        The purpose of this study was to investigate the effect of dietary addition of pegmatite for Hanwoo steers on the carcass characteristics. Based upon the findings yielded by the research referenced above, the results may be summed up as follows : Oleic acid was for the most part, higher as T2 plots (45.40%) and T3 plots (44.20%) compared with Con. plots (42.50%). As well, this study has shown that the treatment plots in unsaturated fatty acid (UFA), monounsaturated fatty acid (MUFA) and polyunsaturated fatty acid (PUFA) were largely higher than that of Con. plots, and of them all, T2 plots were highest. As for the melting point of fat, T2 plots (29℃) were largely lower than that of Con. plots (31.9℃). This study has shown that the treatment plots were significant higher as the content of total essential amino acid and total amino acid and inosine monophosphate in the nucleotide compound for the Hanwoo beef was treatment plots when compared with Con. plots.

        Purpose: This study investigated the dietary patterns associated with Korean food and the level of proper eating habits according to recognition of the Kimchi cooking method, and aimed to suggest the necessity of dietary education of traditional foods such as Kimchi. Methods: Based on the results of the national dietary survey conducted in 2014 by Ministry of Agriculture, Food and Rural Affairs of Korea, a total of 1200 subjects were classified into two groups, one that knew how to make Kimchi (53.8%) and another that did not (46.2%). Results: The group that knew how to make Kimchi (FG) showed significantly higher scores in knowledge of how to cook most types of Korean foods and traditional fermented foods than the other group (NG). Moreover, FG showed significantly higher scores in regularity in meals and a higher frequency of Korean foods such as rice, Kimchi, and grilled or stewed food, while it showed significantly lower scores in dietary risk factors than NG. In addition, FG showed significantly higher scores in dietary education interest and number of meals with family during the week than NG. Finally, FG had significantly higher scores in the degrees of practice of all eight items related to proper eating habits. Conclusion: Since recognition of Kimchi cooking has a great influence on maintenance of dietary life, dietary education to improve the cooking ability of traditional foods should be further strengthened.

        This study was conducted to investigate the effects of fermented spent mushroom substrates (F-SMS) of Flammulina velutipes on growth performance, carcass traits, and economic characteristics of Hanwoo steers. A yeast strain (Saccharomyces sp. UJ14) and Bacillus strain (Bacillus sp. UJ03) isolated from fresh spent mushroom substrates of Flammulina velutipes were used as probiotics to prepare F-SMS. Twenty-four Hanwoo steers (14 months old) were allocated to three dietary treatments via a randomized block design and were slaughtered at 30 months of age. These treatment groups included Control (TMR), T1 (TMR containing 10% of F-SMS) group, and T2 (TMR containing 30% of F-SMS). Body weight gain was not influenced by the experimental diets. DM and TDN intakes in the finishing period were significantly (p < 0.05) greater in group T1 than in other groups. CP intake was significantly (p < 0.05) greater in group T2 than in other groups during the whole experimental period. Among carcass traits, rib-eye area and back fat thickness tended to increase with F-SMS supplementation. The appearance rate (%) of a meat yield more than grade A was the highest in group T1. The net profits increased by 1.2% and 13.3% in groups T1 and T2, respectively. In conclusion, if a proper feeding program (including feed safety) can be ensured, spent mushroom substrates of Flammulina velutipes can prove to be a highly profitable feed source for Hanwoo steers.

        The present study investigated the effects of dietary supplementation of purified amino acid (PAA) isolated and purified from animal slaughter house blood on growth performance and immune response of weanling piglets. A total of fifteen, 28 days old, weaned pigs were randomly distributed into three treatment groups, 5 pens per treatment (one head per pen). Each experimental diet was provided to five piglets per group (T0, 0% PAA; T1, 0.1% PAA; T2, 0.5% PAA). The feed consumption was calculated daily and body weight on a weekly basis. The blood samples were analyzed for plasma concentration of biochemical parameters and cytokines using ELISA Kit assay. Pigs fed with the 0.5% PAA have greater average daily weight gain (ADG) and feed efficiency (FE) as compared to those of T0 and T1. However, ADG and FE of T0 and T1 have no remarkable differences. The plasma cytokine levels were lower in T2 as compared to T0 and T1. The blood parameters like total bilirubin, blood urea nitrogen (BUN), glutamate oxalate transaminase (GOT) and glutamate pyruvate transaminase (GPT) were within the normal range in all the treatment groups. The study indicated that supplementation of 0.5% PAA have positive effect on the growth performance of the weanling pigs. Moreover, supplementation of the amino acid isolated and purified from animal slaughter house blood has no adverse effect on palatability of the feed and health of the animals.

        The purpose of this study was to utilize the stem of Opuntia ficus-indica and to optimize the extraction conditions and standardize extract process for water soluble dietary fiber and solid. Extraction process was optimized by applying various conditions such as pH, ethanol concentration, extracting temperature and time. Maximum extraction yield for water soluble dietary fiber and solid were obtained using 100% water, indicating that ethanol hampered extraction. Also, extraction was unstable with higher heat, longer extraction time, and low acidic conditions. Maximum extraction of water soluble dietary fiber (27.92%) and solid (5.6 g) were obtained at 50°C, pH7, and 7 hr extraction time. Extract had antioxidant capacity at 1105.98 mg vitamin C equivalents (VCE) on ABTS assay and 118.10 mg VCE on DPPH assay.
