        As the number of households with pets has increased worldwide, there is a growing trend of accepting pets as family members. Consequently, the pet food market has seen the emergence of concepts such as “human-grade,” “raw (PMR and BARF),” and “no synthetic additives” pet food. These concepts not only fulfill essential nutrients but also consider the health and habits of pets, a crucial aspect that should be at the forefront of our work. However, these types of pet food are prone to microbial contamination and component alterations caused by heat. Current studies and products have recently been developed overseas to apply non-thermal sterilization technologies to pet food commonly used in the food industry. In contrast, the domestic standards for non-thermal sterilization in pet food are insufficient. Therefore, a comprehensive review of non-thermal sterilization technologies, such as high-pressure processing (HPP), radiation, and plasma predominantly applied in the international pet food market, is deemed necessary. This review is expected to provide guidelines for non-thermal sterilization standards in domestic pet food, thereby laying the foundation for the safe production of raw pet food.

        The consumption of enoki mushrooms has been associated with cases of listeriosis produced by Listeria monocytogenes, highlighting the significance of sanitizing food-contact surface, such as the velcro used in welding processing of enoki mushrooms, to ensure microbial safety. We investigated the inhibitory activity of nine chemical disinfectants at regular concentrations against L. monocytogenes isolated from a mushroom farm environment. The bacterial suspension was prepared in phosphate buffered saline and mushroom extract broth and inoculated onto the velcro surface. After inoculation, most disinfectants reduced the initial 8 log CFU/coupon concentration by less than 2 log CFU/coupon during a 5-min treatment. Slightly acidic hypochlorous water showed a reduction of approximately 4 log CFU/coupon when tested for more than 30 min at the maximum allowable concentration of 200 mg/L. Sodium hypochlorite solution showed a reduction of approximately 5 log CFU/coupon when used at 100 mg/L for 60 min. Peracetic acid, at the maximum allowable concentration of 300 mg/L, showed the most effective reduction of 5 log CFU/coupon or more when the surface was treated with 37.5 mg/L for 30 min. These results indicate that peracetic acid can be used as the disinfectant strategy to control cross-contamination of L. monocytogenes on the velcro surface of plastic wrappers used in the welding processing of enoki mushrooms.

        To suppress mold generation of yujacheong, Penicillium chrysogenum LB31 was cultured, and spores were harvested and put into yujacheong. Antioxidant activity, useful ingredients, mold size and incidence were investigated while storing yujacheong for 30 days, after sterilization with different methods (nontreatment, ozone gas emission, heating after ozone gas emission and heating). The results showed that the content of narirutin, naringin, hesperidin, or neohesperidin, which are functional components of yuzu, increased as the storage period increased in all the treatment units. In addition, mold generation was not observed until the 15th day in the heat treatment group after ozone gas emission. As the treatment group emitted ozone gas. molds of 34.8 and 112 mm2 in size were observed on the 30th day. These results suggested that ozone sterilization can prevent microbial contamination, further extending the shelf life of yuzacheong and maintaining a fresh state.

        The purpose of this study was to investigate the effects of sterilization, storage period and washing yuzu, according to the washing method, during the storage period. The results showed that the fungus size increased as the storage period increased, and no mold occurred in the yuzu washed with ozone water until 20 days. After 30 days of storage, a mold of 124.1±13.9 mm2 was observed. The no-treatment sample had a fungus of 814.5±72.8 mm2 in size on day 0 and the fungus the largest fungus was 6,362±636.7 mm2 on day 30. In the case of water treatment, the fungus was 286.4±31.5~4,836.4±484.6 mm2 in size. The results of the study confirmed that washing yuzu with ozone water has a sterilizing effect.

        Some plant pathogenic bacteria species are environmentally high-risk organisms that have a negative impact on agricultural production. Experiments with these pathogens in a biosafety laboratory require safety protocols to prevent contamination from these pathogens. In this work, we investigated the efficacy of using UV-C irradiation for the purpose of sterilizing an important plant pathogenic bacterium, Erwinia pyrifoliae, in a laboratory setting. For the test, the pathogen (1.71 × 108 CFU/ml) was inoculated on the surface of Potato Dextrose Agar (PDA) and the inoculated media were placed on a work surface in a biosafety cabinet (Class 2 Type A1) as well as on three different surfaces located within the laboratory: a laboratory bench, a laboratory bench shelf, and the floor. All the surfaces where the media were placed were in range of the UV-C beam projected by the UV lamp installed in the ceiling of the BSL 2 Class biosafety laboratory. Measurements of the reduction rate of bacteria under UV-C irradiation were conducted at different time intervals: after 10 minutes, 30 minutes, 1 hour, 2 hours, and 3 hours, respectively. The reduction rate of bacteria ranged from 90% to 99% after 10min irradiation, from 97.8% to 100% after 30 minutes of irradiation, from 99.1% to 100% after 1 hour of irradiation, and from 99.99% to 100% after 2 hours of irradiation. After 3 hours of irradiation, the pathogen was completely killed in all the test conditions. In the cases of the laboratory bench and the shelf of the laboratory bench, the effectiveness of UV-C irradiation differed slightly between the site where the bacteria located vertically under the lamp and the site where the bacteria were located 1 meter away horizontally from the site under of the lamp.

        본 연구에서는 자외선 살균기의 미생물 오염 상태를 분 석하고 위생관리 방안을 제시하고자 하였다. 본 실험에 사 용된 자외선 살균기는 전라남도 소재 일부 보육시설 98곳 의 자외선 살균기를 대상으로 하였다. 일반세균 및 대장 균군은 식품공전 미생물 시험법에 따라 실험하였다. 일반 세균은 98개 보육시설 중 67개소(68.4%), 대장균군은 5개 소(5.1%)에서 검출되었다. 식중독세균 실험 결과 Salmonella spp. 등 6종의 식중독세균은 검출되지 않았지만 B. cereus 는 98개 보육시설 중 1개소(2.8%)에서 검출되었다. 자외선 램프 교체 주기에 따른 일반세균 검출율은 3개월 이내 가 6개 보육시설 중 3개소(50%), 3개월 이상 6개월 이내 가 5개 보육시설 중 3개소(60%), 6개월 이상이 87개 보육 시설 중 61개소(70.1%)로 나타났다. 대장균군 검출율은 6 개월 이내에는 검출되지 않았으나 6개월 이상이 87개 보 육시설 중 5개소(5.7%)로 나타났다. 자외선 살균기의 미 생물 오염도는 램프 교체 주기가 길어질수록 미생물 오염 도가 높게 나타났다. 또한 자외선 램프 교체 주기가 6개 월 이상인 87개 보육시설 중 23개소(26.4%)의 자외선 살 균기 반사판에는 물기가 있고 청소상태가 불량한 것으로 나타났다. 이러한 결과를 종합해 볼 때 보육시설에서 사 용 중인 자외선 살균기의 위생관리를 위해 주기적인 청소 와 자외선 램프 교체가 필요한 것으로 판단된다. 또한 보 육시설 급식담당자들에게 자외선 살균기 청결과 램프 교 체에 대한 지속적인 교육이 필요할 것으로 판단되었다.

        Despite the consumption of disinfectants have been increased by COVID-19 pandemic, the fate of the chemicals in aquatic food webs are still unclear. In order to understand the trophic transfer of the chemicals, the concentration of disinfectants including six benzalkonium chloride (BACs) and five didecyldimethylammonium chlorides (DDACs) were measured at the Geum (2020), Han (2021), and Yeongsan River (2021), before and after rainfall. The highest concentration of ΣBACs (mainly C12 and C14) and ΣDDACs (mainly C10 and C14) were observed in the Han River, followed by Yeongsan River, Geum River Estuary, and Gapcheon. After rainfalls, both concentration and detection frequency were decreased in all sites. Although the BAC and DDAC seems to be accumulated in organisms, they were bio-diluted rather than magnified in the aquatic food web with the biomagnification factor (BMF) of less than 1, trophic magnification slope (TMS) from - 0.236 to 0.001, and trophic magnification factor (TMF) from 0.85 to 1.01.

        플루옥사스트로빈은 Strobilurus 속의 버섯에서 추출한 천 연물을 기반으로 개발된 살균제로서 곰팡이성 질병 방제에 효과적이다. 잔류물의 정의는 유럽(EU), 미국(EPA), 일본 (JFCRF)에서는 플루옥사스트로빈과 플루옥사스트로빈 Z 이 성질체의 합으로 정의하고 있으며, 감자, 대두 등 90품목 에 대하여 0.01-60 mg/kg으로 잔류허용기준이 설정되어 있 다. 코덱스(CODEX)와 국내에는 잔류허용기준이 설정되어 있지 않음에 따라 본 연구에서는 추후 국내·외 수입 및 재 배 농산물 중 플루옥사스트로빈에 대한 잔류허용기준 준수 여부 확인을 위한 시험법을 개발하고자 하였다. 전처리 과 정은 플루옥사스트로빈의 물리·화학적 특성을 고려하여 QuEChERS법을 이용한 추출 및 정제방법으로 최적화하였 으며, LC-MS/MS를 이용하여 시험법을 개발하였다. 추출 용매는 아세토니트릴로 하고, MgSO4 및 PSA를 이용하여 정제과정을 확립하였다. 대표 농산물 5종에 대해 0.01, 0.1 및 0.5 mg/kg의 처리농도로 실험을 진행한 결과, 플루옥사 스트로빈 및 플루옥사스트로빈 Z 이성질체의 결정계수(R2) 는 0.998 이상이고 플루옥사스트로빈의 평균 회수율(n=5) 은 75.5-100.3%, 플루옥사스트로빈 Z 이성질체는 75.0- 103.9%이었다. 상대표준편차는 플루옥사스트로빈이 5.5% 이하, 플루옥사스트로빈 Z 이성질체가 4.3% 이하로 확인 되었다. 또한 시험법의 유효성을 확인하기 위해 외부 실험 기관인 광주지방식품의약품안전청과의 실험실간 검증을 진 행하였으며, 검증 결과 두 실험실간의 회수율은 플루옥사 스트로빈의 경우 80.3-101.4%, 플루옥사스트로빈 Z 이성질 체는 80.2-105.0%이었고, 상대표준편차는 모두 18.1% 이하 로 정확성 및 재현성이 우수함을 확인할 수 있었다. 따라 서 본 연구 결과는 CODEX 가이드라인(CAC/GL 40-1993, 2003) 및 식품의약품안전평가원의 가이드라인(MFDS, 2016) 에 만족함에 따라 공정시험법으로 활용 가능할 것이다.

        Low alcohol (6%) wines were manufactured using Campbell Early. To develop the sterilization process of low alcohol wines, red wines were heat sterilized, and rose wines were nonthermal sterilized by concentration using potassium metasulfite and potassium sorbate. Samples were stored at 25℃ and quality characteristics were investigated by period. Results of this study revealed the pH of the samples after sterilization ranged from 3.15 to 3.19, and the total acidity of wines ranged from 0.011 to 0.024%. The free SO2 contents of wines ranged from 13.00 to 29.678 mg/L, and the total SO2 contents of wines ranged from 47.50 to 121.00 mg/L. L (lightness) of wines decreased whereas a (redness) and b(yellowness) increased. The hue value of wines ranged from 0.52 to 1.03, and decreased significantly(not including rose sweet wines). The color intensity of red and rose dry wines after sterilization increased, whereas red and rose sweet wines decreased. The DPPH radical scavenging activity of red wines and rose wines ranged between 75.50 to 89.23%, and 36.60 to 56.54%, respectively. The total polyphenol contents were 57.51~182.63 mg%. Results of this study provide scientific information to establish the sterilization process of low alcohol wines.

        In this paper, numerical simulations were conducted to secure both flow distribution and uniform flow discharge through a wall mount type air sterilizer. In order to increase the reliability of the simulation results where there is no well-known validation case for air sterilizer, mesh sensitivity study was performed under the constraint that y+ set to one for k-w SST turbulent modeling for both the air sterilizer and the fan. The installation of various guides and structures was reviewed in the point of flow distribution and pressure drop inside the sterilizer, and the exhaust pressure conditions were predicted to secure uniform flow discharge at outlets. This study has been done based on the computational analysis during the development stage of the air sterilizer, and the results will be verified through physical testing after production of prototype.

        In this study, we compared the microbial reduction effects of drying, hot water, and microwave sterilization in scourers and dishcloths to suggest a most suitable sterilization method. Three scourer types (silver, copper, and mesh) were used, and three dishcloth types (silver, bamboo, and cotton) were used. Drying time dependent reduction in Escherichia coli was high in silver and copper scourers, but minimal bacterial reduction was obtained against Bacillus cereus in all scourers and dishcloths. In scourers, E. coli was not detected after ≥30 s of hot water sterilization at 77oC, and B. cereus was not detected after ≥60 s of hot water sterilization at 100oC. In dishcloths, E. coli was not detected after hot water sterilization at 77oC for ≥30 s, but B. cereus was detected after hot water sterilization at 100oC for ≥60 s. In scourers, E. coli was not detected after microwave sterilization at 700 W for 3 min, but B. cereus was detected. In dishcloths, E. coli was not detected after microwave sterilization with 700 W for ≥1 min, but B. cereus was detected in the cotton dishcloth even after sterilization for 3 min. In conclusion, the use of antimicrobial scourers (silver and copper) and dishcloths (silver and bamboo) are not sufficient to reduce the microbial contamination. The guideline provided by the Ministry of Food and Drug Safety suggesting dishcloth sterilization via hot water at 100oC for 30 s was also found to be insufficient. Based on our research, we suggest that the most effective methods of microbial management are submerging scourers in hot water at 100oC for ≥1 min, and sterilizing dishcloths for ≥3 min using a 700 W microwave.

        본 연구에서는 병원균인 Bacillus cereus, Staphylococcus aureus, Salmonella Typhimurium 그리고 Escherichia coli O157:H7을 이산화염소수와 전해수에 0분, 2분, 4분, 6분, 8분 및 10분간 반응시켜 이산화염소수와 전해수의 살균 효과를 확인하고, 그람 양성균(B. cereus, S. aureus)과 그 람 음성균(S. Typhimurium, E. coli O157:H7)의 민감성 비 교를 실시하였다. B. cereus, S. aureus, S. Typhimurium 그 리고 E. coli O157:H7의 이산화염소수에서의 D값은 1.85±0.64, 2.06±0.85, 2.26±0.89 그리고 2.59±0.40분으로 나 타났고 전해수의 경우 각각 2.13±0.32, 1.64±0.64, 1.71±0.32 그리고 1.86±0.36분으로 나타났다. 각 용액에 처리한 10분 간 모든 균주에서 꾸준한 감소 추세를 나타내었으며 각 용액에서 각 균주의 D값은 서로 유의적인 차이는 보이지 않았다 (P>0.05). 이산화염소수와 전해수의 살균력을 비교 한 결과 D값은 유의적인 차이가 나타나지 않았으나, pH 와 유효염소농도 모두 이산화염소가 전해수보다 낮은 값 을 보였다. 살균·소독을 실시할 대상의 pH에 대한 민감성 과 같은 특성을 고려하여 최적의 살균제를 선택하고, 최 적의 농도를 결정하여 식품 산업에 적용하기 위한 자료로 활용될 것으로 기대된다.

        세균은 분리막, 식품 포장 필름 및 바이오 의료 기기와 같은 다양한 미생물 막의 표면 위에서 자란다. 미생물 막 의 성장은 엑소폴리사카라이드의 복잡한 구조 형성과 밀접한 관련이 있다. 미생물 막이 항균제의 대량 수송의 어려움으로 성 장하게 될 경우 항균효과는 급격하게 감소한다. 항균 활동을 활성화하기 위해서 막의 표면은 살균 특성이 있는 기능성 물질 들로 변형, 코팅 또는 고정한다. 한 가지 아이디어는 막 표면에 양전하 이온을 도입하는 것이다. 양전하 이온인 4차 암모늄 그룹의 존재는 마그네슘이나 칼슘같이 세균 세포벽에 존재하는 2가 금속이온을 대체할 수 있다. 세포막 파괴의 효능은 표면 환경에서 사용 가능한 작용제들의 이동성에 달려있다. 이 리뷰에서는 4차 암모늄 그룹, 헬라민(helamine), 쌍성이온(zwitter ion)과 같이 여러 살생물제를 포함하고 있는 막들을 다룬다.
