        This study examined the structural, physicochemical, and functional characteristics of five black soybean (Glycine max (L.) Merr.) cultivars—Cheongja5, Danheuk, Socheongja, Seum, and Soriheuk—bred and cultivated in Korea. We conducted comprehensive analyses on morphology, microstructure, thermal and hydration properties, pasting behavior, and antioxidant activity to identify cultivar-specific differences in processing suitability and functional properties. The results indicated significant varietal variations in seed coat ratio, cotyledon density, and color, which affected thermal stability, hydration, and viscosity development during heating. Cultivars with compact cotyledon matrices, such as Cheongja5 and Danheuk, displayed high enthalpy (ΔH), low solubility, and limited viscosity development, suggesting high structural stability and low thermal reactivity-traits favorable for thermally stable or beverage-type applications. In contrast, cultivars with looser structures and greater surface exposure, like Seum and Socheongja, exhibited higher swelling power, dispersion stability, and RVA viscosities, indicating their suitability for viscous or semi-solid systems. Notably, Soriheuk showed the highest antioxidant activity and levels of phenolic and flavonoid compounds, correlating with its high seed coat ratio and dark pigmentation, positioning it as a promising functional ingredient. These findings underscore that the physicochemical and structural diversity among black soybean cultivars significantly influences their processing performance and functional potential, providing a scientific foundation for selecting and developing functional cultivars.

        Lithium-ion batteries are widely used in various advanced devices, including electric vehicles and energy storage devices. As the application range of lithium-ion batteries expands, it will be increasingly important to improve their gravimetric and volumetric energy density. Layer-structured oxide materials have been widely adopted as cathode materials in Li-ion batteries. Among them, LiNiO2 has attracted interest because of its high theoretical capacity, ~274 mAh g-1, assuming reversible one Li+-(de)intercalation from the structure. Presently, such layered structure cathode materials are prepared by calcination of precursors. The precursors are typically hydroxides synthesized by coprecipitation reaction. Precursors synthesized by coprecipitation reaction have a spherical morphology with a size larger than 10 μm. Spherical precursors in the several micrometer range are difficult to obtain due to the limited coprecipitation reaction time, and can lead to vigorous collisions between the precursor particles. In this study, spherical and small-sized Ni(OH)2 precursors were synthesized using a new synthesis method instead of the conventional precipitation method. The highest capacity, 170 mAh g-1, could be achieved in the temperature range of 730~760 °C. The improved capacity was confirmed to be due to the higher quality of the layered structure.

        콩(Glycine max L.)은 생물학적 질소고정을 통해 생육에 필요한 질소를 공급받는다. 하지만 콩과 공생을 하는 근류균이 경작지에 분포하더라도, 답전윤환과 같은 환경의 토양에서는 근류균의 밀도가 낮을 수 있다. 이에 따라 답전윤환 조건에서 식물체가 생물학적 질소고정을 시작하는데 어려움이 있을 수 있다. 따라서, 본 연구는 답전윤환 환경에서 근류균 인공 접종이 콩의 생육과 수량에 미치는 효과를 알아보고자 수행하였다. 근류균 접종방법과 접종시기를 달리한 6가지 처리를 답전윤환 콩포장에 복합적으로 실시하였으며 각 처리는 다음과 같다. 1) control (non-inoculation); 2) seed coating inoculation (SC); 3) seed coating + spray inoculation at V4 (SC+VS); 4) seed coating + spray inoculation at R1 (SC+RS); 5) spray inoculation at V4 (VS); 6) spray inoculation at R1 (RS). 포장실험 결과, 파종 시 종자에 처리하는 seed coating 처리 그룹(SC, SC+VS, and SC+RS)은 무처리에 비해 생육이 전반적으로 지연되었다. 한편, spray inoculation처리 그룹(VS and RS)은 식물체의 초장, 엽록소함량, NDVI, Performance Index 값이 무처리와 비슷한 양상을 보였다. 작물의 종실수량은 SC처리구가 170 kg/10a로 가장 낮았다. 이와는 다르게 RS처리구는 주당협수의 경우 무처리보다 28% 낮았으나, 종실수량(201 kg/10a)은 무처리(190 kg/10a)에 비해 6% 높았다. 본 연구에서 뿌리혹의 노화가 발생하는 개화기(R1) RS처리는 콩의 후기 생육을 유지하는 결과를 보였다. 따라서, 콩의 생식 생장 초기에 토양표면에 질소고정균을 처리하는 것이 국내의 답전윤환과 같은 불량환경 조건에서 활용 가능한 방식으로 사료된다.

        본 연구는 사료내 비테인, 글라이신, 그리고 콜린의 혼합 첨가가 고온 스트레스 환경에서 노령 산란계의 생산성, 난품질, 면역 반응 및 혈액성상에 미치는 영향을 조사하고자 수행되었다. 총 336마리의 86주령 로만 갈색종 노령 산란계를 6처리 7반복, 반복당 8수씩 임의 배치하였다. 대조구는 모든 영양소 및 에너지 요구량을 충족하거나 초과하도록 배합하였다. 대조구를 제외한 사료 처리구는 0.2% 비테인, 0.62% 글라이신, 그리고 0.32% 콜린을 단독, 두 가지 혼합, 혹은 세 가지 혼합으로 사료내 첨가하였다. 실험은 8주 동안 진행되었으며, 모든 산란계는 매일 8시간 동안 평균 온도 31.7±1.7℃, 습도 57%의 고온 스트레스 조건에서 사양되었고, 이외 시간에는 평균 온도 27±1.3℃, 습도 57%에서 사양하였다. 실험 결과, 비테인, 글라이신 및 콜린의 첨가는 생산성, 난품질, 그리고 면역 반응에 유의적인 영향을 미치지 않았다. 그러나, 0.2% 비테인과 0.62% 글라이신을 혼합 첨가한 처리구에서 혈청 알라닌 아미노전이효소 농도가 유의적으로 감소했다. 하지만, 다른 혈청 지표들은 처리간 유의적인 차이가 관찰되지 않았다. 결론적으로, 현재 수준에서 사료내 비테인, 글라이신, 그리고 콜린의 혼합 첨가는 고온 스트레스 환경에서 사양되는 노령 산란계의 생산성, 난품질, 면역 반응 및 혈액 성상에 긍정적인 영향을 미치지 않는다고 판단된다.

        In vitro digestibility and protein digestibility corrected amino acid scores (PDCAAS) were investigated to verify the availability of protein in various Rhizopus oligosporus fermented products of domestic soybean (Glycine max L.) cultivars. Danbaegkong (DBK), Daepung (DP), Daewonkong (DWK), Saedanbaek (SDB), Seonyu (SY), and Cheongja4ho (CJ4) were used as raw samples, which were fermented using commercially available Rhizopus oligosporus for 48 h. All cultivars showed increased crude protein content after fermentation. The crude protein content of DBK and SDB was significantly higher than that of the other samples (55.12% in DBK and 54.22% in SDB) (p<0.001). CJ4 had the highest alanine content of 28.88 mg/g (p<0.001), and no significant difference in cysteine content was detected among the cultivars. In most of the fermented samples, the in vitro digestibility was 0.9 or higher, indicating high protein in the fermented samples. However, it is considered that restrictions on digestion are low. In DWK, the amino acid content and PDCAAS, which together indicate protein quality, were 0.917 and 0.855, respectively, confirming that it was the best cultivar to provide the raw material for fermentation. In conclusion Rhizopus oligosporus fermented soybean products can be considered a prospective source of protein with high utility value.

        선행연구를 통해 침수에 대해 저항성과 감수성을 나타내는 야생콩계통을 선발하고 난 뒤 이들 자원들간 지상부 및 지하부 특성을 분석하였고, 유전자의 발현량도 비교 분석하였다. 1. 연구결과, 침수에 대해 저항성을 나타낸 ‘CW11598’과 감수성을 나타낸 ‘CW11948’는 알코올 발효를 촉매하는 PDC와 ADH효소의 활성을 조절하는 mRNA 발현량에서 차이를 보였다. 감수성계통에서 PDC와 ADH 활성을 조절하는 유전자 모두 침수처리에서 무처리보다 유전자 발현량이 감소하였고, 저항성계통해서는 침수처리에서 오히려 무처리보다 이들 유전자의 발현량이 증가하였다. 이런 침수스트레스 대체 경로의 차이는 감수성계통에서 침수처리 무처리보다 줄어든 LSA, TRL 및 RSA로 나타났다. 2. 식생지수 NDVI와 PRI 모두 감수성계통이 침수처리에서 무처리 대비 크게 감소하였다. 하지만 저항성계통에는 LSA는 침수처리와 무처리간 차이가 없었고, 식생지수 NDVI와 PRI도 침수처리와 무처리간 차이를 보이지 않았다. 하지만 TRL와 RSA는 침수처리에서 무처리보다 감소한 것으로 조사되었다.

        With the aim of developing region specialized crops, this study was conducted to clarify effects of variant and cultivation region on antioxidative activities in various black soybean (Glycine max L.) seed tissues. Three black soybean varieties (SCEL-1, Wonheug, and Cheongja 3) were each cultivated in 4 different regions (Jeonju, Pyeongchang, Paju, and Cheonan). Harvested seeds were used to assess DPPH and ABTS radical scavenging activity, and total polyphenol, flavonoid and anthocyanin content. SCEL-1 soybean hull contained higher DPPH and ABTS radical scavenging activity (61% and 85% respectively) compared to Wonheug (40% and 50% respectively). SCEL-1 cultivated in Pyeongchang displayed the highest total polyphenol and flavonoid content (1,189 mg GAE/ 100g sample and 951 mg CTE/ 100g sample, respectively). Total anthocyanin content was ranked in the following order: SCEL-1>Wonheug>Cheongja 3. All black soybeans showed much higher antioxidant activity in the soybean hull than in the dehulled soybean. The antioxidant activity of black soybeans cultivated at high latitudes was high. These results suggest that the best black soybean variant for high beneficial biological activities is the SCEL-1 variant. For a complete understanding of the potential of black soybean as functional foods, we plan to further analyze their antioxidant activities in future studies.

        In order to understand the vegetative role of Glycine soja, we studied the basic physiological characteristics between Glycine soja and Glycine max. For this study, the light intensity (μmol m-2 s-1) on leaf surface, leaf temperature (℃), transpiration rate (mmol m-2 s-1), photosynthetic rate (μmol m-2 s-1), substomatal CO2 partial pressure (vpm) of Glycine soja and Glycine max were measured, and the quantum yield, photosynthesis rate per substomatal CO2 partial pressure were calculated. In the results of simple regression analysis, the increasing quantum yield decreases leaf temperature both of Glycine soja and Glycine max and the increasing leaf temperature decreases transpiration rate in case of Glycine soja. However, in case of Glycine max, the increasing leaf temperature decreases substomatal CO2 partial pressure, photosynthetic rate, and photosynthetic rate per substomatal CO2 partial pressure as well as transpiration rate. Also, increasing transpiration rate increases substomatal CO2 partial pressure while decreases photosynthetic rate per substomatal CO2 partial pressure. Thus, Glycine soja is relatively more easily adaptable to severe environments with low soil nutrients and high light levels. Compared to Glycine max susceptible to water loss due to a water-poor terrestrial habitat, the physiological traits of Glycine soja has a high average transpiration rate and are less susceptible to water loss will act as a factor that limits the habitat according to soil moisture.

        In this study, chemical information on a total of 20 individual compounds was constructed to identify isoflavones from the previous reports related with used parts(seeds, leaves, stems, pods) and products of soybean(Glycine max L.). Through constructed library and UPLC-DAD-QToF/MS analysis, a total of 19 individual isoflavones including aglycones, glucosides, acetylglucosides and malonylglucosides as major compounds was identified and quantified from 14 selected soybean seeds. Among them, genistein 7-O-(2"-O-apiosyl)glucoside and genistein 7-O-(6"-O-apiosyl)glucoside(ambocin) were identified tentatively as novel compounds in soybean seeds. Besides, among malonylglucosides, glycitein 4'-O-(6''-O-malonyl)glucoside was estimated for the first time. Total isoflavone contents were distributed from 240.21 to 445.21(mg/100 g, dry matter) and 7-O-6''-O-malonylglucosides were composed of 77.8% on total isoflavone as well as genistein derivatives were confirmed as major class. It was considered importantly that the development of isoflavone-rich varieties was necessary to strengthen their effects such as anti-inflammation, anti-cancer and menopause mitigation. The qualitative and quantitative data presented precisely in this study could be help to select and breed isoflavone-rich varieties. Furthermore, their basic isoflavone profile is expected to be applied to estimate the change of isoflavone conjugates on bioavailability after soy food supplements.

        To increase the functional material content of soybean, a repetitive steaming and drying process was used. We investigated the changes in the total polyphenol content, the antioxidant activity, and the angiotensin-Ⅰ converting enzyme (ACE) inhibition in soybean following nine rounds of steaming and drying. Soybean was steamed 9 times for 2 h and then dried 9 times from 55℃ to 73℃ for 3 h. The total polyphenol content in the soybean reached a maximum value of 60.47 mg GAE eq./100 g at 73℃ while the total polyphenol content in the raw soybean reached 25.17 mg GAE eq./100 g. In the raw soybean samples, the DPPH radical scavenging activity (5 mg/mL) was 8.04% but it increased by 43.29% after drying 9 times to 73℃. ABTS radical scavenging activity also improved following 9 rounds of steaming and drying. ACE inhibitory activity of the soybean dried 9 times at 73℃ was 58.94% at 10 mg/mL. These results showed that steaming and drying soybean 9 times enhanced the antioxidant activity and the ACE inhibitory activity of soybean. Therefore, more research on the biological and anti-hypertensive activity of soybean using this steaming and drying method is necessary.

        1913년부터 2013년까지 국내에서 육성된 172품종에 대한 종실의 단백질, 지방 함량과 지방산 조성의 변이는 다음과 같다. 총 단백질 함량의 평균은 38.6%(31.6~45.3%), 지방함량의 평균은 18.4%(15.3~21.5%), 포화지방산 중 Palmitic acid의 함량은 평균11.11%(8.1~13.5%), Stearic acid의 함량은 평균 3.7%(1.9~5.4%), 불포화지방산인 Oleic acid의 함량은 평균 26.4%(13.1~41.8%), Linoleic acid의 함량은 평균 50.9% (37.2~63.0%), Linolenic acid의 함량은 평균 7.6%(5.7~9.8%), Linoleic(ω-6)/Linolenic(ω-3)acid의 비율은 평균 6.8(5.3~8.9)이여서, 포화지방산이 평균 14.8%(10.8~17.6%), 그리고 불포화 지방산 함량은 평균 84.9%(79.9~88.7%)이었다. 단백질 함량이 가장 높은 품종은 45.3%로 새단백콩이었으며, 지방함량이 가장 높은 품종은 21.5%를 함유한 늘찬콩이었다. 고 Oleic acid 함량인 동시에 저 Linoleic acid 함량인 검정콩1호는 양질의 지방산을 함유한 매우 유용한 품종이었다. 용도에 따른 단백질, 지방 지방산의 평균함량 중 단백질의 함량은 풋콩 및 올콩용 품종이 가장 높았고, 지방 함량은 장류용 품종이 가장 높았으며, 포화지방산은 장류용품종이 가장 낮았고, 불포화지방산의 함량은 풋콩 및 올콩용 품종이 가장 낮았다. ω-6/ω-3의 비율은 밥밑용 품종이 가장 낮았다. 종피색에 따라서는 단백질 함량은 녹색콩이 가장 높았으며 지방함량은 황색콩이 가장 높았다. 포화지방산은 황색콩과 검정콩이 가장 낮았으며, 불포화 지방산은 갈색콩이 ω-6/ω-3의 비율 또한 갈색콩이 가장 낮게 나타났다.

        Perennial need for bactericides requires cost-effective nanomaterials with strong antibacterial activities even in the absence of external irradiation. Hence, in this work, we have synthesized f-CFT (fluorinated TiO2- doped, glycine-functionalized MWCNTs) and have studied its antibacterial activities. Both gram-negative and gram-positive bacteria were analyzed in the absence of photo-activation. Zone of inhibition of 15 mm for S. aureus, and 11 mm for P. aeruginosa was observed for f-CFT owing to the synergistic bactericidal properties of functionalized MWCNTs, fluorine and nano-TiO2. Anatase phase TiO2 with average crystallite size as 35 nm was observed in XRD. Scanning electron microscopic images showed uniform mixed cubic structures. Hydroxyl groups observed in FT-IR along with the glycine MWCNTs interface aid the inhibition of bacterial growth even in the absence of photo activation. A desired higher gram-positive bacterial inhibition opens new gates for better antibacterial agents.

        The osmolarity of a medium that is commonly used for in vitro culture (IVC) of oocytes and embryos is lower than that of oviductal fluid in pigs. In vivo oocytes and embryos can resist high osmolarities to some extent due to the presence of organic osmolytes such as glycine and alanine. These amino acids act as a protective shield to maintain the shape and viability in high osmotic environments. The aim of this study was to determine the effects of glycine or/and alanine in medium with two different osmolarities (280 and 320 mOsm) during IVC on embryonic development after parthenogenesis (PA) and somatic cell nuclear transfer (SCNT) in pigs. To this end, IVC was divided into two stages; the 0-2 and 3-7 days of IVC. In each stage, embryos were cultured in medium with 280, 320, or 360 mOsm and their combinations with or without glycine or/and alanine according to the experimental design. Treatment groups were termed as, for example, "T(osmolarity of a medium used in 0-2 days of IVC)-(osmolarity of a medium used in 3-7 days of IVC)" T280-280 was served as control. When PA embryos were cultured in medium with various osmolarities, T320-280 showed a significantly higher blastocyst formation (29.0%) than control (22.2%) and T360-360 groups (6.9%). Glycine treatment in T320-280 significantly increased blastocyst formation (50.4%) compared to T320-280 only (36.5%) while no synergistic was observed after treatment with glycine and alanine together in T320-280 (45.7%). In contrast to PA embryonic development, the stimulating effect by the culture in T320-280 was not observed in SCNT blastocyst development (27.6% and 23.7% in T280-280 and T320-280, respectively) whereas the number of inner cell mass cells was significantly increased in T320-280 (6.1 cells vs. 9.6 cells). Glycine treatment significantly improved blastocyst formation of SCNT embryos in both T280-280 (27.6% vs. 38.0%) and T320-280 (23.7% vs. 35.3%). Our results demonstrate that IVC in T320-280 and treatment with glycine improves blastocyst formation of PA and SCNT embryos in pigs.

        본 연구에서는 발아와 고압처리에 따른 검정콩 조사포닌 추출물의 in-vitro 항암 활성을 확인하기 위하여 검정콩을 발아시킨 후 고압처리하고, 조사포닌 추출물을 제조한 후 인체 유래 유방암(MCF-7), 대장암(HCT-116), 전립선암(PC-3) 및 위암(AGS) 세포주에 대한 증식억제효과를 검토하였다. 대조구의 조사포닌 추출물은 400 μg/mL 농도에서 4종의 암세포주에 대하여 67.02~91.70% 범위의 생존율을 보여 항암 효과가 낮았지만, 발아 4일차 콩을 150 MPa의 압력에서 고압처리한 검정콩의 조사포닌 추출물은 23.94~57.37% 범위의 생존율을 보여 발아와 고압처리에 의해 암세포 성정억제효과가 증가하였다. 특히, 위암세포(AGS)의 경우 다른 세포주에 비해 저농도에서도 세포증식효과를 보여 가장 높은 암세포 증식억제 효과를 나타내었다. 이상의 결과로부터 항암 활성을 나타내는 Soyasaponin, B group의 soyasaponin 및 soyasapogenol의 함량은 발아와 고압처리에 의해 증가하였고, 고압처리 발아콩으로부터 항암 활성을 나타내는 사포닌 추출물의 개발이 가능할 것으로 생각된다. 또한, 추후 항암 활성 물질의 분리동정과 메커니즘 규명에 대한 연구가 수행되어야 할 것으로 판단된다.

        Pumpkin (Cucurbita moschata Duch.) seed is rich in protein and sulfur-containing amino acids. Tofu is a protein gel made from soybean, which is rich in lysine but lacking in sulfur-containing amino acids. This study was conducted to investigate the use of pumpkin seeds in tofu manufacture and to determine its quality and texture characteristics. Soybean was substituted with pumpkin seed to obtain pumpkin seed tofu at the following ratios: 10%, 30%, 50%, and 70% (P10, P30, P50 and P70). Tofu manufactured only with soybean was used as a control (Con). The higher rate of pumpkin seed substitution significantly decreased the moisture content and yield rate (p<0.05). In contrast, pH value and turbidity were significantly increased with the increase in the amount of pumpkin seed (p<0.05). The L-value (81.74~79.04), a-value (-0.19~-3.89) and b-value (12.40~9.84) of samples significantly decreased with the amount of pumpkin seed (p<0.05). No significant difference in syneresis was found among the samples (p<0.05). The hardness tended to decrease with the increase in the amount of pumpkin seed. The microstructure analysis revealed that the pore size of pumpkin seed tofu was smaller than that of Con. These results suggest that the pumpkin seed protein is a useful ingredient in the manufacture of tofu. Increasing the pumpkin seed substitution levels improves the texture of tofu.
