        Pretreatment of eliminating FFA is needed to make biodiesel from animal fat recovered from leather wastes because its acid value is high. This study was carried out to investigate the influence of 4 different pretreatment methods, which are heterogeneous catalyst method, ion exchange resin method, low pressure.high temperature method, and alkali method on the eliminating FFA and fatty acid composition. The results showed that the rate of eliminating FFA increased in the order of alkali method > catalyst method > low pressure high temperature method > ion exchange method. In the case of pretreatment of alkali method using NaOH, the rate of eliminating FFA appeared more than 86% regardless of acid value. Therefore, it was considered that alkali method using NaOH was the most effective in the view of economical and productive aspects, taking it into account that the acid value of animal fat recovered from fleshing scrap generated during leather making processes was 7 to 8.

        본 연구에서는 한식의 해외 현지화를 목표로 take-out형 franchise system 개발을 위한 기초자료를 얻기 위하여 한국적인 특성을 나타내면서 미국인들에게 선호도가 높았던 4 개의 품목을 선정하여 한국식단의 영양적인 우수성을 확인 하고자 실시하였다. 실험기간은 총 9주로서 전반기 5주(실험 1期)는 모두 고지방식을 급여하였고, 후반기 4주(실험 2 期)는 동결건조된 한식(제육볶음, 김치볶음, 두부조림, 나물 무침)을 첨가한 실험식이를 급여하였다. 대조군은 실험 전 기간 동안 고지방식만 급여하였다. 실험종료시 체중은 실험 군간에 유의적인 차이가 없었고, 실험기간 동안 일당 증체 량과 식이효율도 차이가 없었다. 장기무게는 대조군(A)이 한식식이군(B~E)에 비해 낮은 경향이었다. 체지방의 축적 지표로서 내장지방량(RFP, EFP)은 대조군(A)보다 김치볶음군(C)과 두부조림군(D)이 20% 감소하였다. 고지방식을 급여한 후 한식첨가식이를 4주 동안 급여후 혈청 지질 중 TC농도는 나물무침군이 94.13 mg/dL로 실험군중 통계적 으로 유의하게 낮았다(p<0.05). TG농도는 실험군간에 통계 적인 차이가 없었다. 고밀도지단백-콜레스테롤(HDLC) 농 도는 제육볶음군(20.38 mg/dL)이 두부조림군(17.25 mg/ dL) 보다 유의하게 높았고(p<0.05), 김치볶음군과 나물무침군은 차이가 없었다. 저밀도지단백-콜레스테롤(LDLC) 농도는 두부조림군이 가장 높았던 반면 나물무침군이 통계적으로 가장 낮았다(p<0.05). 이상의 결과에서 김치볶음과 두부조림 및 나물무침은 한국적인 특성과 건강기능성을 갖는 한식품목으로서 향후 이들 품목과 제육볶음을 적정하게 응용하여 미국인의 입맛에 맞는 take-out형 음식이 개발된다면 미국인들에게 한식의 영양적인 우수성과 인지도를 높여 널리 보급할 수 있을 것으로 기대된다.

        The purpose of this study is to search Mattie Ingold’s life, the first lady missionary doctor served in Jeonla province. She is known as a founder of the Jesus Hospital in Jeon Ju, 108years old teaching hospital with 600 beds. But her contribution and limitation as a lady doctor was not properly evaluated. She was very well prepared medical missionary graduating Women’s Medical College in Baltimore with the first prize. She had passion for mission to Korean so much that she would not return home for this people. The Rock Hill First Presbyterian Church as a sending church was also very mission oriented enough to take care of her medical education for 5 years before sending her to Korea. However her ministry period as a medical missionary was only from 1898 to 1904. It seems not so long as to raise question if there were any reasons to quit medical ministry while serving in Jeon Ju until 1925. This study traced the Mattie Ingold’s life and circumstances she had faced at the end of 19th century and early 20th century during the Japanese colonialism. As other medical missionaries did in many area of mission fields she played an important role in introducing the Christianity by bridging the gap with the traditional worldview or with the Confucianism. Her warm hearted medical care was definitely contributed to get rid of xenophobia prevailing in those days just few years after the Donghak farmer’s revolutionary movement. Even though, as a lady doctor, her medical work was restricted to caring ladies and children, her zeal for evangelism made her translate the Christian Cathechism Primer into Korean which has been used by all missionaries in Jeonla area. She rather used her limitation as a merit by involving more actively in home visiting and providing medical care for ladies and children which was not easily available to men. She must have struggled with xenophobia, male superiority complex and the health issue of herself which could have shrink her back from active medical work. But most depressing factor might have been the mission policy based on dualistic view on the Christian mission that medical ministry was just subordinate to the evangelistic ministry and that the medical care was just a bait for evangelism. This policy could have resulted in restriction in allocating resources for medical ministry. Moreover, at that time, even mission agency had male dominating atmosphere that ladies could not have a voice in decision making. This study may provide a lesson which is worth in helping individual missionaries of today’s mission by revealing that how the policy of a mission society and the contemporary worldview affects on the individual missionary’s ministry.

        Fleshing scrap is a kind of wastes produced during leather making process and used in the test of manufacturing biodiesel. The early step of manufacturing biodiesel is fat recovery from fleshing scrap. Hence, we investigated the influence of the way of fat recovery on the fatty acid composition. We used three different recovery ways, that is chemical method by protein decomposition with acid/fat recovering, physical method by protein denaturalization with heat and vacuum/fat pressing, and biodiesel method by protein decomposition/fat recovering. The biological method yielded the best results in terms of appearance transparency. It was most effective to lower acid value. Also the recovered fat by biological method would be favorable methyl-ester reaction raw material for biodiesel because it contains more than 5% of oleic acid among unsaturated fatty acid.

        This study was conducted to investgate the effect of gamma irradiation on the lipid oxidation, olfactory properties, fatty acid isomer and volatile compound profiles of five different oil sources. Three plant oils, canola oil, corn oil and soy oil, and two animal fat, tallow and fish oil, were irradiated with 0, 5, 10, and 20 kGy level of dose by Co-60 as a radiation source. Lipid oxidation parameters, FFA, POV and TBARS, were determined according to the AACC and AOCS method. Olfactory property of irradiated oil sources was analyzed using electronic nose (FOX3000, AlphaMOS Co., France) with 12 metal oxide sensors and the result was interpreted using principle component analysis program. Fatty acid isomer profiles and volatile compound profiles of irradiated oils were also measured by GC and GC-MS, respectively. Although the free fatty acid level of oil were the highest by high dose level (20 kGy) of irradiation, changes of both TBARS and POV values by gamma irradiation were varied between oil sources and irradiation level of dose. Electronic nose analysis showed a distinct difference among dose levels of irradiation. Although there was no new volatile compound produced by gamma irradiation, amounts of each volatile compounds were increased by irradiation. Only cis isomer, 9c12c15c of linolenic acid was dose-dependently decreased as irradiation level increased but there was no difference among other isomer profiles of linoleic acid and linolenic acid by gamma irradiation. This study showed that changes in physico-chemical properties of both plant and animal oil were remarkable by gamma irradiation. Therefore, a further study should be needed to scrutinize the interaction among lipid oxidation, production of volatile compounds and off-flavor, and isomerization of fatty acid by gamma-irradiation.

        This study was carried out to investigate the effects of addition of aged garlic extract (AGE) on the color and lipid oxidation of ground chicken during refrigerated storage. The leg meat from 6 weeks-broiler was chopped and added with 4% of distilled water (control) and AGE, respectively, and then stored at 4±0.2℃ for 8 days. The commercial garlic was aged for the relatively short time (40-90℃/300 hr →natural dryness/40 hr→20-30℃/30-50 hr). The pH value was not significantly different between control and AGE-added chicken. The TBARS level of chicken was remarkably inhibited by addition of AGE during storage. In CIE color values, AGE-added chicken showed lower L* and higher b*, C* and Ho values than those of control during storage. Therefore, the addition of AGE in ground chicken enhanced the lipid oxidative stability and change to dark color.

        This study was conducted to compare the carcass characteristics of native type black pigs (Black pigs) with those of commercial cross bred pigs (Commercial pigs) with the data collected from pig farms. 8364 and 33786 records were collected from Black pigs and the Commercial pigs, respectively. The Commercial pigs were mainly from three breed crosses of Yorkshire, Landrace and Duroc. Commercial pig data was subdivided into manual and machine sub data set on the judging method. Black pigs showed lower carcass weight (CWT) and thinner back fat thickness (BFT) than Commercial pigs. However, the ratio of BFT to CWT (BFT/CWT ratio) was higher in Black pigs than Commercial pigs. The carcass grades of Commercial pigs were mostly in A and B, C, and D in descending order, while the grades D or E were observed in most carcass of Black pigs. Barrow tended to be thicker in BFT and higher in BFT/CWT ratio than gilt both in Commercial and Black pigs, and gilt were higher in loin depth (LD) and Estimated Lean Yield Percentage (ELP) which were available only in the data by machine evaluation of Commercial pigs. Residual correlation coefficient (+0.496) between carcass weight and back fat thickness in Black pigs did not differ from those in Commercial pigs which were +0.434 and +0.414 in the data by manual and machine evaluation, respectively. The linear regression coefficients of back fat thickness on carcass weight were +0.364 mm in Black pigs, and +0.257 mm (manual evaluation) and +0.236 (machine evaluation) in Commercial pigs, which suggests relative accumulation rate of BFT to the growth of weight was faster in Black pigs than Commercial pigs.

        This study was aimed not only to develop the gill net and trap made of biodegradable monofilaments in order to prevent a ghost fishing and to protect marine ecosystem, but also to analyze their spinning process and physical properties. Results showed that the spinning speed of biodegradable polybutylene succinate(PBS) monofilament was estimated to be approximately 100m/min when spinning temperature and cooling water temperature were adjusted at 180℃ and 3℃, respectively. The breaking loads of PBS monofilaments were estimated to be 35.3kg/mm2 at Φ0.2mm, 46.5kg/mm2 at Φ0.3mm, and 49.7kg/mm2 at Φ0.4mm in the dry condition, respectively. However, its breaking loads in the wet condition were reduced by 2.4-5.5%, compared to those in the dry condition. The knotted strength of PBS monofilament at Φ0.2mm was estimated to be 98.6% of PE in the dry condition. The breaking load of PBS monofilament at Φ0.3mm was evaluated to be 81.8% of PA, and its softness showed 3 times less than that of PA in the wet condition. The breaking load of PBS monofilament at Φ0.4mm was 95.3% of PA, and its softness showed 1.6 times less than that of PA in the wet state. However, the load elastic elongations of two kinds of monofilaments were estimated to be 1% higher than that of PA.

        There are two parts(middle and southern) according to dividing line of district in Korea. Middle part contains Kang Won, Chung Chung, Gyeong Gi, Seoul, In Cheon and Dae Jeon. Southern part contains Gyeong Sang, Jeol La, Je Ju, Bu San, Dae Gu, Ul San, and Gwang Ju. It is known that there are some differences between middle and southern part on weather. The climatic differences might affect human body. Thus, the mall objective of this study is to analyze effects of climatic differences which influence somatotype characteristics on residents in two regions. In order to compare and analyze data, Rohrer index and drop-value were used. Also, this paper provides typical ratios according to dividing line of district.

        The objective of this study was to determine the effect of dietary oils on the levels of the γ-linolenic acid in chicken meat lipids. Three hundred ten five, 1-d old, male, Ross strain, broiler chicks were fed for 35 d to compare diets containing evening primrose oil(EPO) and hemp seed oil(HO) to a control diet. Fatty acid composition of lipid from chicken skin, thigh and breast muscle were determined at the end of the trial. The level of γ-linolenic acid of lipids from chicken meat fed diets containing EPO or HO was significantly higher than that of the control group(p〈0.05). The level of γ-linolenic acid of lipids from chicken skin was highest in the group, which had been fed the EPO 0.85%, followed in order by EPO 0.7%, 0.5%, EPO mixed oil, HO and HO mixed oil. There was a significant difference in the level of γ-linolenic acid of chicken skin between the control and treatment groups(p〈0.05). The level of γ-linolenic acid of lipids from chicken thigh muscle was also similar to skin, and significantly higher than that of the control group(p〈0.05). The level of γ-linolenic acid of lipids from chicken breast muscle was highest in the group, which had been fed the EPO 0.5%, followed in order by EPO 0.7%, 0.85%, HO 0.5% and HO mixed oil. There was a significant difference in the level of γ-linolenic acid of chicken breast muscle between the control and treatment groups(p〈0.05).

        The transesterifications of beef tallow and the mixture of beef tallow and rapeseed oil were conducted at 65℃ respectively using TMAH, NaOH and their mixed catalysts. The reactants were emulsified with 1vol% emulsifier and propylene glycol. The overall conversion of beef tallow was 95% at such optimum conditions as the 1:8 of molar ratio and 0.8 wt% TMAH. The overall conversion of mixed fat at the 1:8 of molar ratio and mixed catalyst of 70 wt% TMAH 30 wt% NaOH was close to 97% which appeared at 0.8 wt% TMAH in 80min. And the kinematic viscosity of biodiesel mixture using the mixed catalyst was 6.5mm2/s at 40℃.
