        To better investigate the antioxidative property of thermal treatment yam (Dioscorea batatas DECNE.) in Korea, some established methods were used. 70% Methanol, 70% ethanol and chloroform–methanol (CM, 2:1, v/v) extracts were collected. 70% Methanol extract exhibited stronger antioxidative activity evaluated by ferrous ion chelating activity, NO radical scavenging activity and β-carotene bleaching assays. On the contrary, CM extract was the most effective in inhibiting linoleic acid peroxidation. Yam available in Korea was also analyzed for its bioactive compounds such as lycopene, chlorophyll a, b, tannin, phytic acid and total saponin contents. Total saponin was abundant in thermal treatment, which determined to be 42.52±1.88 mg/g. Based on the results obtained from this study, thermal treatment yam could be used as natural antioxidant source due to its high antioxidant activity and bioactive compound contents.

        Skin whitening products are commercially available for cosmetic purposes in order to obtain a lighter skin appearance. They are also utilized for clinical treatment of pigmentary disorders such as melasma or postinflammatory hyperpigmentation. Whitening agents act at various levels of melanin production in the skin. Oxidative modification of DNA, proteins and lipids by reactive oxygen species (ROS) plays a role in aging and disease, including skin damages. In this study, we present an natural whitening and antioxidant product that may decrease skin pigmentation and skin damages.

        이 연구에서는 미국산 R. rhabarbarum L.과 중국산 R. palmatum L.의 줄기 추출물과 그리고 한국산 R. undulatum L.의 뿌리 추출물이 천연항산화제로서의 사용 가능성을 평가하였다. 대황의 페놀화합물을 추출하기 위해서 물, 에탄올, 메탄올이 사용되었다. 에탄올이 대황(Rhubarb)에서 페놀화합물을 추출하는데 가장 효과적인 용매였으며 50% 에탄올은 R. rhabarbarum L. 줄기에, 70% 에탄올은 R. palmatum L.의 줄기에, 80% 에탄올은 R. undulatum L.의 뿌리에서 페놀을 추출하는데 각각 가장 효과적인 용매농도였다. 또한 추출물리 항산화능을 알기 위해 β-carotene bleaching inhibition activity와 DPPH radical scavenging activity를 측정하였으며 합성항산화제인 BHT와 비교하여 측정하였다. β-Carotene bleaching inhibition activity 실험에서 추출물의 농도가 증가하면 대황추출물의 항산화능이 역시 증가하였다. 추출물의 농도가 5mg/ml와 10mg/ml 일때 R. undulatum L. 뿌리추출물과 BHT의 항산화능은 유의적 차이는 없었다(p≤0.05). 그러나 DPPH radical scavenging activity에서 R undulatum L. 뿌리추출물이 0.4 mg/mL 농도 이상에서는 BHT 보다 높은 항산화능을 나타내었다. 결과적으로 대황(R. undulatum L.)의 80% 에탄올 추출물이 천연항산화제로의 사용이 가능하였다. 그러나 합성항산화제인 BHT의 식품에 사용농도를 비교하여 볼 때 대황 추출물의 항산화능이 BHT와 동일하기 위해서는 보다 높은 농도를 필요로 하였다.

        This study was performed to investigate the change of biologically functional compounds and antioxidant activities in Ecklonia cava with blanching times. As biologically functional compounds, the contents of minerals(K, Ca, Na, Mg, Fe, Cu, Mn and Zn), vitamins(vitamin C, β-carotene and α-tocopherol) and total polyphenol were analyzed. And antioxidant activity was determined through free radicals(DPPH radical, superoxide anion radical, hydroxyl radical and hydrogen peroxide) scavenging activity and linoleic acid peroxidation inhibitory activity. As the blanching time increased, the contents of minerals, vitamin C, β-carotene and total polyphenol were decreased however α-tocopherol was not affected by blanching time, and antioxidant activities were decreased with blanching time.

As biologically functional compounds, the contents of minerals(K, Ca, Ma, Mg, Fe, Cu, Mn and Zn), vitamins(vitamin C, β-carotene and α-tocopherol) and total polyphenol were analyzed. And antioxidant activity was determined through free radicals(DPPH radical, superoxide anion radical, hydroxyl radical and hydrogen peroxide) scavenging activity and linoleic acid peroxidation inhibitory activity. The contents of minerals were not affected by drying methods however vitamins and total polyphenol were lost more by sun-drying than other drying methods studies. Total polyphenol was preserved by freezing-drying than other drying methods studies, resulting in high antioxidant activities.

        This study was carried out to separate and identify the antioxidative substances in persimmon leaves. The antioxidative substances in persimmon leaves were extracted by methanol. The extract was fractionnated by SEP-PAK cartridge colum. From these results five fractions(F-I~V) were obtained. Antioxidative activity of each fractions was examined by the DPPH methord. The F-II, III and IV showed antioxidative activity and among them F-II and F-III showed the strongest. Five frations were separated by TLC using ethylacetate : chloroform : formic acid : H2O(8 : 1 : 1 : 1 v /v) as the solvent. From these results were obtained spots of Rf 0.71, 0.35 and 0.25. This spots were scraped from the plate and extracted by methanol. The extracts thuse obtained were used for examination of identify by TLC, UV /VIS-spectrophotometer and HPLC. Among them spot of Rf 0.71 were demonstrated to catechin and the spots of Rf 0.35 and 0.25 was suggested to polyphenol substances.

        Roasting has revealed coffee’s potentials as a good source of bioactive compounds. This study was done to investigate the quantitative presence and activity of bioactive compounds including caffeine, chlorogenic acid (CGA), amino acids, and antioxidant capacity on Coffea arabica L. (Guatemala finca San Sebastian) and C. robusta L. (India Azad Hind). Analysis was performed on Green Bean (GB) Medium-Light (ML), Medium (ME) and Medium-Dark (MD) samples of both varieties. From the results, caffeine content was highest in ME samples of both varieties. GB samples of both varieties had high CGA content which decreased after increasing roasting time and temperature. Most amino acids in GB samples was highest, however, glutamic acid, valine, tyrosine, isoleucine, leucine and phenylalanine had highest quantitative increase in ME samples for both varieties. IC50 of DPPH and ABTS radical scavenging activity was highest in ML samples of both varieties. IC50 of reducing power and total phenolic content was highest in GB sample of both varieties but decreased after increasing roasting conditions. Generally Robusta had the highest quantity of bioactive compounds and antioxidant activity. From this study, the optimal roasting condition for coffee is ME above which there is a significant reduction of bioactive compounds and antioxidant activity.

        Background : D. lablab is tropical vine grown as a garden annual belonging to Leguminosae, which is used in oriental medicine for coldness like a cooling disease, diarrhea and abdominal pain etc. when it is hot weather in summer and plenty of rainy seasons. In previous study, D. lablab showed an inhibitory activity for trypsin. Reactive oxygen species (ROS) was produced by trypsin via a second protease-activated receptor. Therefore, it is considered that there are substances having antioxidant activity in D. lablab. Methods and Results : The seed of dried D. lablab was extracted hot water, and then partitioned with Et2O, EtOAc, n-butanol and aqueous. The aqueous layer was separated from silica gel and Diaion HP-20 liquid chromatography and HPLC-prep, resulting in confirmed two compounds. The two compounds was identified to C14H14N2O4 and stachyose from ESI-MS and 1H- and 13C-NMR. The two compounds was performed the intracellular ROS measurement and the expression of catalase and Cu/Zn SOD. The intracelluar ROS measurement was detected using DCF-DA in LPS-treated RAW264.7 cell. The results were shown that two compounds inhibited intracellular ROS levels to dose-dependent. And the expression of genes was detected quantitative real-time PCR in LPS-trated RAW264.7 cell. Although the two compounds were not significantly different towards the Cu/Zn SOD expression level, the expression level of catalase genes were indicated an increase rate of about 347% in C14H14N2O4 and about 242% in stachyose at 50 ㎍/㎖ compared with LPS-not treated cells. Conclusion : From the above results, both compounds significantly shown antioxidant activity in dose-dependent by examining the amount of intracellular ROS and the expression levels of SOD and catalase enzymes. As screening ROS inhibition of C14H14N2O4 and stachyose in vitro, they may be a good candidate for regulating the progression of human oxidant stress diseases and warrants further studies.

        Background : Basil is well known for its use in cooking, however, the herb is also noted for its value in traditional medicine. Basil is a digestive stimulant with antimicrobial, antibacterial, anticonvulsant and anticarcinogenic properties. Basil contains high levels of phenolic acids that contribute to its strong antioxidant capacity and the substantial concentrations of rosmarinic acid, in particular, have been associated with the herb’s medicinal qualities. Rosmarinic acid is noted in the literature to be the most prevalent basil phenolic but other caffeic acid derivatives, such as chicoric acid, are also found in high concentrations. But, no previous study about other phenolic compounds accumulation except previously mentioned. Thus, the aim of this study is to explain that basil accumulates other phenolic compounds except previously mentioned. Methods and Results : 6 basil cultivars, ‘Holy’, ‘Lemon’, ‘Cinnamon’, ‘Dark Opal’, ‘Bush’ and ‘Genovese’, were grown at experimental field of Chungnam National University. These plants leaves were freeze-dried at -80℃ for 72 h and then ground into a fine powder using a mortar and pestle. 100 ㎎ of the sample was weighed into 15 ㎖ tube and 2 ㎖ of 80% (v/v) methanol was added. Next, the tube containing the powder was allowed to be sonicated for 1h at 35℃, and then centrifugation was performed at 12,000 rpm for 10 min. The supernatant was filtered with a 0.45 ㎛ PTFE syringe filter and analyzed by a Futecs model NS-4000 HPLC apparatus. 12 phenolic compounds were identified and quantitated in the different cultivar leaves of basil through comparison of retention time, spike tests and external standard calibration curves using HPLC. Gallic acid, 4-hydroxybenzoic acid, catechin hydrate, chlorogenic acid, caffeic acid, p-coumaric acid, ferulic acid, benzoic acid, rutin, trans-cinnamic acid, quercetin, kaempferol were identified. Among 6 basil cultivars, ‘Dark Opal’ show the highest accumulation of phenolic compounds, particular benzoic acid (6.32 ㎎/g dry weight), rutin (1.13 ㎎/g dry weight) and 4-hydroxybenzoic acid (0.4 ㎎/g dry weight) are higher than other cultivars. Conclusion : The results presented herein provide information about variation of phenolic compounds in 6 basil cultivars, ‘Holy’, ‘Lemon’, ‘Cinnamon’, ‘Dark Opal’, ‘Bush’ and ‘Genovese’.

        This study investigated the changes in yields, antioxidant compounds, and antioxidant activities among 11 adzuki bean cultivars cultivated in a paddy field with somewhat poorly drained soil. The adzuki bean cultivars were cultivated in the paddy field from 2015 to 2016 in Milyang, Gyeongsangnam, Korea. Average soil moisture content was 16.5% in 2015 and 31.0% in 2016 at the experimental site during adzuki bean cultivation. As the soil moisture content increased, most of the adzuki bean cultivars showed deceases in stem height, first setting pod node, number of pods, 100 seed weight, and yield. Chungju-pat produced the greatest yields among the 11 cultivars in 2015 and 2016, whereas Hongeon had the smallest yields. Adzuki bean yields after paddy field cultivation was lower for all cultivars than for adzuki bean yields from the same cultivars after upland field cultivation. Chungju-pat and Chilbo-pat showed the smallest decreases in yields after paddy field cultivation, whereas Hongeon and Kumsil showed the greatest yield reductions. There were no significant differences in proximate composition. Some mineral components (P2O5, Ca, and Mg) were statistically different across cultivars. Chungju-pat had the highest Ca and Mg contents, but antioxidant components (polyphenol and flavonoids) and antioxidant activities (ABTS and DPPH) were highest in Saegil and lowest in Jungbu-pat. PCA and clustering analyses, based on the growth, yield, and antioxidant component measurements, performed to identify which variables contributed the most to separating adzuki bean cultivars or to grouping cultivars with similar characteristics. These analyses showed that the antioxidant components and antioxidant activities had the most influence on grouping cultivars together. Among the 11 cultivars, Saegil was statistically different from the other cultivars, but the other 10 cultivars were not significantly different under paddy field cultivation. Soil moisture content affected adzuki bean yield and antioxidant component contents. An increase in soil moisture led to a decrease in yield, but an increase in antioxidant components. These results provide information that will improve the selection of an appropriate adzuki bean cultivar for use in paddy fields.

        Sensory evaluation, in vitro antioxidant activities and main compounds of coffee water-extract, coffee liqueur (CL) and coffee-ground liqueur (CGL) were investigated to consider their industrialization. Sensory evaluation showed that all groups of CGL without 25% CGL (3 month) were relatively higher than CL groups. Total phenolic compounds and in vitro antioxidant activities such as 1,1-diphenyl-2picryl-hydrazyl (DPPH) radical scavenging activity and ferric reducing/antioxidant power (FRAP) were also performed. The group of 35% CGL had higher total phenolic compounds than others, and the result of DPPH radical scavenging activity was similar to that of total phenolic compounds. In addition, 35% CGL is comparable to the FRAP of coffee water extract (CE). Qualitative and quantitative analysis using high-performance liquid chromatography (HPLC) were performed, and chlorogenic acid as a ployphenolic compound and caffeine as a nonpolyphenolic compound were detected in all samples. Moreover, the HPLC analysis showed that CGLs contain a larger amounts of chlorogenic acid (difference of 0.3~10.5%) and also greater amounts of caffeine (difference of 10.0~18.2%) more then CE. Consequently, these results suggest that coffee-ground as coffee by-products could be used as commercially available food substances because of its physiological molecules remained.

        Background: This study determined the effects of mulching, an environment friendly organic cultivation method, on antioxidant compound contents and growth in Codonopsis lanceolata, commonly known as Deodeok. Methods and Results: C. lanceolata was treated by mulching with several different methods (a non-woven fabric, biodegradable film, or rice husks) and also treated with hand weeding. A non-treatment plot was used as a control. The growth and levels of weed control in C. lanceolata were better in plants cultivated under mulching treatments (non-woven fabric, biodegradable film, and rice husks) than in those under non-mulching treatments (hand weeding and non-treatment). The contents of antioxidant compounds, such as total flavonoids, phenolics, and anthocyanins, were highest under the biodegradable film treatment, followed by the nonwoven fabric treatment, rice husks treatment hand weeding, and non-treatment. There were identifiable differences in DPPH and ABTS activity in comparison to antioxidant compound content by solvent fractions. Mulching treatments resulted in higher DPPH scavenging activity in water and ethyl ether fractions and ABTS scavenging activity in n-butanol fractions than in other fractions, as opposed to hand weeding and non-treatment groups, although total activity of DPPH and ABTS did not increase with mulching treatments. Conclusions: Mulching C. lanceolata with biodegradable film and non-woven fabric is an effective method for improving plant growth and inhibiting the occurrence of weeds as well as for increasing antioxidant compound content and altering antioxidant activity.

        Background : This study was carried out to investigate the antioxidant activities and the contents of antioxidant compounds in extracts derived from 24 medicinal crops. Methods and Results : Dried plant materials were extracted by methanol. The extracts of each plant were evaporated under vacuum and stored in deep freeze at -20℃ until use. The levels of total phenolic compounds were much higher in Evening primrose, Houttuynia cordata, Chinaberry, Sumac, Gaeddongssuk, Giant knotweed and Dendropanax morbifera compared with other crops. On the other hand, the total phenolic compound levels in Safflower, Fleeceflower root, Gingko, Black nightshade, Saposhinikovia root, and Maize woody pith were relatively low. The total flavonoid contents were highest in Houttuynia cordata, followed byDendropanax morbifera, Gaeddongssuk, Aralia cordata and Evening primrose. DPPH activity was significantly higher in Gaeddongssuk, Sumac, Chinaberry, Dendropanax morbifera and Evening primrose, and ABTS activity was significantly higer in Sumac, Chinaberry, Evening primrose, Giant knotweed, Gaeddongssuk and Dendropanax morbifera than other plants. The antioxidant activities dertermined in all assays positively correlated with the total phenolic compoubds (0.619≤ r ≤0.895) and flavonoid contents (0.488≤ r ≤0.619) as well as among themselves (r=0.900). Conclusion : These results suggest that Evening primrose, Gaedongssuk, Sumac, Dendropanax morbifera, and Giant knotweed can be utilized as food additives and natural antioxidants due to their strong antioxidant activity.

        Total phenolic compounds and antioxidant activity were investigated in leaves of organic apricot, filbert, mulberry, persimmon, and pomegranate trees during growing season. Total phenolic compounds and antioxidant activity in leaves of organic apricot and filbert trees were gradually increased from May to June, attained peak in July, thereafter decreased to minimum level in October. In leaves of organic mulberry tree total phenolic compounds and antioxidant activity were simultaneously increased from May to June and sharply decrease to very low level. The leaves of organic persimmon trees showed very high level of total phenolic compounds and antioxidant activity from May to June, thereafter gradually decrease to October. The leaves of organic pomegranate trees showed extraordinarily highest level of total phenolic compounds among five fruit trees investigated in the study during growing stages, as well as maintained higher than 91 percent of antioxidant activity from May to October. Correlation coefficients between total phenolic compound and antioxidant activity of the leaves of five organic trees were the highest in mulberry leaves, and then persimmon, filbert, apricot, and pomegranate, respectively. However, correlation coefficients between total phenolic compound and antioxidant activity of the leaves of organic pomegranate were very low level, and not significant in their relationship.

        Antioxidant activity is important for reducing oxidative stress that causes various metabolic disorders. Metabolic disorders are highly related to loss of productivity in livestock. Therefore, development of effective antioxidant compounds originating from plants is important for organic agriculture. Phenolic compounds in edible plants are regarded as major components relevant to antioxidant activity. The present study investigated the changes in antioxidant activity and phenolic compound profiles of Aronia (Aronia meloncarpa) by fermentation using different strains of Leuconostoc mesenteroides. A total of 5 strains of L. mesenteroides were used as starter cultures and their β-glucosidase activities were measured. A total of 6 experiment runs were prepared, one for control (uninoculated) and the others (inoculated) for treatments. For biological activity, antioxidant and antibacterial activities were measured. For phenolic compound profiling, TLC and HPLC analysis were performed. The strains of KACC12313 and KACC12315 showed greater enzyme activity than others. Treatment with KCCM35046 showed strong and broad antibacterial activity against to Listeria monocytogenes. Treatments with KCCM35046 and KACC12315 showed the highest total polyphenol content. The highest antioxidant activity was found in KACC12315 treatment. No remarkable alteration was found in thin layer chromatography (TLC) analysis. In phenolic compound profiling analysis, KCCM35046 showed notable alteration in compound area ratio compared to others and also showed the highest caffeic acid content. In chlorogenic acid, treatments with KCCM35046 and KACC12315 showed great content than others. Treatment with KACC12315 showed the greatest content of trans-ferulic acid. As a result of relative performance indexing analysis, L. mesenteroides KCCM35046 and KACC12315 were selected as the best strain for the fermentation of Aronia.

        This study investigated the changes of antioxidant compounds and antioxidant activity of adzuki bean by drainage methods in poorly drained sloping paddy field. The soil moisture contents of under pipe and open ditch drainage on very poorly drained paddy soil were 18.52±4.58 and 19.01±4.25%, and imperfectly drained paddy soil were 14.87±4.82 and 18.64±3.85%, respectively. Moisture, protein, fat and ash contents of adzuki bean with drainage methods were 10.10~11.60, 14.13~21.75, 0.02~0.73 and 2.81~3.45 g/100 g, respectively. The total polyphenol, flavonoid and tannin contents, and radical scavenging activity of adzuki bean showed significant differences by drainage methods. The total polyphenol, flavonoid, and tannin contents by drainage methods were 2.73~4.14 mg GAE/g, 1.07~1.43 mg CE/g, and 1.27~1.84 mg TAE/g, respectively. The DPPH and ABTS radical scavenging activities were 2.84~4.47 and 5.11~6.74 mg TE/g, respectively. The antioxidant compounds and radical scavenging activity of the adzuki bean by drainage methods were frequently affected soil water.
