        본 연구는 국내 유통 중인 호상형 및 액상형 요거트 등 20개 발효유 제품의 유산균 생균수 및 사용 균주를 분석하여 제품의 표시사항과 비교하였다. 분석 제품의 생균수는 2.7×107-5.6×1010CFU/mL의 범위로 『식품의 기준 및 규격(제2021-26호)』의 기준치(1.0×107-1.0×108CFU/mL 이상)를 만족하였다. 순수분리된 유산균의 16S ribosomal RNA 유전자 염기서열 정보를 미국국립보건원(NCBI) GenBank 데이터베이스에 등록되어있는 생물종의 염기서열과 비교함으로써 제품에 사용된 유산균의 종을 동정하였다. 동정된 균주는 Lactobacillus 6종(L. paracasei, L. acidophilus, L. plantarum, L. rhamnosus, L. helveticus, L. delbrueckii subsp. bulgaricus), Lactococcus 1종(Lc. lactis), Streptococcus 1종(S. thermophilus)으로 모두『건강기능식 품의 기준 및 규격(고시 제2019-149호)』에서 제시한 프로바이오틱스 제품에 사용될 수 있는 미생물로 확인되었다. 제품별 균주 사용 빈도는 L. paracasei (n=7), L. acidophilus (n=5), L. helveticus (n=5), S. thermophilus (n=3), L. rhamnosus (n=2), L. delbrueckii subsp. bulgaricus (n=2), Lactobacillus plantarum (n=1), Lc. lactis (n=1) 순 으로 조사되었다. 소비자 알권리 및 신뢰도 향상을 위하여 사용된 프로바이틱스 미생물의 균주명 등의 제공이 필요할 것으로 판단된다.

        The creation of probiotic-containing fermented milk products for use by human is an important research topic and has high potential for development. Also, studies have shown that heat-killed probiotics are more stable and easier to use than live probiotics. However, as of this time, research has not been reported in Korea that has evaluated the product or functionality of fermented milk after the addition of heat-killed probiotics. This study was conducted to verify the physiological activity of heat-killed Enterococcus faecalis EF-2001 after its addition to Lactobacillus-fermented milk. Briefly, NFM normal fermented milk (NFM) was used as the control sample, whereas fermented milk with 100 μg/mL EF-2001 (EFM1) and fermented milk with 500 μg/mL EF-2001 (EFM2) were used as the treated samples. Among the samples, EFM2 had the highest acidity of 1.15, but no other factors significantly differed (p<0.05). Furthermore, EFM2 had the highest Lactobacillus count of 9.22 (p<0.05). ABTS, DPPH and FRAP were measured to determine the antioxidant activity of the samples. With respect to those parameters, EFM2 had the highest antioxidant measurements. Therefore, the study confirmed that the addition of E. faecalis EF-2001 to NFM is suitable with the standard and does not affect the quality of characteristics. In conclusion, the treatment sample had higher antioxidant activity than did NFM; this result may be used as a basic for further research and as a guideline for the manufacturing of heat-killed probiotic-containing NFM.

        This study examined the relative importance and the effective utility of fermented milk by consumers. The questionnaire was developed by an in-depth interview and literature review and was surveyed on-line. Statistical analysis was carried out descriptive analysis, ANOVA, paired t-test, and conjoint analysis using the SPSS package. First, an analysis of the consumption status of fermented milk found that the consumption frequency was 1-2 times/week (36.2%), 3-4 times/week (26.5%). The product choice attributes of fermented milk were found to be the same with ‘taste’ (3.93) and ‘manufacturing date/expired date’ (3.92), rated the highest, followed in order by, ‘sanitary quality’ (3.82), ‘origin of ingredient’ (3.81). Comparative analysis of the importance and satisfaction level of the choice attributes of fermented milk showed that the choice attributes with lower satisfaction compared to importance were ‘taste’, ‘nutrients’, ‘manufacturing data/expired date’, ‘sanitation quality’, ‘price’, ‘manufacturing method’ and ‘certification of quality’ (p<0.001, p<0.01). ‘Price’ and ‘certification of quality’ were the choice attributes of fermented milk classified as ‘Focus Here’ because of its high importance and low satisfaction. The preferred combination of relative importance in choice attributes of the fermented milk was ‘domestic resource’, ‘Eat with spoon’, and ‘none additives’. Therefore, it is believed that sales will increase if dairy companies can improve the ‘price’ and ‘certification of quality’. In addition, the use of domestic ingredients in the development of new fermented milk products in the future could be an important marketing factor in consumer choice.

        This study was conducted to investigate effects of feeding fermented milk on growth, intestinal microorganisms and fecal noxious gas emission in suckling pigs. A total of a hundred birth piglets (Landrace×Yorkshire×Duroc) were randomly assigned into feeding group and control group during suckling period that ten pigs per sow. Fermented milk contained 3.0×108/g of Bacillus and 3.5×108/g of Lactobacillus, and was supplied by top dressing method. Fermented milk fed to the sulking pigs indicated tendency to increase weaning body weight (p=0.052) and average daily gain (p=0.094). Total microbial flora and Escherichia coli in the feces were lower (p<0.05) in the feeding group than the non-feeding group. Reversely, Lactobacillus was higher (p<0.01) in feces of the pigs fed fermented milk than the pigs of the control group. Hydrogen sulfide emitted in feces was decreased in feeding group compared with control group (p<0.05). Similarly, fecal total mercaptans was diminished in the feeding group than the control group (p<0.01). Therefore, the fermented milk fed to the sulking pigs may improved growth and can influence positively intestinal microorganisms and fecal noxious gas emission.

        The present study investigated the effects of fermented potato protein (FPP, Lianol® ferity) during gestation and lactation on productivity of sows. A total of 50 crossbred sows (Landrace×Yorkshire) in their 3 to 5 parities were allotted to one of two treatments (n=25) including control and FPP groups. FPP tablets applied in sows in two stages. Stage one involved applying FPP daily from 3 days before farrowing to 2 days after for 5 consecutive days. The second stage also involved a 5 day period around weaning time from 3 days before to 2 days after. After farrowing, the amount of feed offered 3 times per day gradually increased from about 3.6 kg at farrowing to 8.4 kg at late lactation. During the first lactation FPP tended to increase backfat thickness (BFT) at weaning at the first (p=0.069) whereas FPP increased BFT (p<0.05) at weaning in the second lactation. There was no significant effect of FPP on body weight changes and daily feed intake of sows. Decreased weaning to estrus interval was associated with applying lianol tablet at the second lactation (p<0.05). Weight of born alive piglets, weaned piglets and total weight gain were greater in FPP group at the second lactation (p<0.05). Applying FPP tended (p=0.062) to increase insulin like growth factor-Ⅰ(IGF-I) at the weaning time in the first lactation. The effect of FPP on IGF-I was significant at the second lactation, revealing a higher concentration in blood at post farrowing and weaning time (p<0.05). This study shows the benefit of using FPP tablets in sows to increase blood IGF-I and both initial and final litter size to improve piglet weaning weights.

        In this study, we compared the organoleptic and other qualities of fermented milk containing 10 or 15% purple carrot extract that had either been previously fermented with Aspergillus oryzae or not fermented. Fermentation characteristics, pH, chromaticity, viscosity, viable cell counts, and sensory evaluations were measured. The pH and acid values did not differ between purple carrot extract fermented with Aspergillus oryzae and non-fermented extract. Viable cell counts were significantly higher in 15% purple carrot extract fermented with Aspergillus oryzae compared to the control after fermentation. Regarding characteristic changes, purple carrot extract fermented with Aspergillus oryzae group showed a lower red value but higher yellow value compared with non-fermented purple carrot extract due to heat-sterilization. Both fermented and non-fermented extract groups showed significantly increased viscosity compared to control. In the sensory evaluation, 15% purple carrot extract fermented with Aspergillus oryzae showed the highest score. In conclusion, addition of 15% purple carrot extract fermented with Aspergillus oryzae resulted in a superior fermented milk product.

        γ-Aminobutyric acid (GABA) is present in many vegetables and fruits, but not in dairy products. GABA is known to be beneficial for preventing neurological disorders and hypertension. The objective of this study was to measure the physicochemical changes, number of lactic acid bacteria, and GABA content in fermented goat milk containing rice (1%). The levels of pH and titratable acidity (TA) in each test samples were found to be pH 4.4∼4.5 and 0.74∼0.8%, respectively. The number of viable lactic acid bacteria between test samples ranged from 8.63 to 8.95 Log CFU/ml. Therefore, pH, TA, and number of viable cells in each test sample had no difference. Furthermore, the Lactobacillus delbrueckii subsp. bulgaricus SP5 (Lb. bulgaricus SP5) showed the highest GABA production in goat milk containing rice. Its maximum GABA yield was 3.4 mg/100 mL. The results suggest that GABA contents of fermented goat milk containing rice can be enriched using Lb. bulgaricus SP5.

        The cholesterol-lowering effect of a fermented milk was studied for long-term period (56 weeks) in 206 Korean adults (106 normal cholesterol group and 100 hypercholestrol group). 300 ml of the fermented milk was taken daily to all subjects for 10 weeks. 24 subjects drinking the fermented milk for 56 weeks and 42 subjects no-drinking for 40 weeks and then redrinking from 50 th week for 6 weeks were followed up. Paired t-test, Duncan's multiple range test, and GLM repeated measure were used for statistical analysis. The level of total blood cholesterol and LDL after drinking the fermented milk for 10 weeks were decreased significantly in both group and affected by total cholesterol level at baseline, BMI, smoking, and drinking. There is no significant change in triglyceride, HDL, and LDL/HDL ratio by drinking the fermented milk. The fermented milk intake for long-term period (56 weeks) did not show any more effect after 10 week on the level of TC, TG, HDL, LDL.

        발효식품이 유해곰팡이에 의한 발암물질(aflatoxin)생성에 미치는 억제효과에 관한 연구의 일환으로 유산균 및 유산균 발효유가 Aspergillus parasiticus ATCC 15517의 성장과 aflatoxin 생성에 미치는 영향을 실험하였다. 발효유를 일정 농도별로 첨가한 YES 배지에서 Asperigillus parasiticus를 배양하여 그 성장과 배양물의 변화를 관찰하고 HPLC에 의하여 aflatoxin을 분석하였다. 그 결과 배양말기에 대조군에 비하여 건조 균체량, 배양물의 PH, 그리고 aflatoxin 생성량 등이 낮게 나타났다(p<0.05). Aflatoxin B₁은 48.6~58.1%가 감소되었으며 G₁은 29.8~34.2%가 감소되었다. 이 발효유의 발효에 사용된 유산간균(Lactobacillus casei)과 A. parositicus를 변형 APT 배지에서 혼합배양한 결과 A. parasitious 단독배양의 경우에 비하여 균체량이 배양 5일째까지는 현저하게 억제되었으나 배양 말기에는 유의한 차이를 보이지 않았다. 또한 배양 말기에 단독배양의 경우보다 pH가 훨씬 감소되고(p<0.05) aflatoxin의 생성량도 감소되었다. 이로부터 발효유는 유해곰팡이인 A. parasiticus의 성장과 aflatoxin 생성을 억제시키는 효과를 가짐을 알 수 있으며, 이는 발효에 관여한 미생물의 경쟁뿐만 아니라 유산균의 대사산물에 의한 영향으로 보여진다.

        The growth inhibition effect of orally administrated yogurt ACE and Metchnikoff upon E. coli O157:H7 and S. typhimurium inoculated into gastric lumen of rabbits was investigated. The rabbits challenged with each 1 ml of suspension containing 10^8 CFU/ml of the pathogens were divided into 4 groups by the interval of yogurt administration: A group; preadministrated 7 days before inoculation of the pathogens and fed daily; B group; administrated daily after inoculation of the pathogens, C group; administrated every 3 days after inoculation of the pathogens; Control group, not fed after inoculation of the pathogens. Each 3 ml of yogurt containing 10^9 CFU/ml was orally administrated into rabbits. All yogurt administrated groups (A, B, C) showed growth inhibition effect on E. coli O157:H7 in one day after inoculation of the pathogen by the level of 0.8-1.0 log CFU/g, compared with the result differences between the control group and the yogurt administrated groups. In the control group after 5 days of inoculation, the number of colonized pathogens was 10^5-10^6 CFU/g, whereas 10³-10⁴ CFU/g was detected in the yogurt administrated groups. After 10 days of inoculation, the viable pathogen number per gram (g) of the rabbit feces was 10³ CFU/g in the control group, whereas the number below 10¹ CFU/g was detected in the group A, and 10² CFU/g in the group B and C. The growth inhibition effect of yogurt administration on E. coli O157:H7 was highly increased in the order of A, B, and C group. The same effect on S. typhimurium was observed at the level of 2 log CFU/g in the Metchnikoff yogurt administrated groups, compared with the control group result in one day after inoculation of the pathogen. In 7 days after inoculation of the pathogen, the viable number was increasingly decreased, and finally after 15 days no viable cell of S. typhimurium was discharged into the fecal samples in the group A, and the mean level of 10¹ CFU/g was detected in the group B, but there was no growth inhibition effect in the group C. The growth inhibition effect on S. typhimurium was observed at the same level of viable cell number between the yogurt ACE administrated groups and the control group in 5 days after inoculation. But, after 10 days of inoculation the viable cell number was started to decrease, and the viable cell of S. typhimurium was not discharged from rabbit intestinal contents after 15 days of inoculation in the yogurt ACE administrated groups. In such a case that yogurt was administrated in order to prevent the pathogens, pre-administration on a daily basis one week before inoculation of the pathogens exerted considerable effect in growth inhibition. In comparison with two kinds of yogurt tested in this study, the growth inhibition effect on two kinds of pathogens was observed more highly in the Metchnikoff administrated group than the ACE administrated group.

        Escherichia coli O157:H7 and Salmonella ser. typhimurium are pathogens involved in food poisoning in numerous countries. This study aimed to obtain knowleges on the survival of E. coli O157:H7 KSC 109 and S. ser. typhimurium ATCC 14028 in fermented milk products which were on sale in Suwon Yakult supplier. To the final concentration of 10³-10⁴ cfu/ml of E. coli O157:H7 KSC 109 or S. ser. typhimurium ATCC 14028 in the fermented milks, Metchnikoff, Ace, Yakult, Mastoni and Super100 were inoculated with these pathogens and then were stored at 4 and viable cells of these pathogens were periodically counted. The results showed that the survival of two pathogens differed in the different types of fermented milks tested. Number of surviving E. coli O157:H7 KSC 109 and S. ser. typimurium ATCC 14028 cells (initial inoculum, 10³-10⁴ cfu/ml) were decreased to 10', 102 cfu/ml in Ace after 100 hours, and were decreased gradually to 10¹ cfu/ml in Yakult after 250 hours. In the other fermented milks, viable cells of E. coli O157:H7 KSC 109 was not drastically decreased but those of S. ser. typhimurium ATCC 14028 was decreased gradually to 10² (Mastoni), and to 10¹ cfir/ml (Super100) after 250 hours. It appeared that S. ser. typhimurium ATCC 14028 was more susceptible than E. coli O157: H7 KSC 109 at low pH. Vibale cells of E. coli O157:H7 KSC 109 was not drastically decreased in most of fermented milks tested except Ace and Yakult, but in general, S. ser. typhimurxum ATCC 14028 was drastically decreased in most of the fermented milks. The major inhibition factor against these pathogens in the fermented milks during storage at 4℃ appeared to be the acidity and the metabolites produced by the starters bacteria used in fermented milk products.

        This study showed the effect of fermented milk on the cholesterol level of Korean. 130 persona among the teachers of elementary, middle and high schools, professors and graduate school students were divided into two groups according to their cholesterol level and provided with fermented milk 300 ml dairly from Sep.25 to No. V3. They were given blood test at 20 days and 40 days after drinking fermented milk, and surveyed about their ordinary life style and the change of fecal condition. Cholesterol, LDL and the ratio of LDL and HDL in blood were significantly decreased in both high cholesterol group and normal group while HDL cholesterol was notably increased. TG showed slightly tendency of decrease in normal group while no changed in high group. There is no significant change in cholesterol level after drinking fermented milk among groups which are divided by factors of dringking, smoking, caffeine, B.M.I. and family history. The research also showed that drinking fermented milk improved the fecal frequency and fecal condition.

        The purpose of this study was to develop a functional and valuable dairy product with high conjugated linoleic acid (CLA) content through a fermentation method utilizing vegetable oil and probiotic lactic acid bacteria. Bifidobacterium breve KCTC 3419 was selected as a standard strain for high efficiency conversion of the CLA c9,t11. This standard strain was mixed in a definite ratio of 4:3:3 with Lactobacillus sakei LJ011 isolated from kimchi and the commercially available YF-L812 culture to generate a high-efficiency CLA conversion starter stock for use in fermented milk production. CLA conversion by safflower seed oil fermentation by the starter stock yielded the highest CLA containing fermented milk. The pH level, titratable acidity, and number of lactic acid bacteria in the fermented milk were altered to suitable levels during the fermented milk production process. The CLA content of CLA-fermented milk was maintained at 0.1% of the total CLA content during the storage period of 2 weeks.

        This study aimed to produce fermented soy-powder milk (FSPM) with Lactobacillus plantarum P1201 and to evaluate its anti-obesity activity. Isoflavone and conjugated linoleic acid (CLA) of unfermented soy-powder milk (UFSPM) and FSPM and were analyzed via high-pressure liquid chromatography (HPLC) and gas chromatography (GC). Their inhibitory activities against α-glucosidase, α-amylase, and pancreatic lipase were assayed. Their anti-obesity activities were evaluated on the basis of their inhibitory effects on adipocyte differentiation in 3T3-L1 cells, and the expression of mRNAs associated with adipogenesis and lipid metabolism were analyzed via real time-polymerase chain reaction (RT-PCR) and quantitative PCR (qPCR). FSPM with L. plantarum P1201 increased the isoflavone aglycones (daidzein, glycitein, and genistein) content and produced CLA in soy-powder milk (SPM), both of which possessed bio-activity. Both UFSPM and FSPM showed dose-dependent inhibitory activity for α-glucosidase, α-amylase, and pancreatic lipase. FSPM, but not UFSPM, suppressed adipogenesis in 3T3-L1 cells and reduced their triglyceride content by 23.1% after treatment with 1,000 μg/mL of FSPM, compared with the control group. The anti-obesity effect of FSPM can be attributed to CLA and isoflavone aglycones, which targeted CCAAT/enhancer binding protein α (C/EBP-α) and down-regulated lipoprotein lipase (LPL), adiponectin, adipocyte fatty acid-binding protein (aP2), fatty acid synthase (FAS), and acetyl CoA carboxylase (ACC) mRNA. Furthermore, FSPM enhanced the inhibitory activity of glucosidase and pancreatic enzymes and anti-obesity activity. Further studies are required to investigate whether the anti-obesity effect of FSPM persists in an in vivo mouse model of diet-induced obesity.

        This study was carried out to investigate the physicochemical and antioxidant properties of fermented milk with addition of hot water extract of Cordyceps militaris grown upon Tenebrio molitor. The general components of Cordyceps militaris grown upon Tenebrio molitor are moisture 10.85%, crude protein 18.44%, crude fat 2.07%, crude ash 5.46%. The DPPH radical scavenging activities of different solvents were the highest (74.81 EDA%) with hot water extract sample. The acidity of fermented milk was high with increasing amount of extracts. The pH of fermented milk reached 4.60-4.66 after 4 h of fermentation, and the number of lactic acid bacteria was highest (11.70 log CFU/mL) with 1% fermented milk. The moisture content of fermented milk showed no significant difference. In addition, contents of crude protein were not significantly different according to addition amount. Regarding Hunter’s color values, L value decreased as the amount of extract increased, whereas a value and b value increased. The content of free amino acid increased with increasing amount of extract. The DPPH free radical scavenging ability and ABTS free radical scavenging ability of fermented milk were significantly different as the addition amount of extract increased. In the sensory evaluation, fermented milk containing 1% of extract showed the highest preference.

        With the goal of developing a new functional fermentation milk using green tea powder (GP), milk was fermented with direct vat set (DVS) starter culture containing Streptococcus salivarius subsp. thermophilus, Lactobacillus paracasei and L. delbrueckii subsp. bulgaricus. We investigated fermentation characteristics and antioxidative activities of fermented milk supplemented with different concentrations (0.5, 1, 2, 3%) of GP. All samples were evaluated for pH, total acidity, viable cell count, and sugar contents. The pH of all samples decreased during fermentation, and the final pH ranged from 4.35 to 4.51. The acidity increased during fermentation, after the fermentation was completed, the titratable acidity was 0.8 to 1.1%. And viable cell count of all samples increased during fermentation, and the final viable cell count was 8.57 to 8.89 log CFU/mL. The sugar content decreased as the fermentation proceeded and finally reached 12 to 13 ˚Brix. And increasing GP, decreased brightness and increased yellowness. Increasing GP concentration added to milk, improved DPPH free radical scavenging activity and ferric ion reducing activity of fermentation milk. The fermentation milk kept their pH, total acidity and viable cell counts standard of fermentation milk during the storage period at 4℃. These findings confirmed the possibility of development of the novel functional fermentation milk through the investigation of the quality characteristics of the fermentation milk added with GP.

        This study was carried out to investigate the quality characteristics of fermented milk containing Rhus verniciflua seed (RVS) extracts (0.0%, 0.1%, 0.3% and 0.5%) and antioxidant activity of RVS extracts. The proximate composition of RVS was moisture (4.76%), crude ash (1.40%), crude fat (5.33%) and crude protein (11.10%). A total polyphenol content of 70% ethanol extract of RVS (554±2.64 mg/g) was higher than that of RVS water extract (145±3.47 mg/g). 70% ethanol extract (1103±6.42 mg/g) of RVS showed higher content in the total flavonoids (37±2.30 mg/g) and activities on DPPH free radical scavenging (73.23%) and ABTS free radical scavenging (83.47%) when compared with water extracted of RVS. The quality characteristics, such as pH, titratable acidity, and the number of lactic acid producing bacteria were not remarkably different between the fermented milk samples subjected to treatments with and without the addition of RVS extracts.

        Recently, the prevalence of diabetes and metabolic syndrome is increasing and has become a social problem. Considering the fact that many Koreans consumed fermented milk, this study was performed to determine the positive effect of fermented milk with indigestible dextrin formulation (Dr. Insue) for patients impaired glucose tolerance or potentially metabolic syndrome, diabetic. Long-term drinking of fermented milk, Dr. Insue did not cause the rise in blood glucose after a meal and has no side effects such as discomfort digestive-organ in spite of intake 12 wk. Also, It confirmed that there is no adverse effect about hematological and biochemical tests, including glycosylated hemoglobin. It is suggested that fermented milk, Dr.Insue is suitable beverage for potentially diabetic patients with metabolic syndrome of impaired glucose tolerance. Additionally, it should be considered to be a means to investigate the changes of cardiovascular risk of ingestion of the fermented milk and research through the increases the amount indigestible dextrin formulation or extending the period of intake.
