        본 연구는 소비자위해감시시스템(Consumer Injury Surveillance System, CISS)과 1372 소비자상담센터를 통 해 수집된 건강기능식품 관련 위해 사례를 분석하여, 소 비자가 겪는 부작용 및 불만 사항을 심층적으로 검토하였 다. 연구 결과, CISS를 통해 수집된 461건의 위해 사례는 주로 중장년층과 어린이·청소년층에서 많이 발생했으며, 가장 빈번하게 보고된 부작용은 피부 발진, 복통, 구토와 같은 신체 반응이었다. 특히, 50대와 10대 미만에서 부작 용 발생률이 높아, 이들 연령대에 대한 철저한 관리와 주 의가 필요함을 시사하였다. 또한, 홍삼, 유산균, 프로폴리 스 등에 대한 부작용 사례가 다수 보고되어, 제품의 판매 량에 영향이 있을 수 있으나, 해당 제품을 섭취하는 소비 자들에 대한 세심한 정보 제공과 주의가 요구됨을 확인하 였다. 부작용 중에서 가장 높은 비율을 차지한 것은 복통, 구토, 두드러기와 같은 피부 및 소화기관 관련 증상이었 으며, 이는 제품 섭취 전에 부패·변질 여부를 확인하는 것 이 중요함을 강조한다. 1372 소비자상담센터에 접수된 907 건의 상담사례 중 549건은 안전 문제와 관련되었고, 313 건은 표시·광고와 관련된 불만 사항이었다. 특히, 표시·광고와 관련된 불만은 제품 표시의 불충분함과 광고 내용의 신뢰성 부족에서 기인하였으며, 이는 소비자들이 제품 정 보를 정확히 얻지 못함으로써 발생하였다. 이에 대한 해 결책으로 제품 표시와 광고에 대한 규제 강화와 소비자 교육이 필요하다.

        본 연구는 울산광역시 유통 과채류 가공식품의 잔류농 약 오염도를 모니터링하여 소비자의 안전성을 평가하기 위해 수행하였다. 울산광역시 소재 대형마트와 온라인 쇼 핑몰을 통해 유통되고 있는 과일 및 채소 가공식품 120건 (과일류 58건, 채소류 62건)에 대해 잔류농약(401종)을 분 석하였으며, 검출률은 32.5%(39건)이었고, 총 48종의 농약 검출을 확인하였다. 한편, 2022년부터 2024년까지 울산광역시 보건환경연구 원(농수산물검사소)에서 수행한 비가공 농산물의 잔류농약 검출률과 비교했을 때, 과일 및 채소 가공식품의 검출률 은 60-70% 수준이었다. 또한 검출된 농약의 검출량은 모 든 시료에서 원료 농산물에 대한 한국 기준의 20% 미만 수준이었고, 위해도(%ADI) 평가 결과 0.0003-0.7658%로 모두 안전한 수준인 것으로 확인되었다. 본 연구는 가공식품과 일반 유통 농산물의 잔류농약 검 출률 및 검출 수준을 비교함으로써, 가공식품에서도 잔류 농약 관리가 필요함을 실증적으로 제시하였다. 다만, 조사 한 가공식품 검체의 수량 및 종류가 제한적이고, 비가공 농산물에 대한 자료는 울산광역시에 유통되는 농산물에 국한된 자료라는 점에서 한계가 있다. 따라서, 향후 연구 에서는 가공식품 검체를 더 많이 확보하고, 비가공 농산 물에 대한 자료는 전국 수준에서 수집하여 보다 정밀한 모니터링이 이루어질 필요가 있다고 사료된다.

        Sixty dried agricultural products were collected from February to July 2024. Among these, 16 samples were randomly purchased from large supermarkets and local markets in Gwangju, and 44 were obtained from online marketplaces. Only products labeled with phrases such as “No Food Additives” or “100% Raw Ingredients” were selected for analysis. The aims of this study were to determine the concentrations of sulfur dioxide, preservatives, artificial colorants, and toxic heavy metals (lead and cadmium) in dried agricultural products, assess their risk indices, and provide foundational data to establish relevant regulatory standards. The results revealed that sulfite compounds were detected in some samples, with the highest sulfur dioxide concentrations found in gourds (82.99- 1046.95 mg/kg), apricots (10.87-529.45 mg/kg), and konjac powder (23.59-475.92 mg/kg). The highest sulfur dioxide risk index was observed in persimmons, with values ranging from 4.74% to 16.61% for male and 6.26% to 26.84% for female consumers. Sweet potatoes followed, with risk index values of 6.87% and 11.29% for male and female consumers, respectively. All the samples exhibited sulfur dioxide risk indexes below 100%, indicating safety. No preservatives or artificial colorants were detected in any of the samples, suggesting that sulfites can be used as alternatives to preservatives in certain products. The concentrations of lead in dates (9.55-137.09 μg/kg) and gourds (10.76-49.14 μg/kg) and cadmium in gourds (16.36-51.76 μg/kg) were within safe limits, with risk indexes below 100%. This study provides crucial baseline data for evaluating the safety of dried agricultural products. Furthermore, it underscores the need for more comprehensive risk assessments that consider the interactions between sulfur dioxide, heavy metals, and consumption patterns. Lastly, it highlights the necessity of strengthening regulatory standards to better protect consumers.

        Salmonella spp.는 식중독의 주요 원인균으로, 신속하고 정확한 검출 방법이 요구된다. 본 연구에서는 간소화된 direct multiplex real-time PCR 방법인 FS Finder SL키트 의 분석법 활용 가능성을 평가하고, 평판배지법과의 검출 성능을 비교하였다. 또한, real-time PCR의 검출 효율을 평 가하기 위해 FS Finder SL 키트에서 제공하는 세 가지 전 처리 방법(Method 1, 2, 3)을 비교 분석하였다. 실험 결과, 세 가지 전처리 방법을 이용한 direct multiplex real-time PCR 방법은 Salmonella spp.를 100% 검출할 수 있었으며, Ct 값 비교를 통한 통계적 분석에서도 세 방법 간 유의한 차이가 없는 것으로 나타났다(P>0.05). 반면, 선택 배지를 이용한 검출에서는 2 log CFU/g 이상으로 접종된 샘플에 서만 Salmonella spp.가 검출되었으나 real-time PCR법의 경우 0-3 log CFU/g 범위의 샘플에서 모두 검출이 가능 하였다. 또한, 실험에 사용된 세 가지 즉석섭취식품군(알 가공품, 닭가슴살 제품, 편의점 도시락)에서 자연균총의 영 향을 평가한 결과, 도시락 샘플의 일반세균수가 3.56±0.18 log CFU/g으로 가장 높았으며, 알가공품과 닭가슴살 제품 에서는 검출되지 않았다. 결론적으로 FS Finder SL 키트 를 활용한 real-time PCR 방법은 기존의 평판배지법보다 높은 검출 감도를 보였으며, 검출까지의 소요 시간을 대 폭 단축할 수 있었다. 특히, 복합적인 식품 매트릭스에서 도 신속하고 정밀한 검출이 가능함을 확인하였다. 본 연 구는 즉석섭취식품 중 Salmonella spp. 검출을 위한 효율 적인 direct multiplex real-time PCR 분석법의 적용 가능 성을 제시하며, 향후 식품안전 관리 시스템에서 활용될 수 있는 기초 자료를 제공한다.

        This study analyzed the changes in sodium content across different types of kimchi over various storage periods, distinguishing between solids and seasoning (liquid), to better estimate actual sodium intake and improve the food composition databases. Six types (baechu-kimchi, oi-sobagi, buchu-kimchi, baek-kimchi, dongchimi, and nabak-kimchi) were analyzed using ICP-AES. The results were compared with salinometer readings, food composition databases, and nutrition labels from commercial products. Statistical analyses included the Mann-Whitney U test and the Kruskal-Wallis test (=0.05). The findings showed that the seasoning had significantly higher sodium content than the solids and, except for baechu-kimchi and nabak-kimchi, accounted for more than 50% of the total sodium content. Sodium content varied across kimchi types and changed over storage time. Additionally, sodium content measured by ICP-AES significantly differed from those in the food composition databases and commercial nutrition labels, which often over or under-estimated values. Moreover, sodium content in commercial kimchi products exhibited up to a 581-fold difference between the minimum and maximum values. These results suggest that current databases and labeling systems, which do not distinguish between solids and seasoning, may misrepresent the actual sodium intake. Further research and regulatory measures are needed to improve sodium estimation and consumer guidance.

        This study aimed to investigate associations of consumption pattern of convenience food with related factors among college students. A total of 583 college students (211 males and 372 females) residing in Chungbuk participated in a questionnaire survey in December 2019. Female students reported that they spent more time using smartphone (p<0.001) and had higher smartphone dependency (p<0.01) than male students. As for the time to use convenience food, significantly higher (20.9%) of male students used it for late night snacks and 55.4% of female students used it for lunch (p<0.001). More than 30% of subjects were ‘Not nutritious’ about the concern of convenience food, showing no significant difference between males and females. Male students had higher consumption frequencies of ramyeon (p<0.05), fast food (p<0.01), water (p<0.001), lunch box (p<0.001), instant Guk/Tang (p<0.05), hamburger/sandwich (p<0.05), salad (p<0.05), and raw food (p<0.05). Female students had a higher consumption frequency of sweet and greasy baked products compared to male students (p<0.001). When the night snack and smartphone use level increased, the intake of convenience food also increased in both groups. For female students, the check of nutrition labeling had a significant negative correlation with convenience food consumption. Therefore, it is necessary to provide gender-specific nutritional education and desirable dietary guidance for college students in early adulthood.

        This study investigated quality characteristics and functional components of yuzu (Citrus junos Sieb.) pulp produced during yuzu juice processing by manufacturing it according to mixing ratio of yuzu pulp. Results of pH measurement showed that the higher the mixing ratio of yuzu pulp, the lower the pH. The acidity showed a concentration-dependent increase as the mixing ratio of yuzu pulp increased. Total flavonoids, total phenols, and functional flavonoids (narirutin, naringin, hesperidin, neohesperidin) significantly increased with increasing yuzu pulp content (all p<0.05). Growth rate of Bifidobacterium infantis was approximately 5~39% higher in seasoned foods containing yuzu pulp than in commercial foods. Antibacterial effects of seasoned foods against Salmonella typhimurium and Streptococcus mutans were stronger when yuzu pulp content increased. In conclusion, seasoned foods added with yuzu pulp could be utilized in various ways as functional seasoned foods with excellent antioxidant and antibacterial activities.

        The objectives of the study were to examine food waste generation and reduction efforts at home, and to identify factors affecting the intention to reduce food waste. A total of 3,321 food buyer responses were used from the 2022 Consumer Behavior Survey for Food of the Korea Rural Economic Institute. Statistical methods for a complex sample were applied by using a SPSS program (ver. 26.0). The average daily food waste generation per household significantly differed by the main food purchaser’s age and household size. Plate waste and food waste from preparation were the main types of food waste. A multiple regression analysis revealed that intention to reduce food waste was influenced by the main types of food waste, the average daily amount of food waste, the perceived amount of food waste, and the perceived importance of food waste reduction after adjusting for the age of the main food purchaser and household size. Since the amount of food waste was affected by a series of food behaviors as well as consumer’s intention to reduce waste, empirical research on the types and amounts of food waste generated in Korean households and qualitative research on behaviors and attitude affecting food waste are needed.

        This study examined the intake status and the factors affecting intake of functional foods using the data from Consumer Behavior Survey for Food by the Korea Rural Economic Institute. Among the total respondents, 80.4% took functional foods, and the number of respondents who took two types of functional foods was the highest. The main reason for taking functional foods was to prevent disease, and the main places of purchase of functional foods were off-line large supermarkets, on-line shopping malls, and pharmacies. Compared to a year ago, the percentage of increase in functional food purchases this year was higher than the percentage of decrease. The most common reasons for not taking functional foods were ‘not feeling the need’ and ‘not trusting the quality’. As a result of conducting a complex samples logistic regression analysis to identify the factors affecting the intake of functional foods, gender, age, marital status, illness state, alcohol drinking, and convenience-seeking type among dietary lifestyles were significant.

        This study aimed to compare food procurement and dietary behavior of single-person households in Korea. A total of 949 single-person households that participated in the 2022 Food Consumption Behavior Survey were divided into three age groups: 20~39 years (n=204), 40~59 years (n=317), and 60~74 years (n=428). Monthly expenditure on eating out was similar for the 20~39 and 40~59 age groups at around 145,000 KRW, while the 60~74 age group spent 79,823 KRW (p<0.001). The frequency of eating out was the highest at 2~3 days per week for the 20~39 age group, with take-out occurring 1 day per week (p<0.01). Regarding online food purchases, 35% of the 20~39 age group bought food online once every two weeks, whereas 40~59 and 60~74 age groups had higher percentages of those buying non-online food (44.7% and 89.0%, respectively, p<0.001). Regarding dietary competency index, healthy eating scores were the highest in the 60~74 age group (p<0.01). As the dietary competency index increased, monthly expenditure on take-out decreased for the 40~59 age group while satisfaction with current diet increased across all age groups (p<0.01). This study is expected to be helpful for developing nutrition education materials tailored to different life stages.

        This study compared the dietary perceptions, food labeling behaviors, and purchasing patterns of vegetarians and nonvegetarians. The data from 5,811 adults aged ≥19 years who participated in the 2023 Consumer Behavior Survey for Food were analyzed. The participants were divided into vegetarians and non-vegetarians according to their dietary practices. Vegetarians were further divided into strict, semi, and occasional vegetarians. Non-vegetarians regularly consumed plantand animal-based foods without dietary restrictions. Vegetarians comprised 15.4% of the participants, and health (50.4%) was the primary motivation for adopting a vegetarian lifestyle. Compared to non-vegetarians, vegetarians prioritized their rights and responsibilities as citizens and identified a vegetable-centered diet as the most crucial factor for health. Vegetarians showed greater interest and trust in food labeling than non-vegetarians. Vegetarians selected a wider variety of food and had different purchasing motivations when purchasing eco-friendly foods than non-vegetarians. Vegetarians exhibited higher purchase frequencies across all categories than non-vegetarians and had different reasons for purchasing convenience foods. These findings highlight the diversity of vegetarian dietary motivations and behaviors, emphasizing the need for tailored dietary policies and education.

        Salmonella enterica는 세계적으로 가장 널리 알려진 식 중독균이다. Salmonella enterica Enteritidis MFDS1022168 은 인천보건환경연구원에서 계란에서 분리된 균주로, 이 균 주가 지니고 있는 병원성에 대한 genome 수준의 메커니즘을 이해하기 위하여 whole genome sequencing을 진행 하여 유전체를 분석하였다. PacBio Sequel 장비를 이용하 여 유전체염기서열 분석을 진행한 결과 invA를 비롯한 여 러 종류의 병원성유전자를 갖고 있는 것으로 확인됐다. 이 에 따라 해당 균주의 독성을 파악하기 위해 유전체분석을 진행하였다. 유전자 총 수 예측 결과, 4,776개의 CDSs, 84 개의 tRNA, 22개의 rRNA를 보유한 것으로 나타났다.

        Loop-mediated isothermal amplification (LAMP)는 PCR 보다 빠르고 간편한 새로운 분자 검출 방법이다. 본 연구 에서는 식품에서 오염된 Bacillus cereus 그룹 중 식중독 을 유발할 수 있는 bceT 유전자를 가진 B. cereus와 B. thuringiensis를 신속하게 검출하기 위한 LAMP 방법을 개 발하고 평가하였다. LAMP 방법은 외부 프라이머와 내부 프라이머를 포함한 4개의 프라이머를 사용하기 때문에 다 른 검사 방법보다 특이성이 높다. 시험결과, LAMP의 특 이도는 100%였으며, 검출한계는 10(CFU/반응)이었다. 이 분석은 다양한 식품에서 인위적으로 접종하여 장독소 유 전자 함유 B. cereus 그룹을 분석하는 데 사용하였다. 일 반가공식품 뿐아니라 즉석조리식품 중 전투식량, 냉동볶 음밥 등 포함한 20개의 모든 식품에서 적용하여 검출하였다. 결론적으로, 장독소 유전자 함유 B. cereus 와 B. thuringiensis 특이적 LAMP는 소상공인 제조업체뿐만 아 니라 식품 관련 기관 등에서도 진단방법으로 유용하게 사 용될 수 있을 것으로 판단된다.

        식품 사기는 글로벌 식품 공급망에 상당한 위협을 가하 며 경제적 안정성과 공중 보건에 영향을 미친다. 이 리뷰 에서는 먼저 식품 사기 취약성 평가(food fraud vulnerability assessment, FFVA)를 조사하여 다양한 기관의 통합된 정 의와 분류를 통한 표준화된 방법론의 필요성이 강조되었 다. 네 가지 주요 FFVA 도구인 ‘United States Pharmacopeia (USP) 식품 사기 완화 지침’, ‘International Featured Standards (IFS) 표준 제품 사기’, ‘SSAFE 식품 사기 취약 성 평가 도구’, ‘미국 Food and Drug Administration (FDA) 와 United States Department of Agriculture (USDA) criticality, accessibility, recuperability, vulnerability, effect, and recognizability plus shock (CARVER+Shock) 도구’의 주요 특징과 한계점 등을 살펴보았다. 또한 Safe Supply of Affordable Food Everywhere (SSAFE)의 식품 사기 취 약성 평가 도구를 적용하여 우유, 향신료, 오일, 유기농 식 품, 육류, 해산물 및 알코올의 공급망에 대한 취약성 평가 사례를 살펴보았다. 그 결과, 취약성을 평가할 때 원자재 나 제품이 브랜드 또는 상표 위조에 덜 취약한 경우 평가 설문에서 위조 관련 질문을 제외하는 등 식품 공급망 특 성이나 조사 대상에 따라 평가 항목이 조정되었다. 또한 식품 사기 행위의 기술적 탐지 난이도, 기업의 윤리적 문 화, 모니터링 시스템의 구축 정도가 식품 사기 취약성에 상당한 영향을 미치는 것으로 나타났다. 현재 이러한 평 가도구들은 귀중한 프레임워크를 제공하지만, 식품 사기 의 진화하는 본질을 해결하기 위해 보다 통합적이고 적응 가능한 접근 방식이 필요하다는 점이 시사되었다. 식품 사 기 예방을 위한 강력하고 글로벌한 표준을 수립하기 위해 서는 향후 FFVA 방법론을 개선하고 산업, 규제 기관 및 학계 간의 협력이 보다 강화되어야 할 것이다.

        This study analyzed the status of agrifood consumer competencies and the factors influencing them to provide useful information to improve the quality of life by strengthening the agrifood consumer competencies. The raw data of the 2022 Consumer Behavior Survey for Food collected by the Korea Rural Economic Research Institute were used. The data from 3,321 responses were used for the final analysis. Among the competencies, the average score of the cognitive and practical competencies were 3.543 and 3.459 points, respectively. In addition, the average scores of the specific areas within cognitive competency were 3.587 points for dietary competency, 3.557 points for civic competency, and 3.489 points for purchasing competency. Within practical competency, the average scores of the specific areas were 3.569 points for dietary competency, 3.422 points for civic competency, and 3.392 points for purchasing competency. Gender, age, monthly household income, marital status, administrative district, interest in health, and interest in food safety issues were the significant factors affecting the specific areas within cognitive competency. On the other hand, gender, age, educational level, monthly household income, marital status, administrative district, interest in food safety issues, and each of the areas within cognitive competency had a significant impact on the specific areas of practical competency.

        This study examined domestic consumption trends in the development of mushroom-based alternative food products. It found that 85.5% of consumers were aware of alternative foods, with a higher recognition rate among younger age groups and variations based on household composition and monthly income. Additionally, 70% of consumers familiar with alternative foods had tried them. Among those who had not, taste (16%) and purchasing challenges (15%) were the primary barriers. Minced meat was the most commonly consumed alternative (25%), while dumplings (7%) and burgers (1%) were less popular. Notably, dumplings and burgers showed the highest potential for development using mushroom-based ingredients. These findings provide valuable foundational data for advancing mushroom-based alternative food products.

        In this paper, we aim to improve the output quality of a food 3D printer through optimized component design and implementation. Existing 3D printers produce customized outputs according to consumer needs, but have problems with output speed and poor quality. In this paper, we aim to solve this problem through optimized design of unit parts such as the extruder, nozzle, guide, and external case. Fusion 360 was used for element design, and in the performance evaluation of the implemented system, the average precision was 0.06mm, which is higher than the non-repeatable precision of ±0.1㎜ of other products, and the feed speed of the existing system was evaluated to be more than twice as fast, from 70mm/s to 140mm/s. In the future, we plan to continuously research output elements that can produce texture and color and device control methods for convenience.

        This study aims to develop effective strategies for stimulating seafood consumption in the growing young children market, particularly at a time when interest in healthy eating is increasing. To achieve this, data from the 2023 survey on changes in seafood consumption behavior of 1,000 domestic consumers by the Korea Disease Control and Prevention Agency were utilized. The analysis was conducted using an ordered probit model, along with T-tests and chi-square tests to examine the determinants of seafood consumption. The results indicated that the presence of young children in a household significantly influences seafood consumption. This is largely due to the perception that seafood is beneficial for the health and safety of infants and toddlers. Households with young children prioritize food safety and convenience, showing a preference for pre-processed seafood, while households without young children tend to purchase unprocessed seafood and prepare it themselves. This study highlights the impact of having young children on seafood consumption and purchasing behavior, providing valuable insights for the development of targeted seafood marketing strategies and policies.

        Recently, ESG(Environmental, Social, Governance) has been recognized as an important factor for the sustainable growth of companies. However, only 14.5% of food manufacturing companies have adopted ESG management. In particular, small and medium-sized enterprises(SMEs) face difficulties in implementing ESG management due to a lack of specialized personnel and resource constraints. The purpose of this study is to analyze the impact of ESG ratings on the management performance of 40 food manufacturing companies listed on the Korea Exchange(KRX) that have been evaluated for ESG. The one-way ANOVA was used and performed on data for 40 food manufacturing companies published by the Korea Institute of Corporate Governance and Sustainability(KCGS) in 2023. The results of the analysis showed statistically significant differences in sales (F=12.936, p<0.001) and foreign ownership (F=7.74, p<0.01) based on ESG ratings. Furthermore, Scheffe's post-hoc analysis indicated that the higher the ESG rating and individual scores, the better the overall management performance. Therefore, it is concluded that food manufacturing companies should continuously invest in and focus on ESG management to secure a competitive advantage in the market and achieve sustainable growth.

        본 연구는 한국전통식품인 김치에서 분리한 W. cibaria SPM402, L. paracasei SPM412의 포괄적인 항 치주염 효 과를 확인하였다. WC402 10 mg/mL농도에서 P. gingivalis 의 생물막 형성이 37.30±8.23%, LP412 10 mg/mL에서 51.36±5.95% 억제되었고, F. nucleatum의 생물막 형성의 경우 WC402 10 mg/mL에서 76.77±2.77%, LP412 10 mg/ mL에서 95.99± 0.73% 억제되었다. LP412 10 mg/mL에서 P. gingivalis 부착소인 fimA의 RQ값이 0.08±0.05로 약 12 배 감소함을 확인하였고, F. nucleatum의 부착소인 radD 의 RQ값은 0.08±0.008으로 radD는 거의 90배 이상 억제 되었다. 사람 잇몸 상피세포주인 YD-38에 Pg OMV에 의한 염증반응을 유도 후 WC402 15 mg/mL 처리 결과 IL-1β유 전자 발현이 약 150배 가량 억제되었고, LP412 0.1 mg/mL 처리 결과 IL-1β유전자 발현이 약 3.6배 가량 억제됨을 확 인하였다. YD-38세포주에 F. nucleatum에 의한 염증반응 을 유도 후 1 mg/mL의 WC402를 처리한 결과 IL-8유전자 발현이 약 3배 정도, 1 mg/mL의 LP412를 처리한 결과 IL- 8유전자 발현이 약 5.6배 정도 억제되었다. 이상의 결과를 볼 때 W. cibaria SPM402, L. paracasei SPM412는 구강 병원성 세균의 생물막 형성 관련 병인인자 발현 억제, 직 접적인 생물막 형성 억제 및 병원성 세균에 의해 유도된 염증반응을 효과적으로 억제하는 기능을 보유한 균주로 구강질환에 대한 치료제나 구강 건강에 도움이 되는 구 강 건강기능성 식품으로 사용될 가능성이 있음을 확인하 였다.
