Sprout products, such as broccoli, alfalfa, and cabbage, have positive health effects. Thus far, sprout foods have attracted attention owing to their good bioavailability. In particular, young broccoli sprouts exhibit anti-inflammatory, antioxidant, and anti-cancer effects. They contain 100 times more chemoprotective substances than adult broccoli. This study examined the anti-inflammatory effects of freeze-dried young sprout broccoli (FD-YB) in vitro using RAW264.7 macrophage cells. The FDYB powder antioxidant ability test showed that the radical-scavenging activity and superoxide dismutase enzyme activity increased in a dose-dependent manner. In addition, FD-YB was not cytotoxic to RAW264.7 cells, and nitric oxide production decreased after the FD-YB treatment of lipopolysaccharide-stimulated RAW264.7 cells in a dose-dependent manner. Furthermore, FD-YB significantly decreased the expression of inflammation-related proteins (Cyclooxygenase-2, Inducible nitric oxide synthase, and Prostaglandin E Synthase 2) and cytokines (Tumor necrosis factor- and Interleukin-6). In conclusion, FD-YB can be a potential nutraceutical for preventing and regulating excessive immune responses during inflammation.
Background: Brassica oleracea var. italica (broccoli), a rich source of antioxidants,
can prevent various diseases and improve human health. In this study, we investigated
the antioxidative effects of broccoli sprout extract on oxidative stress induced by
lipopolysaccharide and cisplatin in cell and organ tissue models.
Methods: Antioxidative effect of BSE was evaluated using DPPH and ABTS in RAW
364.7 cells, and effects of BSE on testes were investigated using Cisplatin-induced
testicular damage model with an in vitro organ culture system.
Results: The DPPH assay showed that the antioxidant activity of the alcoholic
broccoli sprout extract was higher than that of the water extract. Additionally, the
expression levels of antioxidation-related genes, Nrf2 , Gsr , HO-1, and catalase , were
significantly increased in broccoli sprout extract-treated RAW 264.7 cells, and the
extract suppressed lipopolysaccharide-induced mitochondrial dysfunction. Based on
the results in the RAW 264.7 cell culture, the antioxidative effects of the extracts were
investigated in a mouse testis fragment culture. The expression of Nrf2 , HO-1 , and
Ddx4 was clearly decreased in cisplatin-treated mouse testis fragments and not in
both broccoli sprout extract- and cisplatin-treated mouse testis fragments. In addition,
the oxidative marker O-HdG was strongly detected in cisplatin-treated mouse testis
fragments, and these signals were reduced by broccoli sprout extract treatment.
Conclusions: The results of this study show that broccoli sprout extracts could serve
as potential nutraceutical agents as they possess antioxidant effects in the testes.
This research investigated the immunoenhancing effect through the intracellular MAPKs and NF-B signaling pathways in macrophages activated by crude polysaccharides (YBP) of barley sprouts. YBP extracted from barley sprouts is composed of xylose (25.8%), arabinose (24.1%), galactose (23.4%), and galacturonic acid (11.7%). YBP did not affect the cytotoxicity and showed superior secretion of nitric oxide (NO), interleukin (IL)-6, and tumor necrosis factor (TNF)- by RAW264.7 cells. Also, YBP dose dependently increased IL-6, TNF-, and inducible nitric oxide synthase (iNOS) mRNA gene expression. In the western blot, YBP strongly induced the phosphorylation of the p38, JNK, ERK, and IB pathways in RAW 264.7 cells. In the anti-pattern recognition receptor (anti-PRRs) assay, the effect of YBP on NO secretion strongly decreased toll-like receptor (TLR) 4 and Dectin1 antibodies, whereas IL-6 and TNF- secretion by YBP mainly decreased SR and CD14. Therefore, we concluded that YBPinduced NO, IL-6, and TNF- were secreted via the MAPKs, while NF-B pathways through TLR4, Dectin1, SR, and CD14 receptors existed in a macrophage surface and were involved in the immunoenhancing effect.
In this study, the growth characteristics of Lentinula edodes were confirmed by bean sprout waste(BW) as an alternative raw material for rice bran. The mycelium growth of Sanjo701, a major cultivation variety of L. edodes, was compared between a medium mixed with 8:2(v/v) of oak sawdust and a medium mixed with BW 50% and BW 100%. The mycelium growth in BW 50% was 13.5 cm. Compared to the control, BW 50% increased the diameter of the pileus by 1.6 cm. Additionally, the length of the pileus decreased by 0.4 cm when comparing the growth of the fruit body. In contrast, at BW 50%, the diameter of the pileus decreased by 9.6 cm and the length of the stipe decreased by 1.4 cm. According to analysis of the constituent amino acids, BW 50% showed a lower overall nutritional content than the control, whereas BW 100% had a lower amino acid content than the control. However, glutamic acid and aspartic acid, which are flavor-enhancing ingredients, were observed at levels of 3.954 mg/g and 1.436 mg/g, respectively, in BW 100%. Therefore, if bean sprout by-products are efficiently processed and utilized, it is believed that they will be beneficial to farmers as a substitute for rice bran and reduce the cost of manufacturing substrate
Brassica oleracea var. italica (broccoli) is a type of cabbage that contains vitamins, minerals, and phytochemicals. Consequently, it is used as a potential nutraceutical source for improving human health by reducing oxidative stress and inflammatory responses. Here, the effects of broccoli sprout extract (BSE) on the inflammatory response were investigated through lipopolysaccharide (LPS)- induced inflammatory mouse models. First, we found that the BSE obviously reduce NO production in RAW 264.7 cells in response to LPS stimulation in in vitro study. Pretreatment with BSE administration improved sperm motility and testicular cell survivability in LPS-induced endotoxemic mice. Additionally, BSE treatment decreased the levels of the pro-inflammatory cytokines TNF-a, IL-1β, and IL-6, and COX-2 in testis of LPS-induced endotoxemic mice models. In conclusion, BSE could be a potential nutraceutical for preventing the excessive immune related infertility.
This study investigated the physicochemical and antioxidant properties of sponge cakes made using different amounts (2 and 4%) of barley sprout powder (BSP) and green tea powder (GTP), respectively. The results showed that the baking loss rate of GS2 (2% green tea) and GS4 (4% green tea) was 12.39% and 11.96%, respectively in the green tea addition group, which was higher than that of the barley sprout group, but significantly lower than that of the control group at 13.34% (p<0.05). The specific volumes of the sponge cake containing barley sprout and green tea 2% and 4% were between 2.84- 2.95 mL/g, which was significantly higher compared to the control group at 2.69 mL/g (p<0.05). The sugar content was significantly higher in the control group and the barley sprout addition group at 2.30oBrix (p<0.05). As for the volume index, the control group with the lowest value at 13.43 showed a significant difference compared to the addition groups. The volume index significantly decreased as the addition amount increased, measuring 14.07 in BS4 (4% BSP) compared to 14.87 of BS2 (2% BSP) in the barley sprout group (p<0.05). In cross-sectional photography, the color became darker than that of the control group as the quantum of additives increased. In terms of the DPPH and ABTS radical scavenging activity, the total phenol content, and total flavonoid content, the groups with the addition of barley sprout and green tea showed higher antioxidant activity than the control group (p<0.05).
새싹삼의 곰팡이 발생을 조사하기 위해 18점의 유통중 인 새싹삼을 수집하여 곰팡이 발생빈도를 분석하였다. 전체 시료의 총 곰팡이 발생빈도는 평균 113.3-174.1%였고 Penicillium spp.의 발생빈도가 가장 높았다. 곰팡이 발생 빈도는 이끼가 잎, 줄기, 뿌리보다 유의하게 높았다. 잎과 줄기에서는 Penicillium spp.이, 뿌리에서는 Fusarium spp.의 발생이 높았으며 각각의 우점종은 P. olsonii와 F. oxysporum으로 동정되었다. 계통발생학적 분석을 통해 Fusarium spp.은 총 9개 종, Aspergillus spp.은 A. westerdijkiae와 A. favus, Penicillium spp.은 총 11개 종이 동정되었다. 곰팡이독소 생성 종으로 알려진 25균주의 독소형을 PCR로 검정한 결과 19점의 균주에서 각 독소형이 확인되었다. 이 중 A. flavus 2점과 A. westerdijkiae 11 점이 aflatoxin과 ochratoxin A을 각각 생성하였고 일부 균주는 높은 독소생성능을 보였다. 이 결과는 새싹삼 생산에 있어 곰팡이 발생에 대한 지속적인 모니터링 및 관리방안이 필요함을 시사하였다.
This study was carried out to compare the quality characteristics and antioxidant activity by varying the barley sprout powder addition time, production temperature, and powder addition ratio (0, 2, 4, 6, 8%) on the prepared rice during the manufacturing process of Nurungji. When we manufactured for 2 min at 200oC, the total polyphenol and flavonoid contents were the highest in Nurungji with 4% of barley sprout powder. In this way, we measured the weight, water content, water binding capacity, soluble solids content, reducing sugar, color, hardness, sensory evaluation experiments by varying the powder content. The weight, water binding capacity, soluble solids content, reducing sugar, and hardness increased with an increasing proportion of barley sprout powder, however the water content decreased. The L value and b value decreased and the a value increased with the influence of chlorophyll pigments in barley sprout. Sensory evaluation showed that Nurungji with 4% sprout barley powder was the highest. Therefore, we judged that it is desirable to add 4% of the powder when manufacture the barley sprout powder Nurungji.
The purpose of this study was to evaluate the quality characteristics of white pan bread added with wheat sprout powder without treatment (WP) and wheat sprout powder with only enzyme treatment (WPE), only lactic acid bacteria treatment (WPL) and enzyme and lactic acid bacteria treatment (WPE&L). The three different powder concentration levels of 1%, 3%, and 5% were added to flour to produce the white pan bread. The bread volume and specific volume of the WPE&L group were the highest among all the addition groups. The bread weight, a-value, and b-value of the WP group was highest among all the addition groups, but the bread baking loss and the L-value of the WP group was the lowest among all the addition groups. The texture measurements indicated that the hardness, gumminess, and chewiness values of the bread were the highest in the WP group. The sensory evaluation test showed that bread in the WPE&L group with 3% wheat sprout powder was the best among all the samples studied. Based on our findings, we suggest that the enzyme and lactic acid bacteria pretreated wheat sprout powder is an effective ingredient for improving the overall quality of white pan bread.
The physicochemical and antioxidant properties of cookies prepared using powders of barley sprout (BS), lemon balm (LB), and green tea (GT) were studied. The same dough density was maintained in all the sample groups. The experimental group to which the natural ingredients containing antioxidants were added did not show any significant change in the appearance of cookies compared to the control. LB and GT cookies showed significantly lower hardness compared to the control (p<0.05). Control showed the lowest antioxidant effect when assessed with 2,2-diphenyl-1-picrylhydrazyl. (DPPH) and this gradually increased in the order of BS, LB, and GT. The antioxidant activity of GT was 7 times higher as compared to the control (p<0.05). The antioxidant activity assessed using 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) also showed results similar to that seen with DPPH. GT showed a significantly higher total phenol content, about 2-3 times higher compared to the control (p<0.05). GT had significantly higher total flavonoid content than that of the control (p<0.05). Thus, the addition of natural antioxidant ingredients such as sprout barley, lemon balm and specifically green tea, in the preparation of cookies, resulted in excellent antioxidant activity with similar physicochemical quality characteristics. The study suggests that it is possible to develop cookies that are competitive in terms of nutritional and physiologically active functions.
The purpose of this study was to evaluate the physicochemical components and antioxidant activities of wheat sprout powder prepared by the enzymatic hydrolysis and lactic acid bacteria treatment. The four kinds of pre-treatment were: no treatment (WP), treated with enzyme (WPE), treated with lactic acid bacteria (WPL), and treated with enzyme and lactic acid bacteria (WPEL) were applied to the wheat sprout powder. The WPEL had higher total free amino acid and essential amino acid content than the other samples. As for the volatile aroma of the wheat sprout powder, 29 types of compounds were identified in the WP and WPL, 28 types in the WPE, and 27 types in the WPEL, respectively. The total polyphenols and flavonoids contents, in the wheat sprout powder was enhanced with the enzyme and the lactic acid bacteria pre-treatment. The WPEL had highest DPPH radical scavenging activities. The overall acceptability was the highest at 6.24 points in the WPEL. Based on these observations, it was confirmed that the enzyme and lactic acid bacteria pre-treatment could improve the antioxidant activities and active component of the wheat sprout powder.
The purpose of this study was to determine the content of polyphenols and flavonoids, vitamin C, and antioxidant activity for the extract from the Deodeok sprout. To accomplish this, the Deodeok sprout whole (CLS-W), above ground part (leaf, stem, CLS-L), and root (CLS-R) were individually extracted using 70% ethanol. The highest levels of total polyphenols and total flavonoids were observed in the Deodeok sprout extract CLS-L2. Similarly, antioxidant activities resulting in radical scavenging activities increased significantly in the extract of CLS-L2. In conclusion, these results indicate that Deodeok sprouts can be used as a viable, new natural antioxidant source.
LC/MS/MS를 이용하여 2019년 1월부터 6월까지 서울 강서지역에 유통하는 콩나물 및 숙주나물 82건에 대한 카벤다짐 모니터링을 실시한 결과 숙주나물에서는 카벤다짐이 검출되지 않았으며 콩나물에서는 59건중 6건에서 카벤다짐이 검출되어 10.2% 의 검출율을 나타내었다. 카벤다짐이 검출된 콩나물 6건중 5건이 허용기준을 초과하여 검출건수 대비 83.3%의 부적율을 나타내었다. 검출된 카벤다짐의 농도는 최소 0.012 mg/kg, 최대 0.104 mg/kg, 평균 0.063 mg/kg 이었으며 6건중 5건이 재래시장에서 유통되는 비포장 제품이었다. 카벤다짐이 검출된 6건의 원료수 입국은 수입산이 3건, 출처불명이 3건 이었으며 국내산으로 표시된 제품은 없었다. 카벤다짐이 검출된 콩나물에 대한 위해성 평가결과 %ADI 값이 1 이하로 인체에 미치는 위해도는 안전한 수준인 것으로 평가되었다.
