        An experiment was carried out to determine the effect of cooling water treatment with ionized calcium on calcium content, extending the shelf-life and quality of fresh chicken meat in poultry slaughtering process. The subjects were divided into four groups: control (0% without ionized calcium) and treatment groups (0.5, 0.7, 0.9% ionized calcium). The results indicated that the cooling water treatment with ionized calcium exhibited the bacterial counts of 105 CFU/cm2 in surface of chicken meat, and maintained the quality of fresh chicken meat with extending the shelf-life above seven days when compared with that of control group. The results found that the cooling water treatment with ionized calcium could produce the calcium enrichment of chicken meat as nine times higher in calcium content of chicken meat when compared with that of control group. pH, water holding capacity, TBARS (MDA mg/kg) in chicken meat via the cooling water treatment with ionized calcium showed 6.4, above 50, below 0.10, respectively, with preventing the oxidation of unsaturated fatty acids. Lightness (L*) as a chicken meat color, shear force indicated above 60, below 1.70 kg/0.5 inch2, respectively.

        In this study, to develop high-efficiency environmental improvement system that can be combined with hot and cold potable water supply to poultry air conditioning for the summer increase heat stress relief and winter feed efficiency through optimal design hwihan The aim of this study was to provide basic data. As a cage the size of the system installed is 100m2 test capacity 20RT district heating and cooling of air-to-water heat pump and the control was composed of electric hot water boilers. First of cage sizes for heating load design, materials, heat pump capacity, air capacity, storage tank, drinking water tank capacity, etc. were determined. The capacity of the heat pump was set to 20RT cage captive birds are erected as vertically and horizontally × height × (13 × 21 × 4.5m). Storage tank 3 tons and capacity of 10 tons potable water tank was designed. In the future, the size of the cage, designed according to the best breeding two numbers are needed.

        A tremendous increase in the human population has put poultry industry under an increased pressure to meet steep increase in the demand. Poultry is contributing 25% of the total world’s meat production and lesser cost of investment per bird makes it more suitable for the further breeding programmes. Major poultry diseases frequently lead to cardiac damage and cause huge economic losses to poultry industry due to mortality. The in vitro embryonic stem cell (ESC) technology has a futuristic approach for homogeneous populace of differentiated cells, for their further transplantations. During in vitro conditions the differentiated cell populace can be used in grafting and transplantation processes to regenerate damaged tissues. Therefore, the current study targeted the use of spermatogonial stem cells (SSCs) in the poultry production system through cardiac regeneration. The current study will also open new boulevard for the similar kind of research in other livestock species for the management of heart diseases.

        This experiment evaluated the interaction effect of extreme heat diet(EHD), inverse lighting, and cool water on the growth performance of broiler chickens under extreme heat stress. There were 4 experimental groups (T1: EHD 1, 10:00-19:00 dark, 19:00-10:00 light, cold water 9℃; T2: EHD 2, 10:00-19:00 dark, 19:00-10:00 light, cold water 9℃; T3: EHD 1, 09:00-18:00 dark, 18:00-09:00 light, cold water 14℃; T4: EHD 2, 09:00-18:00 dark, 18:00-09:00 light, cold water 14℃), each group composed of 25 broilers and the experiment was repeated 3 times. EHD 1 contained soybean oil, molasses, methionine and lysine. EHD 2 contained all nutrients of EHD 1 and vitamin C additionally. As a result, T1 and T2 displayed higher body weight increase and diet intake compared to T3 and T4 (p<0.05). The weights of their liver and gizzard were similar but the weights of the thymus and bursa F were higher for T1 and T2 compared to that of T3 and T4 (p<0.05). It was observed that T1 and T2 displayed higher concentrations of blood triglyceride, total cholesterol, HDL-C and blood sugar compared to that of T3 and T4 but LDL-C level was higher for T3 and T4 compared to that of T1 and T2 (p<0.05). T1 and T2 displayed higher levels of immunity substances such as IgG, IgA and IgM compared to T3 and T4 but the blood level of corticosterone displayed to be lower for T1 and T2 compared to T3 and T4 (p<0.05). The T1 and T2 contained a higher amount of fecal lactobacillus compared to that of T3 and T4 but the T3 and T4 contained a higher amount of fecal E. coli, total aerobic bacteria, coliform bacteria compared o that of T1 and T2 (p<0.05). T1 and T2 displayed higher concentrations of cecal acetic acid, ropionic acid and total short chain fatty acids compared to T3 and T4 but T3 and T4 displayed igher concentrations of butyric acid, isobutyric acid, valeric acid and isovaleric acid compared to T1 and T2 (p<0.05). These results have been observed that broiler chickens exposed to extreme eat stress with feeding EHD, inverse lighting and cold water would improve blood lipid, and elevate the production of immunity substance, beneficial microorganisms, and short chain fatty acids. This provision would also reduce the blood sugar consumption rate as energy sources and these effects will improve the growth performance of the broilers exposed to extreme heat.

        가금에서의 스트레스 지표는 혈중 corticosterone의 농도, heterohphil/lymphocyte 비율 뿐만 아니라 사료 및 물의 섭취량, 체중, 산란율, 이상행동 등도 포함된다. 사육온도, 바닥형태, 사육밀도, 수송, 부리자르기, 제한급이, 질병 등이 사육현장에서 가금이 경험할 수 있는 스트레스 요인이 될 수 있다. 다양한 스트레스 지표 중에서 특정 지표만으로 스트레스의 여부를 평가하는 것은 오류를 범할 수 있으므로 동시에 여러 지표를 이용하여 평가하는 것이 스트레스에 대한 평가의 신뢰도를 향상시킬 수 있다.

        Salmonella are widespread in humans and animals worldwide and are public health concern as causative pathogens of food poisoning. The aim of this study was to survey the level of Salmonella contamination in a chicken slaughter plant and to analyze the characterization of Salmonella isolates by serotype, antimicrobial resistance and phage type. Among 170 feces of transport box from 17 farms and 100 carcasses originated 20 farms, Salmonella were identified in 54 feces (13 farms) and 29 carcasses (11 farms). A total of 150 Salmonella isolates from feces and 73 isolates from carcasses were analyzed. One hundred and forty five isolates (96.7%) from feces and 68 isolates (93.2%) from carcasses were Salmonella enteritidis (S. Enteritidis) and 3 isolates and 2 isolates from feces were S. isangi and S. blockley, respectively. Three isolates from carcasses were S. blockley, and S. isangi was not detected at carcasses. The most common phage type (PT) of S. Enteritidis was PT 1, followed by PT 1c, PT 21, PT 24var, PT 6a, and PT 7. Antimicrobial resistance testing was performed by disk diffusion method using 19 antibiotics. The highest percentage of antimicrobial resistance of isolates from feces and carcasses were found to the following antibiotics: trimethoprim/sulfamethoxazole (Sxt, 83.3% and 93.2%), tetracycline (Te, 40.0% and 15.1%) and ampicillin (Am, 16.0% and 20.5%). Also, the most frequent multiresistance pattern of isolates from feces and carcasses were Te-Sxt (34.0%) and Am-Sxt (19.2%), respectively.

        This field study was performed to investigate indoor concentrations of 22 odorous compounds, which are regulated by the domestic act, emitted from poultry buildings through on-site visit per month from July, 2011 to June, 2012. Of 22 odorous compounds, the highest concentration was found in ammonia with ppm unit, followed by hydrogen sulfide, methyl ethyl ketone, propionic acid and butylic acid with ppb unit of approximate hundred level. The other odorous compounds were detected below ppb unit of approximate ten level. A remarkable finding is that there is no poultry building which showed the airborne levels of five aldehyde- based odorous compounds (acetaldehyde, propionaldehyde, butyraldehyde, n-valeraldehyde and i-valeraldehyde). Generally there was no consistent concentration distribution of odorous compounds between poultry building applied with forced ventilation and poultry building applied with natural ventilation. It was found, however, that there was considerable concentration difference among odorous compounds. In temporal distribution of odorous compounds, their concentrations in summer season (June to August) when ventilation rate in poultry building decreased relatively were generally higher than those in winter season (December to February) when ventilation rate in poultry building is relatively high. The seasons of spring (March to May) and autumn (September to November) showed middle levels of odorous compounds between summer and winter. The limit of this study is that unexpected conditions such as clearance of poultry building, poultry shipment and disorder of air pump were not controlled intentionally on the on-site investigation days.

        The purpose of this study is to investigate concentration and emission factor of 22 odorous compounds, which are regulated by the domestic act, emitted from poultry buildings by on-site investigation. The odorous compounds which were detected in at least one poultry building were ammonia, hydrogen sulfide, methyl mercaptan, dimethyl sulfide, dimethyl disulfide, trimethyl amine, styrene, toluene, xylene and methyl ethyl ketone whereas other 12 odorous compounds were not detected in poultry buildings. Generally there was no consistent concentration distribution of odorous compounds between poultry building applied with forced ventilation and poultry building applied with natural ventilation. It was found, however, that there was considerable concentration difference among odorous compounds. In monthly distribution of odorous compounds, their concentrations in September and October when ventilation rate in pig building decreased relatively were generally higher than those in July and August when ventilation rate in pig building is relatively high. On the contrary, emission factors of odorous compounds, in terms of ammonia and hydrogen sulfide, in poultry building were relatively higher in July and August than September and October. The limit of this study is that unexpected conditions such as clearance of poultry building, poultry shipment and disorder of air pump were not controlled intentionally on the on-site investigation days.

        The purpose of this study was to investigate the Jorim of meat and poultry in Korean modern cookbooks. Jorim is a traditional Korean method of braising meat and poultry with soy sauce or gochujang. This study evaluated jorim in 10 books published in Korea from the end of 1800 to 1987 and to develop cooking models of beef jorim, pork jorim, and chicken jorim. The main ingredients in the jorim were beef, pork, chicken and pheasant. Other ingredients in the jorim included pine nuts, beef, eggs, radishes, bean sprouts, onions, bamboo shoots and pepper. In Sieuijeanseo, which was published at the end of the nineteenth century, the method called for braising meat directly in soy sauce. However, other modern cookbooks suggested boiling the meat prior to braising. Despite jorim being a popular sub-dish in Korea, there has been a decrease in the varieties available.

        The changes in DNA damage were investigated during storage after irradiation. Beef, pork and chicken were irradiated at 1.0, 3.0 and 5.0 kGy and stored for 6 months at -20℃. The comet assay was applied to the sample muscles at the beginning of irradiation and at the end of storage. Muscles were isolated, sliced, and the suspended cells were embedded in an agarose layer. After lysis of the cells, they were electrophoresed for 2 min. and then stained. DNA fragmentation in tissues caused by irradiation was quantified as tail length and tail moment (tail length × % DNA in tail) by comet image analyzing system. Right after irradiation, the differences in tail length between unirradiated and irradiated muscles were significant(p〈0.05) in beef, pork and chicken. With increasing the increasing doses, statistically significant longer extension of the DNA from the nucleus toward anode was observed. Similarly even 6 months after irradiation, all the irradiated muscles significantly showed longer tail length than the unirradiated controls. The results represented as tail moment showed similar tendency to those of tail length, but the latter parameter was more sensitive than the former. These results indicate that the comet assay could be one of the simple methods of detecting irradiated muscles. Moreover, this method suggest that using comet assay, we were able to detect DNA damage differences even after 6 months after irradiation.

        This study was carried out to isolate and identify Salmonella species from poultry slaughterhouses and pork meat processing plants during the period from January 1997 to August 1998, and analyze resistance of antimicrobial agents and plasmid profiles of isolated Salmonella strains. A total of 15 Salmonella strains was isolated from poultry carcasses, swine carcasses, pork meats and cutting boards. Identified Salmonella strains were S. typhimurium, S. heidelberg, S. hilingdon, S. mbandaka, and S. virginia. Ten (66.7%) of 15 Salmonella strains showed resistance to antimicrobial agents and five strains (33.3%) of them were resistant to two or more antimicrobial agents. Plasmids were isolated from three Salmonella isolates which had two or more plasmids.

        Chicken skins or carcasses inoculated with Salmonella typhimurium were exposed to 0.1 or 0.5% grapefruit seed extracts (DF-100) for 1 or 3 min to evaluate antibacterial activity of DF-100 and its possible application in proultry processing. The numbers of live salmonellae on chicken skins were reduced by 0.8-1.2 logs/㎠ with 0.1% and by 1.6-1.7 logs/㎠ with 0.5% DF-100. Dipping chicken carcasses into 0.5% DF-100 for 3 min reduced salmonellae by 4.3 logs/ carcass. Scanning electron microaoopy showed that DF-100 killed the cells attached but did not detach cells from the skin. No odor or changes in the color of chicken skin were detected after DF-100 treatment.

        찜은 각종 수조육류, 어패류, 야채류에 조미를 하여 김을 올려 찌거나 삶는 습열조리의 하나이다. 조선시대의 조리서를 중심으로 수조육류를 주재료로 한 찜의 종류와 사용된 재료 및 조리법의 변화, 계량단위, 용어, 조리용구 등을 분석 고찰한 결과 다음과 같이 요약할 수 있다. 1. 수조육류를 중심으로 만든 찜의 종류는 37가지였다. 2. 수조육류를 중심으로 만든 찜에 사용된 주재료는 다음과 같다 : 쇠고기, 갈비, 우설, 곱창, 곤자소니, 사태, 양, 돼지새끼, 돼지새끼집, 돼지가리, 개, 양, 닭, 생치 3. 수조육류를 중심으로 만든 찜에 사용된 부재료는 다음과 같다.
