        This study reveals how interview discourses embodied in higher-level genres vary according to the discourse purpose and institutionalization level. Specifically, it analyzes episodes of news briefing and the entertainment program Hope Song at Noon, discussing street dance craze. Questions and answers dominated the discourse following the interview structure of news programs. The structure of questions and answers was accompanied by entertainment program talks. Regarding the characteristics of the interview questions and discourse, the news program delivered information as a social issue, while the entertainment program focused on interactions with dancers and entertainment activities. Thus, news programs shape discourse along a social dimension, while entertainment programs highlight individuals’ attractiveness and influence. Further, while news program viewers speak in a limited manner, listeners directly and actively participate in interview discourses in entertainment programs, which are embodied through language choices. Here, news programs employ formal language and normative and comprehensive vocabulary, and entertainment programs use every day and colloquial language and entertainment-specific vocabulary. This observation is significant as it examines entertainmentization of information and the informatization of entertainment.

        The purpose of this study is to review the discourse on vaccination from a critical perspective by considering coronavirus disease 2019 (COVID-19) news on web portals to be practical arguments advocating for certain actions. For this purpose, this study analyzed the argument patterns of the discourse on vaccination with the keyword COVID-19 vaccine side effects and examined discourse characteristics highlighted by media reports to evaluate their meaning. Contrasting patterns were observed between pro- and anti-vaccine arguments, which consisted of the necessity of vaccination and medical evidence and which focused on personal choice and vaccine side effects, respectively. The characteristics of the political discourse were observed in the contest between these arguments. Rhetorical phrases, which are often used in the political discourse, represented the misleading arguments that lacked evidential accuracy and argumentative validity by maximizing fear, instead of alleviating fear about a health crisis with scientific information and discussion. As fake news trending on social media was introduced to online news portals, which are regarded as public discourse platforms, and undermined trust in the public discourse, it served as an opportunity to politicize the discourse on vaccination.

        As the demand for ready-to-eat foods continues to grow, concerns about the sodium in processed foods are also growing. In this study, a survey was conducted on the perception of low-sodium products and diffusion plans according to the type of employee (manufacturer, retailer, distributor). Of the 191 responses collected, 189 valid responses (98.9%) were analyzed. The results showed that the employees were aware of the health contribution of a low-sodium diet, labeling for low-sodium, and the promotion of low-sodium food to increase its consumption. Furthermore, retailers recognized the positive contribution of low-sodium products in terms of Environmental, Social, and Governance (ESG) management. The use of sodium substitutes was preferred as the best way to reduce sodium in ready-to-eat foods. With regard to sodium reduction in readyto- eat foods, we found that the technical factors involved were clustered by the type of business. Specifically, distributors showed a similar performance but had a lower perception of importance than retailers. Manufacturers had a lower perception of both importance and performance. In this study, we collected perceptions from employees who were working at food companies, which differed from previous research. We sought to examine the differences in the perception of sodium reduction and consumption of ready-to-eat foods across various types of employment. Furthermore, we provided specific approaches to reduce perception gaps and enhance understanding among employees.

        본 연구에서는 국내에서 유통되는 식·약공용농산물의 잔 류농약 실태를 조사하기 위해 7품목 72건 대상으로 잔류 농약을 분석했다. 시료는 QuEChERS법으로 전처리한 후 GC-MS/MS, LC-MS/MS를 이용하여 분석했다. 식·약공용 농산물 총 7품목 72건 중 42건(58.3%)에서 잔류농약이 검 출되었으며, 검출된 농산물은 복분자 1건, 구기자 14건, 대 추 9건, 오미자 10건, 모과 1건, 생강 5건, 영지버섯 2건 이었다. 그 중 구기자 2건(11.8%), 오미자 1건(7.1%), 영 지버섯 2건(100%)에서 잔류농약 허용기준을 초과하여 검 출되었다. 검출농약은 43종으로 살균제 20종 75회, 살충제 23종 58회이었으며, 살균제 carbendazim 및 tebuconazole이 각각 11회로 가장 빈번하게 검출되었다. 허용기준을 초과 하여 검출된 농약은 acetamiprid, cadusafos, chlorpyrifos, flubendiamide, fluopyram, triazophos으로 모두 잔류농약허 용기준이 설정되지 않은 PLS 항목이었다. 결론적으로 잔 류농약 검사 건수, 검출률, 검출빈도를 종합적으로 고려해 볼 때 식·약공용농산물에 대한 지속적인 잔류농약 관리가 필요한 것으로 생각된다.

        본 연구는 조직이 원격근무를 도입하고자 할 때 실질적으로 고려해야 할 사항들을 분석해 제안하려는 목적으로 실행되었다. COVID-19로 인해 확산된 원격근무는 생산성의 보전 및 일-가정 양립 등의 효용을 가져와 포스트 팬데믹 시대에서도 뉴노멀로 활용될 수 있다는 가능성이 타진되었다. 그러나 원격근무는 전염병으로 인한 위기 상황에서 주입적으로 실행되었을 뿐 그에 맞는 운영 방침이 정해지지 않아 기업들 의 효율적인 도입이 어려웠다. 기존부터 원격근무에 관련된 연구는 진행되고 있었다. 그러나 선행연구들 은 원격근무의 이론적인 방향성을 언급하거나 긍정적인 효과에 대한 기대점을 시사하는 내용이 주를 이루었고 원격근무를 도입하거나 개선하고자 하는 기업을 위해 정량적 기법을 활용하거나 구체적인 제도 수립을 위한 요인 제시에 있어서는 미흡한 상황이다. 이에 본 연구는 원격근무 도입 시 고려해야 할 핵심 요인을 도출하여 기업들의 원격근무 도입에 실용적이고 통합적인 관점을 제안하고자 하였다. 이를 위해 경영학계 교수 및 인사관리 전문가들로 구성된 패널을 대상으로 델파이 조사를 실시하였다. 델파이 연구 는 정립되지 않은 분야에서 방향성을 도출하기에 적합한 사회 연구 방법론이라고 할 수 있다. 따라서 델 파이에 관련된 선행연구를 따라 가장 적합한 방식으로 총 3차에 걸친 델파이 조사를 진행하였으며, 조사 결과 최종적으로 조직문화, 업무환경, 인적자원, 성과관리의 네 가지 영역에 걸친 16가지의 핵심 요인이 도출되었다. 본 연구는 원격근무와 관련된 명확한 가이드라인이 없는 상황에서 원격근무 도입 시 인사 관리자들이 실질적으로 고려할 수 있는 요인들을 체계화했다는 점에서 의의를 지닌다.

        The purpose of this study was to evaluate the effect of nutrition education on dietary knowledge, dietary attitudes, and dietary behavior of elderly by analyzing changes before and after nutrition education. This study was conducted in Seoul from March 2022 to December 2022 for 50 elderly (6 male, 44 female) who participated in nutrition education for 8 weeks at three senior welfare centers (Seodaemun, Seongbuk, Jongno). A total of 35 responses were used in the final analysis. Statistical analysis was conducted using descriptive statistics, paired t-test, and Wilcoxon’s signed rank test by age, hypertension, and dislipidemia to find effect of nutrition education on their nutritional knowledge, dietary attitudes, and dietary behavior. Results showed that nutrition education had a significant effect on the elderly. In particular, for those with chronic diseases such as hypertension and dislipidemia, the difference after education was significant, indicating significant changes in dietary habits. This study is expected to provide basic data for the development of a systematic nutrition education program for the elderly in the future.

        Bis(2-ethylhexyl) phthalate (DEHP) is one of the plasticizers used in the polyvinyl chloride (PVC) industry. It is known to be easily released into the environment. In this study, we investigated effects of DEHP on growth, metabolic pathway, and virulence gene expression in soil-borne bacterial plant pathogen, Pectobacterium carotovorum SCC1 using in vitro assays. As a result, DEHP at 20 μg mL-1 did not affect the growth, cell membrane permeability, or ATPase activity of P. carotovorum SCC1. However, it decreased succinyl-CoA synthase (SCS) activity in the tricarboxylic acid (TCA) cycle. Relative expression levels of virulence genes encoding pectate lyase and pectin were differentially influenced by DEHP treatment. These results suggest that biological characteristics of P. carotovorum might be influenced by DEHP in soil.

        The endothelium, a continuous monolayer of cells that surrounds blood vessels, has a variety of physiological roles. Chronic exposure to psychological and physical stress, oxidative stress, and inflammation activates the endothelial signaling cascade, resulting in vascular dysfunction such as vasospasm, thrombosis, and abnormal vascular proliferation. Aging is also a significant factor in vascular dysfunction, mainly developing structural and functional changes in the endothelium. The molecules involved in endothelial dysfunction are typically angiopoietin-1 (Ang-1), Tie2, and tight junction proteins. Ang-1, an oligomeric-secreted glycoprotein, is required for the correct organization and maturation of newly-formed vessels. Ang-1 binding to tyrosine kinase receptors Tie-2 leads to the phosphorylation and activation of multiple signaling pathways related to vascular permeability. Endothelial junctions are another vital target of Tie-2 activation. Nutrition and food are closely connected with vascular dysfunction and permeability. The caloric restriction prevents age-related declines in endothelial function. Dietary patterns that prioritize moderate intake of fruits and vegetables, whole grains, low-fat dairy products, and lean meats improve endothelial function in the elderly. Natural products such as Centella asiatica, Pueraria montana, and Piper retrofractum have also been shown to help inhibit endothelial dysfunction. This review provides an update on aging-related vascular dysfunction and the role of food and nutrition.

        This study investigated the trend of research on ‘Food science and Nutrition’ in previously published papers in the Journal of Korean Society of Food Culture (JKSFC) from 2000 to 2021. Total number of published papers in this category in the JKSFC was 693 which we classified into 7 main categories and 40 subcategories. Of these, 256 articles were on ‘experimental cooking’ which was the most studied field among 7 main categories. There was a total of 19 published papers under the category of ‘microbiology and fermentation’. A total of 133 articles were published on ‘functional foods’ and provided essential data for discovering new materials under the theme of various physiological active functions of food materials. Furthermore, 107 articles were included in ‘food processing and storage’, which provided integrated knowledge of economy, stability and practicality based on various technologies. A total of 144 articles was included in the category of ‘nutrition’. Under the category of ‘nutrition’, the most actively studied topic was ‘eating behaviors and dietary habits,’ and the trending topic was ‘use of healthcare big data.’ In conclusion, this review would provide trends of various categories of food science and nutrition area for recent 21 years and suggest directions for future research.

        Galactosemia is a rare, hereditary metabolic disorder caused by the accumulation of galactose and its metabolites in the body due to a lack of enzymes that convert galactose to glucose. This study aimed to investigate the dietary behaviors and nutritional statuses of patients with galactosemia and to provide basic information on the development of nutrition education programs to improve quality of dietary life. A survey was conducted on 13 parents of (<11 years of age) children with galactosemia and 26 parents of (<11 years of age) children without galactosemia. Mean body mass index was greater for school-age children with galactosemia (18.77 kg/m2) than for corresponding normal children (16.55 kg/m2). Underweight and obesity rates of children with galactosemia were greater than those of children without galactosemia. In addition, children with galactosemia had a higher food neophobia rate and thus consumed less food. Normal children exhibited a greater range of food preferences than those with galactosemia, especially for milk and dairy products (p= .001) and fats and sweets (p= .04). Reliable food databases and appropriate dietary recommendations are required to ensure the proper growth of children with galactosemia.

        본 연구에서는 식품접객업소에서 시중 판매되는 더치커 피의 미생물 오염도를 조사하여 유형에 따른 차이를 살펴 보고자 하였다. 경기도 내 커피전문점에서 유통되는 더치 커피 70건을 대상으로 위생지표균, 식중독균, 진균류 오염도를 조사하였으며 추출방법에 따른 일반세균과 진균류의 오 염도를 비교하였다. 일반세균수는 0.74-6.21 log CFU/mL 범 위로 검출되었으며 식품 유형에 따른 평균 검출량은 식품 접객업소 조리식품(3.04 log CFU/mL)이 액상커피(2.08 log CFU/mL)보다 높게 나타났다. 액상커피는 검출된 6건 중 3건이 세균수 기준을 초과하여 부적합이었다. 식중독 원 인균은 70건 모두 불검출이었다. 진균수는 0.70-4.00 log CFU/mL 범위로 검출되었으며 식품유형에 따른 차이는 없 었다. 추출방법에 따른 미생물 오염도는 원두 혼합 여부 와 추출 시간에 따라 비교하였으며, 일반세균수와 진균수 모두 유의적인 차이는 없었다(P>0.05). 시중 유통되는 더 치커피는 일반세균과 진균류에 대한 오염도가 높으므로 위생적인 관리와 적절한 온도 유지를 통해 미생물 오염을 줄이는 것이 중요하며 안전성 확보를 위해 지속적인 모니 터링이 필요할 것으로 생각된다.

        This study aimed to investigate pesticide residues in 160 stalk and stem vegetables marketed in Northern Gyeonggi-do. The QuEChERS method using GC-MS/MS and LC-MS/MS was employed to analyze the residues of 341 pesticides in the samples. The maximum or lower than the residue limit was recorded in 75 samples (46.9%), while 4 samples (2.5%) exceeded the maximum residue limit (MRL). Thirty-nine kinds of residual pesticides were detected including fungicides (14), insecticides (22), herbicides (2), and plant growth regulator (1). Carbendazim and pendimethalin were the most frequelntly detected pesticides. Fenitrothion, procymidone, and diazinon exceeded MRL in garlic chives, and Welsh onion. This indicated that these vegetables along with water celery should be constantly monitored.

        Galactosemia is a rare genetic metabolic disease caused by galactose and its metabolites generated during carbohydrate metabolism, which is relatively rare in Asian countries, including Korea. Patients with galactosemia should be treated with a galactose-restricted diet. However, information is lacking about the exact content of galactose in food, and dietary guidelines for patients with galactosemia in Korea. This study aims to recognize the difficulties faced by parents and clinical experts of patients with galactosemia, and understand their demands. Totally, 5 parents of children diagnosed with galactosemia and 5 clinical professionals participated in the focus group interviews. The parents’ interview focused on the daily life of the patient, which included diet and social difficulties. The clinical experts mainly answered about medical care, including the number and status of patients, and their suggestions for effective treatment. Most parents were worried about social isolation due to conflicts in the family as well as in society due to a lack of understanding of the disease. The clinical experts stated the absence of a disease management system as the greatest problem. An integrated support system for patients with galactosemia, which includes appropriate dietary guidelines by considering the domestic environment, is required.

        Interkulturelle Kommunikationskompetenz ist seit den 80er Jahren ein sehr zentraler und populärer Terminus, aber Studien darüber im DaF Unterricht gibt es noch nicht sehr viele. Das Zier der Arbeit besteht darin, Lehrbücher für allgemeinbildende Deutschkurse an der Universität zu analysieren, die in Südkorea verwendet werden. Auf dieser Weise sollen Elemente zur Entwicklung der interkulturellen Kommunikationskomentenz in Lehrwerken erschlossen werden. In dieser Arbeit werde ich untersuchen, wie die interkulturelle Kommunikation in den Lehrwerken vermittelt wird. Die DaF Lehrwerke werden im Moment im allgemeinbildenden Deutschunterricht an den koreanischen Universitäten für Anfänger benutzt. Warum habe ich die Lehrwerke als Untersuchungsmaterial gewählt? Sie spielen noch eine sehr wichtige Rolle im DaF unterricht und die Quantität und Qualität des interkulturellen Inhalts sind sehr bedeutend. In dieser Arbeit werden die Lehrwerke aus der Perspektive der Lernenden betrachtet: Fördert der interkulturelle Inhalt in diesen DaF Lehrwerken den Lernprozess im Hinblick auf interkulturelle Kommunkationskompetenz? Ist es dem Lernenden möglich, seine interkulturellen Fähigkeiten mit Hilfe dieser Lehrwerke zu entwickeln? Für diese Antwort habe ich eine empirische Methode verwendet, nämlich Fragebogen, der 17 ausführliche Fragen enthielt. Dafür habe ich Fragebögen an 100 Studenten in Südkorea verteilt, und beantworten lassen.

        The purpose of this study was to compare and analyze the importance and satisfaction of consumer selective attributes by home meal replacement (HMR) types using local ingredients. This study was conducted from December 4 to December 8, 2020. A total of 380 responses organized according to preferred types of HMR (100 for Ready to Eat (RTE), 92 for Ready to Heat (RTH), 88 for Ready to Cook (RTC), 100 for Ready to Prepared (RTP) were used for the final analysis. Statistical analysis was conducted by descriptive analysis, paired t-test, and importance-satisfaction analysis by HMR type. Findings of this study showed significant differences in consumer selective attributes by HMR type. RTE and RTC need to improve quality while RTH needs to improve quality and packaging. Notable selective attributes were quality, packaging, and information. They were located in different quadrants of each HMR type. All other attributes appeared in the same quadrant. Further research is needed to determine differences in quality, packaging, and information for each HMR type. Results of this study provide basic data for developing products and marketing strategies for each type of HMR products using local ingredients.

        Unhealthy dietary behavior such as insufficient calcium intake can be one of risk factors of osteoporosis and chronic diseases in older people. This study evaluated the recent trends in dietary calcium intake and the food source in Korean adults aged 50 years or older using the Korea National Health and Nutrition Examination Survey (KNHANES, 2015-2019) data. This study used 24-hour recall survey data to investigate the calcium intake, the major food groups and main dishes contributing to the calcium intake. The mean calcium intake was 479.55-506.81 mg/day. The major food groups that contribute to calcium intake were vegetables, milks and fishes. Dairy and frozen desserts and kimchi were the major dish groups that contributed to the calcium intake. Calcium intake from milk in dairy and frozen dessert group has been high in last 5 years (50-64 years old: 34.71-47.68 mg, 65-74 years old: 29.72-43.65 mg, over 75 years old: 22.91-42.93 mg). In addition, baechu-kimchi is the most contributed to the calcium intake in kimchi group (50-64 years old: 35.10-41.47 mg, 65-74 years old: 29.62-34.96 mg, over 75 years old: 23.79-29.13 mg). In conclusion, various source of calcium needs to be recommended to increase intake calcium in over 50 years, which may reduce chronic diseases and improve quality of life.
