쇠고기를 섭취하게 하는 한편, 한우 제공자의 측면에서 이용 부위의 편중화를 줄이고, 다양한 부위별 판매를 이루어 한우의 수급 불균형 완화 차원에서도 도움을 줄 수 있을 것으로 기대할 수 있다. 이러한 다양한 기대효과를 거두기 위해서는 학교급식에 활용 가능한 한우 저지방 부위 를 이용한 다양한 메뉴의 개발이 더욱 활발히 진행되어야 하 며, 개발 메뉴에 대한 영양사 및 조리사 등을 대상으로 한 조 리교육이 필요할 것이다(Han & Lee 2010; 한우자조금관리위 원회 2006). 또한 한우 저지방 부위 사용 증대를 위하여 정부 나 지자체의 정책적․경제적 지원이 확대되고, 강조되어야 할 것으로 생각된다.

        The subject study was targeted towards nutrition teacher (dietitian) of elementary, middle, and high schools in Seoul areal. In addition, this study was to investigate the current status of school foodservice securement facilities & equipments and to analyze the obstructive factors for executing the HACCP system. The aim of this study was to provide base-line data so that a more efficient & effective sanitary management system for school foodservise can be settled in. All surveys were distributed and collected via email. A total of 305 survey papers were collected and out of these, 300 school results were analyzed and the results are as follows. The order of the securement facilities & equipment furnished were pre-handing equipments>washing>cooking>inspection>facilities>storage>space area>distribution equipments. The awareness of obstructive factors in executing the HACCP system was a total of 3.17 points and the order was as follows. The general obstructive factors>obstructive factors in the cooking staff executing the HACCP system>collaboration between the school/team leaders and the budget supporting department>obstructive factors in the nutrition teacher (dietitian) executing the HACCP system. School foodservice securement facilities & equipments in Seoul area must be renovated and modernized so as to improve its current situation. Furthermore, leadership programs are necessary to enhance nutritionists' understanding of the HACCP system and the cooking staff's competencies in instructing and supervising.

        This study was conducted to provide strategies for the reduction of plate waste and prevention of plate waste reuse in foodservice operations. To achieve these goals, we surveyed the entrepreneurs of foodservice operations, professionals in the field of foodservice management and food safety, and public officials working for food safety enforcement about their perceptions and strategies on plate waste management. The professionals’ survey indicated that definition of plate waste needed to be clear for understanding. Also Korean food culture insisting on abundance and variety table settings, foodservice owners' demands for cost reduction, and foodservice workers' insufficient safety perceptions were indicated to bring forth the practice to reuse plate waste. The effective ways to control plate waste management were systematic educational supports for Korean food culture upgrade among consumers and improvements of safety perceptions among owners, as well as workers. Also small portion size was needed to reduce plate waste.

        The purpose of our study was to examine the effects of dietitians' sanitation training performance on the sanitation knowledge and management practice level of culinary employees. We developed a questionnaire to measure the sanitation knowledge and management practice level of culinary employees and the sanitation training performance of dietitians. The questionnaire was completed by 53 dietitians and 337 culinary employees working in food service in the Chungbuk Province. We found that the sanitation training performance of dietitians had a significant positive affect on the sanitation knowledge and management practice level of culinary employees. There was also a correlation between sanitation knowledge and the management practice level of culinary employees. We conclude that sanitation training performance by dietitians is an effective method of improving the sanitation knowledge and management practice level of culinary employees. Thus, we suggest strengthening the sanitation training programs given by dietitians to improve food hygiene and safety in the foodservice industry.

        This study investigated and compared the brand personality of domestically run family restaurants with quick service restaurants. Information was elicited from respective patrons using self-administered questionnaires which asked questions on recognizable brand characteristic and attributes of each restaurant through image maps. Data from the self-administrated questionnaires were collected and analysed using comparative statistical analysis, including frequency, t-test, chi-square, factor analysis, reliability analysis and correspondence analysis. Overall, patrons identified 5 factors which they used to rank individual restaurants; sophistication, competence, likeableness, trendiness, and ruggedness. Overall results showed the family restaurants that scored highly on likeableness and trendiness were Outback and TGIF. Furthermore, Vips was the only family restaurants that scored highly in ruggedness. In relation to quick service restaurants, Lotteria scored highest for competence while McDonalds and Burger King scored best for sophistication. Limitations and future research directions are also discussed.

        The purpose of this study was to select market variables that a foodservice company should consider when expanding overseas and to regional market analysis by variables. Twenty-three different variables were derived from 17 previous studies. These were: population, urbanization rate, women employed, enrollment in tertiary education, gross domestic product, value added by service, total number of mobile cellular telephone subscribers, number of internet users, total Asian highway, inward foreign direct investment, total service imports, inflation rate, international tourist arrivals, energy use by industry, growth rates of the food consumer price index, access to urban sanitation, per capita total expenditure on health, male life expectancy at birth, adult literacy rate, contributing women family workers, passenger car, and country risk assessment. The selected variables were collected as secondary data from the UN, Asian Development Bank, International Bank for Reconstruction and Development, and Michigan State University.

        The objective of this study was to examine the effects of relationships between food service companies and their client companies by surveying employees working at cafeterias among a food service companies' client companies. For this purpose, previous research was reviewed, and confirmatory research was conducted using a questionnaire. In the questionnaire survey, the subjects were sampled through convenience sampling from the client companies of A Food Service Company, and 182 valid questionnaires were used in the analysis. The results of this study are summarized as follows. First, the characteristics of the relationship between the food service company and its client companies, which were reputation, communication, operation skill, and contact-point employees' service quality, had a significant effect on trust, and the effect was high in the order of contact-point employees' service quality, communication, operation skill, and reputation. Satisfaction was significantly affected by reputation, operation skill, and contact-point employee' service quality, but not by communication. The effect was high in the order of contact-point employees' service quality, reputation, and operation skill. In addition, reputation, communication, operation skill, and contact-point employees' service quality had a significant effect on long-term orientation, and the effects were high in the order of reputation, contact-point employees' service quality, communication, and operation skill. Second, with regard to the quality of relationships between a food service company and its client companies, trust had a significant effect on satisfaction. Third, among the factors related to the quality of relationships between the food service company and its client companies, trust and satisfaction had a significant effect on long-term orientation, and the effect of satisfaction was higher than that of trust. This study has scientific significance as one of only a few studies on factors affecting the long-term relationship between food service companies and their client companies, along with managerial implications that contact-point employees' capabilities are most important in service businesses, and thus efforts should be made at employing and educating them properly.

        In recent years consumers have become used to products geared toward a more convenient lifestyle, thus, the demand for salted-cabbage, for use in preparing Kimchi is increasing. This study aims to investigate purchasing factors, the satisfaction and demands of salted-cabbage, and to ascertain a marketing strategy for expanding the use of salted cabbage in food-service departments of schools. Self-administered questionnaires were collected from 131 buying agents who manage food materials for schools, and statistical data analysis was completed using the SPSS V.14.0 program. 46.9% of the participating respondents were from elementary schools, 27.7% from middle schools, and 25.4% were from high schools.. Most of the subjects (67.9%) recognized the salted cabbage retailed for foodservice, but 62.3% of these had not purchased them, due to both their lack of trust in the sanitation and raw material handling of the food product, and the high price. Respondents considered different factors when deciding whether or not to purchase: the origin (local or imported) of the cabbage, hygiene, and taste, as well as characteristics such as the cabbage weight, package weight, and package materials. The score of post-behavior intentions as well as overall satisfaction was rather high. Also, they perceived the need of strategic promotion for enlarging the market portion of salted-cabbage. These results will done the guidelines for diversifying the salted-cabbage market and for creating an added value of agricultural products in rural areas.

        The aim of this study was to better understand the factors of the mentoring function in the foodservice industry that improve the organizational commitment of subordinates, and to asses the roles that trust towards supervisors play in the relationship between the mentoring and organizational commitment. A survey was of subordinates who were conducting the mentoring in foodservice companies (hotels, family restaurants) located in Seoul and Gyeonggi area was conducted from May 1 to May 30, 2008. The questionnaires were distributed to 400 employees in 50 restaurants and, 341 of them were received and a total of 320 were finally analyzed. The results were as follows. First, the effect of mentoring functions on the organizational commitment of subordinates indicated that the career developing function and psychosocial function had a significant positive effect on the emotional commitment and normative commitment (p<.01), and the career developing function, psychosocial function and role modeling function had a significant positive effect on the enduring commitment (p<.01). Second, the mediating roles of supervisory trust in the relationship between mentoring functions and organizational commitment of subordinates indicated that supervisory trust mediated the relationship between the career developing function of the mentoring functions, and enduring commitment and normative commitment in addition, it met the mediating requirements in terms of the relationship between the role modeling function, and the emotional commitment, enduring commitment and normative commitment.
