        In this study, we optimized the coffee extraction conditions for instant coffee production in two stage percolators, which is the most common coffee extractor for instant coffee production. A central composite design was used to build mathematical model equations for response surface methodology (RSM). In these equations, the yield and overall acceptability of the coffee extracts were expressed as second-order functions of three factors, the feed water temperature, draw-off factor (DOF), and extraction time (cycle time). Based on the result of RSM, the optimum conditions were obtained with the use of desirability function approach (DFA) which find the best compromise area among multiple options. The optimum extraction conditions to maximize the yield and overall acceptability over 40% of yield were found with 163℃ of feed water temperature, 4.3 of DOF and 27 minutes of extraction time (cycle time). These results provide a basic data for the coffee extraction conditions for the competitive instant coffee in the industry.

        The purpose of this study was to investigate the effects of emotional-utilitarian motivation on coffee shop selection attribution. Based on a total of 276 samples obtained from empirical research, the results of the survey were analyzed by using SPSS 22.0. The results of this study were as follows. Firstly, the results of exploratory factor analysis of coffee shop selection attribution emphasized service, coffee quality, diversity of menu, atmosphere, convenience, and price. Secondly, the customers showed higher emotional motivation than utilitarian motivation. Thirdly, emotional motivation had a significant effect on perception of ‘service’, ‘coffee quality’, and ‘atmosphere’. On the other hand, utilitarian motivation had a significant effect on ‘service’, ‘diversity of menu’, ‘convenience’, and ‘price’.

        Coffee is one of the most familiar beverages to modern human adults, but its bio-physiological effect has not been clearly elucidated. It was known that more than one thousand chemicals were included in the ordinary coffee extract. Among them, the caffein and chlorogenic acid (caffeoylquinic acids) are most abundant and have been investigated by many authors so far. In order to know the real cellular effect of whole coffee extract elements, the dialyzed coffee extract (DCE)1) was made to get coffee elements less than 1000 Da molecular weight, which are freely absorable through gastrointestinal tract. It was directly treated in the culture of RAW 264.7 cells, a murine macrophage lineage. RAW 264.7 cells were treated with DCE equivalent to 2.5 cups of coffee (DCE-2.5), DCE-5, and DCE-10 for 12 hours, and their protein extracts were examined by histological observation and immunoprecipitation high performance liquid chromatography (IP-HPLC). RAW 264.7 cells differently expressed the proliferation-related proteins depending on the dose of DCE. DCE-2.5 and DCE-5 enhanced the cellular growth of RAW 264.7 cells by increasing the expression of β-actin, PCNA, Ki-67, MPM2, MAX, cMyc, E2F-1, and Rb-1, and by decreasing the expression of MAD and p21. These proliferation-related proteins were rarely affected by DCE-10. DCE-2.5 and DCE-5 induced the cellular proliferation of RAW 264.7 cells by the signaling of E2F-1 and cMyc, respectively, but these cellular effects almost disappeared in DCE-10. Therefore, it was presumed that the low dose of coffee, DCE-2.5 and DCE-5 might be effective for the proliferation of murine macrophages, RAW264.7 cells, contrast to the high dose of coffee, DCE-10. It was also suggested that the low dose of DCE-2.5 and DCE-5 be helpful to increase the innate immunity in vivo by increasing the cell number of macrophages in contrast to the high dose of DCE-10.

        This study aimed to examine the effects of transformational leadership on employees’ trust, perceived support from superiors, organizational citizenship behavior, and moderating effects of locus of control. Using the Amos program, this study tested reliability and fitness of the research model and verified five hypotheses based on empirical data from 233 employee samples in coffee shops. The result of this study shows that positive consideration and charisma of transformational leadership positively influenced employees’ level of trust toward superiors and perceived support from superiors. Trust had positive effects on promotion of organizational citizenship behavior of employees. Lastly, analysis of the moderating effect of locus of control showed that a lower level of extrinsic control and higher level of intrinsic control were both positively correlated with greater receptiveness to transformational leadership. The findings in this study identified several significant factors of employee effectiveness influenced by transformational leadership in the coffee shop industry. Limitations and future research directions are also discussed.

        In order to perform the biological investigation of coffee extract containing different molecules, it would be necessary to develop in vitro experimental system rather than animal experiment. Although the animal experiment treated via oral intake or intravenous injection may disclose the whole systemic effect, the in vitro cell culture experiment would be more convenient to analyze direct cellular effect of coffee extract than animal experiment. Therefore, this study was aimed to develop a dialysis method for the crude coffee extract to perform the biological investigation using murine macrophage cell line, RAW 264.7. First of all, the RAW 264.7 cells treated with dialyzed coffee extract were observed, and subsequently their protein extracts were analyzed by gel filtration chromatography, thin layer chromatography, and immunoprecipitation high performance liquid chromatography (IP-HPLC). Resultantly, it was found that the low dose (20μg/mL) of dialyzed coffee extract, about 5 cups of ordinary coffee drinking for human adult, enhanced the growth of RAW 264.7 cells by increased expression of β-actin and Ki-67, and also induced the anti-inflammatory effect by decreased expression of NFkB, TNFα, and LC3 contrast to the high dose (40μg/mL) of dialyzed coffee extract. The low dose of dialyzed coffee extract produced almost no harmful effect on RAW cell culture for 12 hours, rather than it produced stimulatory effect on RAW cells by increasing the cell number and enhancing the protein expression of β-actin, Ki-67. Therefore, it was thought that the low dose of dialyzed coffee extract is applicable to cell culture experiment without difficult purification procedures of coffee elements. In addition, as the contrast cellular effect between the low and high dose of coffee extract was found in this study, it was also presumed that the low dose of coffee extract may play an important role in the inflammatory reaction of murine macrophages.

        Probiotic functional foods are known to have various functional effects such as intestinal regulation, modulation of immune system, reduction of allergies, and lowering of cholesterol. The purpose of this study was to select probiotic strain that is most suitable for freeze-dried coffee for the development of functional coffee products. The survival rate of probiotics, at drinking condition of coffee, at acid, at bile and after freeze-dried in coffee were measured on 1 strain isolated from commercial freeze-dried coffee, 8 strains used as fermented milk starter, 1 Bifidobacterium and 1 Bacillus coagulans. Bacillus coagulans showed the highest survival rate from 2.4×107 cfu/g to 2.0×107 cfu/g especially after freeze-drying. The results at drinking condition of coffee, at acid tolerance, at bile tolerance and at storage test showed significantly better survival rate of Bacillus coagulans than that of control (Lactobacillus casei). Especially, Bacillus coagulans showed 3.8-fold higher survival rate at acid tolerance (pH 1, 120 minutes) than control. Thus, the lactic acid-producing Bacillus coagulans is characterized as a probiotic strain suitable for functional coffee formulation and commercialization.

        본 연구는 커피를 마시는 대학생들이 커피음용 행동의 의미에 대해 어떻게 지각하고 있는지를 알아보기 위해 수행되 었다. 이를 위해 대학생 15명을 연구 참가자로 선정하여 커피음용 행동의 의미에 대한 아이디어를 산출하고, 그 내용을 바탕으로 69개의 진술문을 도출해냈다. 이후 다차원 척도 분석과 위계적 군집분석을 사용하여 개념도분석을 실시하여 참가자들의 개념적 구조를 확인하였다. 그 결과 대학생들이 지각하는 커피 음용 행동의 의미에 대한 구성 요인으로 7개의 군집이 도출되었다. 각 군집은 ‘개인이 원하는 신체적 효과를 얻기 위한 방법’, ‘사교 활동의 수단’, ‘심리적 위안을 얻기 위한 방법’, ‘공간 활용 및 사적인 시간을 보내기 위한 음용’, ‘습관적 음용 및 카페인의 효과 이용’, ‘커피만의 다양한 특성과 매력을 즐김’, ‘커피의 도시적이고 고급스러운 이미지 선호’로 나타났다. 또한 각 군집을 분류하는 두 가지 차원을 알아본 결과, 커피 내적고려-커피 외적고려 차원과 정서적 요인-물리적 요인의 두 차원을 확인할 수 있었다. 한편 군집별 중요도를 살펴본 결과, 대학생이 커피음용의 행동의 의미로 가장 중요하게 생각하는 요인은 ‘공간 활용 및 사적인 시간을 보내기 위한 음용’으로 나타났다. 마지막으로 연구의 의의 및 후속연구를 위한 제한점을 제시하였다.

        Coffee is one of the most popular beverages all over the world. As the great demand of this product, adulteration coffee are distributed in market mixing fraud materials such as soybean, coffee husk, wheat, rice, corn, malt and barley. But there are no analytical methods for detecting the adulterated coffee. Monosaccharides(mannose, rhamnose, glucose, galactose, xylose, arabinose), trigonelline, nicotinic acid as representative components of coffees can be used as chemical indices to qualitatively and quantitatively assess coffee authenticity. This study carried out on new analytical resources for detection of ground roasted coffee adulteration, investigating model system with roasted soybean, coffee husk, wheat, rice, corn, malt and barley as materials of fraud. It could be concluded that this method was efficient in discriminating different matrixes. Most monosaccharides, trigonelline, nicotinic acids were significant in 5%(w/w) mixed fraud material (p<0.05). These results correspond to monosaccharides, trigonelline, nicotinic acids of pure raw materials, confirming this use as a usefuldetection method of food adulterants in ground roasted coffee.

        This study evaluated the physicochemical quality characteristics of raw and roasted beans of fully washed specialty Bourbon cultivar ofCoffea Arabica“BM 139" from seven of the major coffee growing areas in Rwanda in comparison with a wet processed Typica cultivar from Yirgacheffe, Ethiopia and a dry processed red Bourbon cultivar from Cerrado, Brazil. Tested samples had moisture content between 7.7 and10.2%. Raw coffee from Brazil had the lowest density and darker than samples from other regions. Other samples showed no significant differences in true density. Raw coffee from Kayumbu coffee washing station (CWS), Kamonyi district showed the lowest total phenolic content of 38.4 mg/g solid whereas raw coffee from Nyamyumba CWS, Rubavu district had the highest content of 46.8 mg/g solid. DPPH radical scavenging activity (RSA) ranged from 89.9 to 91.8% and varied little between samples. Raw coffee from Yirgacheffe, Ethiopia showed the highest total titratable acidity of 1.48% as citric acid and totalcaffeoylquinic acidof 82.62 mg/g solid whereas that from Brazil had the highest caffeine content of 18.5 mg/g solid. Raw coffee from Karenge CWS, Rwamagana district was characterized by having the lowest caffeine and trigonelline content (13.4 and 10.3 mg/g solid, respectively). After roasting, there was a drop in most physicochemical characteristics. Raw and roasted coffee samples from Rulindo and Kirorero CWS indicated higher bulk densities which might be due to higher altitudes of these two areas. Caffeine and RSA were not affected by the roasting process. The Brazilian coffee was characterized by higher caffeine content in raw as well as roasted forms. After roasting, coffees from Rwanda were more acidic than Brazilian and Ethiopian coffees. This study revealed that the physicochemical characteristics of the Bourbon cultivar may vary depending on the geographical sub-regions which is due to environmental conditions, processing and agricultural practices.

        The development of nanostructured functional materials derived from biomass and/or waste is of growing importance for creating sustainable energy-storage systems. In this study, nanoporous carbonaceous materials containing numerous heteroatoms were fabricated from waste coffee grounds using a top-down process via simple heating with KOH. The nanoporous carbon nanosheets exhibited notable material properties such as high specific surface area (1960.1 m2 g–1), numerous redox-active heteroatoms (16.1 at% oxygen, 2.7 at% nitrogen, and 1.6 at% sulfur), and high aspect ratios (>100). These unique properties led to good electrochemical performance as supercapacitor electrodes. A specific capacitance of ~438.5 F g–1 was achieved at a scan rate of 2 mV s–1, and a capacitance of 176 F g–1 was maintained at a fast scan rate of 100 mV s–1. Furthermore, cyclic stability was achieved for over 2000 cycles.

        본 연구는 커피부산물의 화장품 소재로서의 활용가능성을 평가하기 위해 커피부산물을 유기 용매인 n-hexane을 이용하여 60(±10)°C에서 24시간동안 교반하며 추출하여 실험을 수행하였다. B16F10 melanoma cell line과 RAW264.7 macrophage cell line에서의 커피박 추출물의 세포독성을 water solubletetrazolium salt-1 assay로 평가하였다. 또한 free radical 소거능을 측정하기 위해 DPPH 법을 사용하여 항산화를 평가하였으며, 항균력 검색을 위해 Staphylococcus aureus, Staphylococcus epidermidis, Escherichia coli, Candida albicans를 이용하였다. 실험결과 B16F10 murine melanoma cells에서 커피부산물 추출물을 처리한 군은 0.125 ~ 2 μl/ml 농도에서, RAW 264.7 macrophage cells 에서는 0.125부터 0.5 μl/ml 농도에서 세포독성을 나타내지 않았다. 항산화 실험 결과 커피박 추출물은 농도 의존적인 DPPH radical 소거능을 보였다. 또한 커피박 추출물의 항균 효능을 측정하기 위해 Paper disc법을 이용하였으며 그 결과 Straphylococcus epidermidis, Straphylococcus aureus, Escherichia coli, Candida albicans에서 각각 11.3±0.4, 12.±0.7, 12.0±0.0, 0.0±0.0 mm의 clear zone을 나타내었다. 이러한 결과는 커피박 추출물의 화장품 소재로서의 가치를 제안할 수 있다.

        The purpose of this study was to investigate the relationship between frequency of coffee consumption, metabolic biomarkers, and nutrition intake in adult participants in the combined 2007~2009 Korean National Health and Nutrition Examination Survey (KNHANES). Subjects (2,095 males and 3,297 females) were classified according to sex and frequency of coffee consumption (≤1 time/month, ≥2 times/month and ≤6 times/week, 1 time/day, 2 times/day, 3 times/day) using food frequency questionnaires. Nutrition intake was analyzed using 24 h recall data. The 3 times/day coffee consumption group had a significantly higher age, and frequency of smokers and drinkers compared to the ≤1 time/month coffee consumption group in both male and female participants. Males in the 3 times/day coffee consumption group had a significantly lower HDL-cholesterol level, but females had a higher waist circumference compared with the ≤1 time/month coffee consumption group. Males in the 3 times/day coffee consumption group had a significantly lower nutrient density of fiber, vitamin B2, vitamin C, calcium and phosphorus compared with the ≤1 time/month coffee intake group. Females in the 3 times/day coffee consumption group had a significantly higher nutrient density of fat and niacin, but lower nutrient density of carbohydrate, calcium, phosphorus, and iron compared with the ≤1 time/month coffee intake group. In males, the frequency of coffee consumption was not associated with the levels of metabolic biomarkers. In females, the frequency of coffee consumption was positively associated with diastolic blood pressure after adjustments for multiple confounding factors, including age, BMI, smoking status, alcohol consumption, physical activity and energy intake. Coffee consumption was associated with decreased diastolic blood pressure in females. These findings suggest the importance of an awareness of the association between coffee consumption and metabolic risk.

        The effect of roasting intensity and extraction time of coffee bean on the antioxidant activity of roasted ground coffee extract was investigated. Coffee was roasted at 185oC using a rotating fluidized bed roaster for 5.17 (medium roasting) and 6.00 (dark roasting) min, respectively. Both roasted coffees were extracted in 90oC hot water according to the increased extraction time. Until 20 min, an increase in extraction time significantly increased soluble solute, caffeine, brown color, and phenolic compound. The soluble solid and caffeine contents showed no significant difference among medium- and dark-roasted coffee extracts. The brown color intensity and free radical scavenging activity of dark-roasted coffee extract were higher than those of medium-roasted coffee. On the contrary, the total phenolic content of dark-roasted coffee extract was lower than that of medium-roasted coffee. The free radical scavenging activity of coffee extracts showed a positive correlation with brown color intensity, as well as total phenolic content.

        This study was designed to develop and to qualify a coffee alternative beverage using a mixture of coffee beans and roasted black beans (Rhynchosia nulubilis). Therefore, the total isoflavone content (TIC), total phenol content (TPC), antioxidant activity, anti-inflammatory activity, NFATc1 (Nuclear factor of activated T-cells c1) expression in RANKL (receptor activator of nuclear factor kappa-B ligand)-stimulated RAW264.7 cells and sensory evaluation were measured for 5 different Cb (coffee bean)-RoS (roasted seomoktae) mixture extracts (Cb100RoS0, Cb75RoS25, Cb50RoS50, Cb25RoS75, and Cb0RoS100). Cb0RoS100 had the highest TIC (516.83±36.61 mg/100 g) and TPC (18.11±1.77 mg TAE/100 g) along with the highest antioxidant activity as measured by DPPH radical scavenging activity (73.55±8.11%) and ABTS radical scavenging activity (63.27±7.27%). Also, Cb0RoS100 showed the highest anti-inflammatory activity as measured by NO production (13.57±2.21 μM) and PGE2 production (3.25±0.21 ng/mL). The more the RoS ratio was increased in the mixtures of Cb-RoS, the more the NFATc1 protein expression was decreased in RANKL-stimulated RAW264.7 cells. In case of sensory evaluation, Cb50RoS50 had the highest scores for flavor, delicate flavor and overall quality, which were similar to those in Cb alone (Cb100RoS0). We suggest that the use of RoS replacement instead of Cb in/as a coffee alternative beverage may help to reduce the risk of caffeine-related bone loss and/or bone disease by effectively blocking NFATc1 expression in RANKLstimulated RAW264.7 cells compared with Cb alone.

        Recently, increased caffeine intake has led to an increase in caffeine addiction and withdrawal symptoms. Coffee is surreptitiously consumed in as an additive to milk and caramel. There are few studies on how coffee affects the health of modern people. The purpose of this study is to determine the efficacy and side effects of coffee by awareness of coffee consumption patterns among college students, who are the principal consumers. A survey was conducted from May 11 to 17, 2015 and 302 questionnaires were analyzed. The respondents were 140 men (46.4%) and 162 women (53.6%). In terms of coffee additives, 151 (50.0%) respondents chose ‘americano’ and 111 (36.8%) ‘variation’. The frequency of coffee intake and sleep time for college students was negatively correlated, with the correlation coefficient of -0.145 and significance probability of 0.019. The group that was ‘positively’ aware of the principal ingredients of coffee had a higher level of academic training than those with ‘negative’ awareness (p=0.000). Women recognized a larger number of side effects than men: 1.99 and 1.36, respectively, on average (p=0.001). ‘Time for consumption’ had statistically significant effects on the side effects of coffee consumption: consumption before/after lunch, before/after supper and before going to bed led to 0.4 times (p=0.048) and 0.3 times (p=0.023) more side effects, respectively, than consuming coffee after getting up and before/ after breakfast. Excessive caffeine intake through coffee led to limited sleep time and poorer learning concentration. The guidelines for proper coffee consumption should be created to help students consume coffee properly so that it will not affect sleep, learning concentration or adversely affect health.

        Kang Yoon-hee. 2016. “Language and the Senses: An Ethnographic Case Study of Coffee Flavor Terms in South Korea”. The Sociolinguistic Journal of Korea 24(1). 01~36. This paper explores the relations between language and the senses, by analyzing how people conceptualize and verbalize their sensory experiences of coffee flavors in the contemporary South Korean society. It first examines various linguistic descriptors for coffee flavors in the lexical level, of which acquisition is often associated with the speaker’s increased capacity to discern and express their sensory experiences of coffee tastes and aromas. It also illustrates the ways in which the sensory perceptions of coffee flavors are expressed across different modalities, as shown in the examples of the synesthetic expressions of visual images of coffee and the spatial constructions of its flavors. Specific qualities of coffee flavors are also identified with some attributes and activities of their consumers, which are often extended to index the consumers’ specific social identities. Therefore, this paper demonstrates the crucial roles that language plays in mediating between the individual and subjective dimension of sensory expressions and their social and cultural meanings in various social contexts.

        To enhance the physiological activities of roasted coffee (RC), 30 kinds of green coffee beans (GCB) with different cultivating areas and varieties were fermented with Monascus ruber mycelium (MR) by solid-state culture. After the dried MR-fermented GCB was subjected medium roasting, each RC was extracted with hot-water. Among the hot-water extracts, the highest yield was the hot-water extract of RC from MR-fermented Indonesia Mandheling GCB (15.5%). However, the hot-water extract of RC from MR-fermented Ethiopia Sidamo GCB showed significantly higher polyphenolic contents (3.08 mg GAE/100 mg) and ABTS free radical scavenging activity (25.41 mg AEAC/100 mg). Meanwhile, the hot-water extract of RC from MR-fermented Vietnam Robusta GCB showed not only the effective inhibition of TNF-α level (73.7% inhibition of LPS-stimulated control) from LPS-stimulated RAW 264.7 cells but also significant inhibition of lipogenesis (63.5% inhibition of lipid differentiation control) in 3T3-L1 pre-adipose cells. In conclusion, these results suggest that roasted coffees from Ethiopia Sidamo and Vietnam Robusta green coffee beans fermented with Monascus ruber mycelium using solid-state culture could have industrial applications as functional coffee beverages.

        In this study, coffee waste was extracted with different solvents such as ethyl acetate, methylene chloride and methanol to investigate the total polyphenol contents, electron donating ability and the inhibitory effect on glutathione S-transferase. The total polyphenol contents were 3,060.61±357.12 μg GAE/mL in ethyl acetate, 909.09±35.71 μg GAE/mL in methylene chloride, and 1,602.27±30.36 μg GAE/mL in methanol. The total polyphenol contents showed a significant difference (p<0.05) between the solvents. The electron donating ability was 80.20±1.45% for ethyl acetate, 81.94±0.45% for methylene chloride, and 85.14±1.53% for methanol. The electron donating abilities were significantly different (p<0.05) between the solvents. The inhibitory effect of the various extracts on glutathione S-transferase (% inhibition) was 92.12±0.56%, 88.48±0245% with methylene chloride extract, and 90.85±0.14% with methanol extract. These too were significant different (p<0.05) between the solvents. The two portions of coffee waste extracts obtained from ethyl acetate and methanol showed meaningful results on the total polyphenol contents, and the inhibition effects on glutathione S-transferase. Therefore, they can be utilized to develop health care foods and can be applied as antioxidants for cosmeceuticals.

        2014년 서울시에서 유통 되고 있는 볶은 원두커피 50건에 대하여 pH, 총산도, 납,카드뮴, 카페인, 총 폴리페놀 함량을 분석하였다. pH는 4.72~5.25의 범위에서 평균 4.99를 나타내었고, 배전정도에 따른 pH는 약배전 4.85, 중배전 4.98, 강배전 5.07로 나타났다. 총산도는 평균 1.59%였으며 최소 0.72%에서 최대 2.25%였다. 배전정도에 따른 총산도는 약배전 1.75%, 중배전 1.56%, 강배전 1.39%로 나타났다. 납, 카드뮴 평균 함량은 각각 0.0112 mg/Kg, 0.0011 mg/Kg 이었으며 납 함량은 최소 불검출에서 최대 0.0535 mg/Kg 이었고. 카드뮴 함량은 최소 0.0010 mg/Kg 에서 최대 0.0069 mg/Kg 이었다. 배전정도에 따른 납 함량은 약배전에서 0.0690 mg/Kg, 중배전에서 0.0195 mg/Kg, 강배전에서 0.0129 mg/Kg로 나타났다. 카드뮴의 함량은 약배전에서 0.0005 mg/kg, 중배전에서 0.0017 mg/kg, 강배전에서 0.0032 mg/kg로 나타났다. 시료의 평균 카페인 함량은 12.29 mg/mL이었으며, 최소 0.51 mg/mL 최대 20.28 mg/mL의 함량을 나타내었다. 배전 정도에 따른 평균 카페인 함량은 약배전일 때 12.00 mg/mL, 중배전일 때 12.39 mg/mL, 강배전일 때 12.48 mg/mL을 나타내었다. 생산 국가별로 카페인 함량은 이탈리아 커피의 카페인 함량 평균이 15.58 mg/mL로 가장 높게 나타났고, 미국산 커피의 카페인 함량 평균이 11.02 mg/mL로 가장 낮게 나타났다. 시료의 평균 총 폴리페놀 함량은 31.94 mg/mL이었으며, 최소 18.88 mg/mL 최대 43.90 mg/mL의 함량을 나타내었다. 배전 정도에 따른 총 폴리페놀 함량은 약배전 일 때 평균 함량이 34.60 mg/mL로 가장 높게 나타났고, 강배전일 때 평균 함량이 29.72 mg/mL로 가장 낮게 나타났다. 생산 국가별 총폴리페놀 함량 평균이 37.75 mg/mL로 가장 높게 나타났고, 브라질 커피의 총 폴리페놀 함량 평균이 27.84 mg/mL로 가장 낮게 나타났다.
