Cereal grains are the dietary staple in many countries, including the Republic of Korea. These grains are usually consumed cooked. Korean grown raw and cooked brown non-glutinous rice (BNR), white non-glutinous rice (WNR), oats, and barley were analyzed to assess the effects of cooking on dietary fiber and free sugar content. The largest decrease in total dietary fiber (TDF) after cooking was observed in barley (11.62±1.26 to 2.96± 0.90 g/100 g), and the smallest decrease was observed in oats (8.1±0.34 to 8.1±0.32 g/100 g). Soluble dietary fiber decreased in oats (3.35±0.94 to 1.25±0.03 g/100 g) while insoluble dietary fiber increased (4.76±0.78 to 6.90±0.30 g/100 g) after cooking. TDF content was not changed. Of the six free sugars routinely assessed, only sucrose was detected in BNR and WNR. Sucrose decreased by about 0.6 g/100 g in BNR, and was not detected in WNR, after cooking. Fructose, sucrose, and raffinose were detected in oats (0.08, 0.83, and 0.19 g/100 g) and barley (0.09, 0.58, and 0.22 g/100 g) Maltose was also detected in barley (0.09 g/100 g). Total sugar content decreased in every cereal grain sample after cooking. This research reveals that dietary fiber and free sugar content can be reduced by cooking cereal grains.
This study investigated the association between dietary intake and 10-year risk for CHD predicted from Framingham risk score in Korean adults using the Korea National Health and Nutrition Examination Survey 2019-2020. Eight thousand subjects (3,382 men and 4,618 women) aged 30 years or older were classified into three groups according to the 10-year CHD risk (%). The sociodemographics, anthropometrics indices, blood profiles, and dietary intake were collected. After adjusting for confounding variables, the mean adequacy ratio (MAR) decreased for both men and women as the disease risk increased. The high–risk group was below the MAR criteria, indicating that the overall quality of the meal was not good. The highest consumers of legumes (OR 0.56, 95% CI 0.37-0.84), fruits (OR 0.67, 95% CI 0.48-0.93), and fish (OR 0.60, 95% CI 0.42-0.87) had a 44%, 33%, and 40% lower 10-year CHD risk than lowest consumers in men, respectively. In women, there is no significant relationship between food groups and disease risk. Therefore, improving lifestyle habits such as weight control, increased activity, and adequate food intake, especially legumes, fruits, and fish rich in antioxidant nutrients and bioactive substances, appears to have a potential association with preventing coronary heart disease in Korean adults.
The Ministry of Agriculture, Food and Rural Affairs introduced the Agrifood Voucher in 2020. The Agrifood Voucher is the program that provides vouchers to purchase selected food items with dietary management education. This study aimed to explore value and meaning of dietary management based on the Agrifood Voucher. First, the Supplemental Nutrition Assistance Program of the United States and the Agrifood Voucher of Korea were reviewed. Second, various terms used for describing the purpose of food assistance programs were comparatively reviewed and ‘food and nutrition security’, together with the corresponding Korean term, was proposed to be the most appropriate term for the purpose. Subsequently, the value and meaning of dietary management based on the Agrifood Voucher were presented as enhancing food and nutrition security of the vulnerable. Diverse education programs should be developed and implemented to improve the dietary management capacity of the Agrifood Voucher recipients in order to properly realize the meaning and value of dietary management based on the Agrifood Voucher in the future.
This study evaluated the effect of a combination of acetaminophen (AAP), vitamin C (VC) and thioctic acid (TA) on reducing serum cortisol concentrations in mice with foot-and-mouth disease (FMD) vaccination. For 5 days from 3 days before FMD vaccination to 2 days after vaccination, mice were orally administered with AAP 600 mg/kg feed (n=25, AAPT), combination of AAP 600 mg and VC 200 mg per kg feed (n=25, AVCT) and combination of AAP 600 mg, VC 200 mg and TA 20 mg per kg feed (n=25, AVTT), respectively. From day 1 to day 7 after FMD vaccination, the cortisol concentration of all groups treated with the drug was significantly decreased compared to that of the positive control group with FMD vaccination (p<0.05). In conclusion, the combined treatment of AAP, VC and TA was the most effective in relieving stress from FMD vaccination compared to the single treatment.
Galactosemia is a rare, hereditary metabolic disorder caused by the accumulation of galactose and its metabolites in the body due to a lack of enzymes that convert galactose to glucose. This study aimed to investigate the dietary behaviors and nutritional statuses of patients with galactosemia and to provide basic information on the development of nutrition education programs to improve quality of dietary life. A survey was conducted on 13 parents of (<11 years of age) children with galactosemia and 26 parents of (<11 years of age) children without galactosemia. Mean body mass index was greater for school-age children with galactosemia (18.77 kg/m2) than for corresponding normal children (16.55 kg/m2). Underweight and obesity rates of children with galactosemia were greater than those of children without galactosemia. In addition, children with galactosemia had a higher food neophobia rate and thus consumed less food. Normal children exhibited a greater range of food preferences than those with galactosemia, especially for milk and dairy products (p= .001) and fats and sweets (p= .04). Reliable food databases and appropriate dietary recommendations are required to ensure the proper growth of children with galactosemia.
In this study, the dietary fiber content of 33 kinds of agricultural products and seaweeds was compared with that of raw products after heat treatment. To verify the total dietary fiber analysis method, the recovery rate was reviewed by measuring the total dietary fiber content for 4 standard certified substances. As a result, the recovery rate of the analysis value for the true value was 98.8%~103.1%, which was judged to be reliable. The total dietary fiber of vegetables ranged between 0.61~5.36 g/100 g for raw vegetables and 0.55~4.84 g/100 g for heat-treated vegetables. Among the 24 kinds of vegetables used in the analanalysis, the total dietary fiber content of heat-treated Korean radish (3.13 g/100 g) was the highest compared to that of raw radish (0.61 g/100 g). The total dietary fiber of beans was between 13.86~29.69 g/100 g for raw beans and 6.72~18.40 g/100 g for heat-treated beans. In particular, the total dietary fiber content of sword beans was the highest in both raw (29.69 g/100 g) and boiled (18.40 g/100 g) beans. The total dietary fiber content of the three types of seaweed was 1.93~4.85 g/100 g in raw seaweed and 0.99~5.72 g/100 g in heat-treated seaweed.
Galactosemia is a rare genetic metabolic disease caused by galactose and its metabolites generated during carbohydrate metabolism, which is relatively rare in Asian countries, including Korea. Patients with galactosemia should be treated with a galactose-restricted diet. However, information is lacking about the exact content of galactose in food, and dietary guidelines for patients with galactosemia in Korea. This study aims to recognize the difficulties faced by parents and clinical experts of patients with galactosemia, and understand their demands. Totally, 5 parents of children diagnosed with galactosemia and 5 clinical professionals participated in the focus group interviews. The parents’ interview focused on the daily life of the patient, which included diet and social difficulties. The clinical experts mainly answered about medical care, including the number and status of patients, and their suggestions for effective treatment. Most parents were worried about social isolation due to conflicts in the family as well as in society due to a lack of understanding of the disease. The clinical experts stated the absence of a disease management system as the greatest problem. An integrated support system for patients with galactosemia, which includes appropriate dietary guidelines by considering the domestic environment, is required.
A number of studies have been conducted to confirm the preventive effect of xylitol on dental caries as a whole or partial alternative to dietary sugars. This study reviewed the oral health effects of xylitol on the prevention mechanism of dental caries, the prevention of dental caries, the inhibition of mother-to-child transmission, and the oral health effects in the elderly based on existing studies on the oral health of xylitol. Carbohydrates and dietary sugars in food are fermented by acid-producing microorganisms in the mouth and produce dental plaque and acid, which cause dental caries. However, most dental decay-causing bacteria cannot produce acids by metabolizing xylitol. Xylitol, stored in cells as a non-metabolizable metabolite by Streptococcus mutans (S. mutans), affects bacterial glucose metabolism and inhibits bacterial growth. Xylitol consumption also reduces the amount of plaque and the population of S. mutans in both plaque and saliva. In addition, xylitol acts in the remineralization process. Xylitol has been confirmed to effectively prevent dental caries, inhibit mother-to-child transmission of MS, prevent dental caries, and increase salivary flow in the elderly. In conclusion, xylitol is an adequate sugar substitute for dental health, from infants to the elderly. For future studies, the researchers recommend reviewing the effects of xylitol on the oral and intestinal microbial environment and the side effects of excessive intake.
This study aimed to investigate the effect of the five senses activities involving food ingredients on the eating behavior of infants. The study was carried out four times over 6 months. We surveyed 65 nursery school infants and teachers who were registered at the 2020 Guro-gu Center for Children’s Food Service Management in Seoul. They participated in the five senses education specialization project. The results of the study showed that the scores relating to unbalanced diet, hygiene management, dietary attitude, and dietary manners were visibly higher than those before participating in the five senses educational activities. In addition, there was a significant difference in the perception of the food ingredients used in the five senses education activities. Finally, as a result of investigating the types of education used before, during, and after the five senses education activities, and the need for education by type, cooking activities were observed to rank higher than other activities in all questions. Based on this, if dietary guidance is provided through a variety of five senses education activities over a long period rather than as a one-time event, it will be beneficial to the children's healthy eating habits.
The purpose of this study was to investigate the improvement effect of biomarkers through the supply of natural diet in the juvenile hybrid abalone (Haliotis discus discus♀*H. madaka♂). For the study, the shell length of about 17 mm and the total weight of 0.83 g were used. The feeding conditions were set as the natural diet group (dried laver) and the formulated diet group, and the experiment duration was 16 weeks. The survival rate was about 14% higher in the natural diet group than the formulated diet group, and growth was also faster in the natural diet group. Shell malformation rate was lower in the natural diet group (7.5%) than the formulated diet group (21.5%). In the biochemical composition, except for carbohydrates, both experimental groups showed similar values. The degeneration of epithelial cells in the hepatopancreatic tubule was lower in the natural diet group than the formulated diet group, and the activity of basophilic cell was higher in the natural diet group. These results indicate that it is worth considering the supply of natural diet for the breeding of juvenile hybrid abalone and the improvement of the quality of the formulated diet (H. discus discus♀*H. madaka♂).
This study aimed to investigate the association between interest in beauty care and dietary behaviors of 581 (analysis rate 96.0%) high school girls in Incheon using a survey done in May 2019. Based on the degree of interest in beauty care, subjects were classified as “Beauty care group (n=346)”, and "Non-beauty care group (n=235)”. The mean age of the subjects was 16.5 years old. The beauty care group had significantly lower BMI than the non-beauty care group (p<0.01). The beauty care group showed a significantly higher interest in weight control than the non-beauty care group (p<0.001). The most time-consuming preschool morning activity in the beauty care group was beauty care, while that of the non-beauty care group was eating breakfast (p<0.001). The beauty care group had significantly higher frequency of exercise than the non-beauty care group (p<0.05). The number of individuals who skipped breakfast was significantly higher in the beauty care group. In addition, the beauty care group had a significantly higher frequency of taking morning snack, convenience food (p<0.01), sweet snacks (p<0.05), and processed beverages (p<0.05) than the non-beauty care group. Our result findings provide important information on the priority groups for nutrition education based on beauty care interest.
This study was conducted to determine the effects of dietary protein level and supplementation of protease on growth performance, nutrient digestibility, gut microflora, intestinal morphology and fecal noxious gas emission in weanling pigs. A total of 240 weaned pigs (Landrace×Yorkshire×Duroc, 5.82±0.3 kg) were used during 4 weeks in 2 phases (days 0-14, phase 1; and days 15-28, phase 2) feeding program based on age and initial body weight. Pigs were allocated to 2×2 factorial arrangement, including 2 protein levels (HP, high protein; LP, low protein) and 2 protease levels (with or without protease). The average daily gain in the LP treatment (357 g/d) was increased rather than the HP treatment (339 g/d). A greater avarage daily gain was observed in dietary suppiemented protease treatment (358 vs 339 g/d). Average feed intake was greater in the LP treatment (544 g/d) rather than the HP treatment (530 g/d). A greater average daily feed intake was observed in dietary supplemented protease treatment (552 vs 523 g/d). Dry matter and crude protein digestibility were increased in dietary supplemented protease treatment (82.62% and 76.08%, respectively) rather than non-supplemented treatment (81.74% and 75.13%, respectively). Ileal Lactobacillus spp. count increased in dietary supplemented protease treatment (7.42 vs 7.32 log10CFU/g). Emission of H2S was decreased in the LP treatment (4.41 ppm) rather than HP treatment (4.78 ppm). Emission of NH3 was decreased in dietary supplemented protease treatment (10.43 ppm vs 11.76 ppm). In conclusion, the decrease of dietary protein level and supplementation of protease had beneficial effects on growth performance, nutrient digestibility, gut microflora, and noxious gas emission in weanling pigs.
본 연구는 학령기 비만아동의 생활습관, 식이자기효능감 및 운동자기효능감의 관계와 생활습관에 미치는 영향요인을 확인하기 위한 서술적 조사연구이다. 연구대상자는 G광역시에 소재하는 3개 초등학교의 비만아동 85명이었고 2019년 7월 20일부터 8월 2일까지 자료를 수집하였으며, 구조화된 설문지를 이용하여 조사하였다. 수집된 자료는 SPSS 27.0 프로그램을 이용하여 빈도와 백분율, ANOVA, t-test, Pearson's correlation coefficient, Multiple regression analysis로 분석하였다. 대상자의 생활습관에 미치는 영향요인을 확인하기 위하여 다중회귀분석한 결과, 식이자기효능감(β=.406, p=.001)이 큰 영향을 미치는 변수로 나타났고, 운동자기효능감(β=.245, p=.038)이 그 다음 순서로 나타났다. 또한 추정된 회귀모형의 적합도에 대한 F통계량은 6.34(p<.001)로 유의하였고, 설명력은 24.2%였다. 따라서 비만아동의 생활습관을 향상시키기 위해서는 식이자기효능감과 운동자기효능감을 높일 수 있는 방안을 모색해야 하며, 본 연구는 비만아동 생활습관 향상을 위한 프로그램을 개발하는데 기초자료로 활용될 것으로 사료된다.
This study aimed to assess the association between the weight status and dietary behavior of preschool children. The survey included 412 preschool children aged 2-5 years in 31 childcare facilities in Gwangju. General characteristics of children and their mothers, weight, height, feeding type, complementary feeding, food allergy, and dietary behavior of children based on the Nutrition Quotient for preschoolers (NQ-P) questionnaire were considered. Children were classified into 4 groups by weight status; underweight, normal, overweight, and obese, based on the 2017 Korean National Growth Charts. The percentage of children in the respective groups was 5.3, 70.9, 10.7, 13.1%. Weight status was not related to breast feeding duration nor the starting time of complementary feeding. The NQ-P scores of underweight, normal, overweight, and obese groups were 55.4, 60.0, 60.8, 60.0. Among the three factors covered by the NQ-P, ‘balance’ and ‘environment’ scores of the underweight group were lower than that of other groups. Underweight children consumed beans, fish, and white milk less frequently. The ‘moderation’ scores of the overweight/obese group were lower than those of the normal or obese groups. Obese children more frequently ate processed meat and fast foods. Proper nutrition education is thus needed for not only obese children but also underweight children based on their age, along with their parents, and caregivers.
With the globalization of Korean education and the rise in the average level of education, the number of international students in Korea, especially those from China, is rapidly increasing every year. This study aimed to provide the basic information for healthy dietary education by evaluating the dietary and nutritional status of Chinese students living in Gwangju province of Korea. Data from 468 subjects who met the study participation criteria and who had given their written informed consent were used for analysis. Of the total subjects, 52.4 and 80.1% were non-drinkers and non-smokers, respectively (p<0.01). It was observed that women were more stressed than men when they did not have convenient access to a Chinese food market near their place of residence (p=0.032). The subjects with a high cultural adaptation consumed kimbap (p<0.001) and pizza (p=0.017) more frequently than the subjects with a low cultural adaptation. An analysis of the nutrient quotient revealed that male scores were higher than those of the females with regard to water intake (p=0.035) and exercise level (p=0.021). For Chinese students living in Korea to maintain proper dietary habits, it is necessary to educate them on how to purchase convenience foods and improve their lifestyle, including limiting drinking and smoking. It is also necessary to develop emotional support programs for stress management and cultural adaptation.
