        This study investigated various levels of sodium nitrite and probiotics (SNPro) combination as an alternative to zinc oxide on the growth performance, immune response, intestinal microflora, and morphology of weaned pigs. One hundred and ninety-two weaned pigs (Landrace×Yorkshire×Duroc) with an average body weight of 6.51±0.15 kg were randomly assigned to four treatments(n=6) on the basis of their initial body weight. Experimental period was divided into phase 1 and 2 (each 14 days). The dietary treatments were: 1) Basal diet (control), 2) SNPro1 (control+0.01% SNPro), 3) SNPro2 (control+0.02% SNPro), 4) SNPro3 (control+0.03% SNPro). The average daily gain when SNPro was added to the diet was 288, 309, 319, 324 g in phase 1, 355, 387, 410, 407 g in phase 2 and 321, 348, 364, 366 g in the overall. The concentration of interleukin-8 and interleukin-10 in serum when SNPro was added to the diet were 15, 13.5, 13, 12.8 ng/ml and 165, 162, 155, 145 ng/ml (p<0.05) but toll-like receptor 4 and immunoglobulin G levels in serum were no significantly different. The colonization of Escherichia coli in the ileum and Salmonella spp. in the caecum were significantly decreased as SNPro level increased (p<0.05). However, the population of Lactobacillus spp. did not differ among the groups. Although villus height and villus height to crypt depth ratio were not significantly affected by the treatments, crypt depth in the jejunum was 599, 586, 615, 599 ㎛ as SNPro level increased (p<0.05). In conclusion, SNPro had beneficial effects on growth performance, immune response, intestinal microflora and morphology weaned pigs. Therefore, SNPro not only can be considered as an alternative for the pharmacological level of zinc oxide in weaning pigs but also ideal dietary SNPro level was 0.02%.

        This study was conducted to determine the effects of dietary protein level and supplementation of protease on growth performance, nutrient digestibility, gut microflora, intestinal morphology and fecal noxious gas emission in weanling pigs. A total of 240 weaned pigs (Landrace×Yorkshire×Duroc, 5.82±0.3 kg) were used during 4 weeks in 2 phases (days 0-14, phase 1; and days 15-28, phase 2) feeding program based on age and initial body weight. Pigs were allocated to 2×2 factorial arrangement, including 2 protein levels (HP, high protein; LP, low protein) and 2 protease levels (with or without protease). The average daily gain in the LP treatment (357 g/d) was increased rather than the HP treatment (339 g/d). A greater avarage daily gain was observed in dietary suppiemented protease treatment (358 vs 339 g/d). Average feed intake was greater in the LP treatment (544 g/d) rather than the HP treatment (530 g/d). A greater average daily feed intake was observed in dietary supplemented protease treatment (552 vs 523 g/d). Dry matter and crude protein digestibility were increased in dietary supplemented protease treatment (82.62% and 76.08%, respectively) rather than non-supplemented treatment (81.74% and 75.13%, respectively). Ileal Lactobacillus spp. count increased in dietary supplemented protease treatment (7.42 vs 7.32 log10CFU/g). Emission of H2S was decreased in the LP treatment (4.41 ppm) rather than HP treatment (4.78 ppm). Emission of NH3 was decreased in dietary supplemented protease treatment (10.43 ppm vs 11.76 ppm). In conclusion, the decrease of dietary protein level and supplementation of protease had beneficial effects on growth performance, nutrient digestibility, gut microflora, and noxious gas emission in weanling pigs.

        This study investigated the effect of the addition of various levels of pig head meat (HM) as a substitute for rear leg meat (RLM) on the physico-chemical quality characteristics of non-emulsified, smoked, and cooked sausage during refrigerated storage. Sausages were prepared in four variations according to the proportion (0%, 10%, 20%, or 30%) of HM added and maintained at 4°C. Quality measurements were taken for 28 days. The sausages added with the addition of 20% and 30% HM had significantly (p<0.05) higher moisture and lower protein content compared to those without the addition of HM. The pH value during the storage period was higher (p<0.05) in the sausages to which the HM had been added than in those without HM. The sausages with 30% HM showed the lowest (p<0.05) L* and b* values and the highest (p<0.05) a* value during the storage period. The 2-thiobarbituric acid reactive substances (TBARS) content, hardness, cohesiveness, springiness, gumminess, and chewiness of the sausages showed no significant variations with the addition of various levels of HM. These data suggest that RLM could be substituted with 30% HM because it does not negatively affect the quality of the non-emulsified sausage. However, a further study on sausages made with 100% HM instead of RLM may be needed to improve its utilization.

        This study investigated the bread-making properties of rice bread supplemented with HPMC (hydroxypropyl methylcellulose) 1~3% and gluzyme (glucose oxidase), fungamyl (fungal α-amylase) and pentopan (xylanase+ hemicellulases) (0.0015~0.0090%). The viscoelastic properties of the dough with HPMC 1~3% were analyzed. When the rice flour was supplemented with HPMC 1~3%, the viscoelastic properties of the dough tended to increase as the amount of added HPMC was increased. The physicochemical characteristics of the rice bread with HPMC, gluzyme, fungamyl, and pentopan were analyzed. Supplementing the rice flour with HPMC, gluzyme, fungamyl, and pentopan had a significant effect on the volume (p<0.01) and specific volume (p<0.001) of the rice bread. Supplementing the rice flour with 3% HPMC and 0.0045% or 0.0090% pentopan had a significant effect on increasing the volume (p<0.01) and specific volume (p<0.001) of the rice bread. Supplementing the rice flour with 3% HPMC, 0.0023% gluzyme and 0.0015% fungamyl had a significant effect on increasing the volume (p<0.01) and specific volume (p<0.001) of the rice bread. These results suggest that supplementing the rice flour with HPMC, gluzyme, fungamyl and pentopan is effective for the production of rice bread.

        This paper investigated the effects of the percentages of yeast and fermentation time as well as the top and bottom temperature of oven on the baking properties of rice bread. The specific volume of the dough decreased as the amount of added yeast and fermentation time increased. When 1.5% yeast was added at 60 min of fermentation time, the shape of the rice bread showed the largest volume, high appearance and a round shape. The top and bottom temperature of the oven on the baking characteristics of rice bread were affected by the baking time. When the top and bottom temperature of the oven at 200 and 140℃, and 200 and 170℃, the baking time was 20 min. When the top and bottom temperature of oven at 140 and 170℃, the baking time was 40 min. When the top and bottom temperature of the oven were 170 and 170℃, the shape of the rice bread indicated the largest volume, high appearance and a round shape. The results of this study revealed that the replacement of rice flour with 1.5% yeast, 60 min of fermentation time, and the top and bottom temperature of oven at 170-170℃ are effective for rice bread.

        The baking properties of rice bread with polydextrose (3, 6, and 9%), enzymes (0.006, 0.009, and 0.018%) and egg (1.32 and 2.64%) were investigated. The specific gravity and color (L, a, b) of the dough, as well as the appearance, color (L, a, b) and texture of the rice bread were analyzed. The springiness, chewiness, gumminess (p<0.01) and hardness (p<0.001) of the rice bread tended to increase as the amount of added polydextrose increased. Replacement of rice flour with hemicellulase, glucose oxidase and fungal amylase are effective for producing rice bread. Replacement of rice flour with 0.009% glucose oxidase and 0.006% fungal amylase had a significant effect on increasing the volume and decreasing the hardness of the rice bread (p<0.001). Replacement of rice flour with 1.32% egg white also had a significant effect on increasing the volume and decreasing the hardness of the rice bread (p<0.001). These results suggest that replacement of rice flour with 0.009% glucose oxidase and 0.006% fungal amylase, and 1.32% egg white are effective for producing rice bread with good volume and hardness.

        This study was conducted to investigate whether dietary levels of copra and palm meals affect the growth performance, carcass characteristics, and meat properties of Hanwoo steers. Eighty-one Hanwoo steers were randomly assigned to one of three dietary groups: T1 (conventional level of palm and copra meals), T2 (20% copra meal and 15% palm meal), and T3 (30% copra meal and 20% palm meal). During the growing and early fattening periods, the average daily gains and formula feed intakes of T2 and T3 were higher than that of T1; however, those differences were not statistically significant. The dietary levels of copra and palm meals did not affect carcass weight, back fat thickness, and rib-eye areas. Marbling scores and meat quality grades were lower in T3 than in T1 and T2; however, those differences were not statistically significant. Meat color, fat color, texture, and maturity were similar among the treatment groups. In addition, dietary levels of copra and palm meals did not affect the chemical and fatty acid composition of longissimus dorsi muscles in Hanwoo steers. Thus, the present results indicate that high supplementation levels of copra and palm meals do not negatively affect the growth performance, carcass characteristics, and meat properties of Hanwoo steers.

        The present study was conducted to determine the optimal supplementation level of beta-mannanase in the diet of laying hens. A total of 320 Hy-Line Brown layers (80 weeks of age) were assigned randomly into four groups on the basis of laying performance. Each treatment had eight replicates with 10 birds each (80 birds per treatment). Two hens were caged individually. Treatments were basal diet supplemented with 0 (control), 0.04, 0.08, and 0.16% beta-mannanase during the nine-week feeding period. Laying hens fed diets supplemented with increasing levels of beta-mannanase had increased (linear, p<0.05) overall egg production and egg mass. In addition, these hens had greater retention of dry matter, crude protein, gross energy, calcium, and mannan (linear, p<0.05). Dietary beta-mannanase treatments had no effect on blood metabolites such as total carbohydrate, triglycerides, glucose, total protein, and blood urea nitrogen, or excreted ammonia nitrogen and volatile fatty acids. The results obtained in present study indicate that dietary supplementation of beta-mannanase has the potential for improving the performance of laying hens. The optimal supplementation level is 0.04% beta-mannanase in the diet.

        The present study was conducted to investigate the effects on growth performance, nutrient digestibility, and gut health of broiler chickens when a dietary supplementation of multienzymes was added to diets, containing different energy levels. A total of 480 broiler chickens of similar body weight (Ross 308, 1-day-old) were randomly subjected to four treatments. The dietary treatments included a corn-soybean meal-based diet supplemented with: multienzyme (amylase+protease+ mannanase+xylanase+phytase), 0.05% enzyme, and different energy levels (3010 and 3060 kcal/kg). The experimental diets were fed to the chicks in a mash form for 35 days in two phases (1–21 d, phase I; and 22–35 d, phase II). During the overall period, chicks fed with diets supplemented with multienzymes had a better weight gain (p<0.05) and feed conversion ratio (FCR) than those fed with diets without enzymes. There was no difference in the growth rate and FCR among the chicks fed with diets supplemented with enzymes, even though the dietary energy levels were different. The apparent fecal and ileal digestibility of dry matter, gross, crude protein, calcium, and phosphorus were significantly enhanced (p<0.05). The population of cecal and ileal Lactobacillus spp. was significantly increased (p<0.05), and Clostridium spp. and coliforms were significantly decreased (p<0.05) in diets supplemented with enzymes. Villus height and villus height to crypt depth ratio in the small intestine was also significantly enhanced (p<0.05) in diets supplemented with enzymes. In conclusion, multienzyme supplementation had positive effects on the weight gain of broilers, FCR, digestibility of nutrients, and on the growth of intestinal microbiota.

        본 연구는 고온기 때 사료 내 다른 에너지 수준 및 비테 인 첨가 급여가 육성돈의 영양소 소화율 및 생리학적 변화 에 미치는 영향을 구명하기 위해 실시하였다. 실험동물은 삼원교잡종(L×Y×D; initial body weight, 73.5±0.5kg) 거세 수퇘지 12두를 사용하였고 대사틀에 배치하였다. 실험기간 은 고온기인 7~8월에 실시하였다. 실험계획은 에너지 2수 준(3,300 및 3,400kcal/kg)과 비테인 2수준(0 및 0.5%)이며 4×4 Latin square로 하였다. 조단백질 소화율은 고에너지 사료(3,400kcal/kg)가 저에너지 사료보다 유의적으로 높았 다(p<0.01). 그러나, 비테인급여는 영양소소화율에 영향을 미치지 않았다. 혈액생화학적 분석 결과에서는 에너지 수 준 및 비테인 첨가가 육성돈 내 생리적 변화를 보이지 않 았다. 면역반응을 나타내는 혈중 IgG에서는 고에너지 사료 가 저에너지사료보다 높았으나(p<0.05) 스트레스 지표를 나타내는 cortisol농도에서는 차이가 나지 않았고, 비테인 첨가급여는 IgG 및 cortisol 농도 변화를 나타내지 않았다. 결론적으로 사료 내 비테인 첨가급여보다 에너지 수준을 높이는 것이 돼지 체내에 더 긍정적인 효과를 보이며, 여 름철 고온스트레스를 받는 돼지 사료 내 고에너지를 급여 했을 때 어떠한 결과가 나오는지 추후 더 연구해 볼 만한 것으로 사료된다.

        본 연구는 닭가슴살(5, 15, 25%)과 기계발골 계육(5, 15, 25, 35%)의 첨가 수준을 달리하여 제조한 소 시지의 품질특성을 조사하여 육가공제품의 원료로 적정 첨가 수준을 구명하고자 실시하였다. 닭가슴살을 첨가한 소시지는 수분과 단백질 함량이 증가하였으나, 지방함량이 감소하였다. 기계발골 계육 첨가는 소 시지의 수분과 단백질 함량을 감소시키고, 지방함량을 증가시켰다. 무기물의 경우 닭가슴살 첨가가 소시 지의 인, 나트륨, 구리 함량을 증가시켰으며, 기계발골 계육 첨가는 칼슘, 철 함량을 증가시켰다. 닭가슴 살 또는 기계발골 계육을 첨가한 소시지는 pH를 감소시켰다. 닭가슴살 첨가는 소시지의 명도를 증가시키 고, 적색도와 황색도를 감소시켰으며, 기계발골 계육을 첨가한 소시지는 명도가 감소하고, 적색도와 황색 도가 증가하였다. 조직감에서 닭가슴살 첨가는 경도, 탄력성, 검성, 씹힘성이 증가하였으나, 기계발골 계 육 첨가는 경도, 탄력성, 검성, 씹힘성을 감소시켰다. 관능적 특성에서 기계발골 계육 첨가는 저작감을 감소시켰다. 기계발골 계육 첨가는 육색에는 긍정적인 영향을 미치나, 조직감을 저해시키고 단백질 함량 을 낮추어, 기계발골 계육을 첨가할 경우 5% 이하로 첨가해야 할 것으로 사료된다.

        본 실험은 돈피를 첨가하지 않은 대조구와 돈피를 4% 첨가한 처리구 1, 8% 첨가한 처리구 2, 12% 첨가한 처리구 3으로 돈피 첨가수준을 달리하여 제조된 유화소시지를 4±1℃의 냉장온도에 저장하면서 15일간 5일 간격으로 이화학적 성질, 저장성 실험, 관능검사를 실시하였다. 제품 제조시 돈피를 지방 대체제로 사용하여 돈피의 첨가 비율만큼의 지방은 제외하였다. 지방의 비율이 낮아지고 돈피 첨가수준 이 높아짐에 따라 pH, 전단가, 경도, 검성와 씹힘성은 전 처리구에서 유의적으로 증가했고, 지방산패도 (TBARS: thiobarbituric acid reactive substances)와 휘발성 염기태질소(VBN: volatile basic nitrogen)도 유의적 차이는 나타나지 않았고 증가하는 경향을 보였지만 전 저장기간 동안 가식권에 있 었다. 관능평가에 있어서는 돈피를 8%를 첨가한 처리구 2가 가장 좋은 평가를 받았다. 저장기간이 경 과함에 따라 포장 감량(purge loss), 연도, 경도, 검성, 씹힘성은 전 처리구에서 유의적으로 증가하였으 나(p<0.05), TBARS와 VBN은 증가하였으나 유의성을 나타내지 않았다. pH는 대조구에서는 증가했으나 나머지 처리구에서는 변화가 없었다. 이상의 결과를 종합하면, 대조구와 전 처리구에서 이화학적 성질 이 가식권 내 값을 유지하므로 관능평가에서 잠재적인 소비자들에게 우수한 기호성을 획득한 돈피 함량 이 8%가 최적의 첨가량임을 알 수 있다.

        본 연구는 팽이버섯 수확 후 배지에 3% 개미산 처리와 당밀 첨가수준별(0%, 2%, 4%, 6%)로 각각 25일 및 45일 동안 발효시켰을 때, 화학적 조성과 반추위내 in situ 분해율을 조사함으로써 반추가축용사료로서 적절한 처리방법을 규명해보고자 수행되었다. 반추위 cannula가 장착된 한우암소 3두(평균체중 450kg)를 이용하여 반추위내 발효시간별(0, 3, 6, 9, 12, 24, 48 시간)로 각각 3반복으로 in situ 시험을 실시하였으며, 공시축은 시판 배합사료와 볏짚을 4:1의 비율로 섭취하였다. 개미산 처리 후 당밀을 첨가하여 발효시킨 팽이버섯 수확 후 배지의 pH는 4이하이었으며, 일반성분함량으로 볼 때, 중국산 대두피정도의 수준이었다. 시험사료의 건물 중, 반추위내에서 분해가 빠르게 일어나는 ‘a’부분은 당밀첨가수준이 높아질수록 증가하는 경향이었고, 반추위내에서 서서히 분해될 수 있는 ‘b’부분은 25일 동안 발효 시에는 당밀4% 첨가구에서 높았으며, 45일동안 발효 시에는 당밀 6% 첨가구에서 높게 나타났다. 건물의 유효분해도(r=0.06)는 평균 45%로 처리간 비슷한 수준이었다. 시험사료의 NDF 중 ‘b’부분은 25일 동안 발효 시에는 당밀 6%첨가구가 타 처리구에 비해 낮았으나 45일 동안 발효 시에는 당밀 6%첨가구에서 높았다. 당밀 6%첨가구에서 시간당 NDF 분해속도가 가장 느렸으며, NDF의 반추위내 유효분해도는 평균 39%(r=0.06)로 처리간 비슷한 수준이었다. 이상의 결과로 볼 때, 본 시험에 사용된 팽이버섯 수확후 배지는 반추가축용 사료로서 보관성 향상을 위하여 탈병 후 3% 개미산(HCOOH)만 처리하여 혐기발효시켜도 무방할 것으로 판단된다.

        This study was conducted to investigate the effects of different levels of soybean curd residue as an ingredient of TMR on growth performance and carcass characteristics of Holstein steers. Twenty four Holstein steers of 7 months age(average body weight 274.6 kg) were randomly allocated to 3 experimental groups, which contained 8animals per group during 15-months feeding trial. The treatments composed of the group fed concentrate and rice straw separately (Control), the group fed TMR containing low levels of soybean curd (T1), the group fed TMR containing high levels of soybean curd residue (T2). Body weight and average daily gain were not significantly different among the treatment groups during the feeding trial periods. Feed intake was not differ among treatment groups, but feed conversion ratio was significantly higher in T2 group compared to T1 group during late fattening stage (p<0.05). However, it was not different in overall average. According to the yield traits, carcass weight of control, T1 and T2 were 466.4, 451.1 and 460.1 kg, respectively. Back fat thickness, rib eye area and yield index were not different among the groups. The marbling score, meat color, texture and maturity in quality traits were not different among the treatment groups, but fat color was significantly higher in T2 group compared to T1 group (p<0.05). The quality grade (1+:1:2:3, NO.) tended to be higher for T1(0:2:1:5) and T2 (0:1:4:3) compared with the control (0:0:3:5). Therefore, these results indicated that TMR with soybean curd residue may be appropriate the growth performance and carcass characteristics of Holstein steers.

        병재배시설의 자동화에 의한 버섯 대량생산은 공급과잉에 따른 장기적인 가격하락을 초래하였으며 배지재료, 유류가, 전기요금, 인건비 등의 비용 상승은 버섯재배 농가의 경영을 어렵게 하고 있는 실정이다. 이러한 여건에서는 재배에 실패하지 않고 연중 안정적으로 버섯을 생산하는 것이 무엇보다도 중요한 일이다. 병재배의 배지는 영양원을 첨가하므로 질소함량이 1.5~2.1%로서 배지의 제조, 입병, 살균 과정에서 시간이 지연되면 배지가 변질될 염려가 있는데 특히 여름철의 고온기에는 더욱 그러하다. 배지의 변질 경감을 위하여 탄산칼슘을 첨가하여 팽이버섯을 재배하였을 때 그 효과에 관하여 탄산칼슘이 균사의 대사산물로 서 자실체의 생장에 유해한 암모니아나 수산을 중화1) 시키고, 미강의 오레인산을 중화2) 시키기 때문에 균사생장을 촉진하고 자실체 수량도 증가시킨다고 하였다. 반면에 윤(1969)3)은 탄산칼슘 0.3%첨가시 균사생장에 영향이 없었고 탄산칼슘 0.3%와 질산칼리 0.2%를 혼합첨가시 균사생장은 촉진하였으나 이들 모두 자실체 수량에는 영향이 없었다고 하였으며, 장(1975)4)도 탄산칼슘 첨가수준이 균사생장 촉진효과는 있었으나 자실체 수량에는 영향이 없었다고 보고하였다. 그러나 이들은 실험실 또는 매우 적은 재배 규모로서 현재의 1만병 이상의 배지제조 수준과는 차이가 있을 것으로 생각된다. 따라서 본 시험은 큰느타리 병재배배지제조시 배지의 변질방지를 위하여 첨가하고 있는 탄산칼슘 급원으로서 탄산칼슘분말과 패화석분말을 배지 건조중량에 대하여 각각 0.2%, 0.5%, 1.0%. 2.0%씩 첨가하였다. 이때 기본배지는 미송톱밥+미강+건비지 75:20:5 (v/v, %)의 비율로 하였다. 그 결과 탄산칼슘은 1.0% 첨가하였을 때 큰느타리 자실체 수량이 131g/850ml로 2% 증수하였으며, 패화석분말 은 1.0% 첨가하였을 때 141g으로 10% 증수를 보였다. 이때 대조구의 수량이 128 g/850ml으로 많은 편은 아니므로 직접적인 증수효과라고 하기보다는 배지의 안정화에 의한 간접적인 효과라고 생각된다. 그러나 0.2%첨가시에는 효가가 인정되지 않았고, 0.5%와 2.0% 첨가시는 오히려 수량이 감소하는 것으로 보아 배지종류나 재배농가의 여건에 따라서 최적첨가비율의 재설정이 필요할 것으로 본다.

        The principal objective of this study was to evaluate the quality characteristics of black ginseng jelly prepared with different 5 levels(0, 0.5, 1.0, 1.5, and 2.0%) of black ginseng extract. We assessed the ginsenosides level of white and black ginseng for comparison between white and black ginseng. And we conducted the pH, sugar content, Hunter`s color values, the mechanical characteristics and sensory evaluation of black ginseng jelly samples. The levels of ginsenoside Rg3, Rh1, and Rh2 of black ginseng were higher than those of white ginseng. The more black ginseng extract was increased, the sugar contents of black ginseng jelly were significantly increased(+O.05). We noted that the luminance and Hunter`s b values of jelly samples were decreased according to black ginseng extract was increased, but in Hunter`s a values 0.5% black ginseng jelly was the highest of the all. With regard to the mechanical properties of the black ginseng jelly samples, the score of hardness, gumminess and chewiness were significantly increased. In color, taste and overall quality, the score of jelly with 1.0% black ginseng extract was significantly increased than those of the all.
