        In order to perform the biological investigation of coffee extract containing different molecules, it would be necessary to develop in vitro experimental system rather than animal experiment. Although the animal experiment treated via oral intake or intravenous injection may disclose the whole systemic effect, the in vitro cell culture experiment would be more convenient to analyze direct cellular effect of coffee extract than animal experiment. Therefore, this study was aimed to develop a dialysis method for the crude coffee extract to perform the biological investigation using murine macrophage cell line, RAW 264.7. First of all, the RAW 264.7 cells treated with dialyzed coffee extract were observed, and subsequently their protein extracts were analyzed by gel filtration chromatography, thin layer chromatography, and immunoprecipitation high performance liquid chromatography (IP-HPLC). Resultantly, it was found that the low dose (20μg/mL) of dialyzed coffee extract, about 5 cups of ordinary coffee drinking for human adult, enhanced the growth of RAW 264.7 cells by increased expression of β-actin and Ki-67, and also induced the anti-inflammatory effect by decreased expression of NFkB, TNFα, and LC3 contrast to the high dose (40μg/mL) of dialyzed coffee extract. The low dose of dialyzed coffee extract produced almost no harmful effect on RAW cell culture for 12 hours, rather than it produced stimulatory effect on RAW cells by increasing the cell number and enhancing the protein expression of β-actin, Ki-67. Therefore, it was thought that the low dose of dialyzed coffee extract is applicable to cell culture experiment without difficult purification procedures of coffee elements. In addition, as the contrast cellular effect between the low and high dose of coffee extract was found in this study, it was also presumed that the low dose of coffee extract may play an important role in the inflammatory reaction of murine macrophages.

        Sea cucumber, Stichopus japonicas, is widely used in East Asia as a traditional medical component for the treatment of asthma, arthritis, and sinus congestion. The hydrolysate of sea cucumber after treating with a protease is also widely used as an ingredient for the processed food application such as noodles. Tensile force and deformation are important texture properties of noodle. The peptides prepared by hydrolyzing sea cucumber could affect the tensile properties of noodle as well as DPPH radical scavenging. The objectives of this study were to characterize the tensile properties, the texture properties, color, and DPPH radical scavenging of noodle with the hydrolysate of sea cucumber and to determine an optimum formulation of dough with the hydrolysate of sea cucumber for noodle. The hydrolysate of sea cucumber was prepared by hydrolyzing dried sea cucumber powder with distilled water and a protease, Protamex (Novozyme Nordisk, Bagsvaerd, Denmark). Tensile test was used for measuring the breaking strength and the breaking distance of noodle. The tensile properties and antioxidant activity (DPPH radical scavenging) were used as major constraint functions for the optimization. Central composite design was used to determine the experimental points for the optimization. Quadratic models were developed to represent the constraint functions. The optimum ratio was determined to flour: water: the hydrolysate of sea cucumber = 69.27: 22.48: 7.05% (w/w). Increasing the amount of hydrolysate of sea cucumber in the formulation increased the tensile force but no significant difference was observed in the deformation. The hydrolysate of sea cucumber was successfully applied to a noodle formulation without degrading the major quality indices of noodle with enhancing the antioxidant activities.

        본 연구는 해양에서 1차 소비자 단계인 윤충류 Brachionus plicatilis와 저서성 요각류 Tigriopus japonicus의 초기생활사에 미치는 탈인슬래그와 제강슬래그 추출액의 생태 영향을 평가하기 위하여 해양생태독성평가를 실시하였다. 슬래그 추출액에 대한 스크린 테스트 결과, 추출액의 pH는 높은 알칼리성(pH 8.89-12.16)이었으며, 숙성 전과 후 추출액에 대한 독성 반응은 실험생물에 따라 뚜렷하게 구분되었다. 숙성 전 슬래그의 경우, pH 비제어 시료에 대한 B. plicatilis 신생개체의 반수치사농도는 제강슬래그(63.8 %)가 탈인슬래그(20.8 %)보다 높은 것으로 나타났으며, T. japonicus 유생의 반수치사농도는 탈인슬래그와 제강슬래그에서 각각 35.3 %와 36.0 %로 비슷하였다. 그러나 pH를 제어한 경우, 숙성 전과 후 추출한 시료에 대한 T. japonicus 유생의 독성은 B. plicatilis 신생개체와는 다르게 노출물질 특성에 따라 뚜렷하게 구분되었다. 결론적으로 숙성 후 슬래그는 상대적으로 안정된 상태를 유지할 수 있으며, pH 비제어 환경조건 하에서도 반복 추출을 통해 해양환경에 미치는 영향이 적은 것으로 판단된다. 본 연구를 통해 슬래그와 같이 기계적으로 활성화 된 시료의 해양생태독성평가방법은 강우나 풍화로 인한 유해물질의 해양 유입을 차단할 수 있는 아이디어를 제공할 수 있을 것이다.

        고추 추출액의 수율 및 생리적 기능성을 향상시키기 위하 여 고추에 cellulase(C 처리군), pectinase(P 처리군), amylase(A 처리군)를 각각 또는 이들 효소들을 혼합(CP, CA, PA 및 CPA 처리군) 첨가하여 2~8시간동안 가수분해시킨 후 가열처리하 고, 여과시킨 추출액에 대하여 이화학적 및 관능적 평가를 측 정하였다. 효소 처리 고추 추출액의 수율은 효소 처리를 하지 않았을 때 38.84% 정도로 매우 낮게 나타났지만, 효소처리군 이 높은 수율을 보였고, 효소 단독처리군보다는 병용처리 시 수율이 증가하였으며, 효소 처리 시간이 길어질수록 유의적으 로 수율이 증가하는 것으로 나타났다. 특히 cellulase + pectinase + amylase(CPA) 복합처리군은 추출수율이 74.37%까지 증가 하였다. 가용성 고형분의 함량변화는 대조군의 경우에는 8.51% 를 나타내었으나, 효소처리군은 대조군보다 높은 함량을 나 타내었으며, CA 혼합처리군과 CPA 혼합처리군이 가장 높은 가용성 고형분 함량을 보였다. 환원당의 함량 또한 효소 처리에 의하여 증가하는 것으로 나타났다. 효소 처리에 의한 색도 의 변화에서는 대조군과 효소처리군 간에 색도의 변화를 보 이지는 않았다. 효소 처리한 고추 추출액에 대한 관능검사 결 과에서는 전반적으로 효소 처리를 하지 않은 대조군에 비하 여 효소 처리 시 기호도 면에서 우수한 것으로 나타나, 고추 추출물 제조를 위한 효소 처리는 수율 및 기호도 증진을 위한 좋은 방법으로 사료된다.

        This study was designed to investigate the effects of Korean Lycii fructus water extract in Al (Aluminum) administered rats. Forty-eight male Sprague-Dawley rats were divided into six groups: Control group, water extract group with 3% Lycii fructus, 1000 and 2000 ppm of Al groups, and 1000 and 2000 ppm of Al with 3% Lycii fructus water extract group. The Al content of rat tissue in the Al administered group was lower than that in rat tissue in the Al with 3% Lycii fructus water extract group. Plasma levels of renin and aldosterone activity was higher in the Al administration group, compared with the 3% Lycii fructus water extract group and Al administered group. Aspartate amino transaminase and alanine amino transaminase activities were elevated in the Al administered group and lower in the 3% Lycii fructus water extract group. Lactate dehydrogenase was lower in the 3% Lycii fructus water extract Al group than in the Al group. Choline acetyltransferase was higher in the 3% Lycii fructus water extract Al group than in the Al group.

        Eight minerals (Ca, Cu, Fe, K, Mg, Mn, Na and Zn) were determined in Schizandra chinensis fruits and their infusions in Seoul. The average mineral contents per Schizandra chinensis fruits (100 g) were K (966.08 mg), Mg (87.20 mg), Ca (15.19 mg), Mn (6.19 mg), Fe (3.99 mg), Zn (2.78 mg), Na (2.15 mg) and Cu (0.31 mg) respectively by Inductively Coupled Plasma-Mass Spectrometer. The quantity of K and Zn were found significantly higher in Korean fruits than the Chinese fruits (p < 0.05). The other 6 minerals did not reveal remarkable difference. In the case of processed Schizandra chinensis tea, it had K (217 mg), Mg (20.40 mg), Ca (7.16 mg), Na (2.95 mg), Mn (1.34 mg), Fe (0.95 mg), Zn (0.25 mg) and Cu (0.09 mg) per 100 g respectively. In extraction of Schizandra chinensis fruits, as it took a longer extraction time, and in a powder form rather than a raw form, it had a higher contents of minerals. When a powder type of Schizandra chinensis fruits was extracted for 24 hours at 25℃, the transfer rate appeared with Ca (36.27%), Mn (25.44%), K (22.43%), Zn (21.00%), Na (19.91%), Mg (19.55%) Cu (13.78%) and Fe (6.45%) respectively.

        팽화홍삼에 존재하는 major ginsenoside를 minorginsenoside로 생물전환하기 위하여 β-glucosidase 활성이높은 유산균주를 탐색하였다. 된장으로부터 분리한 YLB 8균주가 β-glucosidase 활성이 가장 높았으며 Leuconostocmesenteroides로 동정되었다. L. mesenteroides YLB 8을MRS 배지에서 배양하였을 경우 최대의 β-glucosidase 효소 활성을 나타내기 위한 최적 배양 조건은 glucose 첨가량 1%(w/v), 초기 pH 8.0, 배양온도 30oC, 배양시간 16시간이었다. L. mesenteroides YLB 8을 이용하여 팽화홍삼추출액을 생물전환하였을 경우 최적 온도는 30oC었으며,팽화홍삼 추출액의 농도는 12oBx이었다. 팽화홍삼 추출액내에 존재하는 major ginsenoside인 Rb1과 Rb2는 minorginsenoside인 Rg3로 전환되었으며, Re는 Rg1으로 전환되었으며, 이 중 일부는 Rh1과 Rh2로 전환되었다.

        Humulus japonicus is an ornamental plant in the Cannabaceae family. Although the mode of action of Humulus japonicus is not fully understood, a strong relationship was observed between anti-inflammatory and anticancer in some types of cells. Recent studies also have shown that Humulus japonicus possesses anti-inflammatory activities and may significantly improve antioxidant potential in Raw 264.7 macrophage cells. Thus, the aim of this study was eva-luated the effect of Humulus japonicus extract on sperm motility and subsequent preimplantation developmental com-petence of the bovine embryos. After in vitro maturation, the oocytes with sperms were exposed in in vitro fertilization (IVF) medium supplemented with Humulus japonicus extract (0.01, 0.05, 0.1 μg/mL, respectively) for 1 day. In our results, exposure of IVF medium to Humulus japonicus extract did not affect sperm motility and percentage of pene-trated oocytes but ROS intensity was significantly decreased by 0.01 μg/mL compared with other groups (p< 0.05). Moreover, treatment with 0.01 μg/mL of Humulus japonicus extract was higher the frequency of blastocyst formation than the any other groups (p<0.05). Otherwise, treatment with 0.01 μg/mL of Humulus japonicus extract not increased the total cell number but reduced apoptotic-positive nuclei number. In conclusion, our results indicate that supple-mentation of Humulus japonicus extract in IVF medium may have important implications for improving early embryo-nic development in bovine embryos

        This research verified the usefulness and practicality of citrus peel extract as a natural dye. This study dyed cotton, silk, and cotton/mulberry fiber blended fabrics using citrus peel extract, and measured the dyeability and functional property to verify their usefulness and practicality. The dyeing affinity of the citrus peel extract was measured by dyeing under alkaline conditions to determine the temperature and time for optimal dyeing conditions of the solution. The results show that a temperature and time of 60℃ and 30 minutes were optimal for dyeing cotton fabrics with citrus peel extract, 50℃ and 60 minutes for silk fabrics, and 60℃ and 60 minutes for cotton/mulberry fiber blended fabrics, respectively. In addition the results of measuring the color fastness of the cotton, silk, and cotton/mulberry fiber blended fabrics dyed with the citrus peel extract show that the color fastness was superior for washing, friction, sweat, and water. However, the color fastness for sunlight appeared to be slightly weak. In addition, it was found that fabric dyed with the citrus peel extract showed partial antimicrobial properties. The antimicrobial property appeared the greatest in the silk fabric. The cotton/mulberry fiber blended fabrics had 90% or more Staphylococcus aureus present, but the antimicrobial properties were not high in the cotton fabric. Additionally, the heavy metal content, which is harmful to the human body, appeared to be lower than standard figures, so the dye was found to be innocuous to humans. Therefore, when the results of this study are put together, citrus peel extract is sufficiently useful and practical as an ingredient for a natural dye. Moreover, there is ample possibility to develop citrus peel dyed fabrics as environmentally friendly fashion materials.

        음청류에 이용할 수 있는 오미자 추출액을 얻기 위해 증류 수, 수돗물과 Ca, Mg 등의 미네랄이 풍부한 청송약수를 이용 하여 오미자 추출액을 제조하고 이화화적 특성을 측정하였 다. 오미자 추출조건으로는 25배의 용매비로써 실온에서 6, 9, 12, 15시간, 65℃에서 2, 3, 6, 9시간 동안 추출하였다. 추출 용액의 명도(L, Lightness), 적색도(a, redness), 황색도(b, yellowness), 가용성 고형분(solid content), 산도(acidity), pH, DPPH 라디칼을 소거능을 이용한 전자 공여능(Electron Donating Ability, EDA)으로부터 전반적으로 양호한 추출조건을 구한 결과는 다음과 같다. 실온에서는 물의 종류에 상관없이 12시간 추출 하는 것이 적당하였으며, 65℃ 가온 상태에서는 6시간 추출 함이 적합함을 알 수 있었다. 가온 상태에서 약수의 경우 증 류수, 수돗물에 비해 빠른 추출이 가능하였으며, 추출 시간이 증가함에 따라 산도는 낮아지나, 고형분의 양과 DPPH 라디 칼을 소거능은 증가하였다. 전반적으로 고려할 때에 오미자 추출을 위한 가장 적합한 물로는 미네랄이 풍부한 약수이며, 다음으로 수돗물 그리고 증류수 순서임을 알 수 있다.

        This experiment was conducted to verify the effect of spraying ethanol extracts (green tea and wormwood) on pH, TBARS, VBN, and total microbes of chicken meat during storage. The ethanol extracts of green tea and wormwood were sprayed on the chicken carcasses (0.2 and 0.2 g extract/㎏meat, respectively). Treated sample showed higher lightness (L* values) and yellowness (b* values) and lower redness (a* values) than those of control. The TBARS values were significantly lower for the treatments than the control on storage day 4, especially, the treatment of the wormwood extracts had lowest TBARS value. The VBN values were relatively lower values for the treatments than the control on storage day 4, especially, the treatment of the wormwood extracts had lowest VBN value on storage day 6. Wormwood samples showed lower total aerobic and E. coli counts than the others on day 6. Therefore, the spray with natural wormwood extracts could be useful to extend the shelf-life by preventing lipid oxidation and reducing the microbial growth during storage of chicken meat.

        본 연구에서는 건조방법에 따른 잣솔잎 추출액 분말의 항산화적 특성과 성분변화를 조사하고자 생 잣솔잎을 진공건조, 열풍건조, 동결건조한 후 50% 에탄올로 추출하여 항산화적 활성 및 페놀산 함량에 미치는 영향을 비교하였다. 각건조방법으로 건조시킨 잣솔잎 추출액 분말의 수율은 진공건조 시료가 31.06%로 가장 높았으며, 다음으로 열풍건조시료 및 동결건조 시료의 순으로 나타났다. 총 폴리페놀 함량은 열풍건조 시료가 유의적으로 적었으며(p<0.05), 반면플라보노이드의 함량은 총 폴리페놀 함량과 반대의 경향으로 열풍건조 시료에서 유의적으로 높게 나타났다(p<0.05). 전자공여능 및 ABTS radical 소거능은 1.0mg/mL 농도에서동결건조>진공건조>열풍건조 시료의 순으로 높은 활성을나타내었다. 건조방법별 아질산염 소거능은 반응조건의 pH를 1.2와 3.0으로 달리하여 각각 측정한 결과 pH 1.2의 강산성 조건에서 잣솔잎의 아질산염 소거능이 80% 이상으로높은 활성을 나타내었으며, 진공건조 시료가 유의적으로 높은 활성을 나타내었다(p<0.05). 잣솔잎 추출물의 페놀산 조성과 함량은 t-cinnamic acid가 잣솔잎 중에 가장 많은 함량을 차지하고 있는 것으로 나타났으며 chlorogenic acid의 함량이 가장 낮은 것으로 나타났다. 건조방법에 따른 추출물의 페놀산 함량은 페놀산의 종류에 따라 건조방법 별 함량의 차이를 보였으나, 모든 페놀산을 합한 총 페놀산 함량은열풍건조, 진공건조 및 동결건조 순으로 나타났다.

        Pyracantha is a genus of thorny evergreen large shrubs in the family of Rosaceae, with common names Firethorn or Pyracantha. It's extract has also been used in cosmetics as a skin-whitening agent and functioning through tyrosinase inhibition. Recent studies have shown that pyracantha extract possesses antioxidant activities and may significantly improve lipoprotein metabolism in rats. Although the mode of action of Pyracantha extract is not fully understood, a strong relationship was observed between antioxidant and apoptosis in some types of cells. Thus, the aim of this study was to evaluated the effect of pyracantha extract on blastocysts formation and their quality of the porcine parthenogenetic embryos. After parthenogenetic activation by chemicals, presumptive porcine parthenogenetic embryos were cultured in PZM-3 medium supplemented with extracts of pyracantha leaf, stalk and root for 6 day (1, 5 and 10 μg/ml, respectively). In our results, the frequency of blastocyst formation in pyracantha root extract (5 μg/ml) treated group had increased that of other groups. Furthermore, blastocysts derived from pyracantha root extract (5 μg/ml) treated group had increased the total cell numbers and reduced apoptotic index. Blastocyst development was significantly improved in the pyracantha root extract (5 μg/ml) treated group when compared with the H2O2 treated group (p<0.05). Subsequent evaluation of the intracellular levels of ROS in pyracantha root extract (5 μg/ml) treated groups under H2O2 induced oxidative stress were decreased (p<0.05). In conclusion, our results indicate that treatment of pyracantha root extract may improve in vitro development of porcine parthenogenetic embryos through its antioxidative and antiapoptotic effects.

        This study performed physicochemical characteristics and sensory tests on brown sauce with different Salicornia herbacea L. (saltwort) content to find the best brown sauce recipe with saltwort. Moisture content increased with greater saltwort extract content. There was significant (p<0.001) pH difference with saltwort content. There was also significant (p<0.001) sweetness difference in the samples and sweetness increased with greater saltwort content. Viscosity measured at 20℃ and 60℃ was significantly (p<0.001) lower with greater saltwort content. The brightness of brown sauce containing saltwort extracts significantly (p<0.001) increased with greater saltwort content and its redness and yellowness usually decreased. SPS4 with the greatest saltwort content showed the highest value of 4.25% and DPPH radical removal increased significantly (p<0.001) with greater saltwort content. In the sensory test, the color value was lowest at 4.82 with BSL1 and the flavor value was lowest at 5.00 with BSL0, the control group. The taste and the flavor values were highest with BSL2 with 2% saltwort content. Overall acceptance was highest with BSL3, the brown sauce with 3% saltwort content, at 6.09. As a result, it was concluded that the brown sauce with 3% saltwort content was most suitable. Therefore, this study concluded that saltwort with various functions could be used for food and may be used to replace salt and have other functions in brown sauce, a popular sauce consumed in Korea.

        목이버섯(Auricularia auricula-judae)의 목이버섯의 70% 에탄올 추출물과 디클로로메탄분획물에 대하여 저지방혈증 활성을 in vitro과in vivo에서 확인하였다. 실험동물은 수컷 C57BL/6 mice을 이용하여 지방간 개선 효과를 확인하였다. 시험관 실험에서는 지방세포주인 3T3-L1 세포주 의 지방세포분화 측정 결과 이 들 양쪽 추출물에서 지방세포분화와 지방형성 유전자 발현의 감소 결과를 보였다. PPARγ와 C/EBPα 역시 모든 추출물에서 농도-의존적으로 감소되었으며, LPL과 FAS 발현도 감소되었다. 3T3-L1 지방세포에서 EBPβ, C/EBPγ, ACC1의 발현은 300 μg/ml의 에탄올 추출물에서만 관찰된 반면, SREBP-1c, GLUT4, aP2에서 나타나지 않았다. 이러한 변화는 3T3-L1 세포에서 이들 양쪽 추출물에 대한 세포독성은 나타나지 않았다. 혈장중성지방, 총콜레스테롤, LDL, glucose, transaminase 등은 저용량의 에탄올추출물에 따라 농도-의존적으로 감소하였으나, HDL은 상승하였다. 그 결과 atherogenic index는 감소하였다. 또한 에탄올추출물은 mice에서 지방간을 개선시키는 것으로 관찰되었고 이러한 결과는 에탄올추출물이 지방세포분화와 지방형성 전사 인자를 조절하여 혈장 콜레스테롤과 지질을 감소시키고 HDL을 증가시켜 심혈관 질환 및 지방간 위험을 감소시킬 수 있다.

        목이버섯(Auricularia auricula-judae)은 오래 전부터 식용 및 약용의 재료로 사용한 대표적인 버섯 중의 하나이다. 본 연구에서는 목이버섯 70% 에탄올추출물을 이용하여 용매별 분획물(디클로르메탄층, 에틸아세테이트층, 부탄올층)을 얻은 후에 비교항암활성시험을 수행하였다. 그 결과, 목이버섯 70% 에탄올추출물과 이 추출물로부터 얻어진 다양한 용매 분획물(에탄올, 디클로르메탄, 에틸아세테이트, 부탄올, 증류수)의 항암활성을 표준암세포주인 P388D1 macrophage와 Sarcoma 180 cell에서 항암활성을 비교하였다. 측정된 두 종류의 암세포주에서 각각의 용매 분획물은 농도-의존적인 (0.01 - 0.3 mg/ml) 항암활성을 관찰하였다. 모든 종류의 용매 분획물에 대한 항암활성은 MTT 방법과 SRB 방법으로 확인하였다. Sarcoma 180 세포주에서 디클로르메탄 분획물의 항암활성(IC50)은 94.2 μg/ml로 다른 용매 분획물보다 강력한 항암활성을 보였다. 디클로르메탄 분획물의 항암활성은 고형암을 유발한 BALB/c mice에서도 확인하였다. 암이 유발된 mice에 디클로르메탄 분획물을 경구투여한 후 비장종대와 splenic index (비장무게 mg/체중 kg)을 본 결과 음성대조군의 그것들과 유사하였다. 이러한 결과는 디클로르메탄 분획물에는 고형암을 제거하는 강력한 항암성분이 포함하고 있다는 것을 암시한다. 목이버섯추출액이 다른 약용버섯 및 토종야생식물과 비교시 어느 정도의 항암효과가 있는지를 비교하였다. 목이버섯, 마른진흙버섯, 영지버섯 및 100 종류의 토종야생식물의 항암활성은 P388D1 macrophage 세포주를 이용하여 측정하였다. 목이버섯 추출물은 1 mg/mL 농도에서 44.21% 암세포성장의 억제를 보였고, 마른진흙버섯은 39.46%, 영지버섯은 36.64% 암세포성장 억제를 보였다(P<0.05). 토종야생식물중에서 새뽕나무, 꽃다지, 땅채송화, 벌노랑이 및 목이버섯 70% 에탄올 추출물은 고농도인 3 mg/mL 농도에서 암세포 생존율이 41.85%, 37.31%, 30.29%, 31.98%, 그리고 25.40로 IC50는 1.81, 1.49, 1.05, 1.10 그리고 0.72 mg/mL으로 계산되었다. 본 연구결과에서는 목이버섯 추출물, 4종류의 토종야생식물추출물, 마른진흙버섯 추출물, 영지버섯 추출물 모두 비슷한 정도의 항암활성이 관찰되어 목이버섯 새로운 항암활성 탐색 후보 재료가 될 수 있다.

        This study evaluated the effects of different levels of malt extract on the hardness, moisture, water soluble starch (WSS) contents, and in vitro starch digestibility (IVSD) of Jeungpyun during storage at room temperature (25±1℃) and refrigeration temperature (4±1℃). Resistant starch (RS) and soluble starch (non-RS) contents were also evaluated. During storage at both temperatures, hardness increased in Jeungpyuns with the malt extract-added Jeungpyun groups (malt-added Jeungpyuns) exhibiting lower hardness than the control. The rate of retrogradation was faster upon storage at refrigeration temperature. Moisture and WSS contents as well as IVSD of Jeungpyuns decreased, whereas these levels were higher in malt-added Jeungpyuns compared to control. Storage increased RS contents in Jeungpyuns stored for up to 4 days, particularly at 4℃, whereas there was a decrease in RS content after 7 days of storage. However, RS content was lower in malt-added Jeungpyuns compared to control. Soluble starch (SS) contents of Jeungpyuns decreased. However, SS content was higher in malt-added Jeungpyuns than that of control. The reduced hardness and RS content as well as the rate of increase in other parameters of malt-added Jeungpyuns were dependent on the concentration of malt extract. These results reveal that addition of malt extract delayed retrogradation of Jeungpyun, whereas retrogradation possibly increased the content of RS during storage at both temperatures, however, that of RS decreased with increasing level of malt extract, suggesting that the level of malt extract as well as the storage conditions are important for obtaining acceptable texture and retaining the RS content of Jeungpyun, which is known to possess physiological activity.
