        The milk fever and mastitis that occur during the colostrum period in dairy cattle cause great damage in the dairy industry by causing a rapid decline in the cattle’s health and decreasing milk production. In order to prevent this, gradual milking (GM), calcium injection with gradual milking (CG), and calcium injection with complete milking (CC) methods are used. However, differences in effectiveness between these methods have not been established. Therefore, this study was conducted to determine the effects of each preventive method on milk fever and mastitis. The results of this study showed that while there was a significant negative correlation of GM with milk fever and mastitis (r = –0.657, p < 0.05), there was no correlation of CG and CC with milk fever and mastitis. The incidence of milk fever was significantly lower in CG and CC than in GM (p < 0.05) but no differences in the incidence of mastitis were observed between the three groups. No significant differences in the rate of recovery from milk fever and mastitis were observed between the three groups. The recurrence rate of milk fever was significantly higher in CG and CC than in GM (p < 0.05), though no differences in the recurrence rate of mastitis were observed. This study showed an inverse relationship between the incidence rates of milk fever and mastitis when calcium injection was not used during the colostrum period. When calcium injections were used, the incidence of milk fever was reduced without affecting the incidence of mastitis regardless of the milking method, but the recurrence rate of milk fever was increased. The results of this study would be useful for controlling blood calcium concentrations and establishing efficient milking strategy in order to effectively prevent milk fever and mastitis in dairy cattle during the colostrum period.

        The creation of probiotic-containing fermented milk products for use by human is an important research topic and has high potential for development. Also, studies have shown that heat-killed probiotics are more stable and easier to use than live probiotics. However, as of this time, research has not been reported in Korea that has evaluated the product or functionality of fermented milk after the addition of heat-killed probiotics. This study was conducted to verify the physiological activity of heat-killed Enterococcus faecalis EF-2001 after its addition to Lactobacillus-fermented milk. Briefly, NFM normal fermented milk (NFM) was used as the control sample, whereas fermented milk with 100 μg/mL EF-2001 (EFM1) and fermented milk with 500 μg/mL EF-2001 (EFM2) were used as the treated samples. Among the samples, EFM2 had the highest acidity of 1.15, but no other factors significantly differed (p<0.05). Furthermore, EFM2 had the highest Lactobacillus count of 9.22 (p<0.05). ABTS, DPPH and FRAP were measured to determine the antioxidant activity of the samples. With respect to those parameters, EFM2 had the highest antioxidant measurements. Therefore, the study confirmed that the addition of E. faecalis EF-2001 to NFM is suitable with the standard and does not affect the quality of characteristics. In conclusion, the treatment sample had higher antioxidant activity than did NFM; this result may be used as a basic for further research and as a guideline for the manufacturing of heat-killed probiotic-containing NFM.

        The present study was designed to determine the effect of barn or cycle of grazing on changes of biochemical metabolites in prepartum and changes of milk composition in postpartum of dairy cows. For this purpose, a total of sixteen 25 months old Holstein primiparous dairy cows were allocated in two groups (n=8) with an average body weight of 571.61 ± 35.30 kg (Barn) and 578.10 ± 39.20 kg (Grazing). The study was conducted from June 2018 to October 2018. Results revealed that barn raised dairy cows had a higher increase in their serum albumin and calcium level on day 14 prepartum. However, the level of palmitic acid, saturated fatty acid increased significantly, and the level of fat, oleic acid, γ-linoleic acid, arachidonic acid and unsaturated fatty acids decreased significantly in barn raised dairy cow’s milk on day 14 postpartum. There were no significant differences observed with respect to all other biochemical metabolites, fatty acids and minerals between barn raised and cycle grazing dairy cows during prepartum and postpartum. Our study results could serve to a better understanding of barn raised cow with respect to changes of biochemical metabolites in prepartum and changes of milk composition, fatty acids and minerals content in grazing dairy cows in postpartum for estimating their physiological status.

        This study examined the relative importance and the effective utility of fermented milk by consumers. The questionnaire was developed by an in-depth interview and literature review and was surveyed on-line. Statistical analysis was carried out descriptive analysis, ANOVA, paired t-test, and conjoint analysis using the SPSS package. First, an analysis of the consumption status of fermented milk found that the consumption frequency was 1-2 times/week (36.2%), 3-4 times/week (26.5%). The product choice attributes of fermented milk were found to be the same with ‘taste’ (3.93) and ‘manufacturing date/expired date’ (3.92), rated the highest, followed in order by, ‘sanitary quality’ (3.82), ‘origin of ingredient’ (3.81). Comparative analysis of the importance and satisfaction level of the choice attributes of fermented milk showed that the choice attributes with lower satisfaction compared to importance were ‘taste’, ‘nutrients’, ‘manufacturing data/expired date’, ‘sanitation quality’, ‘price’, ‘manufacturing method’ and ‘certification of quality’ (p<0.001, p<0.01). ‘Price’ and ‘certification of quality’ were the choice attributes of fermented milk classified as ‘Focus Here’ because of its high importance and low satisfaction. The preferred combination of relative importance in choice attributes of the fermented milk was ‘domestic resource’, ‘Eat with spoon’, and ‘none additives’. Therefore, it is believed that sales will increase if dairy companies can improve the ‘price’ and ‘certification of quality’. In addition, the use of domestic ingredients in the development of new fermented milk products in the future could be an important marketing factor in consumer choice.

        The purpose of this study was to investigate the quality of dehulled soybean (DHSB), and the rapid preparation possibility of soybean milk with DHSB (SM-DHSB), and then the quality of SM-DHSB. In DHSB, the moisture content decreased, the crude protein, crude fat, minerals, and carbohydrate contents increased, and the isoflavone (daidzein, genistein and glycitein) content was similar to that of soybean (SB). The water absorption rate of DHSB for soybean milk preparation was higher than that of SB. In the results of SM-DHSB and soybean milk (SM) qualities, the crude protein content, total solid content, and the viscosity of SM-DHSB were higher, the yield and the proximate composition (except crude protein) were similar, and the Biji production rate, and total dietary fiber content of SM-DHSB were lower compared to the SM. In terms of the isoflavone contents of SM-DHSB, daidzein and genistein content were similar, and glycitein content was lower compared with the SM. Consequently, these results suggest the possible use of DHSB for rapid SM-DHSB preparation, because the soaking time was decreased by the high water absorption rate of DHSB in the SM preparation, and the quality of SM-DHSB improved compared to those of the SM.

        The purpose of this study was to investigate the factors related to milk consumption in university students. A questionnaire, comprised of general questions and factors related to milk consumption, was administered to 269 male and female university students (134 males, 135 females). The results show that the proportion of males reporting that they drink milk because “for good nutrition” was higher than that of females (p=0.0200). Additionally, males initiated more effort to drink milk than females (p=0.0192). Analysis of the groups classified according to milk consumption shows that the proportion of respondents exercising regularly was significantly high in the milk consumption group (p=0.0199). The proportion of respondents often consuming carbonated drinks as snacks was significantly low in the milk consumption group (p=0.0219). Whereas, the proportion of respondents consuming fruits as their main snack was significantly higher in the milk consumption group than in the non-milk consumption group (p=0.0063). Also, the milk consumption group shows significantly higher awareness of the importance of milk than the non-milk consumption group (p<0.0001). These results can be used as a valid foundation to provide university students with nutritional education relative to milk consumption and its associated benefits in the future.

        An experiment was carried out to assess the effect of feed selenium-lysine (Se-Lys) supplementation on milk compositions and serum biochemical indices in Saanen dairy goats in Korea. A total of twelve 36 months old Saanen lactating dairy goats (47±6.21 kg) fed the similar dry matter intake twice a day at 2% of BW (DMI) (10.9% moisture of concentrate and 19% moisture of roughage), milk yield (2.5 kg/d) and parity (2) were randomly selected and subjected for the present study, divided into two groups with six goats in each group. The goats in the control group received rice hulls (10 g/ day) only, and did not receive Se-Lys; goats in the treatment group were fed 0.06 g of Se-Lys with 10 g of rice hulls every day before feeding roughage for six weeks. The milk sample was collected every week, and its compositions were analyzed. The results of the present study showed that there is no significantly increased milk production in Se-Lys treated group goats when compared with control group goats. But, Se-Lys treatment significantly increased the milk protein content (3.98±0.16%), fat (3.72±0.27%), lactose (4.07±0.14%), total solids (12.51±0.28%) and urea (14.42±1.45 mg/dl) content as compared to the control group goats (p<0.05). The somatic cell counts (207,740±28.81 cells/ml) were significantly lower in the Se-Lys treated group than in the control group (p<0.05). Also, the results of the current study showed that supplementation of Se-Lys were significantly decreased the blood biochemical indices of IL-6 (34.34±6.04 pg/ml), TNT-α (0.56±0.22 ng/ml), MDA (5.07±1.03 ng/ml), GPx-1 (9.07±5.17 ng/ml), sCD4 (2.64±1.02 ng/ml) and sCD8 (5.08±2.08 ng/ml) level when compared with without addition of Se-Lys group dairy goats (p<0.05). On the other hand, the selenoprotein P (1,580.18±127.62 ng/ml) level was significantly higher in Se-Lys supplemented group than in the control group (p<0.05). Based on the study results, it was concluded that feed Se-Lys supplementation may improve milk yield with positively improved protein, fat, lactose, total solids, urea content, and biochemical indices without negative effects on milk production traits.

        A simple and fast analytical method based on liquid chromatography-tandem mass spectrometry was developed for detection of the veterinary drugs acetanilide, anthranilic acid, antipyrine, cyproheptadine, diphenhydramine, DLmethylephedrine, and phenacetin in bovine milk. The target analytes were extracted from milk samples by using acetonitrile followed by clean-up with C18 and liquid-liquid purification with saturated n-hexane. A reverse-phase analytical column was employed with a mobile phase comprising (A) 0.1% formic acid in distilled water and (B) 0.1% formic acid in acetonitrile to achieve the best chromatographic separation. Matrix-matched calibration curves (r2 ≥ 0.9986) were constructed using six concentrations (1, 2, 5, 10, 20, and 40 μg/kg) of drugs in the milk matrix. Recoveries at three drug-spiking levels (5, 10, and 20 μg/kg) ranged from 71.2% to 103.8% with intra-day and inter-day relative standard deviation (RSD) values of ≤ 8.6%. The calculated limits of quantification (LOQ) were 0.19-7.1 μg/kg.

        The aim of this study was to optimize the best recipe to make acorn bread containing milk as a functional food. The color value, textural, and sensory properties of the acorn bread added with 10~40% ratio of milk were measured to develop the best recipe. As a result, the L-value of color increased with the amount of milk added, but the a- and b-values decreased. As the textural measurement, the hardness increased with increasing milk added. Cohesiveness and springiness decreased, but the gumminess and brittleness increased with the addition of 20% milk, and decreased with further addition. The sensory evaluation revealed color, taste, and overall acceptances to have high scores at 20% addition of milk. Softness and chewiness were good at 10% addition. During the storage periods at room temperature, the L- and b-values increased with the addition of milk, whereas a-value decreased. In freezer storage, the L-value increased with milk content added, but the a- and b-values decreased during the storage periods. The textural properties increased during the storage at room temperature. The addition of milk decreased the cohesiveness and springiness, but the gumminess and brittleness increased significantly after one day storage. In freezer storage, all textural properties increased significantly during the storage periods, but the hardness decreased after two days storage. With the increasing amount of milk added increased the cohesiveness, springiness, and the gumminess except for four days, but decreased hardness and brittleness after two days storage. Therefore the addition of milk in acorn bread improved the textural properties significantly.

        이 논문은 우유자조금 지출의 경제적 효과를 계측한 것이다. 특히, 자조금 지출에 따른 광고효과로 백색시유에 대한 수요증가와 그에 따른 백색시유 판매수입 증가에 국한하여 그 효과를 추정하였다. 다섯 가지 형태의 백색시유 수요함수 추정을 통해 백색시유에 대한 자조금탄성치를 추정하고 이를 통해 자조금 1원당 경제적 효과를 계측하였다. 추정결과, 우유자조금 1원당 경제적 효과는 단기(1달)에서 3.8원~5.1원의 경제적 효과가 있고, 다항시차모형(PDL model)을 적용하여 장기 누적효과(1년)를 계측한 결과 자조금 1원당 8.8원~10.5원의 경제적 효과가 있는 것으로 계측되었다.

        Insects are gaining recognition as an alternative source of protein. Moreover, Protaetia brevitarsis was listed as a general food ingredient by Korean Ministry of Food and Drug Safety. As a result, rearing insects has been growing in Korea and domestic farms have begun mass rearing of insects. In order to produce high quality insects, studies on the development of safe and nutritious feed sources are needed. Given the cost of rearing insects, agricultural and industrial by-products are good sources for feed. The efficient utilization of the by-product can help in reducing the cost of production and preventing environmental pollution. In this study, soybean milk residue was investigated for its effects on developmental characteristics of P. brevitarsis until larvae pupated. With three different kinds of feed on the larvae of beetles, the larvae with 10% of soybean milk residue showed the best result for the larval survival rate and growth rate of this beetle. In addition, the feed with 10% soybean milk residue had significantly shorter than control feed (only fermented oak sawdust). However, 20% of soybean milk residue decreased larval weight and extended larval development period. Therefore, we concluded that soybean milk residue were used as a nutritional feed source to promote larval growth and produce quality insects.

        Milk fever is a metabolic disease with manifestation of clinical signs due to hypocalcemia, which usually occurs within 48-72 h after delivery. However, even after a successful treatment of milk fever, recurrence of milk fever may occur, and studies on recurrent milk fever are still lacking. Accordingly, the present study was conducted for the purpose of identifying the characteristics of recurrent milk fever according to farm, season, parity, and dystocia that can cause physiological changes in the mother during peri- and postpartum periods. The analysis results showed that the incidence rate of initial and recurrent milk fever according to breeding farm was 5.7%-14.1% and 3.1%-7.2%, respectively, demonstrating a positive correlation between the initial and recurrent milk fever (r = 0.613, p < 0.01). With respect to season, the incidence rate of initial and recurrent milk fever during summer was 12.3% and 7.5%, respectively, which were significantly higher than that of other seasons (p < 0.05). In addition, the recurrence rate, the ratio of recurrence relative to initial milk fever, was highest during summer with 62.7%. Regarding parity, the incidence rate of initial and recurrent milk fever in 3rd parity was 11.1% and 5.8%, respectively, which was significantly higher than in 1st and 2nd parity (p < 0.05). Furthermore, the recurrence rate in 4th parity was 64.1%, showing a pattern of increase in incidence rate with increase in parity. Finally, there were no differences in the incidence rate of initial and recurrent milk fever according to eutocia and dystocia. The findings indicated that the incidence rate of initial milk fever should be reduced to effectively prevent the recurrent milk fever, while animals with 3rd parity or higher should be expected to occur high rate of recurrent milk fever, especially during summer, and the necessary preparations should be made for intensive treatment of such individuals.

        In this study, the effect of daily short-distance walking exercise on milk production and metabolic status of the lactating dairy cows was investigated. The experiment was conducted with 10 lactating dairy cows comprising 2 groups (5 dairy cows/group), which were walking activity and non-walking activity. The walking activity (WA) group lactating dairy cows walked outdoors for 1 km/d, and the non-walking activity (non-WA) lactating dairy cows were maintained within a cowshed from 18thApril to30th May. The activity volume of the neck was not significantly different between the groups, but the activity volume of the leg was higher in WA group compared with non-WA (p<0.05). The rectal temperature was higher in the WA group (38.6 ℃) compared with non-WA (38.2 ℃) (p<0.05). No significant differences in dietary NE intake, milk production and milk composition were found between the groups. The plasma cortisol concentration was higher in WA group (2.14 μg/dl) compared to non-WA (0.95 μg/dl) (p<0.05). However, plasma cortisol level of WA dairy cows was significantly decreased as compared with non-WA cows. On the contrary, the level of plasma melatonin was increased in WA cows than that of non-WA dairy cows. It may be interpreted as a change in physical fitness. From this study, we suggest that walking activity can be improved energy balance. Further investigation is needed to determine whether different combinations of distance, rate or doing in morning or afternoon will stimulate energy balance.
