        Ricania sublimata are insects invaded in South Korea from China 2011. It has been happening continuously since invaded and It is established and continues to increase and occur in various crops such as persimmons, peaches, and apples. The nymphs and adults of R. sublimata causes damage by sucking the stems and leaves of trees. Yellow, blue, and white sticky traps (25x15cm) were installed in the 1000m2 Omija(Schizandra Chinesis Baillon) orchard september 2020 and the trap captures by color was investigated. In addition, yellow sticky traps were installed at heights of 1m, 1.7m, and 2m, and the trap captures according to the height was investigated. As a result of attraction according to the color of the sticky trap, yellow trap was the most attractive, blue and white traps had little attraction. And result of capture according to the yellow sticky trap height the most were caught at 1.7m height, followed by 1m and 2m in that order. Therefore, it is considered reasonable to investigate the density and monitoring of R. sublimata using yellow sticky trap.

        In this study, effect of mixing ratio of -carrageenan and glucomannan on quality characteristics of jelly incorporated with omija concentrate were analyzed. Through previous studies, the concentration of the gelling agent was fixed at 1.5% of the weight of the jelly. As a control, omija concentrate jelly using a single gelling agent was prepared. The texture of the jelly using glucomannan alone could not be measured because it was difficult to maintain its shape. The texture was changed according to the mixing ratio of -carrageenan and glucomannan. When -carrageenan was mixed with glucomannan, the water holding capacity was increased. Jelly prepared in mixing 2:1 ratio of -carrageenan and glucomannan was observed to have the highest hardness, springiness, gumminess, cohesiveness, and chewiness. Also, in order to manufacture omija jelly that maintains high water retention for a long period of time, it is optimal to mix -carrageenan and glucomannan at a ratio of 1:2.

        Omija seed oil was extracted from Omija seeds, a by-product of Omija, using an eco-friendly pressed extraction method. Physicochemical properties and antioxidant activities of 12 extracts using different combinations of seed moisture content (5, 7.5, and 10%) and extraction temperature (25, 49, 75, and 100℃) were then investigated. The highest extraction yield was 31.33% at moisture of 5% and temperature of 75℃. The lowest acid value was 4.18±0.25 at moisture of 5% and temperature of 49℃ or moisture of 7.5% and temperature of 25℃. Peroxide value, iodine value, and saponification value were the lowest at 0.64±0.56 meq/kg, 159.38± 6.03, and 57.60±9.40, respectively, at moisture of 5% and temperature of 25°C. The content of total polyphenolics was the highest at 4,413±125 mg TAE/100 g when the moisture content was 10% and the extraction temperature was 25℃. DPPH radical scavenging activities of oil extracts at 20~100 mg/mL were 28.68±7.30~87.65±2.20%. The maximum antioxidant activity and IC50 were 87.65±2.20% and <20 mg/mL, respectively, for extract obtained at moisture of 10% and temperature at 100℃. As a result, the extraction yield, acid value, peroxide value, iodine value, saponification value, and so on were excellent at moisture content of 5% and extraction temperature of 25℃ or 49℃. However, the content of total polyphenolic compounds and antioxidant activity were the highest at moisture of 10% and extraction temperature of 100℃. In conclusion, extracting Omija seed oil from Omija seeds, a by-product of Omija, is effective with a pressed extraction method.

        Fresh Omija (Schisandra chinensis) has good marketability, but its quality is difficult to maintain during storage and distribution. Freezing and freeze-thawing treatments can be utilized for the quality maintenance and processing of cold press juice. In this study, the color, antioxidant properties, and the major components of soaked liquor from Omija with freeze-thawing treatment were analyzed during the extraction periods. Each of the frozen and freeze-thawed Omija samples was soaked in 35% ethanol, extracted for 15 days, and used for analysis. The frozen and freeze-thawed samples showed a tendency toward better color and higher antioxidant activity and major component levels than the controls, and freeze-thawing was the best. The results of this study showed that freeze-thawing treatment improved the color, antioxidant properties, and level of the major components of Omija soaked liquor, and freeze storage is suitable for making soaked liquor.

        This study was conducted to investigate the antioxidant activity of Kochujang following the addition of Omija (Schizandra chinensis Baillon) by-product extract powder. This study specifically investigated the total levels of phenolics and flavonoids, the activities of DPPH and ABTS radical scavenging, and FRAP (ferric reducing antioxidant power). Our results showed that the total phenolic and flavonoid contents of unmodified Kochujang were 4.06 mg TAE/g and 2.87 mg TAE/g, respectively, and that the total phenolic and flavonoid contents of Kochujang with added Omija by-product extract powder were 3.89~5.19 mg TAE/g and 3.11~5.35 mg TAE/g, respectively. As more Omija by-product extract powder was added, the more the total levels of phenolic compounds and flavonoids increased. This study found that DPPH radical scavenging activity in unmodified Kochujang was 25.8% and that in Kochujang with added Omija by-product extract powder was 27.1~39.7% each. These results indicate that Omija by-product extract powder has possibility not only in Kochujang products but also as a functional food with antioxidant activity characteristics. These results also indicate that adding Omija by-product extract powder to Kochujang had significant effects on overall acceptability. Thus, the addition of 5 or 10% of Omija by-product extract powder is desirable for making Kochujang.

        Vinegar is a widely used acidic seasoning and can be manufactured using a variety of methods and basic materials such as grains, wheat, and fruits. It was produced through an acetic acid fermentation process carried out by acetic acid bacteria. These bacteria not only produce a variety of metabolic compounds but also alter the acidity and flavor of the product. Some vinegar also contains antioxidants, antineoplastic compounds, and other bio-metabolites, which can have a beneficial effect on health. This study was conducted to investigate the quality of fermentation black rice vinegar produced by fermented Omija (Schizandra chinensis Bail.) extract for improving vinegar’s preference. The total polyphenol content and DPPH scavenging activity of the vinegar created with fermented Omija extract were 317.5 ㎍/㎖ and 84.6%, respectively. But, the vinegar without Omija extract was 239.3 ㎍/㎖ and 72.5%, respectively. Glucose content of the vinegar added with the extract was 3.55∼4.17%, fructose content was 2.23∼2.71%, citric acid content was 4.23∼5.38% and malic acid content was 0.27∼0.62%. Glucose, fructose, citric acid and malic acid contents of the black rice vinegar added with the extract were higher than those of the vinegar without the Omija extract. The content of essential free amino acids in the vinegar added with the extract was 32.8∼42.7 mg% and GABA content was 0.45∼1.72 mg%. The vinegar with the fermented extract showed antimicrobial activity against Escherichia. coli, Bacillus subtilis and Pseudomonas aeruginosa.

        Onion vinegar, which has an undesirable flavor and taste formed through alcohol and acetic acid fermentation, possesses additives that can improve sensory quality. Thus, the objective of this study was to present an optimized blending ratio using response surface methods for an onion vinegar beverage by adding Omija extracts. This study was performed to formulate an Omija-onion vinegar beverage (OOVB) and investigate its antioxidant properties and antimicrobiological effects. The experimental design was conducted using an optimal mixture model of response surface methodology which generated eighteen experimental trials with overall acceptance as the responses. According to the statistical analyses, OOVB demonstrated a ratio containing onion vinegar, water, brown sugar, apple extracts and Omija extracts of 10, 72.3, 4.4, 12.2 and 1.1 (weight ratio), respectively. The OOVB revealed desirable nutrition values (phenolics compounds 19.3 mg/100 g, total flavonoids 3.1 mg/100 g, quercetin 1.9 mg/100). The OOVB displayed antibacterial effects in Gram negative Enterobacter aerogenes, Escherichia coli, Salmonella typhimurium and Gram positive Staphylococcus aureus. The findings revealed that OOVB was 18% in DPPH radical inhibitionand 11% in superoxide dismutase-like activity thus, OOVB has nutritional value and good quality as well as potential biological activities for functional beverages.

        This study added stevia leaf powder at ratios of 0.5, 1.0, 1.5, and 2.0 percent to Omija-pyun (Schisandra chinensis Jelly) as a natural low-calorie sweetener instead of sugar which is added to Omija-pyun in considerable amounts to evaluate quality characteristics and antioxidant activities compared to the control group with the addition of sugar. Moisture content of Omija-pyun expanded by increasing the measurement of stevia leaf powder (p<0.001), pH (p<0.01) and sugar content (p<0.001) decreased. L-values and b-values revealed a tendency to increase by adding more stevia leaf powder, but a-value revealed a tendency to decrease (p<0.001). Hardness (p<0.001) and chewiness (p<0.05) decreased by adding more stevia leaf powder. Based on the consumer preference evaluation, Omija-pyun with the addition of 0.5 percent stevia leaf powder was the most preferable in terms of color and flavor (p<0.001). The control group and Omija-pyun with the addition of 0.5 percent stevia leaf powder was the most preferable in terms of taste and texture (p<0.001). There were significant differences in the organoleptic properties except hardness between the samples by quantitative descriptive analysis. The control group revealed the highest preference in terms of redness and transparency, and redness and transparency tended to decrease by adding more stevia leaf powder (p<0.001). Organoleptic properties on bitterness and sourness were enhanced by adding more stevia leaf powder in the principal component analysis (PCA). Regarding antioxidant properties, total phenol compounds and flavonoid contents of Omija-pyun increased by adding more stevia leaf powder, and DPPH radical scavenging capacity also increased (p<0.001). Based on results, it is preferable to serve Omija-pyun with the addition of 1.0 percent stevia leaf powder instead of sugar within the context of quality and antioxidant activity.

        음청류에 이용할 수 있는 오미자 추출액을 얻기 위해 증류 수, 수돗물과 Ca, Mg 등의 미네랄이 풍부한 청송약수를 이용 하여 오미자 추출액을 제조하고 이화화적 특성을 측정하였 다. 오미자 추출조건으로는 25배의 용매비로써 실온에서 6, 9, 12, 15시간, 65℃에서 2, 3, 6, 9시간 동안 추출하였다. 추출 용액의 명도(L, Lightness), 적색도(a, redness), 황색도(b, yellowness), 가용성 고형분(solid content), 산도(acidity), pH, DPPH 라디칼을 소거능을 이용한 전자 공여능(Electron Donating Ability, EDA)으로부터 전반적으로 양호한 추출조건을 구한 결과는 다음과 같다. 실온에서는 물의 종류에 상관없이 12시간 추출 하는 것이 적당하였으며, 65℃ 가온 상태에서는 6시간 추출 함이 적합함을 알 수 있었다. 가온 상태에서 약수의 경우 증 류수, 수돗물에 비해 빠른 추출이 가능하였으며, 추출 시간이 증가함에 따라 산도는 낮아지나, 고형분의 양과 DPPH 라디 칼을 소거능은 증가하였다. 전반적으로 고려할 때에 오미자 추출을 위한 가장 적합한 물로는 미네랄이 풍부한 약수이며, 다음으로 수돗물 그리고 증류수 순서임을 알 수 있다.

        The quality characteristics of Omija (Schizandra chinesis Baillon) extracts under various extraction temperatures and times were examined. The pH level of the extracts ranged from 3.35-3.47. The sugar and solid content of the samples significantly increased with increasing extraction temperatures and times (p〈0.01). In contrast, the lightness of the extracts decreased with increasing extraction temperatures and times (p〈0.001). In a palatability test, extracts boiled at 80℃ for 30 minutes scored high in terms of color, flavor, turbidity, sourness, and overall acceptability. Hydroxy radical scavenging activity and polyphenol content of the extracts significantly increased with increasing extraction temperatures and times (p〈0.01). Furthermore, direct correlations between hydroxy radical scavenging activity and polyphenol content (or flavonoid content) were established through simple regression (r〉0.9) for different extraction temperatures and times. From these results, extracts boiled at 80℃ for 120 minutes is the best to product omija beverage considering functionality and sensory evaluation as well.

        Omija component was known to possess natural odor, taste, color, and various general characteristics. Omija extraction was extracted using ethanol as a solvent. Omija extract showed a red-purple color of some viscous liquid state. Some conclusions from natural Omija extract were obtained as follow. The result of antimicrobial experiment to add Omija extract, the number of microbial population showed negative reaction from 3 days after it cultivated. This phenomenon could confirm that Omija component affected to antimicrobial effect. The result of dyeing experiment to add Omija extract, fiber dyeing effect showed with some ivory color after dyed to cotton and silk. Also, this phenomenon could confirm that Omija component affected to natural dyeing effect from observated dye state with biological microscope(BM). The result of instrumental analysis, inorganic components of K(109.60ppm), Na(3.500ppm), Ca(1.205ppm), Mg(0.900ppm), Li(0.350ppm), Si(0.380ppm), Cu(0.250ppm), Fe(0.125ppm), Zn(0.090ppm), etcs from Omija were ascertained with ICP/OES, and organic components of benzene(10.808), borny lacetate(11.289), phenol(14.183), β-terpinene(15.840), α-terpinolene(17.616) etcs from Omija were ascertained with GC/MSD.

        Natural Omija belongs to magnoliaceae was known to possess natural odor, taste, color, and various pharmaceutical & chemical characteristics. Omija extraction was extracted using ethanol as a solvent. Omija extract showed a light red-violet color of viscous liquid state. Some conclusions from the result of characteristic experiment were obtained as follows. From the result of antimicrobial experiment, occurrence of staphylococuss aureus and aspergillus niger as microbes was decreased according to the passage of time. This phenomenon could know that Omija component is affected to antimicrobial effect. From the result of dye experiment, fiber dyeing showed with some ivory color after dyed to cotton and silk. This phenomenon could know that Omija component is affected to dyeing effect from observation of scanning electron microscope(SEM). From the result of instrument analysis, inorganic components of K(107.30ppm), Na(2.110ppm), Ca(0.935ppm), Mg(0.891ppm), Li(0.270ppm) etcs from Omija were detected with ICP/OES, and aromatic components of benzene(10.808), a-pinene(13.996), phenol(14.183), β-terpene(15.840), a-terpinolene(17.616) etcs from Omija were also detected with GC/MSD.

        오미자 열매 추출물의 첨가량을 0-50%로 달리하여 식혜를 제조한 후 물리화학적 및 관능적 품질특성을 측정하고 각 특성사이의 상관관계를 살펴보았다. 추출물의 첨가량이 증가함에 따라 식혜의 pH는 유의적으로 감소한 반면 가용성 고형분 함량 및 적색도(a*값)는 증가하였다(p<0.05). 한편, 밝기를 나타내는 L*값과 황색도를 나타내는 b*값은 추출물의 첨가량과 직접적인 관계를 나타나지 않았다. 관능적 품질특성 중 색, 신맛, 단맛은 추출물의 첨가량과 유의적인 관계를 나타내었다(p<0.05). 상관분석 결과 추출물의 첨가량은 L*값과 a*값을 제외한 모든 물리적 및 관능품질 특성과 유의적인 관계를 나타내었다. 소비자 기호도검사에 의하면 10% 오미자 열매 추출물을 첨가한 식혜의 전체적인 기호도가 다른 시료군에 비해 유의적으로 높음을 알 수 있었다(p<0.05).

        This study was conducted to examine contents of mineral, viscosity in the Demi-glace with added quantity of Omija extracts. Firstly, The level of mineral content in order was K, Na, P, Ca, Mg, Fe, Zn, Mn, B. The more Omija extracts, Ca, Mg, Fe, Zn, Mn, B was increased, but K, Na, P was decreased. Secondly, Viscosity of control was 538.13cP at rpm 100, and the sauce added with Omija extracts was 464.80~578.00cP. Regardless of Omija quantity there was Psedoplastic characteristic which showed apparent viscosity was decreased even though shear rate was increased. Thirdly, Sensory characteristics of Demi-glace sauces based on preference of 5 tastes, It was founded that 2% added Omija was the best, and 1%, 0%, 3%, 5% added Omija was next in order. Finally, Sensory intensities of Demi-glace sauces based on gender and occupation of the 5 tastes : As the sourness, bitterness, hotness, salines taste of all over was Omija added quantity was many more, appeared strong intensity, it was sensory intensities of 5% Omija added sauce was the highest. But sensory intensities of sweetness, Male showed 2% Omija added sauce, Female student and cook showed control was the highest.
