A novel brown rot fungus Phaeolus schweinitzii IUM 5048 was firstly used for ethanol production. It was found that this fungus produced ethanol with various sugars, such as glucose, mannose, galactose and cellobiose at 0.28, 0.22, 0.06, and 0.22 g of ethanol per g of sugar consumed, respectively. This fungus showed relatively good ethanol production from xylose at 0.23 g of ethanol per g of sugar consumed. However, the ethanol conversion rate of arabinose was relatively low (at 0.08 g of ethanol per g sugar). P. schweinitzii was capable of producing ethanol directly from rice straw and corn stalks at 0.11 g and 0.13 g of ethanol per g of substrates, respectively, when the fungus was cultured in a basal medium supplemented with 20 g/L rice straw or corn stalks. These results suggest that P. schweinitzii can hydrolyze cellulose or hemicellulose to fermentable sugars and convert them to ethanol simultaneously under oxygen limited condition
최근 지구온난화에 의한 이상기상으로 겨울철 한파와 봄철 저온에 의한 농작물 피해가 심각하게 발생하고 있다. 특히 과수의 개화기 저온피해는 꽃눈의 생육단계에 따라 차이가 있으며 발육이 진전될수록 내한성이 약해져 개화 직전부터 낙화 후 1주까지 한계온도가 다르게 발생한다. 따라서 개화기가 빠른 사과 ‘홍로’가 ‘후지’보다 피해가 심각한 것이 일반적이나 2020년 4월 저온피해는 개화기가 늦은 ‘후지’의 피해가 심하게 발생하여 그 원인을 분석하고자 본 연구를 수행하였다. 충북 보은군 사과나무 ‘후지’와 ‘홍로’를 동시에 재배하는 2농가를 대상으로 품종 간 피해율 실태조사를 실시하였다. 또한 정확한 품종 간 비교 분석을 위하여 생육단계가 동일한 시료를 선택하여 인위적으로 저온처리(-2.0℃, -4.0℃)를 하여 피해 정도를 조사하고, 원인 분석을 위해 조직 내 유리당과 호르몬 함량을 분석하였다. 실태조사 결과 2농가 모두 ‘후지’가 ‘홍로’보다 피해율이 높았으며, 특히 B농가(저지대, 평지) ‘후지’의 경우 피해율이 60.5%로 가장 높았다. 또한 동일한 생육 단계의 시료를 사용한 인위적 저온 처리 시험결과에서도 ‘후 지’와 ‘홍로’ 품종 간 피해율에 유의한 차이가 있었다. 유리당 함량은 저온 피해율이 낮았던 ‘홍로’가‘후지’보다 높았으며, 호르몬 분석 결과 정상 꽃눈보다 손상된 조직에서 ABA, IAA 와 SA 함량이 높게 나타났다. 따라서 본 연구 결과 조직내 유리당 함량이 높으면 저온 피해율이 낮은 것을 확인할 수 있었으며, 특히 저온 피해율은 sorbitol 함량과 부의 상관관계를 이루고 있다.
The aging treatment was applied to Rehmannia glutinosa rhizome (RGR) to improve the digestibility by the enzymatic hydrolysis of undigestible sugars. However, RGR spoils easily during the aging treatment. Thus, the purpose of this study was to investigate the influence of ethanol addition as preservatives on sugars and microbial growth of aged RGR. The RGR was treated with the addition of ethanol (0~10%) at 55℃ for eight days. Reducing, free sugars, and total bacterial counts of RGR with ethanol concentrations were analyzed during the aging periods. The aged RGR with 0-2% ethanol appeared spoiled in appearance, and total bacterial counts of these samples increased from 1.1×105 to 2.2×107 CFU and then decreased again. When treated with 4~10% ethanol, the total bacterial counts of aged RGR decreased by more than 99.9% at eight days. In all samples, reducing and digestible sugars increased, and stachyose decreased by the aging treatment. Sucrose content was highest in the 6% ethanol sample (18.2% at six days). These results indicate that the ethanol addition can be applied to the aging treatment of the RGR for improving qualities (sweetness, digestibility, and microbial growth), and can be considered for the stable production of high quality aged RGR.
The objective of this study was to analyze the free sugar contents of ten kinds of fruits and fruit vegetables that were collected from many district in Korea. The analyzed results will be used as basic nutrition component reference to processing. The results were summarized as follows. The total free sugar contents among the ten kinds of fruit vegetables was highest in grape. The contents of glucose, fructose and sucrose were 6.39%, 6.27%, 0.28%, respectively. The average total sugar contents of four cultivar of apple was 11.42% and average fructose contents was 6.13%. The free sugar contents of thirteen samples of the same cultivar of apple were all differing with statistical significance. The average total free sugar contents of eight cultivar of peach was 8.66%. In case of tomato, glucose content was approximately 1.35~2.83% and fructose was 1.26~2.51%. The contents of glucose, fructose and sucrose in paprika were 2.19%, 2.06%, 0.1%, respectively.
기후변화, 외래병해충발생, 밀원수 감소 등 여러 요인으로 인해 우리 나라의 양봉농가는 벌꿀생산량 및 농가소득이 감소하는 추세이다. 또한 밀원이 없는 시기에 가축용 사료가 아닌 고가의 식용설탕을 꿀벌의 인공사료로 급여하고 있어 농가는 ‘생산비 상승’과 ‘밀원수 부족’을 국내양봉업이 직면한 가장 큰 문제점으로 지적하고 있다. 이에 따른 양봉농가의 생산비를 절감하고 꿀벌의 생리·생태의 개선효과를 가지는 저가형 당액사료개발을 위해 농산부산물에서 추출한 천연당을 봉군에 적용시험을 추진하였다. 양파(OS-1, OS-2), 양배추(CS-1, CS-2), 바나나(Banana)부산물에서 추출한 천연당의 봉군당 평균먹이소모량(mL)은 설탕당액(대조구) 처리구와 비교시 바나나추출당액 급여구에서 5500.00±0.00, 5133.33±404.15로 유사하였다. 그러나 꿀벌의 봉세발달은 대조구에 비해 21006.7±2137, 17403.3±2257마리로 조사되어 낮은 경향을 나타내었고 수명조사 결과는 큰 차이가 없었다. 농산부산물을 이용한 천연당은 우선 꿀벌의 기호도 향상을 우선으로 개선시켜야 할 것으로 보인다.
This study was conducted to investigate the effects of sugars and stabilizers on the qualitative properties of frozen-yogurt. To prepare the yogurt mix, market milk was fermented using a commercial starter culture and sugars, trehalose and sucrose, and to prepare the ice cream mix, stabilizers, carboxy methyl cellulose (CMC) and guar gum, were used. The yogurt and ice cream preparations were mixed in a 1:1 (v/v) ratio to produce frozen-yogurt. Yogurt prepared using trehalose showed a significantly faster increase in pH, titratable acidity, and viable cell count than that prepared using sucrose (p<0.05). Ice cream prepared using guar gum showed a significantly higher viscosity and overrun than the CMC-stabilized preparation (p<0.05). Frozen-yogurt produced using the yogurt-trehalose mix and ice cream-CMC mix showed the highest hardness and lowest overrun. The melt-down rate of frozen-yogurt prepared with the yogurt-trehalose mix was significantly slow (p<0.05). However, there were no significant differences among the yogurt mixes in terms of changes in the viable cell count at 0, 7, 15, 30, and 45 days (p>0.05). In a sensory evaluation, most panels preferred the frozen-yogurt with sucrose over that with trehalose. However, it is expected that using trehalose with other sugar substitutions and guar gums in manufacture of frozen-yogurt have high potentiality than using sucrose and CMC, and it is considered that it could reignite the stagnant domestic milk processing industry.
본 연구는 어린이급식소를 대상으로 체계적인 위생관리 및 영양관리를 지원하고 있는 어린이급식관리지원센터 기반 유아 당류 줄이기 교육프로그램 개발 및 운영을 위한 기초자료 마련의 일환으로 센터의 예산규모에 따른 유아 당류 교육실태 및 요구도를 비교․분석하였다. 본 조사는 2015년 10월 온라인 설문조사를 통하여 전국 115개 어린이급식관리지원센터의 팀장 또는 팀원을 대상으로 이루어졌다. 센터의 예산규모에 따라 1~2억원 센터(21.7%), 3~4억원 센터(52.2%), 5~7억원 센터(26.1%)로 분류하였다. 1~2억원 센터는 읍면지역이 72.0%로 가장 많았고, 3~4억원 센터와 5~7억원 센터는 대도시가 각 46.7%, 56.7%로 가장 높아 유의적인 차이를 보였다(p<0.001). 유아 대상 당류 섭취 줄이기 교육 실태조사 결과, 교육을 실시하는 비율은 1~2억원 센터 8.0%로 낮았고, 3~4억원 센터의 경우 16.7%, 5~7억원 센터의 경우 16.7%로 예산규모에 따른 유의적인 차이를 보였다(p<0.05). 유아의 당류 섭취 관련 영양교육을 실시하지 않는 이유에 대하여 조사한 결과, 1~2억원 센터는 ‘영양교육 자료 부족’이 47.1%로 가장 많았고, 3~4억원 센터와 5~7억원 센터는 ‘당류 교육보다 더 시급한 영양교육 내용이 많음’이 각각 66.7%와 50.0%로 높게 타났다. 유아의 학부모를 대상으로 한 유아 당류 섭취 관련 영양교육 실시여부를 조사한 결과, 실시 비율은 1~2억원 센터가 8.0%로 가장 낮았고, 3~4억원 센터 28.3%, 5~7억원 센터 23.3%로 예산규모에 따른 유의적인 차이를 보였다(p<0.05). 유아 당류 줄이기 교육의 필요성에 대한 조사에서 ‘매우 필요하다’와 ‘필요하다’의 비율이 예산규모에 따른 유의적인 차이 없이 90% 이상 높게 나타났다. 유아를 대상으로 한 효과적인 교육방법에 대한 질문에 대하여 예산 규모에 상관없이 75% 이상의 높은 비율을 보인 것은 동화나 인형극을 활용한 교육 방법이었고, ‘영양교육 활동지를 통한 교육’은 1~2억원 센터에서 낮았고(p<0.05), ‘실험활동을 통한 교육’은 3~4억원 센터에서 낮았다(p<0.05). 효과적일 것으로 생각하는 유아 대상 교육 담당자로는 모든 센터에서 ‘어린이급식관리지원센터 영양사+담임교사’가 80.0% 이상으로 나 타났다.
이상을 통해 어린이급식관리지원센터에서의 유아 당류 섭취 관련 교육에 대한 필요성과 효과적일 것으로 생각하는 교육 방법 및 시간 등에서는 사업 규모별 차이가 없었지만, 교육 실태는 사업 규모에 따라 유의적인 차이를 보여, 1~2억원 규모의 소규모 센터의 경우 유아 당류 섭취 관련 교육의 실시율이 낮고, 교육 자료의 부족을 느끼고 있는 것으로 나타났다. 현재 어린이급식관리지원센터의 사업비 분배는 회원 어 린이집의수에 따라 1억원 단위로 비례적으로 정해지고 있다. 비록 본 연구는 영양교육 프로그램에 한정된 결과를 보여주고 있기는 하지만, 1~2억원 규모의 소규모 센터의 경우 예산 및 인력부족으로 사업의 운영에 어려움을 보이고 있고, 이로 인해 큰 센터에 비하여 상대적인 사업의 질 저하를 초래할 가능성이 높음을 보여준다. 그러나 소규모 센터의 경우, 인구가 적은 읍면 지역에 위치하는 경우가 많기 때문에 대상자가 여러 가지 사회․문화적 혜택으로부터 소외되어 있는 계층일 가능성이 높다. 따라서 국가에서 시행하는 사업에서 이러한 부분을 보완해야 할 책임 또한 더 클 것으로 사료된다. 따라서 사업의 규모에 따른 차이 없이 질적으로 평준화된 교육프로그램의 제공 및 소규모 센터의 예산 및 인력부족으로 인한 교육프로그램 개발 및 운영의 어려움을 해결하기 위해서 표준화된 유아 당류 섭취 줄이기 관련 교육프로그램의 개발 및 보급과 함께 어린이급식관리지원센터 사업 예산 분배에 대한 재고의 필요성이 큰 것으로 생각된다.
This study aimed to develop and evaluate a sugars intake reduction program (SIRP) that was designed to increase the knowledge, attitude, and skills of Korean children aged 5 years regarding sugars intake reduction. A total of 101 children aged 5~6 years from 6 preschools participated in SIRP. SIRP consisted of 4 sessions including 10 activities (e.g., story-telling, arts, experiment, checking nutrition facts, pledge), delivered to children at preschools by nutritionists over a one-month period. Three letters were sent to parents throughout the program to inform them of the children’s activities at the preschools and to provide additional information on reducing children’s sugars intake. A total of 90 children completed the program; 83 parents of these children completed the SIRP evaluation survey. The children’s sugars intake reduction score was significantly increased after attending SIRP. Teachers (n=6) who participated in this program agreed to improve their students’ attitudes on reducing sugars intake and to decrease students’ behaviors related to sugars intake. Parents agreed to improve their children’s attitude on reducing sugars intake and to decrease children’s behaviors related to sugars intake. The outcome showed SIRP improved participants’ attitudes towards sugars reduction and increased the skills to reduce the sugars intake of children aged 5~6 years. Future studies should examine whether SIRP reduces actual sugars intake among children.
This study was conducted to investigate the proximate composition, free sugars, amino acids, and minerals in five Lentinula edodes cultivars collected in Korea. No significant differences in the content of crude fat and crude fiber were found between the samples; however, there was significant variation in the contents of nitrogen free extract, ash, and crude protein. Three kinds of free sugars (fucose, arabinose, and glucose) were identified by HPLC, with the glucose content ranging from 5.94% to 12.08%. Sixteen kinds of free amino acids were identified: the highest content of amino acids was found in ‘Sanlim5ho’ (13,768.33 mg%), while the highest content of free amino acids was found in ‘Sanlim4ho’ (6,790.57 mg%). The minerals detected in the L. edodes cultivars were potassium, calcium, magnesium, and sodium, the contents of which ranged from 567.16–2,356.09 mg%, 3.85–7.42 mg%, 9.79–20.88 mg%, and 19.60–22.62 mg%, respectively.
To determine sugars content of agricultural products and foods, simultaneous quantitative analysis was carried out on fructose, glucose, sucrose, maltose, and lactose by HPLC-RI. Analysis conditions were set as column ZORBAX carbohydrate (4.6 mm ID×250 mm, 5 μm), the mobile phase of 75% ACN, the column temperature of 35oC, sample injection amount of 10 μL and the flow rate of 1 mL/min. Five standard solutions were isolated without interfering peak within 30 minutes and the calibration curves of standard were confirmed excellent linearity from 0.10% to 1.00% with R2≥0.999. Based on the chromatogram of the standard solution, the limit of quantification (LOQ) and the limit of detection (LOD) values were calculated. The accuracy of the analytical values were highest at 100% water extraction method to the fructose 95.7%, sucrose 98.7%, lactose 102.7% respectively, compared with reference value of a certified reference material (BCR644), by applying the four solvent extraction methods. Using an in-house quality control material (infant formula), repeatability and reproducibility values of this experiment were verified on the basis of AOAC guideline and reference values were set up at 1.17 g/100g of glucose, 0.85 g/100g of maltose, and 45.54 g/100g of lactose. Quality control charts were drawn up and used for sugars analysis of agricultural products.
Lignocellulosic biomass conversion to biofuels such as ethanol and other value-added bio-products including activated carbons has attracted much attention. The development of an efficient, cost-effective, and eco-friendly pretreatment process is a major challenge in lignocellulosic biomass to biofuel conversion. Although several modern pretreatment technologies have been introduced, few promising technologies have been reported. Microwave irradiation or microwave-assisted methods (physical and chemical) for pretreatment (disintegration) of biomass have been gaining popularity over the last few years owing to their high heating efficiency, lower energy requirements, and easy operation. Acid and alkali pretreatments assisted by microwave heating meanwhile have been widely used for different types of lignocellulosic biomass conversion. Additional advantages of microwave-based pretreatments include faster treatment time, selective processing, instantaneous control, and acceleration of the reaction rate. The present review provides insights into the current research and advantages of using microwave-assisted pretreatment technologies for the conversion of lignocellulosic biomass to fermentable sugars in the process of cellulosic ethanol production.
The objective of this study was to investigate the extent of total sugar and sodium in 129 different kinds of bakery products, breads and cookies, sold at bakeshops in Seoul metropolitan area. The bakery products produced by bakeshops on a small scale were not applied by clauses of mandatory nutrition label for children's taste food. All types of free sugars -fructose, glucose, sucrose, lactose and maltose- were detected in breads, but only fructose and sucrose were detected in cookies. The average amount of sucrose per 100 g of breads was 6.24 g, of cookies was 30.03 g. Breads and cookies amounting to 100 g of sample contained total sugar of 11.19 g and 30.38 g, respectively. The average amounts of sodium in breads and cookies were 120.71 mg/100 g, 70.76 mg/100 g, respectively. When the contents of total sugar in breads and cookies per one serving size were compared to WHO guidelines, the percentages were 15.7% and 18.2% about recommended daily intake of total sugar of 50 g. When it come to sodium, the bakery products had range of 1.1~6.5% to 2000 mg of daily intake of sodium recommended by WHO.
