        The acai berry (Euterpe oleracea Mart.) contains vitamin B complex, vitamin C, anthocyanin and so on. Especially acai berry was seen as nutritionally comparable to blueberry and related berries. The acai berry has significant aging-reducing properties. Compounds have been found to have anti-aging and antioxidant components. Acai berry was extracted with 70% methanol, 70% ethanol and CM (chloroform:methanol=2:1, v/v). After sample and reagents of each experiment was reacted, DPPH radical scavenging activity and ABTS radical scavenging activity, ferric reducing antioxidant power, reducing power were measured to determine the antioxidant capacity, and as results of comparing each extract. Ethanol (70%) extraction was measured highest. Anthocyanin, total phenol, flavonoid also appeared similar to the results. In addition, the antioxidant activities of the extraction solvents were increased significantly with increasing concentrations, but showed lower antioxidant activity than the positive control (ascorbic acid). As a result, antioxidant activities of sample supposed to affect by the anthocyanin, phenol and flavonoid contents.

        본 연구는 개망초꽃 에센셜 오일의 항산화, 항균 및 항염 효능에 관하여 조사한 것이다. 개망 초꽃 에센셜 오일은 용매추출법으로 추출하였다. 개망초꽃 에센셜 오일의 항산화 효능은 ABTS 라디칼 소거능과 DPPH 라디칼 소거 효능 측정으로 확인하였다. ABTS 라디칼 소거 효과는 500 μg/ml 농도에 서 98.6%, DPPH 라디칼 소거는 48.3%로 좋은 효능을 나타내었다. 항균 활성은 S. aureus와 P. acnes, E. coli 균에 대하여 paper disc법과 최소저해농도(MIC)와 최소사멸농도(MBC)값을 측정하여 확인하였 다. S. aureus 균주에 대해서는 MIC 값과 MBC 값이 모두 0.31 mg/mL 농도에서 우수한 억제 효과를 나타내었다. P. acnes 균에 대해서는 disc법에서 14 mm의 clear zone 형성과 MIC, MBC에서 각각 0.31 mg/mL, 0.63 mg/mL로 좋은 억제 효과를 보였다. 항염 활성에 관련하여 NO 억제 측정에서도 농도 의존적으로 NO의 생성을 억제시킴을 확인하였고, pro-inflammatory cytokine인 TNF-α, IL-6 역시 농도 의존적으로 억제하였다. 이러한 결과로부터 개망초꽃 에센셜오일은 항산화, 항균 및 항염 효 능을 갖는 화장품 원료로서 개발 가능성이 있음을 시사한다.

        본 연구는 추출물 농도에 따른 생리활성물질의 용출량을 측정하기 위해 전자공여능과 총 폴 리페놀 함량을 측정한 결과이다. 전자공여능은 추출물의 첨가 농도가 15%인 경우는 21.81%로 나타났 고, 35% 농도에서 40.45%로 가장 높았다. 한약재의 첨가 농도가 증가함에 따라 전자공여능은 유의적으 로 증가하였다(p<0.05). 가장 높은 35% 첨가 농도에서의 40.45% 공여능은 이보다 더 낮았으므로 전자 공여능은 미약한 것으로 생각된다. 총 폴리페놀함량은 한방약술 15%에서는 113.89±1.79 ㎍ GAE/㎖로 나타났고, 한방약술 35% 에서는 274.24±0.71 ㎍ GAE/㎖로 나타나서 첨가물의 농도 증가에 따라 총 폴리페놀의 함량도 유의적으로 증가하였다(p<0.05). 추출물 농도가 30%에서 총 폴리페놀 함량의 증가 폭이 61.75 ㎍ GAE/㎖로 가장 높았다.

        연구는 홍삼박 물추출물(RGW), 에탄올추출물(RGE), 1,3-B.G추출물(RGB)을 HPLC로 성 분 분석과 B16F10에 대한 세포생존율, 항산화능 및 주름개선 효능 평가를 실시하여 홍삼박 추출물의 화장품 소재로서의 응용가능성을 알아보았다.추출물의 HPLC 성분 분석 결과, 세 가지 추출물 모두 다양한 종류의 진세노사이드가 검출되었으며 그 중 RGB가 가장 많은 함량의 진세노사이드가 검출되었다. B16F10의 세포생존율 측정 결과, RGW와 RGB가 유사하며, RGE보다 높은 생존율을 보여주었다. DPPH radical 소거능 측정 결과 RGE>RGB>RGW 순으로 나타났으며 SOD유사활성능 측정 결과는 RGB>RGE>RGW순으로 활성능을 보여주었다. Elastase 저해능 측정 결과에서는 RGW>RGB>RGE 순으로 활성을 보였다. 위와 같은 결과 를 종합하여 볼 때 피부안전성이 우수하며 항산화 및 주름개선 화장품소재로서 RGW와 RGB가 적합할 것으로 판단된다.

        This study aimed to discriminate the geographical origins of domestic and chinese Wolfiporia extensa. They were subjected to oxygen (45.32 to 48.07%), carbon (38.09 to 40.12%), hydrogen (6.05 to 6.78%), and nitrogen (0.16 to 0.23%). Antioxidant activity was examined by DPPH free radical scavenging activity. According to the results of the experiment, no significant differences were found between domestic (IC50, 7.25 mg/ml) and Chinese (IC50, 8.35 mg/ml) W. extensa. However, as determined by the inorganic mineral contents were significantly different between domestic and Chinese W. extensa. The amount of potassium in domestic and Chinese W. extensa was and 33.14 ± 17.27%, 47.60 ± 8.78%, respectively. The results of this study suggested that the analysis of inorganic components by ED-XRF should be useful for origin identification of W. extensa

        Honey production from approximately 1.7 million colonies owned by around 21 thousand Korean beekeepers was almost 36 thousand M/T in 2014. Honey farmers have mainly obtained commodities such as honey, beeswax, pollen and royal jelly. Honeybees gather the nectars and pollens from flowers of plants or trees. Bee pollen is rich in various nutrients and called as natural complete food. Bee pollens of Quercus acutissima, Actinidia arguta, Amorpha fruticosa, Oryza sativa, Chrysanthemum morifolium and Salix koreensis were mainly collected by Apis mellifera in Korea. But stiff pollen wall hinders dissolution of polysaccharides and lowers extraction efficiency. Thus, we measured antioxidant activity as DPPH radical scavenging assay system on six kinds of pollens inoculated with fungi to confirm the husk removal effect. The antioxidant activity was evaluated by measuring the free radical scavenging activity using 2,2-diphenyl-1-picrylhydrazyl (DPPH). Briefly, extracts prepared from different extraction conditions were mixed with freshly prepared DPPH solution. After shaking, the reaction mixtures were stand for 30 min at room temperature in dark places. The radical scavenging activity was determined by measuring the absorbance at 517 nm. The relative radical scavenging activity (%) was calculated as [1-absorbance of solution with sample and DPPH / absorbance of solution with DPPH] x 100. The scavenger activities of Quercus acutissima, Actinidia arguta, Amorpha fruticosa, Oryza sativa, Chrysanthemum morifolium and Salix koreensis were 42.73±1.25, 8.98±1.46, 4.38±3.53, 36.09±0.74, 17.28±1.95 and 62.76±2.07 at 500㎕/㎖, respectively.

        This study was conducted to investigate the effects of Kojongsi persimmon peels as a mushroom substrate on antioxidant activity of Pleurotus eryngii. The Pleurotus eryngii was growth on the medium with 0, 5, 10, 15, 20, 30, 40, 50% Kojongsi persimmon peels. The Pleurotus eryngii was extracted into ethanol and their antioxidant activities were analyzed. The total polyphenol content was highest in the 20% Kojongsi persimmon peels treatment (40±0.38 mg of gallic acid equivalents/100 g) than 0% Kojongsi persimmon peels treatment (21 ±0.18 mg of gallic acid equivalents/100 g). The 20% Kojongsi persimmon peels treatment showed better DPPH scavenging activity (36.81±0.23% at 1 mg/ml), ABTS scavenging activity (39.03±0.10% at 1 mg/ml) and reducing power (0.3±0.10% at 1 mg/ml) than 0% Kojongsi persimmon peels treatment and another extract ones. Overall, total polyphenol content and antioxidant activities of extracts from Pleurotus eryngii was increased dose dependently and 20% Kojongsi persimmon peels treatment was showed better total polyphenol content and antioxidant activities than 0% Kojongsi persimmon peels treatment and another extract ones.

        This study was conducted to investigate the quality characteristics and antioxidant properties of cookies supplemented with 1-4% (w/w) mulberry leaf powder (MLP). The pH and density of cookie dough were not significantly influenced by the increasing levels of MLP (p>0.05), while the moisture content appeared to decrease significantly (p<0.05). The spread ratio of cookies tended to decrease with increasing levels of MLP (p<0.05). Lightness (L*), redness (a*), and yellowness (b*) decreased significantly with a higher amount of MLP (p<0.05). The use of MLP significantly increased the hardness of cookies while 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2’-azino-bis-3-ethylbenzthiazoline- 6-sulphonic acid (ABTS) radical scavenging activities were significantly elevated (p<0.05). The consumer acceptance test indicated that the addition of 1% MLP had a favorable effect on the consumer preferences in all the attributes. Based on the overall observations, cookies with 1% MLP can take advantage of the functional properties of MLP without sacrificing consumer acceptability.

        Quality assessment of sweet persimmon or “Fuyu” was evaluated over room temperature distribution periods after 40-day storage at 0oC cold room. All Hunter’s values (L, a, and b) of sweet persimmon were significantly decreased after 4-day room temperature distribution while the flesh firmness was drastically decreased after 3-day room temperature distribution. Glucose and fructose contents were significantly increased by the degradation of sucrose after 3-day room temperature distribution. The highest extraction yield was obtained in the flesh of persimmon. Extraction yields of each part of “Fuyu” persimmon were 15.53% for flesh, 10.53 for seed, and 13.83 for flower bud. However, the total phenolic content of flesh was 4.8 μg/mg which was extremely lower than that of the seed (175.5 μg/ mg) and flower bud (178.2 μg/mg) of sweet persimmon. With high phenolic content, both the flower bud and seed of sweet persimmon showed excellent antioxidant activities by 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azinobis( 3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) free radical scavenging test. The results showed a great potential for byproducts (seed and flower bud) of long-term, cold-stored sweet persimmon “Fuyu” as a good antioxidant material for novel functional foods.

        The purpose of this study was to investigate the appropriate amount of oats to add to rice and the merits of oat meal. We analyzed the physicochemical characteristics, cooking properties, functional components, and sensory evaluation according to the amount of oats added in the cooked rice. Compared with rice, the oat showed higher level in protein, fat, total β-glucan and total polyphenol, but not for starch. Therefore, the amount of chemical and functional components was increased significantly with the increase in the amount of oats added. Water absorption and expansion were decreased with the increase in the amount of oat added. Oleic acid content was increased and linoleic acid content was decreased slightly. Unsaturated fatty acid content was greatly increased. The DPPH and ABTS radical scavenging activity were increased significantly according to the amount of oats added. As a result of sensory evaluation, the most appropriate amount of oat added was 20% and 30%. By the addition of oat, the β- glucan content of the cooked rice and the antioxidant activity could increase.

        본 연구는 생물전환된 대두의 isoflavone 함량, 총 페놀함량, 항산화능(DPP radical 소거능, ORAC 지수) 및 β-Glucan 함량을 측정하였다. Isoflavone의 경우 추출용매에 상관없이 배당체가 모두 비배당체로 전환되는 것을 확인하였다. Total isoflavone 함량의 경우 hexane 탈지 대두박발효물에서 2577.96 μg/mL으로 가장 높은 값을 나타냈으며, ethanol 탈지 대두박 비발효물에서 428.27 μg/mL으로 가장 낮은 값을 나타내었다. 총 페놀 함량은 대두 원물에서 39.44 mg GAE/g으로 나타났으며, ethanol 탈지 대두박비발효물 및 hexane 탈지 대두박 비발효물은 27.07, 27.75 mg GAE/g으로 대두 원물보다 다소 낮은 값을 나타냈다. 생물전환된 대두의 총 페놀 함량은 hexane 탈지 대두박발효물 41.61 mg GAE/g, ethanol 탈지 대두박 발효물42.34 mg GAE/g으로 비발효물에 비해 약 1.5배 가량 증가된 함량을 보였다. DPPH radical 소거능의 경우 대두 원물에서 51.10%의 소거능을 나타내었고 hexane 탈지 대두박 비발효물에서 50.51%, ethanol 탈지 대두박 비발효물은 43.27%의 소거능을 나타냈다. 생물전환된 ethanol 탈지 대두박 발효물에서 59.92%로 radical 소거능이 증가되었지만 hexane 탈지 대두박 발효물은 31.30%로 비발효물에 비해 낮은 radical 소거활성을 보였다. ORAC 지수는 대두 원물이 384.47 μM TE/g을 보였으며, hexane 탈지 대두박 비발효물 및 ethanol 탈지 대두박 비발효물은 318.52, 247.48 μM TE/g으로 나타났다. 생물전환된 hexane 탈지 대두박 발효물은 786.36 μM TE/g, ethanol 탈지 대두박 발효물에서 721.96 μM TE/g으로 비발효물에 비해 ORAC 지수가 증가하는 것으로 나타났다. β-Glucan 함량은 0.09~0.11%의 범위로 나타났으며 대두 원물과 ethanol 탈지 대두박 발효물에서 가장 높은 0.11%를 보였고 hexane 탈지 대두박 비발효물과 hexane 탈지 대두박 발효물에서 0.09%로 가장 낮은 β-glucan 함량을 보였지만, 추출용매 및 생물전환에 따른 β-glucan 함량의 큰 차이는 나타나지 않았다.

        Lipoxygenase(LOX) 결핍 콩(05C4 및 LS, LOX2,3-free)과 일반콩(태광, LOX1,2,3-present)으로 제조된 된장의 급이가 고지방-콜레스테롤 식이성 흰쥐의 체내 지질성분 및 항산화 효소계에 미치는 영 향을 알아보고자 하였다. SD계 흰쥐는 정상군, 고지방-콜레스테롤 급이군(HFC), 고지방-콜레스테롤 식이+5% 된장 분말 급이군[HFC+D1, 태광된장; HFC+D2, 05C4된장; HFC+D3, LS된장)으로 구분하여 5주간 사육되었다. In vitro에서 된장의 콜레스테롤 흡착활성은 4mg/mL 농도에서 LS된장이 태광된장 에 비해 1.5배 높았다. 식이효율은 정상군에 비해 대조군에서 유의적으로 높았으며, LS된장 급이군 (HFC+D3)은 대조군에 비해 유의적으로 감소되는 경향이었다. Rö hrer 및 T.M.지수와 체지방 함량은 대조군에 비해 된장 급이군에서 모두 유의적으로 감소되었으며, 특히 Lee지수 및 BMI는 LOX 결핍콩 된장 급이군에서 유의적으로 감소되었다. 혈청 총 지질 및 중성지방 함량은 대조군에 비해 된장 급이군 에서 유의적으로 감소되었으나, 총 콜레스테롤, HDL-, LDL-콜레스테롤 및 심혈관질환 위험지수는 LS 된장 급이군만 유의적인 감소를 보였다. 혈청 AST 및 ALT 활성은 HFC+D1 및 HFC+D2간에는 유의차 가 없었고, HFC+D3은 HFC+D1 및 HFC+D2에 비해 유의적으로 낮은 수준이었다. 간 조직에서 총 지 질 함량은 HFC+D3이 대조군에 비해 약 25.2%의 감소되었으며(p<0.05), 중성지방 및 총 콜레스테롤 함량은 HFC+D2 및 HFC+D3이 대조군에 비해 유의적인 감소를 보였다. 분변 중의 중성지방 함량은 된 장 급이군 모두 대조군에 비해 26.2~40.3%의 증가를 보였으며(p<0.05), 총 콜레스테롤 함량은 LS된장 급이군만 유의적으로 증가하였다. 간 조직 중 SOD 활성은 대조군에 비해 05C4 및 LS된장 급이군에서 유의적으로 증가하였으며, catalase 및 GSH-px 활성은 된장 급이군 모두 대조군에 비해 유의적으로 증가하였다. UDPGT 활성은 된장의 급이 시 정상군과 유사한 수준으로 증가되었으며, 특히 LS된장 급 이군은 정상군에 비해 유의적으로 증가하였다. 따라서 LOX 결핍 콩으로 제조된 된장은 체내 지질 개선 및 항비만 활성에 긍정적인 도움이 될 것으로 판단된다.

        The aim of this study was to evaluate key properties of the prickly pear cactus (Opuntia ficus-indica var. saboten (OFI) ie, levels of key chemicals (carotenoids, flavonoids and polyphenolic compounds as well as phenolic acid) and its antioxidative potential, depending on where the plant had been cultivated in Korea. The levels of flavonoids and polyphenolic compounds in OFI were 55.45~65.32 mg (+)-catechin/g and 149.00~181.15 mg gallic acid/g, respectively. Protocatechuic acid was the most abundant phenolic acid in the ON1 and ON2 (161.90 and 196.25 μg/g DW (dry weight)). Nineteen flavonoids were identified and analyzed by LC-ESI-MS in cladodes from OFI. Narcissin was the most abundant flavonoid in all of the samples (1,241.89~1,775.10 μg/g DW). Capxanthin and zeaxanthin were the most abundant carotenoids in OFI (64.88~128.08 and 48.10~93.82 μg/g DW). The level of DPPH radical and ABTS radical scavenging activities in OFI were 10.78~25.35 and 16.85~34.16 mg AA eq/100 g, respectively. OFI by cultivar has different kind of phenolic acid, flavonoids, and carotenoids. Therefore, dietary intake of cladodes from OFI may be helpful for improving human health

        The purpose of this study was to investigate the levels of antioxidant activities in some traditional and a few super food mixed rice. Amongst nine chosen samples, traditional five grains were analyzed and results revealed highest content of crude-protein (8.05±1.11%) and lowest crude-fat content (1.74±0.29%); however, the calories was found to be relatively low (358.05±0.34 kcal) in the samples. Total polyphenols, flavonoids and tannins were extracted from nine samples with 80% methanol and biochemical activity was measured. The content of total polyphenols, flavonoids and total tannin was 206.5~452.0 μg/mL, 0.126~0.340 μg/mL, and 548.1~774.8 μg/mL, respectively. The traditional five grains showed the highest values except for DPPH radical scavenging activity. DPPH radical scavenging activity was 5 to 40.3% higher in eight samples than the traditional five grains sample. From these results, it is conjectured that a mixture of five grains, might exhibit equal or considerably higher effect as healthy diet when compared to super food. The results from this study would serve as basic data for the use of traditional mixed grains rice diet for good health

        The objective of this study was to investigate the antioxidant and anti-inflammatory activities of Eugenia caryophyllata Thunb. water and 70% ethanol extracts. The content of total polyphenol was significantly higher in water extract than in 70% ethanol extract. The DPPH radical scavenging activity of water extract was similar to that of Vit. C at a concentration of 1,000 μg/mL. The ABTS radical scavenging activities of water and 70% ethanol extract were similar to that of Vit. C at a concentration of 1,000 μg/mL. SOD-like activity of water extract was higher than that of 70% ethanol extract at a concentration of 1,000 μg/mL but lower than that of Vit. C. The DPPH radical scavenging activity, ABTS radical scavenging activity, and SOD-like activity increased as concentrations of water and 70% ethanol extracts increased. Cell cytotoxicity was not observed at all concentrations except at 100 μg/mL concentration of water extract. Inhibitory activity on NO production effect of water extract was significantly higher than that of 70% ethanol extract. These results show that E. caryophyllata Thunb. has potent biological activities, and their activities were different depending on extraction solvent.

        This study was conducted to assess the quality characteristics and antioxidant activity of Yanggaeng prepared with different concentrations of blackcurrant powder (0, 1.5, 3, and 4.5%). The moisture content ranged from 41.95% to 45.38%, exhibiting no significant differences between the groups. The pH gradually decreased with increasing levels of blackcurrant powder. The lightness (L) value decreased while redness (a) value increased with an increasing amount of blackcurrant powder. Hardness of the control group was lower than those of the treatment groups. Consumer acceptance test revealed no significant differences in surface color, smell, taste, and overall acceptability scores between the control and 3% added groups. The total polyphenol contents and total anthocyanin contents were 7.58~54.88 mg GAE/100 g and 0.00~4.20 mg C3G/100 g), respectively, which increased proportionally with increasing levels of blackcurrant powder. The antioxidant activity measured based on 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzothiazoline-6- sulfonic acid) (ABTS) radical scavenging activity and ferric reducing antioxidant power (FRAP) were significantly higher in treatment groups than the control and increased as the concentration of blackcurrant powder increased. From the above results, blackcurrant powder up to 3% can be incorporated into Yanggaeng to satisfy taste and functional needs for consumers.
