Sixty dried agricultural products were collected from February to July 2024. Among these, 16 samples were randomly purchased from large supermarkets and local markets in Gwangju, and 44 were obtained from online marketplaces. Only products labeled with phrases such as “No Food Additives” or “100% Raw Ingredients” were selected for analysis. The aims of this study were to determine the concentrations of sulfur dioxide, preservatives, artificial colorants, and toxic heavy metals (lead and cadmium) in dried agricultural products, assess their risk indices, and provide foundational data to establish relevant regulatory standards. The results revealed that sulfite compounds were detected in some samples, with the highest sulfur dioxide concentrations found in gourds (82.99- 1046.95 mg/kg), apricots (10.87-529.45 mg/kg), and konjac powder (23.59-475.92 mg/kg). The highest sulfur dioxide risk index was observed in persimmons, with values ranging from 4.74% to 16.61% for male and 6.26% to 26.84% for female consumers. Sweet potatoes followed, with risk index values of 6.87% and 11.29% for male and female consumers, respectively. All the samples exhibited sulfur dioxide risk indexes below 100%, indicating safety. No preservatives or artificial colorants were detected in any of the samples, suggesting that sulfites can be used as alternatives to preservatives in certain products. The concentrations of lead in dates (9.55-137.09 μg/kg) and gourds (10.76-49.14 μg/kg) and cadmium in gourds (16.36-51.76 μg/kg) were within safe limits, with risk indexes below 100%. This study provides crucial baseline data for evaluating the safety of dried agricultural products. Furthermore, it underscores the need for more comprehensive risk assessments that consider the interactions between sulfur dioxide, heavy metals, and consumption patterns. Lastly, it highlights the necessity of strengthening regulatory standards to better protect consumers.
This study was conducted to investigate the effects of feeding DDGS and full-fat soybean in the finishing diet on the performance, carcass characteristics and unsaturated fatty acid composition of Hanwoo steers. Thirty Hanwoo steers (average age, 26.4 months; weight, 756.69 kg) were assigned into Control (no additive), DS (DDGS supplemented) and FS (full-fat soybean supplemented). The feeding rate of DDGS and full-fat soybean was set at 10% and 5% in the finishing diet, respectively, and the in vivo trial was conducted for 122 days. The final body weight was 779.81, 774.20 and 791.95 kg for Control, DS and FS, respectively, and the average daily gain was not different among treatments. The feed conversion ratio was lower in FS compared to Control. Carcass cold carcass weight, backfat thickness, M. longissimus dorsi area and marbling scores were not different among treatments, and moisture, crude protein, and crude fat content in carcass were not different. The melting point of sirloin ranged from 25 to 26℃ among treatments. The saturated fatty acid, C18:0, was lower in the FS than in Control. C18:1, the main unsaturated fatty acid (UFA) in carcasses, did not show any difference among treatments, but C18:2 was higher in DS than in Control. Total UFAs were higher in the FS than in Control. Based on the above results, DDGS feeding was effective in improving feed conversion ratio and C18:2 content, and full-fat soybean feeding was effective in improving feed conversion ratio and increasing UFA content.
A total of 225, 3 weeks old weaned pigs of the Landrace × Yorkshire × Duroc breeds with initial average body weight (BW) of 6.25±0.6 kg were randomly assigned to 3 different treatments based on their BW, with each having 5 replicates. Each replicate contained 15 pigs, resulting in 75 pigs per treatment group. The treatment included a basal diet (CON), CON + allicin and cinnamaldehyde mixture 500 ppm (ALI), CON + Bacillus-based probiotics 500 ppm (PRO) tested for 42 days in a 3-phase feeding program (0–14 as phase 1, days 15–28 as phase 2, and days 29–42 as phase 3). Result shows final BW (6.3%) and average daily gain (9.0%) in the overall phase were higher (p<0.05) in PRO compared with CON. At d 14, the level of Escherichia coli was lower (p<0.05) in ALI (12.0%) and PRO (13.2%) over CON. At days 28 (14.6%) and 42 (12.8%), the level of Escherichia coli was lower (p<0.05) in PRO compared with CON. The level of tumor necrosis factor-α was lower (p<0.05) in PRO over CON (15.0%). Superoxide dismutase (9.2%) and immunoglobulin A (19.4%) were higher (p<0.05) in PRO over CON. We concluded that dietary PRO at 500 ppm showed better performance in piglets by enhancing their growth performance and health.
본 연구에서는 국내에서 판매되는 24개 건어포 및 조미 건어포 제품의 종 판별 및 표시사항 준수 여부를 평가했 다. 이러한 수산가공품에 사용된 원재료의 종판별을 위해 cytochrome c oxidase subunit I 및 cytochrome b 유전자 의 염기서열을 분석하여 NCBI GenBank 및 BOLD 데이 터베이스에 등록되어 있는 생물종의 염기서열과 비교 후 계통 분석을 수행했다. 분석 결과 13개 종(Hyporhamphus quoyi, Gadus chalcogrammus, Lophius litulon, Conger myriaster, Paramonacanthus pusillus, Hyporhamphus sajori, Gadus macrocephalus, Hoplobrotula armata, Callionymus meridionalis, Liparis tanakae, Dosidicus gigas, Lagocephalus cheesemanii, and Takifugu vermicularis)이 확인되었다. 일반 명(장어, 오징어 등)을 포함할 경우 16개 제품(66.7%)에서 표시사항과 판별된 종 간에 불일치가 확인되었으며, 일반 명을 제외할 경우 불일치 비율은 41.7%로 감소했다. 식품 유형별로는 조미건어포 제품(n=20, 70%)에서 건어포 제품 (n=4, 50%) 보다 높은 비율의 불일치 비율이 관찰되었다. 원산지별 분석 결과 특정 국가와 불일치 비율과의 상관성 은 확인할 수 없었다. 이러한 연구 결과는 건포류 제품의 주기적 모니터링 수행 및 수산물의 국명 표시 선을 위한 기초자료로 쓰일 수 있을 것이다.
This study assessed dried vegetables derived from sweet potato petioles to promote the use of typically discarded aerial parts. The length (18.25 to 35.00 cm) and thickness (4.59 to 6.66 mm) of the petioles varied by variety, with ‘Hophungmi’ and ‘Tongchaeru’ showing promise for dried vegetable processing due to their longer and thicker petioles. In terms of color, ‘Hophungmi’ and ‘Shinmi’ exhibited high lightness, ‘Tongchaeru’ and ‘Hayangmi’ displayed strong redness, and ‘Pungwonmi’ had high yellowness. Rehydration rates and hardness increased over the harvest period, with ‘Pungwonmi’ and ‘Tongchaeru’ demonstrating excellent rehydration capacity. Additionally, ‘Hayangmi,’ ‘Shinmi,’ ‘Tongchaeru,’ and ‘Hophungmi’ maintained lower hardness levels, appealing to consumers who prefer a softer texture. Notably, the substantial polyphenol content (10.70 to 16.20 mg GAE/g) and flavonoid content (4.79 to 8.11 mg CE/g), along with antioxidant activity (DPPH: 1.11 to 2.14 mg, ABTS: 5.51 to 7.78 mg TE/g), indicate their potential as antioxidant-rich functional foods. This research supports the development of dried vegetable products tailored to consumer preferences.
The study examined the impact of adding acorn pomace dried powder (APDP) at different levels (0%, 5%, 10%, 15%, 20% w/w) on the quality, antioxidant potential, and consumer preference of garaetteok, a Korean rice cake. The findings showed that as the APDP content increased, moisture levels decreased, and pH levels were affected. Color analysis revealed a decrease in lightness (L), while yellowness (b) and redness (a) values increased. Texture analysis indicated an increase in gumminess, hardness, and chewiness, but a decrease in cohesiveness, adhesiveness, and springiness with higher APDP levels. Sensory evaluation of appearance, taste, flavor, texture, and overall preference identified the sample with 10% APDP as the most preferred. Additionally, the antioxidant activity of the garaetteok demonstrated a positive correlation with the increasing APDP content. In conclusion, the incorporation of 10% APDP enhanced the quality characteristics of garaetteok, improving its nutritional value, antioxidant properties, and overall consumer appeal.
This study was conducted to present primary data for the development of functional beverages by measuring quality characteristics and antioxidant properties and preparing coffee with dried fruit powder. The pH, water content, and brownness were higher in the control group than in the fruit-added sample group. Total polyphenols were highest in the Prunus Fruit Coffee (PFC) at 2765.43±87.03 mg GAE/L. In terms of DPPH, the fruit addition group (consisting of dried apple, dried cherry, and dried plum) was higher than the control group, and the LFC was the highest at 70.04±2.01%. ABTS showed high antioxidant properties in all sample groups, and LFC showed the highest content at 83.01±1.06%. Caffeine was the highest in the control group, all sample groups showed lower content than the control group, and AFC showed the lowest content at 664.70±16.36. As a result, the fruit-added coffee groups are higher than the control groups in terms of quality characteristics and antioxidant properties, and it is considered that the fruit groups are suitable as functional food materials when developing coffee products.
Sprout products, such as broccoli, alfalfa, and cabbage, have positive health effects. Thus far, sprout foods have attracted attention owing to their good bioavailability. In particular, young broccoli sprouts exhibit anti-inflammatory, antioxidant, and anti-cancer effects. They contain 100 times more chemoprotective substances than adult broccoli. This study examined the anti-inflammatory effects of freeze-dried young sprout broccoli (FD-YB) in vitro using RAW264.7 macrophage cells. The FDYB powder antioxidant ability test showed that the radical-scavenging activity and superoxide dismutase enzyme activity increased in a dose-dependent manner. In addition, FD-YB was not cytotoxic to RAW264.7 cells, and nitric oxide production decreased after the FD-YB treatment of lipopolysaccharide-stimulated RAW264.7 cells in a dose-dependent manner. Furthermore, FD-YB significantly decreased the expression of inflammation-related proteins (Cyclooxygenase-2, Inducible nitric oxide synthase, and Prostaglandin E Synthase 2) and cytokines (Tumor necrosis factor- and Interleukin-6). In conclusion, FD-YB can be a potential nutraceutical for preventing and regulating excessive immune responses during inflammation.
본 연구에서는 경기 북부지역 및 온라인에서 유통되는 건고추 및 고춧가루 88건을 대상으로 잔류농약을 분석했 다. 시료는 QuEChERS법으로 전처리한 후 GC-MS/MS, LC-MS/MS를 이용하여 분석했다. 88건 중 70건(79.5%)에 서 잔류농약이 검출되었고 그 중 4건(4.5%)인 수입산 건 고추 2건, 수입산 고춧가루 2건이 농약 잔류허용기준을 초 과하였다. 총 61종의 농약이 검출되었고 검출 빈도가 가 장 높은 농약은 살균제 tebuconazole로 52회 검출되었다. 쌀에 사용하는 진균제 tricyclazole은 베트남산 시료 12개 중 3개 시료에서, ethion은 인도산 시료 1개에서 농약 잔 류허용기준을 초과하여 검출되었다. tricyclazole과 ethion 은 고추 품목에서의 사용이 금지되어 positive list system 제도에 의해 규제되고 있다. 본 연구를 통해 국내산 건고 추 및 고춧가루의 잔류농약 수준이 비교적 잘 관리되고 있으며 수입산 건고추 및 고춧가루에 대한 지속적인 관리 가 필요한 것으로 확인하였다.
This study investigated the influence of incorporating chestnut inner shell powder (CISP) at varying levels (0%, 3%, 6%, 9%, and 12% w/w) on the quality, antioxidant potential, and consumer preference of garaetteok, a Korean rice cake. Findings revealed a decrease in moisture content and pH with increasing CISP content. Color analysis indicated a reduction in lightness (L) and yellowness (b) values, while redness (a) values increased. Textural properties displayed an increase in hardness, chewiness, and gumminess, but a decrease in springiness, adhesiveness, and cohesiveness with increasing CISP levels. Sensory evaluation for appearance, taste, flavor, texture, and overall preference revealed the sample containing 6% CISP to be the most favorable. Moreover, the antioxidant activity of the garaetteok exhibited a positive correlation with increasing CISP content. In conclusion, incorporating 6% CISP resulted in improved quality characteristics for garaetteok development, offering enhanced nutritional value, antioxidant properties, and overall consumer preference.
The objective of this study was to compare the feeding effects of imported timothy hay, domestic Italian ryegrass silage (IRGS) and IRG dried by hot-air dry system (IRGHDS) under basic total mixed ration (bTMR) on rumination activity, milk production, and milk composition in lactating dairy cows. Eighteen Holstein dairy cows were divided into three groups: control (bTMR + imported timothy hay), treatment 1 (bTMR + IRGS) and treatment 2 (TMR + IRGHDS) groups. The study was conducted over a total period of 24 days, including a 10 days adaptation period and a 14 days main experimental period. The results indicate body weight was not significantly different between the three groups (p>0.05), and rumination time was significantly higher in the treatment 1 group compared with the control group (p<0.001). Milk fat, protein, and lactose were not significantly different between the three groups (p>0.05), however, somatic cell counts were significantly lower in the treatment 1 group compared with the control group (p<0.001). As a result of the economic feasibility analysis, it is expected that feeding TMR using IRGS and IRGHDS will increase profit by 402.8 won/day and 331.4 won/day per cow compared to imported timothy hay. Therefore, IRGS and IRGHDS can be used as substitutes for imported timothy hay in feeding lactating dairy cows.
The objective of this study was to investigate the comparison of feeding a total mixed ration (TMR) containing imported alfalfa hay and TMR containing hot-air dried domestic alfalfa on rumination activity, milk production, and composition in lactating dairy cows. Ten Holstein dairy cows were divided into two groups: control (imported alfalfa hay + TMR) and treatment (hot-air dried domestic alfalfa + TMR) groups. The study was conducted over a total period of 18 days, including a 13-days adaptation period and a 5-days main experimental period. The results indicated no differences in total digestible nutrient and net energy intake between the imported and hot-air dried alfalfa. Body weight was not significantly different between the two groups (p>0.05), however, total feed intake and rumination time were significantly and tendentially higher in the treatment group compared with control group, respectively (p<0.001; p=0.075). Milk yield was not significantly different between the two groups (p>0.05), however, milk fat (kg) and lactose (%) concentration were significantly higher in the treatment group compared with control group (p=0.016; p=0.02). This study confirms that feeding TMR with hot-air dried domestic alfalfa results in no differences of feed intake, rumination activity, and milk productivity. Therefore, it is considered that hot-air dried domestic alfalfa can be used as a substitute for imported alfalfa on lactating dairy cows.
The steamed and freeze-dried mature silkworm powder (SMSP) is developed by the Rural Development Administration (RDA) in 2012. In here, the nutritional components of SMSP produced by rearing white-silk cocoon silkworm, Baekokjam, at high temperatures were compared and analyzed with those produced under optimal temperature conditions of 25°C. The weight of silkworms reared in a high-temperature environment increased compared to that under an optimal condition. However, when the silkworms matured, the difference in weight according to temperature conditions narrowed. As for the growth rate, the 5th instar silkworms grew a day earlier in a high-temperature environment than in an optimal. SMSPs produced in a high-temperature environment showed a difference when comparing the nutritional components with the SMSPs in an optimal condition. Overall, high-temperature-reared SMSPs contained about twice as high carbohydrates and slightly lower protein and fat than the optimal-reared SMSPs. These results show that SMSPs produced in a high-temperature environment have a difference in growth rate and nutritional composition from those produced under an optimal condition.
Dried apple jeonggwa, a traditional Korean dessert, was made using various apple varieties, such as Jonathan, Fuji, and Hongro. After making the dried apple jeonggwa, the physical and sensory properties of the dessert made using different apple varieties were compared. The apple varieties had no differences in moisture content, weight loss, or sugar content. Chromacity differences were observed depending on the varieties, but E was small. Hardness was highest in Jonathan, while resilience was highest in Fuji, but there was no significant difference in hardness. In the sensory evaluation, appearance, color, sweetness, hardness, chewiness, and overall acceptability were highest in Jonathan, while there was no substantial difference among the varieties in terms of flavor, sourness, or adhesiveness.
Silkworms have been developed for food and medicinal purposes, and several silkworm products are commercially available. However, there has been no research on their shelf stability. This study investigated the shelf stability of freeze-dried silkworms during storage at various temperature and humidity conditions, using three lipid oxidation indicators: peroxide, acid, and TBA value. The higher the temperature and relative humidity are, the more significant the three lipid oxidation indicators increase. Among these indicators, the TBA and peroxide values show the highest temperature dependence and humidity dependence, respectively. This study could contribute to the standardization of the shelf life of products made from freeze-dried silkworms.
To safely dispose of highly radioactive spent resin and concentrate waste generated through nuclear power plant operations, it is essential to meet the physicochemical properties requirements of the packages and ensure the accuracy and reliability of radiological characteristics determination. Both spent resin and concentrate are packaged in high-integrity containers (HICs) after drying and are homogeneous waste products generated in the primary system and liquid radioactive waste treatment system. Meeting the physicochemical properties requirements does not appear to be difficult. However, to achieve reliable radiological characterization of high-integrity container packages, it is necessary to take a representative sample and perform accurate radiological analysis. Therefore, this paper discusses the methodology for evaluating the radionuclide inventory of high radioactive resin and concentrate packages, as well as the essential element technology and considerations. For relatively high radioactive resin and concentrate packages, the radionuclide inventory for each package should be evaluated with high reliability through direct radiological analysis of the representative samples collected for each package. This can contribute to the efficient operation of radioactive waste disposal facilities. Radionuclide-specific concentrations directly analyzed for each package will be managed in a database. As analytical data accumulates and direct measurements of high-integrity container package such as the radwaste drum assay system (RAS) become feasible, statistical techniques such as correlation analysis between easy-tomeasure (ETM) nuclides and difficult-to-measure (DTM) nuclides can lead to the development of efficient and reasonable indirect evaluation methods, such as scaling factor and the mean activity concentration method. As for the element technology, a remote representative sampling technique should be developed to safely and effectively take representative samples of highly radioactive materials, including granulated or hardened concentrate waste. Considerations should also be given to determining the sample quantity representing each package, as well as establishing radiation calibration and measurement methods appropriate to the radiation levels of the representative samples.
본 연구는 국내 유통 조미건어포 27건 중 프로피온산, 안 식향산, 소브산 함량을 분석하였다. 식품의약품안전처 식 품공전의 분석 방법으로 GC-FID를 이용하여 프로피온산 을 분석하였고 HPLC-DAD를 이용하여 안식향산과 소브 산을 분석하였다. 그 결과 총 27건 중 프로피온산은 16건 (검출률 59%), 안식향산은 불검출, 소브산은 7건(검출률 26%)이 검출되었다. 조미건어포에서 프로피온산은 ND- 125.10 mg/kg의 농도로 검출이 되었으며 이는 미생물 최 소저해농도 이하의 수치로 보존 효과를 나타낼 수 없는 농도로 보여 의도적으로 첨가되지는 않았을 것으로 사료 된다. 또한, 소브산의 경우 소르빈산 칼륨이 표기된 시료 에서만 검출되었으며 표기된 시료 8건 중 7건에서만 검출 이 되었다. 소브산 검출 시료의 경우 658.18 mg/kg의 농도 까지 검출이 되었으며, 이는 그 사용 기준에 적합한 수치 였다. 본 연구는 향후 조미건어포에 대한 안전 관리를 위 한 기초자료로 사용될 수 있을 것으로 사료된다.
Golden apple snails(GAS) are native to warm regions such as Central and South America and Southeast Asia, and were first introduced as a high-protein food. GAS are omnivorous and have a habit of eating plants submerged in water, so they have been used for eco-friendly weed control in rice fields since 1992. When the GAS was first introduced, it was thought that it would be impossible to overwinter in Korea. However after 2000, overwintering individuals were founded and damage to rice occurred and the development of means to control GAS has been required. In this study, we tested the effectiveness of an eco-friendly pest control agent using Styrax japonicus that grow naturally in Korea. As a result of exposing GAS to S. japonicus fruit powder, a 100% molluscicidal effect was confirmed at 66.7ppm. To investigate the duration of effect, treatment was performed at the same concentration and molluscicidal effect of more than 90% was up to 3 days after treatment. The killing effect of each part of the S. japonicus was compared, and the seed extracts showed no killing effect at all concentrations, while the sarcocarp extracts showed a 100% killing effect up to 33.3ppm, and the fruit extracts showed a 100% killing effect up to 200ppm.
This study was conducted to examine the effect of a diet supplemented with dried Bacillus subtilis culture on broilers' productivity and blood characteristics. Broiler feeding experiments were conducted twice. The diet fed to the control group was supplemented with 0.2% Palm MateⓇ commercially available probiotics (B. subtilis), and the diet fed to the experimental group was supplemented with ThekerⓇ 0.05% dried B. subtilis culture (DBC) in experiment 1, and 0.1% DBC in experiment 2. Treatment was administered for four weeks in both groups. A higher average daily gain was observed in the group treated with 0.05% DBC in experiment 1 compared with the control group, which was significantly higher in the group that received 0.1% DBC in experiment 2 compared with the control group. A higher production index was observed in the groups that received treatment than in the control group and was higher in the 0.1% DBC group than in the 0.05% DBC group. Significantly lower serum triglyceride (TG) was observed with increased DBC content. Although the findings showed no statistical significance, lower total cholesterol (T-C) was observed in the treated group than in the control group. HDL-cholesterol (HDL-C) content showed a significant increase in the DBC-treated groups. A significantly opposite outcome was observed for LDL-cholesterol (LDL-C) content. These findings demonstrated that the atherogenic index (AI) and cardiac risk factor (CRF) decreased in the DBC-treated groups. Significantly lower serum levels of glutamic-oxaloacetic transaminase (GOT: aspartate aminotransferase, AST) and glutamate pyruvic transaminase (GPT: alanine transaminase, ALT) were detected with an increase in DBC content in the treated groups compared with the control groups. To summarize the findings described above, adding ThekerⓇ dried B. subtilis culture to broiler feeds positively improved productivity through weight gain of broilers and the production of healthier functional broilers through the improvement of blood lipids and liver function. It is expected that the findings of this study will be helpful in the effort to increase the profitability of broiler chicken farming and promote human health.
