비가열 닭고기 분쇄육의 제조 시 향신료의 첨가에 의한 세균의 증식 억제 효과에 대하여 연구하였다. 닭가슴살 분 쇄육의 일반성분은 수분 72.98±0.15%, 조단백질 23.37±0.46%, 조지방 1.00±0.03%, 조회분 1.90±0.03%였다. 향신료 첨가 에 의한 미생물 증식 억제 효과는 로즈마리 > 마늘 > 겨 자 순이었으며, 첨가량이 증가할수록 억제 효과가 커졌다. 닭고기 분쇄육의 일반세균 및 대장균 증식 억제를 나타내 는 향신료의 최적 첨가 농도는 로즈마리 2%, 마늘 4%, 겨 자 1.2%였다. 일반세균 및 대장균에 대한 증식 억제 효과 는 단독 및 혼합 첨가 시 저장기간 동안 기간별로 차이가 있었고, 저장 9일째 억제 효과는 MixA(97.4%) > 로즈마 리(96.9%) > MixB(96.3%) > 마늘(53.7%) > 겨자(33.3%) 순이었다. 닭고기 분쇄육에 살균마늘과 비살균마늘을 첨가 하여 비교했을 때 일반세균 수는 살균마늘 처리구가 비살 균마늘 처리구에 비해 초기 2.6-3.0 log CFU/g, 9일째 2.4- 3.2 log CFU/g 정도 낮았고, 저장기간이 경과할수록 그 수 가 감소하였다. 비살균마늘 처리구는 대조구보다 높은 일 반세균 수를 나타냈으며, 저장기간이 경과할수록 증가하는 경향을 나타냈다. 대장균 수의 경우 살균마늘 처리구가 비 살균마늘 처리구에 비해 저장 0일째 0.4-1.0 log CFU/g, 9 일째 0.5-1.5 log CFU/g 정도 낮았으며, 저장기간의 경과에 따른 변화는 일반세균 수와 비슷한 경향을 나타냈다. 결론 적으로 로즈마리, 마늘, 겨자의 다양한 혼합적용에 의해 닭 고기 분쇄육 제품의 미생물적 안전성이 향상되었다.
본 연구는 감마선 및 전자선 조사에 의한 닭고기 원료 사료 내에 존재하는 주요 위해 미생물을 비열처리 살균 효과를 검증하기 위하여 진행되었다. 일반세균, E. coli 및 Salmonella의 위해 미생물을 분쇄 닭고기 원료사료에 접종 후 3, 5, 7, 10 kGy의 전자선과 감마선으로 조사하였다. 전자선과 감마선 모두 3 kGy의 조사 시 시험된 미생물을 검출 한계 이하로 사멸시켜 분쇄 육류 원료 사료의 경우 3 kGy의 흡수선량이 충분한 비열 살균 조건임을 보여주었다. 방사선 조사에 의한 원료 사료의 품질 지표 변화를 알아보기 위하여 분쇄 닭고기의 조사 처리 후 pH 변화, 색도 측정, 전자코 이취 분석을 수행하였다. pH와 색도의 경우 감마선 및 전자선 조사에 의해 유의미하게 변화하지 않는 것으로 나타났다. 전자코 이취 시험의 경우 감마선 조사의 경우 3 kGy의 저선량 조사부터 이취가 발생되기 시작하였으며 10 kGy 조사 시 급격하게 이취의 정도가 증가하는 것으로 나타났다. 전자선 조사 역시 3 kGy의 조사부터 이취가 발생하였으며 5 kGy의 선량 이후 흡수선량이 증가함에 따라 이취가 점진적으로 증가하였다. 본 연구 결과 3 kGy의 저선량에서도 닭고기를 원료로한 펫푸드의 비열 살균 효과를 충분하게 이루어짐을 확인하였고 품질 지표에도 부정적인 영향을 주지 않는 것으로 나타났다. 이러한 비열처리 펫푸드의 살균 기술 개발은 국내 펫푸드 시장의 활성화와 반려 동물의 복지 향상에 기여할 것으로 기대된다.
브로일러의 생산성과 닭고기의 품질에 미치는 Bacillus. subtillus, Streptomyces galilaeus 및 Sphingobacteriaceae로 구성된 사료용 복합생균제(PFM, probiotic feed mixture)의 효과를 조사하였다. 병아리 (Ross 308) 240마리를 4개의 처리구로 나누어 35일간 사육하였다. 처리구는 사료용 복합 생균제를 함유하지 않은 대조구(CON, control), 일반생균제(CP3, commercial probiotics 0.3%), 사료용 복합 생균제 3(PFM3, 사료용 복합 생균제 0.3%), 사료용 복합 생균제 5(PFM5, 사료용 복합 생균제 0.5%)로 구분하였다. 체중은 CON과 비교할 때 CP3, PFM3, PFM5가 높았고 PFM3, PFM5는 CP3에 비해 우수하였다(p<0.05). F낭, 흉선, 비장의 무게 및 IgG 수준은 CON과 비교할 때 PFM3, PFM5 및 CP3에서 증가하였으며 PFM3, PFM5는 CP3에 비해 높았다(p<0.05). 맹장의 Lactobacillus 균수는 PFM3, PFM5 및 CP3를 섭취한 브로일러가 CON에 비해서 높았으나 E.coli, Salmonella, coliforms, 총 호기성 균수는 감소하였다(p<0.05). PFM3 및 PFM5를 섭취한 닭가슴살의 보수력은 CON 및 CP3와 비교할 때 증가하였다(p<0.05). 결론적으로 Bacillus subtillus, Streptomyces galilaeus 및 Sphingobacteriaceae를 포함하는 사료용 복합생균제 0.3%가 브로일러의 생산성과 닭고기 품질향상에 기여할 수 있음을 나타낸다.
To extend the shelf-life of chicken breast meat, samples were treated with gel-packs containing slow-released ClO2 gas at 7-15 ppm for 8 days at 4℃. And the changes in lipid oxidation and taste compounds of the samples were investigated. TBARS value of the chicken breast was slightly increased during storage. TBARS value of gas treatments was similar to the control during storage. There were 14 fatty acids in the chicken breast. And there was no change in the fatty acid composition during storage, and there was no significant difference between the control and gas treatments. The content of free amino acids was gradually increased during storage. The content of free amino acids were not significantly different between the control and gas treatments during storage. The content of GMP in the control and gas treatments were decreased during storage. However, gas treatments showed slightly higher content than that of control. AMP was not significantly different between the control and gas treatments. IMP gradually decreased during storage and the content of inosine and hypoxanthine was increased. IMP, inosine and hypoxanthine contents of gas treatment were similar to control, but the control tended to change more rapidly than those of gas treatments.
This study was conducted to evaluate the acceptability of cured cooked boneless chicken drumettes as a raw material for Chuncheon Dakgalbi and to observe its effect on pH, lipid oxidation, volatile basic nitrogen (VBN) content and total viable count (TVC) during refrigerated storage under vacuum. Boneless chicken drumettes were dry cured with a mixed curing agent (0.20% w/w) consisting of sodium chloride (93.1%), sodium nitrite (5.9%) and sodium bicarbonate (1.0%) for 24 h at 2±2℃. Cured samples were cooked using an oven at 150℃ for 20 min and stored at 5.5±0.5℃ for 60 days under vacuum. Non-cured cooked sample was used as a control. Sensory evaluation was performed on day 2 of storage using 22 untrained panelists and samples were mixed with Dakgalbi sauce and reheated using a microwave for 2 min. There were no significant differences between control and treatment group on appearance, flavor, texture, juiciness and overall acceptability. Cured cooked boneless chicken drumettes had significantly (p<0.05) higher pH, lower lipid oxidation, VBN and TVC consistently during storage in comparison with control. These results suggest that dry curing could be applied to boneless chicken drumettes as raw material for Chuncheon Dakgalbi and could extend its shelf life during refrigerated storage under vacuum.
본 연구는 고온다습한 하절기에 음수의 형태가 닭의 생산성, 육질, 혈액의 성상에 미치는 영향을 구명하고자 실행하였다. 8일령 로스종 360수를 4개 처리구인 수돗물, 이온수, 냉수 및 냉이온수(냉수+이온수)로 처리구당 6반복으로 평사에 수용하여 5주령까지 급수하였다. 계사내부 평균 온도와 습도는 30.9℃와 74.0%였으며, 수돗물의 평균온도는 29.5℃였다. 이온수는 정전기를 이용하여 물을 이온화하였고, 냉수는 15℃로 고정하여 급수하였다. 증체량, 사료섭취량 및 사료요구율은 주간으로 측정하였으며, 혈액과 계육 샘플은 실험 종료시에 채취하였다. 사육전기 21일령에 증체량은 수돗물 처리구에서 다른 처리구에 비하여 낮았지만 통계적 차이는 없었으며, 사육후기의 35일령에 이온수, 냉수, 냉이온수 처리구에서수돗물 처리구에 비하여 현저하게 높게 나타났다(p<0.01). 사료섭취량은 증체와 동일하게 사육전기에는 처리구간에 일관적 차이가 없었지만 사육후기에 수돗물 처리구에 비하여 다른 처리구에서 매우 개선 되는 경향을 보였다(p<0.01). 사료요구율은 사양실험 전기간에서 이온수, 냉수 및 냉이온수 처리구에서 매우 개선되었다(p<0.05). 계육의 가슴살에서 명도는 수돗물 처리구에서 높게 나타났으며, 적색도는 낮은 경향을 보였다. 황색도는 일관성이 없었지만 pH는 수돗물 처리구에서 다른 처리구에 비하여 낮게 나타났다(p<0.05). 조리감량은 이온수, 냉수 및 냉이온수 처리구에서 수돗물에 비하여 매우 낮았지만(p<0.05) 연도는 높은 경향을 보였다. 혈중 알부민과 단백질은 처리구간에 차이가 없었지만, 중성지방은 이온수, 냉수 및 냉이온수 처리구에서 낮은 경향을 보였다(p<0.05). 혈중 포도당은 처리구간에 차이가 없었지만 HDL 콜레스테롤은 이온수, 냉수, 냉이온수 처리구에서 수돗물 처리구에 비해 현저하게 높게 나타났다(p<0.05). 본 실험 결과 혹서기 육계에 냉이온수 급수는 생산성 및 육질을 개선하고 혈중HDL을 높게 하였다.
To prolong the shelf-life of chicken breast meat, samples were treated with gel packs containing slow-released chlorine dioxide (ClO2) gas at 7~15 ppm for eight days at 4℃. The microbial, physicochemical properties and sensory evaluation of the treated samples were investigated. The total number of bacteria in the control increased during storage and showed 6.78 log CFU/g on the 8th day of storage, but ClO2 gas treatments showed 6.24~6.58 log CFU/g at the same time. The initial pH of chicken breast meat was 6.00 and gradually increased during storage. And ClO2 gas treatments did not show any significant difference from the control during storage period, but maintained a generally lower pH than that of the control. The lightness, redness, and yellowness during storage were not significantly different between the control and the 7~10 ppm ClO2 gas treatments. However, as the storage period was increased, the redness of 15 ppm ClO2 gas treatment was reduced. The cooking loss and shear force were not different between the control and ClO2 gas treatments during the storage period. Volatile basic nitrogen (VBN) increased in the control from the 6th day of storage and 23.80 mg% in the 8th day of storage. However, VBN of ClO2 treatments showed lower than that of the control. In the change of sensory evaluation during storage, 10 ppm ClO2 treatment showed the highest preference in odor, appearance and overall acceptance during storage period.
본 연구는 Bacillus subtilis를 포함하는 3개의 균주를 지렁이 분변토에 접종하여 제조한 생균제인 분변토 발효사료가 육계의 사양성적 및 닭고기 품질에 미치는 영향을 조사하기 위하여 수행하였다. 육계 240마리를 4개의 처리구로 완전임의 배치하였다. 실험 처리구는 대조구, Lactobacillus fermentum으로 제 조된 상업용 생균제 (CP) 0.2%, 분변토 발효사료 0.3% (FECF3), 분변토 발효사료 0.5% (FECF5)로 구분하였다. 평균 체중 증가량, 흉선, 비장, F낭의 무게는 대조구, CP 처리구와 비교할 때 FECF 처리구가 높았다. 혈액 IgG 함량은 대조구, CP 처리구와 비교할 때 FECF 처리구가 증가하였다. 맹장 Lactobacillus는 대조구, CP 처리구와 비교할 때 FECF 처리구가 높았으나 Escherichia, Salmonella, Coliform bacteria 및 total aerobic bacteria는 FECF 처리구가 낮았다. 닭고기의 보수력은 대조구, CP 처리구와 비교할 때 FECF 처리구가 높았다. 닭고기 n-6/n-3 지방산의 비율은 대조구, CP 처리구와 비교할 때 FECF 처리구가 낮게 나타났다.
An experiment was carried out to determine the effect of cooling water treatment with ionized calcium on calcium content, extending the shelf-life and quality of fresh chicken meat in poultry slaughtering process. The subjects were divided into four groups: control (0% without ionized calcium) and treatment groups (0.5, 0.7, 0.9% ionized calcium). The results indicated that the cooling water treatment with ionized calcium exhibited the bacterial counts of 105 CFU/cm2 in surface of chicken meat, and maintained the quality of fresh chicken meat with extending the shelf-life above seven days when compared with that of control group. The results found that the cooling water treatment with ionized calcium could produce the calcium enrichment of chicken meat as nine times higher in calcium content of chicken meat when compared with that of control group. pH, water holding capacity, TBARS (MDA mg/kg) in chicken meat via the cooling water treatment with ionized calcium showed 6.4, above 50, below 0.10, respectively, with preventing the oxidation of unsaturated fatty acids. Lightness (L*) as a chicken meat color, shear force indicated above 60, below 1.70 kg/0.5 inch2, respectively.
To develop an elderly diet food that can easily be chewed and swallowed, we manufactured elderly diet food using chicken breast meat with various amounts (0.9, 1.1, 1.3 and 1.5 g) of gelatin used as a viscosity agent, and evaluated their physico-chemical and sensory properties. As the amount of gelatin decreased, the lightness were increased, but the redness and yellowness were decreased. In the texture profile analysis, hardness, springiness, gumminess and chewiness were significantly increased with increased amounts of gelatin, but adhesiveness gradually decreased. Cohesiveness was no significantly difference. Free amino acid contents in elderly diet food using chicken breast meat did not show trend to increase or decrease, but the tyrosine contents were significantly decreased with increased amounts of gelatin. The sensory evaluations including taste, flavor and color were not significantly different. However, the texture and overall acceptance of elderly diet food using chicken meat containing 1.3 g of gelatin had the highest acceptance.
This experiment was conducted to investigate the effect of dietary supplementation of the Black Soldier Fly(BSF) larvae on growth performance, carcass rate, and fatty acid profile of chicken meat in broiler chicks. Four hundred eighty 1-d-old broilers(Ross 308) were distributed into 3 treatments with 4 pens at 30 birds per replicate. Treatments were corn-soybean meal based broiler diet (control) and the basal diet replaced with BSF at the level of 3 and 6% respectively. Viability was not different significantly. Body weight gain was higher in control than other treatments. Feed intake was not statistically different of treatments. Feed conversion ratio was lower in ontrol than other treatments. Relative weight of breast meat was significantly increased in all treated groups than in control. But, another relative weights of chicken meat cuts (thigh, wing, neck, back) were not significantly different among the groups. In conclusion, it could be suggested that dietary supplementation of Black Soldier Fly larvae could beneficially improved the performance on broiler
The author previously reported that the addition of inuloprebiotics to broiler diets produces growth performance that is superior to antibiotic supplementation. The present study furthered this work by evaluating the quality with thiobarbituric acid reactive substances (TBARS) of the meat from chickens fed inuloprebiotics produced using Korean Jerusalem artichoke. Male Ross 308 broilers (n=240) were randomly allotted to a 35 day regimen of dietary control (no supplementation), dietary antibiotics supplementation (8 mg avilamycin/kg diet), or dietary inuloprebiotic supplementation (450 mg inuloprebiotics/kg diet). The pH, water holding capacity, L*value (lightness), and b*value (yellowness) of the chicken meat weres ignificantly higher in the inuloprebiotic group. The TBARS value of chicken meat stored at low temperature tended to increase according to the length of storage, and was significantly lower in the inuloprebiotics group. The sensory scores of the cooked chicken meat were significantly higher in the inuloprebiotics group. The results indicate that the addition of inuloprebiotics as anantimicrobial agent to broiler diets can greatly improve the quality and self-life with reducing TBARS of chicken meat.
This study was carried out to evaluate the microbiological characteristics of retail chicken meats stored under various conditions. Nine of whole chickens and nine of chicken breasts were used for bacterial analysis. Each chicken meat was divided into subsamples of 25 g each followed by storage at room temperature (25℃), refrigeration temperature (4 ℃), and freezing temperature (—20℃) for 180 min, 5 days, and 3 days, respectively. The standard plate counts were performed for the enumeration of the total aerobic bacteria. The number of aerobic bacteria was gradually increased by 1 log in samples held at the room temperature for 180 min. There was statistical difference in the number of bacteria between at 0 min and at 180 min of storage. For samples stored at 4℃ for 5 days, the number of bacteria was increased from 5.11 to 7.26 log CFU/g in chicken breast and 3.83 to 6.04 log CFU/g in whole chicken with statistical difference. No significant changes were observed in frozen chicken. The results of this study may provide useful information to consumers for proper storage and safe handling of chicken meats.
This study was aimed to determine microbiological quality by adding green tea extracts to chicken meat salad. For this study, Chicken meat salad were prepared with two production method. (method 1: addition of green tea extracts to boiling phase, method 2: addition of green tea extracts to salad dressing) Microbiological effects of green tea extracts were assessed during production process by measuring process time, temperature, pH and Aw and determining total plate counts and coliforms. Effects of green tea extracts on total plate counts and coliforms were observed during holding at 3, 10, 25±1℃ for 12 hours. Green tea extracts improved the microbiological quality and showed antibacterial properties when they are added to chicken meat salad.
Microbial populations of total aerobic bacteria -and coliforming bacteria, TBA, Hunter's color value, heme pigments, muscle protein solubility, cooking loss and shear force were investigated for evaluating the shelf life of chicken legs gamma-irradiated at doses of 1, 3, 5 and 10 kGy with air-contained and vacuum-packaged methods. The initial microbial populations decreased with gamma irradiation depending upon the dose, and microorganisms in the vacuum-packaged samples were inhibited more than those in the air-contained samples. TBA values were higher in the air-contained samples than in the vacuum-packaged samples. Hunter's L and a values of the surface and inside of the legs increased by gamma irradiation, showing a bright red color and the red color was maintained during the storage of both samples. The concentrations of oxymyoglobin among the heme pigments increased by gamma irradiation. Muscle protein solubility slightly increased by increasing the applied dose. There were no significant differences in the cooking loss and shear force values. In conclusion, the combination of gamma irradiation and vacuum-packaging could extend the shelf life of chilled chicken without deterioration of the quality.
