        본 연구는 국내 유통 농산물 535건을 대상으로 잔류농 약 실태조사를 수행하였다. 서울 등 13개 지역에서 수거 한 농산물 시료를 QuEChERS법으로 추출한 후 d-SPE로 정제하여 LC-MS/MS 및 GC-MS/MS로 분석하였다. 농산 물 15품목 535건 중 14품목 288건에서 잔류농약이 검출 (53.8%)되었으며, 검출된 농산물은 사과 40건, 고추 40건, 감귤 33건, 복숭아 31건, 기타 품목 144건이었다. 이 중 잔류허용기준을 초과한 농산물은 배추 1건으로, diniconazole 이 0.18 mg/kg으로 기준치의 약 2배 검출되었다. 총 검출된 농약은 91종으로 살균제 42종, 살충제 48종, 살선충제 1종 이었으며, dinotefuran 91건, carbendazim 75건, tebuconazole 61건, pyraclostrobin 59건이 가장 빈번하게 검출되었다. 따 라서 상기의 결과를 통해 과일류 및 채소류에 대한 지속 적인 잔류실태조사가 필요할 것으로 사료된다.

        In vitro digestibility and protein digestibility corrected amino acid scores (PDCAAS) were investigated to verify the availability of protein in various Rhizopus oligosporus fermented products of domestic soybean (Glycine max L.) cultivars. Danbaegkong (DBK), Daepung (DP), Daewonkong (DWK), Saedanbaek (SDB), Seonyu (SY), and Cheongja4ho (CJ4) were used as raw samples, which were fermented using commercially available Rhizopus oligosporus for 48 h. All cultivars showed increased crude protein content after fermentation. The crude protein content of DBK and SDB was significantly higher than that of the other samples (55.12% in DBK and 54.22% in SDB) (p<0.001). CJ4 had the highest alanine content of 28.88 mg/g (p<0.001), and no significant difference in cysteine content was detected among the cultivars. In most of the fermented samples, the in vitro digestibility was 0.9 or higher, indicating high protein in the fermented samples. However, it is considered that restrictions on digestion are low. In DWK, the amino acid content and PDCAAS, which together indicate protein quality, were 0.917 and 0.855, respectively, confirming that it was the best cultivar to provide the raw material for fermentation. In conclusion Rhizopus oligosporus fermented soybean products can be considered a prospective source of protein with high utility value.

        위생용품의 기준 및 규격서에는 포름알데히드 함량 시 험법이 위생용품 유형별로 다르게 규정되어 있다. 위생용품 유형별로 미용티슈, 기저귀 안감 및 방수층, 팬티라이너를 대표 시료로 하여, 2,4-DNPH/HPLC법, 아세틸아세톤 /분광광도계법, 아세틸아세톤/HPLC법을 비교 분석하였다. 시험방법의 유효성 확인을 위하여 위생용품 유형별로 직선성과 검출한계, 정량한계, 회수율, 반복성 등을 검토하였다. 포름알데히드 표준용액으로 검량선을 작성 한 결과 3가지 시험방법에서 모두 상관계수(R2)가 0.999이상이었고, 검출한계와 정량한계는 위생용품의 기준 및 규격에 규정 된 각각의 최대잔류허용기준(Maximum Residue Level, MRL)에 비해 매우 낮게 나타났다. 또한 80%이상의 양호한 회수율을 확인할 수 있었고, 반복성(repeatability)도 20% 이내에 해당하여 양호하였다. 분석장비 별 비교에서는 분광광도계에 비하여 HPLC는 낮은 검출한계 및 정량한계 를 나타내어 정밀한 것으로 나타났다. 또한 유도체화 후 차광을 유지하면서 분석이 가능한 장점이 있었다. 유도체화 시액별 시간 경과에 따른 포름알데히드 안정성 평가를 위하여 2,4-DNPH와 아세틸아세톤으로 유도체화 한 후 0, 3, 6, 9, 24, 48 시간에 HPLC로 포름알데히드를 분석하였다. 2,4-DNPH로 유도체화 된 포름알데히드의 경우 시간의 경과에 따른 포름알데히드 피크면적의 통계적 유의성 은 보이지 않았다(P>0.05). 반면, 아세틸아세톤의 경우 유 의적인 상관관계를 보였는데(P<0.01), 아세틸아세톤-포름 알데히드 면적과 시간과는 음의 상관계수(r)를 보였다. 최초로 측정된 포름알데히드 피크면적평균 대비 시간대 별 피크면적평균 비교에서는 2,4-DNPH 시액으로 유도체화 한 경우에는 면적비의 특별한 증감이 관찰되지 않아 안정한 것으로 나타났다. 그러나 아세틸아세톤으로 유도체화 한 경우에는 시간의 경과에 따라 감소 경향을 보이다가 48시간 경과 후에는 81.3-95.2% 수준으로 감소하는 것으로 나타났다. 위생용품은 대부분 일회용으로 제조가 용이한 종이와 부직포 재질로 만드는 경우가 많고, 제조과정 중 접착제를 사용한다. 따라서 위생용품 최종제품에도 포름알데히드가 잔존할 가능성이 있다. 우리나라에서도 위생용품관리법으로 위생용품 중의 포름알데히드 기준을 마련하여 관리하고 있으나 시행 초기로 국내 유통 제품에 대한 포름알데히드 잔류 실태조사는 미흡한 실정이다. 이에 본 연구에서는 부산지역에서 유통 중인 위생용품 총 205건을 대상으로 포름알데히드 함량 모니터링을 실시하였다. 일회용 기저귀 74건 중 73건에서 0.13-29.87 mg/kg 의 수준으로 낮은 농도의 포름알데히드가 잔류되어 있음 을 확인하였다. 이에 일회용 기저귀는 피부에 직접 접촉 하는 부분을 중심으로 지속적인 관리가 필요할 것으로 생각된다. 반면 화장지 78건, 일회용 타월 27건, 일회용 행주 12건, 종이컵 7건, 일회용 종이냅킨 6건, 종이빨대 1건 에서는 포름알데히드가 모두 검출되지 않아 안전하게 관리되고 있음을 알 수 있었다.

        국내 유통중인 다양한 형태의 원료물질 또는 공정부산물들에 대한 물리적, 화학적 및 방사선적 특성을 평가하기 위해 약 220 여 개, 총 16 종의 표본 시료를 선정하였다. 해당 시료들에 대하여 LaBr3 섬광검출기를 이용한 에너지 스펙트럼 측정과 에너 지 분산형 X-선 형광 분광기를 이용한 U, Th, K와 물질의 주요 성분 분석을 수행하였다. 그리고 HPGe 검출기를 이용하여 234Th, 234mPa 및 214Bi 등의 우라늄 붕괴계열 핵종들과 228Ac, 212Pb 및 208Tl 등의 토륨 붕괴계열 핵종들 그리고 40K 등의 방사능 농도를 분석함으로써 원료물질 및 공정부산물의 특성에 관한 기초자료를 수집하였다. 추가적으로 ROI구간별 계수율과 원 소성분함량, 방사능농도와 같은 특성변수들 간의 상관관계를 분석함으로써 스크리닝 장비를 이용한 방사능 농도 분포 유추 가능성을 평가하였다. 본 연구에서 구축된 특성 데이터베이스는 천연방사성핵종 분석을 위한 절차 및 방법을 수립하는데 유 용한 정보를 제공하고, 천연방사성핵종 분석에 대한 정확성 및 재현성을 향상시킬 수 있을 것으로 판단된다

        본 연구에서는 농식품 수출이 국내 가격지지효과를 가지고 있음을 제시하고자 현재의 국내 경제상황에서 우리나라 농식품의 수출이 감소하는 경우를 가정하여 그 영향을 분석하였다. 방법론은 연산가능일반 균형모형 중 GTAP모형을 이용하였다. 결과를 보면, 감소된 수출에 해당되는 생산량이 국내 시장으로 유입되어 농식품부문 가격 하락을 야기시키는 것으로 나타났다. 가장 크게 영향을 받는 부문은 1차 농축수산물부문에서는 수산물, 기타곡물, 쌀, 과일/채소 순이였으며, 가공식품부문에서는 설탕, 식용유, 일반가공식품 순으로 나타났다. 이중 농산물부문인 쌀, 기타곡물, 과일/채소의 국내 가격수준 하락은 일반가공식품에 비하여 상대적으로 더욱 두드러지게 나타났는데, 이는 수출의 하락이 국내 원료농산물시장에 상대적으로 더욱 큰 교란을 주는 것을 제시하며, 따라서 국내 농업생산자에게 주는 부정적인 영향이 상대적으로 크다는 것을 의미한다.

        In this study, two commercial PCR and ELISA test kits were examined for identification of eight animal species (beef, pork, chicken, duck, turkey, goat, lamb, and horse) from raw meat and meat products in Korea. The detection limit in RAW meat ELISA kit® on three types of meat samples blended with beef, pork and chicken, demonstrated that all meat species were differentiable down to 0.2%. RAW meat ELISA kit® on animal species resulted in differentiation rate of 94.5% for beef, 93.3% for pork, 90% for lamb, and 100% for chicken, duck, turkey, goat, and horse. In contrast, Powercheck Animal Species ID PCR kitTM resulted in 100% specificity at 0.05% limit of detection for all meat species. The detection limit of Cooked Meat ELISA kit® on mixed meat samples heat-treated with different temperatures and times, resulted in 0.1% for all heat-treated mixed meat except for chicken at 1.0%. Additionally, ELISA kit on sixty meat products resulted in specificity of 31.8% for ham, 13.6% for sausages, and 12.5% for ground processed products, and relatively low rate for more than 2 types of mixed meats. On the contrary, meat species differentiation using PCR kit showed higher percentage than that using ELISA kit®: 50.0% for ham, 41.7% for sausages, and 28.6% for ground processed meat. Futhermore, PCR kit on 54 dried beef meats detected pork genes in 13 products whereas ELISA kit showed negative results for all products. Hence, the possibility of cross-contamination during manufacturing process was investigated, and it was found that identical tumblers, straining trays, cutters and dryers were used in both beef and pork jerky production line, suggesting the inclusion of pork genes in beef products due to cross-contamination. In this study, PCR and ELISA test kits were found to be excellent methods for meat species differentiation in raw meat and heat-processed mixed meat. However, lower differentiation rate demonstrated in case of meat processed products raised the possibility of inclusion of other species due to cross-contamination during manufacturing process.

        The physicochemical characteristics of 4 domestic wheat flour products were compared to those of 4 imported wheat flour products marketed in Korea. The contents of moisture, ash, protein, total dietary fiber (TDF), color (L, a, b), whiteness, solvent retention capacity (SRC), water absorption index (WAI), water soluble index (WSI), pasting characteristics by rapid visco analyzer (RVA), and principle component analysis (PCA) were analyzed. The domestic wheat flour products were composed of higher content in ash and protein, compared to the imported wheat flour products. The domestic wheat flour products had lower SRC and WSI characteristics than the imported wheat flour products. The values of lactic acid SRC (LASRC) in the imported wheat flour products showed an increasing trend as the protein content increased. The differences in viscosity were observed in the domestic wheat flour products. However, no major significant differences of viscosity were found among the imported wheat flour products. The result of PCA showed a consistent trend in the imported wheat flour (strong, medium, and weak), while a consistent trend was not shown in the domestic wheat flour products. Therefore, further research is needed to standardize the different types of domestic wheat flour products.

        This survey focused on consumer's consumption patterns for buying factors of domestic live stock products after foot and mouth disease (FMD). The purpose of this survey was to suggest basic information to reduce consumption when livestock diseases are occurred. Two methods were used for this survey. First method was to investigate internal data to understand consumption patterns when buying domestic livestock products. Second method included empirical analysis to understand how FMD affected consumer's consumption pattern. Survey was conducted in Chuncheon city. As the result of this survey, factors that affected the buying patterns of domestic livestock products were brand and expiration date. These results suggested that consumers recognized brand livestock products were safer than general livestock products and they have more interest for food safety than quality attributes of food when buying domestic livestock products.

        This study proposes development strategies for domestic e-commerce of agricultural products. So far, it grows quantitatively so fast, but because of lack of continuous management, it does not work properly. Previous studies have some outcome for vitalization of e-commerce, but they have limits that they neglect rapid changes of e-commerce circulation structures and practical problems farmers go through when they sell their products. This study deals with these problems more than previous. The first phase of this study analyzes two cases of overseas successful and failure e-commerce sites of agricultural products, for example, Wine.com and Webvan.com. The second phase analyzes As-Is and distribution structure of domestic e-commerce of agricultural products. Finally this study asserts three strategies for domestic e-commerce of agricultural products based on Web 2.0 environment.

        The purposes of this study were to: a) investigate how other countries brought up their traditional food into the commercial market for tourists b) analyze present marketing status of the Korean traditional food in dealing with foreign tourists as consumers. Present marketing status of the overseas and domestic tourism products focusing on traditional foods was investigated through literature reviews and face-to-face in-depth interviews conducted with professionals in tourism business. As a result, the foreign tourism products focusing on traditional foods were diverse and these products were representative of the regional heritage brought together in an effect to increase understanding of traditional foods. In case of the tourism products focusing on Korean traditional cuisine, the popular programs were 'Making Kimch', 'Making ricecake' and 'Making Bibimbap' in which tourists participated have expressed great satisfaction. The results of this study would be used as an important data in developing unique tourism programs focusing on Korean traditional cuisine attracting foreign tourists.

        In this study, occurrence of aflatoxin M₁ (AFM₁) in domestic milk and milk products was determined. The level of AFM₁ in market milk (0.047 ppb) was lower than that in raw milk (0.083 ppb) but this looks like that is due to dilution in collecting process rather than the effect of sterilization. In the case of nonfat dry milk, level of AFM₁ appeared high by 0.24 ppb but it is thought to be not different from market milk actually because nonfat dry milk is diluted at intake. In the case of ice cream, finished products were contaminated with AFM₁ of 0.020 ppb and also have the possibility of the contamination of AFB₁ due to secondary raw material such as nuts and alinond. On the basis of the results of this study and previous studies, Monte-Carlo simulation is conducted to estimate the contamination level of AFM₁ in domestic market milk. To consider uncertainty and variability fitting procedure was passed through. And we used beta distribution to estimate the prevalence and triangular distribution to estimate the concentration level of AFM₁ in milk. As a result, the 5%, 50% and 95% points of the distribution of the probability of AFM₁ contamination level in milk is 0.0214, 0.0946 and 0.1888 ppb, respectively. Also we estimate that AFM₁ in almost milk was low more than 0.5 ppb that is American acceptable level but 80.4% exceeded far 0.05 ppb that is European standard.

        The purpose of this study is researching domestic consumer’s perception and preferences for preserved flower to develope products. The basic questions about planning, design development and marketing of preserved flower product are asked to 160 included experts and non-experts of flower in the 1st survey. In the 2nd survey, intensive questions and customer’s preferences for product type and design elements (color, shape, species, material, fragrance etc.) are researched to the awared of preserved flower among 1st surveyed people. In aspects of product planning, the detailed product planning with well-awaring of the material characteristic of preserved flower is necessary, not concentrating on differences with natural flower products. In aspects of branding, diversifying the education and marketing of preserved flower itself is necessary, not differentiating among the other brand. And suggesting varied applications of preserved flower is seemed to be useful to expand its market, not concentrating on developing to high quality. In aspects of developing design, considering for various design elements is important when developing main mass flower. In case of filler flowers, having massive shape and balance with main is necessary to developing green leaves. In aspects of marketing, educating and marketing for preserved flower is seemed to be the most urgent priority for expanding its market, not designing and developing high quality products. Especially it is seemed to be necessary to secure some general marketing channel through mass media like advertise, newspaper and TV for the un-awared of preserved flower or uninterested in flower products. And to show various design applications and to improve design quality and maintenance of flower products is helpful to secure potential market.

        본 연구에서는 국내 산지별 가공용 사과의 patulin 오염 모니터링을 위하여 24개 지역 102건의 시료를 수거하여 분석하였다. 그 결과 전체 102건의 시료 중 47건에서 patulin이 검출되었다. Patulin 잔류량 감소방안으로 ascorbic acid 200 ppm으로 처리하였을 때 12.89 ppb로 93.4%가 감소하였으며, 활성탄은 100 ppm 첨가하였을 때 patulin 잔류량은 2.68 ppb로 95.8%의 감소율을 나타내었
